T

he food revolution has been brewing for quite some time now. Ten years ago, a pub roast seemed about the limit of our weekend culinary ambitions, New York-style brunches having not yet crossed the pond. Compared to those of our neighbours across the Channel, our national cuisine came in a distinctly sloppy second. What a difference a decade makes! Now, restaurants, canteens, food markets and all other kinds of eaterie are popping up everywhere, serving an ever-widening plethora of global dishes and vying for the attention of our willing tastebuds. In recognition of this ‘food diversity’ and in the month that the Taste London festival returns to Regent’s Park, we hope you’ll join us in celebrating all things mouth-watering in this, our Food Issue.

D

id you always want to be a chef? No, but really I am not a chef – I am a cook. I didn’t learn as a professional. Instead I was just cooking, cooking, cooking for fifty years. Culinary heroes? Well at the time, I didn’t bother to look to others. But later on, Pellegrino Artusi [author of The Science of Cooking and the Art of Eating Well] became a great inspiration. He was a writer at the turn of the century who concentrated on Italy’s regional food. He was not a chef either, but like me he loved food. Meal that changed your life? I always joke that the meal that changed my life was taken at the breast of my mother... of course I cannot remember, but I imagine that it was wet and warm and nice! There are meals and there are meals. I remember a journey from Rome to Tuscany with a few others. We were

on a motorway, it was a really hot day and we were all suffering. There were no cafés, but we came across a country house and asked for some water. We sat in the shade and the woman brought out a big bowl of cheese, bread, prosciutto and fruit. It was really a biblical meal, particularly because she didn’t want any money for it.

I’ve also just finished the second series of Two Greedy Italians for BBC 2 which is on the television this month, and there’s a book that accompanies the series. There’s also my recipe app for the iPad and iPhone too, which is all about nice food kept simple. I am busy!

What has been the proudest moment of your career so far? I think it was writing my biography. You start to see that what you have done remains. My food philosophy has not changed, which is also because Italian food is not changeable, as it has its roots laid down over centuries. I am proud that I have had fifty years of cooking without being influenced by any other cuisines.

Favourite recipe on the app? They’re all my favourites. Choosing would be like picking a favourite child!

What projects are you working on at the moment? My biography comes out in October, plus there’s a compendium of three

Top three ingredients? Pasta, olive oil, basil and tomato. That is four, but with these you can make very simple, delicious food. What dish do you like to knock up for a quick supper? Anything that is in the fridge. For instance, the other day, I had some salmon, and in the fridge there was some fennel. I added water to soften the fennel, and used some garlic. I then

POLPETTINE DI SPINACI SPINACH BALLS CARLUCCIO’S ISLINGTON

Some 25 years ago I invented this recipe for these little spinach balls for a chapter on finger food in a book published by The Sunday Times. Since then I have used them in all sorts of ways, most significantly in a vegetarian pasta dish, and layered with pasta in a vegetarian lasagna. They are very simple to make and very jolly. MAKES 24 LITTLE BALLS • 500g spinach, cleaned and stalks removed • Salt and pepper • 2 eggs, beaten • A pinch of freshly grated nutmeg • 1 tsp very finely pureed garlic • 100g fresh white breadcrumbs • 50g Parmesan, freshly grated • Olive oil, for shallow-frying

cooked some pasta and added delicious slivers of wonderful smoked salmon and Parma ham. I didn’t know that Parma ham and salmon could be so delicious together, but it was fantastic. Best advice you have ever been given? I have never been given advice, I just took it from many, many people. But what I learnt was that the best thing is not to complicate things, obviously to use the best ingredients and never to overwork things. It is all about authenticity and purity. Guilty food pleasure? I am like a pregnant woman. Ok, I don’t want banana on pizza or anything like that, but I like very much the trio of tinned borlotti beans, cannellini beans and chickpeas. Obviously fresh ones are best, but I also like the tinned ones in a salad with tuna and onions. Biggest kitchen disaster? I remember mentally creating a recipe

for a tart using avocado with eggs and mascarpone, so I tried it in the Covent Garden restaurant, and it was total yuck. Really disgusting. Where do you go to eat in London when you’re not working? I don’t go out so much. But when I do, I like La Famiglia – I’ve known Alvaro [Maccioni] for thirty years, and I love the steak alla Fiorentina there. I also like to eat dim sum for lunch; I go to New World in Soho – the food is fresh and it’s full of Chinese people. I like Royal China too in Fulham, but I really don’t like going out too much. I don’t want to be curious. But naturally I go to a lot of my own restaurants, to check that the food is still good. Future plans? So many! The book has been translated in to nine languages, so a lot of the year will be spent travelling – I just got back from Norway for example – so I am looking forward to some peace as well.

