EDITOR’S Letter NOVEMBER 2013

“Winter is the time for comfort, for good food and warmth, for the touch of a friendly hand and for a talk beside the fire: it is the time for home.” So said Edith Sitwell, and as the year draws to a rather wet and windy close, we’re inclined to agree. Which is why this issue is all about interiors. As we begin to clock up more hours indoors, it’s important to ensure our living spaces are as cosy/quirky/ opulent/chic (delete according to taste) as we can make them. There’s no shortage of striking ideas out there, that’s for sure. Chris Bracey of God’s Own Junkyard has been on our radar for some time. The man behind many of the movie world’s most memorable neons, Bracey’s Walthamstow workshop is a miniature Vegas brimming with salvaged signs and electric art. His talent has been hailed everywhere from Soho to Singapore, and he’s currently displaying his wired wares in a shiny new pop-up shop at Selfridges – we grabbed an exclusive interview shortly before his historic East London showroom was forced to close. Bracey, however is adamant that God’s Own Junkyard won’t disappear for good, which is a relief, because where else can you find a flashing neon Jesus for your living room? My home certainly seems dull without one. Something to save for... Christopher Jenner has made a similar splash in the world of design. His commissions include the ravishing, period-inspired Diptyque boutiques in Leadenhall Market and Regent Street, the Blue Lounge in Canary Wharf and the Ketel One 80 bar in Camden’s Gilgamesh – and while his studio is beloved of big brands seeking high impact interiors, his ideas are equally inspiring applied to the home. Check out the range of Asiatic wallpapers and shelving systems on his website. There was just enough time this month for us to weekend at the Folly. The Cotswold cottage is owned by Joanna Berryman of North London interiors specialists Matrushka, and provides another enjoyable lesson in the art of living well. A luxury bohemian idyll set in acres of English countryside, it’s an interiors enthusiast’s dream. It is indeed time for home, so sit back, put your feet up and enjoy the issue.

Leather jackets were a surprise trend for Autumn. At a time when most designers are obsessing over big coats and thick fabrics, the simple biker jacket made a subtle but strong appearance. You’ll feel fit to soar in this one from Acne (not in the least bit Thriller), with its grown-up take on punk. Don’t go hell for leather though: balance the look with another luxe texture like wool - this Burberry Brit skirt is perfect. Then round it off with these Rupert Sanderson boots; the fringing adds a touch of sophistication and, like their fringed brogue counterparts, will also go well with tartan. LIGHTS Lewis James meets Walthamstow’s celebrated ‘Neon Man’, Chris Bracey

LEAD.indd 39

18/10/2013 11:09

I

t may come as a surprise, but there’s one Walthamstow address that’s in every Hollywood director’s little black book. For over thirty years, God’s Own Junkyard has been the go-to destination for filmmakers in search of bespoke neon signs and lighting, while its proprietor, Chris Bracey, has earned the acclaim of the arts world for his inspired creations. Bracey may not be a household name (yet), but chances are you’ve seen his work, which has featured prominently in movies as diverse and iconic as Batman, Eyes Wide Shut and Superman. His huge showroom, situated until recently on Walthamstow’s Vallentin Road and containing thousands of pieces of original neon art ranging in price from £200 to £20,000, is a cornucopia of the kitsch, colourful and downright spectacular, a miniature Vegas of buzzing neon, glowing bulbs and salvaged scrap remade into objects of electrifying (and electrified) beauty. Even better, you’re free to visit and roam around at your leisure, with no pushy sales staff to make you feel guilty for not buying anything. The relaxed atmosphere is indicative of Bracey’s approach to his craft, which balances necessary business acumen with a genuine desire to share the fun and fascination for neons. ‘The junkyard is bigger than me,’ he tells me when we speak. ‘It’s a tourist attraction – we have 300 people come in every Friday and Saturday, plus school groups, artists and students. We don’t mind if you’re buying something or not.’ Bracey’s introduction to lighting design came through his father, a sign-maker, who worked this same Walthamstow patch for many years. Bracey himself joined the family business by way of a disappointing art foundation course, a stint at a graphics studio and a period making signs for seventies Soho sex shops. And though he tells me that the work was unsatisfying, it didn’t stop him producing some truly legendary pieces – many of which have gone on to feature in exhibitions around the world, helping to define the look and feel of an era. Later, Bracey

encountered the work of American artist Bruce Nauman during a visit to the Hayward Gallery, which inspired him to change tack. He began to create bespoke neon signs for movies (the first was for Mona Lisa, in 1986) and never looked back. Yet for all his Hollywood contacts, Walthamstow is at the heart of everything Bracey does. ‘I was born in Walthamstow on 25th December 1954,’ he says, ‘so I’ve been here for 58 years. I live one stop on in Chingford now, but I’ve worked in Walthamstow all my life. I’ve been making neons for forty years. Me and my wife employ 18 local people including my two sons. It’s a family business.’ His passion for both the area and his art is rendered bittersweet by recent events, which have seen God’s Own Junkyard marked for closure after its long-term landlord decided to sell the site to property developers. The move sparked a storm of local protest and a concerted effort on the part of Bracey’s family to avoid being ousted from their historic home – to no avail.

‘There are so many new-build developments going up in Walthamstow. We were always the edge of beyond, but now the area has become a kind of Klondike for developers. Walthamstow was always a place where things were made – the first aeroplane and the first bus were made here, under the railway arches. I’m making a piece of public art celebrating that fact, but at the same time, we’re being moved on. We’re talking to the council about other sites, but the one they’ve suggested has squatters on it, so we can’t even get in to see it.’It’s a familiar story – I suggest that it might even make a good film, albeit one where a happy ending seems far from assured. ‘My wife was trying to buy the land,’ Bracey goes on. ‘She equalled the bids all the way up to £650,000 – at one point, the price went up £50,000 overnight. But in the end the owner decided he could make more money in the long-term by having flats and offices there. That’s fair enough, it’s private enterprise. But my family have been here since 1952.’ Bracey’s equanimity and good grace do him

credit, but the facts still stick in the craw: God’s Own Junkyard is a successful business that has helped to put Walthamstow on the map. For the area to allow the loss of such an iconic, homegrown institution (not to mention the jobs it creates and tourists it attracts) would be little short of scandalous. So what is God’s Own Junkyard actually like, for anyone who hasn’t yet visited? In Bracey’s own words, ‘It’s a bit like dropping a couple of acid tabs; it’s neon nirvana. There’s about 200 neons in the red shed, a great old big tin workshop. Then we spilled into the yard and the yard filled up. And then there’s a shed in the yard with a neon Jesus with guns, called Son of a Gun. There’s stuff in there from Superman, Batman… it’s the biggest collection of neons outside the USA.’ The site is a treasure trove, a riot of extreme ideas and incredible artefacts, many of which were collected by Bracey on his travels around the globe. His client list includes celebs like Elton John and Kate Moss, and I can’t help but wonder what’s the weirdest story behind one of his creations. ‘I bought an old cottage in Suffolk,’ he says, without hesitation, ‘a bit of a seaside escape, and we had to knock it down because it was so dilapidated. We decided to use the materials to build a new place, to make something out of its history. The house hadn’t had any proper work done on it for a hundred years; the previous

owner was an old Polish guy who had escaped the Nazis and had to kill two Russians during the war, stuff like that. He’d never done much to the house, he just patched it up with driftwood – all this amazing windswept, ocean-swept wood. So I thought, ‘I’ll make something out of this”, and I did all these love-themed pieces with neon on driftwood and stuff like that. I was doing window art for Selfridges at the time, and one of the pieces I created from this driftwood was used in a window display for the band Florence & The Machine. When we met them, it turned out the Polish man we’d bought the house from was the keyboard player’s granddad!’ Selfridges, it turns out, has been a big supporter of Bracey’s work, and has helped him during his current location problems. For the next five or six months, the store will play host to a miniature version of Bracey’s showroom, affording visitors a tantalising taste of the real thing. ‘I was at Selfridges till 6am this morning,’ Bracey tells me, ‘and we opened at 9am. I’m ragged today, but it looks really good, an embryo of God’s Own Junkyard. Not as mad as the junkyard, but a good little capsule version. People seemed to like it and we’re so grateful to Selfridges – it’s a bit of a lifeline for us.’ It’s also a great way to spread awareness of God’s Own Junkyard. Bracey may be a celebrated artist in his own right - ‘I sell in LA, New York, Europe,’ he tells me, ‘I have a show with the Scream Gallery in Moscow in November, a show in India coming up, one in Singapore,’ but the showroom-cum-studio has a special place in his heart. ‘Workwise, I’m going a million miles an hour,’ he continues, ‘but I’m the artist of no fixed abode – and there are 18 people here who rely on me for their wages, people with rent to pay, mortgages to keep up. I take that responsibility very seriously. We don’t have interns here, I don’t believe in all that; everyone here is paid.’ So what does the future hold? How can Bracey and his family overcome the odds stacked against them? ‘We’ve got to carry on working,’ is his

