Letter JULY 2013
T
here is something to be said for us Brits that, even though our summers tend to be a washout, we’ll jolly well make the best of them. Festival season is upon us and, if you didn’t fancy forking out the extortionate ticket prices for Glastonbury (or filling in the frankly baffling application paperwork) there’s still plenty of festivities to enjoy right on our doorstep. From the family friendly Party on the Pier to the many Ealing shindigs and the ever-popular House Festival, which this year takes place at the beautiful Marble Hill House in nearby Richmond. If you’re a rowing fan, turn to page 19 for Michael Wale’s interview with Olympic Bronze Medallist Alan Campbell as he prepares to represent the Tideway Scullers at this year’s Henley Royal Regatta. Elsewhere in the magazines we chat with actress Cush Jumbo (page 13), who will debut her one-woman play Josephine & I, at The Bush Theatre in July. The production is based on the life of Music Hall star Josephine Baker, and I’ll admit to only being familiar with the ‘image’ of Josephine before doing my research – that of her dressed in nothing more than a string of strategically-placed bananas – but her story is so compelling, inspirational and ‘stranger than fiction’, that it’s a shame she is not better known. It would seem that Cush is on a mission to change that – and I for one can’t wait to see the show. Make the most of the sunshine and get out there and enjoy all that west London has to offer. The glitz and glamour of the 1920s is currently all the rage, thanks to Baz Luhrmann’s film adaptation of The Great Gatsby, and The Other Typist throws us straight into the heady, gin-soaked world of New York City in 1925. find a way to fit into a world that actually wasn’t built for her. America was not ready for an incredibly famous black woman. Even then, Europe had a reputation for being more open-minded – they didn’t have rules about where you could sit and where you could drink water.
The story of Josephine Baker is quite an extraordinary one – what can we expect from Josephine & I? Josephine & I is not just about the story of Josephine Baker or me impersonating her. It’s about the effect that her story has on a young, modern girl and how their lives have parallels even though they’re many years apart. I think when you’re writing about someone from the past, it’s also important to make it about how it’s relevant to now.

How are you marrying the modern story with that of Josephine’s? I’m looking at the fact that human beings and industries about fame and money don’t really change that much. There’s always a price to pay for gaining power... the idea of ‘selling out’. Is anybody ever right about anything, does anybody have a right to judge anyone on the decisions they make?

Josephine was quite a liberated, powerful woman, whose routines were comedic yet highly erotic, but do you think that she was exploited? That she had to play up to a racial stereotype? At the time it wouldn’t have been a stereotype, they chose her because she was one of the best dancers on Broadway. She didn’t know that she would be naked for La Revue Nègre until she went to Paris. On the one hand they were definitely exploiting the dancers – Europe had a fascination with the exotic, with Africa, with the colonies – but on the other it’s hilarious because none of the black dancers had ever been to Africa in their lives, they were from New York! But, if dancing in a banana skirt and playing up to some kind of imaginary idea they had about black people gave Josephine that kind of lifestyle and power – why on earth would she want to go back to America and dance on Broadway? People still do that now. Sometimes you have to do something that maybe you don’t 100% believe in to gain a little bit of power in order to do the stuff that you really do believe in.

When did you get the idea to write this? I’ve been interested in Josephine since I was about eightyears old after seeing her in a movie called Zouzou. I was fascinated by her because she was pretty much the only brown star that I’d seen of that era. I loved those old movies as a child, but she was one who stuck out because she looked like me. I started collecting things on her but it was only about two years ago that I decided I wanted to write something about her. Is the idea of carrying the show by yourself daunting? Does it make me sound bad if I say not really? [Laughs]. I’m working very closely with Phyllida Lloyd (the director) and
Anthony Ward (designer) and the choreographers, so when I’m performing it I won’t feel like I’m by myself. I’m excited about it and it’s so different to anything I’ve done before. The 1920s seem to be enjoying something of a renaissance, thanks largely to The Great Gatsby. It must have been an exciting time, but do you think we look at it with rose-tinted spectacles? It’s interesting isn’t it: the whole explosion of Burlesque coming back into the mainstream, people wanting to go to Lindy Hop dances, harking back to
the past... it’s been coming as a revival for quite a few years now. It’s very easy to look back and think, ‘everyone wore flapper dresses and jewels and had a wonderful time’ – and I’m sure you did have a wonderful time if you were loaded! – but in terms of being an American, it wasn’t a great time to be a person of colour at all. If you were famous and a person of colour, sometimes it was even harder. Some of the stuff that Josephine went through – as much as it was about her spending money and being extravagant – was also about somebody who was trying to

Chiswick-based textile artist Rosalind Wyatt has undertaken a mammoth project; creating a modern-day Bayeaux Tapestry made up of 215 Londoner’s original garments – one for every mile of the Thames. World famous pop artist Sir Peter Blake has been given permission by Ealing Council to create artwork for a new £7m energy centre; part of the new St. Bernards Hospital. Mr. Blake has been commissioned to etch pictures and text into glass, working alongside architects Feilden+Mawson and glass expert Andrew Moor. The glass panels will depict wildlife and plants native to the local area.

hen you think of the Science Museum many images may come to mind: the grand, almost temple-like structure looming over the crosshatched Exhibition Road and the enormous illuminated globe that dominates the Space exhibit. But what you probably do not consider is the trove of curiosities and objects stored away in the Science Museum’s archive at the mysterious Blythe House. Originally built in 1899 to house the Post Office Savings Bank, it was designed by Henry Tanner who was also responsible for designing the Serpentine Gallery in Hyde Park. Beautiful and impressive from the outside, it houses not only Science Museum collections, but those of the V&A and The British Museum as well. On arrival I am greeted warmly by Rebecca Storr, the Collections Access Coordinator and Objects Administrator for Blythe House. I express incredulity at the very existence of such a place and as we begin our tour ‘Becky’ tells me that in its role as the Post Office Savings Bank, it contained one of the first examples of an open plan office.

