here’s bunting all over Golborne Road and Portobello, a string of union jacks on St Stephen’s Church and people have finally emerged from their winter hideaways. All over Notting Hill, folk have installed chairs on their doorsteps and are enjoying the view, holding impromptu yard sales of discarded tat and feeling generally summer-like. At Absolutely, we are looking forward to the jubilee street party in Clarendon Cross, hosted by Julie’s, and enjoying the sense of neighbourliness brought about by purchasing someone else’s outgrown toys, unloved teapots or abandoned vinyl. You could feel the local love when our own Lisa Davis joined Powervibe to run Hyde Park’s Race for Life in aid of Cancer Research. The fitness studio’s Westbourne Park Road fashion designer neighbour Ray Harris customised the outsize t-shirts (emblazoned with Absolutely and Powervibe, of course) by slimming them down, lowering the necklines and snipping off the sleeves, vastly improving the look. The team raised over £1,500, impressively, so well done to all of them. This June issue of Absolutely has a new look and feel, slightly. We hope you like it.

What’s your favourite way to spend a weekend? Playtime with the kids. Park life. A giant picnic. Maybe a museum or a movie. And a meal with friends in the evening, ideally outside on a summer’s evening. And your favourite meal?A real treat is an Italian feast with friends in the garden at the River Cafe. I also love Moro and Pizza East Portobello. What are your favourite local independent shops? In my neighbourhood, I love Still on Lancaster Road for one-of a-kind treasures and Rellik is my vintage mecca. Couverture is great for gifts and homewares and for discovering new small brands, for the kids as well as me. More favourite small brands are Folk (menswear) and Sister by Sibling, and I seem to have a rather large collection of Bella Freud knitwear. How do you survive those long days in heels? I’ve always been comfortable in heels. Charlotte Olympia and Stella McCartney are favourites, but I also love my running shoes and my new Liberty

The things I buy over and over again – and the only things I take on a trip-are Becca Tinted Moisturizer, Nars The Multiple in Portofino, and a Chanel compact blush, black mascara and black eyeliner pen. For skincare I rely on Sisley and Skinceuticals. All time favourite film? Impossible. But the first three that come to mind are La Dolce Vita, Fargo and Kramer vs Kramer. What’s your favoruite tune on your ipod at the moment? I’m loving Karen Elson’s The Ghost That Walks. What is your favourite book? My favourite authors are Thomas Hardy, Tolstoy and Iris Murdoch but my favourite book changes all the time. Currently loving The Art of Fielding by Chad Harbach. Anna Karenina is my all-time favourite book.

If you weren’t a model what would you be doing? I write as well as model, so maybe I’d be concentrating more on that. And I’ve always loved taking pictures too, so maybe I’d want to be more on the other side of the camera. But whatever I’m doing, I’m a mother first and foremost.

QUEEN’S PARK Twelve inspiring gardens, from large modern and traditional, to small and cosy mediterranean style terraces will open to the public, as well as many talented local artists, ceramicists, painters, print makers, furniture makers, opening their studios to visitors. There will be children’s activities in the actual park, creating miniature gardens, felt-making and making crowns of dried leaves. Over the Jubilee weekend, the Lexi Cinema’s peripatetic sister Nomad is treating us to a free screening of The King’s Speech in Queen’s Park. A film about the King, in the Queen’s Park, with no need to carry any money on your person. You can’t get more royal than that on a Saturday night, they say, and who’s to argue? A new history of Holland House focuses on its fascinating inhabitants - and their guests – from 1726 to 1951. The Cope and Rich families (the Earls of Holland and Warwick) were at the heart of political, social and literary life in London until the house was bombed during the war, as this book reveals – commissioned by The Friends of Holland Park and written by Carolyn Starren, former local studies librarian for the Royal Borough, it’s a thrilling local yarn. Metal heads

Kate Spicer’s brother Tom has Fragile X syndrome and an obsession with Metallica. Absolutely quizzes her about Mission to Lars, the film of her journey to Lars Ulrich

Was it easy to persuade Lars Ulrich to get involved? The process of persuading a heavy metal God to let us into his world was long. It involved the usual emails, phone calls, and climbing the greasy poles of permission. More, there was endless tugging on people’s sleeves if we thought they might be able to help. If any of us (I made the film with two directors, Will – my other brother – and James Moore) met anyone who might be helpful we’d hassle and wheedle. In the end, whether we got the OK from the orderly approaches or from a word dropped by the chick I bumped into a bit drunk in a bar, frankly, we’ll never know. But we got our yes. However, by then this was the least of our worries, as by then we were in the US, on the road in an RV, with Tom saying he didn’t want to meet him any more. He wouldn’t even let us park the RV in the car park of the venues where they were playing. What part of this project have you enjoyed most? I enjoy it in hindsight only, we went on a strange, madcap, rock’n’roll adventure. There were some magical moments on the trip, but it was hard work for all of us. I slept in my clothes most of the time, and Tom really

struggled to break through some of the fears that are caused by Fragile X syndrome. It is very moving starting to get feedback from other families with Fragile X in their genes, and from families dealing with learning disabilities. We wanted Tom to have a good time, but we also wanted people to see through the clinical labels and see the man himself. I hope that they do. Were there many mishaps along the way? It would be easier to list the few times we weren’t mid-mishap. Put it this way, when what we called ‘the poo pipes’ on our rented RV exploded, that was light relief. Did you plan the journey first, and then decide to film it, or did you start with the idea of making a film? Will and I always enjoyed roadtrips with Tom when we first all became kind of independent with junkheap cars. (Well, William did, Tom can’t drive, and neither could I until I was about 35). We wanted to recreate that magic and get Tom to Lars, which is all he’d asked us for 15 years. “Wanna meet Lars, wanna meet Lars, wanna meet Lars.” By the time we realised all the problems

