A

fter a beguilingly hot and still summer, September brings with it the butterfliesin-the-stomach feeling of going back to school. All those years ago, ‘back to school’ meant new classes, new teachers, new start. Of course, the notion that somehow everything would be ‘brand new’ and different – that I would appear brand new in the eyes of my peers – would dissipate by about lunchtime. Those days are long gone (thank God) but September still seems a month of change. More so, in some ways, than January, which is all empty resolutions amid a sluggish postChristmas hangover. With September comes the official start of the new season – both climatically and in the fashion world. With that in mind, this month we’ve teamed up with Ealing Broadway Shopping Centre for a look at the new trends hitting the shops imminently. And on page 45, Casilda Grigg writes about how to channel your inner Francophile. Our fashion pages may herald new beginnings but, as always, our culture section is jam-packed with history. For nearly 30 years local artist Sir Peter Blake has been illustrating Dylan Thomas’ surreal ‘play for voices’, Under Milk Wood. Peter opens up about this unusual piece of work and his longterm obsession with Thomas on page 25. I also interviewed artist Rosalind Wyatt at her Chiswick home and studio. A master of marrying old and new, Rosalind’s challenging new project aims to document the lives of everyday Londoners – both past and present – in what she calls a ‘modern-day Bayeux Tapestry.’ Read her story on page 20. Whether you’re looking back or looking forward, though, I hope that September brings with it just a hint of that old sense of possibility. After all, 2015 is just around the corner (eek!) BARD FOR LIFE American-born producer, Tom Tucker, founded ‘Shakespeare in the garden’ theatre company Permanently Bard in 2011 and is on a mission to bring the Bard to your local Interview by gemma billington

GEMMA BILLINGTON Permanently Bard started life at your pub, the Rose & Crown in Ealing. Why do you think it worked in the area? TOM TUCKER It’s a media friendly, artsy sort of community. You’ve got Ealing Studios here, two drama schools, musical theatre schools… it’s a good spot for pushing the arts. I think essentially the idea behind Shakespeare in the garden is that we’ve got a community here that will appreciate it. A lot of classical theatre in this country started back in taverns. GB Have you always been passionate about Shakespeare? TT I love Shakespeare. The first time I saw one of his plays - I remember it really well - I was 11 years old and I saw The Taming of the Shrew in Ontario at a place they call Stratford, but it’s not really Stratford, and it was absolutely terrific. GB So what is the significance of performing Shakespeare in pub gardens? TT Before you had a big wave of theatre building in Shakespearean times with the Globe and the Swan and the Rose, it was very much about the back of the inn. That’s where actors performed their craft, that’s where theatre took place. I do think that Shakespeare plays, in

particular, are very populist; they’re lovely with a pint or glass of wine, and they get funnier and funnier. People are very quiet for the first quarter of an hour, then your ear tunes in with the language and you start getting into it. I think it’s the best way to get to Shakespeare because it’s so accessible. We find many people were put off by Shakespeare in school because the way it's taught can be very dry. Even when it’s performed in some of the more traditional venues it can be very awkward and you can be distant from what’s happening - whereas when it’s taking place in the pub garden, I say it’s in your face and on your lap!

GB Do you find it’s only comedy that works then? TT Well… somebody recently said, “let’s do Romeo and Juliet” and I said; ‘it’s kind of a downer...’ [laughs] So we have stuck

to the comedy so far. We’ve done Much Ado About Nothing, we did Twelfth Night last year and we’re doing A Midsummer Night’s Dream this year. However, as we build this up and it becomes a regular thing, I could see where we would do the comedy in the summer and – with a very select group of maybe five or six pubs – in October, we could do the chilly Hamlet, or Macbeth lit by bonfire. It would be a different experience but... open air theatre in the cool, crisp autumn? I’d be up for it. GB Why did you pick A Midsummer Night’s Dream? It's a popular choice... TT It’s the most popular Shakespeare play. We’re branching out a bit this year as we’re touring 12 pubs, so we thought it might be easier to do a play we all know. It will be very different, simply because

GB Going back to what you said about people being put off by Shakespeare when they study it at school, do you think there’s too much emphasis on his work in the school curriculum? TT No, I don’t think there’s nearly enough emphasis, I think it’s just done in the wrong way. First of all there’s not enough emphasis on performance, because the language is written to be performed. When you read the plays you miss so much of the subtext and so much of what a group of good actors will bring to it. Getting the right director for a production is critical too. I’m working with Sean Turner on this, he’s a fantastic up-and-coming director. When I told him that I wanted to do it in a pub garden, his face lit up. I thought: good, he gets it, he understands. He’s one of those people who loves Shakespeare and he feels like I do; that getting it to a broader audience and making it accessible is important. GB What are the plans for the future of Permanently Bard? TT We want to stay true to our core mission, which is to produce Shakespeare plays in pubs. The way we design the production is to be outside in a very loose atmosphere. We encourage people to take pictures, to tweet the performance... The shows aren’t elitist, they’re very easy to get into. People are scared of Shakespeare sometimes. We want to strip away that fear and make it fun again. u A Midsummer Nights Dream will be touring at The Rose & Crown in Ealing and The Red Lion in Barnes this September. it’s not performed on a stage and each garden, twelve different pub gardens, has its own different geography. GB That must be quite a challenge… TT It really is. With twelve different pubs, there’s no sort of infrastructure for you to create theatre. You have to figure out where to put the seats to begin with, you gotta consider things like, are we underneath an airline path, how close to the train lines are we..? GB Logistically, what is the biggest challenge of holding the plays outside? TT Logistically I don’t think there’s any one single challenge; each place is different and that’s probably the challenge. It’s a variety of challenges… if you just had a checklist and each one were the same it would be a lot easier.

