Mercado Central: Soul of the City If you are looking for the heart and soul of the city of Valencia, you could do worse than stroll down the C/ María Cristina and on to the Plaza del Mercat. Some cities are identified with their cathedrals or great churches. In Valencia’s case, it is two great secular temples to commerce, which stand on either side of this street, that represent the essence of what the city is. On one side, La Lonja de Seda, a masterpiece of late Gothic architecture reminding us of Valencia’s illustrious medieval past, and on the other, the Mercado Central in all its noisy Modernist glory. There has been a market on this site since Roman times and beyond. Farmers, fishermen and goat and cattle herders would gather here between two streams which wound around the ancient city. In Moorish Valencia, traders would set up stalls at this spot next to the Boatella gate in the Muslim city walls. The area was officially incorporated within the walls of the medieval city and over the centuries

became the recognised Market Square where bullfights were held, criminals were executed and witches were burned along with any number of other medieval ‘entertainments’. There was never a permanent market structure and traders would come in from the countryside and set up temporary tents and awnings to offer their produce to the populace, filling the streets with the smells, sounds and atmosphere of an eastern bazaar, as described in all its excitement and colour by Vicente Blasco Ibáñez in his novel “Arroz y Tartana”. The modern day Central Market was opened by King Alfonso XIII in January, 1928. It had cost an enormous 19 million pesetas to build. It was the key piece of a hugely ambitious programme of Modernist construction in late 19th and early 20th century Valencia, which included the Ensanche and the Gran Vía, the Post Office building, the Estación del Norte and the Mercado de Colón. All of this was pushed and financed by the new middle

classes flush with enormous profits from the export of rice and oranges. These people saw themselves as heirs to the great merchants of Valencia’s 15th century golden age and their construction would have to be every bit as magnificent as that period’s shrine to commerce, La Lonja, on the other side of the road. After an official tender, two prestigious Catalan architects, Alexandre Soler and Francesc Guàrdia, were chosen to lead the project with a remit to both instil the modernist ideal and mirror some of the details of La Lonja, incorporating iconic symbols of ancient and modern Valencia. The build wasn’t without its practical problems but the architects followed the more artistic design instructions almost to the letter, the results of which are still there for all to see today. The walls are decorated with traditional ceramic tiles along with typically Modernist trencadís mosaics of broken tile shards. glass windows showing the colours of the Valencia flag and arms of the city and the whole place is bursting with motifs of oranges and lemons and decorative stone, glass and iron work. The building sprawls out over 8,000 square metres forming a strange fourteensided polygon under a beautifully decorated domed roof, which at its highest point is 30 metres up above the market floor. To one side is the fish market, all metal and white stone slabs, which is being renovated at the moment, and there are two strangely Austrian chalet- looking, Gothic-style houses built on at each side which used to house the local government offices. The present day market is the pulse and lifeblood of the surrounding area and spills out through each of its doors into the tapas bars and temporary stalls on the Plaza del Mercado and out to the recently restored, multi-coloured houses on C/ Palafox. Inside you’ll find a mayhem of stallholders’ calls and the general cacophony of a lively bustling market with alleyways of food stalls of every type. Many great city markets have long moved away from their original purpose and ended up like museums to their own former glory, becoming a place of souvenir gift shops and designer boutiques and restaurants or merely an outlet for expensive gourmet food. The Central Market has always had its share

of gourmet stalls, and it is certainly not as cheap and cheerful as you might want, but it is still essentially doing what it has been doing since time immemorial; serving fruits and vegs and the fruits of the Valencia coast to the people of the city. It is what you would expect from a market of its ilk, a loud, brash, and in-your-face friendly sort of place with largely local produce from small local businesses. You may find groups and coach parties of northern European or Japanese tourists (and some stalls even have signs in Japanese) but the vast majority of its customers live locally and are doing their daily or weekly shop just as they have done all their lives, often on first name terms with some of the stallholders. You’ll hear plenty of Valencian spoken. Valencia is proud of its market, Valencians will always tell you it’s the best and most authentic place to buy food in the city and how it’s the biggest covered food market in Europe (although often, when pushed, many of them seem to admit to only getting round to actually going there once or twice a year!). Its fish market is particularly worth a visit, with a huge variety of sea and river creatures of all shapes and sizes laid out on banks of crushed ice like some sort of dead aquarium which also has fish tanks of live eels and llisa (mullet) from the

