CHILI COOK-OFF NOVEMBER 4 The Cornerstone School will present the 42nd Annual Marion County Chili Cook-Off to raise funds to support the school’s annual fund. The event will be held from 10am-5pm at the Southeastern Livestock Pavilion. The car show, children’s area with games and inflatables, music by DJ Rocket and, of course, the chili competition are the main attractions at this family-friendly event. The event will feature more than 300 vendors showcasing their artistic talents. The event takes place from 9am-5pm on Saturday and 9am-4pm on Sunday. Parking is free.

OCALA CHRISTMAS LIGHT SPECTACULAR NOVEMBER 24-DECEMBER 30 The Florida Horse Park will glow with the spirit of the holidays as St. John Lutheran Church and School welcomes back its Ocala Christmas Light Spectacular. The lighted 1.8-mile trail is drive-through style, but visitors can also park their car and visit the Santa Land on select nights. LEGENDS OF YULE DECEMBER 2 Step back into history as you meet the legends of winter’s past. They’ll share early 19th century worldly traditions that they carried to Fort King during the Seminole War. This two-day event will feature historic themed crafts, games, workshops, activities, living historians, vendors, food and drinks. The Discovery Center’s exhibit Exciting Explorers will be on display through January 6. The center is open Tuesdays through Saturdays, 10am-4pm. Children and adults will learn how explorers discover new worlds while navigating and expanding their knowledge of uncharted territories. Take on the role of archeologist and learn how artifacts are preserved or become a scientist and use your imagination for future discoveries. OCALA HOCKEY CLUB FALL SEASON MONDAYS IN NOVEMBER The Ocala Hockey Club, a nationally ranked roller hockey club, will hold open practices and tournaments at Skate A Way South this fall. Practices are every Monday night. Ages 14 and under will practice from 6-7:30pm, and ages 15 and over will practice from 7:30-9pm. Players can join anytime during the season, and the group has equipment available for new or first-time players. A weekly fee of $6 per player is required. This year’s theme is in honor of hip hop music’s 50th anniversary. The month-long Block pARTy exhibit launches with a VIP reception on November 3 at the Brick City Center for the Arts from 5-7pm.

The indoor, climate-controlled, state-ofthe-art facility will soon welcome the best of the state’s high school athletes to Ocala.

This November, FAST will host the 2023 Florida High School Athletic Association (FHSAA) Swimming and Diving Championships, as well as in 2024 and 2025.

SUPPORTING MARION COUNTY’S YOUTH BIG BROTHERS BIG SISTERS OF MARION COUNTY HELPS MENTOR CHILDREN THROUGHOUT OUR COMMUNITY. RONALD W. WETHERINGTON, SOCIAL EDITOR

H

elping young people succeed was the purpose of the gathered diners recently at Gator’s Dockside. Part of each dinner check went toward Big Brothers Big Sisters of Marion County. BBBS is a nonprofit organization that for more than a century has provided children with strong, enduring and lasting mentoring relationships. In Marion County and across the nation, the organization’s mission is to create and support one-to-one mentoring relationships that ignite the power and promise of youth.

The vision of BBBS is that all children achieve their full potential in life. BBBS helps ensure youth achieve their promise by matching each child individually with a mentor, taking into consideration their likes, hobbies, goals, challenges and achievements that they would like to accomplish. In Marion County, children between the ages of 5 and 13 are welcome to enroll in the mentoring program. The agency uses evidence-based practices that result in measurable outcomes.

Big Brothers Big Sisters of Marion County offers two main programs that a potential volunteer could be a part of. The community-based program requires the mentor to spend approximately eight hours per month doing activities in the community with the child, such as going to the park or the movies.

The site-based program requires the mentor to spend one hour per week at a school with the child. Typically, this is during the child’s lunch time. The site-based program for BBBS is currently located at Oakcrest Elementary School. BBBS is looking to partner with more schools in the future.