involved on every level, it was too late, the idea had become a thing, a living, breathing thing and we could not fail to feed it. We raised over a third of the money for the film at parties thrown in Notting Hill, and gave half our money to Mencap. The film previewed recently at the Gate. Who came to the screening and how was it received? Some of my local friends – I’ve lived round here since I was 20, people who are into Metallica and have supported us on social networking. I think we sold out the Gate that night, how cool is that? You must feel very emotionally bound up with the project. Would you do it again? Or something similar? Tom would never put himself through that again, I don’t think. And this film is about Tom, not me, not Will. So that question’s sort of irrelevant. And for Tom, was Lars all he hoped he would be? SPOILER ALERT CAN’T ANSWER THIS QUESTION!!! Mission to Lars is at the Gate Cinema from 8 June for a week.

p-and-coming musician Humphrey Milles and I are in a quiet section of the garden at the Elgin: ‘“So, Humphrey,” I begin. “Tell me a little bit about your life in music.” But the voice that warbles into the conversation next isn’t Humphrey’s. A deep tenor voice slinks over the table, murdering Elvis’s Can’t Help Falling in Love with skewed notes killing the song-scape. Humphrey and I look up in surprise and are greeted by an older gentleman keen to show off his vocal ability. Less the King and more the alcohol-infused king of fools. It is Humphrey who steers the interview back on course, and he does so with the grace and aplomb of an old hand. He bursts into song with the interloper, and giving my companions and myself a teaser of what’s to come, he thanks the gentleman and gets right back down to business. “Writing new songs is quite an undisciplined thing for me, it happens when it happens, a line comes to you or you get inspiration from somewhere and it becomes a song.” He cites Johnny Cash’s

A Boy Named Sue as one of his favourite songs, constantly throwing him inspiration. As a young lad, growing up in the West Midlands, he had a similar attitude when it came to music: “I

started playing the piano when I was quite young, but didn’t really take it too seriously, I didn’t have great discipline and my teachers weren’t particularly inspiring”. It was later on that he really started to get hooked. “When I started playing the piano on my own I began to think of it in a much more free and exciting way. Certain chords began to make me feel a certain way – that’s what it’s all about, emotion and music.” At The Elgin, he dives head-first into his songs with all the gusto a man could muster, starting off on the guitar and finishing up his set with a beautiful ballad on the piano. His voice, at times gravelly and emotive is incredibly powerful and smooth. The venue is packed and the audience impressed with Mr Milles’ gutsy performance. I can’t help but think that Milles is destined for much bigger venues in the near future. Catch him while you can... Humphrey’s single Not Enough will be released on iTunes in July.

Dancing Queen Katie Randall meets Karen Pilkington-Miksa, W8-based founder of the radical New English Ballet Theatre

I

still remember thinking how grubby all of life seemed except for that beautiful stage,” ruminates the founder of the New English Ballet Theatre (NEBT) and former ballerina Karen Pilkington-Miksa; she is explaining her first production in Washington DC as a child, Giselle. For this prima ballerina there has always been something very powerful and emotive about dance, and in particular ballet. “There is something about ballet that makes sense to me. You get the most amazing feeling.” It was this passion that sparked a full and varied career in dance, leading Kensington-based PilkingtonMiksa across the globe. “I got into Seattle Ballet when I was 20,” she explains. “Then I got restless and came to London.” She has also choreographed for various dance schools and performed her own ballet at Holland Park. The entrepreneur has been a firm fixture on the fitness scene in London for years, launching a yoga school in Knightsbridge in the ‘70s. This vast catalogue of experience eventually led Karen on to forge a new career in the wings: “I realised there were a lot of support

systems for talented singers and musicians and that the same bridge organisations didn’t exist in ballet.” She reminisces on the difficulties faced by young girls in the industry, remembering one particular low in which she auditioned for a single place at the prestigious Royal Ballet along with over a hundred other hopefuls – a pretty daunting task, most will agree. NEBT act as a performance

“The major ballet companies are caretakers of our great classical tradition, but there just isn’t sufficient stage time to present enough new work.” PilkingtonMiksa says: “There are many young choreographers who want to get their work shown.” The company’s debut will see 18 young dancers take to the stage. It is precisely this fresh jolt of vitality to the industry that attracted chief executive and artistic director of Sadler’s Wells, Alistair Spalding, to the project. “The great strength of the approach of NEBT is that it is looking at young talent. We could see the next MacMillan in the programme.” he says. The NEBT does not receive government funding, instead relying on a “staunch body of supporters who believe in the company.” Patrons include Darcey Bussell CBE and Wayne Sleep. It seems that young performers in the creative arts have found their fairy godmother in Karen Pilkington-Miksa and with a wave of her wand, the sky really is the limit for NEBT and the creative arts.

Ballet companies are caretakers of our great classical tradition, but there just isn’t sufficient stage time platform for talented dancers, choreographers, young musicians and artists (Karen is inspired by Diaghilev’s creative template) and will be presenting their first show, Synergies, this July. Infusing neoclassical ballet with collaborations in art, music, and set design from young graduate artists, their first offering promises to be an event like no other. With government cuts to arts, dance companies across the country are still struggling to fund their beautiful stage shows and competition has never been so fierce.