Albufera lake. There are specialist stalls for herbs, spices, tea, cheeses, beers, bread, wild mushrooms, dates, the list goes on. Most of all, of course, there are stalls selling the typical products of the Valencia huerta (countryside) but you can also find stalls selling typical British or South American food and, in amongst all the artichokes, onions, oranges and green beans, there are also tamarinds and tree tomatoes. Housed in its identifiably Valencian Modernist palace, with its regional decoration, the Mercado Central is a typically Valencian, busy, bustling place which brings together the produce of three of the pillars of the city’s economy and culture; the huerta, the sea and the Albufera lake under one enormous roof. The Central Market encapsulates the soul of the city. It is testimony to the fact that the age-old practice of buying and selling fresh market produce is still very much part of day-to-day modern Valencian life and, if you want something special or a bit different or exotic along with your spuds, tomatoes, lettuce and pork chops, then this is the place to come.

I do my best, but… I don’t have hair on my chest and don’t know how to really talk extremely loud in bars, for example. This song will be a duet with a Spanish female singer whose name can’t be revealed yet.

RICK TREFFERS Tell us about your background, travels and experiences. I am a Dutch composer, singer, writer and music producer from Amsterdam, living in Valencia since September last year. With my band Mist (dream pop in English), I toured Argentina, Mexico, Chile and Europe for many years. In the 1990s, I lived in Madrid and Barcelona during one year teaching English. In 2007, I started to release music in Dutch and making music for film, documentaries and theatre. Apart from being a musician, I organize Live in the Living, a series of acoustic concerts at private homes of people in the Netherlands, Germany and Spain. Spain is like my second (or first!) home. I have been travelling a lot here and I got to know many people and places. I love it all, from Catalonia to Cabo de Gata, from Coruña to Cádiz. Now I am singing songs in Spanish, about Spain and the Spaniards. The album El Turista Optimista will be released after the summer. What is it you like about living in Valencia? If you really love somebody, you also have to understand and accept the dark or bizarre sides of this person. I have been loving Spain with all my heart for more than 20 years now. The whole country and its people have been giving me many warm feelings. But they have also made me laugh many times. Spain is different! Spanish people tend to be less organized than we Dutch. This can be a little inconvenient compared to “western efficiency”, but it also gives a lot of room to nice surprises. I think the Spanish are very generous in general and capable of enjoying their lives, even if they don’t have a penny. And they are able to laugh about themselves. I laugh about them, too. In my songs. With a lot of love, of course. Oh, and I just made a video clip for this song, which will be online next month.

The Spanish know how to improvise. The things they say are not always literally true. Saying plainly, “No” is not really polite and as it comes to business, one can’t just say directly what one wishes for. First, you have to gain confidence (go for lunch, dinner, chupitos, etc., etc…). Besides, the Spanish interpretation of time is quite different from the Dutch one. The Moorish influence, I guess. Interesting!

This was the first song I wrote for El Turista Optimista. The Dutch, in general, are quite schizophrenic. They love Mediterranean life (cheap tapas, eternal sunshine and the warm human touch), but at the same time they despise the Greek, Portuguese and Spanish for being lazy and corrupt. Meanwhile, they are having a good time at the Mediterranean coast and don’t know the difference between a Spanish and a Mexican tortilla!

El Turista Optimista

Many plans, like always. But let me try to enjoy the day first, please.

Spanish is not a difficult language, but can be tricky sometimes. When I told my first Spanish lover that I was hot (“Estoy caliente!”), she smacked me in the face before she left me. This is one of the language mistakes I will never forget. It also struck me that a ‘sauna’ in Spain is mainly a meeting place for men looking for sex with other men. In the Netherlands, everybody goes to the sauna. No sex allowed. In the end, everything solves

Las Palabrotas In Spain, there’s a lot of inventive cursing, mainly using God, whores, mothers and shit. In the Netherlands, we mainly use terrible diseases to curse somebody. That’s what “Las Palabrotas” is about. I am recording it in a Burt Bacharach style. Gentle cursing...

