Letter From The Publishers

Smells like Friday Night Lights here in Bobcat Country! The start of the school year always brings excitement and new beginnings. This year, our family sent our second son off to college at Texas Tech. It doesn't get any easier when the second child leaves the home. If anything, it might be a little more difficult. We know the future is bright, but we also know that this is the start of him needing us less and less. While that is a great realization as a parent - to know your children are thriving, it's a tough pill to swallow at times. This issue of OurCelina is packed with all the information you'll need for Celina Oktoberfest, Main Street events, City of Celina information and Chamber of Commerce membership updates. We also have your updated Celina Bobcat football schedule, we go on the record with Celina head volleyball coach, Ginger Murray and much much more! We so appreciate all the support you give to us each and every day. With OurCelina, you have a true community partner. We live here, we work here and we are Bobcats through and through!

It is Well... It has been a wonderful summer. It's been a time to enjoy vacations together as families, the Texas heat and a little more sleeping in. In July, it was also a time to remember the birth of our Nation and the freedoms we enjoy. Our forefathers came to this country seeking freedom to worship in the way they chose, free from persecution. Since then, many have sacrificed to keep those freedoms available to us. There are many freedoms we all enjoy, but the freedom I would like to talk about is the freedom to choose. Our society has offered individuals the freedom to choose to believe whatever they would like. They can choose a particular religion or theology or choose to believe in nothing at all. This summer I had the opportunity to go backpacking with my son. Out in the mountains the stars are amazing at night. We could not believe how many stars filled the sky. During the day, we also got to see the beauty of the world and it’s intricate design. Many have said that a Creator or God made it all. Some believe it just happened over time. Nobody can definitively prove the existence of God or the absence of God. We have the freedom to choose what we believe. I choose to believe in a God that loves and watches over his children - a God that created all that we see and enjoy in this life and who has a plan for us to return to live with him. That choice requires faith. Paul wrote in Hebrews 11: 1, “Now faith is the

8

Freedom substance of things hoped for, the evidence of things not seen.” It is this faith that we can choose to have. It is this same faith that can empower us and bring us peace in times of trial. If we believe in a God that lives and loves us, life can be lived with optimism and hope. Paul also said in 2 Corinthians 5:7, “For we walk by faith, not by sight”. Part of the purpose of this life is to learn to have faith, to believe even when we cannot see. When we have that kind of faith, we can start to see the hand of God in our lives, and that faith grows and strengthens us more. We see Him in little things like flowers, birds and trees. It is my hope that we can all find peace through our faith in a loving God. As Jesus said: “Don’t be afraid, just believe.” -Bishop Matthew Lloyd The Church of Jesus Christ of Latter-day Saints Come Worship With Us: The Church of Jesus Christ of Latter-day Saints 970 North Coit Road Prosper, Texas 75078 972-802-3446 Sunday Services: 8:00 am, 9:30 am, 11:00 am, 12:30 pm Visitors welcome!

From The Office of Mayor

Sean Terry

Warmest greetings! It’s no secret that growing communities like Celina find themselves adding new residents virtually every day. Individuals and families looking to plant their roots in a place they can call home, and feel like they’re a part of something special, look for places like Celina. They want to raise their families in a safe place, send their kids to good schools, become active in fun community events, and enjoy natural surroundings. Celina offers all of these things and much more, while still providing easy access to big city amenities close by. I may be a little biased, but I think Celina is a jewel of a city, offering so much to residents and visitors, while still maintaining the character and charm that has made it what it is. While I try my best to meet as many new residents as possible, I know that I can’t personally welcome each and every individual who chooses to make Celina their home. I hope, however, that both new and established residents feel welcome. A drive through the city will undoubtedly convince you that we are a growing community, and unfortunately, because of that, we must tolerate and endure road construction, detours, delays, and what may seem like endless road disruptions. Our street and road construction program may seem a bit excessive to some, but in reality, it is designed to bring us to a point where the roads and streets are adequate for the demand. More residents mean more traffic, and more traffic means that our streets, many of which are many decades old, must be modernized, widened, and updated. We try to keep residents aware of the street construction program through the city website at www.celina-tx. gov and our various social media sites. I encourage you make the city’s website one of your favorites and visit often. If you have not visited the City of Celina social media sites, I invite you to search for us on Facebook, Twitter, Nextdoor and Instagram and become regular visitors to those sites. In addition to the street construction that affects all of us, there are also many other projects that the city is undertaking that will surely go unnoticed by most residents. These are the critically important infrastructure projects that are the backbone of our future plans. As you know, development cannot happen without the necessary infrastructure like water, wastewater and other utilities. Before any kind of improvements can be made above ground, lots and lots of work has to happen below ground, and that’s what our infrastructure program is all about. Installing infrastructure is time-consuming and costly, but it’s an investment in our future that we must make. Single family housing developments as well as both large and small commercial projects cannot happen without the proper infrastructure, so while we may see water and wastewater lines being laid throughout parts of the city where nothing seems to be happening, that’s part of our municipal investment strategy. Finally, let me invite you to the Friday Night Market at the Downtown Square on Sept. 6 where we’ve invited local artists to present and sell their work. And please visit www.engagecelina.com and participate in the updating of Celina’s Comprehensive Plan, our Parks Master Plan and other long-range plans. It’s only through your active participation that our planning process can assure your voice is heard. 12