1. Wash the spinach, put it in a pan of salted water and blanch for 2 minutes or so, then drain. Squeeze out as much water as you can, using your hands or pressing in a sieve, the chop the leaves finely. 2. Put the spinach in a medium bowl and stir in the beaten eggs, a pinch of salt, some pepper, the nutmeg, garlic, breadcrumbs and Parmesan. Mix well until you achieve a binding consistency. If the mixture is too wet, add an extra tablespoon of breadcrumbs. 3. Pour enough olive oil into a frying pan to cover the base generously, and heat gently. 4. Roll the mixture into little balls the size of walnuts. Shallow-fry the spinach balls in olive oil until golden, about 4-5 minutes per side. Drain on kitchen paper and serve either warm or cold. CONCEPT We love this sustainable food cooperative in Bloomsbury. Responding to the needs of the local community it provides healthy, local food at reasonable prices, buying from trusted suppliers and providing work opportunities for locals. Developing mutually sustaining relationships, it buys British produce where possible and promotes healthy decisions - challenging the status quo and striving to minimise waste by creating prepared dishes from food near its sell-by date, and by composting all other waste material; there are no BOGOF deals here. Members pay £25 annually, volunteering up to four hours a month; in return they get a 20% discount and all NHS workers get 10% off as Great Ormond Street hospital is round the corner.

THE PEOPLE’S KITCHEN Not only does it make good environmental sense to reduce the amount thrown away, it also has sound commercial logic, as less waste equals more profit. In September 2010, the supermarket acquired a complete ex-demonstration domestic

kitchen. Included in the donation were appliances, work surfaces, cupboards and some cutlery and crockery. The kitchen was installed on the sales floor at the rear of the store with the objective to create healthy, nutritious ready meals for customers to buy and eat at home. On average 100kgs of waste per week are processed through the kitchen with left-overs sent to compost at a local garden project. We caught up with Alice Shreeve and Hannah Coniam, founders of cult womenswear label Belle & Bunty Why did you decide to open a boutique? We’ve had our fashion label for eight years and after a few years of wholesaling to other boutiques and department stores we thought it was a sensible idea to have our own retail space. Our mentor is the renowned fashion designer Caroline Charles, and she really championed the retail side. As she’s had her own business for over 40 years, we were inclined to take her advice! What’s the concept for the store? Our boutique is very much like walking into Belle & Bunty world! We stock our ready-to-wear collection, our bridal range, handpicked complementary accessories by small British designers and occasion dresses. From inside the shop you can also see through to our design studio, so you get a glimpse of new designs on tailors’ dummies and new print and fabric ideas we’re working on. Why the Islington location? Originally the space was our design studio but we decided to turn that into

the boutique - it seemed like a sensible option and we knew there was a great local community here. Who shops at the store? What do your customers look for? After years of running on the fashion treadmill and doing two collections a year - which we showed at London Fashion Week - we’ve now decided to do our own thing and produce limited edition stock throughout the year; we constantly have new pieces in the shop. Seasonal collections seem impractical to us and to our shoppers. We offer classic, bright and vibrant designs that reflect our expertise in print and embroidery for those women who love feminine but wearable clothes. SPINNING AROUND One to Watch... DJ Yasmin fresh from her sizzling set at the Camden Crawl

W

e first started hearing about Yasmin when she was spotted by Pharrell Williams during one of her DJ sets. Studio sessions followed and now the 21-year-old Islingtonite has worked with big name producers Labrinth (Tinie Tempah), Future Cut (Lily Allen, Devlin) and Shy FX (Dizzee Rascal). With a debut album due out this summer, we caught up with the DJ-turned-singer to discuss musical inspirations and shopping in Angel... A DJ has to have something special to make it big - particularly if they’re female. Why do you think you’ve done so well? At the end of the day, I’m a huge music fan. There might be female DJs out there who are hired for their style or image, or else promoters might go for a celebrity name. I hope my love and knowledge of music comes across - I think people have picked up on the fact that I know what I’m doing. You are stylish yourself though; where do you shop? There are some amazing vintage shops in Angel. I like spots like Brick Lane and Portobello and I love Urban Outfitters for the new designers that they stock. I also like Nasty Gal and Bitching and Junkfood online. How did you start DJing and did you expect anything to come of it? I started at 17. I had a DJ friend and