FOOD FOR THE SPRING SUN By Helen Westwater La Ola Fresca If not already.... around about now, those well-hidden parts of the body, long concealed in winter robes, are about to appear, possibly freshly defoliated and blinking like newborns on centre stage. Malvarrosa Beach will return to the happy cocktail of nationalities, fighting for their square inch of sand to soak up those rays. So this month we munch the crunch, getting down to the epidermis with melanin-producing foods to boost protection for all skin complexions. Those magical, glow-inducing foods are those rich in Vitamin A and carotene, including sweet potatoes, pumpkins, red peppers, beetroot, most fruits and leafy vegetables and, of course, that most carotene vegetable of all, carrots. Springing fresh from the soil, carrots have a sweetness and if not over-boiled, a texture second to none. So for this popular Portuguese bar snack, you barely have to do anything at all. Peel (or just scrub if home grown/organic and freshly picked), boil or steam for about 3 minutes, drain and dry, then chop into sizable chunks and dress with olive oil, finely chopped garlic, a teaspoon of cumin and a squeeze of lemon with a handful of chopped parsley or coriander. Place on cocktail sticks. Chill and serve. Alternatively and equally tasty, you can puree the carrots with the above ingredients and serve as a dip. However, the most satisfying way to get our carotene injection is to get down to business with this most 'moreish' carrot cake, adapted from a recipe by Harry Eastwood in her amazing book temptingly titled, “Red Velvet Chocolate Heartache”. And yet with rice flour and not much fat, it is not so naughty! Preheat the oven to 160C / 325F / gas mark 3 and grease the tins.

Carrot Cake Ingredients (serves 12) • 280 gm finely grated peeled carrots • 1 orange (juiced) • 150 gm sultanas • 80 gm ground almonds (if you can’t find ground, grind raw almonds in a blender) • 3 medium free-range eggs (huevos de gallinas camperas) • 160 gm light Muscovado sugar (or if not, 60 gm brown Demerara and 100 gm white blended together) • 150 gm rice flour (harina de arroz) • 2 tsp cinnamon • 2 tsp baking powder • 1 tsp vanilla extract • 1/4 tsp salt • For the filling: • 35 gm unsalted butter, cold and cubed • 200 gm icing sugar (added in 2 parts) • 2 tsp freshly squeezed lime juice • 35 gm cream cheese • Finely grated zest of 1/2 lime • For the topping: • 100 gm icing sugar • Zest of lime • Lime juice (drops to mix to a paste) • 2 18 cm-diameter x 5 cm-deep loosebottomed tins

Squeeze the orange and pour the juice into a bowl with the sultanas to soak.

Divide the mixture evenly between the two tins. Place them in the middle of the oven for approximately 45 minutes to 1 hour. When the cakes are ready, turn them out to cool on a wire tray. Make the cream cheese icing by whisking the butter for a minute until softened. Then add 100 gm of the icing sugar and whisk till it resembles fine breadcrumbs. Add the lime juice and whisk again to a paste. Next add the cream cheese and zest of lime with the remaining icing sugar. Beat by hand with a wooden spoon to combine. Refrigerate for 15 minutes. Meanwhile, make the topping. Grate the lime zest, then whisk the icing sugar with drops of lime juice and a little hot water to make a paste. I like to make it just runny enough so that it runs down the sides of the cake. Stir in the lime zest. To assemble your masterpiece, fill the centre of the cake with the icing and then spread the lime icing over the top. This is no delicate item; the end result should stand proud like an Ocean Liner, ruler of the seas. It begs to be eaten! Enjoy and enjoy the sunshine!

RESTAURANT OF THE MONTH

EL PONY PISADOR When I was at secondary school, in my second and third year, my family lived in the country and I would travel to school most days of the week by Southdown double-decker bus. After school on Wednesday afternoons each week, it was always off to tea at the Millands. My parents were friends with them and the Millands wanted their son and me to be friends. I loathed going there, I never understood why my parents were friends with them, I did not like playing chess (which we had to play each week), I detested Mr. Kipling's chocolate cupcakes and I really didn't get on with Maurice, their son, who was obsessional about chess and the Lord of the Rings. It was thanks to Maurice that I never got to know the works of Tolkien. I developed a loathing for anything Hobbit until the film cycle came along, and even then I could only bring myself to see one of the films. I still won't read the Tolkien books, though! So when I was told this month's restaurant for review was El Pony Pisador, I had no idea why on earth anyone would name a restaurant 'The Prancing Pony'! Any Tolkien Middle Earth lover will tell you, of course, that it is the name of the inn at the heart of the small village of Bree in the imaginary universe of Lord of the Rings, and is the main refuge for travellers who follow the roads that cross Eriador north to south and east to west. It was a beautiful afternoon in the city, sunny and warm, so we were hoping to eat on the terraza when we arrive, but as so often happens at this time of the year, the temperature dropped and we opted to eat inside. It's a warm and comfortable

