very writer has words that will make them cringe whenever they are compelled to use them. Two of mine are ‘quirky’ and ‘eccentric’. They’re lazy adjectives, and in my mind, verge on insulting. Who doesn’t have their idiosyncrasies? Surely eccentricity implies creativity and uniqueness? So it is with pride that I consider west London to be a hotbed of these characters – a lot of whom make it onto these very pages. So, who do we have in our pages this month? Well... Neil McKelvie meets the multi-talented Derek Pearce, a woodcarver who has made a name for himself with his witty, masterfully-crafted ‘water tables’. Read Neil’s brilliant interview (and start planning where you have space for a hippo table in your living room) on p.81. Another local artisan is perfumer Sarah McCartney, who turned her passion for fragrance into her business, 4160Tuesdays. Discover why Sarah is a breath (or perhaps, spritz) of fresh air in a typically haughty industry on p.43. For this travel-themed issue, we talk to Sunvil chairman Noel Josephides about extraordinary escapes and the importance of sustainable tourism on p.67. Even our food section has turned exotic, with a selection of truly adventurous recipes sourced from some of the world’s best chefs over on p.54. Whilst on the subject of journeys, it’s time to announce that mine at Absolutely has come to an end. Launching and editing these titles has been a joy and privilege from start to finish. I would like to dedicated my final issue to everyone who has been a part of the magazine over the past couple of years; to my family, and, most importantly, to you: the reader. What an adventure it has been. u

PROFILE

The Rise of ROSAMUND From Bond Girl to Gone Girl, the career of west Londoner Rosamund Pike continues to skyrocket Wo r d s S H A U N C U R R A N

A

classic beauty: Rosamund Pike made a spectacular debut in the world of movies by playing the glamorous Miranda Frost in Die Another Day, the Pierce Brosnan Bond film that propelled the then 21-year-old actress into a life of fame and fortune. Moviegoers were captivated by her glacial, Hitchcock-blonde looks and classic British accent. Her eloquence, however, was initially perceived with scepticism; the general public stereotyped her as a ‘really posh English woman,’ she says, ‘when really I [was] just a bit of a wild girl from London.’ The early typecasting that resulted from her successful stint as a Bond girl, however, set Pike on her path to Hollywood. Since Die Another Day, Pike has landed roles in acclaimed hits, such as Pride and Prejudice and Made in Dagenham. She has also worked alongside some of the biggest names in movies, including Tom Cruise, Johnny

Depp and Ryan Gosling. Most recently, Pike has been under the guidance of David Fincher (the esteemed producer behind the successful Netflix series House of Cards, as well as The Curious Case of Benjamin Button and The Social Network) who directed Pike’s most recent project, the adaptation of Gone Girl, a film based on the bestselling novel by Gillian Flynn. Like the book, the film is a mystery thriller, in which Amy Dunne (Pike), the wife of Nick Dunne (Ben Affleck) disappears on the day of their 5th wedding anniversary. And also like the book, the film has garnered widespread acclaim alongside its fair share of controversy. Whilst both Pike and Affleck have been praised for their performances, the narrative of Gone Girl has prompted a slew of newspaper think-pieces, and a huge reaction on social media, debating the topic of whether the movie is a brilliant example of feminism in action, or a horrifically negative depiction of the female psyche. This is because Amy’s disappearance reveals a much darker side to the seemingly perfect wife.

ARTS & CULTURE / INTERVIEW

It is testament to her skills as an actress that Pike is in any way plausible in this role. For her calm, natural demeanour makes it impossible to imagine her ever behaving like Amy Dunne, even in her younger, wilder, London days. ‘Never!’ she says with a laugh. ‘I was never that cool girl. I remember when I was reading the book I had a strong feeling about Amy. I’d been asked to like this girl but something made me really uneasy about her. I sort of didn’t buy it. It’s so funny because of course Gillian Flynn, the author, had put her finger on the pulse of this notion that if a woman is more free and easy she will get the guy she wants. If she stays up until 5am and drinks bourbon and doesn’t sleep, but can still look hot in the morning as well as eat junk food, yet somehow still manages to get into her size four dress, that’ll do it. There is a juggling act behind all of that in order to maintain the image, and it’s an interesting concept.’ Born in Hammersmith on 27th January 1979 to opera singers Caroline and Julian, Pike was immersed in a culturally rich environment from the word go. Acting was soon ‘all I wanted to do, from about the age of 10, and I made that very clear to everyone,’ she recalls. Boarding school and a place at the University of Oxford which followed were, in Pike’s opinion, only taking up valuable time in her quest for stardom: a turn as Juliet in Romeo and Juliet at the National Youth Theatre reminded her where her heart truly lay. ‘I auditioned for so many parts after [playing Juliet], but I couldn't find another one! I had to go back to uni in the end, which I didn’t want to do.’

As soon I finished

GONE GIRL I thought to myself, ‘I NEED to go and make a HUMAN BEING NOW’ But it was there, studying at Oxford, that she met and fell for her first love, fellow actor Simon Woods. After two years together, however – which included an engagement – Woods declared he was gay and went on to marry Burberry’s Creative Director, Simon Bailey. Pike remained on good terms with her ex, and even acted alongside him again when the pair were cast as lovers Jane Bennet and Charles Bingley in Pride and Prejudice. Pike then fell for the director of that movie, Joe Wright, which was quickly followed by plans to marry. But after a falling out over wedding details, Joe called time on their relationship. Five years ago, however, Pike met mathematical researcher Robie Uniacke. 18 years her senior, and though twice-divorced, the two are now in a happy relationship and welcomed their first son, Solo, in 2012, and their second son in December 2014. ‘As soon I finished Gone Girl I thought to myself, “I need to go and make a human being now,”’ she laughs. But despite her self-professed squeaky clean lifestyle, and the difficulties she had at the beginning of the role, Pike is adamant she enjoyed taking on Amy. ‘It was really fun to be able to

19 Chiswick_FEB15_Pike.indd 19

be every kind of woman that you can put out there, and know that she’s veering on palatable, compelling, confounding; all those things in one person.’ Knowing that she was starring next to the new Batman must also have made the process fun. Her co-star Affleck has been cast as the protector of Gotham City in Batman vs. Superman, and began his training whilst filming Gone Girl. ‘Ben was working out during the shoot and he was becoming Batman before my eyes,’ she laughs. ‘By the time we were in the shower scene, I was with Batman!’ From Bond girl, to Jane Bennet and showering with the new Batman, Pike’s acting achievements speak for themselves. This is largely due to the fact that throughout her career, Pike has remained resolutely ambitious. ‘I just wanted to do it, and once I was doing it to keep doing it,’ she says. ‘It really is the best job in the world, the most fulfilling one, the one that keeps you young and alive. I always wanted to make it and do it for as long as possible.’ Now surfing a new wave of success, Pike has set her goals even higher. ‘I don’t think there is anything wrong with being ambitious now, and I’ve got to the point where I want to be stretched. I want people to know what I am capable of. This is what I want to explore.’ ◆ Gone Girl is released on DVD on February 2nd

5 FACTS YOU DIDN’T KNOW ABOUT ROSAMUND 1. She goes skinny dipping whenever she can. Often finding the nearest lake to wherever she is filming and heading off for a nude swim. 2. She auditioned for the role in Gone Girl via Skype as she was in a remote part of Scotland, and had to join a gym to get access to Wi-Fi. 3. David Fincher flew her to St Louis to drink whisky with him to check if she had the ‘balls’ to play the part. 4. Because of the amount of

fake blood used in filming Gone Girl, she sometimes had twenty showers a day. 5. She plays the piano and

the cello.

artorial fashion is as transient as the body shapes that inspire it. The only body-trend that I’ve been longing to see the back of is this size 4/6 toned clique of shapeless zombies that have not only ruined what is intrinsically beautiful about a woman’s body, but wrecked many centuries of tailoring to boot. The type of figure I’m talking about doesn’t belong to the natural willowy Twiggy-esque physique or petite person; it is that entirely unnatural body, which the owner has worked very hard, creating it to be as trim and as toned as it is possible to be (without looking ill). The result renders them with no shape at all, no physical personality. They’re just a generic sized pair of boobs, with a small, flattish bum and no hips. It is inspired by celebrities who live in front of cameras, but the reality of this body is in fact boring and unfeminine. Why would you want to get rid of the naturalness that makes you a woman – the softness of your flesh, the nip of your waist and curve of your bottom? It has inspired women’s clothing since time began! So if you’re worrying about having let your New Year’s resolution slide, take a few pictures of Marilyn Monroe, Kate Upton or Kim Kardashian to the mirror with you, and just check you don’t rather suit those few extra pounds? They’re in Vogue after all… u