Marion County team members of BBBS are available for speaking events, table invites, lunch and learns, or any way that they can help in the community or be of service. Big Brothers Big Sisters of Marion County is an affiliate of Big Brothers Big Sisters of Tampa Bay. The local Marion County office is located at 324 SE 24th Street in Ocala. ow in its third year, the Ocala Christmas Light Spectacular continues to grow, becoming a cherished holiday tradition.

Presented by St. John Lutheran Church and School and hosted by the Florida Horse Park, the popular event features updates sure to make it a celebration for all ages.

Enjoy the 1.8-mile drive-through light show and experience a colorful, animated winter wonderland. Attendees will be happy to learn the road through the park is now paved.

As you take in the light displays, Christmas music will stream through a radio frequency so you can sing along in your car or just enjoy the holiday tunes as background. One section of the RGB light display will be synchronized with the music. Your journey ends with a 22-foot-tall Nativity scene.

Following the drive-through portion, you can either exit or park your vehicle and walk to visit Santa Land, which is included with your paid carload admission.

Festivities continue in the labyrinth and walk-through area, also featuring a synchronized light display. Santa Land offers train rides, bounce houses and slides, crafts, puppet shows and, of course, Santa! (Catch Santa every weekend and Christmas week December 18-23.)

Young kids can safely play in a separate area with bounce houses and activities for ages 4 and under.

Food trucks and live music enhance your evening visit.

To truly get into the spirit of the season, pull on a pair of skates and glide away on the synthetic ice rink. (Skate tickets are for sale in Santa Land.)

f you’re interested in learning more about our native and visiting birds, Marion Audubon is the perfect place to start.

“Our mission is to help people connect with nature and specifically birds,” says Marion Audubon President Michele Reyes. “Once people become aware of the amazing creatures all around us, it can enhance their outdoor experiences. Plus birding has both physical and psychological health benefits.”

Marion Audubon is a non-profit 501(c)(3) club run entirely by volunteers. The group offers guided birding tours at local parks and so much more. Members are also actively involved in multiple conservation projects, including monitoring a variety of birds, including Eastern Bluebirds, American Kestrels, Florida Scrub Jays and Bald Eagles.

“Come to a guided birding tour,” says Michele. “We offer free monthly trips and educational programs, plus additional birding trips for members. You’ll have fun while learning tips on how to find birds and identify them. You can also get started at home. Download the free Merlin Bird ID app. It helps you identify birds with a photo, a brief description or even by sound. Try using the sound ID feature in your own yard and see how many birds Merlin hears!

Learn to recognize those most common birds first, and learn more birds as you encounter them. Or use the explore feature to see all the birds in your area. While printed bird guidebooks generally give you more detailed info, the app takes migration into consideration and will narrow down the list to what is present today.”

Michele adds that it’s important to note

that like any app, Merlin Bird ID is not infallible, so make sure you actually see the bird before submitting a checklist. She also suggests using the eBird app to keep track of the birds you come across and find new ones.

There are many birds that call Central Florida home all year, but there are also some that come for just a short while each winter.

“Some of the birds from our area migrate south to places like Mexico and South America for the winter while others from the north may winter in Florida,” says Michele.

“Multiple species of ducks, sparrows and warblers, plus catbirds and robins are some of the more commonly seen birds in the winter. Palm warblers are very common in winter. This brown or yellow bird can be spotted hopping on the ground or perched in a tree. The constant tail-bobbing is a good indicator. Another is the yellow underneath the tail—what we call the vent. One of the common birds to see, or rather hear, in winter is the Gray Catbird. If you’ve ever searched for a cat in a tree only to find a bird, chances are you heard a catbird’s call. This gray bird has a black cap and a rusty red area under its tail. Use the Merlin app to hear how this bird earned its name. The elegant Swallow-tailed Kite is an early migrator, the first to leave us in September but also the first to arrive and signal the coming spring in February. It’s easy to spot soaring high, with a long, split tail used for maneuvering.”

Michele says one of the best spots for birding in Ocala is the Ocala Wetland Recharge Park, which was also recently added to the Great Florida Birding and Wildlife Trail.

