A spicy sweet German tradition Lebkuchen
Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. “It was like nothing I’d ever tasted,” she recalls. “I couldn’t get all those complex flavors out of my head.” She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The dense dough rests for nearly a day before heading to the oven. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. You will find three classic and two chocolate cookies in this fire engine red tin. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. Although traditionally intended to keep for months, I think these sweet, spicy, nutty treats will only last a few days (or hours!) at your house. Full disclosure: the price on these fruitcakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Crafted by Robert Lambert in California from rare citrus that he picks and candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

Robert's classic cake, the one we've offered for many years. It's by far the best of its kind I’ve ever tried. Blood oranges, bergamots, Rangpur limes and more, many that he picks himself. Each cake is soaked in cognac and aged for a few months, then garnished with a slice of candied fruit and a bay leaf, all wrapped gently in cheese cloth. It tastes fresh, clean and lively. Robert Lambert is many things: a fruit encyclopedia, a meticulous preserve maker, a perfectionist, and a thousand other adjectives, but one thing he’s NOT is cheap. Other producers order fruit from a distributor, Robert picks his own. Others use water in their recipes, Robert juices the fruit himself and uses that instead of water. Others haphazardly toss chopped up peels into their recipes, Robert candies them first. Like I said: obsessive and meticulous. When this violet mustard caught my eye ten years ago it seemed like a gimmick. But moustarde au violette has been eaten in French grape growing regions for centuries. It used to be made each autumn by blending freshly pressed red grape juice with just ground mustard seed. It was a lost art until Elie-Arnaud Denoix worked for a year to revive it. Violet mustard is coarsely ground and crunches when you bite, like caviar. It’s naturally sweet and spicy, making it ideal for serving with meats of all sorts. Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago. When we got the first shipment of a few cases it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini (online) with nothing else except a glass of cold white wine nearby. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. It's surprising to me since sardines are not a big part of the popular food scene in America. This is perhaps the classic case of tinned food seen as poor, low-quality food. ? BECAUSE NOT ALL WHEELS ARE THE SAME There are over three hundred dairies making Parmigiano Reggiano across an area the size of Connecticut. The cheese is made all year long, during biting cold and torpid heat. The cows live in lush valleys. They live high in the mountains. Some cheesemakers produce five wheels a day. Some make a hundred. Despite being called by one name, it is not one interchangeable cheese. We spent the last year traveling across Italy, visiting dairies, tasting dozens and dozens of cheeses. (I know, rough job, right?) We’ve settled on some new cheeses that we think show something really different and special about, what for many—me included—is one of the greatest cheeses in the world. You can find a few of them here, more online, and, of course if you’re in town, stop by Zingerman’s Delicatessen and spend some time tasting all of them with a cheesemonger. Practically all Parmigiano Reggiano is made from milk pooled together from multiple farms. But the fifth-generation cheesemakers at Valserena make a farmstead cheese. That means they not only make the cheese, they also raise the cows, and all of the milk comes from their own herd. Where most parm is made from the milk of Freisian cows, at Valserena they raise brown Bruna Sola cows. They produce less milk than Freisians, but it has more butterfat—and more flavor. Classic, Chocolate and Pecan Praline Banana Breads The diabolical pastry enablers at Zingerman’s Bakehouse have focused their dark magic on classic banana bread. Like our hugely popular sour cream coffee cake and magic brownies, banana bread instantly conjures up nostalgia for home baking. The thing is, this loaf tastes better than what mom used to make (no offense intended moms, it’s just hard to beat our Bakehouse). ANOTHER REVILED BRITISH CHRISTMAS TRADITION Christmas Pudding
From the culture that brought you fruitcake comes another much-scorned holiday food tradition: Christmas pudding. But just like there’s good fruitcake and lame fruitcake, the same goes for pudding. It's not bad, it's just misunderstood. In Victorian England the holiday pudding would be made from brandy soaked dried fruits, sugar, eggs, lots of spice and just enough flour to hold it all together. This particular pudding comes to us from Thursday Cottage in Essex. They craft it in the old way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they're a preserve maker first) as well as sugar, flour, citrus peels, cinnamon, cloves, ginger and another touch of Cognac. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. David Barbero’s family has been making torrone hazelnut nougat— what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. Spiked with loads of famous Piemontese hazelnuts that are roasted in house every morning, then hand selected and folded into the nougat. In their classic Northern Italian graphic-designed tin they make great gifts. Or new this year, an 8-inch long bar, enrobed in chocolate, makes a great stocking stuffer.