room, all scrubbed timber beams and woodwork, with bistro style seating and a view into the kitchen behind the bar and a few steps down from ground level. Fran and Lolli, a lovely couple, run this restaurant with a passion, not just for Tolkien, but for good food, too. There is a smattering of Tolkien memorabilia around the restaurant and Lolli explains the name and its connections as you sit down. She gave us the wine list and we chose, as always when we can, a Baldíos Crianza 08, Ribero del Duero, which at 14€ a bottle is a snip, and very good, too! We left it to Lolli and Fran to choose what we ate, surprise doubles the pleasure of a good meal. El Pony Pisador is just a short walk away from the wonderful Mercado Central, so the menu changes with what's fresh and good that day, as we were to find out. Croquetas de jamón Ibérico were first up, perfectly made and cooked, they were served with a plate of herby tostadas (little toasts) and olive oil. This was followed by a large leafy salad, which also contained carrots, tomatoes, griddled pineapple, pipas (pumpkin or melon seeds), sultanas and croutons, tossed in a sweet and original reduction of mistela wine and fresh herb dressing. Artichokes and chipirones followed. The artichokes, served on a pillow of puréed potatoes, were little hearts, lightly fried, a little bit of heaven on a plate! The chipirones (baby squid) were griddled with a sprinkling of smoky pimentón (paprika) and oozed with their own creamy juices – quite often removed in some establishments, but really delicious. At this point we were having our second chat of the evening to Fran and his wife, about his upbringing in the north of Spain,

his couple of years in London and his passion for cooking. We were really quite full by now and decided to move to dessert. We finished with a homemade strawberry cheesecake and a chocolate mousse, light and a perfect end to an excellent meal. Fran and Lolli deserve to succeed with this new venture. El Pony Pisador is a little hard to find, tucked as it is in a tiny, almost traffic-less side street near C/ Corretgeria and Plaza Santa Catalina (blink and you'll miss the street!), but very well worth it when you do. There are tables on the terraza where I, for one, would be very happy to take a well-priced drink and a tapa or, indeed, a whole meal. The dining room is available for groups and would be a lovely setting for a party. Fran and Lolli are happy to offer special menus for larger groups. LA PINÇA Boutique-Gastronòmica After a hectic week working away in Brussels, Belgium as an interpreter at a Seafood Expo (top mussels, great jazz, miserable rain), this member of the 24/7 Valencia team was looking forward to unwinding back home in sunny Valencia, Spain. On a dusky Friday evening, it was time to revisit La Pinça BoutiqueGastronòmica. The name of the café-bar is clothes peg in Valenciano / Catalan. Just a stone’s throw from Ruzafa’s colourfully painted market, La Pinça is also pleasant on the eyes. A fashionable female mannequin greets you at the entrance, which is a quirky touch and enticing, too. The interior is an attractive mishmash of lightly painted walls, varied furniture including a comfy sofa, paintings by local artists and objects like retro record players and typewriters from a bygone age. There’s an impressive boutique rack of trendy clothes for sale by Taller Pollesel, Mrs. Sheriff and Cuatrocotillas as well as established designers from Madrid (Kling) and Murcia (Titis). Local designers, take note that they are open to your proposals for selling your products here... La Pinça is run by David and María, a talented and friendly couple who started this place in December, 2010. The former was involved in sound and image in the telecommunications world and the latter was a restorer of paintings and museums (including a palace of the Borgias in Gandía!). Valenciano / Catalan is their first language and they speak Spanish and a little English, too. In terms of authenticity, this Article © 2012 24/7 Valencia

is a genuine Valencia chill out café-bar. The menú is in Valenciano / Catalan, too, and they are happy to help you order. ‘Plats’ are dishes including ham & cheese choices, ‘Torrades’ are tostas, ‘Amanides’ are salads and ‘Per Picar’ are for nibbles…

We kicked off the night with a VIPA (Valencia Indian Pale Ale), a strong, 6.1% artisanal beer with a smooth taste. They also have a blond Mahou (available on tap, too, for dobles and cañas), Mahon Negra (black beer), Alhambra, Coronita and Franziskaner.

This café-bar is representative of the artistic and open-minded Ruzafa barrio that has become talked about nationally in recent years. Indeed, hip musicians like Soledad Vélez and Tortel have done their media interviews here with La Pinça as the backdrop, which is a compliment to the surroundings. Every time we have hung out, there has been a strong arty contingent and this café-bar is especially popular with women. As the evening drew on, there appeared a healthy cross-mixture of ages and genders, long-term locals and arts students. By the end of the evening we could hear plenty of Spanish, a little German and some English being spoken and the clientele ranged from people in their 20s to 60-somethings. The bluesy-jazz 1940s / ‘50s soundtrack was cool and unobtrusive to conversation. Louis Jordan’s jump blues really works well here.