Space NK is coming up roses and Bobbi Brown offers the ultimate make-up masterclass

f you’ve always fancied a department store make-over but I find the prospect intimidating, the Bobbi Brown Studio, Westfield’s standalone store, is an excellent place to start. There are no pushy sales incentives and classes are brilliantly varied – from bridal make-up to mastering the perfect smokey eye. It should also be noted that all classes are free of charge. I go for the hour long Pretty Powerful masterclass, which covers all the basics in skin prep and choosing the best colours for skin tone. Make-up artist Hannah talks me through each product and writes them down for my reference. She also takes into account my personal tastes, such as the fact that I don’t wear red lipstick but like a strong eyeliner. Hannah introduces me to new techniques and products but I’m never taken too far out of my comfort zone. The resulting look is natural and pretty rather than caked on. It’s a testament to the quality of Bobbi Brown products, and by the end I’m tempted to fork out for the lot – but I don’t feel at all pressured to do so. I’ve also picked up valuable tips on picking the right colours for my pale skin tone (it turns out I don’t always have to opt for ‘ivory’) and how to apply them like a pro. After all, it’s never too late to learn new tricks...u

orget fluffy ’80s crimping, this year it’s back but is tres chic. Stella McCartney did it best for S/S15, when she sent sleek, crimped, lowslung ponytails swishing down the catwalk. Here's how to do it at home: If your hair is a little limp, crimping is actually the ideal way to bulk it out, giving some much-needed texture. And unlike crimpers of old that could leave you looking like a member of Kiss, the Babyliss Root Boost, which costs only £30, has a much narrower plate pattern to give a more modern, delicate crimp. Apply a volumising mousse such as Paul Mitchell’s Extra-Body Sculpting Foam (£11.75) to damp hair and blow dry upside down for added volume. Then, taking small sections of hair, clamp the Babyliss Root Boost crimper from the roots down the length of the hair, but stopping about an inch from the ends for that runway look. If you have thick, unruly hair, then keep it under control by using a crème

styling fluid such as L’Oréal Tecni ART Liss Control from roots to ends. Blow dry lightly before taming frizz with good ionic straightening irons, then reintroduce texture by picking out sections of hair to crimp. Alternatively, for a more relaxed crimp, create lots of skinny plaits through your hair and clamp it with straighteners before unravelling to reveal a slightly wavy texture. Once you’ve got the desired crimp, fasten in a low, relaxed pony at the nape of the neck and finish with hairspray for a stylish and wearable spring hair trend. u

HEALTH & BEAUTY / BEHIND THE SCENES

SCENTSATIONAL

Writer Sarah McCartney opens the doors of her perfumery, 4160Tuesdays Wo r d s G e m m a B i l l i n g t o n

I

Photography rebecca noonan

’ll be honest, perfume is not really my thing. I’m the opposite of a beauty junkie: my make-up bag is feather light and my dressing table holds only two scarcely spritzed perfume bottles. So what did I think when a box of little assorted perfumes, each wrapped like sweets in colourful tissue paper, landed on my desk? The various fragrances divided opinion, but my colleagues, who had all gathered

around to have a sniff, agreed on one thing: they had great names. There was Urura’s Tokyo Cafe, Doe in the Snow and, a particular favourite, The Sexiest Scent on the Planet. Ever. (IMHO). Included in the package was a handwritten note from the sender, Sarah McCartney, and an invitation to her perfumery. How could I resist? I had visions of 4160Tuesdays HQ to be full of industrial machinery. What I was not expecting was a small mezzanine in an Acton industrial

43 CHIS_Sarah_McCartney.indd 43

estate, with a 70s-style living room-cummeeting space. Articulate and friendly, Sarah chats away as she gets a package ready for a courier whilst simultaneously making tea before we sit down to talk business. First things first: what on earth does 4160Tuesdays mean? ‘It came from a blog I was writing about not wasting your life,’ Sarah explains. ‘If you live for 80 years that gives you 4,160 Tuesdays. You’d imagine there’d be more. It seems

If you live for 80 YEARS that gives you 4,160 TUESDAYS

horribly finite. I thought I’d write about not wasting your Tuesdays because Tuesdays tend to flit by.’ Of course Sarah could have just used her own name for the business but, so as not to get confused with a certain famous McCartney, she went for this more abstract option. As you may have guessed, Sarah is not your average perfumer. But then again, what is an average perfumer? London may be currently enamoured with all things artisan, but perfumery is a notoriously

FEBRUARY 2015

06/01/2015 16:50

HEALTH & BEAUTY / BEHIND THE SCENES secretive industry. And there are only a handful of individuals doing it all on their own. ‘People ask me, “who really makes the perfumes?” and I say “me”. They say, “of course you’re the perfumer but who really makes them?...” They don’t believe it because nobody does this anymore’. Even upstairs in the perfumery itself, I’m taken aback by the miniature scale of it all. It’s akin to a science classroom, with handwritten charts and notices on the walls and bottles and packaging in various stages of production. Sarah moved into the premises just over a year ago after starting the business from her home. Her scents (available online) are stocked in a handful of indie perfumers in the UK, Europe and even across the pond. She also

Nobody does THIS KIND of thing ANYMORE

them myself... No one wanted to read the novel, they wanted the perfumes!’ she laughs. ‘So it sort of went that route really.’ 4160Tuesdays marries Sarah’s passion for scent with her talent as a writer and storyteller, but she had to start her new career from scratch. ‘I needed to learn what synthetics smelled like because I knew a lot about naturals, but to get into real perfumery, you have to learn a lot about synthetics.’ She explains. ‘There are a lot of people out there mixing batches of essentials oils thinking that’s the way it’s done, having no clue that what they’re selling at the local craft market is totally illegal.’ After months of navigating a minefield of regulations, Sarah was free to let her imagination run wild. 4160Tuesdays quickly found its audience. Personally what I love is the brand’s sense of irreverent humour in an

hosts weekend workshops for perfume enthusiasts. But just how hard is it to be an independent perfumer? ‘Not as hard as I thought it was going to be’, she replies earnestly. ‘I got so much encouragement.’ Before 4160Tuesdays, Sarah worked as head writer at cosmetic brand Lush. She then decided to take a year out to write a book: ‘I wrote a novel about a perfumer who solves people’s problems,’ Sarah explains. ‘I was trying to find [the] perfumes that I was describing in the novel [but] I couldn’t find them because they weren’t like anything that anyone else made, so I thought I’d have a go at making

ABSOLUTELY MAGAZINES

CHIS_Sarah_McCartney.indd 44

industry that takes itself far too seriously. Sarah’s scents don’t sell sexualised aspirations – they tell a story. ‘I’m trying to evoke a thing rather than a concept that sells,’ she agrees. What Sarah also taps into is how scent can transport us instantly to a memory, evoking nostalgia in ways that the other senses can’t. This works especially well with bespoke work, an area where Sarah excels. ‘I love doing bespoke,’ she enthuses. ‘The thing is, you’ve got to build a brand so people are confident you’re going to make them a decent scent, but in my ideal world I would probably just do bespoke scents for the rest of my life.’ My favourite of Sarah’s perfumes, Ealing Green, was created for a local charity event. ‘It’s walking on to the Green on a warm summer’s night,’ Sarah says, guiding me through the scent, ‘it’s got herbs and flowers in it mentioned in A Midsummer Night’s Dream… after a while you start to smell the mud, maybe you’ve decided to have a lie down on the grass – that’s my aim.’ And so it follows that my personal perfume collection has grown by one. Ealing Green reminds me of rolling down the hills of my primary school grounds after the grass had been cut, signalling the start of summer. It also reminds me of a comfy sofa, a cup of tea and a little local perfumery. u

ABSOLUTELY / PROMOTION then there was the dancing. I remember the roar of friends, family and even people who didn’t know me when I finished my dance with Nuno and then when the judges lifted 4 golden paddles each showing a ten. Thank you, Park Club.

