A marriage made between the inheritance of the past and the fearlessness of the new, which all our members embody and recreate in their hotels. In 1954, in France, Marcel and Nelly Tilloy, who owned a charming property in the Rhône Valley, got together with seven other hoteliers to offer travellers a unique, tremendously charming and utterly gastronomic itinerary between Paris and the Côte d’Azur. They called it the Route du Bonheur. United around shared values, they founded Relais & Châteaux, an association which would grow and grow, consisting today of 530 charming hotels and gourmet restaurants. come from the Midlands in South Africa. In 2004, after many years working in Cape Town, I joined the team at Summer Lodge in Dorset County. I had no regrets moving from one wonderful region to another. Here they drive on the same (left) side of the road and people have the same sense of humour. The main difference was in the seasons, which are much more distinct here in southern England. It was the seasons that really made me understand why artists, poets and musicians had found such inspiration. The landscapes are reborn time and time again! Nature and history pervade everything here: the fine old country houses on the Downs, the Wessex valleys and hills, the moors strewn with rocky peaks, the coves and fishing villages in Devon and Cornwall. I’m certainly not about to leave...

was born in Dublin and for as long as I can remember I always wanted to work in hospitality. Was it because my parents dreamt of building a hotel in the west of the country but never managed to do it? Or because of the suit my grandfather wore that I wanted in a child’s size so I could wear it wandering the corridors of my place. After living overseas, I returned to Cork to work as a hotel manager and then I settled for good in Kenmare, in the south of the country. I got to travel a lot around Ireland when I was presenting “At Your Service”, a hit TV show here in this country. The South I would like to show you has immense treasures. LONDON AND ITS ENVIRONS
The city founded its power on navigation, thriving on the banks of its beloved River Thames while keeping an eye on the sea beyond. Although it lies 70 kilometers upstream from the Channel, London is a maritime metropolis, a city of docks and warehouses, a center of commercial and political conquest. Its bond with the sea gives the British capital its distinctive colors: a sky in an endless palette of grays, its streetlights casting billowy yellow pools in the misty night, its deceptively untamed parks cloaked in deep, dark greens. From the far-flung corners of the globe that once made up its empire, London has learned the art of subjugating nature. In St. James’s Park and in front of the lovely brick townhouses of South Kensington, bursts of primrose and forget-me-not blossoms adorn meticulously groomed lawns. But there’s more to West London, where earls and countesses rub shoulders with well-heeled expatriates, than its elegant avenues and squares. Contemporary art and design, a lively culinary scene… this is a hive of creativity. Mayfair and Marylebone are home to Europe’s most prestigious art galleries, and a new generation of chefs are elevating British cuisine far beyond the traditional steak and kidney pie. The more cosmopolitan districts of the East End are also enjoying a renaissance. Concept stores and young fashion designers have colonized Shoreditch and Dalston, while BoBos browse the organic food stands of Broadway Market. London keeps forging ahead, always on the go, never tiring. The words of the 18th-century poet Samuel Johnson still ring true: “When a man is tired of London, he is tired of life.” But when it’s time for a break from the commotion of the city, the Thames Valley offers a welcoming retreat, ideal for canoeing in the company of swans, admiring the majesty of Windsor Castle or picnicking (and deer-watching!) in the Great Park. Along the peaceful country lanes of Surrey and Berkshire, every grove of trees seems to reveal another palatial manor surrounded by carefully-tended gardens. THE ENCHANTING KINGDOM The reputation of its music festival makes it easy to forget that Glastonbury, thought to be the site of the mythical island of Avalon, entered the annals of history nearly a millennium ago when local monks claimed to have discovered the tomb of King Arthur in a tree trunk. Risible as they may seem today, such fables are treasured here as timeless truths. This is Celtic country, a land of traditions where legends are as real as the rock stars who grace the stage here every summer. Even though little is known about the great Arthur, the people of Glastonbury are firmly convinced that his remains were brought here in the early 6th century after his death on the battlefield. With the Saxon Wars a distant memory, today’s certainty is southern England’s warm and pleasant climate, which produces a rich harvest. In springtime, orchards in blossom transform the Kentish landscape into a tableau of bright colors and delicate scents. Late summer in the so-called “Garden of England” sees more and more vineyards bearing fruit, in preference to hops, traditionally picked by East End Londoners and hung out to dry in the round towers of Kentish oast houses. The ancestral royal hunting ground of the New Forest, England’s oldest national park, is at its resplendent best in the fall. The sunny south offers every variety of coastal scenery, from chalk-white cliffs and the reclaimed pastureland of Romney Marsh, through the rock formations of Dorset’s fossil-rich Jurassic Coast to the sweeping beaches of Devon and Cornwall, prized by surfers. Hikers can follow the sinuous coastal path from cove to cove, or head inland for the wilds of Dartmoor, southern England’s last wilderness. Where life follows the serene rhythm of fishing fleets and harvesters, the pleasures of the table are a point of pride. Devon is renowned for its cream tea, served with scones, cream and strawberry jam. The debate goes on as to whether the cream should be whipped or clotted. And is it permitted for the jam to be raspberry? As generous as the land, the sea also offers its bounty. Jersey’s mussels, oysters and lobsters are among the best in the world, and the spider crabs caught off the island’s white sand beaches are a specialty not to be missed. In a soup or simply poached, they are served with a kind of bread found only on the island, baked between two cabbage leaves. Another local treat, eel soup, earned the Channel Islands their popular title, “Kingdom of Congers” A kingdom so enchanting, it inspired Claude Debussy to write a composition for piano entitled L’Isle Joyeuse.