For a starter we had a lovely, fresh hummus with breadsticks, topped with a pimento de la vera (a secret recipe from Extremadura). For our main course we went for their recommended couscous, with a tasty mixture of couscous, topped cherry tomatoes, raisins and apple bits. It was a generous portion, too!

There is an atmospheric outside terrace at the back of the café-bar, which is popular with smokers and groups, too. It’s a favourite spot for those who like a bit more intimacy and for grupos, too. Indeed, the bar is popular with different groups for regular meet ups and talks…

The wine list is limited but interesting, their table wine is Fun (100% ecological wine from Valencia) as well as Vizcarra Senda del Oro, a Ribera del Duero, Vall Major, both Garnatxa (Grenache) and Syrah and more. This is a real slice of Ruzafa... Owl

We skipped dessert and had a refreshing roiboos (red bush tea) to digest .Their choice of teas include té rojo (red tea), té negro (black tea), té verde (green tea), té de frutas del bosque (fruits of the forest tea) and té Chai, too. Their infusions include poleo (pennyroyal/ mint), manzanilla (chamomile) and tomillo (thyme)! Their teas and tomillo are natural. Of course, they do good coffees too. There are a collection of news, fashion and architecture magazines to browse and enjoy with your café, as well as board games.

Roll on next season! What a relief that this season has effectively come to an end for Valencia Club de Fútbol. After an amazing start to the season the team has limped over the finishing line securing the cherished third place ensuring automatic Champions League football and its guaranteed income. After a disastrous run of form in 2012, the chés allowed the teams below them to close the gap that their brilliant start to the season had created. The manager is leaving after achieving what he set out to do, finishing third each year and competing in the Champions League, but this being Valencia that wasn’t enough.

The problem with the team this year has been consistency, after turning in a great performance against league champions Real Madrid when they held the merengues to a 0-0 draw, the team went on to beat Rayo Vallecano 4-1 thanks to goals from Jonás, Jordi Alba and Pablo Hernández, but the result flattered the home team’s performance. They were found out the week after when they travelled to Espanyol for a morning kick off, the pericos scored four goals before I’d even finished my cornflakes and Valencia’s frailties were all too clear to see.

The chés had now to concentrate on the league where their next opponents were the nouveau riche Málaga who were fighting for the third place so coveted by teams with an eye on next season’s Champions League.

Yet another abject performance allowed Málaga to take all three points. The only Valencia player who turned in a decent performance was the goalkeeper Guaita, the result meant that los boquerones were now equal on points with Valencia and the Champions League place was in peril. Their next opponent was Osasuna who put in a brave performance for three quarters of the game until they fell away with fifteen minutes to go and conceded four late goals, which made an average Valencia effort seem so much better.

Soldado

A positive result against neighbours Villarreal would ensure third place and that is precisely what they achieved thanks to a late goal from Jonas. A 1-0 victory that meant that Emery had achieved what he set out to do in assuring Champions League football for 2012-2013. After the game he said that this had been his best season in Valencia. Many would disagree, the question being who will replace him next season? The answer is Pellegrino..the former VCF defender! Player wise, Valencia have lined up Mexican Andrés Guardado and have finally sealed the signing of Jonathan Viera from Las Palmas. Rumours abound that either Aduriz or Soldado will leave the club, wise money being on Aduriz but this being Valencia Club de Fútbol, who knows what the future holds? Mark Hulton

Judgement Day (Thursday at noon) The oldest surviving document in the Archives of the Kingdom of Valencia is not written in Spanish or Valencian. It is written in Arabic. This comes as no surprise considering that the Moors spent seven centuries in Spain, whereas the Christians have only occupied it all for five so far. Admittedly, it is in Andalusia where the Moors spent most of their time, making Córdoba the capital of the cultivated world and leaving behind their unmistakable architectural influence and gems. Yet the aforementioned document is perhaps an example of one of the most remarkable legacies that the Moors have left humanity. At first sight the parchment may appear to refer to a trivial matter, yet its impressive, far-reaching legal ramifications have lasted through the centuries and can still be seen today in Valencia’s Plaza de la Virgen every Thursday at noon. The document was drawn up in response to a dispute over water rights that had lasted for twenty years; a matter that has increasing importance in these modern times of growing water scarcity. Much of the irrigation network one sees in the Valencia region today still follows the layout the Moors laid down, and most probably that of the Romans before them. But what is perhaps most surprising is that the judicial system laid down to control it over a thousand years ago has also still survived through such huge cultural changes and wars and is still valid today. Perhaps we should learn some useful lessons from this legal system in today’s multi-cultural world. The Water Court has been held for over a millennium every Thursday and can be seen at the Cathedral’s Door of the Apostles, before the Miguelete tower’s clock strikes twelve noon. It probably began in Roman times. The great Hannibal himself used water rights to make a pact with the people of Segorbe and have an excuse for attacking Sagunto. When the Moors arrived in the lands surrounding the city and saw the fields irrigated by canals built by the Romans, they felt they had arrived in ‘paradise’. They only seem to have changed one thing: the name for the canals, which since then have been called acequias in Spanish.