SIMONE DAILEY Ironwoman Triathlete

A VERY GOOD YEAR A look back at the highlights of 2014 and why there’s nowhere better than the Park Club to achieve your New Year goals

Since joining The Park Club in late 2012 I can honestly say this is one of the best gyms in London for a number of reasons! I am not only a member and triathlete, but also a strength & conditioning coach who works from various gyms in and around London, but I choose to train here. As a triathlete who competes at world level in Ironman, I could not ask for a better setup. The outdoor pool is incredible and very rare to come across in London; the Watt bikes are great for my monitored bike sessions and having the outside grounds to run around with some hilly terrain is perfect in every sense. I have a great coach and team here and a great support unit. The food is delicious, with a wide range of healthy meals for pre and post training, and always served by friendly staff in a warm outgoing atmosphere. What more could I ask for?

ISLA CULMER-JENKINS Karate Student

NICK CURTIS-RALEIGH Contender in Parx Boxing 2014

I took part in the charity boxing event at the Park Club in the spring of 2014 – an unforgettable experience. I boxed against my twin brother, Guy, so no pressure there then! The whole event was brilliantly organised, from the training with personal trainers Lee and Ali, the medical checks, the way we were kept motivated, the fundraising (collectively the event raised over £20,000 for charity) and the superb venue. I will always remember walking through into a floodlit arena, music blaring, packed with about a thousand roaring spectators, film crew, and, of course, a boxing ring right in the

middle. All of the boxers felt an enormous sense of achievement and our friends and family thought it was an extraordinary and unique event.

JO DEAN Winner of Strictly Charity 2014

My family and I have always loved The Park Club, but I love it even more since taking part in Strictly Charity 2014. The entire experience was amazing. The quality of our Professional Dance partners, the lighting and sound, the dresses, make-up and hair, alongside the technical run-throughs, the celebrity panel and compère, made us all feel like we were involved in the real event. When Isla first started Karate, even though she had asked to join the class, initially she stood outside of the door too scared to go in. After some excellent and very kind persuasion from Sensei Alex, she finally plucked up the courage to give it a go. At age seven, she is now an orange belt and has every intention of going for her black belt. So far it’s been an amazing journey for her. Not only does she really enjoy it but it has built up her confidence tremendously. u

01 Preheat the water bath to 82°C/180°F. Begin by trimming the lamb belly, removing any small bones and excess fat. 02 After seasoning with olive oil, thyme, salt and pepper, cook the lamb belly overnight in a sealed vacuum bag. Remove from the bag and place the lamb belly between two sheets of parchment paper. Lay a flat tray on top and evenly distribute weights. Once it is cool, slice the lamb belly into even portions. 02 Prepare the lamb loin by removing the loins from the bone. Remove the first layer of skin and put to one side for step 17. Vacuum seal and cook at 56°C/133°F for 30 minutes before removing from the water bath and placing in iced water. 03 To make the confit garlic, put a pan over medium heat and add the oil. Then add the butter, garlic and salt and colour the garlic until golden. Add the thyme and honey and cook slowly until tender, about 8-10 minutes. 04 Place the aubergines into a Green Egg or Josper, or a household barbecue will work just as well. Cook the aubergines until they are black all over. 05 Dice the flesh and skin into 2cm pieces after removing the stalks. Reduce until thick by placing into a pan with the reserved confit garlic, reduced lamb jus and lemon thyme leaves. 06 Blitz the mixture until very smooth in a blender.

FOOD & DRINK / GREAT GLOBAL CHEFS Freshen the purée slightly by seasoning with yoghurt. 07 To make the wild garlic oil, pick the wild garlic leaves and then blanch them in salted boiling water for 3 minutes. Refresh them in iced water, thoroughly squeeze all of the excess water and then pat dry with paper towel. 08 Set oven to 50°C/122°F, dehydrate the wild garlic in the oven for 6 hours. 09 Once the garlic is dry, place the leaves and grapeseed oil in a Thermomix blender. Bring the mix up to 85°C/185°F. Extract the oil by passing through muslin cloth and then chill the oil in a bowl set over ice. 10 Preheat the oven to 170°C/338°F/gas mark 3.5. Prepare the onion powder by roasting the onions still in their skins until very soft. Remove the onion flesh and slice finely, then dry in the dehydrator until golden brown. Allow the slices to cool, then blitz in a food processor to a powder. 11 Prepare the caramelised Roscoff onions by preheating an oven to 160°C/320°F/gas mark 3. Put the onions in a bowl and season with olive oil, pepper, salt and Demerara sugar. Roast the onions until cooked through in the oven. 12 Remove the onions from the oven. Leave to cool then, keeping the skin on, cut into quarters through the centre of each stalk. Place a pan over medium heat, add a knob of butter and a dash of oil. Caramelise the onions in the foaming butter, then remove and discard the skin. 13 Prepare the hung yoghurt by placing the yoghurt in a muslin cloth bag. Suspend over a bowl to remove the excess liquid. Once the yoghurt has sufficiently drained, season with pepper and salt. 14 To prepare the baby onion hearts and petals, start by halving the baby onion shells. Season with olive oil, salt and pepper and add to a hot, dry frying pan. Burn the onions in the pan, then break into individual petals. 15 Make the onion marmalade by cooking down all of the ingredients in a pan until sticky. Leave to cool, season to taste and set aside to chill. 16 Preheat the oven to 180°C/355˚F/gas mark 4. Put a pan on a medium high heat and put the loins in the pan. Render down the fat on the lamb loins until golden brown and crispy. Turn the loins over to caramelise the rest of the flesh. 17 Place the loins on top of the reserved skin in a roasting tin. Put the loins in the oven for 5-7 minutes, the cooking time will depend on the size of the loins but they should still be pink in the middle. Leaving the oven on, remove the loins and rest at room temperature. 18 In separate pans, warm the smoked aubergine purée, onion marmalade and lamb jus. Warm the Roscoff onions and baby onions. Cut the lamb loins in half which will give you 4 pieces of equal size. 19 In a hot pan add oil and colour the lamb belly portions until golden brown all over. 20 Start plating by spooning the aubergine purée. Add a small spoonful of the hung yoghurt and then place the lamb loin on top, arranging both types of onions around the loin. 21 Place a spoonful of onion marmalade and add the pieces of lamb belly. Drizzle some of the lamb jus and some wild garlic oil around each plate. Add a pinch of onion powder and garnish with herbs (optional). u

S e r v e s : 4 , C o o k i n g T i m e : 9 0 m i n utes p l u s 4 ho urs re fr i ge ra ti o n ti m e INGREDIENTS Lobster, aubergine and mozzarella: 1 lobster, large • 250g buffalo mozzarella • 1 aubergine • extra virgin olive oil Fresh tomato soup: 4 tomatoes • 50ml extra virgin olive oil METHOD

01 Start by making the fresh tomato soup. Quarter the tomatoes, add to a blender with the olive oil and blend well and put in the fridge for 4 hours. 02 Place the lobster in a freezer to render it insensate. Boil a large pan of water and add a dash of white wine vinegar. When the lobster is insensate, tie together its claws, place on its back and firmly hold on to its head. 03 Using a very sharp knife, make two cuts in the head, just beneath its mouth, lining up the knife blade with the lobster’s midline. Direct one cut towards the front of the

55 CHIS_FEB15_Great Global Chefs.indd 55

head and the second down the midline towards the tail. 04 Firmly cut through the head then flip over the lobster and cut through the midline as quickly as possible (preferably in less than 10 seconds), placing the knife tip just on the body side of the junction between tail and thorax. 05 Cook the lobster in generously salted boiling water for 12 minutes. After 12 minutes, remove the lobster from the water and plunge into ice cold water. Remove the head, cut the tail in half and crack open the claws and knuckles to remove all the meat. Chop the meat from the body roughly and set aside until needed. Slice each whole piece of claw meat in half evenly. 06 Slice the buffalo mozzarella into 4 large discs of equal size and set aside until needed. 07 Peel the aubergine and slice the flesh into 8 thin discs. Chop the skin into thin strips and fry in hot oil until crisp. Fry the slices of aubergine in oil until golden and tender. 08 Divide the chilled tomato soup between 4 dishes and top with a disc of mozzarella, then a disc of eggplant, some chopped lobster meat, then another disc of aubergine. Finish with the claw meat and garnish with fried aubergine skin and chives. Serve straight away. u

CHARLIE PALMER

Sal mon Gr i l l e d on a Wo o d Pl ank harlie Palmer, from Dry Creek Kitchen at Hotel Healdsburg, California, uses a wood plank in his grilled salmon recipe to add flavour to the fish. The trick is to use an aromatic wood such as hickory or alder and to soak the plank so it doesn’t burn too vigorously.

