This two-day event at Kanapaha Botanical Gardens in Gainesville features prizewinning camellias of all sizes, shapes and colors. There will be judged exhibits of japonicas, reticulatas, hybrids and species. This show is geared toward educating the public about the care, culture and appreciation of camellias, both in the greenhouse and in the landscape, and camellias will be for sale. FLORIDA MANATEE FESTIVAL // JANUARY 15-16 The Florida Manatee Festival returns this month to downtown Crystal River. Spanning both sides of Citrus Avenue, the 2022 Florida Manatee Festival boasts live music on multiple stages, two food courts, two beer and wine gardens, manatee boat tours, guided kayak tours, a fine art walk, craft vendor and a kids’ zone. Visitors are also invited to experience the wonderful downtown shops and eateries within the festival. Admission is $5 for adults and free for children under 12, and the festival takes place from 9am-5pm on Saturday and 9am-4pm on Sunday. Experience a world of medieval magic, where jousting knights, merry dancers and historic heroes mingle with visitors. The new site of the faire, located at 9409 SW Archer Road in Gainesville, transforms into a medieval marketplace filled with hundreds of artisans and entertainers for three consecutive weekends. The winding pathways of Hoggetowne overflow with artisan booths and troupes of actors, musicians and street performers. Faire hours are 9:30am-5pm on Saturdays and Sundays, and 9am-4pm on Friday, January 28. TUSCAWILLA SPRING ART PARK SERIES // JANUARY 21
The Tuscawilla Spring Art Park Series is a series of three events through March 2021 that pairs together music, art activities and good food. For the January event, Bluegrass and BBQ, enjoy live musical performances by Grammy-nominated bluegrass musicians The Po’ Ramblin’ Boys with Applebutter Express as well as local artisans, a cash bar and food from Big Lee’s Serious About BBQ and the Smoked Biscuit Company food trucks. GRIT: 4TH ANNUAL STRENGTH CHALLENGE // FEBRUARY 5 GRIT Strength Challenge is a team-based strength and fitness challenge utilizing primitive objects that were available during the Florida Seminole War period of 1817 through 1858. Taking place at Fort King National Historic Landmark, the event is designed so all fitness levels can participate and teams will be challenged to move objects over distance similar to what would have been used during the 1800’s—logs, barrels, sandbags and more will be used to test your team. ith the holiday season in full swing, the downtown square’s stunning display of lights was the perfect backdrop for the 2021 Bad Santa Bar Crawl. Several downtown bars and restaurants got in on the action, providing an array of outstanding libations for participants. With everyone donning their best holiday garb, regardless of the warm December day, the event started at The Lodge, and participants enjoyed a complimentary drink at each location, including Mutiny, Tipsy Skipper, Big Hammock, Cantina TexMex and Brick City BBQ. n a beautiful November evening, the thrill of opening night at the Reilly was palpable. Not only did the newly refurbished Reilly Arts Center shine, but the audience was also in awe of Music Director and Conductor Matthew Wardell and the entire Ocala Symphony Orchestra. Variations on Opening Night featured Pianist Jasmin Arakawa with the OSO for Rachmaninoff’s Rhapsody on a Theme of Paganini, and the variation theme continued with music from Ives and Elgar’s Enigma Variations.