Power to the Plate

The Powerplate craze is no passing fad and has gained an army of supporters in Notting Hill and beyond. Absolutely gives it a go with a session at Power Vibe

M

adonna is a fan – and so is Jonathan Ross. The Powerplate, with its strange, vibrating motions and exercise-intensifying powers, promises a shortcut on the path to fitness – and who could argue with that? But does it really work and how is it different to the regular gym? At PowerVibe fitness studio in Westbourne Park Villas, they are believers. Though at fi rst they weren’t and even co-owner Abbi Forman confesses that it took her at least eight sessions to get used to the teeth-shattering sensation of standing on a large vibrating platform that sends millions of tiny shocks shooting straight through your bloodstream. Remember the fi rst time you used an electric toothbrush? It’s like that, only for your entire body. Still, it took me much less than that to get used to it and while it’s not exactly pleasant, there’s a comic aspect to it that is redeeming enough.

(for balancing on) and normal balls for throwing. Anything you do on the plate is multiplied by the fact of being on the plate, so it’s more extreme than regular exercise without any more effort. This is its main selling point – it’s almost like a fitness buyone-get-one-free. Put in half an hour and it’s equivalent to doing non-plate exercise for an hour. Plus, there’s a seemingly endless list of other things it’s good for, ranging from arthritis to cellulite, circulation to skin. It’s a small studio with an intimate feel and a friendly vibe, so you can see why people get addicted. Especially couples, thanks to a special programme of shared training sessions that cater easily to unequal levels of fitness. Personal Training, spin classes, box fit, circuits and Pilates with some of London best trainers are all also on the menu, so all focus is not on the plate itself. The results speak for themselves with troops of toned, strong and radiant people emerging from the small entrance.

Anything you do on the plate is more extreme than regular exercise, but without any more effort There’s more to it than just standing on a stationary machine, getting wobbled, of course. For me, it was a one-to-one session with personal trainer Robbie, who devises a range of stretches and moves that focus on strength, stamina and balance. Some moves involve standing on the plate, others might have you lying on the floor with your legs on the plate, or stepping on and off it. Other items in Robbie’s repertoire include the fitness ball and the half-ball

Now that Jade Jagger’s daughters are grown up, she’s moving back to Ibiza. But she’ll always be close to Notting Hill, she tells Pendle Harte

J

ade is late and I am waiting outside her closed shop in the rain. Inside, I can see the dark-walled, carpeted space looking a bit bare but temptingly dry – and I can’t imagine Jade ever waiting in the rain. Still, when she does arrive, she’s not dressed like a princess or even a Notting Hill mummy. Jade is in trainers and a puffer jacket, and not in a glam way – and she’s very apologetic. She had forgotten all about me. Already I have been briefed that we’re not to talk about her family, which is a shame because everybody always wants to know about Mick, Bianca and Jerry, as well as Georgia May and the rest of the siblings, not to mention Jade’s godfather Andy Warhol and the rest of the rock crowd she grew up around. So that’s out, and so’s her imminent wedding to DJ Adrian Fillary, which is taking place either in the English countryside or in Goa, depending on where you’re reading about it. She’s not saying, either way, and I’m sensing she could become mighty prickly if pressed.

What she does want to talk about, however, is her work. She opened her eponymous shop two years ago in All Saints Road, a road that she was drawn to because “it’s quite live/work, a lot of the shops are half studios, not completely store-like” – and the shop’s quite a mix too, starting out selling a lot of clothes and now mostly a showroom for her jewellery designs. “It’s always changing and evolving here, and it’s very intimate. We do lots of private sales and bespoke stuff here, and we have offices and a design studio downstairs. It’s very different to the big store in Albemarle Street I looked after when I worked for Garrard.” Jade was famously made creative director of the jewellery giant in 2001, a move that surprised many, and certainly upped the glamour stakes for the Queen’s jeweller and brought an influx of skulls and crucifixes to the traditional designs. It wasn’t a very long-lived alliance though, and now Jade’s creations are sold under her own label, where a touch of eccentricity is mandatory. How does she describe her style?

Jade’s voice is a slow drawl, with an international twang to her boarding school English accent, and she sounds a bit bored. “There’s definitely a bohemian feeling and I love understated beauty – but I’m full of contradictions, I also love opulence and gold. I’m renowned for gilt and a renaissance feel but I also love craft and home-made, imperfect things.” On display in the shop are various gold animal skeletons and a gilded zebra skull, along with a variety of rosaries, Indian holy beads and other “one-off, fancy pieces”. In her design career, Jade hasn’t concentrated exclusively on jewellery, however – there has been a long-term focus on interiors too, with a collaboration with property developer Yoo that started eight years ago. They developed a building in New York, simply called The Jade, for which she designed the luxe showhome interiors. “Interiors have always been an extension of my decorative and creative world,” says Jade languidly, as if having developments named after oneself

is simply a natural progression. “I love decorative arts and what lives with us every day, whether it’s jewellery adorning the body or cushions adorning your sofa.” Jade lives a famously peripatetic lifestyle – the house in Ibiza, where her two daughters mostly grew up, a house in Queens Park which she sold a few years ago and now a flat in All Saints Road, handy for the shop – though she’s moving back to Ibiza soon, she says, having been mostly based in London for the last five years. “I’m definitely a modern day traveller for sure, I spend my time moving stuff around, I like the way it changes your energy, it sort of keeps you going,” she enthuses. She has referred to herself as a “lifestyle icon” in the past, and obviously, living on a beach and having Mick Jagger as your dad are things that a lot of people wouldn’t say no to, not to mention having buildings named after you and a glittering career as a designer. You sort of wonder why she bothers with the day-to-day of having a shop – with a background like hers, why not just have a nice time as a lady of leisure? Jade smiles. “Well, had I been in that position, maybe I would have,” she says. Perhaps she’s not quite such a child of the trust fund as people might think. Anyway, she’s too driven to be content with lying round on beaches being rich. “I think that when you’re creative you have a strong driving force behind you. My work ethic comes from my dad. If you want to achieve things

