Finocchiona Salami from Nduja Artisans In Italian, fennel is finocchio, and in southern Italy finocchiona is a traditional salami seasoned with black pepper, wine, and plenty of fennel seeds. Over here in America, Tony Fiasche and his team at Nduja Artisans in Chicago are making a traditional finocchiona with a couple of upgrades. First, he starts with heritage Berkshire pork raised on family farms in southern Minnesota where the pigs never receive antibiotics, growth promotants or hormones. Next, in addition to fennel seed, Tony adds in a bit of fennel pollen, the fairy dust of the food world (p. 47). what happens when a pig eats acorns alL day? Ibérico de Bellota Chorizo and Bacon
Ibérico pigs are a heritage breed that roam free in the oak forests in southern Spain. In the autumn they gobble up acorns (called bellotas in Spanish) as quickly as they fall from the trees. They’ll eat up to twenty pounds of acorns per pig per day. The acorn diet creates incredible fat that melts in your mouth in a way that seems completely surreal. The most famous example of the meat is the incredible dry-aged Ibérico de bellota ham, but that’s not the only way to experience it. You can seriously up your snack game with Ibérico de bellota chorizo, Spain’s mildly spicy paprika-spiked salami. The Boldog pepper is a mild chile pepper from Hungary, where they dry ‘em and grind them up to make paprika to flavor everything from bread to soups to cured meats. Here in the US, Minneapolis-based master meat curers at Red Table Meat Co. found a local farmer growing Boldog peppers and used it to flavor their new Boldog salami. The salami’s texture is soft and silky, with large pockets of white fat that melt on your tongue. The pepper flavor is incredibly bright, sweet, almost juicy like a bell pepper. ROOM TO ROAM There are a lot of things that contribute to determining if an animal was treated humanely. But the biggest impact comes from giving an animal enough space—and so much the better if the space is outdoors, with fresh air and sunshine and grassy pastures. It takes more land, more labor, and more time, and that means it costs more. But it also makes for better tasting meat.

HERITAGE BREED FLAVOR A Red Delicious apple tastes different than a Granny Smith. But what about Berkshire and Ibérico pork? Just like with apples, different breeds of meat have different flavors. Today practically all meat on the market is a modern breed that was developed to convert feed to meat as efficiently as possible to the detriment of everything else, like hardiness, temper, and even flavor. But a few farmers out there are still raising traditional heritage breeds. Heritage breeds take more time and more care, but they have incredible depth of flavor.

Can I tell you a secret? Promise you won’t tell my boss. Here it is... I don’t like pecans. I know, I know, at a company that’s wild for Spiced Pecans (p. 50) and gaga for Pecan Pie (p. 19), I’m really not supposed to say that. But here’s the thing. Even though I don’t like pecans, I totally love the pecan sorghum butter from Blackberry Farm in Tennessee. From the largest, least populated, highest elevation Canton in Switzerland. The land is so remote and treacherous that the cheesemakers built their milking parlor high up the mountain where the cows graze in the summer. Instead of bringing the cows down the mountain, they’re milked up near the summer pasture and the milk travels through an underground pipe, down the mountain, into the cheesemaking vat in the village below. The cows' summer milk is more flavorful because they’re eating wild herbs, grasses and flowers. The result is a nutty, slightly sweet, rich and just a tad herbaceous example of great mountain cheese. Traditionally, raclette is a Swiss cheese made with cow’s milk and served melty and gooey with bread. This lovely edition is made from sheep’s milk, which adds a bright complexity to the smooth, rich, slightly nutty flavor. Using the milk of Basco-Bernaise sheep from two local farmers around the town of Val de Bagnes in the Swiss Alps, cheesemakers Yan Sutterlin and Bertrand Gabioud create wheels of raclette in their dairy and age the wheels for about four months in their cheese caves. PURIM
Purim is quick little late-winter Jewish holiday that celebrates the defeat of Haman, a Persian leader who wanted all the Jews dead because their leader, Mordechai, wouldn’t bow to him. But Esther, who married the Persian King, convinced the king to kill Haman and make Mordechai the second in command of the kingdom. Haman wore a three cornered hat, and the traditional pastry for Purim, hamentaschen, is made to look like it. Kids like the holiday because they get to play with noisemakers (groggers). They make a racket whenever Haman’s name is mentioned, which is best done while eating a delicious pastry like cream cheese filled Hamentaschen. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