would keep tabs on his collection. I’d sit with him in the booth while he was DJing; I literally played songs when he went to the bathroom and that progressed to me not letting him back on! I caught the bug and asked for a gig at the same club - it all went from there. I was always drawn to music but I didn’t necessarily expect anything to come of it. Now I can’t imagine doing anything else! How did it feel being ‘spotted’ by Pharell? When people write about me they like to tell that story. I saw an ad for an N.E.R.D. gig in the paper and there was no support act listed, so I called the promoter to see if I could warm up the crowd - they asked me to send in a mix and I got the job. I turned up, walked on in front of thousands of people and it was mad! In hindsight, I was probably underprepared - but it led to me playing a private party for Pharrell and being [US rapper] Eve’s tour DJ for a year. Since then I’ve played so many places and now I make my own music. How was your set at the Camden Crawl festival last month? Did you enjoy it? I performed three of my own tracks, including my single ‘Light Up’, and afterwards I DJed party

jams and old-school hip-hop at the Lock Tavern. Camden Crawl is a real diverse celebration of music so it was a lot of fun. Tell us about the Paradise Bar Summer Ball - are you excited about it? What kind of music can people expect? Totally excited - Paradise is such a beautiful venue and I’ve had an amazing time when I’ve DJed that part of London - I loved playing the [Notting Hill] carnival. I’m going to play party bangers - tunes that people love but might not have heard in a while.

I like music with movement - I don’t play much house or minimal techno/electro. I like playing tunes that people can sing along to. I play for myself really, but luckily people seem to enjoy it. What remix are you championing at the moment?

Right now I love Lianne La Havas’ ‘Forget’ reworked by Two Inch Punch for more of a slow-jam, and Jessie Ware’s ‘Running’ remixed by Disclosure for club vibes. What’s the most played song on your iPod right now? Iggy Azalea featuring TI, ‘Murder Business’. Yasmin will play The Paradise Bar’s Summer Ball on 22 June. La Roux Gemma Billington heads to the iconic Langham Hotel’s restaurant

L

aunched two years ago, Roux at The Landau is the first collaboration between Albert Roux and nephew Michel Jnr in nearly 20 years. The culinary prowess and portfolio of the Roux clan hardly needs introduction, so it was with eagerness and high expectations that I booked myself in for dinner at their latest venture. Led through a striking archway lined with huge glass cabinets of wine into the Landau’s beautiful curved space, my partner and I were shown to an intimate

booth in the centre of the room. Art Deco accents - square mirrors, a subtle green palate, gold and bronze finishes - imbue a classic, elegant statement. The restaurant is high-end dining but without a stifling, pompous atmosphere; attentive staff that don’t ‘hover’ and an eclectic mix of guests (friends, families and solo diners). The menu is a concise selection of delicious, varied dishes that are playfully concocted yet remain a simple, unpretentious cocktail of flavours and seasonal ingredients. I ordered Cornish squid and shaved

cauliflower with Meyer lemon and dill to start, while my partner opted for roast quail, which he raved about throughout the evening. The squid had a smoky tang that was countered beautifully by the citrus flavour. For mains I chose the Za’atar roast aubergine, cracked wheat pilaf and fresh harissa vinaigrette. My partner went for the evening’s special - roast cannon of Cornish spring lamb with fregola and sauce antiboise. At times, a vegetarian main can be unfulfi lling, and the Middle Eastern inspired dish stands

out from the predominantly classic British and French menu, but the aubergine was rich and fleshy and the exotic mélange of flavours in the pilaf complemented wonderfully. Tiny slivers of leek provided satisfying zest; the consideration that goes into each meal is evident. In between courses we were treated to a sample of the chef’s special starter - a comforting dish of roast burford cheese, seasonal peas and black forest mushrooms. Our waiter insisted we enjoy the dish with bread so I tried three variations including a glorious fig roll; it would be churlish not to. Before I get too carried away with the food, it’s important to mention the

Landau’s extensive wine collection. With our anticipation already piqued by the cabinets of vintage bottles, my partner leafed through the hefty menu - a veritable wine dictionary before settling on a red Chilean Noval Colchagua Valley. Rich and fruity, it went down superbly. We finished the evening by splitting a banana soufflé with peanut crumb, caramel sauce and rum and raisin ice cream. Of course I regreted sharing - I could have eaten at least a pot of the decadent caramel sauce on its own. As I had anticipated, the Landau is a rather special dining experience that more than lives up to the acclaimed

ITALY Broadway Market welcomes a 1950s Formica café...