A STITCH IN TIME Textile artist Rosalind Wyatt replicates handwriting through stitching to tell multilayered stories Wo r d s g E M M A B I L L I N G T O N P h o t o g r a p h y L e a n n e D i xo n

I

was an exemplary student at school, (a bit of a ‘boff ’) but the one thing that I was repeatedly criticised for was my handwriting. When I was about 8-years-old I remember getting an assignment back from my teacher and feeling a buzz of excitement at noticing a new ‘stamp’ beside the completed text – usually an indicator of ‘good work’ or ‘nice job’. My heart sank when I saw a cartoon puppy sitting sad-eyed in a puddle of ink, which spelled out the words ‘neater please’. Was all that effort for nothing, simply because the writing wasn’t deemed ‘neat’ enough? I recount this story to artist Rosalind Wyatt. We’re sitting in the tranquility of her Chiswick studio at the bottom of her garden. She laughs. ‘Well, just look at Winston Churchill’s handwriting!’ She’d just shown me a commission for Fortnum & Mason from last year. Rosalind had taken inspiration from letters written by the young Churchill to his beloved mother and had hand-stitched the words onto a period-style blouse; smudges, scrappy writing and all. ‘I think you can tell so much about a person through their handwriting,’ she says, ‘and the faster we move as a society the more we get divorced from these very basic expressions of self.’

Rosalind studied Textiles at the Royal College of Art and teaches stitching workshops alongside working as an artist. Before textiles entered her repertoire, she did a degree in Calligraphy and Bookbinding and went on to learn Zen calligraphy. ‘I wanted to learn a skill,’ she explains. Today her art is a marriage of these two practices, and it was during her Textiles studies that she began to replicate handwriting through stitching a technique she calls ‘tran-sewing’. 'I’d never done embroidery before, it had been pen and brush. I sort of taught myself how to use the needle as a writing tool,' she explains. Craft is a medium that has long been looked down on by the art elite, but along

with a major ‘Craftivism’ exhibition at the V&A this year, attitudes are changing. ‘I think there will always be that perception of craft being the poorer cousin of art,’ Rosalind says, ‘but all artists recognise that at the heart of their art is craft... You can’t have one without the other.’ In 2009, Rosalind’s art took a new direction when her mother-in-law gave her a box of family letters, with a delicate 18th century silk garment hidden amongst the paperwork. With a passion for storytelling and traditional forms of correspondence, Rosalind decided to stitch passages from the letters onto the blouse; replicating the handwriting with painstaking precision. This early project was based on her husband’s relatives and named The Stitch Lives of Others. It combined textiles and writing, craft and narrative. More importantly, it planted the seed for Rosalind’s ambitious, ongoing project, The Stitch Lives of London. Rather than focusing on the life of one family, The Stitch Lives of London aims to tell the stories of hundreds of everyday people, both past and present. It is an homage to the city that Rosalind has lived in all her life, a ‘modern day Bayeux Tapestry’. Enormous in scale – both figuratively and literally – the plan is to produce 215 separate artworks, each representing a

A recently completed piece of the project was donated by actor Jude Law, who’d previously worked with Rosalind on a private commission. ‘Some people just get what you’re trying to do, that link is there immediately,’ she says with a smile. When he learned of The Stitch Lives of London, Jude suggested donating the shirt he wore to play Hamlet in the 2009 West End production at Wyndham’s Theatre. He gave Rosalind a handwritten quote from the play – Hamlet’s prebattle soliloquy, ‘the readiness is all’ – for Rosalind to work with. She elegantly stitched Shakespeare's famous words in Jude’s handwriting to the shirt. She

mile of the Thames, with a different story within each. ‘I didn’t think of this to begin with but by stitching you preserve something of that person, of that moment, of that time,’ Rosalind says, gingerly digging out a light blue running vest. Its surface is lightly bobbled with age and wear. It belonged to the murdered teenager, Stephen Lawrence. Rosalind had an inspirational meeting with Stephen’s mother, Doreen, who had brought with her a collection of her son’s letters and essays. It was Doreen’s idea to donate the vest to Rosalind’s project. ‘Like any mother she was so proud of his achievements,’ Rosalind explains, ‘Stephen loved running... this top is from his local team. [Doreen] showed me all his medals – he even won a marathon – so I said, “let’s make this a celebration of his life".' As well as recreating his medals in fabric and stitching them onto the vest, Rosalind sewed the words of one of Stephen’s essays that she found herself ‘particularly drawn to’. It turned out to be one of the teenager’s last A-Level assignments. Poignantly, it was left unfinished and written just a couple of weeks before his death. ‘I was very struck by his handwriting, it’s very forward leaning

and it literally finished mid-sentence,’ Rosalind says. ‘He was incredibly talented, he was really going places and it was just severed. It could have been anybody’s son.’ The handwriting finishes abruptly, the sentence left hanging by a solitary thread; it’s an incredibly powerful piece of art. ‘It was hugely emotional,’ Rosalind admits, ‘clothing is the closest thing we wear to our skin.’ Although Rosalind is at a preliminary

also sewed a delicate spattering of tiny watch pieces to symbolise the ‘we defy augury’ line – the traditional meaning of ‘augury’ being the foretelling of the future by observing the flights of birds. ‘He’s talking about the present moment: this is all we have,’ Rosalind explains. ‘This is the moment that Hamlet decides he’s going to fight.’ And what did Mr Law think of the finished piece? ‘He loved it. Thank God!’ she adds with a laugh. ‘It’s an amazing gesture that people are donating in the first place. It’s all about trust, really, people are entrusting me with their personal stories.’ It is a trust that is greatly rewarded. Rosalind’s passion, talent and amiable nature has clearly stood her in good stead. This year she will be working with the two men involved in the ‘Find Mike’ campaign – the story of Johnny Benjamin and the stranger who stopped him from committing suicide in 2008. After the event, Johnny turned his life around and made it his mission to find the man, who he dubbed ‘Mike’. Johnny has given Rosalind the plain white t-shirt he wore on that fateful day. ‘You just know when you’re going in the right direction with something,’ she muses. u rosalindwyatt.com