“The accessible trails take you over ponds, and under trees where you’re sure to see some of the 173 species of birds that have been recorded there so far,” she says.

Michele is always excited to share birding with others and says there are so many reasons she loves this hobby.

“The unpredictability and potential for really cool experiences is at the top,” she says.

“Because the birds are constantly changing, no two days are the same. Of course, we all live for the moment when we find a rare bird, which are among us more than any of us realize; however even on the days when I see the usual birds, I enjoy watching their behaviors and interactions.

Plus, I regularly get to experience some aweinspiring moments like when I see an owl soar silently between trees with a lizard in its talons or when a bobcat runs past and I feel like I’m living in a Nat Geo episode.”

ure, we are all taught it’s a big no-no to purposefully break things from the time we are toddlers, but if you ask Crystal and Travis Kinsey, owners of the newly opened Smash Lab in Ocala, they say it’s the best form of stress relief, not to mention fun!

After experiencing a rage room in Orlando, the duo decided to bring the concept to Ocala.

“We knew Ocala could use more entertainment options, and we wanted to think a bit outside the box,” says Co-Owner Crystal Kinsey. “All ages are welcome, and we provide a controlled, safe environment. Everyone from young children to older adults enjoy the rooms.

We have a lot of families, singles, couples and even corporate team-building events. Birthday parties are also very popular.”

Located in the same plaza as the Ocala Police Department headquarters on Pine Avenue, the Smash Lab offers guests a place to release stress, expend some energy and work up a sweat. Walking in you’ll get an industrial, grungy street vibe. The Kinsey’s five children, ranging in age from 17 to 28, help run the family-owned business, and they each provided the ambiance by adding graffiti to the walls.

The lab offers 10-, 15- and 20-minute sessions where groups enter one of three rooms and literally smash things. Travis works with auctions and estate sales to keep their storage areas, including an off-site 3,000-square-foot storage facility, filled to the brim with breakables.

“Plates, dinnerware, vases, figurines, TVs, monitors, computers, DVD players—if it’s breakable and you can hit it, we probably have it,” says Travis. “For larger groups, we even have small furniture pieces.”

Closed-toe shoes are a must when visiting the Lab, but all other protective gear, including coverall suits, gloves and face protection, will be provided for you. Also provided is a variety of tools to help you get the rage out.

“Sledgehammers, baseball bats, crowbars, small hammers, we have it all,” says Travis. “Most people tend to lean toward the bats, though.”

The Kinseys are already adding on to the Smash Lab, with construction underway on a glow paint room.

“The room will feature blacklights, and guests will be able to sling paint in a variety of ways, from balloons and water guns to paintbrushes and more,” says Travis. “Then, you get to take your

canvas home with you.”

Initially, people may be a bit reserved in the rooms, but once they get going, they really get going. Twenty minutes may not seem like a long time, but Travis assures you it’s a workout and a true release.

“People are always surprised how tired they are when they are done with their session,” laughs Travis. “The best part, though, is that you get to make the mess, and we clean it all up for you.”

Walk-in sessions are available, but for groups larger than five or six, reservations are recommended. You can call the Lab or use the website to secure your space.

“It really is a lot of fun and something unique and different to do,” says Crystal. “You just have to experience it for yourself.”

Singing River Tours does just that, offering guests a scenic experience exploring the Rainbow and Withlacoochee Rivers.

During tours, which last about an hour and 40 minutes, Jon shares fascinating details about the area and its history, our amazing ecosystems and wildlife. From alligators and turtles to otters, a huge variety of birds and more, wild critters often put on a show.

Jon’s stories vary, and he doesn’t speak through a microphone, so it never feels “canned” or contrived as he enlightens guests about the crystal clear, spring-fed Rainbow River and the dark, swamp-fed Withlacoochee.

hen it comes to ecotours, Singing River Tours offers leisurely pontoon boat excursions in a pristine setting with unparalleled views of wildlife and nature. You can’t get any closer to the river without getting wet.