answer. ‘I’ve got art that I want to make. At the moment I just feel like, “Rage, rage against the dying of the light”. Hopefully, a year from now I’ll be sat in a new place thinking ‘This turned out to be the best thing that ever happened to us”. The main thing is that we’ve all got our health. We’ll find a way through this, we have to.’ It’s this indomitable East End spirit that shines through in Bracey’s work, which can be as weird as it is wonderful but which never lacks for energy or wit. It will be Walthamstow’s loss if God’s Own Junkyard is forced to depart for good. That said, I want to end our interview on a positive note, and ask Bracey if he has any of his pieces in his own home. His response perfectly encapsulates his excited, upbeat outlook. ‘In the lounge, I’ve got “Live the Dream” on an American flag in scrap letters,’ he tells me. ‘And over the fireplace I’ve got a big bull’s head covered in mirrorball glass with big neon horns. I’ve got a big Marilyn Monroe neon in one bedroom, and over my bed I’ve got an old restored French sweetshop sign covered in light-bulbs. I’ve got neons all over my life. But you know, everyone’s breathing neon in all the time, it’s in the air we breathe; it’s part of all of us.’ godsownjunkyard.co.uk

ickets, please! 'As well as being an inspiring choice and versatile space for my clothing range and bikes, Maggie, my much-loved 1980 metro bus, has one obvious bonus – mobility. It’s a unique selling point that a regular bricks-and-mortar shop can never match. As and when events dictate, or when we feel like a change of scenery, we can up sticks and relocate lock, stock and barrel,’ explains Karta. Originally from Portland, Oregon, Karta is an industrial designer conjuring up cunning design solutions for the modern-day city cyclist. ‘What should a library offer… a place to broaden your horizons; research; learn about something new and leave informed – ready

to make a decision based on fact. The Bicycle Library emulates that philosophy. For a small fee we lend you a bicycle from our signature range – enabling you to make an informed choice. We offer seven styles of bike: folding, mini velo, fixed-gear single speed, ladies’ coaster, men’s coaster, cargo and electric. Unfortunately, for many, purchasing a bike is just a matter of going to your local industrial estate and picking one out. Many factors are at play and should be explored before making a purchase. The right choice keeps you on the road longer and, most importantly, comfortable. My fashion label TWO n FRO offers a range of clever design-led cycle clothing and accessories. City cycling is not without its hazards, so to aid rider visibility many of my designs incorporate reflective qualities. I spend several months a year in Shenzhen, China, at my own workshop where

everything is handmade from only recycled sustainable materials such as Kevlar, boat sails, parachutes and bamboo. And my own personal bike… well, through experimentation, for me it’s a bamboo-framed fixed-gear bike with its unique flexibility that serves me best on London’s streets.’ This extract is taken from My Cool Bike by Chris Haddon, published by Pavilion.

FISHERMAN’S FRIEND Once the default pairing of geeky librarians, the socks and sneakers combo has been co-opted by hip-cats the world over. We’re not talking hi-tops, plimsolls or pumped-up skater kicks, either; we’re talking bona fide running shoes. And the uglier and more beaten-up they are, the better. Photography: Silvia Olsen

Get your knits out. ‘Tis the season for wrapping up, but if the thought of getting a bit hot and bothered with cable knits and cashmere seems too formal or stuffy, opt for a lighter pearl knit. Inspired by the original fisherman’s jumper, its breathable but will keep you toasty when you’re battling it out against the elements. This Pull&Bear example comes in bright blue and a more masculine mustard shade.£29.99,Westfield Stratford City, E20; pullandbear.com

Game on. Designers have once again embraced the sport luxe trend and we couldn’t be happier about it. The look needn’t be overly casual – done well it simply means a fuss-free, minimalist silhouette and an element of colourblocking to break up the overall shape. MY

JEWELLERY DESIGNER HANNAH WARNER SHARES HER INSPIRATIONS

STYLE FAVOURITE PIECE OF JEWELLERY FROM YOUR OWN COLLECTION:

My favourite pieces at the moment are the steeple pendant and matching stud steeple earrings in gold. They are perfect for a casual day look, but are also great for getting dressed up to go out.

MOST TREASURED POSSESSION: A framed black and white photograph of my dad. My mum framed this amazing picture of him for me and all my brothers and sisters. We all have it hanging in our houses.

FAVOURITE HOLIDAY DESTINATION:

Ibiza, because it’s full of friends and fun. I’ve been going for over 10 years and just love the beaches and sunsets from a friend’s villa near San Jose, as well as eating at the Fish Shack, where they have the most amazing fresh catch of the day. Another friend also does the new Paradise party at DC10, which I’ve made a collection of jewellery merchandise for. It’s a series of geometric shapes that you can wear singly or together.

FAVOURITE PIECE OF ART:

Richie Culver, I Loved You. I recently met Richie at my house, where he talked me through all of his pieces. It was a huge privilege and really fascinating, he’s an incredibly talented artist. I Loved You was an absolute favourite and an instant purchase.

FAVOURITE SHOE DESIGNER:

Toga Pulla. I love the boots she does, especially her ankle boots and the embossed loafers for a comfy casual look.

MOST INSPIRING EXPERIENCE:

Spending weeks in Ladakh, the highest point in India. My sister and I travelled through India for the first time about seven years ago . We started in Delhi and ended up right up in the north before going all the way to the south. The people we met were so inspiring. It was an incredible experience, with amazing memories.

STYLE ICON:

Patti Smith for her casual, punky feel. I’m not so much into pattern, I like the understated look, perhaps with just one block colour that can be styled with a simple piece, like the steeple pendant from my new collection - which really stands out against a bright or monochrome top.

FAVOURITE DESIGNER:

Alexander Wang, for the simplicity of his T range. I have so many of his t-shirts and jumpers. I also love his Bullet bag too, which is in constant use. Stocked at TheVillage Bicycle, Dray Walk, 91 Brick Lane, E1; hannahwarner.com

FOUNDER OF OUR WANDERING MINDS, ELISA EMERY, ON HOW TO BUILD A STRONG FASHION BRAND How long have you been in fashion?

I’ve been in the business of fashion since 2008. I graduated from the London School of Economics with a great degree totally unrelated to fashion. Studying in London made me very fashion-aware, although it was definitely the business side of things that attracted me the most. I did an internship with a small luxury denim company called Bodymetrics, which was great because it allowed me to get involved in all aspects of running a fashion company, from hiring sales assistants to buying new collections. This is when I realised that not only did I want to be in fashion, I wanted to have my own business, and have an input in all the elements involved in creating and running a brand. At what point did you realise you could sustain your own website?

I soon realised that running a purely online business would be very difficult. While the start-up costs are very low online, there’s the eternal problem of bringing new visitors to the website. We then decided that opening a brickand-mortar store may be helpful in bringing a regular cash flow while raising awareness around Wandering Minds quickly. We opened

How are you enjoying life at Box Park? How hard is it running your own shop?

Our audience is so varied, from young creative hipsters hanging at Shoreditch House to stylish 80 year-olds into sheer lace shirts! We get a lot of tourists, who then go back to their country and shop on our website. Opening our store at Box Park had its challenges, but opening our fullyfledged store at Camden Passage is proving to be a lot more difficult, as we have to think of the shop fits and the interior decoration a lot more. How important is social networking and blogging to your business model?

our first store at Box Park, Shoreditch in April this year, and it was an instant success, which also brought a new audience to the website. We are now opening a new store in Camden Passage in Angel, and I do think a multichannel strategy is the way to go for us.

I truly believe that good social networking is crucial and we probably don’t do enough of it. We try to make our social media voice as honest and transparent as possible. Our blog, which we have called ‘No Experience’, depicts the behind-the-scenes of a London start-up. We’re most active on Facebook, which we still find the best platform to communicate a mix of written content and images. We also have strong relationships with bloggers, in

particular bloggers from other European countries, as this is the quickest way to get known outside of the UK. What do you think is the future of online fashion?