To avoid waiting, visit the park early, as it will close for admission once capacity is reached. On Saturday, January 22 and 23, from 9am5pm, visitors can celebrate the manatees at the 36th Annual Orange City Blue Spring Manatee Festival. The event features displays from local environmental groups, food and dancing, arts and crafts vendors, the famous Frisbee dogs and a children’s area. ormed in 1999, the Great Florida Birding and Wildlife Trail (which is less of a connected trail and more of a great collection of sites throughout the state where birding has proven successful) includes 518 locations throughout the state, with over 150 of them being right here in the 352 area. The sites are comprised of national wildlife refuges, national parks, state parks, county and city parks, college campuses, military bases, wildlife management areas and state forests. “Some of my favorite spots in the 352 area include Silver Springs State Park, which is great for wading birds and migratory songbirds, and the Chassahowitzka Wildlife Management Area, which gives more of a rustic experience than state parks,” says Liz Schold, the Great Florida Birding and Wildlife Trail Coordinator. “Chassahowitzka has lots of driveable roads for easy access to various habitats, including sandhills, flatwoods, hardwood/palm hammocks and one of the largest and most pristine hardwood swamps.” Other 352 areas listed on the GFBWT include Andrews Wildlife Management Area and Paynes Prairie Preserve State Park, which features eight trails to explore. “You can find the Everglades Snail Kite here,” says Liz, “which is an endangered species only found in Florida that a lot of birders are eager to see.” Another of Liz’s favorite spots is the Lower Suwanee National Wildlife Refuge. “I love this spot,” she says. “Near the office there is a great short boardwalk through a cypress swamp. There is also a nine-mile nature drive that will take you through upland forests and plenty of cypress swamp.” Also in the area is Chapman’s Pond and Nature Trails, a family-friendly nature park where over 200 species of birds have been recorded. “Chapman’s has osprey nesting platforms, well-marked trails for walking, jogging and 18

biking, bat houses and an elevated observation area great for scanning the holding pond that attracts lots of wildlife,” says Liz. Whether you’re new to the game or an experienced birder or hiker, you may want to check out a few free apps that make your experience not only educational and informational but fun. “Merlin is a great app for beginning birders,” says Liz. “By answering a few quick questions about the bird in question, you’ll be presented with a narrowed-down list to help ID your bird.” eBird is great for more experienced birders, allowing you to keep lists to record and track your observations. “Birding and wildlife viewing is a whole new way of connecting with your world around you,” says Liz. “There are many benefits to experiencing our state’s eco-tourism opportunities, from health-related and stressrelief benefits for those who take part in it to conservation and economic benefits to our communities and the state. “Whether you live here in the state or you’re coming in to visit from out of town, there’s so much more to Florida than just the theme parks,” says Liz. “When you need to take a break and just relax, the Great Florida Birding Trail provides an experience unlike any other. AND THE SURVEY SAYS The Florida Fish and Wildlife Conservation Commission conducted a survey of Florida birders to help identify the top 30 most sought-after bird species. These birds made the list and can be seen right here in the 352. EVERGLADES SNAIL KITE: This federally endangered species can be found nesting at Paynes Prairie State Park. FLORIDA SCRUB JAY: They are the only endemic Florida species, meaning they are found in the state of Florida and nowhere else in the world. A population lives in the Ocala National Forest. SWALLOW-TAILED KITES: These birds migrate from Central and South America to Florida in early March each year. PURPLE GALLINULES: These brightly colored birds are found yearround in our area’s freshwater marshes.

“O
n the 200th Anniversary of Jose Gaspar’s death, dubbed JG200, our Ye Mystic Krewe of Gasparilla pirates are preparing to create a loud, boisterous and memorable celebration in a manner that only Tampa Bay can,” says Maiken Stefany, vice president of Eventfest. “In 1904, the editor of the Tampa Tribune and members of local government conspired to promote the City of Tampa and its May Day celebration. Their secret meetings led to “Ye Mystic Krewe of Gasparilla,” whose 40 members planned to surprise the populace with a mock pirate attack on Tampa. In full costume, the first Krewe arrived on horseback and ‘captured the city’ during the festival parade on May 4, 1904. Nearly each year since, YMKG pirates have invaded Tampa in search of the key to the city from the mayor. Upon its capture, they take to Tampa’s shores to celebrate with revelers.” And celebrate they do. As the world’s only fully rigged pirate ship, the Jose Gasparilla, departs from the south end of Hillsborough County at 11:30am, festivalgoers gather near and around the Tampa Convention Center to await their arrival. The pirates and their Krewe arrive and capture the key to the city from Mayor Jane Castor. What follows can only be described as one of the world’s coolest parades. The Parade of Pirates follows a 4.5-mile stretch of Tampa’s Bayshore Boulevard and is filled with pirates, cannons, marching bands