Obviously, living on a beach and having Mick Jagger as your dad are things that a lot of people wouldn’t say no to you have to be quite strategic and organised – and if you’re a woman then working, cooking, school running, you’re running aren’t you, but now I can quieten down a little bit.” So is she very disciplined? Does she get up early and work hard? “I do get up early, I think the children started that discipline. After lunch I do feel a bit snoozy, I think it’s all those years in Ibiza.” Jade was just 20 when her first baby was born – and that daughter is 20 herself now. Did having children so early make her grow up fast? “I think I was already quite grown up, I was an only child.” Part of the reason why Jade’s moving back to Ibiza is because they don’t quite need her as much, one studying homeopathy and the other doing A-Levels. “My children

are growing up, I feel it would be nice to be in the country again. I’m always travelling anyway and they’re already living without me” – which isn’t to say that they are living the party lifestyle, and neither is Jade, not any more. “I think at 40 it’s a bit…” Her loft parties in Scrubs Lane became legendary, “but everybody seemed to sort of jump on the back of our bandwagon and we were one of many parties, so the Loft is over now,” she explains. She won’t really be leaving Notting Hill though, an area she has always felt close to. She’s looking forward to the new Pelican pub, her neighbour on All Saints Road, set to reopen in coming months, and she even claims to love carnival. Jade is a fixture in W11, wherever she is.

These snapshots immortalize some of the music world greats over the past 50 years and now they have come together as part of a new collection of beautifully printed

photographs that are being sold framed and ready to hang on your walls as original pieces of art. This is the Rough Trade gallery at Sonic Editions’ online photography shop – and it’s a new business venture devised by a pair of Notting Hill residents with some pretty good connections. Sonic founders Russell Blackmore and Shane Murray managed to gain exclusive entry to the vast Getty Archives in LA and their library now

includes an extensive selection of iconic images that spans the predictable (Audrey Hepburn, Marilyn Monroe, Steve McQueen – though not the images that you’re already bored of) and the surprising (Ernest Hemingway with a shotgun, Hunter S Thompson on a motorbike, Ozzy Osborne with a crucifix). Most, though not all, are musicrelated. The idea is simple: choose a picture, size and frame and it will be hand-printed and framed to order. The Rough Trade idea came from Russell Blackmore, who explains: “When we started Sonic Editions the first people we wanted to work with to put together a collection was Rough Trade. Having lived in the area for the last 20 years, Rough Trade has always been the place I made a weekly pilgrimage to on a Saturday to buy CDs, listen to what was new or just hang out.” Some of rock’s biggest icons have been associated with Rough Trade over the years and the Sonic Editions collection comprises 25 iconic prints that are, as you’d expect, an eclectic mix of era-defining artists and cult heroes, curated by Nigel and Spencer at Rough Trade. Other galleries in the Sonic Editions library include Impossible Cool, Hip Hip, Motown, the NME Collection and Heavy Metal. “My favourite is the image of Joe Strummer shot by Peter Anderson in Shoreditch in 1987, it’s got a fantastic intensity to it, the graininess of the image, the ice cold stare, and the old railway yards in the background just add to the slight menace,” says Blackmore.

DJ Yasmin is playing at Paradise’s Summer Ball this month and about to release her debut album. Helen Baron finds out what it’s like being London’s hottest ticket

W

e first started hearing about Yasmin after she was spotted by Pharrell Williams during one of her DJ sets. Studio sessions followed and now the 21-yearold has worked with big name producers Labrinth (Tinie Tempah), Future Cut (Lily Allen, Devlin) and Shy FX (Dizzee Rascal). Now the DJ-turnedsinger’s debut album is due out this summer. A DJ has to have something special to make it big – particularly if they’re female. Why do you think you’ve done so well? At the end of the day, I’m a huge music fan. There might be female DJs out there who are hired for their style or image or promoters

might go for a celebrity name. I hope my love and knowledge of music comes across - I think people have picked up on the fact that I know what I’m doing. You are stylish yourself though... Where do you shop? I like spots like Brick Lane and Portobello and I love Urban Outfitters for the new designers that they stock. I also like Nasty Gal and Bitching and Junkfood online. How did you start DJing and did you expect anything to come of it? I started at 17. I had a DJ friend and would keep tabs on his collection. I’d sit with him in the booth while he was DJing; I literally played songs when he went to the bathroom and that progressed to me not letting him back on! I caught the bug and asked for a gig at the same club - it all went from there. I

was always drawn to music but I didn’t necessarily expect anything to come of it. Now I can’t imagine doing anything else. How did it feel being ‘spotted’ by Pharell? When people write about me they like to tell that story. I saw an ad for an N.E.R.D. gig in the paper and there was no support act listed, so I called the promoter to see if I could warm up the crowd - they asked me to send in a mix and I got the job. I turned up, walked on in front of thousands of people and it was mad! In hindsight I was probably underprepared but it led to me playing a private party for Pharrell and being [US rapper] Eve’s tour DJ for a year. Since then I’ve played so many places and now I make my own music.