The cherry on the top is the musical entertainment provided by tour guide, boat captain and professional musician Jon Semmes. It’s a winning combination that has been delighting guests since 2004.

Having lived in Dunnellon since 1977, Jon is intimately familiar with the area’s two main rivers—the Rainbow and the Withlacoochee.

Since childhood, his life has been enriched by living on the river and by music. That he found a way to combine the two as a career is not surprising.

“For years I did music and nothing else, except for part-time summer jobs,” recalls Jon. “My last one was with rental boats, and I thought, ‘someone needs to be doing tours,’ so I got my captain’s license and bought a boat. I love the river, I love people and I love music, so why not combine all three?”

Singing River Tours operates a 40-foot Coast Guard-inspected pontoon boat with a hard top from front to back, so guests have shade but unobstructed views. The boat is even handicap accessible.

he goal of most small, family-owned farms is to find unique ways to put the produce and products they grow and raise directly into the hands of those who live in their communities, to bring the freshest items to those who need them the most. Farmers, especially those who operate under a small-scale agriculture model, are increasingly looking for ways to diversify their businesses. For the communities surrounding those farms, that means unique opportunities to experience those farms and benefit from the items they offer.

From farm-to-table dining experiences and community-supported agriculture memberships to farmers markets, food education programs and restaurants that serve produce picked directly from the fields and plated it the same day, the following small farms are excellent examples of all the ways food can bring people together.

foods at the peak of their flavor and nutrition, plus receive recipes on how to use the produce and invitations to on-farm events.

“At Frog Song Organics CSA, members make a commitment to the farm,” says Amy, “and together we produce high-quality produce grown in an ecologically and socially responsible manner. Each week members pick up tasty, fresh produce at one of our convenient sites. CSA membership helps you experience the seasons through food. [Plus] we really like getting to know our customers and seeing familiar faces each week. We love seeing families nourished by healthy food.”

Frog Song Organics For Amy Van Scoik and John Bitter, co-owners of Frog Song Organics, using food to bring people together was just one motivation behind their partnership.

“We wanted access to healthy, delicious food for ourselves and our family,” says Amy, "and we saw an unmet demand in the southeastern U.S. for locally grown, organic produce as a great opportunity to start a business. Every year the demand has grown, and our production has grown along with it.”

Their partnership began in 2011 with six acres and has grown to over 60 acres and a team of over 30 people. The farm, located east of Gainesville in Hawthorne, grows a wide diversity of vegetable and fruit crops, as well as pasture-raised heritage hogs and laying hens for eggs.

Frog Song Organics takes pride in the agricultural practices it employs on the farm, including using natural hay mulch that will biodegrade and build the soil. The farm uses a combination of USDA-certified organic and regenerative practices. It also incorporates animals into its farm rotations and uses 28

chickens and pigs to help work the land and provide natural fertilizer.

“Chefs and our CSA members have told us they can taste a difference in our food,” says Amy, “and they keep coming back for more.”

CSA, or community-supported agriculture, began as a way for farmers to work directly with the people they are feeding to cover planting and operational costs instead of going to a bank for a loan. Members give seed money and commit to a farm for a season, and then they generally receive a weekly share, or distribution, of the harvest of fresh fruits and vegetables.

“Think of it as a reservation in our field for your groceries for the season,” says Amy. “When we have an abundance, you get extra, and when weather or other issues affect crops, it may change what the box looks like a bit.”

Members can join the farm’s CSA for about $40 to $72 per week, depending on where they pick up their produce and the size of the share they choose. Frog Song Organics is looking to partner with more local businesses and groups in Marion County to establish more pickup locations. A Frog Song Organics CSA membership means you get to try different

In addition to the farm’s CSA memberships, they often welcome guests to the farm for special occasion dinners, such as the benefit dinner happening on November 18 for the Giving Garden in Gainesville. The farm has hosted everything from barbecue dinners to multi-course tasting menus. “[The dinners] are a chance to showcase our ingredients and have a place-based experience, take a walk on the farm and enjoy being outdoors,” says Amy. “We usually do one or more dinners per year, but we’re working on a commercial kitchen and looking forward to hosting more regular dinners in 2024.”