I

first heard Under Milk Wood when I was a student at the Royal College of Art in the mid-1950s, and it must have been when it was first read on radio, famously broadcast in 1954. I heard it in bits then, as I never had the opportunity to sit down and listen to the whole thing, but I did read it. That was the first time I’d heard about it, and was also the first time I became aware of Dylan Thomas. It’s been twenty-eight years since it all began. There was quite a break between my first encounter with the play and when I became aware of it again in 1979. I’m now completely trapped in it. It’s like a web, it’s like throwing a stone into water . . . the ripples have just got bigger and bigger, and wider and wider. Around this time, whilst I was living and working in Somerset in the company of the Brotherhood of Ruralists, I met the designer Michael Mitchell. He ran the letterpress workshop and fine book printers Libanus Press, and wood engraving was a large part of his printing process. He was very interested in what we were doing in Somerset. He had a great collection of books including illustrated books by David Jones, and we got on well and became friends. He admired some of my earlier engravings, such as those of the Side Show 1974–78 collection, and proposed we work together on a book. He immediately alighted on Under Milk Wood. He would set it up letterpress, which he did, and I would do about a dozen wood engravings. I started them and realised that this would take such a long time, and so I abandoned them. As it happens, if I had continued with them, I probably would have finished them within a couple of years, so it would have been published twenty-five years ago! In the summer of 1986 we arranged a trip to Laugharne, one of the birthplaces of the play, as Michael thought we should visit to take some photographs. At least three times we arranged to visit, and three times we postponed for various reasons. Then, on a completely

arbitrary day – there was absolutely no logic to it at all – we drove down to be greeted by a film crew in the Browns pub. It just so happened that it was thirty years to the day after Caitlin Thomas had left Laugharne, following Dylan Thomas’s death, and this marked her first return to Laugharne, to do a book signing. We met her in the bookshop, with Aeronwy, her daughter, and I took a lot of photographs. It was just such an amazing coincidence... Another moment of truth was when I had been to Japan for an exhibition and on the long flight back I couldn’t sleep. I turned to the play and read it, and it was at this point I realised that the whole first section is everybody’s dreams. It suddenly ends, people wake up and it’s daytime... The play opens with everyone dreaming, and that establishes their previous lives and their fantasies. A dream is so surreal, it’s out of body, it’s not real life, it’s fantasy. It’s the ultimate kind of surrealism, in a way, as anything can happen. Any curious visual things could have happened in the dreams. So I decided to separate those into watercolour. Originally they were done in a very silvery, thin, grey watercolour, which I thought had the quality of a dream. However, it occurred to me that’s what Hollywood dreams are like, real dreams are in bright colour. I dream in colour, certainly, and I dream in reality. While I’m dreaming it’s real, it’s only when I wake up that the reality stops. The play is a full Spring day; you’ve got night-time, just before dawn, the dawning of the day, the morning, lunch, the afternoon and early evening, and then time ran out on Dylan Thomas and mid-evening simply doesn’t exist. Thomas was commissioned by the BBC and it had to be finished, so it seems he had to stop at that point. He writes a very beautiful page to close the play, but the whole expanse of the evening isn’t there, so people going to the cinema, or whatever he might have written about, don’t exist. And curiously, I began to work on it in the evenings for almost the whole of the twenty-eight years. Though it would not be every night, I’d go to the studio and work on otherthings and other paintings, and go home. It became like a hobby that underpinned everything. I’d get my pencils out and lay them out and sharpen them and sit and draw. At this point, I had the idea to begin illustrating some of the characters. I drew the key players and then it began

to evolve and evolve until I’d begun to illustrate everyone that is actually mentioned. There are sixty sheets on tone paper, drawn in a very hard pencil – from H through to 7H – and so the tones above the colour of the paper are in pencil and anything below the tone of the paper is in a white pencil; for example the highlights in eyes are done in white pencil. There are some characters that are never described, never known. There’s the one Voice that expresses an opinion, but you don’t know what he looks like, and then there’s the voice over the microphone of the bus tour, which on the record is Alan Bennett, in this kind of deep monotonous Northern tone. It is through him that we hear a description of the village itself. So the deeper I got into the construction of the play, the more I understood and the more people appeared. There were eventually sixty sheets, and if Captain Cat is listing the five other people drowned along with him, they’ll all be on one sheet. There must be around a hundred people, I would imagine. I became completely obsessed by the way Thomas communicates in the play, with his mingling of themes, and that’s what I wanted to do in my illustrations. There are so many differing explorations of love; of people married and happy in love, of people married and hating each other, or wanting to murder each other, of unrequited love, dreamed love…all of these are multiplying veins running throughout it, different modes of

ART & CULTURE / UNDER MILK WOOD communication. I wanted to use collage, pen-and-ink drawings, pencil drawings, watercolours, photographs, to explore this. Oddly enough the play itself is never pornographic, it’s a thinly veiled sexuality... Even though this is poetry, what I tried to do was remain literal. If someone was making a list – and these lists in Under Milk Wood tend to be almost visually indescribable – I tried to make them visual. There’s one moment in which we see a beach that is awash with drifting stuff, and Thomas lists obscure things like ‘whale juice’. That was the only element within the list that actually beat me: I assumed it was the jet the whale

expels at the top of its head, but how do you depict that? I decided on a little whale in the corner to illustrate... I have had one continual source throughout the making of this body of work. When I lived in Somerset I went to a book auction for the first time, and I’d never been to an auction, ever. I got very carried away as I couldn’t believe that things would go for so little. So I bought everything, including a whole run of Larousse dictionaries. They’re about two foot big, they’re in French, for years I kept them aside, but then when I looked at them I realised that these are actually now obsolete – a hundred years out of date – and they’re in French,

and so I had the courage to cut into them. They’ve been a fantastic source of engravings, particularly portraits. If I make a crowd of people, there are thousands there – I mean everyone who lived at that point was depicted in a wood engraving. So that was a big source. Then I’ll buy old catalogues, Army & Navy catalogues, things like jugs and domestic objects are in there. So I have a big personal library of things to cut up, and then I’ll source the other things. The collages often start with my photographs taken in Laugharne on that first day, as the base image, and then there are a few by a photographer called Rollie McKenna who recorded Dylan Thomas’s life and took most of the known pictures of Dylan Thomas and Laugharne. I’ve used those on a couple of occasions. Then I’ve just kept on like a dog with a bone, after many years. Some are jokes, some deathly serious, but I have tried to dig and dig and dig and just to depict everything.