C

Se rv e s: 4, C oo k ing T ime: 3 0 mi nu tes plu s soaki ng an d m a r ina ting time INGREDIENTS Salmon: 680g salmon fillet Marinade: 59ml rice wine vinegar • 59ml water • 2 tbsp soy sauce • 1 tbsp fish sauce • 1 ½ tbsp chilli garlic paste • 2 tbsp sugar • 1 tbsp ginger, peeled and grated • ½ lemongrass stick, bruised with the back a knife and chopped Garnish: 1 red onion, thinly sliced • coriander leaf, coarsely chopped • 2 limes, cut into wedges METHOD

01 Mix all the marinade ingredients together in a bowl and set aside. 02 Score the presentation side of the salmon using a

crosshatch pattern. The lines should be roughly 1 inch apart and ¼ inch deep. Place the salmon in a compact container or a large zip-lock bag and coat with the marinade, ensuring all the fish is covered. Leave in the fridge to marinade for 2-6 hours. 03 Preheat a barbecue or covered grill to a mediumhigh heat. 04 After 4 hours soaking, place the plank under the grill and char evenly on both sides - doing so will yield more flavour. Planks often have a smooth and a rough side, the smooth side is best for cooking. 05 Remove the salmon from the bag and lay skin-side down on the plank. For those using coals, move the coals to the sides of the grilling area and put the wood in the centre of the grill. 06 When using a gas grill, leave one side off and turn the other up to medium or medium-high. Cook the fish on the cooler side, away from the direct heat, as you would with the barbecue. The wood is gently smoked and the fish is cooked using the residual heat. 07 Shut the barbecue lid and cook the fish until the flesh flakes under light pressure – this should take roughly 10-15 minutes. Check the salmon regularly to make sure the plank hasn’t caught light, extinguish any flames with a little water. 08 Take the plank off the grill and lay in the middle of the table. To serve, garnish with the cilantro, red onion and lime wedges. u

is cooking, prepare the kale. Heat a pan over medium heat with a dash of oil. Add the sliced onions and fry until caramelised. Blanch the kale in a pan of boiling water for 2-3 minutes then remove and refresh in icecold water. 04 Add kale to the pan with the onions and fry for a minute before adding the mixture to a blender with the vegetable stock. Blend until smooth then pass through a fine strainer. 05 Remove the kangaroo from the water bath and unwrap. Lightly brown the meat in a hot pan with a little vegetable oil. 06 Remove from the pan and leave to rest before slicing each piece diagonally into two. 07 Before serving, reheat the kale purée. Divide onto plates and place the kangaroo slices on top. 08 Garnish with seasonal vegetables, brussel sprout leaves, edible flowers and baby leaves. u

FOOD & DRINK / RESTAURANT REVIEW JACKSON & RYE models itself on NEW YORK DINERS

American Dream

For a slice of the Big Apple in West London, pay a visit to Jackson & Rye

with Mozzarella di Bufala, a twist on the classic Italian Tricolore Salad served with Basil, Crème Fraîche, Tomatoes and Pine Nuts. A rich and winning combination. Mains are Crab Cakes with a side of Sweet Potato Fries, and for my companion the Goats’ Cheese Ravioli served with Buttered Spinach and Rocket in a Parmesan and Thyme Sauce. I love American seafood – think lobster bisques and popcorn shrimp – so my expectations for the crab cakes were set high. Thankfully, they were met. Satisfyingly light on the inside, crispy on the outside, served with a fiery chipotle mayonnaise, the cakes did not disappoint. I would have preferred more than two of them on the plate (they were accompanied by an air-light radish ‘slaw’) but that’s pure gluttony. I’d have polished off about ten of them given the chance. The Ravioli was also a rather special dish – not stodgy or swimming in sauce as so often is the case. Jackson & Rye have created a winning concept. A fun, relaxed atmosphere, with great food, and just a touch of decadence. This particular spot on the High Road has seen numerous changes over the years but I’m confident that Jackson & Rye is here to stay. u

I

f there’s one thing to be said about London’s ever-changing dining scene, it’s that we embrace new foodie fads with open arms. That’s not to say we jump on any old bandwagon, rather that our appetite for variety is second to none, and is something that sets our dining culture apart from other major cities. A particular trend that dominated the scene in 2014 was American cuisine and the rise of ‘cafe culture’ all-day dining. American fare, like British, has never been held in high esteem. It lacks a solid identity and is often tarred with notions of excessive consumerism. But rather than greasy fast food and ginormous

portions, the modern American dining scene is a food lover’s dream. Jackson & Rye is a contemporary restaurant that models itself on New York diners, promising a laid-back, convivial atmosphere with interiors (and an impressive drinks menu) styled on Twenties speakeasies. With a branch in trendy Soho, Jackson & Rye expanded to Chiswick High Road last summer and followed swiftly with a Richmond opening just before Christmas. The meaning of ‘all-day’ dining is that all options are covered – from weekend brunches to dinner, lunch (including a very reasonably priced set lunchtime menu) or a night out for cocktails. On a weekday lunch date with a friend, I stray from the set menu and start

Turkish Delight A private peninsula on the south coast of Turkey proves the ultimate spot for a family to relax in the sun Wo r d s P e n d l e H a r t e

A

s a mother of three, businesswoman and former model, Jasmine Guinness is a woman who needs a holiday, and knows it. When she explained that: ‘people who read on holiday always have a better time because it’s total escapism, both physically and mentally,’ she articulated my feelings exactly. Because what I want most from a holiday is a place to read. A beautiful place in the sun, where all my immediate physical needs are met – and those of my family – in order that I can be left in peace to read. But this is harder to achieve than it sounds. Anyone with children knows that for a holiday to be a holiday, you need to be able to reclaim your own brain for yourself, away from the incessant random demands made on it, and this is not something that happens easily. So we came to an all-inclusive resort. It might not be the most imaginative holiday option, but when your ambition is to find rest and relish in it, the promise of having no decisions to make for a full week is an exciting one. Letoonia in Fethiye, on Turkey’s south coast, is a vast hotel on a completely private peninsula. Set in absurdly lush surroundings (over 268 varieties of fauna, requiring near-constant watering in this dry part of the world) it’s a beautiful spot. Imagine pine trees, bougainvillea, jasmine and roses all vying for space and creating a wilderness of colour. There are three private beaches, four pools (one indoor), eight restaurants, nine bars, a spa, a kids’ club and countless available sporting

TRAVEL / TURKEY activities. It’s almost a village in itself, a sprawling, hilly one with funicular railways and golf buggy taxis (flag them down when you’re flagging) connecting locations such as the pools and the beaches with the life-sized chess board, the theatre and the eateries, plus the archery course, the tennis courts and the water slides. But if this sounds big and busy, it doesn’t feel it. On our visit, in high season and during the school holidays,

THIS is a UTOPIAN, moneyfree SOCIETY where everything IS ALWAYS AVAILABLE accommodation is at full capacity but still there is no crowding, queueing or scrambling for pool loungers. Everything is quiet and seamless. The all-inclusive ethos creates a utopian, money-free society where everything is always available to everybody and there’s no competitiveness or conspicuous consumption (nobody seems to overeat or drink despite the bottomless plates and glasses, which makes a convincing case for the goodness of human nature). We walk round the village unencumbered by anything as pedestrian as a wallet. Accommodation is in bungalows with carved wooden details designed by award-winning Turkish architect Nail