Frog Song Organics has worked with chefs from the Ocala, Orlando and Jacksonville areas, bringing in unique dishes with food grown at the farm. The chefs are usually customers of the farm who want to try out something different or to help benefit a community organization.

Other upcoming special events taking place on the farm are the Cane Boils happening in December and January where you can observe how sugarcane syrup is made, the farm stand where you can stock up on fresh veggies and the “Meet Your Meat” walking tour of the farm. Frog Song Organics also hosts its spring festival, which usually happens on the third Saturday in March, and the strawberry U-pick during the months of April and May.

“We love sharing what we have created here at the farm with our community, to taste flavors you cannot find at the grocery store, to inspire people to cherish the land, and to honor and value the work that farmworkers do to feed the community on a daily basis,” says Amy. “We also feel that it is our duty and obligation to share access to the farm land we steward with the community through dinners and our semi-annual festivals. Our festivals are educational events and free-ofcharge, and we welcome everyone.”

Bountiful Farms & Bistro A farm that began out of a true love of food— that’s the start of the story of how Gareth and Jessica Gentry opened Bountiful Farms almost 13 years ago.

“The farm started from absolutely nothing,” says Gareth. “No growing beds, water lines, greenhouses or store. The farm was started with

a shovel and rake. We didn’t even have a tractor.”

A family-run farm, Bountiful Farms is located in Okahumpka, just south of Leesburg, and grows a wide variety of leafy greens, lettuces and seasonal products October through May on its 10 acres. While Gareth and Jessica no longer run the daily operations at the farm— they’ve embarked on a new journey with a new dream—the farm is still family operated, with Jessica’s sister, Ginny Feathers, who has been a part of the farm for years, running the farm. The nursery is owned and operated by Lindsey and Josh High.

of crops seasonally, with staples including heirloom tomatoes (Cherokee Purple and Brandywine varieties), cabbage, kale, broccoli, carrots, bok choy, sprouts, onions and peppers.

Bountiful Farms practices organic farming standards but is not certified organic and operates on a micro-farm style where every square foot is used.

“The thing Jessica and I love most about farming is the process,” says Gareth. “It’s a true labor of love but can be something that tears you to pieces at times. Our principles have always been honesty and integrity, even when it hurt us.”

As any farmer knows, weather is out of your control but can make or break your seasonal harvest. The Bountiful Farms fields were under water in September and early October, putting an end to any hope of the farms’ CSA business this year.

“Mother Nature has a funny way of slowing you down,” says Gareth. “[We] lost all of the first harvest plants. This is the pain and suffering that farmers go through—we’re at the mercy of Mother Nature. CSA is very important [though] to both the community and the farmer. Both can benefit greatly if it’s a good season, but there are inherited

risks with the program. A perfect example is what happened this season. There are no guarantees the program will be successful due to weather.”

Thankfully, Bountiful Farms has another way to bring the community and the farm together for the love of food—Mama Ganoush’s Bountiful Bistro.

The farm had been operating for five years before the bistro came to fruition.

“We always had an idea of a farm-to-table gig,” says Gareth. “It was in the making for a while, and finally being able to cook the food was a great blessing. Pleasing customers was a great satisfaction for the both of us. Also, diversification is extremely important in any business adventure you take on. When one is suffering, the other holds it up.”

The bistro, operated by Reem Showman and her two chefs, is located on the farm’s property and is situated under a majestic live oak, providing shade and a beautiful dining experience in nature. The menu offers a wide variety of American and Mediterranean cuisine, including classic chicken and fried cod sandwiches, a grilled avocado stuffed with chicken appetizer, beef or chicken shawarma, lamb gyro and more—all made to order. The bistro also just added fresh fruit smoothies to the menu this season.

flavors full of spices and layers of flavors,” says Gareth. “You just have to try it. Our chef is from the Mediterranean area, where she was born and raised before moving to America.”