‘The building was, decades later, leased out in the late 1970s to various users including Euston films,’ Becky continues. ‘They filmed Minder and The New Avengers here and it’s still really popular for filming today so we get a lot of requests, especially for the corridors and the stairways. Tinker, Tailor, Soldier, Spy, the remake, was filmed here.’
‘I see on my tour, a set of dentures, confirming dentistry is infinitely more terrifying than torture’ We arrive in the Aeronautical and Transport section, apparent by the multitude of model planes, trains and ships covering the shelves. The intricacy of these objects is astounding and my attention is immediately drawn to a beautiful wooden model Spitfire measuring about three foot long. These
models were not just for decoration. Many were tested in wind tunnels and made precisely to scale, with all the same materials, in order to predict the behavior of their real-life counterparts. I ask how they are stored as many, especially the ship models, look incredibly delicate. ‘All the rooms are humidity and temperature controlled, and fluctuations are measured,’ I’m told. ‘We check for pests as well… we have a really good pest monitoring system here.’ We leave Transport and walk down a windowless staircase (in actual fact, all the rooms are windowless in Blythe House due to the tight environmental controls) past some locked doors. Becky apologises and says there is radioactive material stored there, so we can’t see those particular rooms. I tell her that’s quite alright and hasten my step slightly. We next enter a room very similar to the last but filled with measuring equipment rather than models. This is home to some stunning wooden Herschel telescopes and one of Becky’s personal favourites: ‘It’s a seismograph from China used for measuring earthquakes.’ She gestures to an urn that has been cut in half and has dragon’s heads on either side, each holding a ball bearing in their

mouths. At the base, in corresponding positions, sit two frogs looking upwards with their mouths gaping open. The idea is that when there is a significant enough tremor, the ball bearing falls from the mouth of the dragon into the waiting maw of the frog. Not all that reliable but definitely beautiful. The next floor is Engineering and Tools, where I find the most striking items are the different sized and coloured spinning wheels. Sleeping Beauty’s worst nightmare, I think to myself. Then on to Communications where I am thrilled to discover that a phone that I actually owned (a Nokia 3310) is amongst the varied collection. As we descend further into the bowels of the building, things take a turn for the medical. We have reached the home of the Wellcome Collection, which is on permanent loan to the Science Museum. We enter a room of prosthetic limbs ranging from the basic peg leg to much
more advanced joints. Becky points out a particularly clunky looking leg. ‘It’s a war amputee’s who refused an articulated limb and made extensive repairs using both cement and glue. He became a roof thatcher and when he eventually accepted a conventional limb, it had to be heavily weighted.’ These limbs were sadly poignant, especially the ones designed for children, a lot of which I’m told suffered the horrendous effects of thalidomide in the fifties. I glimpse into Oriental Medicine and am greeted by hideous totems and smiling Buddhas. I am told we have missed the Vibrator Room, which is a pity. Although we do visit a room dedicated to torture instruments, it is the final room, located in the basement of the building that truly frightens me. Dentist chairs in all shapes, sizes and materials (including plush velvet and carved mahogany) lurk in every shadow. The last thing I see on my tour is a set of grinning dentures,
confirming in my mind, that dentistry is infinitely more terrifying than torture. One of the most surprising things about the collection at Blythe House is its extensiveness. But when I learn that 85% of the objects owned by the Science Museum are stored here, it makes perfect sense. So, out of the many fantastic things, how does the museum decide which to display? ‘The researchers come up with a concept,’ says Becky, ‘then they come to Blythe to look at the items. From that, we form an exhibition.’ Blythe House is not open to the public so it’s a case of biding your time until these fabulous objects reach the museum. It’s Henley Royal Regatta time again and Tideway Scullers will be there aiming to win. Michael Wale talks to teammate and Olympic Bronze Medallist Alan Campbell 19 19

he first week in July means it’s Henley Royal Regatta time – the Royal Ascot of rowing – when the finery of women’s haute couture is joined by their husbands’, reflecting their rowing past in often highly coloured and somewhat eccentric blazers. But what Royal Henley is really all about is the performers. The oarsmen and women competing in the greatest rowing club event in the world, and right up there in front will be Tideway Scullers, based just below Chiswick Bridge at the finish of the Boat Race. Their famous yellow and red colours have been at the forefront of British rowing ever since they moved to their present location 30 years ago, when they bought the land and built their boathouse. Such is the importance to them of a win at Henley that they made their plans last summer. The Thames Cup for club eights is their prime choice, and their boat will
contain their club captain Nathan O’Reilly, who has already won at Henley with Newcastle University. But the Tideway Scullers’ main man is Alan Campbell; 2012 Olympic Bronze Medallist as a single sculler and three times winner of the Diamond Sculls event at Henley Royal. The Diamonds, as the event is known, dates from 1844 (the Royal was first held in 1839) and is the toughest event at the regatta. A single man against another over the mile and a quarter course. No room to hide. No excuses. The amazing fact about Richmondbased Campbell is how quickly he succeeded once he had arrived as a member of the Army eight to race on the Tideway in the Head of the River. Originally from Coleraine, Northern Ireland, Campbell fell in love with the Tideway Scullers club, and never wanted to leave from the moment he set foot there. ‘I really enjoyed being here, and just kept coming down,’ he admits, ‘Bill Barry,
whose father had been at the club was a coach there. I started rowing like a dog. I told Bill that I wanted to win an Olympic medal.’ Soon after he entered his first single sculls event at Henley Town and Visitors Regatta, which happens after the ‘real’ Henley and is for lesser competitors. Delightful but relatively unimportant. Campbell won but, more amazingly, the following year he won the Diamonds at Henley Royal. Modestly he says, ‘I’ll admit now that there was an element of luck. It wasn’t the best year.’ But what is really different about Campbell, apart from his superb skill at sculling, is how he has managed to stay based at Tideway Scullers throughout his international career, when the demands of British rowing require the members of the GB squad to be based together at the Leander Club, Henley. He says, ‘it was my decision. Bill never forced me to stay here. I like being at Tideway Scullers. I’d just be another athlete at Leander. I love

