Such an enviable state of affairs, particularly over the languorously long summer hols – as the child’s protestations of boredom go up like a battle cry – can be an elusive thing. Which is exactly why this month, we have drawn up a guide to some of the best days out in the city. So whether your brood consists of culture vultures or outdoorsy types, flick to page 48 for our guide to keeping tinies inspired and entertained this summer. One man who, conversely, rarely stands still long enough to even contemplate boredom is Will Ricker. The prolific restaurateur – the man behind the super successful likes of Eight over Eight, E&O and most recently La Bodega Negra – tells Priscilla Pollara how, despite his foodie empire, he still lies awake at night fretting lest his operations should not match his own rigorous standards. fter all the rain we’ve had, I’ve never known our garden so lush, a veritable Garden of the Finzi –Continis (circa 1970). Which brings me neatly onto the topic of this month’s column… family.(Gardens and family seem to go hand-in-hand, all the production etc.) We discuss family and schools constantly in the UK, but there are no hard and fast rules, other than to do what suits you, and hope for the best. One thing is sure; it goes by very fast. For me, as a designer with a large brood, the contrast between the fickle fashion industry and ‘normal’ family life is extreme, and I am exceptionally fortunate to have a wife who understands how essential it is to maintain routine. Supper with my family is something I treasure. How this happens has evolved over the years, everyone has a role. One sets the table, others serve, or clean, but for a short time most evenings, we all sit down together and it keeps the communication open. Problems can be aired and solved, small successes celebrated. The Italians have always been good at the family thing. Evening meals are taken together before the ‘piccolo passagiata’, where the whole family takes a walk together. The weather is rather more conductive to this than here, but we can always find another solution! After seeing Verdi’s Otello at the Royal Opera House recently, Otello murders Desdemona because of a lack of communication. So keep talking! paulcostelloe.com

STYLE What made you first fall in love with jewellery? I collected jewellery from a young age and always sensed the pieces were more than just objects. Jewellery is so sentimental and that value really appeals to me. What was it that drew you to Belgravia when you opened the shop in 1994? I had been living in the area since 1989. I wasn’t particularly looking for a boutique as we were wholesale at the time, but after finding the shop available I opened in 1994 and never looked back. I never thought I’d love the retail side so much but I can’t imagine not having our Belgravia boutique now. How has Belgravia changed since you first opened the store? Dramatically! Elizabeth Street was quite run down, although it did always have interesting shops to explore. The street has been completely refurbished but has maintained its personality and still has all the distinctive independent shops and restaurants. What piece of your jewellery do think is most evocative of the local area? We have a loyal clientele and we find our earring chandeliers are especially loved, particularly over the summer months. In winter it’s all about chokers! Where do youfind inspiration for your designs? Inspiration comes from many sources, however architecture and film are probably my most recurring concepts. When you design, do you ever have a particular person in mind? Yes I do – I create mood boards for each story we design and this usually includes a female icon that has inspired the particular look. Which stones do you most enjoy working with? The beauty of Erickson Beamon is our use of many types of material. We mix semiprecious with plastic and we’re not afraid to experiment. We believe the final outcome is the most important aspect and do not like to find ourselves restricted by materials. You have worked with so many different designers, is there collaboration you are most proud of? Each and every collaboration we have worked on has been inspirational and a learning process. I am so proud that for 30 years we have worked with the most creative and talented designers on the planet and still continue to do so.

You’ve been lauded by so many people, from Matthew Williamson to Kate Moss, Anna Sui to Alexander McQueen. What does that kind of endorsement mean? I am not really celebrity driven; however I am very proud that these amazing people value our brand. You have also designed jewellery for so many A-listers, from Beyoncé to Sam Cam... has there been a standout moment? In the 1980s Madonna wore our jewellery on the cover of her album ‘Like A Prayer’ and recently we collaborated with her again for the Superbowl event. Thirty years on and our designs are still relevant and cutting edge. I also love the diversity of our client list, from Lady Gaga to Samantha Cameron!

Is there anyone who you would love to see wearing your designs? Johnny Depp. He has such character and style and would look amazing in our jewellery. Whose style do you most admire? I admire Karen Elson, Iris Apfel, Anna Dello Russo – I enjoy the maximalists, those with a strong style and a good sense of humour. How would you describe Erickson Beamon in three words? Means of self-expression. Finally, what’s next for Erickson Beamon? We would love to expand and are looking for investors to take it to the next level. What are your favourite beauty trends for the summer? I love modern drama – teals and chocolates work so well on the beach and in the sun. What are your top tips for keeping the skin youthful looking? Always look after your skin! Keep it cleansed and well moisturised. For an extra touch of youthful glow, go for an illuminating tinted moisturiser – it gives a delicate veil of coverage whilst keeping your skin hydrated and radiant. If you could only keep three products in your make-up bag, what would they be? I always carry my favourite lip colour in ‘Bing Cherry’, as well as a good powder, and will now be carrying my brand new tinted moisturiser compact, which is ideal for taking about with you. How do you combat dehydrated skin when travelling? I love to travel, but it often tires the skin, when

taking long flights. My best tip is to carry a water spray to refresh, and drink water! What’s your one instant pep-me-up beauty secret? My ‘Tightline Cake Eye Liner’. It’s great for making the lashes look fuller without applying lots of eye liner and mascara. Apply between your lashes and just underneath them for a more open-eyed look. What do you recommend as the best way to combat the effects of the sun on the skin? Sun damage is usually irreversible, but you can combat further damage by using a high SPF. This is key for every day, not just when you go out in the sun. What is your beauty pet hate? People always ask me when I am going to bring out a BB cream… I always say I already have one! My tinted moisturiser is like my BB cream, but I find that if you put too many elements into one, you end up having a product that isn’t good at any of them.