I think the future of online fashion is multichannel. Brands need to be able to allow consumers to make use of the online and offline channels seamlessly, to reserve items, try them, pick them up and return them. Logistically, it’s very difficult to do, but the future winners in the fashion industry will be the companies that manage to achieve that. Online, the standards of the shopping experience has risen dramatically in the last few years, but we need more stores that have a curated, personal approach, and this is really what we’re trying to do at Wandering Minds. We don’t just want to sell you clothes. We want to tell you what we personally think about trends, style and products, and we want to know what you think; in short, we want to be your friend! 10, Box Park, 2- 4 Bethnal Green Road, E1; ourwanderingminds.com

SLEEP

T

SCHOOL

eenagers are lazy, right? Wrong. According to a growing body of research they just have a different body clock from the rest of us and if schools would wake up to this evidence and let teens start their day later, scientists believe they would see great gains in both the health of their students and academic results. Some schools are taking note. For UCL Academy in Swiss Cottage, it will have been just over a year since it became the fi rst London school to allow teens to ‘sleep in’. When the academy, which is sponsored by University College London, opened in September 2012, its students were allowed to start at 10am and leave at 5.30pm. Headmistress Geraldine Davies argues that the school is already seeing positive results. ‘Youngsters are turning up alert and ready to learn and are focused and engaged in lessons,’ she says. ‘We have no hard data on exam results yet… but pupil and teacher surveys have so far been positive.’ Scientists say there is now biological evidence underpinning the argument that schools should start later. It was in the US in the 1990s that researchers fi rst identified an ‘adolescent time shift’ in the sleep pattern of teenagers and in the past two decades, a number of US schools have adopted later start times. In the UK, Professor Russell Foster, a professor of circadian neuroscience at Oxford, has been at the forefront of work on teenage sleep patterns and their effect on performance at school. He explains: ‘The biology of human sleep timing changes as we age. As puberty begins, bedtimes and waking times get later. Th is trend continues until 19.5 years in women and 21 in men. Then it reverses. At 55 we wake at

A NEW ACADEMY IN LONDON IS THE FIRST IN THE CITY TO LET ITS STUDENTS START LATER. AMANDA CONSTANCE REPORTS ON THE TEEN SLEEP DEBATE

about the time we woke prior to puberty. On average this is two hours earlier than adolescents. Th is means that for a teenager, a 7am alarm call is the equivalent of a 5am start for a person in their 50s.’ Prof. Foster observed a UK school in Liverpool where many students were getting just five hours a night; unsurprisingly, teachers reported students falling asleep in class. He says a lack of sleep increases stress and is associated with a loss of humour, lack of empathy and low mood. It also greatly impairs blood-glucose regulation in young men, with research showing that their insulin levels are comparable to the early stages of diabetes. But it isn’t just a biological problem. Society isn’t very conducive to a good night’s sleep due to more relaxed parental attitudes to bedtimes and access to TVs, PCs, gaming devices and mobile phones, all of which promote alertness that doesn’t aid healthy sleep. Prof Foster has become so persuaded of the need for schools to adjust their start times that in 2009, he instigated a 10am start for 800 students at Monkseaton

High School in North Tyneside, the fi rst British school to do so. After observing the students, Foster says that the outcomes were clear: ‘The Monkseaton experiment shows, frankly, that if you start at 10am, grades go up.’ There are doubters, however. One issue is a perceived negative impact on after-school activities, particularly competitive sports, although schools in the US have reported that this hasn’t been a problem. But a greater issue here and in Australia is union objections to longer working hours for teachers and support staff. Prof Foster, however, remains convinced that there is an ‘overwhelming case’ for shift ing the times of a school day: ‘It will reduce their sleep deprivation, their learning will improve and, crucially, it will help to protect their physical and mental health.’

The elixir of life was said to grant the drinker eternal youth and has been sought after for millennia. LUNCH TIME FIX ASK FOR? The Stem Cell Facial WHERE? Destination Skin THE LOWDOWN

This treatment was a godsend after a night on the sauce. The Stem Cell Facial, whose fans include Kimberly Wyatt and Caggie Dunlop, encourages increased cell turnover by using the latest plant stem cell technology to rejuvenate the skin. Extracted from sea fennel, the stem cells have the potential to regenerate tissue while protecting and healing damaged skin using a special ingredient named Ferulic Acid, a powerful antioxidant that improves skin tone, enhances elasticity and minimises the appearance of fine lines and wrinkles. My therapist removes my make-up with a cleanser and exfoliant before advising that this kind of facial is key to a good skincare regime, especially as my skin seems congested. She talks me through what I should be applying in the morning, which differs from what I should use at night – newsflash! Apparently, nighttime is all about restoring any vitamins you may have lost and making sure you replenish moisture – in the morning, you need a lighter moisturiser and to protect your skin from free radicals and pollution with an antioxidant such as Vitamin C. Wearing SPF 30 is compulsory if you’re concerned about wrinkles. Next, stem cell serum is applied along with an eye-lift formula, while a 3D complex finishes the facial off, sealing in moisture and leaving a healthy ‘dewy’ glow minus any grease. 5-7 Folgate Street, E1; 258 Holloway Road, N7; Oriel Court, NW3; 22-24 Muswell Hill Broadway, N10; destinationskin.com

This consists of cardio and strength training intervals designed to push your metabolic rate, with a guaranteed calorie burn that continues up to 36 hours AFTER you’ve exercised. And the most motivating bit? Your heart rate monitor is beamed onto a screen, so you (and the whole class) can see your progress in real-time. The aim is to spend at least 20 minutes in the optimal orange zone; you even get a print-out of your results at the end of the session. Heartening stuff. BOUTON DE ROSE

J

ust over Canary Wharf’s South Quay bridge lies the secret to eternal youth. Located within a row of recent business developments along the quay (which look like they used to be houses), new beauty salon Bouton De Rose is a testament to Canary Wharf’s ongoing evolution as a thriving shopping and lifestyle destination. From a long list of exclusive luxury face and body treatments, I’m trialling the new Cinematic Lift Expert by Carita, a new, non-surgical ‘facelift’. My interest is piqued already… the benefits of a facelift, without going under the knife? After all, the invasive facelift is a strong contender for most intimidating of all cosmetic surgeries… with frequently terrifying results in any case. The Cinematic Lift Expert is an elaborate facial to say the least – and surprisingly relaxing. My therapist, Gené, has the magic touch, and her fingers know just what to do to ease away tension in the neck, shoulders and face. After cleansing, she applies an eye-mask and my face is meticulously exfoliated with sesame seeds – which have been soaking for a rather labour-intensive period of nine months. Extract of lemon is added to the mix, to brighten the skin, and combined with the earthy, natural aroma of the sesame seeds, elicits a warming glow that almost sends me right to sleep – something I’d never before experienced when getting a facial. The ‘lift’ part comes when Gené dons some gloves which combine micro-currents, ultrasound and LED technology and, with the aid of serum, uses them to ‘exercise’ and tone my facial muscles (which begs the question, what happens to these muscles during a surgical facelift?). The benefits of the treatment are many – as well as enhancing overall firmness, it stimulates oxygenation of the skin, improves micro-circulation and allows for the ingredients to penetrate deeper into the dermis. Sound convincing? Gené herself has the complexion of someone ten years her junior, and as she starts by performing the lift on one side of my face, so I can see the effect more clearly. The results are instantly, almost magically, visible. And while there are some impressive stats and tests to support the treatment’s effectiveness, the main thing is that your face feels lighter and lifted after just one session. Even better, the Carita products used smell and feel divine. Ladies, I think we may have hit on something here... 2 Cochrane House, Admirals Way, 020 7515 1675, E14; boutonderose.co.uk

SMOOTH MOVES HELEN BARON HEADS TO SMOOTH YOU FOR THE ULTIMATE PAMPERING SESSION

Hair

It’s Autumn, and my hair needs an update. My previous block colour is not working as well as my old balayage… and is even more dried out from the monthly need to dye. First world problems, I know, but still… disaster strikes, and where better to go for a barnet overhaul than Smooth You? Essex Road’s leading salon offers all the usual services, from tints and toners to styling and extensions, but owner Luma Mitchell is clearly trying to do something different here, bringing years of experience in the hair industry from her native Brazil. As such, Smooth You was one of the first salons to introduce the Brazilian Blow Dry, which has since become massively popular in the UK. The expert staff are also adept at extensions and weaves for both European and Afro hair.

Beauty

Principal stylist John highlights my ends without bleach to combat dryness, explaining the reason why too much dying doesn’t work for me – I have fine hair but a lot of it, and the full colour dye is swelling my hair, making it feel heavier and frizzier. Boom, there we go: another misapprehension obliterated. All this time I thought that colour treatments would add gloss, when really they were stripping my hair of its natural verve. I am better off with subtler highlights, especially as I get older and having healthy, natural-looking hair becomes more important than any particular colour or cut. John uses a special nourishing treatment and voilà, my barnet is fully restored.