and more than 140 floats. The Mardi Gras-like atmosphere features parade participants tossing coins, beads and other Gasparilla trinkets and treasures into the crowd of more than 200,000 spectators. This year’s Pirate Fest will also include live entertainment stages set up along Riverwalk in downtown Tampa. Check out the live music preand post-parade at Curtis Hixon Waterfront Park and MacDill Park. Check the event website for an updated entertainment lineup. The kickoff festivities include the Children’s Gasparilla presented by Chick-fil-A Tampa Bay, taking place on January 22. This alcohol-free, kid-friendly celebration features a parade of more than 125 units, including krewes, dance groups, children’s performance teams, community organizations, schools and more. The parade will be broadcast on FOX 13 and streamed live on fox13news.com.
Just prior to the start of the children’s parade is the Air Invasion, with its largest airshow to date. Turn your eyes skyward to see high-flying acts, including civilian aerobatic teams and vintage military aircraft. There will also be a demonstration from the USSOCOM Parachute Demonstration Team. The show will begin at noon and continue through the start of the parade at 3:30pm. There will even be a special nighttime Air Invasion and a twilight jump. From the kids’ parade and festivities to the invasion and Pirate Fest, this week-long celebration is sure to be one for the record books. WINTERTIME IS THE PERFECT
TIME TO PLAN A CAMPING TRIP IN CENTRAL FLORIDA. BY MELISSA PETERSON
S
o you want to go camping—but with the holiday break behind us and spring break still a couple of months away, planning a trip away from Central Florida isn’t likely to happen if you have kiddos in tow. You’re in luck, though. There’s no shortage of camping spots within an hour or two from home—perfect for a weekend away— and Florida’s cooler months are an ideal time to vacation outdoors. Whether you’re looking for a spot in the Ocala National Forest to quickly pitch a tent, ready to spend a few days at the beach or want to do Disney a bit differently, here’s a roundup of close-to-home camping spots, along with tips and insider tidbits from a fellow camper.
FLORIDA STATE PARKS Before we start talking about specific parks, it’s got to be said: Florida State Parks are notoriously difficult to book on short notice. With more and more people taking to the outdoors, it’s not super easy to just pick up and go if a state park is on the agenda. So, here’s the deal: You can reserve campsites from one day to 11 months in advance either by calling (800) 326-3521 or visiting floridastateparks.org. If there’s a park you really want to visit and your dates are not flexible, trust me when I say that you’ll want to book as far out as possible. In fact, now might be a good time to start planning a local camping trip for next winter. If your schedule and requests are little more open, it might be possible to book on shorter notice. And if you want to get away next week, you can’t be picky about where you visit. Also, all campsites not reserved or occupied may be rented to walk-in visitors on a first-come, firstserved basis, so it doesn’t hurt to call around to see if there are any last-minute cancellations. Campsite prices vary from $16 to $42 a night
depending on the park, so you can get a lot of vacation for a small price. Different parks offer different types of sites, so make sure you know what you’re registering for ahead of time. From primitive, backcountry sites that require a hike and sites without electric or water hookups (but with bathhouses and water sources nearby) that are perfect for tent campers to full-facility spots with electric, water and sewer hookups that are usually occupied by RVers, there’s a site out there to fit all needs. Oh, and you don’t have to be in an RV to take advantage of the full hookup sites—tents are allowed there, too. With your new knowledge in hand, let’s take a look at a few of my favorite spots. GAMBLE ROGERS MEMORIAL STATE RECREATION AREA You can’t get any closer to camping on the beach than you do at Gamble Rogers. And even better, it’s only 90 minutes from Ocala. The campground has 34 sites located on the primary dune of the beach—literally on the beach—and 34 sites on the riverside. Some sites offer an excellent view of the Atlantic, and dune walkovers provide easy access to the beach while still protecting the fragile dune system. Some of the beachside sites are small (perfect for tents!) and can be tight to get into with a large RV. (My family visited Gamble Rogers on our first trip out with our new travel trailer. Let’s just say that us learning to park a trailer in these tight sites must have been comedic for our fellow campers.) All sites feature water, electricity, a picnic table and a fire ring. indigo and cotton. Approximately 1,000 years ago, the area now known as Tomoka State Park, was inhabited by the Timucuan Native Americans, in the village of Nocoroco. The village was first visited by Spanish explorers led by Alvaro Mexia, in the early 1600s. Located in a shady hammock near the Tomoka River, each of the park’s 100 campsites has a picnic table, grill, electric hookup and water. Rainbow Springs State Park
Springs State Park is where it's at in the winter thanks to the well-loved manatees that frequent the park to take advantage of the constant 72-degree water. The park’s 800-foot boardwalk runs through a majestic cypress forest overlooking one of Florida’s breathtaking firstmagnitude springs, offering great views of the visiting manatees. A note: If it’s an extra cold weekend, make sure to pack the winter hats and maybe even gloves. It gets super cold down by the water. The park features 80 campsites in three loops, each with its own hot shower restroom and all within easy walking distance of the spring. There is electricity and water at each site, as well. Manatee Springs State Park // 11650 NW 115 St., Chiefland // (352) 493-6072 PAYNES PRAIRIE PRESERVE STATE PARK Just south of Gainesville, Paynes Prairie is a hiker’s paradise. The park’s eight trails, including the 16-mile paved GainesvilleHawthorne State Trail, allow visitors to explore the park’s interior and observe wildlife, while a 50-foot-high observation tower provides for panoramic views. The campsites near Lake Wauburg accommodate tents, trailers or RVs. Each site has a limerock surface, lantern post, fire ring with grill and picnic table, with nearby water and electric service. RV sites have electric hookups. If you’re camping on a Saturday evening through February, you can enjoy ranger-led campfire programs at the campfire amphitheater about Paynes Prairie’s cultural and natural resources. 24