to represent this club – they support me better than other clubs might.’ And he joyously admits a secret that has been kept until now: ‘I wore Tideway Sculler red and yellow socks in the final of the Olympics – but I had to take them off when I went to collect my medal on the podium because of the GB branding.’ As for visitors to Henley, it is best to travel from London there and back by train. Extra trains are put on from Paddington, and Henley’s station is a gentle ten minute walk from the event.
For the week this small market town has its 10,000 population almost doubled. As you walk from the station you will first feel the excitement as you cross the picturesque bridge across the river that leads you to the regatta entrance. On the left is Leander Club, next to the tents where the competitors’ boats are kept. Next to that are the immaculate lawns and setting of the Steward’s Enclosure for members only, or those who are their guests. To enter, women’s skirts must reach below the knee.
But the great attraction about Royal Henley is that most of it is free. You can walk down the towpath, bring your own picnic and sit beside the course and watch the competitors row past. Even better is to walk to the start of the racing and experience the pre-race tension as the opponents sit side-by-side awaiting the umpire’s instructions behind them as to when to start. Alan Campbell is great friends and trains with, when he is in London, New Zealand Olympic Gold Medallist Mahe Drysdale on the Tideway. He beat Drysdale in the Diamond Sculls in 2007, and recalls that on the start of that year the two friends were not like any other Henley competitors when they had a chat and laugh with each other at the start. The water at Henley is relatively flat compared with the tidal vagaries of the Tideway. Alan says: ‘my skill level is higher than for a long time now that I’m back training on the Tideway.’ And he adds one major reason why he has stayed with one club: ‘Tideway Scullers School is the only club that promotes sculling. Good scullers will always produce good oarsmen and woman. The Right Direction Absolutely talks to David Wellesley Wesley about inspiration, imagination and The Independent Schools Show
So, what exactly made you launch the ISS? It was actually the result of chance encounter with my old school in 2006. That, and an obvious lack of information for parents when choosing the right school for their child. League tables had far too much influence and prospectuses all seemed to say the same thing. I wanted to do something that would change this. How does the ISS help potential parents make their decision? Firstly, ‘The Theatre’ provides lessons in education – we create talks which are of maximum value to parents themselves. Secondly, there’s the ‘Wise Heads’ area, which provides free, independent and impartial advice on all pedagogical matters. Finally, and probably best of all, representatives from each of the 170 exhibiting schools are there for parents to talk with faceto-face. It’s especially good for busy parents, as all your questions can be answered quickly under one roof.
What was your personal experience of school life? I started off at The Mall School in Twickenham, before moving to Ashdown House at the age of eight, and The Kings School, Canterbury, at 13. I loved them all. Personally, I don’t think London is the best place for teenagers, so I’m a firm believer in weekly boarding at that stage. Not only does it let you fit in vast amounts in a school day, but you’re also surrounded by all of your best friends. It’s a great way to nurture a child’s interests, confidence and imagination. How has the show developed and what can we expect this year? New for 2013 is the London Schools Pavilion, a selection of leading local nursery schools and pre-preps. In fact, each year we attract a finer selection of school options. For instance, this year Winchester and Eton are coming for the first time. We are very excited to have such a wide range of prestigious schools on board.
What will be the next big education trend? ‘Teaching in the round’ – that is to say, teaching in smaller groups with far more student-teacher interaction. I’m also expecting to see a reduction in final exam assessments and an increase in continuous assessment, much like the GPA system in the US. And finally, what do you hope parents will take away from a day at ISS? I would hope that they’d find attractive solutions to London’s crazily competitive places. There’s a vast amount of schools on offer, each with a different curriculum and ethos. Consider alternative options – a different route isn’t necessarily a bad one. For example, two siblings may well attend completely different schools and then converge at university level. It’s worth having an open mind. State-funded boarding schools are back in fashion with Eton’s headmaster leading the way, reports Amanda Constance
he English boarding school. For many, it’s a term that conjures up Dickensian institutions where the upper classes send their offspring to be trussed up in top hats and tails, deprived of love and decent food, before they are released, years later, to run the country. Tony Little wouldn’t agree. The headmaster of Eton College is a vociferous advocate of a form of schooling that many regard as archaic. He believes that boarding encourages the development of both self-confidence and a sense of purpose. Though few would argue an Eton education is the best money can buy, the money in question is an awful lot, with basic annual fees coming in at more than £32,000. But Little believes state-funded boarding schools can deliver much of what Eton can – and for far less money. To that end, he is currently in talks with ministers about the creation of a national network of state boarding schools. ‘In Britain, we have an internationally recognized approach to education through boarding. In the state sector, it has only been in the last year or so that there has been a growing realisation of how well this can work for young people. I think we would benefit nationally from having a good quality boarding network across the country, close to where young people live. With such a network, there’s a good chance exam results would go up.’ At present, there are 34 state boarding schools in Britain. The buzz about
opening more can be seen in the marked rise in applications for boarding status from academies, educational charities and free schools. In the first four months of 2013, the State Boarding Schools’ Association (SBSA) said it had received more than 20 applications from those interested in opening new institutions. This compares with just one application a year in the past five years. These new schools differ from traditional feepaying boarding schools by charging only the cost of boarding, reducing the demands on parents’ bank accounts from an average of £30k a year to a more manageable £10k. According to Janette Wallis, senior editor of the Good Schools Guide, the recession is forcing cash-strapped parents to shop around and many ‘feel there are better state opportunities available than in the past.’ Ten thousand a year is still a substantial outlay but it often cancels out childcare costs. There is also a recognition that boarding has changed dramatically from the days of ‘fagging’ and flogging. The new, modern institutions take pastoral care as seriously as academic achievement and most offer weekly boarding. And this arrangement can work well for 21st century families. Hillary Moriarty, director of the Boarding Schools’ Association, suggests that changes to parents working lives have increased the appeal of boarding. ‘It is an attractive proposition for many families, particularly if mum and dad both work. It creates the
idea of “On Monday we all go to work, see you on Friday.” If you’re on a train at 7am, get home at 7.30 or 8pm, there’s very little time for the kind of ideal vision of family life that we had 30 years ago.” Three academies opened boarding facilities last year, with five more announcing plans to do the same. The Wellington Academy in Tidworth, Wiltshire, sponsored by the £30,000-a-year Wellington College, also offered boarding places to 100 pupils in 2012. And Durand Academy in Stockwell, south-London, has plans to open a £17m ‘Eton of the state sector’ for 600 innercity pupils in the village of Stedham, West Sussex. And next September, Eton will open Holyport College, the first free school sponsored by and modelled on Eton, in the village of Holyport, near Maidenhead, Berkshire. Eight miles away from Eton itself, it will eventually take 225 boarders and 275 day pupils, who will use many of Eton’s facilities, including its magnificent sports grounds. Not surprisingly, more than 700 families have registered their children – even though some are only two years old. ‘If I could bottle it, what I want to come out of Holyport is exactly what I see here [at Eton],’ says Tony Little, ‘young people coming out with this sense of self worth who are going to be engaged citizens, who believe in the are of the possible, roll up their sleeves and get things done.’ For more information visit sbsa.org.uk 29