In a way, there can’t be an ending. Earlier in the year I had to decide on two deadlines, a deadline for the book and a deadline for the exhibition of my Under Milk Wood work at the National Museum of Wales, which are both just artificial deadlines. It’s the deadline in the sky. It has been almost thirty years but there is no ending to it, and one revelation is just the mad volume of the work. So what I’ve done is put everything together at this point to make a book. Then presumably when the exhibition work comes back, I’ll continue. I may well even pick up on the original woodcuts and do another version. I’m still discovering things that lead on to the next, and to the next. But recent studies have shown that deficiencies in essential fatty acids can actually slow weight loss. YOU NEED TO EAT FAT TO LOSE FAT

Some dietary experts are promoting higher fat diets to help with weight loss. What’s more, many low fat products contain added sugar, the enemy of both the waistline and the skin. Fat helps boost satiety and adds flavour to our meals. However, we do need to eat the right types of fats and oils.

FAT THE TRUTH Joanna Oates, Nutritionist at the Park Club, offers some words of advice on the dreaded 'F' word he 'F' word can have a lot of negative connotations, but T both body fat and dietary fat are essential for our physical and mental wellbeing. Our bodies carry a layer of subcutaneous fat just beneath the skin, which keeps us warm and provides physical protection. If body fat falls too low it can affect sex hormone production, resulting in low libido, fertility problems and even early menopause. AGING AND TRANSLOCATION OF FAT

Body fat also helps to keep us looking young. As we age, our skin thins and we lose deep fat from our faces, resulting in more lines, wrinkles and under eye shadowing. Instead, body fat tends to accumulate around the middle and our

vital organs, resulting in increased risk of heart disease, diabetes, cancer and even dementia. This type of fat is known as visceral fat and often hidden, so that individuals with a normal BMI may still carry undesirable levels. Sugar, stress, sedentary lifestyles and alcohol are all contributing factors. SO WHAT CAN WE DO TO HALT THIS DOWNWARD DECLINE?

The last thing you should do is go on a quick fix diet, such as a juice fast or detox. Yes, you will lose weight and go down a dress size, but weight lost quickly comprises of water and muscle. Once you come off the diet, you are likely to gain back the lost weight, and more besides. Dietary fat contains more calories than

Like our skin, oils are sensitive to too much heat and sunlight. This is why deep fried food can be so damaging. Most vegetable oils are more vulnerable, making coconut oil or butter a safer fat for cooking. Similarly we need to be careful to avoid chemically treated dietary fats such as margarines and spreads. Omega 3 fatty acids found in oily fish, walnuts, pumpkin and flax seeds can help boost body fat loss as well as keeping skin soft. Coconut oil is another slimmer’s friend as it is more easily burned as energy rather than stored in fat cells. It’s also a heat-stable oil so safer to cook with at higher temperatures than olive oil and vegetable oils groups. Nuts and seeds in their raw state (unsalted, not dry roasted) along with their cold-pressed oils contain many healthy fats. Finally, don’t be scared to go for full fat dairy products: these contain fat soluble vitamins devoid in their low fat alternatives. They also taste better and keep you feeling fuller longer. But it would be fair to say that there’s nothing ‘greasy spoon’ about the stylish Kerbisher & Malt fish & chip shops that have sprung up all over west London. In the same way that the Byron burger joints are just as likely to appear in the pages of an interior design magazine as they are in a good food guide, Kerbisher & Malt have raised the bar in terms of modern British takeaways. Every London restaurant worth its salt knows that a unique style is central to their brand, and when Kerbisher & Malt opened their first restaurant in Brook Green in 2011, they took on the services of Alexander Waterworth Interiors, a young and ambitious design company founded by Alexander Evangelou and James Waterworth. The designers poured their shared experience, skills and passion into a company that prides itself on taking an alternative approach to interior design. In just three years, they've amassed a varied portfolio of residential and commercial clients including London's trendy Annabel's club and the Muskett Room in New York. I caught up with the pair to discuss inspiration, idols and London's hidden gems...

GEMMA BILLINGTON Can you tell us a little about your backgrounds and why you decided to set up Alexander Waterworth Interiors? ALEXANDER EVANGELOU I started off studying product design. From an early age I was intrigued as to how things worked as well as how they looked. To my parents’ horror I was often found taking apart my toys just to see how they worked. Understanding a product’s function for me is essential; once you have the internals, the next step is to give it the love it deserves; its aesthetics. JAMES WATERWORTH My stepmother is an antiques dealer and so I was brought up with beautiful things around me all the time. Initially I spent time working

JW Axel Vervoordt, for me, has to be seen as one of the most inspirational designers of his generation. From his knowledge of contemporary art and antiques through to his defining style which has influenced so many designers over the years. I’ve had the good fortune of visiting both his offices and house just outside Antwerp – if you want inspiration, this place is it. We were also incredibly fortunate to work with a design legend, Martin Brudnizki, whose brilliance is evident in all the work he has done, such as Scott’s. GB What would you say makes your company unique? AE James and I are very different in skill set and personality, this bodes well as projects come in all kinds of different forms. Our drive and love for interior design brings us together, pushing one another to achieve. It’s an amazing feeling to have a relationship which brings out the best in you. GB How would you describe your style? JW This question is often one of the first a client asks. We respond instantly stating that we strive not to have one style but attention to detail and creating an ambience is what we have become known for, the rest of the style is that of the client we are working for. AE Nick & Saul approached us with a clear brief, ‘We want unique restaurants that fit within the local area, and we do not want to roll out the same design.’ A great brief for us to work with and be able to create fish & chip restaurants that fit in with their local surroundings. GB What would you say inspired the Kerbisher & Malt look?