What is the greatest myth in the beauty industry? That beauty is perfection. Natural, barely there make-up, or flamboyant colour? My work is built around enhancing natural beauty. There is always the opportunity to wear fantastic colours, but it must always be beautifully executed. What would you tell your teenage self if you could? Protect, protect, protect with SPF! What is your final touch secret to really complete a look? My ‘Laura Mercier Secret Finish’ – it’s an ultra-light lotion used to set make-up. to shut it down by midnight. We all piled back to Ruschmeyers to eat delicious snacks made by the Fat Radish, my favourite restaurant in the city, owned by London’s most charming exports Ben Towill and Phil Winser... 25

Having been fired from an impressive list of hospitals, he joins Dr Dalrymple’s (Jonathan Pryce) private practice, whose speciality is treating hysteria through the employ of, ahem, healing hands – a remedy which leads to the invention of the vibrator. The concurrent story focuses on Granville’s immediate attraction to the virtuous Emily (Felicity Jones), daughter of Dalrymple, and his burgeoning feelings for the firebrand that is her sister (Maggie Gyllenhaal). The seeds of William Wilberforce’s admirable – and ultimately successful – campaign for the abolition of the slave trade from Africa to the West Indies were first sewn when the MP for Hull (and later Yorkshire) got in tow with abolitionist Thomas Clarkson. Having become firm friends at Cambridge with future Prime Minister William Pitt the Younger, he abandoned his dissolute life later when he became an evangelical Christian and devoted himself to the pursuit of justice for the enslaved. His efforts paid off; in 1807 the slave trade was finally abolished, though it wasn’t until 1833 that existing slaves were granted also their freedom – an act that was passed just days after Wilberforce’s death at the Cadogan Place home of his cousin. 30

Coming up roses Cabbages and Roses is the epitome of pretty romance. Nancy Alsop catches up with its charming founder Christina Strutt to talk shabby chic and stripping back

t is barely 10am and Christina Strutt – founder of the perennially beautiful fabric, homeware and clothes boutique Cabbages and Roses – is quoting Horace. ‘You can drive nature out with a pitchfork, but she will always come back,’ quoth she, in response to my questioning as to whether she ever had a grand plan. The reference is, though, entirely in keeping with the utter charm that pervades the Cabbages and Roses story; after all, as she expands, recalling the nascent days of the company: ‘No! We had no plan. You have no control over what happens anyway, so why try?’ We were a bunch of very muddly women – our kids were young, life was hectic, and we made it up as we went along. Which is slightly what we’re doing now.’ For Strutt and for Cabbages and Roses, the past year has rather seen things come full circle, which accounts for the philosophicallytinged chat. Last time we spoke three years ago (‘three years? Cor lummy!’), she had 23 concessions in nationwide Jigsaw stores, three London boutiques and was on the brink of world domination; today, she tells me, she has stripped back to just her original Chelsea shop on Langton Street, whose white painted floorboards, heavenly curtains, charming staff and open fire make it practically a byword for the most stylish breed of cosiness, plus a couple of stores in Japan. That the past year has been a struggle insofar as redefining her role within Jigsaw is alluded to, but without lingering (Strutt is far too jovial and spirited a character), but as she sagely says: ‘Really, no one needs more than one shop and a great website. It’s been a shattering year – I was fighting to save my child, but now that we just have Langton Street, I am, I realise, so happy.’ It is a credit both to Strutt’s talents and to her disposition that over the course of what has been something of an annus horribilis she has brought Cabbages and Roses back to its gloriously home-spun origins and deftly into line with the post-recession world, where value and craftsmanship – rather than blind expansion – are the orders of the day. Instead of two big collections each year, there will be little incremental changes every couple of weeks (‘kind of like with nature. Over the summer, every two weeks there is something new, and it is exquisitely beautiful, and then just like that, it is gone’), and everything is made in small batches in the UK, which could potentially even give her scope for some made-to-order pieces; instead of people unknown to her at innumerable concessions, 41

she is working with the daughter of Bridget Buchanan, with whom Strutt originally conceived of Cabbages and Roses (‘I feel very lucky. Letty has the best eye, and is very inspirational in my life – I am surrounded by brilliance and beauty’), and, as she says: ‘I actually feel that I am in the very lucky position of being in a small paddling boat. I can be swift in my feet, rather than everyone else, who are full steam ahead.’