Çakırhan. Our two bedroom suite is comfortable and spacious, with a shady balcony offering impressive sea views, so quite quickly we settle into a form of routine, loosely based around meals. Buffet dining suits us and the largest restaurant is situated at the tip of the peninsula, by the lighthouse, offering sea views in all directions. Options are endless and alongside all the high class if fairly standard international fare is a good selection of Turkish meze – every day brings a delicious new twist on the aubergine – and there’s enough variety not to ever get bored. There are two à la carte restaurants too, one of them offering a curious fashioning of Japanese

food and the other a beachside fish venue, but we stick to the buffets with their wide array and child-friendly setup. We quickly discover our favourite place for lunch – on the beach, where salads and Turkish flatbreads offer light options alongside a chilled glass of wine. The children choose pasta with tomato sauce every day without exception, fully believing themselves in culinary heaven, and we are delighted that the ice cream stall opens punctually after lunch every day and then closes for the rest of the afternoon. Days pass in a haze of swimming – the pool? Or the beach? Which pool and which beach? – and we enjoy everything from the waterslides that drop into the sea to the pedalos and rowing boats in the bay, as well as the elegant bananaleaf style hammocks that dot around the resort. One day we take a trip on Letoonia’s luxury yacht, which takes us around the peninsula, stopping to swim in clear turquoise waters and to shop in the market. In the evenings we enjoy all-singing, all-dancing performances from the in-house amateur dramatics group, whose enthusiasm and fantastic costumes fill the village amphitheatre with energetic shows every night. So, the reading count went well. Not only did I reread Jayne Eyre but I caught up with Meg Wolitzer and Philip Roth too. In terms of physical and mental escapism, I certainly had my fill. u Special offer for Letoonia bookings before end of January 2015 - 7 nights all inclusive including flights from £504 at letoonia.com

ABSOLUTELY What was your favourite childhood holiday destination? NOEL JOSEPHIDES What is now Northern Cyprus – Kyrenia. My parents missed it so much when they left Cyprus that they named their home in Surbiton ‘Kyrenia Harbour’ in memory of the many happy times we enjoyed there as a family.

overhead and float in bowls. Something like 800 huge, hand-poured candles light every nook and cranny of the hotel at night and every glance reveals little architectural details – an arch here, a carved block of stone there – that add to the ambience. Pieces of religious significance abound – reception is akin to an altar, with a huge chandelier above, and great wooden candle holders painted gold, complete with fat church candles, are visible everywhere. Staff run a little candle factory in their own time in part of the building and guests buy their hand-poured wares. There is a small marketplace where local weaving can be admired and bought. Bathroom tiles are locally produced and are all individual in design and manufacture. It’s a hotel that cares for its workers and appreciates what a special

HUGE tropical flowers HANG OVERHEAD location it enjoys; quite wonderful and hugely romantic, and the perfect place for proposals and weddings. ABS If you were planning a European weekend getaway, where would you go? NJ Either to the Alentejo, in Portugal (good food and wine, plus walking, cycling and kayaking to keep the calories at bay, a raft of cultural things to see and a wonderful coastline from which to watch sunsets over the ocean) or to Athens – a magical city, with so much to see and do. Or to Stockholm, Sweden for great seafood. ABS What country has surprised you the most? NJ Namibia: it’s German efficiency witnessed first hand – in the desert, in Athens is a ‘magical city’

ABS What’s the most unusual thing you’ve ever eaten abroad? NJ Sheep’s brain – a real delicacy and very tasty. ABS What’s the most romantic place you’ve ever been to? NJ Guatemala – specifically, the old capital of Antigua and a hotel called Casa Santo Domingo, which is a former monastery. It’s an ongoing architectural dig, surrounded by three volcanoes, and was for years buried under volcanic ash. You arrive at a simple door in a wall, open the door and enter another world. The path is indented – the result of the hundreds of years that monks have walked over the stones – there is a little stream of water running alongside the path and huge tropical flowers hang

TRAVEL / Q&A Namibia: German efficiency meets stunning landscapes

and their treasures, in particular, plus the countryside and rural idylls that can be found everywhere if you have the time to travel at a slow pace. ABS What country (or city) do you think is a hidden gem? NJ Slovakia’s capital, Ljubljana. It’s delightfully positioned, in a river valley with mountains nearby, the architecture is interesting – a mix of a mediaeval castle on the hill overlooking the town and exotic-looking domes atop churches – and it’s so clean that you rarely see rubbish on the streets. Also, otters live in the river; you can spot them on city boat tours. The food is good, too. Even locals will enjoy a Blue Badge tour of the Tower of London

the small towns, just about everywhere – alongside the most exciting game viewing, including cheetahs in close-up, ancient rock art, thousands of seals on the coast, a lesson in how to make fire from the Bushmen and immense sand dunes. A wonderful, very unexpected and moving experience. ABS What’s the best hotel you’ve ever stayed in? NJ The Convento do Espinheiro, in Evora, Portugal. It’s living history – the Kings of Portugal once lived there, the wine cellar is a huge converted water cistern with massive walls and bars for wine tasting created from local marble, lit from within. Ensure Slovenia capital Ljubljana is on your 'must see' list

TRAVEL is often shaped by LIFE STAGES You can cook in the former monks’ kitchen and there’s a chapel just off one of the main reception halls that boasts a very rare organ… The manager’s tour is a must-do – you hear a lot about the history and legends of the old monastery. It’s fascinating. ABS If someone who had never been to London was planning a visit, where would you take them? NJ The Tower of London with a Blue Badge guide. My children organised this for me a couple of years ago for a birthday and it was a superb experience and very different from trailing around on your own and not really understanding what you were seeing. It was personally curated for us by a knowledgeable expert. ABS What’s on your travel bucket list? NJ Europe in depth, especially France, Italy and Greece. We have so much of interest close at hand that we haven’t explored properly. I’d like to spend more time delving into some European cities

ABSOLUTELY MAGAZINES

CHIS_FEB15_Travel_Q&A_v2.indd 68

ABS What destinations do you predict will become popular with tourists in the next couple of years? NJ Travel is a cyclical business. Greece was out of favour for a few years and came back strongly last year, for example. It’s sometimes predicated by exchange rates, but we also have old favourites such as France, Spain and Italy, which are always popular with the British. To some extent travel is shaped by life stages – backpacking pre-university, short haul or UK with young families, big trips for anniversaries or birthdays – and, of course, personal financial circumstances. Who wouldn’t go on safari in Africa once a year if they could afford it, or visit the Polar regions? We are all becoming more aware of sustainable tourism – the potential downside of travel if we aren’t aware of fragile environments and if we don’t care for those who live in destinations we visit. The jury is still out on all-inclusive holidays and whether they are good or bad news for host destinations but, either way, they are very popular with British visitors. I hope that, in future, people will travel perhaps less but for longer (it’s less damaging to the environment) and that they will make an effort to benefit local people, eat locally, not in big hotel dining rooms, buy locally for souvenirs and speak a few words of the local language. u sunvil.co.uk

Island Life Presenter Jamie Theakston’s guide to the Jewel of Kedah, Langkawi, Malaysia words ja mie the akston

LANGKAWI

L

M a l ays i a

angkawi is one of only four populated islands out of Malaysia’s 99 island archipelago, located 30km off the northwest coast. This much I learnt from my 6-year-old’s school project ahead of our trip. In fact, by the time we limped off our 12 hour flight via Kuala Lumpur, there wasn’t much I didn’t know about this jewel in the Andaman Sea. Being almost adjacent to the Thai border, visitors to Phuket or Koh Samui will be familiar with the Langkawi vibe and the island is fast becoming a bustling tourist mecca. Back in the day, Langkawi attracted seafarers and traders bringing spices and silks from China and India. Langkawi’s hidden coves were also a haven for pirates who ruled the turquoise waters of the Andaman Sea. It is a land steeped in legends and shrouded in mysteries. Its past is filled with legendary tales of wronged maidens and lovelorn princes. The bestknown legend is that of Mahsuri, a beautiful maiden who lived here some 200 years ago. She was wrongly accused of committing adultery and sentenced to death by those who were envious of her. With her dying breath, she laid a curse upon the island that it should remain barren for seven generations.

TRAVEL / MALAYSIA WHEN TO GO

void June – it’s very wet. I’d say the best times to visit is at the start of the year, around January or February time. I was warned by one of the locals that it can get busy during the Malaysian school holidays, when holidaymakers flock from the mainland. A

WHERE TO STAY

here are plenty of top notch hotels on Langkawi, most notably The Datai and The Andaman, but you’d be hard-pressed to find a better base for your holiday than the luxurious Four Seasons’ Resort, with its stunning pavilions and unrivalled service. The hotel is a village of pavilions, pools and beautifully landscaped gardens. We stayed in a Family Beach House, accessed via a quiet garden path that led to a private plunge pool and reflecting pond overlooking the Andaman Sea. The outdoor deck caters for lazy days with a large dining area and a sprawling day bed. The airy interiors accommodate two large living areas, a four-man spa bath, indoor and outdoor tropical shower rooms and a family-size walk-in closet. The children’s bedroom has an LCD screen television with a PS3 games console, with additional family-friendly amenities extending from beach toys and T

sandcastle-making kits to toiletries and board games. The Kids for All Seasons programme is a complimentary kids club that, whilst based in the childrens centre, uses the entire island as its playground. If our four and six-year-old boys weren’t flying kites or playing football on the beach, they were face painting or playing local instruments (thankfully, just out of earshot of one of the three restaurants on the resort that we frequented).