Curiously, the settlers who came here in the 8th century were not Arabs by race. The Arabs from the Arabian Peninsula stayed in Andalusia and Extremadura. Agricultural irrigation was unknown to them because the lands from which they came were mostly desert and thus nomadic cattle farming predominated, which is why cattle farming still predominates over agricultural farming in Andalusia and Extremadura. This in turn may also explain the predominance of bullfighting in such regions, though some say the Romans began this ‘art’ of challenging a dangerous animal in the arena. But the settlers who came to Valencia were reinforcement troops sent from Syria and Lebanon. These non-Muslim Maronite Christians were indeed agricultural farmers. They arrived with mulberry trees and silkworms, for which reason Valencia was to become the silk capital of Europe. They also knew how to cultivate the agricultural gardens and water them, how to build irrigation canals and waterwheels. These descendents of Egyptians born next to the Nile had 5,000 years of the finest agricultural tradition and irrigation from antiquity, and they also brought with them the rice now famous in paella and the tiger nuts for making the drink orxata. Their influence is also seen in the Water Court’s proceedings, such as the meeting at the door of the Cathedral. This temple stands where the Muslims’ main mosque once stood, and when it was consecrated as a Christian church the unbaptized could not enter. Thus, the Court was moved outside so that the Muslim farmers who had previously gathered inside the temple could still participate. They also meet on Thursday, which is Saturday in the Muslims’ weekly religious calendar, and this day was observed along with other privileges. The sessions also start before noon, since for Muslims the day does not begin at midnight, but when the sun is at its zenith. (Perhaps this is why so many Valencians also seem to think their biological clock follows this pattern, especially at the weekend…). All of which brings us to that curious ancient document. In this text we can find

irrigation regulations inherited from the Arab world that still apply today about how to measure water, from which disputes arose among the surrounding irrigators and whose solution was given by the water judge. Three centuries later, long after the Reconquista, a similar dispute arose again and the matter was finally decided by turning to this already ancient text, which is why it managed to survive till our times. After the Christians ‘re-conquered’ Valencia, they soon found that their new Moorish subjects not only knew much more about agriculture and irrigation, but also had well developed legal customs to regulate them. Hence, they thought it best to continue with their ways of working, producing one of the first jurisdictions written anywhere under the rules of Justinian (‘democratic’) law. These customs were the foundation for Valencia’s Irrigation Communities and Water Court. Since then, there have been countless references over the centuries from travellers, writers, tourists and politicians who, on passing through Valencia, have seen the Water Court in action and have been impressed by its efficiency. The court is so renowned that people and institutions from around the world come to consult and study it. UNESCO has included it in its list of intangible world heritage. It is perhaps the Spanish legal institution that has had the most direct and immediate effect on Spanish and Latin American laws. This is basically how it works: Each canal’s users form a ‘community’ responsible for distributing the common water flowing through their lands. The community’s administering board elects the community's head or trustee out of all its members. In other words, the eight trustees who enter the small area to hold the simple court every Thursday, as they have done for over 1,000 years, get their power by democratic vote, unlike today’s public judges. They are not necessarily educated in law but they know the by-laws of their communities so as to know exactly who is right as regards irrigation rights, obligations and costs.

The way a ‘trial’ works is simple and effective: The accused is summoned to appear before the court the following Thursday. (It has never been necessary to go to the mainstream public authorities to bring an offender before this court.) He defends himself personally and may provide evidence through witnesses or a visual inspection in his defence.

evidence. The court has everything it needs to take legal action when it passes judgement (unless a visual inspection is required in the field). It is almost entirely oral (in Valencian).

The president and other members of the court can ask questions, and then in the presence of the interested parties the court deliberates and decides there and then. The trustee does not take part in this decision, but abstains to ensure impartiality.

It is fast. The court meets every Thursday at noon and violations committed since the previous Thursday are brought before the court. If the accused or prosecuting party does not appear on three successive Thursdays, the court passes judgement without further ado in absentia. If the court is not all present at twelve o'clock, the trials to be held are dismissed. If the accused person has appeared on time and all of the court is not present, the trial is dismissed.