ear readers, My goal is to provide Absolutely readers with some useful information to help you look and feel great, and for your Wellness to be optimised. Last month we looked at what Wellness is and summed up that ‘wellness is being able to do what you want to be able to do’. In this sense, wellness is very personal to each and every one of us. I want to develop this theme this month - especially in relation to exercise and physical activity - namely how we are all different and why what YOU want to achieve is personal. In short, there is no ‘one size fits all’ approach to wellness and being fit for life. Let’s take some examples. What motivates one person wont necessarily motivate another. How one person can eat what they like and another only has to look at something a little bit naughty and they put on a few kilos. What stresses one person positively relaxes another. One size doesn’t fit all This individuality has to be taken into account when we look at wellness planning (be that exercise, diet, state of mind). The biggest reason for not exercising or eating the wrong foods has to be lack of time, often involving work pressures, family commitments, so again we need to plan for this based on YOUR personal circumstances. On this basis, as a personal trainer, it’s extremely important to understand as much about you as possible. In the film Shrek yes I did just jump to a Dreamworks family movie - Shrek mentions to Donkey about understanding ogres and compares this to peeling the different layers of an onion until he gets down to the core. I know it’s a slightly crude analogy, but this really is what we do at Hogarth and The Park Club in our initial Wellness Consultation - we get to understand YOU. The skill to do this well involves the use of brief motivational interview techniques, combined with time and personal attention.
And the result of this investment for both parties is that a genuine personalised wellness plan can be created that’s enjoyable, relevant to YOUR goals as well as safe. Of course, precautions are made to make sure YOU are safe to exercise,change your diet or life habits. We look at your age, family history and any pre-existing conditions that may effect your ability to exercise. We measure resting and active blood pressure and offer to measure cholesterol too. These are all personal to you. You may have knee problems, back pain or something similar, so the plan will need to take account of these. Where more serious conditions apply, more specialist support should be sought and a good personal trainer will have a network of help on hand from osteopaths, chiropractors, acupuncturists, even stress managers etc. Once a safe plan has been created, it’s time to put the plan into action. It’s all about you! In our Clubs, we provide five one hour sessions (Wellness Consultations) as standard for a new member. Normally the first of these will cover as much about YOU as possible - with time to build the relationship further in the remaining appointments as well as inclusive monthly sessions with your personal trainer thereafter. The relationship (and understanding you) is developed informally outside of personal trainer sessions too. Basically, it’s all about YOU. So, in these remaining sessions we normally focus on making the most from the Club in relation to your goals. Group activity in the studio is especially motivating, habit forming and social. In the gym, the equipment we have is chosen to provide as much support, variety and motivation as possible. Our personal trainers help maximise this potential based on who you are and how you tick. Assistance is given in correct seat measurements, speed of movement.
We help set you up on chosen equipment, based on the agreed plan. Once comfortable, the opportunity to personalise the set up of equipment for entertainment, exercise tracking, even the ability to do work whilst exercising can be achieved. At The Hogarth (and soon at The Park Club), the new Technnogym cardiovascular equipment has ‘Unity consoles’. These are android based platforms that allow you to set up the console using a chosen device (key, phone, tablet - again YOUR choice) so that it automatically shows your favourites. This ground-breaking technology in the gym gives you extra motivation. Choose a virtual run along the Pacific Highway, choose radio, TV, Facebook, Twitter feeds. For those of you who don’t join a gym because work has a habit of consuming too many hours of your life to give you the time to look after yourself think again. With Unity you can even SKYPE whilst you are on the run! You can also track what you do outside the gym - at home, on work trips, on holiday - in-fact anywhere you want to using the Technogym Cloud - all supported by your own personal trainer if you want to. I always advise that people see a professional for a brow style – if a celebrity’s brows suit you naturally, then it’s fi ne to be inspired by them, but don’t just assume they will suit you – brows need to be very delicately shaped to complement the contours of the face, which are different in us all. To achieve this fuller brows look you need to leave your brows to grow for as long as possible - the cycle of hair growth is around 8-13 weeks so it’s best to be patient and prepared to wait a while for them to grow back before visiting a professional. To give the illusion of a fuller brow I recommend a tint, as it can really help make the brows appear thicker and fuller, or if you’d rather, use a pencil like our Double Ended Pencil to fi ll in any gaps. Filling in brows will make them look fuller and defi nes your eye area. Each morning, apply a brow tamer to ‘set’ the shape of the brows for the day – this is even more important when you have a fuller look”. Slip away from Shepherd’s Bush station, down Richmond Way and you won’t miss the K West Hotel & Spa – a strikingly modern building, which underwent a £2million refurbishment in 2010. Take the lift down two floors et voila – you’re instantly met with that aromatic, calming spa smell and the sight of people milling about in waffle bathrobes and flip-flops. The K West Spa is home to the UK’s only Snow Paradise room, where temperatures dip below -15° C, but I’ve decided to go for something slightly less hardcore. The K Cleanse is a combination of allover body massage and exfoliation, apparently using extracts from precious stones and minerals, and followed by a cupping system which stimulates blood flow and relaxes the muscles. It’s quite a bizarre sensation at first (I imagine it feels exactly like dragging the nozzle of a Henry Hoover across your body), but you quickly get used to it and relax into the massage. After showering, my skin feels incredible; plump, fresh and silky smooth. It even appears to be glowing and I’m convinced that the cellulite which graces my love handles has faded. It’s a shame to cover up upon leaving the spa, but, luckily Westfield is just a stone’s throw away; enticing you to splash out on a new bikini to show it all off. From £110, k-west.co.uk