Smooth You use Dr Murad products and I’m booked in for a Sun Undone Infusion Facial, ideal at this time of year for countering any sun or free-radical damage that might have accumulated over the summer months. There are numerous facials to choose from, from pore-refining and blemish control to anti-ageing. You can also choose from a range of Yon-Ka facials as well as body treatments, massages, scrubs and wraps. For those seeking clinical treatments, the salon offer both Soprano laser hair removal and skin tightening, toning and firming. The Harmony laser is used to tackle skin imperfections such as acne, sun spots, pigmented lesions and scarring. This is all in addition to the usual nail and waxing treatments.

the kind of service and luxury associated with West London to the East End. Of course, the salon will offer the same variety of treatments and beauty products as its Islington progenitor, but in addition will be home to the Safer Tanning Company and a range of responsible tanning options as well as offering daily skincare and make-up demonstrations. All in all, the spa will offer the kind of luxury pampering experience that’s been sorely lacking in East London for years. 70 Essex Road, N1; smoothyou.co.uk

The new spa

As they celebrate their second birthday, Smooth You are set to unveil their new Town Spa, located in the Dalston Junction development alongside new restaurants, bars and artisan bakeries, bringing to the area a much-needed high end beauty retreat in a 5000 square-foot space. With a fit-out cost in excess of £1 million, the spa points to the shape of things to come, bringing

A WORD ON… SASHIMI PIZZA

Pan-asian Camden eatery Gilgamesh have dared to go where no one even remotely considered going before them – and with surprisingly good results. On my ride up the escalator to the restaurant (yes, escalator), I must admit I felt a pang of trepidation: Italian-Japanese fusion just doesn’t sound quite right. I needn’t have worried. The rich taste of the tuna sashimi paired with the texture of the crispy thin-crust pizza base makes it the ideal starter. By the end of the meal, my only worry was how soon I would be able to order it again. Catherine Hales The Stables Market, Chalk Farm Road, NW1; gilgameshbar.com

 CHICKEN LICKIN

Are you a chicken power-eater? If so, you might get excited about Jubo, a Korean fried chicken canteen at the Bedroom Bar, born of the know-how of Stephen Parkins-Knight (formerly of the Ivy and Dishoom). Choose from fried chicken wings, homemade kimchi, pickles, kimchi slaw and pork belly steamed buns or slow-braised beef brisket. Or get the Jubo special, which comes with Korean Hite beer. More randomly, you can get a steak sub… but whatever your choice, this is anju (or drinking food) at its sweet, crunchy best. 68 Rivington Street, EC2; jubolondon.com 50

I

am forever uncovering new and wonderful nooks in East London. The number of local producers has grown over the last few years and there is now an abundance of beautiful produce throughout the area. In East London proper, as it were, I like Hackney honey from Curtis Honey Man and Golden Company, and fragrant jams and marmalade from Lillie’s London Borough of Jam. Lillie’s unusual combinations and seasonality mean that I often have two or three jars in the cupboard. In fact, these go perfectly with almost anything that comes out of the E5 Bakehouse ovens. Their raisin and walnut sourdough is a particular favourite of mine, almost as good simply hot and buttered. I will make the pilgrimage from Soho just to get fish from Steve Hatts. It is the best fish in London; gleaming, clear and bright-eyed, seasonal and often caught in British waters. The shop has a pleasingly old-fashioned, utilitarian feeling; women queuing up, baskets and children dangling off their arms, to get their fish suppers for the weekend or to order small mountains of shrimp. It’s great to be able to buy small amounts to test recipes with and have access to the best knowledge in the business. I’m also always happy for an excuse to have a coffee and smackeral at Towpath. There is little better than sitting in the sunshine at the canal’s edge, mopping up the last smears of sauce with squishy, crusty bread, watching London float by. Another lure is Labour and Wait - I always seem to need something – and round the corner Leila’s for baked eggs, where I am inspired by the display of fresh produce and carefully sourced pantry items. And for a full grocery shop without too much running around and the scent of coffee in the air, Maltby Street is a firm favourite.

FOOD REVIEW GRAIN STORE

ELOISE BAUMANN VISITS THE NEW STAR OF THE KINGS CROSS DINING SCENE

W

hen a culinary kingpin like Bruno Loubet looks for a new angle on fine dining, there’s usually one thing you can take for granted: it will involve meat. Lots of meat. But with Grain Store, Loubet has done something daring and very different. Sure, there’s meat on the menu, but it’s no longer the star of the show. Grain Store is all about giving vegetables their due – and the concept is pulled off with masterful flair. Housed in the same stunning Kings Cross warehouse as Central St Martins and Absolutely favourite Caravan, the restaurant provides suitably laid-back surroundings in which to while away an autumn evening. The room is vast and airy yet intimate, filled with the happy hum of diners. The decor sparks conversation from the moment we sit down. It’s so clean and bright, with white wooden furniture, exposed industrial vents and shining steel surfaces in the open kitchen. The light colours and friendly minimalism may lack edge or a sense of opulence, but the effect complements the vibe of the place perfectly. My partner and I are spoiled for choice by a sizeable menu packed with intriguing combinations, from buttermilk and caraway braised cauliflower, woodbaked onions and devilled duck heart to vegetable paella with garlic and tomato snails. To start, we share onion bread with crème fraîche butter alongside baked beetroot, pickled onions, goat labneh (a yoghurt cheese) and a dill oil dressing. To accompany, were two sublime tipples originally concocted by Tony Conigliaro of Islington’s 69 Colebrooke Row – Cedarwood Lemonade, a blend of sherry, lemon juice and soda, and Twinkle, which combined vodka, elderflower and lemon swirled over a champagne base. For mains, we chose ‘chilli con veggies’ (a thick, saucy chilli served in a steaming pot alongside a bed of brown and wild rice) and a wild mushroom risotto with truffle shavings. The portions were generous enough to make dessert a shared affair, so we ordered up white chocolate rice crispy with chocolate mousse and almond ice cream: another triumph. Our reservation was early evening, and the restaurant filled up around us as we ate. By the time we bid the friendly staff goodbye and headed out among the lighted fountains of Granary Square, Grain Store was buzzing with well-heeled (and well satisfied) customers. No surprise, really, when the cooking is of such quality: Loubet has shown that imagination and skill beat bandwagon-jumping every time. Granary Square, 1-3 Stable Street, N1C; grainstore.com

PLUM + SPILT MILK

HELEN BARON HAS THE MEAL OF HER LIFE AT THE GREAT NORTHERN HOTEL

P

lum + Spilt Milk is the latest venture from Mark Sargeant, the culinary wunderkind who headed up Gordon Ramsay’s kitchen at Claridges before wowing Folkestone foodies with his restaurants Rocksalt and The Smokehouse. Located in the recently reopened (and hella historic) Great Northern Hotel, a few short steps from King’s Cross St Pancras station, I’d been meaning to check it out since it opened earlier this year. The first thing you notice, even before you visit, is the name. It comes from the livery colours in the dining cars of legendary 19th century steam engine the Flying Scotsman – and this hint of history is a sign of things to come, because the restaurant, like the beautifully renovated Great Northern Hotel itself, tips many fun, inspired nods to the area’s illustrious heritage. During a whirlwind tour ahead of my meal, I’m impressed by the way the Great Northern’s redevelopment has retained the feeling of a grand railway hotel while catering for every modern fancy. The rooms are chic and tasteful, reworking the iconic aesthetic of old-fashioned railway carriages in ingenious (and luxurious) style, with great views across King’s Cross station’s roof or the buzzing King’s Cross Square. In fact, the square has its official opening on the afternoon of my visit, and rumour has it that Mayor Boris has been lunching at Sargeant’s eatery. Whisked down the hotel’s doublewidth corridors (remnants of a time when ladies and their dresses needed more space to pass each other at a polite distance), we pass the Snug, Plum + Spilt Milk’s inviting little cocktail bar, all smoky Mad Men

elegance and the hushed clink of Martini glasses. Then it’s on to the dining room proper, a highwindowed space of comfy banquettes lit by hundreds of dangling pendants. Perhaps its the effect of all the exposed filament bulbs, but the vibe is quietly electric, the clientele well-heeled without being stuff y and the staff – including one girl with a killer afro – both hip and engagingly professional. But what of the food, which could be described as ‘traditional British dishes of a brawny bent’? The pleasure starts before the starter, with my over-zealous companion declaring that the butter was so good ‘it’s probably trending on Twitter’. The pumpkin and cobnut pesto soup that follows is worth about twenty tweets itself, frothy yet hearty and full of flavour, while the mains continue the theme (if the theme is ‘blowing our tiny little minds’). Pan-fried dover sole with seaweed butter is a fluff y, melty, surelynot-too-unhealthy triumph, while my companion’s braised bean stew with breadcrumbs is a subtly seasoned, intensely moreish concoction that quickly turns into a sharing dish. In a fit of ambitious epicurean longing we add a slew of sides: honey roast parsnips, chilli and lemon baked courgettes, chips... All are incredible. We manage dessert. Not the plums and spilt milk, alas, but a treacly Kentish gypsy tart with lashings of cream and a chocolate fondant with blackberries I was woefully unable to finish. In fact, the only thing that would have made the evening better is cheek pouches, so that I could carry away the leftover fondant like a greedy hamster. Otherwise, everything about Plum + Spilt Milk, proved that this restaurant is very much on track to be one of London’s very finest restaurants. A destination that should be at the top of everyone’s list. Great Northern Hotel, Kings Cross St Pancras Station, Pancras Road, N1C; plumandspiltmilk.com