The court only recognizes and decides on whether the defendant is guilty or not. The punishment is indicated by the trustee himself according to the ordinance violated, which is stipulated for different offences. The rulings are final. The president of the court himself can be subject to a complaint and judged, taking off his gown to do so and donning it again to continue with other proceedings after judgement has been passed on him.

It is cheap. The trials do not incur any expense. The judges or trustees of each canal do not get a salary or any economic benefit since the act of passing judgement is one of their obligations. They only get an allowance from their communities for basic expenses. As a result, the defendant only has to pay certain travel expenses to summon others and, at most, the expenses for a visual inspection if he so wishes.

To sum up, perhaps the greatest differences between this system and “mainstream” Spanish justice are:

Above all, it is democratic. It is a judicial system genuinely run by the people, a fact that impressed King Jaume I and all those before and after him so much that this court has been passed down to this day

There are very few places in the world where judges are not designated by a higher authority but elected by the same people on whom judgement and sentences may be passed with their corresponding punishments. In today’s Spain, the standard judicial system is headed by judges who are greatly offended when the press or the general public make comments about their work (the same might be said of the Spanish royal family), as if they were above criticism and we should all leave them alone to do their job, unlike politicians. Personally, I find it offensive that they should think they do not have to answer to the people over whom they have such public authority (and who pay their wages). With suspicions that many of Spain’s modern judges would have felt comfortable doing their job under Franco, on top of scandalous decisions and even a strike, I believe as a taxpayer I most certainly have a right to give my opinion about them, particularly when I suspect they’re doing a lousy job (which is worryingly often). Perhaps they should come to Valencia’s Plaza de la Virgen on a Thursday and see how truly democratic justice is really done.

All anyone can talk about right now is the so-called ‘Operación Bikini’ – that mission impossible all men and women embark on during the months leading up to Summer as the idea of baring pale, flabby flesh to the rest of the world becomes more and more of a scary reality and we are suddenly rendered super body-conscious having kept it all under wraps all Winter. Of course, realistically, we should all have started keeping fit and eating lean straight after Christmas and way before Easter eggs even posed an inkling of a threat to our waistlines, or should be like Hollywood stars – camera (and therefore beach) ready all year round. All it takes is for the temperature to rise five degrees in one weekend and panic strikes. Even if it has dropped back down to scarf and coat weather by Tuesday. Suddenly it is of utmost importance to drink the rudimentary 2L of water in one day, we're saying, “Yes, please” to a green salad – hold the dressing, and planning the week's activities around gym visits. Well, I say “we”, that's a royal We, obviously, and not an actual we that includes me, because my friends and I are the complete exception to the rule. Or maybe we're the norm, and I just happen to talk to a lot of people who tell a lot of porkie pies in their spare time, but it’s certainly true in my crew that the moment we see over 20º on the thermometer we flock to the terraces, order a beer and some patatas bravas, and sit, scoff and sunbathe for most of the weekend. And that’s to work off the hangover from the night before.

Very sexy, most likely impossible to walk in, but as my dear younger cousin told me when she was just four years old and I a mature, sophisticated 18-year-old (I believe I was braiding her hair whilst babysitting at the time), you have to suffer to be beautiful. (Maybe that's the secret behind the laser fat removal. It can't be pretty.) The black, beige and burnt orange beauties will be mine in 3-5 working days, and are right on track with my New Year's Resolution to try to wear heels every day.

Just last Sunday we took to the Alameda, sunglasses on, caña in hand, T-shirts pulled down off shoulders to bronze that little triangle of skin, and put the world to rights til sundown, complaining about how unfit and unhealthy we were, to only order another plate of bravas, five more beers and “Excuse me, could we have some olives, too?” It makes it all the more enjoyable when people are jogging or running past in their Lycra shorts, iPod strapped to arm, working up a sweat as the most effort we make is to reach for another peanut. We all groan, roll our eyes, moan about these people who don't have fun and are keep fit freaks, poor lonely people, only to have the vicious circle of guilt kick in, sending us all rushing home on a super fast ride on a Valenbisi to do a power workout or 45 minutes on the elliptical. But the obsession with our bodies has become ridiculous, am I right? Every time I sign into my e-mail and check out Groupon, LetsBonus, Offerum and the like, I am shocked at the amount of treatments I can't even pronounce being offered to me at an “amazing discount – from €399 to €139! Remove your excess fat with a laser in one afternoon!” Is that really possible? To remove fat with a laser? Sounds like science fiction to me. I would rather spend my hard-earned pennies on some lovely pastel coloured chinos, a sleeveless denim jacket, a slinky summer dress or a flowy maxi skirt. Or on some sky-high heels, the cheat's way to a slimmer silhouette. I have already been