that Strutt is anything but buoyant and full of optimism now – and justifiably so. Cabbages and Roses has always been an unequivocal hit in Japan (as Strutt, who is winningly prone to the giggles, notes in an aside: ‘I think they saw our work and thought: ‘Ah! English company! Very traditional! Want

‘I am a very shabby person so if people want to call it chic, then brilliant’ Notably, this change has manifested itself in ‘Avery’, Cabbages and Roses latest collection, which was, Strutt tells me, inspired by the Avery Road shop, now sadly bereft of the Cabbages and Roses stamp of softness and prettiness, but which she adored. ‘It’s a rather subdued range with faded roses – the shop was very calm, beautiful and Dickensian, so it was a bit like an homage to it.’ But if subjugated restraint defined her mood of the last year, don’t be fooled into thinking

to play!’), and as such has a thrilling (and huge) collaboration with Uniqlo in the pipeline, due to launch early in 2013. ‘I’d never actually paid any attention to Uniqlo before,’ says Strutt, ‘but they are so adorable. It is rather sweet and quite hysterical that in Japan, they’ve actually made a shop that’s identical to Langton Street!’ Cue the giggles. ‘But,’ she says, straightening up: ‘It’s not a compromise, I have final say on everything, and it’s only pieces that we’d make if we had the money – there will be T-shirts,

scarves, T-shirt dresses, and I’ve given them all my best shapes, because, why not? Jil Sander, Lulu Guiness, Orla Kiely… they’ve all collaborated with Uniqlo, and we do have followers, we do want to be taken seriously. They have projected sales of £30m. We have £30 in our account,’ she wryly notes. Still, Strutt is naturally an exuberant sort with plans and ideas by the dozen. First up, she tells me, she wants to design the interior of a Japanese home. ‘I’ve always wanted to go into a Japanese house,’ she explains. ‘I can’t imagine what one would look like.’ I tell her the story of my father, who was once extended the hand of Japanese hospitality, his only hindrance being that – at about foot taller and a foot wider than his hosts – he could barely squeeze into the loo, let alone close the door. ‘Oh!’ hoots Strutt… ‘I’d be about two foot wider! I think they think it’s fascinating, these huge giant people. I lost a stone recently, but after I gave up smoking, I was huge. I resembled Hetty

Jacques! Giving up was quite easy though – there was no climbing up the walls, though I did rather mourn it – but I must say I do feel embarrassingly boring now.’ Tedium, however, is hardly a charge to be reasonably levelled at Strutt. Being the possessor of a superlative eye? Quite a different matter. Is that sort of aesthetic sensibility, I wonder aloud, something that is innate or can it be taught? ‘I think it can be taught, absolutely. Did you see that Grayson Perry programme on class? It was interesting, I like him a lot. One thing was clear: you learn taste according to who you are, and your class and your peers. If you live in an inherited stately home, you learn that taste. There was a middle-class woman who’d bought the show home in a

neo-Georgian village. It was fascinating – she didn’t change a thing, she was so sure that it was right. But then, I’m forever looking in magazines for ideas, I’m not clever enough to work things out for myself.’ While she remains self-deprecating to her core, others are more impressed by Strutt’s capabilities – including the British Council for British Design in Japan who last year nominated her for a design and innovation award. ‘I was very amused that we were nominated, but mostly about who we were up against. I’d vaguely assumed that we’d be in a category alongside Cath Kidston and Orla Kiely. Nope. We were up against Nissan!’ she laughs, still a bit incredulous at the incongruity of it all.

Which other designers, I ask, does Strutt admire? ‘Bridget Buchanan who I set up the company with and who now runs Odd Ltd, Marine Docherty from Egg, I like the Toast people too – they’ve stuck to their guns, and they sell things I would want to own. Cath Kidston as well. She doesn’t like me, we’re not friends, and though I hate all the dots, the flowers are pretty – she’s had a tough time and she’s been very clever.’ Something so eminently likeable in Strutt’s character is her openness and patent stance that one should live and let live. When I ask about her design bugbears, she really has to think. ‘I’ve been so out of the real world for so long – I was going to say things that are too matchy-matchy, but sometimes I actually like that. Or short wafty thin curtains, which are like short wafty thin trousers, but then I probably take that back because if you saw that in a 1950s Cornish cottage, well, I can’t think of anything sweeter. I think as I get older I am becoming more and more tolerant.’ Her guiding mantra when designing rooms? ‘Is it comfortable? Would I feel okay having flu in it? I have a friend who owns Moloh whose house is so safe and comfy and interesting that I’d be happy to be ill there. It makes me weep with jealousy.’ I wonder whether she ever gets sick of being saddled with the shabby chic label that’s so often applied to her style? ‘No! Never!’ she cries. ‘I definitely deserve the shabby bit, I am a very shabby person, so if people want to call it chic, then that’s brilliant.’ cabbagesandroses.com 43