LONDON IS WAKING UP TO THE BENEFITS OF SCANDINAVIAN FOOD – WHICH IS BOTH HEALTHY AND DELICIOUS, AS ABSOLUTELY DISCOVERS

S

candinavian food is having a moment in the spotlight. With Copenhagen’s Noma holding Restaurant magazine’s improbably impressive title of Best Restaurant in the World (yes, that’s the entire planet) for the past three years running and recent studies praising the Nordic diet for its significant health benefits, London’s Scandinavian eateries are heavily in demand. But how does the uninitiated British palate cope with all those herrings and why would anyone add salt to their liquorice? Bronte Aurell is the Kensal Rise-based Dane who, together with her Swedish partner Jonas, founded the Scandinavian Kitchen in Great Titchfield Street five years ago. For her, it was all about foods she missed from home, mostly rye bread, which was a real wrench. They thought that setting up a café would be the solution to the work/life/family balance issue, so they left their jobs (she was working for Innocent; he at the BBC) and opened (timing the opening to coincide precisely with the birth of their first

child). At first they assumed that the café and food store would appeal mostly to ex-pats like themselves, but now 85% of their customers are not Scandinavian at all. ‘There had always been Scandinavian restaurants in London,’ she says – ‘it’s just that they were never promoted to anyone else.’ And most of those places offered dinner, while what she really missed most of all was lunchtime food – rye bread, herrings, crisp bread, salmon, lots of dill. And also cakes. ‘There’s a Swedish word fi ka which means chatting over coffee and cake,’ says Aurell. So the café offers a range of small open sandwiches – ‘you choose a few and eat them with a knife and fork. It’s a bit like sushi in that it doesn’t make you feel overly full. Rye bread isn’t as fi lling as wheat bread,’ she explains. Toppings span smoked and cured salmon, marinated herrings in various sauces, and more unusual things like Norwegian cured lamb (‘we thought people would never eat it but it proved really popular’) and brown cheese (a Norwegian goats cheese that tastes like caramel and comes

in five different strengths). Cakes include the favourite kladdkaka which is a sticky chocolate cake (‘gooier than a brownie’) plus a wide range of creations made with cardamom and vanilla sugar, a Scandinavian staple that’s unknown here (though there are five different types stocked at the Scandinavian Kitchen). The Nordic diet is characterised by rye, fish and rapeseed oil, as well as berries and cheese, plus locally sourced seasonal produce including apples, pears, plums, root vegetables and cabbage. It’s the rye and the fish that offer the secret to long life and avoiding heart attacks. When Aurell first started the business, basic ingredients were hard to fi nd here, so they cleverly became an importer and wholesaler too, now stocking Ocado and other suppliers. So, there’s no reason not to become a convert and start the herring diet today. And the salty licquorice? Try it and see. skandikitchen.co.uk

MUSTARD HERRING

THE MOST POPULAR DRESSING FOR PICKLED HERRING IN SCANDINAVIA Often people mistake the shop-bought mustard herring for the real thing, but it is super easy to make your own and it dresses up any pickled herring for a smörgåsbord. You can of course pickle your own herring, but it is a bit timeconsuming so this is an easy cheat. INGREDIENTS: 1 x 220g jar of plain pickled herring (we prefer ABBAs onion herring). FOR THE DRESSING: 1 tbsp white wine vinegar 1 1⁄2 tbsp sunflower oil

APPLE & BEETROOT SALAD MAKES ONE NICE LARGE PORTION, ENOUGH FOR 4-5 PEOPLE Ever wondered what makes our Beetroot & Apple salad so lush? The secret is in the beetroot, actually. We use Scandinavian pickled beets and these are a bit sweeter than the ones you can buy in the UK stores. We’re happy to share the recipe, and also tell you how to sort it if you can only get hold of UK pickled beetroots. INGREDIENTS: 1 jar of pickled beetroot from Beauvais or Felix (300-400g in total), drained. Cut into 1cm pieces. Make sure the beetroot is well drained. 2 Granny Smith apples, cut into 1cm pieces (peeling optional - we don’t). A good quality mayonnaise - we like Scandinavian mayonnaise, but you can use any full fat good quality mayonnaise. Crème fraiche, salt, pepper, squeeze of lemon juice.

1 1⁄2 tbsp crème fraîche 1 1⁄2 tbsp caster sugar 1 tbsp Slotts Skånsk mustard (if you can’t find this, use a grain mustard instead) 1⁄2 tbsp normal Dijon mustard 1⁄2 tbsp single cream 1 tbsp mayonnaise 1 shallot, very finely chopped 2 tbsp chopped fresh dill 2 tbsp chopped fresh chives METHOD: Drain the herring, discard onion bits and put herring to one side. In a bowl, mix all the dressing ingredients together. Whisk really well until the mixture is creamy and combined, then add salt and pepper to taste. Add the drained herring and marinate for a few hours. Just before serving, add on top of crispbread or dark rye bread. Decorate with dill sprig. Recipe courtesy of scandikitchen.co.uk

METHOD: Mix the beetroot and apple pieces, add two tablespoons of mayonnaise and two tablespoons of creme fraiche. Stir. You are looking for a good creamy consistency without being too fatty. Pieces need to be coated, not drowning. Add more mayo and creme fraiche as required, little by little. Once you get to the preferred consistency, check the colour - you are looking for a good light pink colour – think Disney Pink. Don’t worry - it will go darker once it sets as the beet will continue to colour. Add seasoning to taste - the lemon juice is very important. If you fancy, add a dash of balsamic vinegar too. Leave to set in the fridge for a few hours. If it goes too dark, just add a bit more crème fraiche or mayonnaise before serving. Perfect as a side salad on the smorgasbord or on a meatball sandwich. If you are using UK or Eastern European pickled beets, these tend to be more sour. Add a spoonful or two of icing sugar to the beetroots after draining and leave for a few minutes - this will sweeten them a bit. Add more sugar to taste if necessary. ON TOP ACCLAIMED CHEF ANGELA HARTNETT TALKS COOKING, CAREERS AND THE LAUNCH OF HER NEW SPITALFIELDS VENTURE, THE MERCHANT’S TAVERN

MURANO_v2.indd 39

18/10/2013 14:54

Hello Angela. Tell us about The Merchant’s Tavern.

It’s a collaboration between myself, Patrick Clayton-Malone and Dominic Lake of [boutique British diner chain] Canteen and Neil Borthwick. We wanted to do a restaurant with Neil, he’s such a talented chef, and we wanted to do something local to us. We open next week; well, we actually open with a soft launch today. But next week we’re fully open. Why Shoreditch?

Well, all of us live in this part of town. It’s an area that has a lot of restaurants, but we felt it needed something else, something we could provide: great food, a very relaxed atmosphere… and one we can walk to! Why is this new venture different? What are you hoping to achieve with it?

The main aim is to make it a rather successful restaurant that establishes itself over many years, not just a two-minute wonder that opens one week and closes the next. We want this restaurant to launch Neil, we want it to become Neil’s place in a sense. Paddy, Dom and

I will remain in the background after a while; obviously at first we’re at the forefront because we have so much experience, but in a couple of months time we’ll step back and let Neil get on with it, very much the way Gordon [Ramsay, Hartnett’s mentor] did with me. Is it nice to play a part in breaking new talent?

first. But I always knew I wanted to cook. I think starting later gave me a good perspective on it. At the end of the day I love cooking, I love food - it’s a wonderful business. But at the end of the day, some people think we’re solving the world’s problems. We’re cooking food, you know? We’re not curing cancer. You have to keep things in perspective.

It is, it’s great, definitely. It’s a wonderful thing to be able to do that.

You’re one of a long line of chefs who’ve worked under Ramsay; how would you describe him?

What do you think about the East London food revolution? Do you get involved in a lot of local projects?

Gordon’s great, I wouldn’t be sitting here today without him. People knock him a lot but they forget what he’s done for the industry. All the chefs he’s trained are doing phenomenally well, you look at Marcus [Wareing], you look at Jason [Atherton], you look at Mark Sargeant, Mark Askew… I mean, all these people trained under him.