The bistro is open Wednesday through Sunday, 11am to 3pm, and you can check out the full menu on the farm’s website. While the cuisine is to die for, the setting makes the dining experience unique.

“The food and staff are wonderful—very good people,” says Gareth, “[and] it’s a place where you come to enjoy the beauty of a natural setting. That setting does include music, either from a singer or surround sound throughout the tree. [The setting] is very important to us because it came from the heart.”

Bountiful Farms also hosts a farmers market on Wednesdays from 9am to 2pm, where a large variety of outside vendors come and sell their products, including soaps, cheese, bread, jewelry, meats and more. You can check out the farm’s website and Facebook page for all the details on the location.

“Our establishment is very different than most,” says Gareth. “It’s a place you can come to pick up produce, have lunch and shop for landscape plants at the nursey. It’s a place to come relax and enjoy nature.”

All parents know that veggies and kids can sometimes have a stressful relationship. Even the smallest serving can send some kids into a dinnertime tailspin. Brave Harvest, a non-profit teaching farm in Gainesville, offers programs that can help kids—as well as adults—increase their food literacy and empower them to make healthy food choices.

According to the organization, it can typically take eight to 15 exposures for children to accept a new food. This wasted food can add up quickly, so many kids do not get the exposure they need to veggies to develop a taste for them due to the cost.

The programs offered on the Brave Harvest farm give kids plenty of chances to try new veggies in an environment that is supportive and encouraging. Kids who have gardening experience eat more veggies and have a better understanding of nutrition.

The organization gives kids the opportunity to get their hands dirty and learn the basics of gardening. It also shares creative and delicious ways to eat and enjoy the veggies they’ve grown on the farm at home.

Brave Harvest offers classes that teach youth how to grow and eat from plant to plate, as well as how to cook the plants they’ve grown. Eat Your Plants is an interactive program that introduces children ages 1 to 5 to gardening and vegetables through music, stories, gardening activities and more. At each class, kids get the chance to try a new vegetable snack harvested from the farm’s garden. These classes are provided on a donation basis. The more she learned about L’ANZA, the more impressed she became. Safety was the No. 1 appeal of L’ANZA, followed by the high quality of their products.

“It’s the safest and also the only hair color on the market that will heal the hair after every color service,” she notes. “The color has minimal fading and lasts longer than other colors. They say, ‘Flowers don’t fade in the sun, neither should your hair color.’”

Kimberli takes it as her personal responsibility to do right by her clientele and staff.

“My staff are using these products every day all day, so my concern for their safety and for my clients is why I made the switch to L’ANZA,” she says. “I felt we had a very similar culture to theirs. Even though this company is based in the USA and their products are made here, they use European standards, which are stricter than ours in the U.S. That means only safe chemicals are used in all products.”

A cross between the Bernese Mountain Dog and Poodle, Benji is “hypoallergenic,” so clients with allergies aren’t affected.

“A lot of people come in even when they don’t have appointments just to see Benji,” smiles Kimberli, of the big pup who accompanies her to work every day.

G

rowing up in New England, Jeremy Zajac connected food with happy family times.

“I’m Italian and Polish; my family always cooked. I loved tasting all the layers in the food and was fascinated with cooking,” he says, remembering the heady aromas and feeling of kinship in the kitchen as they made meatballs, perogies and pastas for the holidays.

Jeremy took culinary arts classes throughout high school.

“I was the one guy doing cooking, not car, classes. Then I started making cookies and cakes, and I was the cool kid,” he laughs.

Like many teens, his first job was at McDonald’s, but that didn’t count as “cooking.”

He soon landed a job in the kitchen of the New England Conference Center. Working there and in other restaurants was how Jeremy found his way as a chef.

Although he took some vocational classes, hands-on learning was the best teacher.

In 2006, Jeremy moved from New Hampshire to Ocala.

“I worked at Eagle Ridge Golf Club and then started working for Chef Felix on the Boulevard.