C

apturing the spirit of its hipster locale far more convincingly than its predecessor, French restaurant La Vie en Rose ever did, Market Cafe is a vintage furniture enthusiast’s paradise - and thankfully (given the glut of such establishments in Broadway Market) it’s neither pub grub nor homespun coffee shop. Hugo Warner, one of the founding members of the Benugo chain, is taking the restaurant scene back to basics with this new venture, a classic 1950s-style Italian ‘Formica’ café. Billed as a ‘modern take on the breakfast and bolognaise menu’, it offers signature dishes including spaghetti and clams, Amalfi lemon sorbet and affogato, meaning ‘drowned’ - a coffee and scoop of vanilla ice-cream sprinkled with chocolate flakes. There are some old-school English caff classics available like steak and ale pie, crumble and rhubarb trifle - I went for globe artichoke, a delicious leek and Montgomery pie and homemade Hackney Downs honeycomb gelato, all washed down with tumblers of sloe gin fizz. Delightful. A little more down to earth than Pizza East, the atmosphere here is just

as buzzing. On the other hand, Market Cafe is more upmarket than nearby Italia-via-Bethnal Green institution E. Pellicci’s, which has been serving the local neighbourhood bacon sarnies and sausage baps for decades. Market Cafe prices are certainly more in line with those of its snazzy Shoreditch rival - but then, chef James Adams has earned his stripes at

Canteen, Fifteen, St John and River Café, and the menu uses only the freshest and finest ingredients - so fair dos. In fact, sitting at one of the retro tables while locals gather to sip mimosas outside, I’m surprised it took so long for someone to explore this particular strand of ‘50s nostalgia. And in the event, Warner

has done the concept proud. Formica cafés, he says, were “often dismissed as greasy spoons and poor relations to their continental counterparts.” But in fact, they “once lubricated and nourished a whole postwar generation of writers, artists, musicians and crime lords, and galvanised British cultural life. These places were where ordinary people could afford to eat and experience what was in its day exotic food, the first espressobased coffee and handmade ice-cream. We will know we’re successful when the whole local community wants to eat and drink with us.” If it’s a new generation of creatives to whom Hugo wants to appeal, Market Cafe is situated perfectly. It certainly seems popular with the London Fields mafia. It’s a picturesque addition to the food scene, located on a charming corner opposite the canal with plentiful outside seating. And we all know how folk like to congregate on corners in Broadway Market. With warmer weather imminent, Hugo Warner’s latest labour of love looks set to do very well indeed. Daniel Agnew discovers an earthy alternative to traditional restaurants at Yalla Yalla

O

nce derided as a culinary backwater, Britain has undergone the most spectacular food renaissance in the last thirty years. High street food has become exceptionally cosmopolitan and it is far more exciting to eat out in 2012 than in previous generations. With new communities and foreign travel providing the social catalyst for change, London’s restaurants have been transformed into new kingdoms of sauces and spices. One of the more exciting and youthful trends of recent years has been the rise of street food. As colourful world food markets pop up across London, street food is becoming more and more popular because it serves ordinary people from the bottom up. Following in this global trend, Lebanese mini-chain, Yalla Yalla has made quite a stir in the capital. Meaning ‘hurry up’ in colloquial Arabic, visitors to the Soho branch will certainly have to get a move on if they want a seat at lunch-time. The restaurant has become a cult favourite since opening in 2009. Dating back to biblical times and combining the sensual delights of Arabic

culture with traditional Mediterranean and Ottoman dishes, Lebanese cuisine first established itself in Britain during the late 1970s. With the popularity of the first Soho opening (customers spill out into Brewers Lane almost every day of the week), Yalla Yalla owners, chef Jad Youssef and his partner Aga IIska, have expanded to Winsley Street and now, Kings Cross. Offering a science-fiction vision of the future, Kings Cross has recently undergone