NATURAL HISTORY MUSEUM There are 70 million specimens on display at this monolith of a museum (pictured, right) – an unrivalled collection which ranges from insects (28 million of them) to fossils, plant specimens to minerals. We defy any child not to be awed by the animatronic T-Rex, which roars alarmingly as you edge your way round it, feeling suddenly reduced in size. ROWING ON SERPENTINE There is no park more evocative of Edwardian ladies, bustled and under shade of umbrella, than Hyde (pictured, right). Recipe forsuccess Will Ricker is the proprietor of Chelsea’s Eight Over Eight and a raft of other runaway success restaurants. Priscilla Pollara meets one very humble entrepreneur

ven in the most chaotic of diaries, one would expect to see a humane slither of unmarked space set aside for leisure. But for busy bee Will Ricker, there isn’t such a thing. For as well as the ongoing responsibility he has to his ever-expanding empire of restaurants in London, which

includes, among others, Eight over Eight in Chelsea and E&O, before the end of the week in which we meet, he’s due to fly to his native Australia just for a meeting. Hectic barely does the father-of-three justice, and in fact, so jammed is his current schedule, he hasn’t yet got round to updating his website with the news of his latest restaurant opening in Soho: La Bodega Negra. Then again, it hasn’t been just any other launch, for the Mexican restaurant – Ricker’s first joint venture with Edward Spencer Churchill and nightclub supremo Serge

Becker – has taken London by storm. ‘I haven’t got a minute spare at the moment,’ confesses Ricker, who lives in London with his wife of seven years, film producer Amy Ricker and their brood: Billy, 10, Rudy, five, and Marley, four. ‘I’m eating at La Bodega all the time to ensure I’ve got the food absolutely right. I want it to be the best Mexican restaurant in London. I have nightmares about friends having bad experiences at my restaurants, and who, out of politeness don’t criticise me. That keeps me up at night and I can’t rest until I know I’ve done everything to get things as near to perfect as they can be.’

The near-obsessive and strict precision with which the 49 year-old is finely tuning his newest project is – for him – nothing out of the ordinary, since a similar stringent edict is equally bestowed on Ricker’s seven other London establishments. But this self-imposed rigour is far and away the best explanation for the restaurateur’s monumental success. After all, once upon a time, it wasn’t always this busy in his world. Growing up in the Melbourne suburb of Toorak as the son of a powerful Malleson Stephen Jacques lawyer, Ricker struggled with authority and ended up leaving school at 18 with no qualifications to his name. But with the help of his father, the young Australian eventually stumbled into and subsequently prospered in a well-paid role as a junior analyst at investment firm Hudson Conway, where he was introduced to a new and moneyed existence that was a world away from the aimless, impoverished one he had hitherto been leading. But after various unwise wild investments in property, cars and racehorses, Ricker left his native Australia for London in 1989, arriving alone and with a meagre $3000 in his wallet. Stints and odd jobs as a waiter and builder meant that financially, things incrementally improved – that is, of course, before he poured the majority of his money into opening a restaurant in Soho, a project that while initially successful, was to prove a complete failure. Watching his hard-earned cash trickle away, was, the restaurateur admits, a difficult learning curve. But, as is testament to his indomitable spirit, Ricker never lost hope, as such battling out of his temporary ditch to once again gamely run the restaurant gauntlet – this time lucratively – just a few years later. This time, he focused on the then-littleknown, up-and-coming areas of east London and immediately wowed when he opened the swish, leather banquette-lined, Pan-Asian restaurant, Cicada. A few years later, Ricker and the popular oriental-fusion cuisine scored another hit when The Great Eastern Dining Room followed in its same moneyspinning footsteps. But as Ricker, who has lost none of his heavy Australian accent, admits: ‘Nothing about my childhood spelt out this sort of career, but I was pretty unemployable for a large chunk of my life and so was always going to have to find something. Restaurants seemed to me a good place to start. It’s hard to describe it, but I always felt comfortable

Both of his early restaurants are these days credited as the catalysts for the renaissance of the once-overlooked Hoxton and Shoreditch neighbourhoods; at one point they were the only two places to be seen to dine, and their ubiquity on the social scene did simultaneous wonders for the JapaneseChinese-Thai culinary fusion that constitutes Pan-Asian gastronomy. Their success paved the way for Ricker’s subsequent big-hitters: Chelsea’s Eight over Eight, Notting Hill’s E&O and Hampstead’s XO, all of which

continue to do remarkably well despite existing in already-established postcodes. Huge success notwithstanding, he remains endearingly humble. ‘I’ve been lucky and stuck to my Aussie grit throughout,’ says Ricker, ‘but I do still feel like a fraud almost all the time. I continue to get that sick feeling in my stomach when I meet people who share ideas that I’ve not yet thought about. I just think, ‘well if you’ve not come up with that Will, then you’re not very good at this, are you?’ I always find benchmarks to make me feel that I’m lacking.’ 53