Fine Fishes
electric Eels from Portugal
It’s tough to get people to warm up to eels. Eels the animal, a sea snake of sorts, is not the most appetizing idea. But if you’re a fan of tinned seafood I urge you to try some. There’s a reason the Portuguse, Italians, and Spanish seafood lovers go gaga for them. The firm flesh is rich and utterly delicious. We have them two ways. The first is lightly smoked and tinned in olive oil. Milder than mackerel or sardines, they have a texture that reminds me of salmon crossed with sea bass and a smoky flavor that I think of as the bacon of the sea. Next up is in escabeche, a vinegar sauce that was used to preserve fish before canning was invented. The escabeche gives a tangy, sweet-and-sour flavor to the eel. Portuguese Tinned Squid I love this squid because it’s unusual. People usually think of squid as being chewy or rubbery as a result of having had cheap calamari. This is the opposite of that: it’s soft, succulent. The flavor isn’t super fishy. It’s savory but subtle, and the whole tin is really balanced and basically perfect. The three or four squids, stuffed with their own tentacles so they look like little seafood sausages, come in a ragout of oil, tomatoes, peppers and spices. Even that oil is worth saving—I like to rip off chunks of bread to dip in it, after pulling out the little squids and eating them whole, straight from the can. The fishermen for Island Trollers have been line-catching albacore tuna in the northern Pacific for nearly fifty years. The tuna is smoked over red alder then cooked in its own juices. Ventresca tuna is probably the richest, most sensual bit of fish you’ll ever take out of a tin. It’s made from the belly (toro in Japanese, ventresca in Spanish), which means it’s incredibly smooth, almost velvety in texture. The bonito—or albacore, as it’s commonly known in America—is silky and intense. Yellowfin tuna fish have flesh that’s fattier than bonito and the belly cut is correspondingly richer. These are tins for a special occasion—use one where the texture and taste can show off. Serve alongside a couple of steamed potatoes with olives, anchovies and roasted peppers. Or rest some on a bed of greens, simply dressed with oil and lemon or on some crostini with a bit of oil and maybe a piquillo pepper. It seems a little odd that the seafood-loving residents of Spain and Portugal love salt cod so much. In fact, the closer to the water they live, the more salt cod they seem to eat. These people, who have access to the best fresh seafood in the world, on any given night you’ll find them cooking slabs of preserved salted fish. It stymied me until I married into a Portuguese family and started eating more salt cod. Then I realized that salted cured fish has about as much in common with fresh fish as cured ham does with a fresh pork chop. They're two completely different things. People who raise pigs like fresh pork and they like salted cured pork like ham. Why wouldn't the same be true for people who fish? The salt curing and cooking—which, here, happens as a slow confit in olive oil—creates a cod fillet that’s almost creamy. It may seem counterintuitive but salt cod is one of the most luxurious fishes you can eat. That's the main reason Iberians spend hours—and I mean hours—soaking and cooking it. A LOOK AT TWO ICONOCLASTIC JUSTIN RASHID OF AMERICAN SPOON Justin Rashid grew up in northern Michigan and moved to New York in the 70s but he never forgot his roots—or maybe I should say his fruits. “I remembered the amazing fruits being grown in northern Michigan, but they never got any attention.” In June of 1982 (the same year Zingerman’s started), Justin moved back to Petoskey, Michigan and started making preserves that celebrated the specific flavor of the varities of fruits being grown near the shore of Lake Michigan. Fruit varieties like Early Glow strawberries and Red Haven peaches thrive in the hilly, lakeside climate. Success followed, as did the pressure to get big and distribute across the country. Justin resisted. Staying small insured the type of control and care he needed to make sure each jar of his preserves was filled with as much fruit as possible, from the farms he knew, with the flavors that he knew he could capture. “I’m a capitalist,” Justin said, “but the typical model of taking value out of a product, making it cheaper and giving the customer a subpar product to maximize profits was never my style. We’ve found a way around that model through great commitment, great effort and a love for what you do. That’s a business model I can live with.”