PROFILE / HOME & INTERIORS JW Each site has been designed differently taking inspiration from the area the restaurant is in. The Chiswick restaurant is within a traditional Victorian building so we decided to go back to the Victorian pie and mash feel, so more traditional with a modern twist. Brook Green has a few more commuters and tourists so we wanted to create a simple and clean space which was easy for people to pop in and grab a takeaway. We also included one big communal table for the local families. Ealing felt a bit more family orientated and therefore we wanted to make the restaurant more child friendly using colour and softer materials GB Where did you source the materials for the project? AE We love to create bespoke furniture and for Kerbisher & Malt we worked closely with Style Matters to create the banquettes you will see in Abbeville Road. We also often travel to the Kempton market outside Richmond and find that a great source for furniture in general is the House Directory produced by House & Garden. Of course we have a few other secret places too… u

IN THE KNOW If you're feeling inspired to undergo some home improvements, make sure you work with the right people, says Duncan Gunn at RRA Architects

ow that autumn is on its way, getting out into the garden N to enjoy the last of the warm weather is a good thing to do if your home will allow. Autumn is not only a time to prepare for the colder months; it is the ideal time to think about adding value to your home. Getting the right team together is vital, and with good advice from an architect you could begin to make plans to add extra space or re-organise the layout of your home to suit your needs. For a cost-efficient and timely design, which works for you and your family, the key factor is to get the right professional advisor. They will help you fulfil your aspirations. In my 25 years of experience, the most successful projects begin with selecting a team which will give you the best advice and help you plan your project from start to completion. At RRA Architects we advise clients of the three main ways of procuring their project: using a builder and dealing directly with them; using the services of a one-stopshop company; and using the services of an architect to advise you throughout the project, with an architect’s certificate issued for completion, adding real value to your home. Liaising directly with a local builder should only be done if you have had previous experience of project management. Although the builder may have been recommended to you, it is vital that you fully understand how the builder will manage the project and what responsibilities you will have. Speak with their previous clients and ask them about their experiences when things, perhaps, weren’t going so well. Most importantly, make sure you have a contract with the builder, clearly describing the work they will do, for

what price and in what time. You can order JCT householder contracts online from the RIBA bookshop. Your project may require planning permission and, in which case, you may need to get more professional advice. The one-stop-shop, loft and extension companies provide a design service and project-management, including applying for planning permission, although most often they sub-contract these services.

The one-stop-shop approach is very good for cost and time certainty but can often be limiting in terms of your design flexibility; you may find your request for a design, which is truly bespoke, falls upon deaf ears. Again, you must ensure you have a good contract with your chosen company and that you are sure of your responsibilities. In almost all projects, the one-stopshop company will not deal with party wall matters and you may have to seek additional advice on works which affect adjacent properties. If you are looking for a truly bespoke project and want the comfort of knowing that a professional advisor is acting for you throughout your project, then you should appoint an architect who will guide you through the process from start to completion. Your architect will advise you on planning applications, building regulations and the building contract. At RRA Architects we will do as much or as little as you want, depending on your experience, and we will also be able to advise you on other consultants you may need, such as an engineer or party wall surveyor a building project in your own home is an emotional process and it is vital that you choose your architect carefully. WHAT YOU NEED • 400g butternut squash, peeled, deseeded and cut into small chunks • 4 unsmoked streaky bacon rashers, finely chopped • 125g self-raising white flour • 50g cornmeal • 1 teaspoon baking powder • 2 teaspoons finely chopped thyme • 1 egg • 75ml buttermilk • 3 tablespoons mild olive oil or sunflower oil WHAT TO DO

1 Preheat the oven to 220°C/ Gas Mark 7. Line a 12-section muffin tin with paper cake cases that measure 9cm in diameter when flattened out. 2 Cook the squash in a saucepan of boiling water for about 10 minutes until softened but not mushy. Drain well and return to the pan. Crush the squash until broken up but not puréed. Leave to cool. 3 Heat a dry frying pan and fry the bacon for about 5 minutes until crispy. Transfer to a large bowl and add the flour, cornmeal, baking powder and thyme. 4 Beat together the egg, buttermilk and oil in a separate small bowl. Add the egg mixture to the dry ingredients with the squash and mix together until only just combined. 5 Divide the mixture evenly among the cake cases and bake in the oven for 15 minutes until slightly risen and pale golden.

Manners do matter When the editor of Tatler said that politeness and respect are as important as good grades, her comments struck a chord Wo r d s A M A N D A C O N S TA N C E

ood manners are as important as good grades when it comes to forging a successful career. So Kate Reardon, editor of society bible Tatler, told a group of teenage girls this year. In a speech at Westonbirt School (Gloucestershire), Reardon said, ‘It doesn't matter how many A-levels you have, what kind of a degree you have, if you have good manners, people will like you...if they like you they will help you. I'm not talking about using the right spoon for soup or eating asparagus with your left hand. I'm talking about…making people you interact with feel valued.’ Her comments prompted a storm in a media tea cup; they were judged ‘anti-feminist’ but among sniping about Reardon’s own privileged upbringing (Bute House, Cheltenham Ladies College, Stowe) there was also acknowledgement that she had raised an important issue. Reardon’s speech comes amid growing concerns that generation text are not fit for purpose in the working world. School leavers may have top notch computing skills but seem to lack some of the basic social skills such as good manners and the ability to hold a conversation. In the report by Barclays earlier this year, personal presentation, punctuality and decent manners were all highlighted as problems for some young people. 43% of business leaders said young people failed to understand when it was appropriate to use a mobile phone or when to take a break or for how long. A worrying 55% said school leavers were unable to manage conversations properly when calling clients or suppliers. Employers and parents will nod in

And An AllParty Parliamentary Group on Social Mobility said earlier this year that schools need to place greater emphasis on the ‘soft skills’ such as resilience, empathy and self-control. It recommended giving all pupils a school-leaving certificate to mark out their achievements in extracurricular activities and work experience. In other words, there is a recognition that good old fashioned ‘character building’ needs to find its way back onto the curriculum, particularly in state schools where it has often given way to a relentless academic curriculum. In a report earlier this year, the Confederation of British Industry spoke of its concern that ‘schools were turning into exam factories...churning out young people who are not sufficiently prepared for life outside the school.’ Applauding the changes to the A-level system, the CBI said the business world wants ‘young people who have been academically stretched, but who also display a set of behaviours and attitudes that are vital for success, including determination, optimism and emotional intelligence.’ Reardon has her own tips for success. She urged the Westonbirt girls, ‘Never hide behind a computer or mobile phone’ and to understand the importance of eye contact. She also told them to use confident self-expression, to rigorously research any prospective company before being interviewed and to do as much work experience as possible. And above all: ‘Never underestimate the value of good manners. I can count on one hand the number of people who wrote me a thank you letter after having an interview and I gave almost all of them a job.’ ◆

F

uller’s Brewery has occupied its present Chiswick site for nearly 170 years, and it remains London’s last traditional brewery.