The art of the bath is one of civilization’s most prized refinements. And Bath, a spa town in southwest England, is the embodiment of that tradition. Its hot springs, the only ones in England, were already known to the Celts and Romans. The latter built a grandiose bathing complex here: Aquae Sulis — “the waters of Sulis,” in homage to the eponymous deity. Testifying to the importance of the site, the 9th-century historian Nennius described “a hot pool surrounded by a wall made of brick and stone, and into it men can go to bathe when they wish, and any man may take the [kind of] bath he desires. If he should want it, his bath will be cold, and if he should want a hot bath, it will be hot.” In the 18th century, Bath became a popular gathering place for fashionable English society, a resort where the art of gracious living could be cultivated in an architectural setting that blended neoclassicism with rustic charm. To the attraction of the hot springs have been added museums, theaters and concert halls. The city is closely identified with music, hosting events such as the Bath International Music Festival, the Mozartfest and the Bard of Bath, a legacy of the Celtic tradition of honoring the city’s best poet, singer or storyteller. This rich cultural life wears a cloak of greenery. Numerous parks and gardens provide a pastoral backdrop, setting the mood for a romantic stroll through the 23 hectares (57 acres) of Royal Victoria Park, inaugurated in 1830 by the 11-year-old Princess Victoria, or along the banks and locks of the River Avon, which links the city to the Bristol Channel and the sea, and to London via the Kennet and Avon Canal. Further east, this same enchantment can be found in Oxfordshire. Here the fertile countryside spreads out over low hills and vales, a patchwork of cottages, manor houses and villages imbued with authentic charm. Like Newbridge, known for its 14th-century bridge, and, of course, Oxford, whose world-famous university was founded in the 11th century. Nicknamed the “City of Dreaming Spires” this gem of British culture is a virtual compendium of the country’s historic architectural currents, uniting them all in a harmonious whole.