At The Bank where I pretend to work while online shopping, I mean, where I work really, really hard, all the bosses are female and they quite literally run up and down the corridors all day, on 8" heels, looking busy. They must burn off more calories in one day than I do during my boot camp smartphone app workouts on my living room floor. NB: During which, I get laughs a minute from my flatmates, as the instructor barks instructions at me from my phone, and I gasp for breath, red in the face as per usual, twisting and jumping and high kicking all over the place. My girlfriends and I all made a pact a few years ago to try and wear high heels every day, and thus emanate the authoritarian air of all our lady bosses, past and present, commanding respect whilst tightening our hamstrings all at the same time but the truth is life's too short and we'd all rather wear flats or, maybe at a huge push, the new trend – the flatform. This is like a platform, but with no shape whatsoever to the sole, a bit like a creeper but attached to a pretty pump or brogue. Cannot see this lasting past one season (in fact I may have seen two or maybe three pairs in the stores) because, while properly practical, let's face it – they are darn ugly. Give me a feminine wedge with a peep toe and vertiginous height any day – I want to strut (not clomp) my way to the nearest table in the sun.

A VALENCIA STORY

While the crowd was momentarily absorbed by the buckets of steaming blood, the butcher deftly hoisted the huge dead weight onto a table covered with hay. The villagers assisting him all had clumps of bush tied together, like brooms for fat witches. They lit them and began to burn the pig’s flesh to get rid of any hair. Within 20 minutes the entire body was sliced, diced, and hanging on a metal rack, the severed cuts of the beast, and especially the head, drawing gasps of awe from the crowd.

PART 6 Javi started off nearly every fiesta with “La Negra Tomasa,” a Cuban ode to a black voodoo goddess who cooked food that bewitched her lovers. He nodded and winked at key lyrics and even found time to slap the odd behind in between strums. Sidling up to George he took particular pleasure in striking the ass of the girl George had spent so long getting nowhere with. It was all in jest, of course. Javi knew how old she was and despite his oft-quoted refrain, “If she sits on a bench and her feet touch the ground, she’s surely fair game for fooling around,” he had no interest in looking for girls right now. He could do that better back in the city. For the time being he contented himself with rum and rumba. Morgan meanwhile discovered that a bag of peanuts makes a good percussion shaker.

He strolled out cockily with, what looked like, a shepherd’s crook. He wore a leather apron, tied at the back, and brandished a huge knife that glinted in the noon sun. The kids were asking their parents a sudden barrage of questions and there seemed at once to be a total hush as the crowd felt the blood pump through their ears in anticipation.

An hour or so later the town started spilling into the main square. The sun was out and it had turned into a fine day. The gachas were thickening up, though they seemed a little bereft, as yet, of any meat. All in due course, the flames seemed to say, as the porridge-like gachas crackled and popped, surprising the children who stood too close.

The pen was opened and the pig shot out. The crowd laughed and swayed as it spread to accommodate the pig’s frantic dash for an escape route. The butcher let it make a few turns for the benefit of the crowd before leaping forward like a toreador and hooking it under the chin with the crook of his pole. It squealed. George was sure he had stuck the pig already and involuntarily looked away, but he was merely dragging it by the nook of its neck toward him. Morgan pushed a little girl out of the way to get closer.

Javi found Morgan and George admiring the cuts. Morgan was a trained cook and he was in heaven. A shouting match began between the butcher and the villagers, confusing Morgan until Javi explained that they were now going to auction some of the meat. Morgan insisted they bid for the loin, a prime cut from the pig’s back. He convinced the others to chip in together and he described a dish using thyme, which was abundant in the fields that time of year, and stuffing it with local cream cheese and roasting it. They bid, salivating, and paid over the odds for the loin. “Look at that,” cooed Javi, passing the spoils to Morgan. George nodded as if he knew the difference between loin and breast. Morgan began repeatedly singing the word ‘loin’ in Spanish to the tune of “O Sole Mio”. “Oy, where’s Miguel?” Morgan asked, snapping to his senses, the loin hanging in his quizzical hand. “Yeah, I haven’t seen him for a bit,” said Javi. They did a lap of the plaza. The crowd had thinned out. The auction over, people started making their way to the café, to catch up on drinking. There was always a big lull after the slaughter before the singing competition got under way. Miguel was nowhere to be seen so they made for the house.