I had a goal to be a sous chef and learned a lot of foundation working with him for about four years,” he says.

Jeremy went on to work as sous chef at Cuvee Wine & Bistro and then at Brooklyn’s Backyard as executive chef.

In 2019, he began working at County Line Smokehouse for the partnership group that then opened The Anchor, The Pizza Joint and Elevation 89 at the Ocala Airport.

He’s been executive chef at Elevation 89 since it opened in October 2021. Jeremy was given free rein to create the menu and is in his wheelhouse there.

He especially enjoys cooking with different proteins, which is apparent when perusing the menu. From bison burgers to dry-aged steak to a recent seafood special of chargrilled Mediterranean octopus, Jeremy’s adventurous spirit in the kitchen is on display.

When coming up with new dishes, he

routinely makes them ahead of time so his team can taste what they’re serving.

“This is my passion. I could cook all day long, but I couldn’t do this without my partners Chris Wilson and Daren Robinson, my staff and my family,” he says.

“I work 50 to 60 hours a week, but even on my day off I cook,” smiles Jeremy, who cooks on Sundays with his sons, Chris Zajac, 22, and Christian Vail, 12.

His favorite dish at home is homemade marinara sauce.

“I love sharing it with friends standing by the pot of sauce dipping our bread in the pot and drinking wine,” he says. “I like to make people happy with food.”

t’s not easy being cheesy, but when you head to Magnolia Art Xchange’s Mac at the MAX on November 11, you’re in for an ooey-gooey, cheesy time.

This mouthwatering culinary extravaganza isn’t just about satisfying your mac and cheese cravings—it’s also a fundraiser that supports the creative spirit of the Magnolia Art Xchange. Contestants will whip up their unique twists on this classic side dish, competing for the titles of “Mac Master” and “Cheesy Champion.”

Guests will have the opportunity to sample a variety of creative mac and cheese dishes.

They’ll also have the power to select the first Mac Master. A panel of esteemed judges will lend their expertise to the event and will have the challenging task of selecting the ultimate Cheesy Champion.

The event is the brainchild of MAX board member Darian Wesolowski, who sums the event up perfectly.

MAC AND CHEESE WITH PECAN BREADCRUMBS • 8 OUNCES CAVATAPPI PASTA • 1 TSP SALT, PLUS ADDITIONAL FOR SALTING PASTA WATER, TO TASTE • 1 TBSP BUTTER • 1 BLOCK (8 OUNCES) CHEDDAR CHEESE

• 1/2 CUP RAW PECAN PIECES • 15 OZ PART-SKIM RICOTTA CHEESE • 4 TBSP SOUR CREAM • 1/4 TSP GROUND PEPPER • 1 LARGE EGG, LIGHTLY BEATEN

PREHEAT OVEN TO 375°F. COOK CAVATAPPI IN SALTED BOILING WATER. DRAIN, RESERVING 1/2 CUP PASTA COOKING WATER. RETURN PASTA TO POT, AND STIR IN BUTTER. USING BOX GRATER, SHRED CHEDDAR CHEESE. USING FOOD PROCESSOR, COMBINE 1/4 CUP SHREDDED CHEDDAR CHEESE WITH PECANS. PROCESS TO COARSE BREADCRUMB CONSISTENCY. ADD REMAINING CHEDDAR CHEESE, RICOTTA, SOUR CREAM, 1 TSP SALT AND PEPPER TO WARM PASTA. STIR UNTIL THOROUGHLY COMBINED. ADD EGG; STIR. ADD 2-4 TBSP RESERVED PASTA WATER TO LOOSEN MIXTURE; STIR UNTIL SMOOTH. POUR INTO BUTTERED 9-INCH SQUARE OR ROUND CASSEROLE DISH, AND TOP EVENLY WITH PECAN TOPPING. The event happens from 4-7pm and takes place at the historic Union Station, located

at 531 NE 1st Avenue in Ocala. Tickets are available for just $20 each, or you can go all out with the VIP experience for $40. You can secure your spot by visiting maxocala.org.