The bungalow that used to occupy the site needed to be demolished and the clients, the Hearne family – though extremely fond of their abode – accepted that it was in need of some serious updating. ‘The surrounding area has become an amalgamation of varying architectural vernaculars.’ Adam Tarr, founder and Director of disPLAY architecture begins; ‘the original chalet bungalow was at complete odds with the street scene – I think that’s a polite way of saying it was an ugly house!’ After three previous architects’ attempts at obtaining planning permission from the Council were unsuccessful, Adam stepped in to create a home that didn’t look out of place in the street but, more importantly, fulfilled the client’s wishes. Adam has an infectious enthusiasm for what he does and has created a string of contemporary houses across west London since founding disPLAY in 2004. For the Chiswick project, he explains that all parties agreed to allow the design to be driven ‘organically’, meaning that there was no fixed or preconceived notion of what the final design would look like. Hailing from Manchester School of Architecture, Adam mixes a heavy dose of engineering into his design schemes and uses a variety of scientific studies to really understand the constraints and opportunities of the plot. ‘An example of one of the desk studies we carried out on the project was Annual Shadow Analysis’, he explains, ‘which was digitally created and took into account shadows cast onto the site by surrounding buildings and trees. Equipped with all of this analysis we were able to match the environmental requirements for each of the requested rooms to what was available on the site. Matching up the study with the light and things like that. From there, it began to narrate form and appearance.’ 53

As this has been called an environmentally conscious build, I ask what kind of technology was used to make the house an eco friendly one. ‘There is a whole raft of environmentally friendly technologies which reduce the reliance on utility companies for the clients.’ Adam replies. Around 50% of the house is clad in sustainably sourced western red cedar wood, and there are some rather modern additions such as heat recovery units in the basement and thermally efficient glass. The property actually produces 25% of its own energy on site. Also included in the scheme are the use of 90 ft deep geothermal boreholes, which are drilled under the driveway to store energy from the ground to heat water. The subject of solar panels is touched upon, but Adam explains that; ‘solar panels wouldn’t have been as productive and wouldn’t have saved the client as much money as the boreholes.’ One of the most interesting things about disPLAY is the way they combine ideas from totally different schools of thought, such as Game Theory, which is the study of strategic decision making and is mostly used by scientists when studying wildlife, but which can also be applied when trying to influence the behaviour of people. Adam explains: ‘we use Game Theory in our projects, for example, in one of our buildings in Cobham, we have a waterfall in the main foyer that changes colour depending on how much energy is used. People will actually go round turning off lights to change the colour of the waterfall from red to green.’ The idea of an ‘organic process’ is an interesting one, but in practice puts a lot of trust in the person implementing it. ‘We are fundamentally focused on process,’ Adam says, when I ask about his architectural ethos, ‘I am always less focused on how it (the project) actually looks at the end.’ For someone outside of the industry, this seems like quite an extraordinary way of working but, judging by the stunning results, it’s clearly one that is successful. displayarchitecture.com; Photography by Charles Gervais, bothhemispheres.com 54