We did the menus at the Whitechapel Gallery for two years and that was great fun, but more generally it’s just good to live and work in the same area. And you can’t open a newspaper now without reading about a new opening, a new restaurant… it’s an exciting area to be in. How did you break into the culinary world yourself - weren’t you a late starter?

In some respects, yes, I did a History degree

What was it like working with Marcus Wareing?

We’re still good friends, I see him socially. We had our moments, because he and I probably spent more time together than Gordon and

A BSO LU T ELY FO O D

I, really. What was good was that he went through it all as well, he started from the bottom as a sous chef, just like me, and worked his way up. He’s been a bit of a mentor at times; if I ever needed advice, I’d ask Marcus.

A bowl of pasta! Something quite easy. You’re not going to sit there doing something fancypants on a night off, just something tasty - that’s the most important thing to me. A sandwich will do - as long as it’s tasty.

When well-known chefs are friends, do they have each other over for dinner?

How do you find the experience of cooking for TV?

Well, yes, I’ve had Marcus over for parties and stuff. I’ve had lots of chef friends over for dinner. And although there’s a competitive spirit in the industry, when you’re friends, it should surpass that. One of the great things in this business is how supportive people can be. We’ve found that in the last few weeks, working on the Merchant’s Tavern, all the locals have told us to let them know if we need anything, if we’re short of anything… Chris Galvin has a restaurant round here, James Ferguson at Beagle, the guys from Clove Club they’ve all been great. And I’ve done the same, when someone’s opened near me. That’s what it’s all about.

I certainly don’t consider myself a TV chef, because I don’t do it enough, but I’ve been lucky enough to appear on Hell’s Kitchen and Saturday Kitchen. I don’t aspire to be a TV chef. You have to look after your bread and butter – your restaurants.

What kind of thing do you like to cook at home, when you get the chance?

I suppose it’s easier on hours and better pay, but it’s certainly more competitive than ever.

Do you think the industry is tougher on women chefs?

It’s never affected me. You’re not judged on your gender; you’re judged on your cooking. Its tough, of course, you have to make a choice: people either want to do it or they don’t. How do you think the industry has changed over the years?

People have become more critical because they travel and are more knowledgeable about food and wine. At the end of the day, we’re not alone in that - everyone has to work hard to succeed. I just think it’s an industry that you have to love if you want to stay in it; if you’re halfhearted, it will show, because it is long hours and it is tough. Have you always lived in Spitalfields? Where do you like to eat out?

I lived in Stockwell for a while, but yes, I’ve been in Spitalfields for a long time. I eat at Tramshed, just round the corner; I like St John Bread & Wine. I love Canteen. Do you see yourself in Spitalfields forever?

Oh yes. It’s always been great, but it’s definitely changed - six or seven years ago even taxi drivers wouldn’t go near the place. But it’s changed for the better and I don’t intend to leave anytime soon.

THE EYE HAS TO TRAVEL

INTERIORS WUNDERKIND CHRISTOPHER JENNER ON HIS PHILOSOPHY OF DESIGN You’ve travelled the world extensively. How important is travel to your job?

Travel is a necessary evil and a glorious education. There’s only so much you can accomplish over the phone and via Skype; at some stage one needs to share a meal and spend some real time. Early on we created a global supply chain for our projects and to do this we set off to find amazing people in far-off places who would accept the challenges we presented. The ability to travel has made the realisation of our concepts a much easier proposition. Why did you settle in London and why is the city important to you?

London is the centre of the known universe – it’s the key node. Everyone who is anyone will come to London at some stage. Living here allows us to do business with China in the morning and New York in the afternoon. There are few cities is the world where culture is developing at such a super fast speed. London and New York I guess are the only two cities where a sense of global cultural change is happening as we speak. This organic cultural melting pot, married to a city with an incredible heritage, is a magic potion of innovation and creativity. Plus the food is incredible.

You use a design process called ‘fractal analysis’. Can you tell us what this means?

We coined the term fractal analysis to describe the process of developing a brand narrative. I create a map of all the brand qualities including key aspects of heritage, product and current research, then I set these out in a fresh representation of the brand. This is where I get to work at developing an absolutely new and dynamic visual of brand presentation. What are the benefits and challenges of running your own studio?

The benefits far outweigh the challenges, that’s for sure. Our clients task us with the implementation of our projects globally, which means we need teams on the ground who can make things happen against what may seem like impossible odds. Each of our designers has a distinct profile, but each also has the ability to move seamlessly between conceptual, commercial and product-based projects. Having such an incredibly talented team around me allows me to bring concepts to the table in super-quick time with incredible visual character. How do you decide whether to take on a project? Is there one that sticks out as particularly challenging or enjoyable?

My particular favourite is working on projects which pose positioning problems, devising ways for brands to develop a world unique to themselves, distinguishing them from other brands and building an emotional relationship

KETEL ONE 80 BAR, GILGAMESH, CAMDEN STABLES MARKET

with clients. I’m very fond of working with brands that have an incredible heritage, but which have lost their way and are finding it hard to transition from their current image to a more contemporary version of themselves. What inspired your work on the Leadenhall Market branch of perfumier diptyque?

And what about the Ketel One 80 Bar?

EUROSTAR CONCEPT

The Ketel One bar is all about turning a raw product into a premium one. As Ketel One is such a pure product we wanted to communicate this process more than the brand narrative; as such, we devised a design which references the copper kettles in which the vodka is distilled. The result is a huge sweep of hand-hammered copper attached to a skeleton frame which follows the shape of the building. The stools are formed to fit the ergonomic structure.

No period in particular; I like the fact that I can find beauty and inspiration in both the baroque and minimalism. People have become such slaves to taste that they have forgotten all sense of style. What constitutes good design?

Considered beauty. No matter what its end use, a designed space or product should embody both a considered approach and the values of beauty. christopher-jenner.com LEADENHALL MARKET © MICHAEL FRANKE

The heritage of diptyque is steeped in ethnographic references, and as such we employed the central ceiling in Leadenhall Market as a key inspiration point in our design. We spent a long time researching prevailing trends of the time, the result being a preference for green and blue in the colour scheme and lots of brass. All our work for diptyque always considers the culture of each of their locations, the aim being to incorporate facets of this into each presentation so that every project is a unique manifestation of the brand message.

What architecture inspires you?

CLIMATE CHANGE

CAMPAIGNING TO THE NEXT LEVEL

W

hile his peers will be busy planning the Christmas party season or organising their next trip abroad for the extended university summer break, Parker Liautaud has a completely different agenda. From a very young age, this extraordinary young man as embarked on a journey to try to lead his generation into understanding how serious climate change is and has literally gone to the ends of the earth to try to get across his message. At just 19 years old, this Anglo-American polar explorer has already completed three Arctic tours and is about to embark on his largest and most daring adventure yet: The Willis Resilience Expedition. The Willis Resilience Expedition is an ambitious two-man unsupported sprint to the South Pole by Parker and his long-time expedition partner Doug Stoup. If successful, Parker will be crowned the youngest man to ever accomplish this gruelling feat, while setting a new record at the same time. The expedition kicks off on the 3rd of December from the coast of Antarctica’s Ross Ice Shelf. The pair will cover 397 miles as they make their way towards the South Pole, crossing the Trans-Antarctic Mountain range in the process, which at its highest point reaches 9,186 feet. As if this challenge wasn’t enough, Parker will also be carrying out three scientific programmes for a number of international research centres including Yale University and the International Atomic Energy Agency

in order to contribute to the scientific community’s understanding of how climate change is affecting Antarctica. These programmes will include the collection of over 25,000 samples of snow and ice, as well as testing a new type of mobile weather

station, which has never been deployed in Antarctica before. Speaking in a recent live webcast interview with Al Gore in California, Parker mentioned that he hopes that, “by actually going there and communicating live from the places that are being hit the hardest, project such as The Willis Resilience Expedition will become a very powerful mechanism to communicate the importance of the climate changes.” Changes to the global climate patterns are outlined in the International Panel on

Climate Change’s (IPCC) report released this September, which stated that scientists are now 95% certain that humans are responsible for the changes in our global weather patterns. As Parker points out, this is roughly the same certainty that scientists have that smoking leads to cancer. It is not just scientists who are interested in understanding our changing world: global business is starting to take note too. Commenting on the Willis Resilience Expedition, Rowan Douglas, the chairman of the Willis Research Network explained that, “This expedition marks a remarkable transition in climate science: it is being funded by a financial institution in The City, because climate change is moving beyond just science into the financial markets. It is literally going to move capital and the allocation of resources. The data that we get from this expedition will inform financial

72

decision-making.“ In order to draw attention to the issues raised in the IPCC report, Parker chose to launch his expedition on the same day it was made public, by setting up a mini Antarctic camp beside Tower Bridge. Complete with real snow, expedition pulks and Antarctic-gear. The spectacle caught the attention of passers by, who stopped by to learn more about the expedition and its goals. Engaging the public in a dialogue about climate change is central to the expedition, so people are encouraged to engage with Parker and the expedition team on social media, and through the website which will be streaming footage and data directly from Antarctica around the clock.