Tell us about the Paradise Bar Summer Ball - are you excited about it? What kind of music can people expect? Totally - Paradise is such a beautiful venue and I’ve had an amazing time when I’ve DJed that part of London - I loved playing the carnival. I’m going to play party bangers - tunes that people love but might not have heard in a while. There’ll be hip-hop, reggae and garage - I love up-tempo, twostep, funky stuff.

How would you describe the flavour of your own music – is hip-hop the genre you’re most influenced by? Hip-hop but also reggae for its beats and basslines. I like music with movement – I don’t play much house or minimal techno/electro. I like playing tunes that people can sing along to. I play for myself really but luckily people seem to enjoy it. What remix are you championing at the moment? Right now I love Liane Le Havas’ ‘Forget’ reworked by Two Inch Punch for more of a slow-jam, and Jessie Ware’s ‘Running’ remixed by Disclosure for club vibes.

A

s Tom Pemberton and I later agree, there aren’t many ranches in Notting Hill Gate, so it is with great interest that I sit and await the return of the chef from the shops in his restaurant - Hereford Road. He is out locally and won’t be long, I am told as I’m ushered into a brown leather banquette and left to drink in the atmosphere of the restaurant as it prepares for another busy service. This talk of ranches is manifest, of course, because Pemberton is famous for his use of the whole animal; he deals in extremities one might say, his favourite things to cook being calves liver and sweetbreads. The menu at his restaurant is ‘ingredient-led’ and Tom is not afraid to experiment with the more unusual cuts of meat: liver and kidney are on the menu when I visit, and our talk often wanders back to brains, tongues and tails - mostly due to my fascination, pressing poor Tom for details. ‘Entry level extremity eating?’ he muses, ‘I think sweetbreads are very nice, texturally they are not that challenging and you can make them nice and crispy. I wouldn’t start with very raw kidneys and avoid brains because the texture can put people off.’ Previously head chef at St John Bread and Wine, where he made a name for himself cooking this style of British fare, it comes as no surprise that people want to hear about Tom’s interest in offal. ‘I’m not trying to convert anyone to eating calves brains and braun – enough people like it.’ he says. ‘There is definitely something appropriate right now about being a British chef, working in Britain and cooking British food, of which this is - it seems to make more sense to me.’ Pemberton is a very thoughtful interviewee, often repeating my questions aloud to himself before answering to give himself time to ruminate appropriately. He becomes especially animated when

we discuss his ‘neighborhood’ restaurant concept, ‘I think people were slightly surprised that Hereford Road was billed as a neighborhood restaurant doing the kind of food that we do’ he explains. ‘I suppose in a way if you are going to have that kind of restaurant, with an esoteric view of food and you are going to re-introduce people to things like sweetbreads and ox tails, maybe it’s better to be somewhere where it’s more of a destination.’ For this chef, it is important to readdress the balance of restaurants on the high street. We discuss how normal it has become to see Indian restaurants, tapas restaurants and gastropubs, but we decide that there are very few offering traditional British cooking which uses ingredients from our food past. What Hereford Road offers is genuine British cuisine, that, as Tom rightly points out, has been

one point in the ‘50s and ‘60s. Work is often a point of contention for the chef, as he rarely gets a moment out of the kitchen. ‘One of the first chefs I ever worked with told me that you must put your heart into cooking and working in the kitchen should be all-consuming, and it is for me. I can’t remember the last time I had free time.’ When he does manage to steal a moment Tom is an avid reader (Lynn Barber’s autobiography at the moment), a keen cyclist and loves to cook with his seven year-old daughter. ‘She loves cooking,’ he admits. ‘She’s a more talented cook than I am, a slightly sobering thought.’ One thing the Kensal-Rise based chef won’t be doing in his spare time though, is compiling a cookbook. He has a very definite opinion on the matter: ‘I think for me to do a book I would really have to have a number of special and original recipes.’ he says. ‘There are a lot of British cookbooks out there, a lot have come out in the last 12 years, and they will tell you how to make nice creamy mash or a crème anglaise, but I’m not sure there is need for any more really. I’m not going to fill up a cookbook with spotted dick and Yorkshire pudding.’ He does, however, like Fergus Henderson’s books, ‘very idiosyncratic’ and also Mark Hix’s cookbooks which champion British seasonal food. He adds that, ‘there are lots of things in Mark’s books that we thought we had come up with, but obviously if you are dealing with the same ingredients at the same time, it’s inevitable that there will be some crossover.’ Tom loves a curry once in a while – if he can prise himself away from the kitchen – but generally he practices what he preaches. This means he dedicates lots of time to cooking, sourcing new producers and experimenting with ingredients. The renovation of his house will just have to wait.