W
e Brits are a nation of cheese lovers and, even at a time when the majority of us are feeling the pinch, we still love to splash out on our favourite fromage. One man who knows this better than most is Teddington Cheese owner Tony Chuck, who has a keen nose for business as well as for food, having previously worked as a dairy buyer for Sainsbury’s. When we meet at the Hill Rise site, I feel like the proverbial kid in a candy shop at the neatly displayed range of goodies. ‘We’re a cheese shop and we’re not a deli’ Tony states and, though there are a few hamper favourites and accessories for sale – plus
a small range of wine – it’s cheese that fills the shelves and fridges. The original Teddington Cheese branch opened over 15 years ago and, though it’s always been popular, it’s Tony’s astute business sense that has seen Teddington Cheese prosper since he took it over in 2005. The company has embraced changes in technology (Tony estimates that 40% of trade is made online) yet the shop retains the charm of a local independent and is clearly a strong part of the community.
MASTERCHEF
A new string to the Teddington Cheese bow is the recent addition of evening Cheese Masterclasses, held directly on the shop floor. ‘We started them on a few trials last year, around October
time.’ Tony says. ‘We take small groups through certain facets of cheese... We also ask them beforehand if there’s anything specific they want to learn about.’ So far the classes have been a huge success and numbers have been rising. This ties in nicely with the interactive quality of the shop and, upon visiting, it’s clear that Tony is more than generous with samples and clearly knows his stuff. There’s over 140 different cheeses in stock – including a strong variety of British brands – and though changes are made throughout the year, it’s good to know that the best-sellers rarely change. But what is the nation’s – or at least southwest London’s favourite cheese? ‘It’s still cheddar,’ he replies without skipping a beat, ‘we do a really special one called Vintage Lincolnshire Poacher that’s 30 years old.’ And with that, we get stuck in. The wedding industry will always be subject to various fads and fazes, but this is one that will no doubt stick around for some time. Wedding cheese cakes are ostensibly similar to the traditional tiered wedding cake, but are made up of wheels of cheese instead of sponge. Tony estimates that their popularity has trebled in the past two years and the various designs can be decorated with flowers and traditional embellishment. Because cheese proprietors eschew the normal inflated prices of the wedding industry, they’re also surprisingly affordable as well as being quirky and, most importantly, delicious. 65

Glazing a Ham
As a large amount of salt is needed to cure a ham, a little bit of sweetness added to the finished item is highly complementary. You can achieve this by serving the ham with something sweet yet acidic, such as Cumberland or cranberry sauce, or by baking the cooked ham with a glaze. Often the former makes a good base for the latter, and it wouldn’t be considered wrong to do both. MUSTARD AND BROWN SUGAR GLAZE 1 tbsp Dijon mustard 1 tbsp grain mustard 3 tbsp soft brown sugar

BLACK TREACLE AND SPICE GLAZE 2 tbsp black treacle 1 tbsp golden syrup 3 tbsp stout ½ tsp ground coriander ½ tsp ground cinnamon Apricot and ginger glaze 3 tbsp good-quality apricot jam 1 piece of stem ginger, finely chopped
To glaze a ham
Peel off the skin (not the fat) while the ham is still hot; this is very tricky to do neatly once it cools, so wear a pair of rubber gloves to guard against the heat. If you’re a stickler for presentation, score a neat, criss-cross pattern into the fat, though a few slashes will suffice if you’re less particular. Prepare your glaze and rub it into the fat. The suggested glazes above are easy to make and are really delicious, but for a very simple alternative, brush a tangy, thick-cut marmalade or redcurrant jelly over the ham. Stud the surface with cloves, if you wish, then bake the ham in a hot-ish oven (200°C/400°F/gas mark 6) for 20–30 minutes, until the fat is wonderfully caramelised. Slice and serve hot, or allow to cool if you prefer it cold.

wrap the loaf tin with baking parchment and foil. Place the container in a roasting tin and pour enough hot water around it to reach halfway up the sides. Cook in the oven for 1–1½ hours, until a metal skewer inserted in the middle comes out piping hot. 5. When ready, if you’ve used a loaf tin, place a weight on top of the foil to compress the pâté, then set aside to cool. Once cold, place in the fridge overnight. 6. Serve in slices with a small leaf salad and some cornichons. The first slice is always the most difficult to remove and then it is far easier to ease out. PORK & WALNUT PÂTÉ Serves 10–12 Takes 3 hours, plus overnight setting. Ask your butcher to mince the belly of pork for you, or do it yourself by roughly chopping it and then blitzing in a food processor. If you’d like a strongly flavoured pâté, replace the lamb’s livers with the same weight of pig’s liver. 600g (1lb 5oz) minced belly of pork 250g (9oz) minced shoulder of pork 200g (7oz) minced lamb’s liver Freshly ground black pepper Sea salt 6 juniper berries, crushed 2 garlic cloves, crushed, peeled and diced Pinch of mace 175g (6oz) chopped walnuts 1 egg 75ml (3fl oz) Armagnac 1. Preheat the oven to 170°C/325°F/gas mark 3 and lightly oil a 900g (2lb) terrine dish or loaf tin.
PORK & WALNUT PÂTÉ 2. Place all the minced meat in a large bowl and add some seasoning, then the juniper berries, garlic and mace. Mix with your hands to combine evenly. 3. Add the walnuts, egg and Armagnac, mix well and place in the oiled container. Press the mixture down and give the container a few taps on the work surface to remove any air pockets. 4. hen thinking about going out to an Indian restaurant, it’s hard not to immediately picture the usual fare. The same dishes in every menu, bad decor and the use of so many chillies you feel like you might combust. Fortunately for those who appreciate the cuisine of the subcontinent, Potli, located on King Street, falls foul of none of these usual clichés. Potli styles itself as an Indian market kitchen, drawing inspiration from food markets and street vendors hailing from various locations in India, including Chandni Chowk in Delhi and the famous Chowpatty beach of Mumbai. Potli brings these authentic and exciting dishes to the

