Cheddar, as Monty Python reminded us, is the single most popular cheese in the world. Once it was a single type of cheese, made in one place: a bandaged cheese wrapped in cheese cloth, with curd cut in a way that became known as “cheddaring,” produced on farms in Somerset, England. One such cheese still exists: Montgomery’s—coincidentally, we call it as Monty’s—made at Jamie Montgomery's farm in Somerset. Americans have found themselves with a fantastic mirror of the original, though, from Cabot and Jasper Hill in Vermont. I’m talking commercial bacon, grocery store bacon: bellies injected with water to add weight; curers, if you can call them that, who speed up the process with too many chemicals; excess sugar and salt to overcome a lack of flavor; liquid smoke! A dozen THings that make for beTter tasting baked goOds 1. Butter Tastes Better You can’t tell just from looking at a cookie or a piece of cake whether it’s been baked with butter or shortening. The bottom line on baked goods’ flavor is that butter tastes better. It’s also about ten times more costly, so more and more commercial bakeries are shifting towards less expensive shortenings or margarine. You can taste and smell the difference—the sweet, rich scent of butter is right up front in a Bostock, followed by almond and orange. Shortening, on the other hand, has no aroma to speak of. Good pastry should smell good.

2. Better Butter The Bakehouse doesn’t just use any butter. Many of our baked goods start with sweet butter from Grassland. Tastes better, with less water, and more flavor. There’s no way around it—the better the butter the better the baked goods.

Spanish line-caught tuna Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. We’ve been selling them for over a decade, and they have a legion of followers who return to them again and again. Their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. (You won’t see the age of the vinegar on the bottle because of some funny Italian laws, just the vinegar’s density.) Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. french mountain bread Farm Bread Hands down, this is my favorite bread and probably my favorite food period. It is my desert island food for sure. I love it for just eating, salami sandwiches, grilled cheese and breakfast toast with tons of butter and preserves. This bread is so good with a fried egg on it. I have always been a fan of our Better than San Francisco Sourdough Bread, but for a while I was hesitant to try our Chocolate Sourdough. Traditional Jewish rye bread is still an endangered American species. Though it’s been more than 20 years since we started baking them, you’ll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. In Spain, drinking chocolate is as common as drinking coffee. Just like we have coffeeshops, Spain has chocolaterías serving drinking chocolate and churros to dunk in it. Some of them are open 24 hours a day, just in case of 4 AM chocolate emergencies. Really good drinking chocolate is a far cry from the Swiss Miss many of us grew up on. It’s thick—in Spain, sometimes it’s so thick that instead of sipping it’s easier to eat it with a spoon, like pudding. It’s also not overly sweet—you should still be able to taste the bitter, roasted notes of chocolate.

A THOUSAND YEARS BEFORE IT CAUGHT ON IN SPAIN, DRINKING CHOCOLATE WAS ALL THE RAGE IN MEXICO. Cacao was first cultivated in the Yucatan peninsula by the Mayans around 500 AD. The beans were roasted, coarsely ground, and mixed with water, ground chiles, and toasted cornmeal (a thickener) to make a drink. One ingredient they did not include was any sort of sweetener. Instead of the hot chocolate we drink now, imagine a bitter, spicy, somewhat chunky drink, served at room temperature. Sounds good, huh? (Actually, it kind of does.) And it was popular. The Aztec royal court drank an estimated 2,000 pitchers of the stuff every day. And according to The Chocolate Connoisseur by Chloe Doutre-Roussel, when Aztec sacrifice victims were too glum to join in the dancing rituals before their death, the solution to cheer them up was to give them a gourd of chocolate. When Europeans first arrived in Central America, most of them weren’t too impressed with chocolate. Columbus brought the first cacao beans back to Spain, but mostly as a novelty. No one really knew what to do with them. It wasn’t until the middle of the 16th century that some total genius thought of adding cane sugar and serving the drink hot. Then chocolate really took off. But even then, both sugar and cacao were incredibly expensive so it was only a drink for the uber rich. Spanish nobles built their version of man caves in their villas: chocolate rooms where men of leisure spent hours conversing and drinking chocolate.

For a few decades, chocolate was a purely Spanish phenomenon. Then, in 1615, Anne of Austria, the daughter of the King of Spain, married King Louis XIII of France. She brought chocolate to Paris. It was a hit. In their very French way, the aristocracy didn’t build separate rooms just for their chocolate—they preferred to drink it in bed. That lasciviousness made chocolate controversial. One French cleric called chocolate the “damnable agent of necromancers and sorcerers.” (I guess that’s one way to call someone a good lover!) But it didn’t take too long for the church to come around. In 1662, a cardinal in Rome decreed drinking chocolate would not violate the fast for Lent. Amen.