WHAT TO DO

f you’re not up for jungle trekking and rock climbing, there’s still plenty to do on the island. We spent an afternoon on bikes riding through the rubber plantations and paddy fields, stopping briefly to watch the fishermen return with their I

catch at the village of Kuala Teriang. The Mangrove and Eagle Safari (an excursion organised through the Four Seasons) was a particular hit with the kids. In 2007 it was declared southeast Asia’s first UNESCO World Geopark. 550million years of geological history have created an exciting natural habitat for walking fish, fiddler crabs, majestic eagles and kites, coiled snakes, otters and monitor lizards. It’s an ancient maze of limestone cliffs and tangled mangroves - a nature experience straight out of National Geographic, and we loved it. The kids fell in love with the mischievous macaque monkeys! If you want to get the best views of the island, you should head to the cable car at the foot of the Machincang mountains. Whilst on board the dizzyingly steep ascent you will see the Telaga waterfall and, if you’re lucky, hornbills and eagles. By the time we got to the top the cloud had moved in, but we still had a stunning panoramic view of Kedah and southern Thailand. One of the most beautiful places on the island is the Lake of the Pregnant Maiden, a fifteen minute walk through the jungle. According to legend, a celestial princess married a mortal prince and gave birth to a baby, which died soon after. Heartbroken, she buried the baby in the lake, and before returning to her celestial home, she blessed the lake so that any maiden who wishes to conceive and who bathes there would become pregnant. It didn’t deter my wife who, as far as I am aware, isn’t pregnant. u

TRAVEL / UK GETAWAY THE HOTEL

T

he handsome and intimate late 17th century former home of inspirational horticulturalist Rosemary Verey (whose beautiful garden frames the building) is the setting for this Cotswold hotel. Eschewing a chintzy or old-timey decor scheme, the house provides the ideal bolt-hole for stressed-out Londoners, a holistic hideaway for those seeking some pastoral downtime with the mod cons of their urban lives still intact. Our room was in the old building with a bay window overlooking the garden. Our bathroom was huge, with quaintly slanting wooden floors, double sinks and a rainforest shower, its glitzy tiles in contrast to the neutral decor of the bedroom. The spa experience was extended to the room with a huge hot tub featuring more knobs than we knew what to do with. Expect to be in your robe for much of your stay. With only 18 rooms, the hotel is boutique-y, and the spa (which is reached by a picturesque woodland walkway) is a big draw, with five treatment rooms, a sauna, steam room, relaxation room and – the jewel in the crown – a heated hydrotherapy pool, much enjoyed in colder months thanks to its steam-misted view of the surrounding cow-studded pastures. u

THE RESTAURANT

W

e dined at The Potager Restaurant – another reference to the esteemed Ms Verey and her famous ornamental vegetable garden. It makes sense then that the vegetables themselves come straight from garden to fork. Specialist vegetables are the stars of the plate here. The Sunday roast draws many a local, as we learned the next day at checkout – the whole house was abuzz with the kind of comings and goings you might expect at Downton Abbey, guests piling into the drawing room to start proceedings with a glass of fizz. The restaurant itself looks straight out onto the hotel’s main lawn and in the summer months meals can be enjoyed on the picturesque terrace. u

THE AREA

B

ibury is the prettiest village I’ve encountered in the Cotswolds (and just a short drive from the area ‘capital’ of Cirencester). Arlington Row is a strip of neatly assembled weaver’s cottages built of local stone – which makes a welcome change from the honey-coloured stone with which the area is so synonymous. The village sits astride the River Coln and next to the Bibury Trout Farm and Saxon church of St Mary. The cottages were built in 1380 as a monastic wool store and are one of the most photographed scenes in the Cotswolds. u

Master of Craft PROFILE

Designer, furniture maker and musician Derek Pearce on failing English, eccentric tables and exclusive clientele I n t e r v i e w N e i l M c K e lv i e

T

o describe Derek Pearce simply as a designermaker is not the half of it. Yes, he is best known for his exquisitely carved water tables, the graceful, witty ‘furnituresculptures’ that lure a devoted following to his workshop at Kew Bridge Steam Museum. But there’s much more to this master craftsman… At various times in what he rather conservatively calls ‘a multi-faceted career’, Derek has run puppet shows and devised street theatre, taught and lectured, performed with his own comedy band, composed music for TV (most recently

I ENJOY it when SOMEONE enters into the CREATIVE PROCESS Marvellous starring Toby Jones) and been a design consultant on films (on When the Whales Came he taught Paul Schofield to carve and Helen Mirren to polka). Oh, and he is currently building his own eco-house and recording an album with the Musical Director of War Horse. And all, Derek reveals with a smile, without English O-Level.

81 Chiswick_FEB15_Interior_Main.indd 81

‘I am dyslexic and that proved a real problem at school,’ he recalls. ‘In fact, I re-took English O-Level nine times in all – and I still couldn’t pass! Then I gave up. I thought, whatever I end up doing in life, it’s going to be without it. ‘Later, I graduated from Art School, took a Postgraduate Teaching Certificate and taught in schools and at Wimbledon Art School and Middlesex Poly. I must be the only qualified teacher without GCSE English. I’d get in touch with the Guinness Book of Records… if only I could spell Guinness.’ Raised in Birmingham, Derek fully intended to join the family building business, but that changed abruptly when it was sold. His background did, however, stand him

HOMES & INTERIORS / INTERVIEW

in good stead. ‘We had a joinery shop and I would always be in there messing around. So, by the time it came to woodwork lessons, I already knew the basic techniques.’ Despite his travails with English, Derek studied Furniture Design and then sidestepped into the music world for 15 years. It was a move to London that inspired the ‘making’ bug to bite again. ‘I was working as a stage carpenter and I used to develop my own ideas in the workshops – and one of those was the hippo table,’ Derek tells me. ‘That was

ABSOLUTELY MAGAZINES

Chiswick_FEB15_Interior_Main.indd 82

ILLUSION and

humour lie at the heart of these GLORIOUS CREATIONS

30 years ago. Then I spotted an ad for a Design Show in Time Out and I booked a stand. I sold the table, then someone asked for another and so it went on.’ Today, Derek’s furniture graces the homes of John Cleese, David Jason, James Dyson, Michel Roux and Julian Clary among others. And although his range has expanded, the water tables – featuring plunging, gravity-defying animals – remain his signature pieces. While illusion and humour lie at the heart of these glorious creations, they also require hard labour. ‘It’s a long process,’ Derek explains. ‘I have to find a nice lump of lime – the traditional carvers’ wood – and then rough shape it, hollow it out and dry it. That can take six months.’ From his workshop Derek also runs Kew Karvers, a group for those interested in learning carving techniques. It’s not, he emphasises, a traditional course. ‘I use chainsaws, grinders, sanders, chisels, anything to achieve the desired effect. And what I want students

to do is look at things in a different way. That’s what I’m all about.’ Derek applies the same imaginative philosophy to his clients. ‘I enjoy it when someone enters into the creative process. I had one guy who wanted a hallway table. There and then I drew an umbrella hanging off a console table – and he just said, “go ahead and make it.” People like that are treasures.’ And it’s clear that Derek’s customers feel the same about his work. ‘I had an email from someone in Chiswick who said, “I bought a table 20 years ago. It still gives great pleasure and makes a real conversation place in my home.” That’s fantastic. As an artist you can’t ask more than that, can you?’ u For information visit derekpearce.com