It was also recently included in Tatler’s 2013 restaurant guide. Quite an accolade. Having immersed ourselves in the menu and learnt a little about the provenance of that which was on offer, my friend and I decided to dive in without hesitation. We ordered a tandoori sharing platter containing chicken, lamb, seekh kebab and tawa macchi (fish curry) to begin our evening, accompanied by a ‘Berry Crush’ cocktail (essentially a red berry mojito). The platter was excellent, the meat was beautifully marinated so as to retain its own flavour and the refreshing cocktail complimented it perfectly. As we moved on to the main course, I thought it might be worthwhile to try
something you don’t normally see at a traditional curry house and I opted for a prawn Narkel Diye which was comprised of king prawns cooked in coconut milk and flavoured with mustard and coriander. It was exceptional and remarkably light, with the mustard and coriander taking away the usual sugary flavour of the coconut. My friend went for a twist on a classic with a lamb shank Rogan Josh which, as you would expect, was rich and satisfying without being cloying. Proceedings were then rounded off with a mango crème brûlée and coffee as we enjoyed Potli’s subdued decor and convivial atmosphere. With exceptional, authentic dishes and surroundings, Potli brings the culinary heart of India to west London in a unique and stylish way. 71

Katie Jones seeks relaxation and a sugar-free recharge in southern Spain’s luxurious SHA Wellness Clinic
E
very day, without fail, I find myself in need of a sugary, three o’clock pick-me-up. It doesn’t matter whether it’s biscuits, chocolate, or a saccharine drink, these little daily indulgences are my weapons of choice in the battle against the dreaded afternoon slump. I know, of course, that it’s not the healthiest of choices, but my sugar cravings are too strong to be ignored. I needed a solution, and when I finally found one, it just so happened to be in the ambient micro-climate of southern Spain. Lucky me. Nestled on a hillside in the Sierra Helada Natural Park is the SHA Wellness Clinic, a sprawling expanse of whitewashed buildings boasting stunning views. Providing an oasis for those seeking a detox or relief from more serious health conditions, the foundations of SHA are rooted firmly in the science of
macrobiotics; the term derives from the Greek macro, meaning long or great, and biosis, meaning life. Leading the quest for this ‘long-life’ is SHA founder Alfredo Bataller Parietti, who I meet upon arrival. I have to admit that I was nervous about the imposed diet; I am not good at being told what to eat. My day could include three balanced meals, but on the other hand, it might just be dinner and snacks – it’s anything but balanced. I voiced these concerns to Alfredo, yet he assured me that the diet would be ideal for a vegetarian like myself. The plan regulates energy levels by balancing the nutrients that the body receives, rather than feeding it what it craves. Guests at SHA are introduced to the menu of medical, aesthetic and therapeutic treatments with a series of meetings at the beginning of their stay. There is a food consultation in which the myths of this vegetable and whole
grain-friendly diet are broken down, aesthetic consultations in which you can discuss conditions or imperfections, and a full medical check-up. During my food consultation with Dr. Kenneth Prange, I realised that this diet is not as restrictive as I had previously thought. It is true that animal products, such as meat and dairy, do not feature regularly on your dinner plate, but naturally sweetened desserts and a whole host of other inventive and exciting ingredients get a chance to tickle your taste buds. What impressed me most at this wellness haven was the level to which you could tailor your experience to match your particular dietary, medical and aesthetic needs. I was assigned to the ‘Biolight’ diet during my stay, a healthy, middle-road menu for those who want a detox, but who aren’t necessarily looking to shift pounds. There is also the Kushi diet, a stripped-back, extra-light menu