up to 130. Customers will be able to see their food being prepared in front of them, as well as Manakish pastries based on family recipes from Bekka Valley on display. Some of the restaurant’s dishes include the Lahme (minced lamb, onion, tomato and pomegranate molasses) and Jibneh Arabieh, (a halloumi and feta cheese recipe) as well as signature mezze dishes like Baba ghannou - charcoal grilled aubergine purée delicately served with a tahini and fresh lemon dip and freshly baked pita. In keeping with the tradition of street food, Yalla Yalla is a visual experience. Great for an early morning coffee or prejourney bite to eat, the new concourse provides an exciting home for Britain’s food renaissance. Like the nourishing street food served underneath it’s gorgeous alpine crescent, there is something tangible in the air, a feeling of profound social and cultural change. The bad old days of delays and stodgy food are finally over.

FOLLOWING IN THIS GLOBAL TREND, YALLA YALLA HAS MADE QUITE A STIR IN THE CAPITAL the biggest transformation in its 160 year history. With a sparkling Gaudi-style lattice ceiling providing a surrealist flavour, the Grade I listed building has evolved considerably since the industrial Victorian era. It is now virtually unrecognisable from the crumbling façade that once greeted northern and Scottish visitors, but some things never change and train passengers will always be arriving in a hurry. HAY FESTIVAL

31 MAY – 10 JUNE The Hay Festival of Literature and Arts is quite probably the most celebrated literary festival in the world. Founded by the Florence family twenty-three years ago, this annual ten-day cerebral extravaganza, which takes place just a stone’s throw away from the Herefordshire border, continues to grow in popularity, attention and visitor numbers every year. While most people come for the performances, talks, lectures and readings given by high-profi le authors, actors, broadcasters, poets and politicians, others simply come for its memorable setting. In fact, there couldn’t be a better one. Hay-on-Wye – nicknamed ‘The Town of Books’ – became a draw for bookworms when bibliophile Richard Booth opened a second-hand book shop in 1961 and inadvertently began a tourist trend

which has happily thrived ever since. To this day, thousands descend on the town simply for its antique and endlessly charming shops which are typically characterised by piles of old tomes. The festival, which takes place in the fi rst week of June this year, arranges itself across several tents in fields rimmed by sheep and vast stretches of lush greenery. What to expect for 2012? Oh, just Rob Brydon, Nicholas Parsons, Julian Clary, Boris Johnson, Andrew Marr, Terry Pratchett, David Starkey and music from Bryn Terfel and Billy Bragg. THE ALTHORP LITERARY FESTIVAL

15 – 17 JUNE The Althorp estate is well-known for regrettable reasons. It is, of course, Princess Diana’s fi nal resting place and over the years, its popular six-room exhibition, ‘Diana: A Celebration’, has witnessed crowds-upon-crowds flood through its gates. But the splendid 14,000-acre country estate near Northampton, which has been home to the Spencer family since the 16th- century, has a few more strings to its bow that are certainly worth noting. While the commemorative exhibition remains in tact and accessible at all times, the summer also sees Althorp host its annual literary festival. Now in its ninth year, it welcomes guests and visitors from all walks of life. In its near-decade, it’s become a fi rm favourite amongst nearby locals as well as amongst those who are

19 – 22 JULY Cornwall is always an idyllic place to spend one’s British summer. In July, however, a little spot near Saltash becomes just that little bit more alluring when the Port Eliot Festival comes to town. It all started when the legendary Elephant Fayre came to an end in 1986, and Lord St Germans and his wife Catherine launched Port Eliot Fesitval (previously the Port Eliot Literary Festival). Their aim? To bring together a group of journalists, authors, poets and performers who would deliver a creative and spontaneous set of acts, all of whom were asked to ‘do something different with words.’ And that they did, for in its ninth year, Port Eliot enthusiasts are once again gearing up for an eclectic timetable. Among the flower shows, cabaret tents, stationed dressing up boxes and late-night dancing, its fans will be

flocking for its schedule of unplanned, impromptu talks, lectures and theatrical and musical performances given by some much-respected talent. Learn to cook with Rose Prince, laugh along with Miles Jupp, be read to by Kate Summerscale and dance along to Stornoway’s indie tunes. And if you still want more, Port Eliot has various fringe events in place to keep even the over-energetic sated. SPA LAKE DISTRICT Another attractive draw is the hotel’s well kitted-out spa; a perfect