In fact, despite being bordered on one side by the A40 and ending at the Hogarth roundabout, it still reflects the historic beginnings of Chiswick, which started in the lanes that still surround the brewery. Ten thousand people a year take a tour around the site, led by guides who are either past employees or volunteers. All of them have an extensive interest in real ale, which is clear from the moment the tours commence. This was certainly the case with my tour guide, Geoff Lee. Geoff explained that he has been a ‘campaigner for real ale’ all his life, and took up guiding tours on the suggestion of a friend, to give him something to do during retirement. Nine years later, he is still as enthused about it as he was at the beginning. And so our tour commences. We are led by Geoff around the brewery, his

clear voice audible at all times, a fact worth mentioning because he often has to compete with the brewery’s internal ‘industrial’ soundtrack. ‘The brewery dates back to 1816,’ Geoff says, ‘and is the oldest and biggest in London.’ Eyeing wisteria growing up an outside wall, I think he could probably have added ‘in the UK’, but that is not Geoff’s way. Accuracy is his rule, not speculation. Fuller, Smith and Turner has always been a family firm since its formation in the mid-1840s. To this day the company includes members of the Turner and Fuller family, involved in the business at board level. In 1929, the company went public, which it still is today, and judging by its share price and annual results, it’s a very successful company indeed. As we continue through the site, Geoff entertains us with many informative nuggets, such as the fact

We later learn that water, used in the making of beer, is called ‘liquor’; that yeast goes into the mix last; and that sugar is not added here, as it so often is in other breweries – at Fuller's, sugar comes from the grain. We also learnt that the hops are made into pellets, from three different species, which come from as far away as America. ‘I always drop that in if I have any Americans on the tour,’ Geoff says, ‘it amuses them.’ We got to see the brewing process from start to finish, which was a truly fascinating experience. However, whilst everyone’s interest was piqued throughout, and tour members were clearly enjoying themselves, it is in the basement bar where we finally get the chance to sample some ale. ‘We usually spend half an hour at the bar,’ Geoff tells me, ‘but nine out of ten visitors will say "don’t give me too much!" They drink for the enjoyment of it.’

YOU GROW UP WITH the brewery as PART OF YOUR WAY OF LIFE... IT'S ALWAYS been there A little while after the tour has finished, sat in the Mawson Arms (one of the company’s 400 pubs set in the outer wall of the brewery) I was introduced to an actual member of the Fuller family – Richard Fuller. Richard started working with the company 30 years ago. He had started out studying business at Harvard’s Business School in America, but returned to Britain to commence his working life. Trim and physically fit, it surprised me that someone who has spent a large portion of their life in a brewery would not have a waistband to show for it. I later learn, however, that he owns and trains racehorses, and rides in point-to-points too, which obviously accounts for his admirable physique. As we chatted away, very easily, I wondered what it was like being born into a family with such a strong beer-making tradition. ‘You grow up with it as part of

your way of life...' Richard replies, ‘it was my father’s life. It’s always been there.’ During his lifetime, the company has become increasingly more successful. He kindly relayed the turning points for me. ‘In 1989,’ he says, ‘we bought 44 pubs off Allied and before that we had in the region of just 120 pubs. We then invested in properties in the City. We bought a number of freeholds off banks and converted them into pubs.’ He jumps forward to 2005 when he recalls ‘another big milestone’. The occasion was Fuller’s buying Gales Breweries in Horndean for £92m. The deal included 114 pubs in Hampshire and on the South Coast. Gales dated, like Fuller’s, from the mid-1840s, and Fuller’s retained the brewing of Gales real ales, moving the operation to Chiswick. ‘[The company] invest in high quality assets,’ Richard continues, ‘whenever they become available.’ He tells me of one example, last year, where they bought Cornish Orchards so they could enter the cider market through a specialist family farm. The family in question grow their own apples to make the cider, which very much follows the ethos of the Fuller family. Hearing of the company’s continuing successes, I couldn’t help but wonder if Fuller's will grow so big they’ll have to vacate to a larger site? Richard is quick to dispel this idea and responds in lightening speed. ‘I can assure you we will never move from Chiswick. TENDERSTEM, RYE KERNEL & TARRAGON SALAD

CONFIDENTIAL West London's finest gin experts have come to Chiswick this month

his salad is based on the Nordic diet, which focuses on interesting T grains and a characteristic love of aniseed flavours. This recipe uses traditional Västerbotten cheese but you can also use feta, which is widely used in modern Scandinavian cuisine.

SERVES 4 PREPARATION TIME 10 mins (plus overnight soaking) COOKING TIME 25 mins INGREDIENTS For the Salad • 300g tenderstem broccoli • 150g Västerbotten (or Feta cheese) • 100g rye kernels/grain, boiled (or ready made quinoa) • 3 small spring onions, roughly chopped • 1/2 red pepper, finely sliced • Handful of chopped fresh tarragon • Salt and pepper For the Vinaigrette

