Zingerman's Stollen Stollen has been made in and around Dresden, Germany since the late 1300s. It’s a footballish shaped loaf of dense, bready cake studded with candied citrus and dried fruits, and topped with plenty of powdered sugar. It was initially created for Advent­—the period leading up to Christmas—which had rules forbidding butter, so it had none. But in the 1400s, Dresdeners Prince Ernst and his brother Duke Albrecht wrote what surely must be the only papal letterwriting campaign lobbying for butter in Stollen. (Those guys must have really loved stollen.) Five popes and 40 years later they got their wish. Pope Innocent VIII said OK to butter—provided the bakers paid a tax on it, naturally. That tax made stollen expensive, as did the addition of “fancy” ingredients like sugar, spices and candied fruits. For centuries, stollen was a food for royalty. Today, it’s still made using the same royal recipe, but butter taxes are mostly gone, sugar is no longer fancy, and we all get to enjoy it.

Restaurateur George Lang called Hungary “the land of ten million pastry lovers.” Given the entire population is just shy of that he may have been overstating it—but not by much. Budapest is stuffed with bakeries and drop-dead gorgeous coffeeshops serving up all sorts of confections, cakes, cookies and strudels. You can’t walk down a block without stumbling over a sweet. One of my favorites is Beigli (pronounced bay-glee), Hungary’s take on a sweet nut roll, made by rolling a thin layer of sweet yeasted dough around a filling of ground walnuts. It's been a Hungarian Christmas staple since the 1800s, and for a couple of years now, the master bakers at Zingerman’s Bakehouse have been making it for Christmas in Ann Arbor, too.

Full disclosure: the price on these fruitcakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Crafted by Robert Lambert in California from rare citrus that he picks and candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

White Rare Citrus Fruitcake Robert's classic cake, the one we've offered for many years. It's by far the best of its kind I’ve ever tried. Robert says, “The recipe is British, Victorian era. It’s based on my grandmother Floria's cake, but instead of the store-bought glacéed fruits she used, I make my own candied fruit.” He chooses blood oranges, bergamots, Rangpur limes and more, many that he picks himself. Each cake is soaked in cognac and aged for a few months, then garnished with a slice of candied fruit and a bay leaf, all wrapped gently in cheese cloth. It tastes fresh, clean and lively. For his dark cake, Robert starts by candying exotic citrus like Buddha’s hand citron, bergamot, blood orange, Texas lemon and white grapefruit peels. He adds hazelnuts, pecans, walnuts, dark raisins, prunes, black figs soaked in Poire William eau de vie—oh yes, there’s more—dates, cardamom, cinnamon, nutmeg, 10-year-old Ficklin Port, and a bit of candied ginger. Then, wait for it...he soaks it all in bourbon. Like everything Robert creates, these cakes are made by hand, in small-batches with an obsessive attention to detail. The flavor is phenomenal. From the culture that brought you fruitcake comes another much-scorned holiday food tradition: Christmas pudding. But just like there’s good fruitcake and lame fruitcake, the same goes for pudding. It's not bad, it's just misunderstood. In Victorian England the holiday pudding would be made from brandy soaked dried fruits, sugar, eggs, lots of spice and just enough flour to hold it all together. This particular pudding comes to us from Thursday Cottage in Essex. They craft it in the old way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they're a preserve maker first) as well as sugar, flour, citrus peels, cinnamon, cloves, ginger and another touch of Cognac. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. A spicy sweet German tradition

Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. “It was like nothing I’d ever tasted,” she recalls. “I couldn’t get all those complex flavors out of my head.” She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The dense dough rests for nearly a day before heading to the oven. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. You will find three classic and two chocolate cookies in this fire engine red tin. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. Although traditionally intended to keep for months, I think these sweet, spicy, nutty treats will only last a few days (or hours!) at your house. You know it's Christmas in Italy when the panettone start appearing in shop windows. After breaking up a batch of their caramel walnut toffee into bite-size chunks, the chocolate geniuses at Vosges Haut Chocolat were left with a pile of toffee crumble that needed a home. They began mixing the surplus with some of their other housemade confections: marshmallows and caramel. They covered the concoction in dark chocolate and crowned with a sprinkle of the toffee crumble. Voila! A sensation was born. The marshmallow gives each piece a wonderful bounce. I’m a sucker for traditions, especially when they’re this delicious. Peppermint bark has been a Christmas staple for my family thanks to my great-aunt Caddy’s sweet tooth and love of Fannie Farmer’s confections. While I’ll never forget Aunt Caddy, this peppermint bark from Chocolate Signatures in Toronto has erased all memories of that other candy maker. Barbero Torrone Nougat from Piemonte David Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. That’s exactly what Guido Gobino, one of northern Italy’s premier confectioners, has done. It’s been a dozen holidays since I found wild Italian cherries from Piedmont. I remember bringing the first jar to Christmas at home, spooning out individual fruits to top a crisp of cracker slathered with a gooey triple crème cheese whose name I forget. I kept at it for an hour—I have a big family and everyone wanted seconds. We barely made a dent in the jar. Prepared in small batches so they do not bruise, packed with syrup in a resealable glass jar, we've been bringing in a small quantity every holiday since and their fans gobble them up. We also offer soft, tender apricots, hand harvested and rushed into a simple syrup bath within hours. The speed is important, it protects the texture and flavor of the fruit. The longer they wait around, the more their texture breaks down, the mushier they get. But that’s the only rushing allowed. The apricots take their time once they reach their bath, allowing the sugar to slowly soak into the fruit, preserving them and freezing their flavor at its peak. An elegant gift. Fantastic with gelato or fresh cheeses. The cherries are pitted, but the apricots still have their stones so chew carefully. Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago. When we got the first shipment of a few cases it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini (online) with nothing else except a glass of cold white wine nearby. Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. We went to Spain and selected a single great batch of Bonito loin, our best seller, for fullness of flavor, silky texture, and lingering sweetness.

One of the my favorite holiday cheeses is Regal Raisin: a triplecrème from France covered in Marc de Bourgogne soaked raisins. A little explanation on those terms is probably in order. Triple-crème is technical jargon cheesemongers geek out over, it basically means the cheese is really rich and made with lots of cream. Its level of butterfat is only slightly less than butter, if that helps. Marc de Bourgogne is aged brandy from eastern France that gives structure to the coating of sweet raisins. Together they slice through the buttery rich flavor of the cheese to open up complex, compelling flavor. Set this down after dinner, stand back, and watch the compliments fly.