For me to do a book I would have to have really special and original recipes. I’m not going to fill up a cookbook with spotted dick and Yorkshire pudding eaten by families for generations. ‘This food has been eaten by people for a long time and it has only really fallen out of fashion recently. In the past everyone had to use the whole animal, so I quite like the fact that we are actually doing British food in a neighborhood setting,’ he adds. The restaurant is well-placed to act upon its meaty challenge. It’s a former Victorian butchers shop. The building retains several of the vintage features, including the large viewing window at the front of the shop and a mosaic effect pattern on the shopfront. The venue has had a colourful past but has always remained on the gastro-front, Tom reveals. ‘I think it opened about 1870 and during the Second World War the space was both a café and a store.’ It continued in this vein after the war and then, bizarrely, was owned by carry-on actor Robert Morley at

BRAISED ROE VENISON SHOULDER AND TURNIPS (SERVES 3-4 PEOPLE)

One whole roe shoulder Chicken stock to cover Six large onions Half bottle of red wine A glass of port Half a star anise, A stick of cinnamon, Three juniper berries, One clove A head of garlic A bunch of turnips Salt and pepper Season the roe shoulder with salt and pepper. Brown the shoulder on the top of the stove in a large roasting tray with a little oil. Pop into a hot oven to brown further for five minutes. Remove from the oven and turn the temperature down to 180 degrees ready for braising. Remove the shoulder from the tray while you prepare the braising liquid in the same tray. Take six large onions, sliced thinly, sweat gently over a low heat in the tray the roe has been browned in, adding a little more oil if needed. When the onion is soft, add half a bottle of red wine and a glass of port and reduce over a medium to high heat. Season with the star anise, cinnamon stick, juniper berries, and clove. Cut the head of garlic in half width-wise and add to the tray. Then turn off the heat, place roe shoulder and turnips in tray and add stock to cover. Cover the roasting tray with tin foil and braise in a low oven, 180 degrees for three and a half hours. Take off the lid and brown in the oven for a further 20 minutes. Check for seasoning. Serve with potatoes and some greens. 66

Back to Babylon Rooftop dining really comes into its own in summer. Absolutely revisits Babylon at the Kensington Roof Gardens

T

here aren’t many restaurants that can claim to offer the following: mature trees planted on a rooftop, views over the whole of London, and flamingos. None, probably, apart from Babylon at the Kensington Roof Gardens. This Grade II listed spot has an illustrious history: it was the place for the

ladies of Kensington to meet for tea from the 1930s, when the garden was part of Derry and Toms department store, and in the 1970s it was home to Biba, which refigured the Art Deco building into a temple of glamour

and decadence, 1970s style. This is the largest roof garden in Europe and it is home to ducks, flamingos and koi carp as well as over 30 different species of tree, including some that were planted when the garden was first laid out in 1936, even though there’s only a metre of soil for their roots. So we love this place. The restaurant really comes into its

own in summer with regular barbecue feasts that go all out with lavish spreads of lobster and steaks, to be eaten on the terrace overlooking not only the fabulous gardens but the whole of London, taking in not only the Albert Hall and the London Eye but, on a good day, Crystal Palace too. On our most recent visit, we loved a creamy butternut squash soup and a delicious crab cocktail with avocado salsa, perfectly fresh and sweet. Main courses were roasted chicken breast with shiitake, button and Paris mushrooms, shallots and Madeira cream sauce, a favourite, and a flawlessly made lemon sole with samphire and new potatoes. Puddings are a dream, especially the dark chocolate fondant, which is just as oozy and intense as you’d hope. It’s a lovely, lightfilled dining room, with friendly and attentive staff, and a great sense of its own history. You’ve got to love the Roof Gardens. roofgardens.virgin.com 69

Here she lets us inside her jet-set lifestyle. Where is your favourite place in the world to visit? I’d have to say Ibiza and Brazil. I have such fond memories from these places and Ibiza is my second home. I have friends I’ve had for years over there and I just love the sea and sunsets, nature and music. Brazil has such wonderful food, shopping and culture. In your opinion, where is the best beach in the world? Espelliho in Bahia Best holiday adventure? Definitely paragliding in Rio and learning to dive when I was younger in Thailand, truly amazing experiences that I would recommend to anyone.

Do you have a go-to brand of clothing for holiday-wear? I love small jackets and also Alexander Wang and Vince t-shirts. I think Felder Felder design great holiday dresses. I also love Buba bags. I do try to travel lightly! Where do you like to fly from? For long haul flights, Heathrow’s Terminal five. I don’t like to rush at the airport so I make sure I have plenty of time, I make last minute calls, buy lots of water and a few naughty snacks for the plane. Holiday playlist on your iPod? Karunesh’s Global Spirit, Empire of the Sun and Cut and Copy. Favourite London pastime in the summer? I like to walk along the river, watching the skyline and all the bridges. The choppy waters are surprisingly calming and I like to see all the activities on the river.

Jumping back to home turf, can you tell me a little bit about your new studio? Certainly, it has bespoke cabinets with stunning lighting and some great contemporary art. ow typical. The moment we finish our two-year rock water garden project, the weather takes a real turn for the worse. At this time of year we were hoping to be enjoying the therapeutic sound of water running through our garden in mild spring weather but instead there’s just wind, rain and cold. Still, we could not let the momentous occasion of turning on the pump pass unnoticed, so we huddled under the patio heater eating smoked pork sausage rolls from Askew Road’s fantastic butcher the Ginger Pig along with the first cut of English asparagus. A great evening celebrating our friend Valentine Warner’s launch of two new pizzas he has invented for Pizza Express. The party was in the beautiful Coptic Street branch and not only were Val’s pizza’s fantastic, he was also such a warm and friendly host of the party and made us feel really special, a rare gift. We bumped into Harriet, the PR for Willie’s Cacao and bartered a recipe for old-fashioned Danish apple cake for a big box of chocolate. Mr Skött is not a big fan of dark chocolate, but the complexity of Willie’s tastes just heavenly. We’ve been sold on Scandinavian style for ages, of course and we’ve been watching with interest as the north comes to dominate the UK’s living rooms – whether furniture or TV drama – and now increasingly, food is turning Scandi too. We all love a herring, a slice of rye, dill sauce and cinnamon buns so it’s all good for us. And is it just us, or does everyone you meet these days seem to be from Sweden? So we’re having our own Scandi food and beauty evening on 7 June, where a feast will be served up by our friend Signe Johansen (author of the fabulous Scandilicious cook book) to accompany an extensive makeover session with members of the Kell Skott team and visiting make up experts. You could spend hours in the impressive rhododendron walk, on the other side of the estate from the hotel, which is a riot of colour, culminating in fantastic views from the mausoleum at the top of the hill. The house and gardens are open from April until October.