of salads and soups, and the gastronomic SHA diet – many an evening was spent eyeing-up the pungent steam-filled cloches as they passed our table in the Shamadi dining room, on their way to SHA menu devotees. Lunch was the first meal that I tucked into at the clinic. I had a cucumber, dill and yoghurt cream soup, which was perfectly fresh and zingy. This was followed by a modest portion of spelt tagliatelle in a creamy pesto sauce, garnished with crispy basil chips and toasted pine nuts. Happily for me, meal times on the Biolight and SHA menus are always split into a starter, main and a dessert, tricking my stomach into believing it was consuming more food. This fact – coupled with the macrobiotic teaching that digestion starts in the mouth so food must be chewed properly – meant that mealtimes were generally a pleasurable affair and I felt satisfied for longer. The food at SHA was a welcome surprise – head chef Pablo Montoro served inventive and delicious alternatives to desserts, sweetened with barley malt or rice syrup. I even had a spelt bread pizza one joyous evening and the most mouth-wateringly succulent grilled scorpion fish with beetroot foam, grated tonka beans and black fennel tempura.
Once you are alive and kicking, the fun really starts. SHA offers macrobiotic cookery classes, healthy eating seminars and a wide variety of fitness classes, both inside the state-of-the-art gym and outside on the sun-drenched terrace. I chose to spend much of my time in the spa, where the gentle sound of trickling water follows you everywhere as you float about in a fluff y white robe. The lymphatic drainage massage is highly recommended to aid the detox, coaxing any lingering toxins from your body. The spa has one of the most impressive menus I’ve ever seen, and guests can enjoy all manner of traditional treatments as well as some of the most technologically advanced aesthetic procedures in the world. After days spent swimming, exercising, and spa-ing, I collapsed onto my humongous bed to watch the twinkling lights of houses down on the hillside as my fi nal day drew to a close. I’m happy to report that I’ve stuck to my diet since arriving home, encouraged by the threat of relapsing back to sluggish energy levels. itting high above the shores of Lake Geneva in the French spa town of Evian, the serene Hotel Ermitage seems to float upon a cloud of well-being and tranquillity. From the moment I stepped into my room and opened the French doors to the clear lake air, I understood why the resort has been a Mecca for rest and recuperation for over 100 years. Taking the lift from my floor directly down to the hotel’s Spa Quatre Terres, I was transported to Bali via India and China through the dark wood decor and the healing hands of expert therapists. There’s a holistic focus – my massage therapist incorporated the use of healing crystals while giving me one of the best deep-tissue massages of my life. After recuperating on a soft bed with a glass of Evian – naturellement – I then spent the afternoon lazing in the spa’s Jacuzzi and steam room. The next morning the hotel’s dashing chauffeur took me down the hill to the lake and into the heart of the resort. I came, as others have been for centuries, to Les Thermes D’Evian to ‘take the waters’. This involved being pummelled by hydro jets (seriously enlivening) and being ‘rained on’ by heated Evian water while a therapist gave me an all-over body massage. Evian cannot be rivalled for its blend of tranquillity, excellent food and winning service. Next time I’ll be returning with my family in tow to take advantage of the superlative Kids’ Resort with its own pool, tennis lessons, cooking workshops and more.... A
typical day at Ti Sana starts with power walking at 8.30am along the Adda River, juice for breakfast – think courgette, apple, carrot and ginger – and an hour-long fitness session. Lunch is served at the ‘Food Lab’ from 12.30 and consists of a large bowl of salad and dehydrated flax seed crackers, followed by (yes, thanks be to the detox gods, there’s a second course) a faux carb dish like courgette ‘spaghetti’ in a cashew nut sauce (no added spaghetti, of course, just cleverly cut vegetables). Five meals a day doesn’t sound too bad – breakfast, snack, lunch, snack, dinner – but when three of these ‘meals’ are juices, and one day a week is liquid only, things become a little more Spartan. Minimal food and gentle exercise are combined with a medical assessment, blood tests, a doctor’s appointment and a colonic – this is the only spa in Italy with the ‘Angel of Water’ machine which you operate yourself, keeping your dignity intact. The spa is well equipped, stocked with organic products
(like the Anika range) and kitted out with an infrared sauna, normal sauna, steam room and several jets and rain showers. Spa treatments, however, are limited to one or two per visit depending on your regime – Raw Food, Juicing or Energising. The focus is very much on what you are (or are not) eating, and the aim is to regulate cortisol levels by exercising in the morning, eating in the middle of the day and practicing Chinese Qi Gong meditation in the evening. This takes place in a large, light studio in one of the restored 18th century terracottaroofed buildings – the hotel is made up of a cluster of these stone houses and the 22 bedrooms are scattered between buildings. You’ll leave enlightened –the emphasis at Ti Sana is on educating guests, with daily lectures on well-being. et amidst the vineyards of the Chateau Smith Haut Lafitte estate in Bordeaux, Les Sources de Caudalie is a rural retreat with a twist. Inspired by the concept of the ‘French Paradox’, whereby the diet and lifestyle of Southwest France is seen as conducive to good health, the hotel has taken the concept to heart, playing host to the original and now world-famous Vinothérapie spa. Here, treatments are wine-centric, incorporating the benefits of the grapes from the Graves Grand Cru Classé vines which the spa overlooks. The spa’s interiors are as organic as the treatments, using wood, stone and recycled materials from the local area. This theme continues in the hotel, which has the feel of a French country house, filled with paintings and antiques, traditional materials and local fabrics. However, for those who aren’t keen on the rustic look, the ‘L’Ile aux Oiseaux’ summer house is perfect. Designed by French fashion prodigy Maxime Simoëns, the design is modern and striking. However, Les Sources de Caudalie is not for dieters – the food is too good. Choose from Michelin-starred fi ne dining at La Grand’Vigne, Chef Nicolas Masse’s restaurant overlooking the lake or bistro-style food in La Table du Lavoir, in a 19th century wash house formerly used by winegrower’s wives. avigating through the first year in the life of my new business surely ranks as my toughest challenge to date. In context, moving house, getting married, having kids and finding schools were just stress practice! Setting up Philip Wooller, that’s me, is my first foray into the up and down world of entrepreneurship. What is now so satisfying is to see the result of that leap of faith and watch things grow into something positive and rewarding. We are not yet through our first year but we have great momentum. From the many words of advice I have gratefully received, it is “Don’t forget to enjoy it” that sticks in my mind and now seems relevant at last, as I fully appreciate the sentiment behind them. After all, is this not the best advice for life? The liberating benefits of being a small business; being able to make my own decisions and essentially being true to myself have given me a huge advantage. I feel it is this instant influence that has played a large part in putting us firmly on the Askew Road property map in such a short space of time. I know that our clients are also directly benefitting from this and that is as
it should be. For years Askew Road wasn’t generating a cohesive village feel – a no.1 selling point for all estate agents in their metaphorical London villages. But now it is surely the place of the moment, and not in small part, it is down to likeminded independent businesses really engaging with their community. By providing what people want locally we are receiving great support and loyalty for attempting to do it. These are exciting times, the area is radically changing for the better and it is hard to keep track of the new openings and re launches. It is my belief that this momentum is now unstoppable. We know that every house becomes a home, that every home belongs to a street, and that every street makes a community. We’re here to make this happen. I’m very proud to say that we are now officially part of this process and I can’t thank people enough for their overwhelming support.
