Are cured meats dangerous? By Mo Frechette Welcome to a brief voyage through high school chemistry with apologies to mad scientists if I get any of the specifics incorrect. Sodium nitrate, NaNO3 is added to salami ingredients before they’re stuffed into the mostly air proof casing. Inside, the bacteria and microbial organisms live in an anaerobic environment—no oxygen.

Sort of. The problem is when the cure is rushed, the nitrite, NO₂, doesn’t disappear like it does when you cure traditionally over thirty days. It’s still present in the meat. NO₂ is a carcinogen.

Their activity sucks one of the three oxygen molecules away, turning sodium nitrate into sodium nitrite, NaNO₂. Sodium nitrite is unstable and aggressive to microbes. It’s the compound that does the real work of curing, making it safe for us to eat.

That’s the reason people are worried about nitrate cured salami. Meats may be cured with sodium nitrite—not nitrate—and rushed to market when the nitrite carcinogen is still present. This isn’t true for the cured meats we carry.

While it does its job, the sodium and another oxygen molecule is leeched off. What’s left is nitric oxide, NO. This fixes the pigment color, keeping salami red. This molecule is safe.

What about the “no nitrate” meat at supermarkets?

Even though we started the cure with NaNO3 we ended up with NO. A salami maker may add 150 parts per million of sodium nitrate to start the cure, but only 2 or 3 PPM are left. The traditional thirty day curing process eliminates the substance. So if cured salami doesn’t have any sodium nitrate or nitrite left, why are people afraid of it? While traditionally cured meat doesn’t have any sodium nitrate/nitrite, non-traditionally cured meat may. During the middle of the last century, in between inventing Twinkies and Cheez Whiz, food scientists deciphered the chemistry that I just explained. Until then it’d been a two thousand year process that no one understood – people just knew it worked. The scientists correctly identified sodium nitrite NaNO₂ as the money molecule. It did the majority of the curing work. NaNO3 didn’t seem to do much, so they experimented with add-

ing NO₂ directly to the meat, cutting NO3 out of the game. It worked. It saved time. Meat could be cured almost overnight. It could go to stores faster. It was a huge success.

Nitrates are necessary for curing meat. You can’t cure without them and keep meat pink and safe. But if nitrates are necessary for curing meat, how can places like Whole Foods carry meats they say are nitrate free? The trick is celery. It’s high in nitrates. Concentrated celery juice is used in the curing, instead of the naturally occurring mineral sodium nitrate. The FDA allows it to be called “Natural Flavor” instead of “Sodium Nitrate.” The words may be different, but the chemistry behind it is the same. You can taste both curing methods for yourself by frying up the two bacons from Nueske’s on the facing page. The classic Applewood Smoked is slowly cured with traditional mineral nitrates. What questions to ask, and what to look for on the label. By Val Neff-Rasmussen There’s a growing demand for meat from animals raised in better conditions. What hasn’t necessarily grown is our knowledge about what exactly makes those conditions “better” and how we can find the information to make informed buying decisions. Here’s are my top recommendations for what to look for. My number one question is: Do the animals have enough space? Confined animals get sick more easily because diseases spread quickly when animals are kept close together, so the solution is to pump them full of antibiotics. Confined animals fight with each other, so the solution is to physically alter them by doing something like clipping their teeth or beaks and docking their tails—they’re still going to fight, but now they’ll do less damage to each other. I could go on—the problems of packing too many animals in too little space are many. You could ask about antibiotics and physical alterations and a bunch of other details. Or, you could ask if the animals have enough space to live as they please—ideally, outdoors on pasture. In some parts of the US, that may not be possible year round—harsh Michigan winters, for instance, aren’t the best for many animals. But asking “are the animals raised on pasture?” is a great place to start a conversation.

One note of caution: watch out for answers that dodge the question, like “Our animals have access to pasture” (translation: they live indoors and likely never go outside). What labels are useful? When you can’t ask your farmer or retailer directly, what should you look for on the label? A lot of claims sound good. However, many labeling terms don’t actually mean much for animal welfare, including common ones like Farm Fresh, All Natural, Hormone Free for poultry and pork, Cage Free, and Free Range. Even Organic means less than you might assume: it requires animals get organic-certified feed and prohibits antibiotics, but specifies little about how the animals are raised. A few certifications that do indicate high welfare standards are the Global Animal Partnership (GAP) levels 4 and 5, Certified Humane, and Animal Welfare Approved (AWA). By Brad Hedeman That may seem like a crazy question, but there are a few ways to answer it. Obviously milk is from the mammary glands of mammals, making cheese an animal product... but the animals who make the milk are vegetarians (besides the wayward goat here and there). What folks really mean when they ask this question is: “is the rennet used to make this cheese vegetarian?” Rennet is the first step in cheesemaking. It’s added to heated milk and separates the solids (curd) from the liquid (whey). But that’s a very simple definition. For all you food science fans out there, get ready to get geeked! Rennet is a blend of enzymes (mainly chymosin and pepsin) extracted from the fourth stomach cavity of young ruminant animals such as calves, kids, and lambs. The technical definition of the term “rennet” is restricted to enzymes that are derived from the stomachs of mammals, so all cheeses made with true rennet are not vegetarian. But in common usage, the term “rennet” includes milk-coagulating enzymes that come from plant sources, too. We consider those “rennets” vegetarian. Plant-derived rennets are enzymes harvested from plants that can coagulate the milk and serve the same purpose in cheesemaking as animal-derived rennet. Folks commonly refer to this type as “thistle rennet.” The two most common sources are the cardoon and the globe artichoke, but fig leaves and sap, nettles, safflow-