• 3 tbsp extra virgin olive oil • 1 tbsp balsamic vinegar • 1 small shallot, finely chopped • 1/4 red chilli, finely chopped METHOD 01 Soak the grains for 24 hours then boil until just tender (about 22mins). Drain and leave to cool. 02 Blanch the broccoli in boiling water until just tender (3-4 mins). 03 Add all the salad ingredients, including the broccoli, to a bowl and crumble in your chosen cheese. Season. 04 Mix together all the ingredients for the vinaigrette and drizzle over salad just before serving. 05 Grilled chicken can be added for a meatier salad. ◆

our delight, the lobster arrives beautifully cooked, sharpened by a lemon and garlic butter sauce, and the chicken is tender with a crisp, spiced skin. Away from the barbecue menu there are several other options to choose from: specials include tasty, seasonal and inventive dishes such as plump pan-fried scallops with a smoked aubergine puree, and Barbary duck breast with roasted cherry tomato and gem lettuce. Meanwhile, the regular menu changes often but might deliver tempting fare such as curried mussels, and chicken liver and black pudding terrine. There are favourites for traditionalists too, such as the house burger, fish and chips, and the inevitable rib-eye steak served with an oversized mushroom and rich blue cheese. The Eagle has served locals well as the perfect spot for this year’s (surprisingly good) summer, but it is also well-equipped for the darkening months ahead. As expected, its menu adapts accordingly - it does an excellent Sunday roast that includes a rib-eye beef with Yorkshire pudding, and Norfolk chicken breast with roast potatoes. hen it comes to good pubs, west London is full of hidden gems - if you know where to look. Some may have succumbed to modern makeovers but thankfully others, like The Eagle, remain true to the cause – that is to remain a homely social hub that serves some fine food and beer on tap. Situated on the edge of Ravenscourt Park, The Eagle welcomes customers in with its bright, thoughtfully decorated interiors. It’s the sort of space that spells out ‘lazy Sunday afternoon’ without really

trying. But the real star of the show is the garden – a family-friendly oasis with two huts cheerfully decorated with bunting, and a lawn scattered with deck chairs, beanbags and oversized games. Like all the pubs under the Geronimo Inns umbrella, good beer and a winning wine list are central to their venues. On draught are favourites like Camden Pale Ale and Löwenbräu, while wines range from French to Chilean. It’s a scorching hot summer day when my companion and I visit, and we’re lucky enough to experience the Eagle’s barbecue that seems to attract diners in droves. Among the offerings are Peri Peri chicken and half a lobster, which we order, and to

ost likely built as a royal hunting lodge in 1550, Great Fosters has enjoyed a legion of noteworthy owners, including Judge Doderidge (Solicitor General to James I) and Sir Robert Foster (Charles II’s Lord Chief Justice of the King’s Bench and Common Pleas). In the early 20th century it was passed to Queen Alexandra’s lady-in-waiting Baroness Halkett, and then to the Earl of Dudley, and Gerald Montagu, before current custodians, the Sutcliffe family, acquired it in the 1930s. hose looking for a wedding venue, it’s useful to know Great Fosters have 50 acres of beautiful parkland, and since the hotel is licensed to hold civil ceremonies both indoors and on the lawn, it really does sell itself as a strong contender for the perfect Surrey wedding. The gardens were re-designed in 1918 by architect W.H. Romaine-Walker to convert them back to their former Elizabethan glory. Clipped yew hedges, a knot garden and the ‘Drake sundial’ (allegedly donated by Sir Francis Drake) means there is much to see and discover on a leisurely wander round. Important to note: the gardens allow four-legged friends but the hotel has a strict no dogs policy. ◆

eople had told me that this was the only way to see the lake. That it would be surreal rather than scary. But as the fl imsy plastic door of the plane rattles its way open and I slide to the edge, allowing my feet to dangle outside, my brain isn’t registering the panorama. All it’s registering is fear. I’m 15,000ft above Lake Taupo in New Zealand’s North Island, the skydiving capital of the country. Admittedly the vista from this vantage point is breathtaking, that is if you can gather yourself enough to appreciate it. As you fall out of the heavens over New Zealand’s largest lake, the view stretches across rolling green fields and sparkling waters, snow-capped mountains and dormant volcanoes, to where land and sky converge. It’s worth the heart palpitations. But you don’t have to throw yourself out of a plane to appreciate New Zealand’s exceptional beauty. And you don’t have to make a beeline for South Island either. North Island’s mountains are just as dramatic, the beaches just as beautiful and the wine just as good. But there’s also the added bonus of some of

PLACE HERE IN AD186 to the triology in one way or another, and countless kiwis brag of appearing as an extra in them, usually playing an orc or an elf depending on what kind of shape they’re in. Hardcore fans might enjoy Hobbiton in Matamata, discovering some of the stunning scenery that appeared in the fi lms has more universal appeal. Often called the best day walk in New Zealand, the Tongariro Alpine Crossing is 19km of dynamic landscape, taking you in between two volcanoes, though barren desert and alongside fluorescent blue pools of water and steaming craters. The world’s largest volcanic explosion in 5000 years took place here in AD186, reducing the once forest clad Rangipo Desert to a desolate wasteland upon which no tree has grown for over

2000 years. The most recent was in August 2012, when Te Maari spat out tonnes of ash and rock to rain from the sky. No wonder then that it was chosen as the setting for Mordor - Tongariro has an eerie, otherworldly feel to it which perfectly captures Tolkien’s sinister land. Meanwhile, the Waitomo Caves is another place where magic wouldn’t be amiss. A maze of subterranean passageways, abseiling adventures down here are called ‘The Lost World’ for a reason. Hidden beneath the lush farmland above, this tour takes you down into the caves via a 100m abseil through a narrow crack in the earth. Descending past the woodland canopy, where ribbons of sunlight stream through prehistoric ferns into the mists

of the underground gorge, it’s easy to forget the lambs frolicking back up above. Here it’s dark, dank and spooky. But if you descend deeper into the shadows, you are rewarded for your efforts. Emerging into one of the bigger caverns, you’ll fi nd the rock awash with twinkling lights beaming down on you. These are glow-worms, hundreds and hundreds of them clustered together emitting their pretty phosphorus green glow. Turning off our headlamps, we lay back against the cold rock to admire the view, like stargazers stretching out under the night sky. beach. If you’re up for a bit of activity, the coastal walk between Coogee and Bondi, a 5km jaunt that takes just over an hour if it’s done in one go, takes in some less populated, but equally beautiful beaches and coves. Take a picnic and make a day of it. u