With a mini-city of restaurants under his belt in London, Australia remains the market that still eludes him. Might his arrows be pointing next to his home land? ‘Having been in London for 23 years, the UK is the place I now call home,’ he says. ‘But I would never want anyone to think that I haven’t tried, because believe me, I have. I’d love to see a Bodega in Australia, it would work in Melbourne. I have this potentially-interesting meeting in a few days, so who knows? But for now, it remains a project that simply has not worked out for me yet.’ Ricker, who is possessed of a natural wit, stresses that his priority these days is the harmony of family life. He is, he tells me, the opposite of laid-back and has nothing in common with those compatriots who do adhere to the well-worn stereotype of the nonchalant, party-loving Australian: in his own words: ‘I am pretty wound up’. But one feels things can’t be all that bad; after all, there’s no denying that his foodie empire has made Ricker an extremely wealthy man. There is little doubt that he has been helped along by the priceless publicity afforded to him by the unremitting flow of celebrities who continue to stream through his restaurants’ doors. Indeed, it isn’t uncommon to see gaggles of paparazzi jostling for position outside, hopeful of a glimpse of regulars such as Kylie Minogue, Paul McCartney, Claudia Schiffer, Madonna and the Duke and Duchess of Cambridge. ‘I’ve always said that it’s great when fabulous people come to the restaurants, but I’m also aware that it

really doesn’t mean that they’re there because they want to meet me. I’m keen to be in the background, because it’s false and vacuous to be friends with people because of their fame.’ Nonetheless, the buzz surrounding by La Bodega Negra has provided a great driving force, as Ricker agrees. ‘Being spoken about, makes you relevant, it puts you back in the game and as a result, people start to want to get you involved in other things. I’ve been approached a million times to do things off the back of the other restaurants, but it’s really rewarding that La Bodega Negra finally got off the ground when so many don’t or fizzle out. It’s very difficult to get

ahead in London because we’re talking sky-high rents and a lot of risk. Ultimately, one needs a huge amount of caution and confidence with which to proceed.’ He pauses, before continuing: ‘For now, it’s still all about getting La Bodega absolutely perfect. I’m excited because I know when I look to open another restaurant, people will be naturally curious because of Bodega’s popularity. At that point, the real work takes over, because it’ll be my job to hold onto their interest and keep them coming back night after night. It never ends.’ It seems there won’t be much room for white space in that diary for some time, then.

hat Taschen’s latest tome celebrating the opus of Marc Newson should be titled Works is apposite both in terms of simplicity – Newson is nothing if not streamlined in his design approach – and insofar as it would take so generic a term under which to lump his myriad of projects. It is a rare designer, after all, who can count the likes of restaurants and fashion boutiques alongside planes and even spaceships under his creative credits. Did you always want to be a chef? Not at first, I was really interested being in the forces as an armourer at one stage. But when I was 15 I worked in a restaurant after school and started to really learn about food and different tastes and flavours. That was it – I was hooked. Culinary heroes? Wow, so many but I would have to say that Geoff Chapman for whom I first worked and who really got me started in my career is a hero – he’s a great cook. Then it has to be Heston. He has mentored me in so many ways, educated me, pushed me and is a great, great man to work alongside. Meal that changed your life? I was taken to a restaurant when I was 16 called Le Manoir de Retival in Caudebec en Caux. It was a family-run restaurant, but still very grand and overlooking the River Seine. It really inspired me and totally blew me away.

What has been the proudest moment of your career so far? It would have to be when we won three Michelin stars at The Fat Duck. Heston was in Spain at a big chef congress at the time, so it was up to me to gather all the staff and announce the good news. It still makes my hairs stand on end now – it’s the ultimate accolade for any restaurant. Then almost equal to that, being awarded a star at Dinner was, in a different way, very special. Both are experiences I am very proud of. What projects do you have going on at the moment? There’s always ongoing research and development in history for Dinner, plus a few demos and shows, and possibly helping a cause called Farm Africa, involving food and sustainable business. Top three ingredients you like to cook with? Chicken, potatoes and garlic.

What dish do you like to knock up for a quick supper? Big salads, anything that can be grilled over charcoal that takes my fancy. Best culinary advice you’ve been given? Always pay attention to detail, make sure you taste and you can never stop learning. Guilty food pleasure? Roast potatoes. Where do you go to eat in London when you are not working? I love eating at Zuma, Goodmans and Pollen Street Social. How do you like to relax? Driving, golf and spending time with my wife Emma and our children, Max and Sophia. Future plans? Too early to say but it’s going to be a busy few years. Watch this space!

100g finely sliced shallots 3g minced garlic 15g sprigs of thyme, tied with string 150g dry Madeira 150g ruby port 75g white port 50g brandy 18g table salt 400g chicken livers (trimmed weight) 240g eggs 300g unsalted butter, melted 1) Place the shallots, garlic and thyme in a saucepan with the Madeira, ruby port, white port and brandy. Set aside to marinate for 24 hours. 2) Heat the marinated mixture until nearly all the liquid has evaporated, stirring regularly to prevent the shallots and garlic from burning. Remove from the heat and discard the thyme. 3) Preheat the oven to 100°C. Fill a bain-marie with 5cm water and place in the oven. 4) Preheat a water bath to 50°C. 5) Sprinkle the table salt over the livers and put them in a sous-vide bag. Put the eggs and the alcohol reduction in a second sous-vide bag, and the butter in a third. Seal all the bags under full pressure, then place in the water bath for 20 minutes. Remove the bags from the water bath. 6) Combine the eggs, alcohol reduction and meat in a Thermomix and blend until smooth at 50°C. Slowly blitz in the butter and blend until smooth. Pass the mix through a fine sieve using the back of a small ladle. 7) Pour into a terrine dish and place in the bainmarie and cover the bain marie with aluminum foil. Cook the parfait until the temperature in the centre reaches 64°C. 8) Remove from the oven and allow to cool. Refrigerate for 24 hours before serving.