And for families, there’s an awardwinning adventure playground on the estate that will keep the children amused for hours with its famous Space Dive slide (a vertical drop that’s a modern version of a Victorian invention, apparently), treetop walkways, sunken trampolines and creative wooden climbing walls.

THE RESTAURANTS: The Sheldon restaurant serves up small, meticulously arranged plates of high class food, with especially good quality meat (the beef was notably excellent) in stylish (if formal) surroundings.

fi rst went to Romania in the late 1980s, at the lowest point of the Ceausescu era. The sights were astonishingly and unexpectedly beautiful, but I wouldn’t have recommended it to a tourist. Take the condition of the hotels as the most superficial indicator of how it was: vacant and shoddy structures of Communist concrete with erratic water supply and un-openable windows, uniformly dim due to the rationing of 20-watt lightbulbs in modernist chandeliers. Also rationed in the Socialist supply structure – or so it appeared – were those brass rods that hold carpets to stairs: this could be quite a hazard as you stumbled in to bed in the dark after a sparse, interminably slow-served meal in which only the wine had been available in plenty. Such things are better not remembered, let alone recommended. But that was more than 20 years ago. I go back frequently and I am glad to say that the sights remain but the accommodation and food have wonderfully improved. I go to the countryside rather than the cities: to the western province of Transylvania, where wide expanses of rolling farmland are held within the horseshoe curve of the Carpathian mountains, with fairytale villages, vast tracts of forest and pasture and an extraordinary diversity of wildflowers. The villages are poor and some are sadly depopulated, but in others it is possible to stay in beautifully restored peasant houses and experience the textures of life as it used to be lived throughout Europe – even to draw your water from the well and wash your clothes there, as my ten-year-old daughter once insisted on, though the house we were living in had been fitted with modern facilities. Pro Patrimonio, a charity modelled on our National Trust, and the Mihai Eminescu Trust have traditional houses

in villages founded by Saxon immigrants in the Middle Ages, in the region close to the turretted town of Sighisoara which was the birthplace of the notorious Vlad the Impaler (inspiration for Dracula, the country’s most famous, though fictional, tourist attraction). The Eminescu Trust has also restored a manor in the village of Malancrav that was owned by a Hungarian feudal lord; and further east in Transylvania, where the population is almost wholly Hungarian, Count Tibor Kalnoky has converted a number of village houses for tourists and has begun work on a more ambitious project that was a family hunting lodge. He also administers a couple of houses bought and restored by Prince Charles – to whom, with the inevitability of the old European aristocracy, he is tenuously related. The richest ethnically Romanian heritage is to be found in the northwestern region of Maramures. When I first went, there was a wonderful unity to the villages: wooden houses and wooden churches built like arks with high shingle-covered steeples pointing to the sky, and in the forested hills behind them the wood from which they were made. It’s changing. The people of Maramures are known to be strong and hard-working, and too many of them have gone to work hard in the west of Europe and come back to build houses that would be more appropriate in a suburb of Barcelona. Others like the Pop family of Hoteni are fierce in their desire to keep their culture alive. They have a simple guest house and serve delicious food in their kitchen, and Ion Pop is one of the area’s best-known musicians. Recently I have been spending time in the Apuseni mountains to the south-west, where other folk cultures and costume and music can be found, and other tales of modernisation. I went to the historic village of Rosia Montana, threatened with destruction by a vast open-cast gold mine.

In the neighbouring valley of Bucium, in another wooden village surrounded by wildflowers, the Hanul Ursita marks, hopefully, the beginning of a gentle form of tourism that can bring an economic life to the people of this region that gives them an alternative to mining. This area offers wonderful walking, easier than other parts of Transylvania where I could fi nd my own way without too much difficulty. Elsewhere the landscape is so big and so few paths are marked that one really does need a guide. I have to confess that I once took a friend walking in Romania and got entirely lost. We were making a tour of the painted monasteries, in Moldavia on the far side of the Carpathians, where the history is Byzantine and Ottoman, not Hungarian and Gothic. I had thought we could walk through the beechwoods from one monastery to another, but paths are hard to fi nd in a beechwood when the ground is covered in golden leaves. We spent a whole day out and walked in a circle, and found at the end of the day the same team of woodcutters from whom we had asked the way in the morning. They thought it very funny, and loaded us onto their horses and carts along with their wood to take us back to the village where we had started. Soon after dawn the following morning we met them again. They took us on their carts the fi rst stretch, an hour and a half deep into the forest, and carefully set us on the right way this time. That morning drive was the best part of the whole trip: the mist breaking, the autumn in the beeches, the slow pace of the horses in our little convoy of carts, the talk of the woodcutters who rode up for a while then jumped down and walked alongside and offered us their home-made plum brandy to drink from old Sprite bottles. But there really were bears in those woods. We took buses after that.