hat many people don’t realise about Sydney before going there is that it is an astoundingly beautiful city. There’s a reason why being harnessed in for a trek to the top of the Sydney Harbour Bridge is a tourist staple: the views rival those of any city in the world. But if you want to see it from a slightly safer vantage point, then head to Milsons Point Ferry Wharf at the base of the bridge or to Observatory Hill, which will give you the views without the vertigo. Aside from the architecture, Sydney has many beautiful parks and gardens. My personal favourite is the Royal Botanic Gardens (rbgsyd.nsw.gov.au) where the sheer abundance of natural life that Australia has to offer is much in evidence and where you can get an Aboriginal Heritage Tour for around $35. It is an incredibly interesting 1.5hour talk from an Aboriginal guide who will discuss the flora and fauna, as well as the impact that Western settlers

had on the landscapes and indigenous population. There are a number of fantastic galleries, but for a taste of the raw, bubbling artistic talent of young Sydneyites, it’s worth checking what’s going on at Carriageworks (carriageworks.com.au). The multidisciplinary cultural centre is set in the old Eveleigh Rail Yards, heritage listed warehouse-style buildings formally used as railway workshops. Of course you can’t go to Sydney without spending some time on Bondi

pened in 2012, the QT is a ‘boutique’ design hotel with a quirky heart. I use the term ‘boutique’ loosely because actually there’s nothing particularly quaint or small about it. It is a big, blousy, in-your-face bolt-hole in the middle of Sydney’s CBD. Housed across two adjoining buildings (above the State Theatre and what used to be the Gowings Bros. department store which was built in 1912) the hotel’s design ethos lies somewhere between art deco, fi lm noir and frantically modern. It is a treasure trove of luxe knickknacks and vintage objet d’art curated into a psychedelic funhouse for grown-ups.

Each room comes with a cocktail shaker, a Nespresso machine and instructions on how to make the perfect Espresso Martini; as Kate Moss’s drink of choice, you are told, it is the only way to start a party. The rooms have a boudoir feel; cool, plush and opulent, they are decked-out in reds, oranges or yellows and are made to be viewed in soft-focus. Despite having vast windows, the double-glazing is fastidious against the noise of Market Street and with some nifty gel beds, you’ll be in danger of sleeping for a hundred years. u

YOU’RE NOT SURE whether everything GOES TOGETHER...normal

You’re not quite sure whether everything goes together, (miniature rhino, mid-mod chairs, multi-coloured fluff y cushions, all offset by the kind of solid wood fi nishing that you think is verging on wrong) but you’re soon made aware that normal rules don’t apply here. The experience begins on the pavement outside the (gilded) entrance on Market Street, one of Sydney’s

busiest. You are welcomed by a host who is dressed like a sassy extra from The Rocky Horror Picture Show (it is pure theatre). He or she will point you in the direction of the lift with the level of pep that will have you raising a smile despite the 24hour fl ight you’ve likely just endured. Directly inside, you’ll slope past the ground floor bar (the Parlour Lane Roasters Café) but promise yourself that you’ll stop as soon as you’ve sluiced off the haven’t-slept-intwo-days look. Once upstairs the attention to detail is astounding: take, for example, the ceramic white rabbits that are dotted around the place, a rye wink towards Wonderland, a theme that is carried up into the bedrooms where bowler hats (cleverly disguised hanging lamps) float

f you want to venture outside of the hotel (though the Gowings Grill serves some cracking steak and seems to be incredibly popular, with locals) then you are perfectly placed sink a few rums at Sydney’s best new cocktail bar, The Lobo Plantation (thelobo.com.au) which is just a five minute walk away. In the other direction is Surry Hills. I’m tempted to equate it to Shoreditch, in a rough-area-comegood kind of way, but it is less flashy than Shoreditch (read: better). Here you’ll fi nd countless good cocktail and wine bars, as well as plenty of bright young things with whom to while away the warm nights. For a truly show-stopping meal, head to Marque (marquerestaurant.com.au), a Surry Hills fi ne dining institution, where for $165 you can experience Australian fusion food of the highest order (think Paroo kangaroo with beetroot and radicchio kimchi). For breakfast, bills (bills.com.au; from the team behind London staple Granger & Co) does traditional Australian with a focus on tip top ingredients. u

M

y progression into property started just over twenty years ago, when I brought a flat (my first home) from a local agent. This guy was a total inspiration to me; he completely understood what I was looking for and worked hard to get it for me. After completing on the flat I started to develop it with a loft conversion, rear extension, new kitchen and bathrooms. I had no real knowledge of development but was a keen DIY enthusiast and had lots of builder friends. I spent all of my savings on the flat, and ten months later went back to the same agent and asked him to sell it for me so I could upgrade to a bigger property. He valued it at a much higher price than I would have ever imagined and advised against selling, but re-mortgaging and using the equity to buy somewhere else whilst renting this property out. A few months later I owned another property and was now a landlord. I had no clue as to my responsibilities, so I gave the property to the agent to manage. The property bug had now bitten, I spent all day, every day on the internet finding properties that could be bought to develop and rent out on a buy-to-let mortgage. It was a slow process in the beginning, but after several courses in property management, finance, basic law and lots of studying I was becoming a bit of an expert at the buy-to let thing. I soon began to manage other people's properties as well as my own, sourcing deals for clients and helping develop property for them. I surrounded

myself with a great team and this new business took off in earnest. I have built an amazing collection of contacts over the last 20 years. One particular person who springs to mind was a property manager I met who became a great friend and colleague; I worked with her for several years in London before she moved to the UAE to set up her own and now very successful agency, (Laura Adams Carlton Real Estate). We still work very closely together, sharing clients and properties for the international market. We have completed four off market deals this year and have three large deals on the table for foreign investors who are buying in Ealing, Bayswater and Fulham. Development, buying, selling and managing my own stock soon lead me to estate agency, and I have now taken over as the Director at London Estates. We are a small team that is extremely passionate about property; we love what we do and strive to supply all of our clients with an amazing service. The sales side is also picking up fast; the sale price we achieved for a fantastic development in Ealing was the highest price per square foot the area had seen for a double fronted Victorian house, and we have several new large scale developments coming to fruition later in the year. My job is my passion and I have little time for anything else, but you can sum me up in three words: restaurants, food and gym.