AMERICAN JAM MAKERS ROBERT LAMBERT Robert’s love for preserving started as a child on his grandmother’s farm in Wisconsin. “The food was fantastic. Fruits and vegetables always fresh from the garden or meats from relatives, and preserving those things was a big part of the experience.” Like Justin from American Spoon, Robert left the Midwest to find his way in a big city. Los Angeles called and Robert made his way as a performance artist, photographer, food stylist, caterer, and cookbook author. He returned to his grandmother’s farm every summer to help with the harvest and preserving. Eventually Robert left L.A. and settled in northern California. He was surrounded by fresh fruit and farmer’s markets and it all felt familiar, like being back in Wisconsin except with better weather. He set off creating preserves and marmalades that showcased the rare fruits of the region, working closely with farmer, picking the fruit himself whenever necessary. After nearly twenty years in the jam business, Robert’s operation remains a one-man show. His recipes are never simple, but they amplify the fruits' flavors to profound effect. The Martelli family makes these pastas in the tiny Tuscan town of Lari. Only Martelli family members create the pasta. The Martellis do everything right that most commercial pasta makers do wrong. They insist on using only the hardest durum wheat flour, extrude their pasta through traditional bronze dies, which makes the pasta grip the sauce, and take their time drying the pasta. Commercial producers dry their pasta in a hot blast furnace in a matter of minutes. With Martelli, it happens in a warm room over two days. Time is the key, since the slow dry makes the texture more chewy and the flavor more intense, the taste more like bread than raw wheat. I’d never heard of garum colatura until I visited the Italian coast south of Naples. There I discovered it’s the liquid that drips off the chestnut barrels of traditionally cured anchovies. Made much the same way it was 2,000 years ago, it’s used as a quick way to give great anchovy flavor to a dish without having to fillet, soak and chop the fish. The anchovies Ortiz cures for us are fished in April with traditional purse seine nets that skim silver-skinned anchovies from the surface. This old way of fishing has two effects. It keeps the sea healthier by leaving unneeded fish from the catch, and it bruises fewer fish because hauls are lighter than with drop nets. Once caught, the anchovies are cleaned, salted, stored for 6 months—a little shorter than usual, so they remain plump— then filleted and packed in olive oil to order, all by hand. It’s been done pretty much the same way for over a hundred years. There are anchovies you buy as an ingredient. There are anchovies you buy to chop up and mix into a dish. These are the crème de la crème of ready-to-eat anchovies, the ones you want to eat on their own, whole. Toast, pasta, pizza, sandwiches, or salads, you name it, these are great on top of it. Lay them out on fresh mozzarella and roasted peppers or alongside some quick-grilled mushrooms. Or do like the Basque do at pinxos tapas bars, skewer a fish with a Piparra pepper (online). Spanish Piquillo pimientos are to peppers what Parmigiano-Reggiano is to cheese: the undisputed sovereign. However, buyer beware: there are many versions sold these days and almost all of them are packed with peppers roasted on gas grills, not wood fired grills. There’s a huge difference in flavor. In the same way that home barbecue tastes better when it’s done with wood, roasted piquillos improve when they get a dose of smoke. Gas-roasted peppers are fine. But wood-roasted peppers are magnificent, the beech wood smoke imparts umami richness and amplifies the flavor. Wood-fire roasted piquillo pimientos are always more expensive since wood roasting is a finicky process, but the return on flavor you get with your extra dollar is extraordinary. They also happen to be gorgeous, which makes them excellent for entertaining. Americans enjoy asparagus most when it’s green and skinny. Europeans like it that way too, but they go gaga for asparagus that’s snow white and thick as a thumb. It’s tender and mild, the green-grass flavor you’re used to is absent. In its place there’s a fine floral aroma. Subtle and delicate, with a texture as soft as squash, white asparagus is often served steamed, topped with Hollandaise sauce or vinaigrette. White asparagus’s season is diabolically short and it doesn’t travel well—two conditions that have historically conspired to keep it for locals only. There is a canning tradition though. One of the best sources we’ve found for tinned white asparagus is in Spain’s Navarre valley. Each tin makes a side dish for two or three people. Octopus is a tricky fish to tin. I’ve probably tasted octopus from twenty different companies. Red Haven Peach Preserves When I was a child we would drive to California to visit my grandparents each summer. While on their ranch in the Central Valley we would eat peaches from the tree in their yard. We ate them outside at the picnic table and the juices would run down our arms. Peach season is so short and they don’t travel well so I hadn’t had a really good peach for a long time. The first time I had American Spoon’s Red Haven peach preserves I was transported to those summer days of my childhood. We have a limited supply of Dorset legs of lamb from Pine Hill Farms, a collection of small farms in upstate New York that raise lambs on pasture without any hormones or antibiotics. Dorsets are a heritage breed known for a flavor that’s not overly gamy. These legs are sweet and tender with delicious mineral tang but no tallowy aftertaste. They ship frozen with the bone in but the shank cut off, making them about the size of a bowling ball. Serve it with mint jelly from Ballymaloe in Ireland, which tastes like fresh garden mint.