Paynes Prairie Preserve State Park // 100 Savannah Blvd., Micanopy // (352) 466-3397 RAINBOW SPRINGS STATE PARK Although you might be familiar with visiting Rainbow Springs in the summer for tubing the river or swimming in the headspring, camping in the winter has its benefits as well. First off, the crowds aren’t as chaotic, so you can enjoy the scenery with a more peaceful experience. Secondly, when you aren’t thinking about cooling off in the water, you’re fully able to take in the ornamental gardens, built waterfalls and lush, mossy hammocks that the park is also known for. Rainbow Springs’ campground is located along the Rainbow River at a separate facility a few miles from the main headspring and day-use area. All sites have water and electric and are equipped with sewer hookups. Amenities include a campground store, showers and restrooms, and laundry. You can access the river from the campground to fish, swim in the summer or paddle, and canoes and kayaks are available for rent from the campground store. Not only does the park offer beautiful scenery near the world-famous Daytona Beach, plus Ormond and Flagler beaches, Tomoka features the historical site of the Timucuan Native American village, Nocoroco, and the Mount Oswald Plantation that once grew sugar,

Other options are Anastasia State Park in St. Augustine, Blue Spring State Park in Orange City (This park is awesome for manatee viewing in the winter!), Lake Griffin State Park in Fruitland Park, Lake Louisa in Clermont, Ross Prairie Trailhead & Campground in Dunnellon and Santos Trailhead & Campground and Silver Springs State Park right here in Ocala. OCALA NATIONAL FOREST Campgrounds in the Ocala National Forest are, for the most part, a little more rustic. If you’re not up for roughing it, make sure you know what you’re getting into before heading out. One exception to that is Salt Springs Recreation Area, which features sites with water, electric and sewer hookups. Sites in the Ocala National Forest can be booked on the recreation.gov website. JUNIPER SPRINGS RECREATION AREA Juniper Springs Campground is one of the most popular campgrounds in the Ocala National Forest. The location offers deeply shaded sites within walking distance of some of Florida’s most beautiful natural springs. Other than swimming in the spring, the surrounding recreation area has plenty of activities to entertain visitors, including canoeing, hiking, birding and wildlife viewing. Campsites at Juniper Springs are arranged into three loops near the creek and springs. All sites are shaded and equipped with a picnic table, grill, campfire ring, lantern post and space for tents, but there are no sites with full hookups. ALEXANDER SPRINGS RECREATION AREA Located near the beautiful waters of Alexander Springs, the recreation area offers swimming, canoeing, scuba diving (for certified divers), hiking, birding and wildlife viewing. Visitors can swim, snorkel and dive year-round in the crystal-clear waters of the spring. In fact, the spring is the only place in the Ocala National Forest where scuba diving is permitted. The camping area contains four loops of campsites within an easy walk of the swimming and picnicking area. The sites are shaded with level parking pads for RVs and plenty of space for tents. No hookups are available, but the campground restrooms have flush toilets and showers. Camping necessities and firewood are available at a small general store. DISNEY DONE DIFFERENTLY Disney and camping? What could be better? THE CAMPSITES AT DISNEY’S