To find out more about the expedition, head to www.willisresilience.com, or follow “WillisResilienceExpedion” on Facebook and @WillisSouthPole on Twitter.

THE FOLLY

ESCAPE THE EVERYDAY WITH A TRIP TO THE FOLLY, A LUXURY COTSWOLDS COTTAGE EXQUISITELY RENOVATED BY NORTH LONDON INTERIORS SPECIALISTS MATRUSHKA

THE HOTEL With the Folly, Matrushka have created a rural bolthole to make you wonder why cities were ever invented. Originally built in the 16th century, the cottage offers a chic, cosy and wonderfully indulgent take on country living, with all the crooked romance of exposed beams and old stone plus a ton of luxury touches to ensure your stay is defined by contemporary comfort rather than agrarian privation. There’s an elegant salon, a huge kitchen with Aga and butcher’s block, a dining area with a table for ten, a utility room, a cloakroom, a snug (with 50-inch plasma screen and Bose surround sound) and a vestibule with wood-burning stove - plus all the books, movies and welly boots anyone could ever need.

rusticana of the Dorothy to the colourful, child-friendly charm of the Toad (complete with antique rocking horse). The furnishings and decor betray a masterful magpie’s eye for everything vintage and unique – you’ll probably find yourselves talking about the many beautiful ornaments and objets d’art long into the cosy Cotswold night.

THE DAMAGE The Folly can be rented for a short break or by the week. Prices range from £1,335 for a two/three night break at off-peak times to £5,000 for a week over Christmas (including seasonal decorations and food). See the website for full details plus information on a range of bespoke additional services, from massage and spa treatments to helicopter transfers.

THE ROOM The main house has four double bedrooms, while a separate garden studio contains another. That means bedspace for ten guests in total, and with each room brilliantly designed around its own theme, no one will feel they’ve drawn the short straw.

The master suite is under the attic eaves and features an adjoining bathroom with spectacular copper bath, while the remaining rooms range from the soothing Provencal

THE AREA The Folly is both easy to reach and pleasantly secluded, tucked away down a quiet lane on the fringe of the village of Didmarton. Within walking distance are a few neighbours, a teeny chapel and some lovely allotments teeming with raspberries and rhubarb. It’s all very Cotswolds in the best possible way, and the wider landscape continues the theme with its rolling pastures and grazing horses. The cottage is also just a few miles from Tetbury, which must be one of the nation’s best-preserved country towns – as well as being internationally renowned for its antiques shops and the rural seat of a certain Prince Charles.

THE GARDEN Clamber from your car onto the sweeping gravel drive and the first thing you see is the grey stone and clinging ivy of the cottage itself; a few steps more and the garden is revealed. A lush lawn sweeps up to a near horizon shaded by a spectacular walnut tree complete with a swing, while a series of steps (plus a safely covered fishpond and cute hump bridge) lead down to a large paved terrace that’s perfect for entertaining. At the foot of the lawn is a full-sized tennis court and a couple of garden sheds, one of which contains tennis equipment, two mountain bikes and lots of stripy wooden deckchairs. By day, the garden is activity central; by night, it’s a sublime spot in which to sit and enjoy the stars.

TOMB RAIDER SARAH GILBERT TAKES A JOURNEY THROUGH KHMER CULTURE IN CAMBODIA

S

ipping on a ‘Femme Fatale’ – Jackie Kennedy’s favourite mix of Champagne, crème de fraise sauvage and Cognac – in the Elephant Bar at Raffles Grand Hotel D’Angkor in Siem Reap, it was hard to believe that just a few hours earlier we’d been mud-spattered and sticky, scrambling through the Cambodian jungle exploring the remote remains of the lost city of Mahendraparvata, still swathed in vegetation. The hotel opened its doors in 1932 and has kept its French colonial charm with its wrought-iron lift, black and white marble floors in the lobby,

polished wood floors in the rooms and the elegant Khmer furniture, and updating the whole shebang with a host of contemporary comforts. Siem Reap is the starting point for exploring the dazzling temples of Angkor – the world’s largest complex of sacred temples and a Unesco World Heritage site – and our days were skilfully planned around early starts, visiting the more popular temples minus the crowds and heat. Angkor Wat is the jewel in the crown. Built in the 12th century, it’s believed to be the world’s largest religious building, with one kilometre of bas-reliefs that tell tales from Hindu mythology and the Khmer Empire. But it’s not the only masterpiece: the immense walled city of Angkor Thom is home to the stunning Bayon, its 54 towers each topped with colossal heads depicting four faces of Buddha. Ta Prohm’s crumbling

temples are wrapped in the ruthless embrace of strangler figs, and the elaborate carvings of the diminutive Banteay Srei are unmissable. One afternoon, renowned American photographer John McDermott, whose dramatic black and white prints of Angkor are for sale in his gallery at Raffles, took us behind the scenes at the atmospheric temple of Preah Khan, where we put his professional tips to good use as we watched the setting sun turn the temple walls to gold, with hardly another tourist in sight. That evening, the apsaras – the dancers from the celestial Hindu court of Indra – stepped off the temple walls and came to life on the stage in Raffles’ garden, with their glittering costumes and graceful gestures. Khmer is the country’s original culture and can be traced back to the 9th century AD. But in the 1970s, the brutal regime of Pol Pot and the Khmer Rouge, as well as killing millions of Cambodians, tried to obliterate all traces of its artistic, culinary and musical heritage. The frenetic capital Phnom Penh, may be changing

at breakneck speed but the Raffles Hotel Le Royal, built in the 1920s, remains a lemongrassscented haven of colonial sophistication, its lush gardens and swimming pool a peaceful oasis from the chaos of tuk-tuks, motorbikes and cars that choke the streets. The hotel was once a safe haven for journalists during Pol Pot’s merciless regime. We visited Tuol Sleng, a former school that became the city’s main internment camp, where the cramped cells are still stained with blood, and we talked with 72 year-old Bou Meng, one of the few remaining survivors. He was saved by his ability to paint and spent his days replicating a photograph of Pol Pot – his wife was not so lucky. Choeung Ek, 10 miles south of the city, is one of the notorious ‘Killing Fields’ where the Khmer Rouge butchered fellow Cambodians before throwing

their bodies into large pits. At its centre stands a 40 metre-high glass stupa, packed with skulls and bones as a testament to the horror. After a gruesome reminder of the country’s darkest time, a visit to the charity PSE – Pour un Sourire d’Enfant – focussed on a brighter future. Here, we watched a heart-wrenching fi lm about young children forced to forage on a city centre rubbish dump, before it was transformed into a school and training centre, giving even the most disadvantaged the chance of a better life. Indeed, some of the original children helped by PSE are now at university. Since the demise of the Khmer Rouge, Cambodians have strived to reignite Khmer culture and Siem Reap is at the heart of the country’s burgeoning arts scene. Now chic boutiques and galleries stock the work of native and expat artists and designers,

nurturing local talent and preserving traditional crafts: at Theam’s House, Cambodian artist Lim Muy Theam updates traditional handicrafts with his neon-bright sculptures, while the Frenchowned Wa Gallery stocks funky homeware and jewellery from around the region. And a tuk-tuk ride from the centre, Artisans d’Angkor sells beautiful silk clothes, bags and soft furnishings made in its own on-site workshop. Back at Raffles, the perfect antidote to a long, hot day pounding the pavements and exploring dusty temples was a trip to the spa for a relaxing massage and the traditional Khmer Herbal Body Wrap, which uses local ingredients, such as turmeric, galangal and lemongrass. Later, we indulged in a Khmer feast at the elegant Restaurant Le Grand, and raised a glass to a new chapter in Cambodia’s history.