Celina C-Town

C-TOWN is an after hours learning opportunity where Celina High School students have a place where they can study, work on their laptop, meet on a group project, and even get assistance from faculty members or peer tutors on site if needed. The atmosphere is much like a student union building that you would find on any college/university campus. Tutoring is available in the following areas; ELAR (English, Language Arts & Reading), Math, Science, and Spanish. The C-TOWN Testing Center gives students the opportunity to complete a missed quiz/test without missing valuable class time. Students are responsible for arranging with their teacher that the missed assignment be sent to C-TOWN to be administered by one of our Testing Coordinators. Once completed, the assignments are sent back to the high school campus the following morning. CTOWN is open Monday, Tuesday, and Thursday nights from 4:00-8:00pm, with the exception that when the district is closed, the center will also be closed.

Time to dust off the ol’ dirndl and launder your lederhosen: Celina Oktoberfest is back. The second-annual event is set to take over the city’s historic downtown square, at West Walnut and North Ohio Streets, from 11 a.m. to 10 p.m. Saturday, Oct. 12, 2019. Featuring authentic foods and beverages, live entertainment, unique merchandise and fun, festive activities for all ages, this family friendly festival will be presented rain or shine. In celebration of all things Fall, Celina Oktoberfest will kick off with a ceremonial tapping of the keg and traditional toast. Exciting activities will follow throughout the day and evening, including a bratwurst-eating competition, authentic German costume contests and Chicken Dance circles for children and adults, a cakewalk and Dachshund Derby dog races. In the free Kids’ Zone, youngsters can take part in seasonal cookie- and pumpkin-decorating activities, craft workshops presented by Home Depot, play in bounces houses and interact with magical unicorn ponies. Get your prost on (German for Cheers!) in the expansive biergarten, featuring an impressive selection of domestic and imported craft brews. This is also where attendees age 21 and older can participate in a rollicking beer stein-holding contest and beer pong tournament. Celina Oktoberfest attendees need not worry about missing a single exciting play of college football action since the day’s biggest gridiron matchups will be shown on a massive LED screen set up in the city’s square. “Celina is well known for its long history of championship-winning football, so of course it will have a big presence at one of the city’s most popular annual events,” said Melissa Cromwell, president of the Greater Celina Chamber of Commerce, which produces the festival that is sponsored by Landmark Bank. “It’s just one aspect of Celina Oktoberfest that sets it apart from other Fall celebrations in Texas.” Additional entertainment will include live music and cultural performances, beginning with spirited sets by the traveling tuba quartet and clarinet trio of Imperial Brass, and American-polka aficionados The Royal Klobasneks. Bavarian dance troupe Texanischer Schuhplattler Verein will wow crowds with their traditional footwork before Alps-inspired musicians Auf Gehts Musik take a turn on the Celina Oktoberfest main stage. Back by popular demand are headliners The Dogensteins. A staple at festivals throughout North Texas and beyond, the group is best known for transforming popular rock, country and new-wave hits into foot-stomping polka tunes. Authentic German delicacies and other culinary treats will be served at Celina Oktoberfest by food-and-beverage purveyors including the popular Bayer’s Kolonialwaren bakery and Fischer’s Meat Market from Muenster, Texas.

It wouldn’t be Oktoberfest without bratwurst. Cristi&Ali Cuisine of Richardson, Texas, will serve traditional sausages as well as fried pretzels and parmesan fries. Conway’s Corn Dogs, Papa’s Homemade Ice Cream, Shucker’s Roasted Corn, Kona Ice and TM Frozen Treats will also be on hand with sweet treats and delectable goodies. Preston Trails Rotary Club, stalwart supporters of Celina-area events, will serve freshly made funnel cakes. More than two dozen merchandise vendors will set up shop at Celina Oktoberfest, selling a variety of authentic German goods as well as handmade items and other innovative products. Be sure to visit the excellent eateries and retailers on Celina’s downtown square, including Tender Smokehouse, Toasted Walnut Table and Market, Lucy’s on the Square, Papa Gallo’s Mexican Grill, Hey Sugar, Bongo Beaux’s Bourre Palace & Cajun Kitchen, Willow House Boutique, Grace Bridge Resale and Annie Jack. These and other area shops and dining establishments will be open and offering exclusive food specials and merchandise sales during the event. “There will be no shortage of entertainment and activities at Celina Oktoberfest, along with treats to tempt every palate,” Cromwell said. “This year’s festival is not to be missed.” General admission tickets for Celina Oktoberfest cost $5 per person and are on sale now at www.celinaoktoberfest.com, as well as at https://www.eventbrite.com/e/2nd-annual-celina-oktoberfest-tickets-67926157967. Children age 12 and under will be admitted free, as will any attendee who wears a traditional German lederhosen or dirndl costume to the festival. Same-day tickets will be sold at the gate (cash only). Alcoholic-drink tickets ($1 each) will be available at the ticket booth during the festival (four tickets for a 12-ounce beer; six tickets for 16 ounces). Commemorative, half-liter beer steins ($10) can be purchased and used at Celina Oktoberfest or kept as a souvenir. Free parking and shuttles will be at Celina High School, 3455 N. Preston Road, and at Brookshire’s Food & Pharmacy Celina, 675 Sunset Blvd. Limited free parking will be available adjacent to the square at West Pecan Street and North Louisiana Drive. Paid parking ($20) will be located at the Celina ISD Administration Building, 205 S. Colorado St. For additional information and updates about Celina Oktoberfest, visit www.celinaoktoberfest.com. Bongo Beaux