FORT WILDERNESS RESORT So full disclosure: I’m a huge Disney fan. Unfortunately, my husband is not, but he is a fan of camping. With the Campsites at Disney’s Fort Wilderness Resort, we’ve found the perfect compromise. We love camping here for different reasons. For me, “The Fort,” as it’s lovingly known by frequent visitors, adds the perfect amount of Disney to our camping trip. From the Disney movies each night on the outdoor movie screen—complete with campfire sing-a-longs and s’mores—to the resort-style pool with a waterslide and watching the Magic 26

Kingdom’s nightly fireworks display from the beach by the marina, there’s just something magical about combining my love for Disney and camping all in one trip. For my husband, The Fort still feels like camping—although you definitely won’t be roughing it. (They have seriously nice bathhouses!) Even though you’re just a boat ride away from the Magic Kingdom, you’re almost guaranteed to see tons of wildlife, including deer, armadillos, turkeys and rabbits, because you’re surrounded by a pine and cypress forest. While visiting, you can fish, canoe, rent bikes, learn archery and explore the trails on horseback. Sometimes we visit The Fort for a long weekend and don’t step foot into one of the parks. It really is my favorite place to camp in Florida. There are several different campsite categories, all with different price levels (even camping at Disney doesn’t come cheap), which can accommodate everything from tents to 45-foot-and-longer RVs. Depending on if you want to be near the family pool area, closer to the water transportation that can quickly take you to the parks or a little farther away from the action with more privacy, The Fort has literally hundreds of sites, some with full electric, water and sewer hookups and other tent sites with just water and electric. The Fort also has cabins in case you want the camping experience without actually, you know, camping. One upgrade that my family absolutely loves to indulge in is renting an electric golf cart to tool around in. Although it’s not necessary at all (the campground has an internal bus system, bike rentals and it’s not too big that walking isn’t an option), it’s tons of
fun to splurge a little and rent a golf cart. You can bring your own from home, too, if that’s an option. Advance golf cart reservations are highly recommended. The Fort also offers the Hoop-Dee-Doo Musical Review dinner show and on-site restaurants and food trucks. Yes, it’s possible to camp and never cook a single meal for your family—only at Disney! The Campsites at Disney’s Fort Wilderness Resort // 4510 North Fort Wilderness Trail, Lake Buena Vista // (407) 824-2900
NO CAMPER? NO PROBLEM! Want to visit The Fort but don’t have a camper and don’t want to sleep in a tent? No worries. There are several RV rental companies based out of Orlando that will deliver and set up a fully stocked RV right to your site at The Fort. All you have to do is bring your food and clothing! Camper Rental Adventures (camperrentaladventures.com) is one such company that I’ve personally used; although, there are several others. Check out their website to see their camper lineup and the amenities, including a golf cart in some cases, that come with the rental. If you’re looking to rent an RV and travel throughout the state and beyond, there are plenty of companies that do this, too, including Suncoast RV Rental (suncoastrvrental.com). It’s the perfect way to embark on the road trip that you’ve always dreamed of planning.