It’s a beautiful flat. What was the initial brief? It was time for a complete overhaul of our client’s existing home, updating it from the 1980s to a more glamorous interior, reflecting her strong sense of style. The master bedroom required more wardrobe storage and the client wanted a walk-in shower in the ensuite bathroom to replace the bath. Additional storage solutions were required, such as a proper

coat area in the entrance hall, maximizing the storage capacity in the laundry and kitchen area, introducing new easily accessible concealed storage in the new ensuite shower. What difficulties were associated with the space? The property is listed, so we had to be aware of restrictions imposed by this. The lower ground floor suffered from damp patches,

causing the paint to bubble, so we specified particular breathable paint to remove this problem. What were its best features? The property is in a very gracious Notting Hill street with large bay windows on the ground floor, direct access to a beautiful communal garden and views looking out on to this in the main living spaces which are light and airy with high ceilings.

Where did you source the main purchases? We actually re-used a lot of the client’s existing furniture, recovering the upholstery together with recovering pieces sourced from markets, and we stained the drawing room pine bookcases to a dark ebony. We designed a substantial amount of the new furniture ourselves, such as the bedroom wardrobe and a piece of freestanding furniture to

conceal the television. We installed a floating ‘key drawer’ in the entrance hall which is currently rather a popular piece with several of our clients. Fromental helped us design the hand painted silk wallpaper in the master bedroom. We had an unusual suspension light over the stairwell designed by Bocci, made by Kuldalini. We mixed in the modern classic Corbusier chaise longue among the

existing more traditional pieces in the drawing room. What is your favourite room? alling all dog owners! The inaugural Notting Hill sponsored dog walk in aid of Cancer Research UK is to be held in September. This will be the first event organised by the Notting Hill branch Of Cancer Research UK and it is hoped it will become a regular event and an unmissable family occasion. Sponsored dog walks have become a very popular way to raise funds due to the fun element involved which is down to the dogs taking centre stage. The format is very simple; each dog is entered under their own name for a donation of £10 and once registered you will be sent an information pack giving details about the walk , how to get started raising sponsorship and how to set up your dogs very own sponsorship page. The event is to be held at a large open green space in the area that has enough room to cater for up to 100 dogs with their families and friends plus an area for sponsors stands, refreshments and raffle prizes. The whole day should be great fun for all the family and a great way to raise funds and awareness for such an important course. fter many years working in mainstream Estate Agency Geoff and I were ready for a new challenge. So, last October we took the plunge and set up our own business. We first met almost ten years ago and soon discovered we shared a similar work hard, play hard attitude to life. Although our careers took different paths, we still kept in touch. Then Geoff landed the dream job - selling villas in the Caribbean. Suddenly seeing Geoff became a lot more attractive and I spent my annual leave in Barbados for several years. Over a lot of rum punch the plan was hatched. Fast forward to 2010 with Geoff back in the UK still determined to start his own agency. His was to be a new and bespoke estate agency, offering the best in service and value for money. He had the sales side sorted but who could run lettings? His search was over. Nine months into our new venture, we now find ourselves working 13 hour days, sometimes seven days a week, and having an absolute blast. We have sunk everything we have into getting this business up and running and are proud of what we are building. We are well aware that both our friendship and business partnership are built on complete trust which gave us a solid base from which to design Wilfords London’s core values. The proof? The vast majority of our business is from personal referrals from clients both old and new. LONDON PROPERTY PRICES INCREASE MORE THAN 134-FOLD SINCE 1952

UK property prices have increased 105 fold during the Queen’s 60 year reign and 16 times since the Silver Jubilee in 1977, according to new research from Hamptons International. The research found that the average price of a home in London has risen 134-fold since 1952 and 21-fold since 1977. In 1952, the average price of a London home was £2,650. In 1977 it had risen to £16,493, compared with the average price of £354,300. Adam Challis, Head of Research at Hamptons International, commented on the findings: “Britons are well-known for their love affair with bricks and mortar and our jubilee property price analysis goes some way to prove just what a reliable investment property has been over the long-term. The latest data from Lonres shows Notting Hill and Holland Park prices are now, on average, 13.5% higher than the previous 2007 peak. Houses remain the most scarce property type within Notting Hill and Holland Park, with competition for stock resulting in record prices being achieved over the past twelve months. Whereas last year houses accounted for 20% of sales in our area, they only make up 15% of properties current listed. The imbalance between houses and flats is most acute in W2, where 91% of properties listed are flats, creating considerable interest and competition when houses do reach the market. ince my last entry, things have seriously warmed up. I think I have had one of the busiest weeks in recent times, relished in numerous valuations and viewings (not to mention five parking tickets, showing true commitment to the cause). Please do not mistake this for complaining. I love it. At the beginning of the year, we had numerous requests for special properties and I’m pretty sure we delivered. We’re very excited to be dealing with a beautifully restored house in one of my favourite parts of Kensington, Brunswick Gardens. Itís a super-stylish home and I’ve decided to swap my gym visits for showing this house, with lots of interest and a respectable amount of stairs it beats watching numerous hot people working out on a treadmill. Those who read my last column will be pleased to know that Harry survived his initiation at Portobello Pizzeria. We had a fantastic night, relaxing and sipping some nice cold wine and gorging on excellent pizzas. I must warn you that their chilli oil is super-hot and having got a little over zealous with the bottle, we ended up with a huge kick although I am told this is great for the metabolism so this had to be a good thing.