For the mandarin jelly 45g leaf gelatin 500g mandarin purée 80g glucose 0.4g mandarin oil 1.5g paprika extract

1) Place the gelatin in cold water to soften. 2) Gently heat the mandarin purée and glucose in a pan to combine. 3) Add the softened gelatin and stir well until dissolved. 4) Remove from the heat and add the mandarin oil and paprika extract and stir well. 5) Pass the mix through a fine sieve and reserve in the fridge until required.

TO MAKE THE FRUITS 1) Using a spoon, fill dome moulds with parfait, ensuring there is enough pressure to create a completely smooth surface. Level off the tops so that they are flat and cover with clingfilm. Gently press the clingfilm directly onto the surface of the parfait. Place in the freezer until completely frozen. 2) Gently de-mould the parfait domes. Place on a board with the flat sides facing upwards. Very briefly run the flame of a blow torch over the flat side, being careful to only just melt the surface of the parfait. Join two halves together and compress using a square of clingfilm. Wrap well in clingfilm and place back in the freezer until required. 3) Gently push a wooden cocktail stick into the middle of the rounded surface and rewrap until all the parfaits are complete. 4) Gently melt the mandarin jelly in a saucepan and allow to cool to room temperature. Remove the clingfilm and dip each ball of parfait into the jelly and stand the sticks into a piece of Oasis covered in clingfilm. Place in the fridge for a minute then repeat the dipping process. 5) Dip a total of three times, then gently remove the cocktail stick and place the balls onto a tray covered in clingfilm. Place a lid over the tray and leave In the fridge to defrost for at least 6 hours. 6) Once defrosted, gently push the top of the ball using your thumb to create the shape of a mandarin. Place a stalk and leaf in the top centre of the indent to complete the fruit.

Restaurant REVIEWS Absolutely two of the best American diners

BIG EASY

ig is the name of the game here. Big in character, big in flavour, big in portion-sizes... in true American style, nothing here is done by halves. Taking inspiration from crabshacks on the Gulf Coast, it’s super cool and relaxed all the way; you can languish for hours working your way through the menu, settle down with a cocktail at the bar (we’re loving the Scorpion bowl – a heady mix of berries and vodka), or simply soak up the atmosphere and enjoy the live music. Food is typically American – but good American. Start with either the deep-fried calamari – lightly battered, not too chewy – or the roasted crisp potato skins with bacon which ooze cheese and are wonderfully fluffy. Main courses groan with a whole host of options: steak, lobster, ribs, fish, fajitas... the prime rib-eye (British beef from Wales)

was flawlessly cooked, exquisitely tender with a punchy peppercorn sauce. Seafood is equally impressive with ‘fresh catch’ fish bought at the market daily. Of particular note are the fire-roasted jumbo shrimp skewers prawns which, accompanied by a salad, make an excellent light alternative – very important if you’re stuffed full, as leaving room for the award-winning dessert is essential. All hand-made in Cornwall, the grand ice-cream sundae (a mile-high pile of berries, cream and meringue) caused the biggest stir while the sticky toffee pudding (winner of the Great Taste gold medal) came a close second. This is not a place for a quick bite – nor a hangout for dieters – but, when food is this good, all sensible reason seems to go out the window. LOW COUNTRY

t’s something of a shame that the new American-themed diner Lowcountry is in a such an out-of-the-way position at the quieter end of the Fulham Road, somewhere vaguely near Putney Bridge tube station, because a place as fun and quirky as this really deserves to be thriving and busy for maximum effect. The scene is set as soon as you walk in, with big tables and bigger smiles greeting visitors. Cocktails are swiftly brought over, which are eye-wateringly strong but very decent indeed. The menu is traditional southern American fare, with enormous portions that are designed for sharing. Chicken wings were lightly spiced and came with a deliciously more-ish sauce, and a starter-sized Cobb salad was so massive that we actually asked in disbelief whether this was indeed the smaller, starter helping. Main courses meanwhile were truly, impressively, belt-looseningly calorific, with a pork steak cooked in chicken a highlight, and a perfectly executed 12 oz rib-eye steak something truly wonderful to behold – as well as to taste. Desserts are more standard – a shared ‘Fulham Mess’ was nice but not as breathtakingly excessive as what we’d been eating earlier, which on balance was probably a good thing. We had severe food fatigue by the time that we left, but in the best possible way. Lowcountry deserves to be an enormous success. It’s reasonably priced, lots of fun and the food is a genuinely innovative way of bringing American classics to a British audience. But be warned, you’re going to eat an awful lot. Prospect House is in the old part of Padstow, which means the four-room bolthole, attached to the larger St Petroc’s Hotel and Bistro next door, has delightful vistas over the estuary and old town. This minute gem is the latest addition to the highly-regarded group of hotels owned by Rick and Jill Stein, the celebrated chef’s former wife but current business partner. Wonderfully private, secluded and cosy, Prospect House is that very rare of finds: contemporary, yet respectful of its location and very pretty indeed. Nothing seemed too troublesome for the attentive staff: a WIFI issue, for example, was solved instantly by an ‘IT department’. It’s definitely not a simple B&B – this is a slick operation.

