e will spend a half day with the Martellis, a family which is passionate about maintaining the hand-crafted tradition of making pasta. This will be followed by a Master Class conducted by Dario Cecchini, one of the most celebrated butchers in the world. There will then be a sweet finale at Amedei, where the chocolate makers will reveal the secrets of the cocoa bean and its delicious products. The wines accompanying this gastronomic trip will be from Castello d'Albola in Chianti Classico and Rocca di Montemassi in the Maremma, which we will also visit.

Lari
PRIMO “Pasta” from Pastificio Famiglia Martelli paghetti, Fusilli, Penne Classiche, Spaghettini and Maccheroni di Toscana are hand-crafted exclusively by members of the Martelli family. Their pasta is made by slowly kneading the best durum-wheats with cold water. The bronze-drawing gives the pasta a rough texture. It is then dried at a “low traditional temperature” for about 50 hours, depending on the weather. The result is a tasty and porous pasta which allows any sauce to be better absorbed.

Since 1926 the Martelli family has produced, with great passion and supervising every stage of the process in person, one of the most famous durum wheat pastas in Italy.
Radda in Chianti
VINO “Chianti Classico” from Castello d'Albola nce owned by some of Tuscany’s most noble families, from the Acciaioli and the Samminiati to the Pazzi and the Ginori Conti, this estate has been one of the Zonin family’s proudest possessions for over 30 years. Gianni Zonin’s first task was to ensure that the vineyards would produce top-quality grapes, and then to restore the outbuildings and the beautiful villa that had been built in the 16th century but maintained in its two massive towers the traces of the original medieval castle.

Panzano in Chianti
SECONDO “Carne” with Dario Cecchini ario Cecchini is an artisan butcher whose family has practiced this craft for eight generations in the village of Panzano in Chianti, where he was born. Following the example of his ancestors, Dario believes “an artisan must be like a tree, whose roots are firmly planted in the ground, but whose branches stretch towards the heavens; he must remain bound to tradition, but his head must be free to create with responsibility and common sense. A butcher represents an important link in the food chain. We have to kill for our food, so we must guarantee the animal a good life, a compassionate death and then use everything the animal has given in the best way possible”.

Montemassi
VINO from Rocca di Montemassi mong the many splendid areas of a Region whose history, culture, art and nature are virtually incomparable, and not just within Italy, the Maremma is situated in the south-west of Tuscany between the hills and the sea which gives it its name. Severe yet picturesque, with a wealth of contrasting landscapes and uncontaminated countryside, the Maremma and its history really do seem to be linked to water. Today the Maremma is experiencing an extraordinary period involving agriculture, viticulture, the rearing of livestock but also tourism of exceptional quality.

njoy an unforgettable trip, which transports you from the sun-drenched cocoa plantations to the delicious flavour and aroma of chocolate. Discover the path that chocolate takes from the cocoa bean to the realization of Amedei’s creations, and taste their chocolates and pralines. Cecilia Tessieri, owner and maître chocolatier, has sought out antique machinery that is able to process very slowly the precious beans that come from Amedei’s plantations.