PLANT

HELLEBORE The beautiful Hellebore is often the first flower of the new year. Try planting a batch of mixed Helleborus to provide interest early in the year. You can grow them as a colourful block but Helleborus also look good with many other plants, so try them with ferns, Japanese Anemone varieties, Sarcococca and Paeonia to name but a few. kategouldgardens.com

o, what else is there to do to feel ready – or as ready as you’ll ever be – for baby’s impending due date. Personally, I’ve been thoroughly enjoying my antenatal classes with doula Bridget Baker; they’ve been instrumental in helping me to feel confident about a more natural birth preference (we steer clear of the word ‘plan’ so as to keep an open mind). Unsurprisingly, I was pretty naive about the whole process to begin with. I had blithely assumed I would labour in an obstetric ward; now I feel very happy about delivering in a midwife-led birth centre – and then only after attempting to labour for as long as possible at home. I’ve even been switched on to the idea of a full home birth for next time around (if I fancy another go, that is). Although the recent revisions to official guidelines, which now state that low-risk mothers should be encouraged to have babies at home, has stirred a bit of a backlash about state cost-cutting, there’s no doubt home birth can be safer (less germs) and more comfortable, as well as more sustainable. A relaxed mother-to-be is far less likely to require potentially stressful interventions. I wonder that many women, myself included, have been indoctrinated into thinking that hospital is the obvious choice for birth. But if you are low-risk and do arrange a home birth, you can still transfer to the hospital should you need to. What’s to lose? There’s also the question of my beloved first baby, my dog. If you have

been indoctrinated into THINKING that hospital is the OBVIOUS CHOICE for BIRTH one, now’s the time to get him used to baby’s things. The Darling Dog Company offers one-on-one training sessions for anyone nervous about introducing the two; you can read founder Louise Glazebrook’s innumerable glowing testimonials online. Caring properly for both a dog and a baby isn’t always easy, and too many people simply give up on their canine companion the moment the baby arrives. In Glazebrook’s view, a dog should never be a stop-gap while you wait to have a child. And for those who already have dogs, Glazebrook’s book has useful tips on how to keep your pooch occupied during periods when you are not able to get about as much. The final month before birth is also a good time to start tinkering with the nursery. If you’re anything like me, you’ve developed an unhealthy obsession with mummy blogs; the upshot is that you’ll amass interiors inspiration. Of course, most newborns will sleep in the same room as their parents, but you’ll need space for stuff like a changing table and mat, to save your back from the strain of the bajillionth nappy-change. Besides, doing up the nursery is the fun bit for when your nesting instinct has taken hold: the calm before the storm. And when everything’s ready… well, all there is left to do is wait. Good luck, and see you on the other side! u

KIDS & EDUCATION / SCHOOL TALK

Working partnership Shadow education secretary Tristram Hunt wants independent schools to work more closely with state schools, yet many are doing so already. Wo r d s A m a n d a C o n s ta n c e

I

n north Kensington, in the backwoods of Notting Hill, there is a state-of-the-art, brand spanking new school. This is Kensington Aldridge Academy, a secondary school for the local community. Nearly all the pupils live within a mile, the majority from the surrounding estates. It couldn’t be more inner city. Yet who are its educational partners? Two bastions of private school privilege – Godolphin & Latymer and Charterhouse. Eton College has sponsored a new school, too; Holyport College, a state free school which also opened its doors to Year 7 last September. The Independent Schools Council (ISC) – which represents the majority of the UK’s private schools - says nine out of 10 independent schools already take part in partnerships with state schools. Was Tristram Hunt ignorant of examples such as these when he pledged before Christmas to strip fee-paying schools of business rate relief? The shadow education secretary provoked a furious backlash from private school leaders when he said that, if Labour came to power, independent schools could lose tax relief worth a combined total of £147m a year unless they worked more closely with the state sector. Under the plan, independent schools would be expected to sponsor state academies, share teachers, train new staff, help state pupils apply to top universities and provide and run joint extra-curricular activities. Jo Heywood, headmistress of Heathfield in Ascot says: ‘Almost all of us are already involved in partnerships with excellent schools in the state sector,

THE ADVANTAGES of these partnerships ARE COMPLETELY TWO-WAY including many of the initiatives he has suggested, and we are fed up with these repeated attacks on our schools.’ Perhaps the problem for private schools is that, while many have established strong partnerships with the state sector, they just haven’t done a very good PR job explaining it. ‘If there is one mea culpa in all of this, it is that we haven’t done what we’re normally good at doing, which is blowing our own trumpet,’ says Charlotte Vere, the ISC’s general secretary. Mark Beard, headmaster of University College School in Hampstead, alma mater of the Honourable Tristram Hunt, himself the son of a baronet, accused Labour of

95 CHIS_FEB15_Education.indd 95

displaying great ignorance of how modern private schools work. ‘If the shadow education secretary were to visit his old school, what would he find?,’ asks Beard. ‘A nest of privilege, devoted to raising the children of oligarchs and City financiers in secluded, toffish privilege? On the contrary, he would find a diverse population of pupils, from all creeds and backgrounds.’ UCS spends £1m a year on fees assistance and has a range of collaborations with state secondary schools, including Westminster Academy, UCL Academy, London Academy of Excellence, and a number of primaries. It doesn’t take much digging on the websites of London’s top schools to find a list of their ‘community’ work. Latymer Upper, for example, runs a successful Saturday school, where local pupils are taught by its staff. King’s College School in Wimbledon has no academic lessons on Friday afternoons and the majority of pupils from Year 9 and above do volunteer work. Some sixth formers, overseen by a teacher, teach Latin to girls in Kingston, some coach rugby and cricket. Others help severely disabled children at a special school. King’s also runs top-up lessons in the spring term for hundreds of local Year 11 children preparing for their GCSEs in key subjects, plus an ‘Aspirations’ programme for gifted and talented Year 9 pupils from local state schools. ‘This is not all as selfless as it may sound,’ says King’s headmaster, Andrew Halls. ‘The advantages of these partnerships are completely two-way’. Halls says King’s parents know the programme has a cost – which they are effectively bearing in their fees – ‘but not one of us, not a single parent, would wish it otherwise’. u

t is very fair to say that 2014 was a year full of surprises. At the beginning of the year we were seeing unprecedented price rises, properties selling in a matter of hours, sealed bids, gazumping and gazundering and a buying frenzy that saw prices rise by about 20% year on year. The government decided that this boom had to be curbed; so in April they introduced MMR (Mortgage Market Review). It was like the brakes were applied overnight. Buyers were now faced in having to justify their gym memberships and their dry cleaning bills and as a result the market started to slow. By the middle of the year we were seeing signs that prices were starting to wobble and by the third quarter of the year prices had softened by around 10% - 15%. Sales were still brisk but only when vendors were realistic about prices and buyers could prove their income. Transactions were now taking a lot longer to exchange and both buyers and sellers started to get jittery. When we thought it could not get any worse the government decided to change the stamp duty rules. We had less than 10 hours to exchange as many deals as possible before the changes came into force. Luckily we were not badly affected by this sudden change, but it definitely opened up a can of worms in the short term. I really do look forward to 2015 (oh... once the election is out of the way).

n Ealing there is currently a lot of excitement, curbed with some speculation, about what 2015 holds in terms of property values and general activity in the housing market. Indeed, there has been some exceptionally rapid growth in Ealing borough with a reported increase in average values of nearly 23% just between November 2013 to 2014, according to Rightmove. We are still seeing a lot of new interest in the area from would-be buyers who are realising the attractions of Ealing vs. Chiswick or Richmond for example, but many local families are still upsizing and strengthening the demand for the area which has been enjoying something of a renaissance. There is huge demand for new apartments from the overseas investor market and some extremely high numbers in achieved price per square foot have been recorded in the Dickens Yard development. The much talked-about Crossrail project is of course a huge contributing factor. Work on the new look Ealing Broadway station will begin this spring in preparation for the arrival of the first trains (expected in 2018) and there is much visible regeneration around the whole area. I really enjoy seeing the fruits of all the labour on my travels around town and the support for appropriate local improvement by various groups and residents/business owners is refreshingly abundant. 2015 will doubtless hold some surprises but we are looking forward to the market gathering pace as we head into spring.

How much would refurbishment increase my rental yield? Is it worth spending a lot?

I

n the current rental market, tenants in Chiswick are looking for high specification properties with an immediate wow factor. Recently refurbished properties that offer a fresh and modern aesthetic attract not only a higher rental income but also access to a wider tenant base. Good photos of a refurbished property always stand out online and in brochures. For landlords, the return on investment is evident as refurbished properties achieve a premium of between 15% and 20% more than those which aren’t. Often just a repaint and new flooring can be all that is required. The presentation of the property can inspire confidence among prospective tenants that the landlord is active and interested, and we find that properties presented in good condition usually attract fewer maintenance issues along the way.