The nation’s hard-working heartland is a palimpsest: Roman road, Saxon myth, medieval legend, Civil War, Industrial Revolution. The most famous legend is that of Robin Hood, champion of Nottingham’s poor, who found refuge among the oaks of Sherwood Forest. Following in his footsteps, the traveler discovers a region that boasts some of the most beautiful landscapes and castles in England. Beneath Belvoir’s crenellated towers, the huntsman’s horn rings out across the vale, with a tally-ho and the yelp of foxhounds in pursuit. The crags of Derbyshire’s Peak District are the sublime backdrop for Chatsworth’s majestic neoclassical façade. The old walls of Rockingham stand firm, as they have since the reign of William the Conqueror. Historic Warwick is Shakespeare country. After the theatre and a tour of the Bard’s humble birth house in Stratford Upon Avon, visitors savor time-honored regional specialties like gingerbread and fruit beer or feast on more typical Midlands fare: pork pies from Melton Mowbray, Stilton cheese and a pint of local ale. Between the mercantile cities of Liverpool and Manchester, Lancashire was the engine room of Victoria’s global empire, its canals and William Blake’s ‘dark satanic mills’ now a heritage trail. Culture and industry go hand in hand in dynamic Manchester, a driving force on the new British art and music scene. The labor force takes its ease on the terraces of Old Trafford, on the beach at Blackpool and in the grandiose setting of the Lake District, an inspiration for the Romantic poet William Wordsworth. “I wandered lonely as a cloud / That floats on high o’er vales and hills, / When all at once I saw a crowd, / A host, of golden daffodils; / Beside the lake, beneath the trees, / Fluttering and dancing in the breeze.” Wales is a principality apart, rich in Celtic myth and untrampled natural splendor. On a sheltered estuary near Machynlleth, the ancient capital of Wales, Ynyshir Nature Reserve is a birdwatcher’s paradise teeming with noisy seabirds and waders. Numberless sheep have the run of the green hills and generously provide woolen jerseys and Welsh lamb that melts in the mouth.

A lone house perched atop a cliff. A flock of sheep roaming the vastness of the rolling countryside. Ringed by islands, Scotland is a kaleidoscope of landscapes swept by sea breezes and turbid mists rolling in from the horizon. The sky grows heavy with rain-swollen clouds. The storm is not far behind. Dense, violent, unrelenting. A deluge that pummels the soil, soaking it through, wearing it down. But soon the sun rips through the clouds again, its warmth caressing the soft curves of the Munros, the brawny Highland summits. Their green flanks are bursting with heather, ferns and Scottish thistle. Between the prickly leaves of the national emblem, cheerful purple blooms emerge. From time to time, the shadow of a golden eagle glides across this symbolically-charged patch of flowers, whose bright colors contrast starkly with the rough, untamed nature all around. This is a land of cliffs, mountains and lochs. The most famous of them all, Loch Ness, is shrouded in a radiant veil that banishes all thoughts of its elusive monster. At sunset, the blue and pink hues of the sky dance across its waters in a dazzling chromatic ballet. Just as breathtaking, Loch Linnhe is alive with herring and salmon. Once captured, the noble Scottish salmon is conveyed to its sanctuary, the smokehouse, to undergo an age-old process for preserving food, still widely practiced on Scotland’s west coast. In the fishing village of Ullapool, the fillets are salted, perhaps coated with a spice-scented marinade, and left to dry overnight before being hung in the smoke oven to absorb the aromas of oak embers for 24 hours. The technique is not exclusively reserved for the tender flesh of the salmon. There is room in the smokehouse for haddock and herring from the North Atlantic — delicacies infused with the flavors of the sea, to be savored with a dram of Speyside’s fine whisky, the nectar praised by the bard Robert Burns as the “soul o’ plays and pranks!”