t’s 5.30pm and the doorbell sounds. The interruption – albeit only of activities ludicrously lacking in industry, such as lounging indulgently on the balcony – is not an unwelcome one; after all, the sing-song chime heralds the arrival of Vicente at the precise hour at which he had been summoned. He may be dressed to the bow-tied nines in comparison to our lazy flip-flops and semi beachwear and in every way our sartorial superior, yet he is here to deferentially proffer a bottle of Billecart-Salmon along with a helping of bruschetta to whet our appetites for the dinner. Anachronistic as it may be, Vicente’s sole role as our appointed butler is to play Jeeves to our Bertie Wooster and for his part, he assumes it with discrete aplomb, while we are quite happy to capitulate to near total helplessness. We are, after all, aboard the Crystal Serenity, the absurdly stylish and

luxurious cruise liner we boarded at Barcelona that will deliver us eventually to Venice via breathtaking stops at Mallorca, the Amalfi coast, Sicily, Corfu and Dubrovnik. But then, Vicente is emblematic of the whole; every detail, from the very sewn-up and smooth act of boarding at Barcelona’s port, is served up with an attention to detail that

makes every penny of the all-inclusive fare worth it. Let’s start with the room – or, as its known on-board – the stateroom (an appealingly grand moniker I shall pompously adopt hence-forward). The first thing to note is the large double balcony – with a view across the wide seas and downwards towards the promenade deck. It is the perfect spot upon which to enjoy a nightly sun-downer, and indeed, never has the term been more appropriate; to watch the molten fiery orange of the sun melt gradually into the sea and make the water picturesquely sparkle in the dying light is something incomparably spectacular. Back inside, the enormous bed – for which guests can select from a pillow menu – is amongst the most sizeable and comfortable we’ve ever slept in, while the bathroom, complete with Jacuzzi bath, would hold its own in any contest against the best land-dwelling five-star hotels. The service, meanwhile, far exceeds that in any comparable

80

on-land offering; each day the room is cleaned twice by a team of thoroughly charming staff and each evening Vicente leaves us little morsels and treats (smoked salmon here, prosciutto there), as well as Tanqueray gin and tonics to reward us for our exertions poolside or for exploring whatever beautiful town we’ve been fortunate enough to be delivered to that particular day. And then there’s the food, which is abundant and invariable only in its excellence. We begin our voyage from the vantage point of the Crystal dining room, where, on night one, we’re allocated a regular table with regular waiters – this time a double act of Arlena and Fabio, who are as efficient as they are charming. The sweeping grandeur of the room represents a tip of the cap to cruiseliners of old, the chandeliers and scale alone satisfying any hankering for the golden age of travel. The menu meanwhile is daily-changing with interesting twists on modern classics, plus

bars on-board), but there are also speciality restaurants such as the Italian Prego and, most spectacularly, The Silk Road, an outpost of the much-lauded Nobu; its Michelin-star quality is in abundant evidence and the black cod is, I’m pleased to report, every bit as jawslackeningly delicious as it is in Mayfair. To spend eight days aboard The Crystal Serenity, alighting at a collection of fascinating ports on an Odyssean voyage (with conspicuously fewer instances of shipwreck and abject misery, it must be noted), should come with its own danger warning – namely that any traveller must, in all fairness, be made aware of the thoroughly spoiling effect it will exert on them hence forth. The pools, the on-board library, the seamless service (with a notable nod to Benjamin for whom it is a matter of pride that no pool-side drink should be allowed to be empty for more than a matter of seconds), the wonderfully nostalgic promenade deck, the on-board cinema, the plethora of bars – from the breezy to the gentleman’s club-like – and, yes, the services of Vicente all add up to a picture of sublime ease and comfort. At no point, despite the vast number of fellow travellers, does it feel crowded and the diversions available are so wide-ranging that after eight days we’ve barely skimmed the surface; for those wanting the pizzazz of entertainment, it’s to be had nightly (expect ballroom dance, show tunes and, er, ventriloquism); for flutterers, there is a casino; if you could possibly be in need of further relaxation, there is a spa; and for the committed self-improvers amongst us there is a lecture programme and lessons in everything from photography to languages. It is, then, no wonder that as the Crystal Serenity pulls out of every port, the gruff yet affecting tones of Louis Armstrong are belted out throughout the ship as he croons about what a wonderful world it is. Louis, we’d be inclined to agree.

here you will find healthy concessions for those who have not quite yielded to the idea of total gluttony (there is, though, a gym on board for the partial assuaging of guilt). IN THEIR OWN

WORDS MARK WELLINGTON

Manager: Benham and Reeves Residential Lettings’ City, Canary Wharf and Greenwich offices Photography: Rebecca Noonan

I

t’s amazing how dramatically Docklands has changed over the last few years. It used to be just a place to work. But now it’s known for its smart, residential developments, restaurants and shops - it really is a mini Manhattan and ticks all the boxes for City professionals. I’ve worked in property for nearly 20 years, 14 of those in the City and Docklands. I began my property career in estate agency, moving on to work for a well-known, corporate serviced apartment provider. I joined Benham and Reeves Residential Lettings in 2003, first setting up our City office, then the Canary Wharf office in 2009 and now also heading up our new Greenwich office, which opened in October. One of the things I love about being based here is that it’s dotted with pockets of greenery everywhere you go you’ll find squares and parks. There are some great live events in Canada Square over the summer and for a fantastic afternoon out you can’t beat Mudchute Farm. Another favourite haunt is the Museum of London Docklands in West India Quay where you can discover local history dating back to the Romans and moving on to the transformation of the area in recent years. Rental demand is high throughout East London generally, with properties up to £500pw most in demand. Unlike most of London, almost all homes here are new. Developments seem to be springing up almost daily, with rental demand soaring on the fringes of Canary Wharf in places like Bow, Poplar, Lewisham and Greenwich, not just because of the quality of the developments but also because

rentals are lower than in central Canary Wharf. That’s why we opened our new office in Greenwich - we’re known for specialising in residential developments and with so many popping up around Greenwich, this seemed the ideal location. Many of our landlords are international investors, based overseas. They find us through our international offices and need a good, local property management agent - another good reason for opening an office in Greenwich. Living in Docklands is about the lifestyle. Apartments are sleek and stylish, but they also offer superb amenities - gyms and concierge services, making life easier for busy professionals. We specialise in finding corporate tenants and these developments – such as Pan Peninsula and The Landmark, are just what they are looking for. For some, the lure of a new apartment is hard to resist – some tenants might rent a new apartment for a year and then move to another, where everything once again is shiny and new. Brand new apartments can be a little cheaper to rent until they become established so it’s a savvy financial move as well as a desire to have the latest home! Docklands is unlike any other part of London. It’s a great location next to the river and it’s so easy to get to Canary Wharf or central London for work. I couldn’t imagine being based anywhere else. 020 7213 9700; brlets.co.uk

FLYING OVER THE CITY

NEW GREENWICH OFFICE FOR BENHAM AND REEVES RESIDENTIAL LETTINGS Soaring demand has prompted Benham and Reeves Residential Lettings to open a new office in Greenwich. It is the eleventh office for London’s largest independent letting agents and has already seen a number of new tenants registering within days of opening. “We’ve been handling property rentals in Greenwich since 2008. Demand has been overwhelming, prompting the decision to open a dedicated office here in Greenwich Peninsula where we are well placed to offer a full lettings and management service to landlords and tenants,” comments Mark Wellington, who manages the company’s City and Canary Wharf offices and also heads the Greenwich team. “New residential developments springing up here are attracting huge interest amongst tenants. It’s just a short commute to Canary Wharf yet rental prices are lower so tenants are pouring into the area, a trend we expect to continue.”

Stirling Ackroyd is pleased to announce that they were one of only ten balloons invited to participate in the inaugural Lord Mayor’s Hot Air Balloon Regatta over the City of London on the 1st October. Chartered Surveyors Stirling Ackroyd have been prolifically selling commercial and residential property in London since the 1980s, so it is fair to say that they are well accustomed to the streets of the City. Last week they took to the skies to see the homes and buildings of London from a whole new perspective. Stirling Ackroyd has five offices around the City and its environs, including a very active New Homes and Commercial department, with two international offices in Istanbul and Ibiza. A unique step forward in estate agency marketing, Stirling Ackroyd are proud to have flown over the city where they have made their name. The event is the first of what is set to become a key highlight in the City of London calendar, promoting and raising money for the Lord Mayor’s Appeal, which provides a platform for its chosen charities. Beneficiaries include the City Music Foundation, Futures for Kids, Gifford Wood Appeal and the Harold Samuel Collection Fund. The Stirling Ackroyd Balloon made its debut at this event, and was the largest balloon at 105,000 cubic feet. BEST SCHOOL I think Cubitt Town Junior School by Canary Wharf has a great feel to it. I’m not quite at the kids stage myself yet(!), but have heard great reports and seen big smiles.

Move to Bermuda? Only joking, I personally love an afternoon at the Design Museum, situated right on the banks of the Thames. They currently have an Extraordinary stories about ordinary things exhibition running through November that I’m keen to see, now for a day off…

FUN FOR FREE It’s got to be a visit to Borough Market, the variety on offer is unreal, & most stalls provide generous testers! Foods from every corner of the world, all in one place, what could be better!?

SPORTS AND RECREATION There’s actually a couple of indoor karting arenas near us at Tower Bridge that are great fun. It always gets very competitive though – never ask who won!