Mortgage myths cause families to miss out on their dream home

M

ortgage experts warn that mortgage myths are leading househunters across London and the South East to miss out on their dream home by failing to take advantage of the lowest base interest rates in more than a generation. Financial advisors are increasingly concerned that househunters are failing to make the most of a golden situation because many mistakenly believe that extra application checks introduced in April under the Mortgage Market Review (MMR) have locked them out. Adam Champion, New Build Sales Director at New Homes Group, said rather than being a time to step back, now is actually the moment for househunters to buy. “Also, the changes from the MMR were intended to root out bad borrowing,” explained Adam. “However they have also had the effect of frightening off customers

who are perfectly able to afford a mortgage. There are myths that the process is now horrendously complex – and that’s just not true. Lenders have quickly adapted and, in fact, responsible lenders like Halifax have had similar systems in place for up to 10 years, so there is little new here to be worried about. lindenhomes.co.uk

The times are changing!

ow you have to be over 50 to have been alive when Bob Dylan wrote this song but if there is one thing certain in life (other than death and taxes), it is that things change. Nothing stays the same forever. It is also true that it is those people who recognise change quickly and make adjustments to meet a new order of things that end up maximising the returns from the opportunities that are presented. 2015 will see a General Election with the best bet currently being on no clear majority party emerging. All of these factors create one thing – uncertainty – and when there is uncertainty people tend to sit on their hands and wait until they have the confidence to take action. Change is not an issue, unless we fail to alter our approach. There is a sailing analogy: “You cannot change the wind,

PROPERTY | AWARDS

The ESTAS awards Why is customer service so important for estate agents? Any agent not providing excellent service will get found out very quickly, especially in this day and age of social media. To help agents we’ve designed an auto Tweet facility so agents can get their positive feedback comments straight out on social media networks creating their own online ‘customer care’ PR campaigns. Why have the ESTAs joined forces with the Absolutely London titles this year? We just want to spread The ESTAs message to as many quality agents as possible and Absolutely has lots of those! They are just the type of agents who would benefit most from taking part. How can members of the public vote/ rate their agent? Your agent needs to be registered with us before you can rate them so if they’re not let them know and email us via our website.

Absolutely Property is joined by… SIMON BROWN

Why did you decide to start the ESTAS? My wife Sarah used to work for a local agent and it wasn’t until then that I realised how hard the job was. There are so many different factors to every deal and so many problems that can cause chains to fail. I realised then that most estate and letting agencies have a reputation they really don’t deserve. So I decided to start an award

Has it grown over the years? Absolutely! It’s gone from strength to strength because the concept is simple and the benefits to agents start as soon as they sign up. The ESTAS logo on an agents’ website sends a clear message to new customers that the agent believes in providing the best service and they’re happy to prove it. As part of the competition process we also provide detailed client feedback reports to all agents taking part which enables them to measure their performance, highlights their strengths and weaknesses and helps them improve their service.

Entries for The ESTAS 2015 competition close on 31st December. The 12th annual ESTAS ceremony takes place at the Hilton Park Lane on 17th April 2015. The awards will be presented by TV Property Expert Phil Spencer. Phil Spencer

Founder of The ESTAS, Estate & Letting Agent Awards

scheme which recognises agents for the levels of customer service they provided their clients. However, I didn’t want to go down the route of a judging panel. I think if you’re going to judge any company in any industry on service the best people to rate that experience are the customers themselves. We managed to get Phil Spencer, the TV Property Expert, involved so in 2004 The ESTAS were born.

How can estate agents enter? Agents can register by completing a simple entry form at www.theestas.com.

Flats in London: 10, St Stephen’s Gardens, Notting Hill

T

his one bedroom apartment is not unique in London even if (for anyone outside the capital), its asking price of £850,000 might be. Selling agent Gareth Kelly of Marsh & Parsons is consequently puzzled that it’s been viewed 5,000 times on Zoopla since he was instructed to sell it two months ago. Gareth, who is sales manager at his company’s Notting Hill office, has shown 40 people around the property and says its location, large floor-to-ground windows and high quality interior finish make it popular. Also, he says one unusual feature is that it’s a raised-floor apartment, which helps give it the feel of a first floor flat when it isn’t one. “The road is also a cul-de-sac, so it’s quieter than the surrounding streets,” he says. “And this is a really massive flat for a one bed in this area.” But when Gareth says ‘location’ is a factor, what he really means is ‘Notting Hill’. It’s one of those iconic London areas that has effortlessly become uber fashionable over the past three decades, a rise that’s been helped of course by Richard Curtis’s eponymous 1999

film starring Hugh Grant. And St Stephen’s Gardens has a film connection of its own. A property a few doors down from No.10 was a film location for Michael Caine’s 1966 film Alfie. Also, talking of celebrities, until a few years ago Stella McCartney owned a house in an adjacent street and Ruby Wax lives nearby too. People like this are drawn to this neighbourhood of Notting Hill because it’s the best of many worlds – near Portobello Road but far away enough not to be too mobbed during the annual carnival but not far from Bayswater and also walking distance of three tube stations on two different lines. St Stephen’s Gardens is also well placed for Notting Hill’s best eateries and places to hang out including Tom Conran’s champagne and oyster bars, The Cow and The Westbourne, both of which are just around the corner. On Chepstow Road there’s The Napoleon Bonaparte – famous for being pop band Blur’s favoured pub during the 1990s. Another reason for the property’s popularity on Zoopla is its price. Those outside London might baulk at £850,000 for a one bedroom apartment but in Notting Hill it represents reasonable value and onebedders closer to Bayswater and Notting Hill Gate can fetch up to £1.2 million. “The market around here, like the rest of

prime central London, cooled off rapidly this summer but recently it’s picked up again and we’ve been really busy – so I’m confident that we will find a buyer for this apartment fairly soon,” he says. For more information about the property call Gareth on: 020 7313 2592.

ART DECO is back in vogue Wo r d s N I G E L L E W I S

Taking a tour of 1920s style

A

rt Deco was once the only style of choice for any Londoner wanting to build or refurbish a home. But since its heyday during the 1920s and 30s its influence has retreated significantly and is only felt in a few spheres of London life. So widespread has this withdrawal been that RIBA recently mourned the number of Art Deco buildings being demolished, but even so London is still littered with buildings from the period including former factories, garages, offices, public buildings, tube and railway stations, hotels, theatres, cinemas, cafes, pubs, shops and, of course, homes. Individual Art Deco houses are everywhere from Purley in the

south to Highgate in the north, but it is the surviving apartment developments that bear testimony to the Art Deco ambitions of so many architects. Remember that in their day Charles Raymond Hood, Robert Atkinson and Harry Weedon were once as famous as Norman Foster, Richard Rogers and Zaha Hadid are today. But can you still buy their designs? There are 250 Art

139 STYLE BIBLE.indd 161

Deco properties for sale in London at the moment ranging from a £11 million, fourbedroom apartment in St John's Wood at the top of the market to a £240,000 one-bedroom apartment within Du Cane Court in Balham at the bottom. But as a quick look at these properties proves, it is difficult to pin down exactly what the Art Deco style is. Its influences are numerous and varied and include, for starters, the decorative arts of the late 17th century, Cubism, Bauhaus, Ancient Egypt, Japan, Africa and even ancient Mayan art. But what makes it easy to spot from the street is that nothing else looked like it, either before or after its nadir. The most famous example is Florin Court within the Charterhouse Square gated community in EC1, which was built in 1936 and has been used many times as the home of Poirot in the eponymous TV series. There studio apartments sell for between £250,000 and £300,000. But while its properties are sought after, it is within the world of interiors that interest in the style is gaining a new momentum. And it’s mainly because developers building prime properties in London are increasingly turning to the Art Deco palette when creating interiors. Interior designer Anna GraceDavidson of Anna Casa Interiors thinks this is because it's “both glamorous and timeless at the same time”, a quality that appeals to anyone trying to sell a property with a high price tag to a wide range of potential buyers. She also thinks it utilises the type of geometry that the human eye is naturally attracted to, although she attributes its more recent rise in popularity to the recent remake of F. Scott Fitzgerald's 1925 novel The Great Gatsby into a film. "I think people like it because the style's not too heavy, not too minimalistic and you can mix it with other styles without it jarring," she says. And as Jay Gatsby says in the novel, when asked if you can repeat the past: “Of course you can, of course you can!”