counterpoint to any tiring hikes you may have planned. Eschew the B&B experience for a truly relaxing and luxurious stay - the hotel has an impressive 16-metre infinity pool, an outdoor hot tub overlooking the landscaped gardens (champagne optional), a thermal suite with hydrotherapy pool and a ‘wallow’ and aroma room - as well as the usual sauna and steam room, state of the art gym and exercise studio offering a range of classes every day. The treatment list reads like a guidebook to bodily paradise. During my stay I indulged in full body massage (highly recommended - do go for the full hour) and the ‘Body Remodeller’, an intense treatment that uses carnitine and caffeine to eliminate fatty deposits. The numerous spa rooms are incredibly relaxing and tastefully decked-out, while many of the treatments - such as the Vitality leg treatment or Dornmethod massage - would be a welcome complement to any punishing walks you might have planned.

HISTORY An original stately home, Armathwaite Hall dates back as far as the 11th century. Current owners, the Graves family, bought the Hall in 1976 and recently celebrated their thirtieth anniversary of ownership. Be sure to stay in the main building for a truer sense of the grandeur of the place. The wood-panelled walls are a reminder of its heritage and traditional English motifs abound, with tartan fabrics and hunting memorabilia adorning the walls. Crackling fi res perfume the place with the rich aroma of woodsmoke while decanters of sherry add to the quintessentially English experience. We didn’t see any ghosts during our stay, but you’d be hard pushed to fi nd a better spot for a late-night whisky and a couple of deliciously spooky stories. A

rthur Meehan is a fine art photographer dedicated to delivering beautiful and memorable portraits of women at one of the most poignant times in life. Meehan’s pregnancy nudes are natural and elegant and document this exciting period with all the taste and artistry expected of a leading photographer. The artist has exhibited two shows at Park Walk Gallery in Chelsea, A Private View and The WineBox Series. It is his love of the female form that has led to an interest in shooting nudes, and he now has twenty years of experience in the art form. A few years ago, when one of Meehan’s pregnant friends asked him to photograph her nude to capture her pregnancy on film, he decided to take on the challenge. He asked his wife to sit in on the session for the comfort of their friend, who had never posed nude before - and the results were wonderful. The images are subtle and understated; the curve of a woman’s body and stomach are shown to great effect in silhouette. The dark background and lighting makes the women look like bronzed statues glowing with vitality. After the success of the first shoot, more and more friends and acquaintances began to ask Meehan to capture their image whilst pregnant, and his house in Brook Green became a home studio. As for

the actual day, Meehan’s subjects are always welcome to invite partners or friends along with them, one lady even coaxed her partner into shot. Meehan says, “What I offer is not a day in a photo studio being photographed like a supermodel, I invite you into my home and it is a private quiet day of shooting very beautiful and personal photos.” Arthur Meehan’s images work to combat the pressures felt by women to look a certain way in today’s society. Meehan’s nude models are strong sirens, unabashedly sharing their bodies with the camera. He shoots on film rather than digital and lovingly develops all prints by hand in the dark room. STEW Stewed! founder Alan Rosenthal on the virtues of one-pot cooking

Why did you decide to set up Stewed! - did you spot a gap in the market? I’ve always wanted to do something foodie and racked my brains trying to think of something that would work. I came up with the idea because there wasn’t a product in-between a soup and a ready meal; I quit my job, went to study at Leith’s cookery school, was a chef for a while and then went back to my initial idea of one-pot meals. Was it hard work? Yes! The hardest part is making the decision to start your own business. I started selling at the Alexandra Palace Farmer’s Market. At that point I was cooking from my home kitchen, although I was able to get branding and packaging sorted from the very first day of trading. I feel that the business has been an evolution - getting the meals into Harvey Nichols and Budgens and then outsourcing production. One thing led to another and the leading supermarkets followed. Did you have any other experience in the industry? I worked with Spanish food specialists Brindisa

and learnt how to carve Iberico ham... I used to teach Spanish to kids and I would set up a tapas bar for the students and their parents. Of course, I was a chef as well, but I found it too stressful.

does the future hold? I do, and I think my background in buying and marketing for national retailers helps. We want to increase our supermarket presence and brand awareness - there’s still a huge part of the population that hasn’t heard of us. There will soon be two kiosks in rail stations.