er, and other plants can be used and earn the label 100% vegetarian rennet. On our shelves, cheeses made with vegetarian rennets include Mt. Tam (below) and Cabot Zingerman’s Cheddar (online). But the question doesn’t end there. Rennets can also come from microbial sources such as molds and genetically modified organisms like yeasts. As a matter of fact, the two main sources of rennet worldwide are produced either by one of the most common molds, Aspergillus niger, or by the yeast Kluyveromyces lactis. While no animal source is used to make these rennets, their genetic makeup resembles something that originated with animals. So not 100% vegetarian, but not really animal. The most traditional cheesemakers use true animal rennet because that’s the way it’s always been. That’s the case for cheeses like Essex Street Manchego (online). But nearly all newer cheesemakers prefer to use the microbial-derived rennets because they’re cheaper, they’re more consistent and they get more bang for their buck. into more foods than I can count. I saw it listed recently on a loaf of bread! It’s been blamed for obesity, diabetes, and so on.

Sometimes I feel sorry for it. It’s been the subject of exposés putting it at the center of America’s industrial food problems, including obesity and diabetes. In Michael Pollan’s (highly recommended) Omnivore’s Dilemma and the movie it inspired, King Corn, it’s nearly criminal.

Corn syrup has another side, though. It has been a part of American culinary history since at least around the time of the Civil War. It’s been used in moderate amounts in all kinds of dishes. Most important to us, candy makers have long used the special properties of corn syrup to control sugar crystallization. If you want to keep a candy soft and gooey, corn syrup is great. For example, while cane sugar and dairy give a caramel its flavor, its corn syrup that creates the texture.

Corn-derived products have also felt the bad rap, in particular corn syrup. Does it deserve it? Like most stories, there’s some truth to it. But, like in a lot of debates, things are never quite as black and white as they seem. Corn has benefitted from a raft of agricultural subsidies and barriers. Some encouraging its production, others that have restricted trade on substitutes, most importantly cane sugar. The limits on importing cane sugar raised its price to the point where it made economic sense to have mass alternatives. One alternative is sugar made from beets. Another is corn syrup. The corn syrup most of us know by name is high fructose corn syrup. It’s made in factories on a massive scale. Most aspects of industrial corn syrup—from growing to refining—are fossil fuel intensive. And it’s found its way

It’s rare to find an artisan version of Britain’s most famous vinegar. Most malt vinegars are made by big producers more interested in speed than quality. Sadly, they have come to define the category. Until today. The slow, flavorful way of production is what they do at The Old Nuclear Bunker in Cornwall, England (gotta love British names). Hot water added to crushed barley activates enzymes that convert the starch in the grain to sugar. Yeast converts the sugar to low grade alcohol, which is then loaded in oak barrels to age out and mellow for months on end. Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. Kimberly started making vinegars by the Orleans method back in the 70s and they haven’t changed a thing. In a nutshell, the Orleans method mixes fresh wine with older vinegars. The ‘mother’ vinegar teaches the bacteria present in the air and wine to convert the alcohol into acetic acid, turning the wine into vinegar. Kimberly sources Pinot Noir grapes to create this champagne vinegar. It’s light on the tongue, not very sharp (thanks to a lower acidity), bright and fruity. It’s not too often you see the French taking a page from the Italians when it comes to cuisine, but they did just that in crafting this intense, complex vinegar. It’s made from the same grapes (Trebbiano) balsamic vinegar makers use in Modena, Italy. Just like the Italians, they reduce the fresh pressed juice in copper kettles, then age the concentrated juice in oak barrels formerly used to age Cognac, which gives it a French twist. Like its Italian cousin, this vinegar is smooth, complex, a little sweet with a finish that seems to linger for hours. Balsamic Vinegars from La Vecchia Dispensa Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. To be honest, the jar caught my eye first. A wax seal drips from the top looking like chocolate that leaked out of the vat. Usually when I see clever packaging like this I’m suspect. It often overshadows the food. To my surprise the hot fudge inside was good. Not just good, pretty great. Sporting just six ingredients, all of which I promise you’ll recognize, Marc Cooper’s hot fudge is milky and chocolaty without being overly sweet. Cherries are (justifiably) one of Michigan’s most famous crops. The countryside is blanketed with orchards and many farmers grow sour—not sweet—cherries. The honey made famous by Van Morrison’s song, and in the film Ulee’s Gold starring Peter Fonda, is made exclusively in north Florida, along the swampy Apalachicola River basin. There, bees feed on the pale green flowers of the shrubby ogeechee tupelo tree. The honey is clear, its color deep gold, its texture silky smooth and pourable. The aroma is of flowers and caramel. The flavor is deceptively light at first—a hint of green apple—but grows to a crescendo of warmth at the back of the throat. P-ULE 9 oz jar $23

Jimmy Red is an heirloom varietal of corn. The name comes from James Island, South Carolina, where it was first grown, and from the deep red color of the kernels. Though growing Jimmy Red corn is more labor intensive than most corn on the market these days, the flavor is amplified about a hundred fold. After surviving the Japanese-American internment during World War II, Robin’s grandfather and his sons returned to their farm in California’s Central Valley and developed exceptionally delicious heirloom Kokuho Rose Rice. As Robin explains, “By contemporary standards, our rice is considered impractical to farm, given its long maturity and low yield... our stubborn commitment to our Kokuho Rose doesn’t make cents and dollars, but is an emotional legacy.”

Kokuho Rose has been cultivated by the Koda family for more than fifty years, since they first developed it on their California farm. The rice has Japanese origins, and this short-grain, white colored rice is a great choice for sushi. The flavor is delicate, lightly sweet. But what I love about it is the texture.