SALT SPRINGS RECREATION AREA If you’re looking for a large campground in a state park-like setting, Salt Springs might be more up your alley. Salt Springs Recreation Area features a natural mineral spring that gives the area its name. Plenty of outdoor activities keep campers and day-use visitors busy, including swimming in the springs in the summer, fishing, snorkeling, hiking and boating. Salt Springs is located between the St. Johns and Ocklawaha Rivers, just 35 miles east of Ocala. Salt Springs is the largest campground in the Ocala National Forest and the only one with full hookups for RVs. The facility offers a designated tent-only area, as well. Sites are shaded and well away from the busy day-use area.

lorida’s cooler months are the perfect time to get off the couch, gas up the boat or throw on your mud boots, and get outside. Knowing where to fish to catch a specific kind of fish is key during the winter months. I started my business, Charter Fishing With Captain Stacy, in January 2017, and I know a thing or two about catching the big one. Check out a few tips and tricks for hooking your prized catch. Head to the grassy flats at low tide for gator trout and then off to our incredible inshore waters for the redfish. Fishing from the banks in Yankeetown has been yielding great results. You don’t have to have a boat on the Nature Coast to catch fish. But if you do have a boat and you want some intel, here it is. (Don’t worry— there’s more intel coming for you land lovers.) Trout are biting like crazy right now. If you are fishing with live bait, be still. Don’t twitch and pop your baits, just keep the line tight and wait for it. REEL IT IN Here are a few basic tips and tricks for making your first (or next) fishing day a success. • Unless you are exempt, most people in Florida require a fishing license to fish. Know the laws! • Choosing the right sized rod and reel depends on both the style of fishing you’re doing and the species you are trying to catch. Talk to someone at the tackle store to find out what works best. • Have a few different bait options on hand. If one doesn’t work, try another. Again, the type of bait depends on what you’re fishing for. • Know your knots. Make sure the line and the lure are secured to your pole. • If fishing for bass, try the shallower, visible parts of the lake or river first. Skirt the edges, looking for weeds, docks or other hiding places. Be patient when reeling in, giving your lure a chance to sink to the bottom first. Light tugs on the line may grab the fishes’ attention, causing a bite. • Ask around. People coming on and off the water may be a great source of information for you. What worked for them? COOK ‘EM UP Here’s an easy recipe so you can go home and enjoy your fresh catch. There are so many ways to cook fish, but this is my go-to recipe. You will need the following ingredients.

1⁄2 cup butter 1 pint or 2 cups heavy whipping cream 4 ounces cream cheese 1⁄2 teaspoon minced garlic 1 teaspoon garlic powder 1 teaspoon Italian seasoning 1⁄4 teaspoon salt

1⁄4 teaspoon pepper 1 cup grated parmesan cheese 1 box fettuccine noodles 4 fish fillets (more or less depending on size) • 2 tablespoons flaxseed oil • Blackened seasoning, to taste
Start by fileting your fish, removing any bones. Rinse the filets under cold water, pour about 2 tablespoons of flaxseed oil in your frying pan, set to medium-high heat. Sprinkle some blackened seasoning very generously on the filets. Once the oil starts to bubble, cook for about 4 minutes on each side. In a separate medium saucepan, add butter, heavy whipping cream and cream cheese. Cook over medium heat, and whisk until melted. Add minced garlic, garlic powder, Italian seasoning, salt and pepper. Continue to whisk until smooth. Add Parmesan cheese. Bring to a simmer, and continue to cook for about 3-5 minutes or until it starts to thicken. Toss the sauce with fettuccine and fresh catch, and enjoy! JAN ‘22