Styled by Jill Stein, there is much to envy in these solid, comfortable rooms. At the centre of the oak floor, a large fireplace divides the room to create two spaces: a bedroom and sitting room. But that’s where the modernity stops; French windows open to the sounds of the sea and within minutes, you’re back ensconced in rustic Cornwall.

THE TOWN:

Although it can be flooded with tourists during the summer, Padstow is also a working fishing port which keeps itself busy all year round. Visitors can be forgiven for expecting a ‘Stein-opoly’, but there are plenty of dining alternatives (there’s a surfeit of Cornish pasty shops and authentic pubs).

An hourly service runs between Paddington and Bodmin Parkway with First Great Western. From there it is a 35-minute taxi ride.

Tranquillity itself. It is clear there are only four bedrooms and bathrooms in this property, as the attention to detail is precise and perfect throughout. Choose to linger in the large bath set up in front of a garden-facing window, or relax in the walk-in rain-shower, whose powers to soothe are helped along by the Molton Brown products that line its walls. The heated mirrors bring another comforting level of sophistication.

THE RESTAUR ANT:

The main foodie event is, of course, The Seafood Restaurant. Over a private dining session with Stein himself, he lamented today’s obsessive pursuit of Michelin stars, convincing us there is more to gastronomy than laboratory precision. His self-evident passion and natural ability with food manifests itself in dishes such as hot shellfish with parsley, chilli, olive oil, garlic, while the standout local cod and chips typifies the simple approach that serves him so well. The atmosphere in The Seafood Restaurant is set against the informal feel of the central bar, where the stools are ever-populated. 73

BATH, ENGLAND Chef and baker Richard Bertinet originally hails from Brittany, but since his move to the UK, he has revolutionised the gastronomic scene in idyllic Bath. Back in 2005, he opened the eponymous Bertinet Kitchen, an awardwinning cookery school slap-bang in the centre of the historic city. The school runs an array of courses for food-enthusiasts of all ages and levels, so there is something to cater for all people and tastes. There are useful bread-making classes and vienoisserie tutorials, as well as lessons in how to make the perfect croissants, fresh pastas and mouth watering chocolate treats. RAVELLO, ITALY With endless views across the azure waters below, there couldn’t be a more beautiful place to get to grips with Italian gastronomy than at Mamma Agata’s School in Ravello. The words ‘hidden gem’ come emblazoned on all aprons, and couldn’t better suit this Amalfi coast school, run by a trio made up of matriarch Agata and her daughter and sonin-law, Chiara and Gennaro. The school also doubles as their family home and together, they effortlessly engineer a day of fun, laughter, teaching – and innumerable rounds of exquisite food. It’s incomparably idyllic too; to access the school’s entrance, guests have first to walk through the family’s rich and heavenly orchards, lemon trees and tomato plants. In the house, the large table in the kitchen is laden with tempting dolce al limone to tuck in to as and when you fancy.

A day with Agata (who cooks) and Chiara (who translates) is nothing short of unique: both the kitchen and the open veranda dining area overlook the stunning coast below. And so it is that, all anticipation and with a myriad of now iconic cinematic scenes swimming around my head, I am delivered in to New York’s feverish heart, in amongst the skyline – that glut of sky-bruising buildings that are so endlessly destroyed and invaded by aliens in Hollywood blockbusters – that has long been etched into my consciousness, direct to Trump International Hotel and Tower New York. It’s one of the many – but perhaps

the most iconic – residences which make up billionaire entrepreneur Donald Trump’s vast empire. First impressions? On the outside, it’s just another skyscraper (even the novice acclimatises quickly); inside is quite a different story altogether. Its sumptuous interior, all golds and twinkling chandeliers, is a world away from the hysteria of the jammed streets outside. To contextualise, Trump International is positioned on the upper west side corner of Central Park, next to Columbus Circle and the Time Warner shopping centre. In short, it’s a Mecca for high-end shoppers and fine diners, and in a city where one wants to be in the thick of the bustling action at all times,

the 52-storey Trump Tower couldn’t have bagged a better spot. The army precision with which the improbably coiffed Donald Trump has become synonymous is visible throughout the hotel, and nowhere is this attention to detail more in evidence than in our city view suite on the 17th-floor: expect the gamut of ultra luxe touches, from a Jacuzzi and iPod stereos to the floor-to-ceiling windows which frame a gorgeous view across the city. As bewitching as the hotel is, I venture out to discover one of the world’s most thrilling metropolises, and in a city which houses an overwhelming glut of sights, I’m thankful for the City Pass voucher book

which, for $89, got me into all the big-hitting tourist attractions (think Empire State, Guggenheim, Statute of Liberty et al)… But as luck would have it, Tony Conigliaro, the cocktail wizard behind 69 Colebrooke Row in Islington, happens to be in town to guide us round some of the lesser-known hot spots, roundly proving that New York City’s gems aren’t always obvious. First up, he (naturally) takes us to some fantastic hidden cocktail bars. At Booker & Dax in the East Village we are presented with some seriously theatrical – and high school science class-reminiscent – cocktails