In this realm of moors and forests, it would be no great surprise to meet white-robed druids gathering mistletoe with their billhooks. The Irish landscapes bear witness to the country’s Celtic roots. Back in the hills, where thousands of cows graze, stand ancient megalithic monuments, steeped in mystery and seemingly without number. These immense stones, standing upright, superimposed, arranged in circles and spirals, were no doubt the scene of lost religious ceremonies. Like the Drombeg Cromlech, a stone circle also known as “the Druid’s Altar” in County Cork. Ireland’s Gaelic language may have declined down the centuries, but its Celtic music is alive and thriving. On Saint Patrick’s Day, March 17, the sound of bagpipes and bodhráns (small traditional drums) echoes in the streets. The celebrations are as friendly and cheerful as the Irish themselves, who crowd the pubs to toast their patron saint. The tipple of choice is Guinness, the rich black stout that fuels every Irish evening with its distinctive flavor of roasted grain. While conviviality reigns in the cities and villages, the countryside reveals nature in its purest state. Starting with the steep, rocky coasts: around the port town of Ardmore, the waves break dramatically against the cliffs, where hikers brave the squalls to explore the dizzying heights. Shielded from the ocean’s fury, but no less spectacular, Kenmare Bay stretches inland, sprinkled with islets where seals come to bask in the sun. In Ireland’s beautiful southwest corner, Killarney and its lakes are overlooked by McGillycuddy’s Reeks, a mountain range whose jagged peaks have a wild majesty belying their modest altitude. With their gray stone walls, the castles and manors of Ireland fit perfectly into their surroundings. Like Lismore Castle, one of the finest, whose clusters of square crenellated towers rise from the banks of the Blackwater River. Behind their thick walls, some of these structures house immense, convoluted stills where visitors can discover another Irish tradition. The oldest distillery of them all is Old Bushmills, whose triple-distilled whiskey captures the flavor of Ireland: slightly bitter at first, then gradually revealing a delicate, refined intensity.

You can enjoy them as they come or in a variety of other ways. For example, my preference would be butterflyed, then grilled with a nice garlic butter.

To prepare Hare, we trim and roast the best end using a more traditional method and then lightly poach the loin of hare to give it texture and finish. The combination of the two results is a sublime taste of the classic roasting method, married with the light flavours of poaching.
MEADOWSWEET PANNACOTTA (MAKES 6-8) CLAUDE BOSI HIBISCUS, LONDON, UNITED KINGDOM INGREDIENTS
600g cream 200g milk 8g meadowsweet 120g sugar 2.5 leaves gelatine METHOD
Combine the milk and cream in a saucepan, and gently bring to the boil. Pour over the meadow sweet. Infuse for one hour. Soak the gelatin in cold water until it becomes soft. Strain the milk and cream. Add the sugar. Bring back to the boil and cool slightly. Add the soaked gelatin. Pass. Pour into old fashioned glasses. Set in the fridge over night. Serve with traditional shortbread biscuits.

chicken, most people think of “hormones and industrial breeding.” But some farmers are producing excellent free-range poultry, and Rhug chickens are among the best. They’re organic, raised in the open and feeding whenever they want. Their meat is tender, with an intense flavor. Mine come from

two sources: Laverstoke Park Farm and Rhug Estate. We have all the traceability forms, which guarantees that we’re serving our customers the best product available. I try to source my chickens from local farmers as much as possible. The goal is to find the right balance between the best product and its sustainability.

roast chicken au jus with a smoked potato purée, or grilled chicken breast with tomato fondue, garden beans and Kalamata olives. We always serve chicken with inseason ingredients, like asparagus or morels in the spring, or lemon, smoked paprika and tomatoes in the summer. I love to roast “black foot” chicken and then serve the breast with morels and asparagus, which I enhance with a Sauterne gelée and Morteau sausage.

Two hours from London, the Cotswolds is an enchanting world of wide-open countryside and honey-coloured stone buildings. The mysterious waters of the lochs, surrounded by the misty mountains that rise out of the earth in this part of Scotland, never fail to make visitors dream. “Yesterday, I saw a most delightful place indeed, much beyond any place I have seen in Ireland – Ballyfin”. The observation by an aristocratic 18th century visitor is still there today. The 600 acre demesne is a place of tranquillity and great natural beauty. It is in this unspoilt, yet easily accessible region that the Bowe family chose to create their gem of a hotel, a model of conviviality and elegance complete with a rose garden and woodland walks.