What’s the Stewed! secret? It’s definitely a ‘foodie’ brand - a good, homemade product that tastes great. I’ve since put out a cookbook and I teach workshops at Leith’s and work with kids in schools. We really focus on the foodie credentials and that’s what differentiates us from the competition.

Where do you like to eat in the local area? I like The Draper’s Arms pub and Patogh on Edgware Road. I tend not to choose places that cost a bomb - I find myself going for Lebanese, Vietnamese or Dim Sum in Hoxton. How has 2012 been for you so far? 2012 has been an exciting, busy year so far with a continuing healthy demand for both new and resale properties. Do you think that Islington has bucked the trend in the market over the last year? I do not feel that the Islington market has necessarily bucked any prime London trends; it has just performed consistently and seen healthy growth. How long have you been based in Islington and what makes this area so special within London? I have been working in London for over 13 years mainly based in Islington. This area is special for a number of reasons; the eclectic mix of people, the architecture, green spaces and the accessibility to everywhere, especially the City. What’s the typical property you have on your books at present? We have properties ranging from £180,000, to over £2,500,000. With Mortgage lenders starting to offer better deals to fi rst time buyers, what effect will this have in the current market? If mortgages become more readily available to first time buyers, the

lower end of the market will now start moving more quickly. We will see the percentage of properties being sold to owner occupiers (rather than investors) grow, thus strengthening prices in this sector. This will have a knock-on effect up the property market increasing the current high levels of activity. With the rental market being so strong, how do you see the next twelve months? What advise do you have for those looking to rent and those looking to let their properties? 2012 will see build completion of many new developments, not only in Islington, but the surrounding areas too. Rent levels are the highest they have ever been and demand is very strong, however, the current high rents are a direct result of the acute shortage of stock we have seen over the last two years. With these new developments completing over 2012 and 2013, and the resultant buyto-let stock coming to market, I think we’ll see rents levelling out and perhaps only rising roughly in line with inflation over the period. With buyers outstripping demand for properties at the moment, what advice do you have for buyers and sellers? Our advice is the same as in any market - rising, falling or stagnating – pricing

of property should be conducted on the basis of recent, relevant comparables. If this is done, then vendors can be confident that they’re achieving the right price, and buyers confident they’re paying a fair price. Are you optimistic for 2012? Very optimistic for 2012, the demand for property still remains high and we as an agent have some very exciting ‘New Homes’ projects that we will be launching this year. We already have waiting lists for most of these developments, so it is anticipated that they will sell very well. With the uncertain economic climate in Europe, London is still perceived as a safe haven for investors. In an area with so many Estate Agents what makes your agency different? ANDREW FLINT FROM COLMAN COYLE, GIVES HIS EXPERT ADVICE ON ALL YOUR LEGAL PROPERTY QUESTIONS I am buying a property and I am going to have a mortgage with HSBC. I have been told by my mortgage advisor that I must use the bank’s solicitor and cannot use a solicitor of my choice. Is this correct? A few months ago, HSBC introduced a new policy in connection with the firms they instruct to act on their behalf in connection with mortgages. Prior to this, in the vast majority of cases, it was the borrower’s solicitor who would be instructed to act on behalf of the bank as well. However, the bank decided to change its policy and a few months ago the bank gave borrowers a choice. The borrower can instruct the bank’s panel solicitor to represent them in connection with both the conveyancing work and mortgage work. Alternatively, the borrower can instruct their own solicitor but the bank would be represented by one of their panel solicitors. In my experience, having separate representation has inevitably slowed transactions down. All the documentation that is usually seen by the buyers’ solicitor has to be forwarded to the bank’s solicitor for their approval. Contracts cannot be exchanged until such time as the bank’s solicitors have issued their pre exchange approval. Furthermore, having separate representation has made the conveyancing process more expensive because the buyers’ solicitors will inevitably be involved in additional work in dealing with the solicitors representing the bank. Largely because of these reasons, HSBC have recently announced that they have amended their policy and from August 2012, it will be possible for a borrower to instruct a solicitor of their choosing to do their conveyancing work subject to certain conditions. First of all, sole practitioners will only be able to act for the bank if the mortgage advance is less than £150,000. Secondly, HSBC will require all firms acting for it to have the Law Society’s Conveyancing Quality Scheme Accreditation.