(think Bunsen Burners and liquid nitrogen); Death & Co is as exclusive and achingly cool as its intriguing name – which alludes to the Volstead Act of 1919 – would suggest; and finally we stop at the hard-to-find PDT

(‘Please Don’t Tell’), where the exclusivity message is somewhat explicit. The latter is the archetypal New York hang out; not only does it sit adjacent to a weiner restaurant called Crif Dogs, making late-night munchies a breeze to shift, but access to PDT can only be gained via an antique phone booth in the corner of the restaurant. Once you step into it, you’re obliged to pick up the telephone, ask the doormen to check for your booking, and if you’re granted a green light, a hidden door from within the booth will let you in. The entry system is a treat and an experience in itself. Cocktail quaffing is famously appetiteinducing work, so we head to Bleecker Street and John’s Pizzeria, whose owners have been baking in brick ovens and over coal fires since 1929. But as any foodie knows, New York has no dearth of knock-your-socks-off excellent restaurants; for the legendary authentic Big Apple burger, try Brooklyn Diner (where hot dogs lobster rolls are also a must-try), and for a pre-theatre snack, try Sardi’s off Broadway, where the steaks are as good as the caricatures of celebrities that adorn the walls. Still not sated, we make our way back to Trump International to dig in to pudding and a night-cap at the eponymous, Michelinstarred Jean Georges restaurant, before a late-night dip in the gargantuan swimming pool, and a soporific last view of the city before bed, where there is a note, alerting us to the weather for the forthcoming weekend: sunny and warm. In their own words Ivor Campbell-Davys & Barclay Macfarlane, Partners at Strutt & Parker, Fulham IVOR: My father bought his first house in Fulham when he was twenty six (on the corner of Hurlingham Road and Napier Avenue) and, having left the Royal Scots Dragoon Guards in 2004, I moved into my first house in Fulham (Bowerdean Street) when I was the same age. At the time I was working for Lane Fox (with whom S&P merged in 2007) in our Kensington office. Shortly afterwards, Barclay joined the Fulham team at our current office on the corner of the Fulham Road and Parsons Green Lane. I’ve known Barclay since I was 14 – we attended Ampleforth College together, so I was keen to recommend him to the firm. Since then Barclay has worked tirelessly to enrich our clients’ lives, both metaphorically and tangibly. I often say that he is the best man I know and his attributes fit so well with the values of this privately owned firm. BARCLAY: Ivor has a vast knowledge of prime central London having spent a number of years working in our Kensington office, and I think it’s this experience which has really benefited the Fulham office and the market in general. The first thing that strikes one is that Fulham is made up of a series of small villages: Parsons Green, Eel Brook Common and Sands End to name but a few. Fulham has recently been identified by the international market as the ideal spot for families, given it is within easy reach of international schools and good parks, has a close link to airports, as well as an excellent transportation network. It seems, with the recent sale of Sainsbury’s and Fulham Wharf, that another large development is set to change the whole outlook of Sands End yet again, with the last major change having been the marked increase in popularity of the area following the opening of the new Imperial Wharf Station. Prices have started catching up with Chelsea, but are still roughly half the price in £/sq ft, meaning that Fulham still bathes in the Victorian ideal of the town as a village, with charming focal points and excellent amenities. lancing out of the window, it would seem that an alien spaceship has descended and stolen London’s population – at least in Chelsea. Apparently residents here are curmudgeons and unwilling to join in the fun. But despite the ramifications of a missing population for the property market, it’s my fervent, and seemingly unique, desire to see the vacuum filled with rich foreigners who have decided that watching one or two events leaves enough time to hunt for an investment property or a second home in London. I think that the next few weeks might be interesting and you’ll know by the time you read this whether I’ll be collapsed in a depressed heap or punching the air. Talking of punching the air have you noticed the brand police? Seems G4S might not have found enough guards to keep those watching the games safe but someone has found enough to guard the money by donning brown shirts and wandering up and down the high streets of London castigating anyone silly

enough to [heaven forbid] join in the spirit by replacing bunting with anything showing the Olympic rings. Seems they’re heavily copyrighted and the basic fee to show them in any way at all runs to millions. I think we’ll stick to the bunting, thanks. The dilemma for most sellers is whether to bother trying during this period or to sit back and wait. It’s not uncommon for people to consider removing their property for the summer but this year is different. Various reports, including a weighty IMF one, continue to point to historical house price anomalies and say we’re entering another period of decline in prices. Trouble is, last time they said that, central London house prices bounced over 25 per cent but I have a feeling that this time it’ll be different. I alluded in June to the euro’s weakness and it’s now at 1.28 and heading out, so I can’t see the rush of foreigners repeating the effect.