CHOCOLATE WAS ONLY FOR DRINKING—NOT EATING—UNTIL THE 1800s. That’s when the first machines were invented for grinding cacao beans. Before the industrial revolution, all ground chocolate was made with a mortar and pestle—and a lot of elbow grease. The new machines helped to make chocolate a luxury of the masses, not just the aristocracy. Those new machines had another result, too: for the first time people were able to make solid chocolate. In 1847, the very first “eating” chocolate was made in England. Within a couple of years solid chocolates like bonbons and chocolate bars were taking off across Europe. Traditional Mexican Chocolate This Oaxacan chocolate is to Mexico what Valrhona is to France — carefully produced, distinct, a standard against which you can judge all others in its class. The texture is coarse, with little sugar crystals exploding in your mouth and a dark, subtle, cinnamon and smoke flavor. Although it comes as solid chunk and you can eat it that way, I think it’s best enjoyed made into Mexican hot chocolate. In a small sauce pan, bring either water or milk to a near boil. The connections behind Zingerman's 5-Star Black Pepper Blend by Ari Weinzweig In my book The Guide to Good Leading, I write about our definition of local food. It is less about geography and mostly about having a positive relationship with those from whom we buy, and to those we sell. Since black peppercorns don’t grow in Michigan, that means we buy it from someone with whom we can have a long-lasting connection and conversation. By switching over our pepper purchase, not only are we raising the quality of what we’re buying and improving the flavor of nearly all our food, but we now have begun a direct connection with the folks in India whose diligent work has made all this possible! That connection is named Sudheer. Sudheer has made it his life’s mission to master the pepper trade. His story started with his grandmother, who was a supervisor for a cardamom plantation. As a kid, he would visit his grandmother and wander between the rows of cardamom and pepper. Today he’s a spice sourcer in Kerala, down at the bottom of the Indian subcontinent along the west coast. It’s long been known as the “spice garden of India.” It’s also a beautiful region, one that draws many tourists each year. Unlike many agricultural products in the modern world, pepper in Kerala is grown still on a very small scale. “The small farmers here, they have one or two hectares,” Sudheer told me. Of equal importance, Sudheer has a direct relationship with each farmer. “We never buy through traders,” he told me. “Only directly from the farmer.”

There was the old the way the old time spice traders did it centuries ago. Back then spice trading was mostly about extracting as much from the producing regions in Asia and making as much money as possible in the process. That old model was, as many historians have described, mostly a violent and horrible way to work in which farmers and growers suffered and Europeans traders became wealthy. Sudheer’s approach is the opposite. To raise people up and share the wealth, rather than taking it all half-way around the world. It’s all about working with the farmers to help get them to grow higher quality, paying them more for it, and in the process, making the lives of everyone involved better. Since most people in the world know only “black pepper” as if it were a singular entity, Sudheer is determined to teach people the differences between one black pepper and the next. He explains, “My place is a wildlife sanctuary. “If you drive 30 or 40 kilometers from a farm,” Sudheer said, “the pepper will taste totally different.” Sudheer and Épices de Cru spent months testing different combinations before settling on three finalists which they brought us to taste. Because this paprika from the Hodi family in Szeged, one of the two regions in southern Hungary that’s particularly noted for paprika production, is overkill if you just want any ol’ paprika. The Hodis grow the peppers, harvest them when they’re at their peak of redness and ripeness, then dry them and grind them to powder using an old stone mill. Let’s call it what it is: this is a coarse mix of tiny silver fish and spicy red chiles. It comes to us by way of Calabria, the red pepper capital of Italy, where they’d spread it on toast rubbed with garlic, a few leaves of arugula, a splash of olive oil and a squeeze of lemon for a snack. If you’re someone who likes full-flavored fish and spicy heat it’s a knock-out, but to be honest, this is one of those foods I’m not sure anyone is ever going to care about except me. Not only is this a product you probably wouldn’t buy—if you were going to make marmalade this is one you’d never make. The finger lime, native to Australia, is about the length and shape of a pinky finger. The thin, green-black peel holds tiny pink pearls of fruit that spill out like caviar and taste more floral and less sour than any other lime you’re tried in your life. The Martelli family makes these pastas in the tiny Tuscan hilltop town of Lari. The Martellis do everything right that most commercial pasta makers do wrong. Commercial producers dry their pasta in a hot blast furnace in a matter of minutes. With Martelli, it happens in a warm room over two days. Purim is a quick little late-winter Jewish holiday that celebrates the defeat of Haman, a Persian leader who wanted all the Jews dead because their leader, Mordechai, wouldn’t bow to him.