Celina's Most Anticipated Restaurant of 2019 Gives Back As They Prepare For Opening When Matt Elgiar and Jake Guevara offered the City of Celina their help, they probably did not anticipate a grueling, exhausting, draining, sweat-inducing, five-hour battle with weeds. But that’s exactly what happened. Both are managers at the under-construction Bongo Beaux’s Bourre Palace & Cajun Kitchen which is slated for a mid-September opening at 218 W. Walnut Street, steps from the downtown square. Bongo Beaux is a concept restaurant in the Radical Hospitality Group, which has staked a claim in the Denton area with LSA Burger Co., Barley & Board, and the upcoming Sunago Bell and H2Oak, as well as Earl’s 377 Pizza and Bumbershoot Barbecue in Argyle. Several of the company’s offerings are slated for the Grandscape in the Colony near the Nebraska Furniture Mart. While still building Bongo Beaux, and hiring personnel to staff it, the company made its usual and customary offer to the municipality – “let us know how we can help.” The Group has a long history of aiding the communities in which they operate. In fact, the company’s mission says, in part, that its facilities “provide a place for celebration and fellowship as well as sanctuary for the weary to reflect and rejuvenate.” That includes closing some restaurants to the public on days like Thanksgiving and serving free meals to people and families in need. And, that legacy of service is the place from which Elgiar and Guevara offered their help to Celina. The City’s Community Relations Manager Jessica Matehuala quickly remembered their offer when Celina’s Code Enforcement Department cited an elderly woman for high weeds at her uninhabited property. Rather than allow the citation process to proceed to adjudication, Matehuala called Elgiar and asked if he and his co-manager would be able to help the owner, a 94-year-old Celina resident with few options. The two agreed, sight unseen, to mow the yard and help the elderly owner avoid a fine. Little did they know what awaited them. Not only was the temperature topping the 90s, the overgrown grass and weeds were nearly as tall as the two men. The lawnmower and edger they had arrived with would be no match for the imposing foliage. Elgiar recalls the sense of foreboding. “We knew right away that we were going to need a larger mower,” paraphrasing the famous line from “Jaws.” The two reached into the bygone days of trailblazing by grabbing a pair of machetes and swinging the sharp blades with enough force to bring the vegetation down to size. At the end, it took five hours, 30 water bottles, several breaks in their air-conditioned truck with the fan at full blast, when they finally declared victory. “We had brambles and stickers in our beards, in our noses, and a few bites from unknown bugs, but we finished it.” Bongo Beaux will be a 6,000-square-foot restaurant with a large, covered patio. The theme is based on the concept of Bongo Beaux, a character from rural Louisiana who just wants to play bongos in a jazz band. While Celina was anxious for the Group to establish an LSA Burger at the location, the company opted for the Cajun theme, to complement the City’s annual crawfish boil. Elgiar’s appointment as manager and recipe developer seems ideally suited for the job. He’s a native of New Orleans.

Last month the staff at Bongo Beaux participated in a staff bonding community project by picking up trash around the City of Celina.

Catching Up with Celina Volleyball Head CoaCH

Ginger Murray

How do you feel the season has started? The season has started incredibly well. I couldn't be more pleased! We are 6-1 in regular season games outside of the Allen and Plano tournaments that we were in a couple of weeks ago. What’s been a strength you’ve been able to rely on in your last 5 games? One strength that i can always rely on every game is the readiness and drive of my girls hungry to get there next win. You only graduated one senior from last year so you have a strong returning team - how has that helped you? It helps tremendously having everyone back and us being able to just pick up right where we left off from last year. What are you looking for from your team in the first 5-10 minutes of a match? I'm looking for my team to be totally focussed on the task at hand in the first 5-10 minutes of a match and ignoring all distractions that might cause them to be distracted in the game. There have been some fierce battles in some of the matches, how do you manage that emotion for the girls? Some of our matches that have been extremely challenging I've made sure to remind my girls to just stay relaxed no matter what the score is and do their individual jobs and trust one another. How do you feel you match up? What truly makes our team so strong is our close relationship with one another. When you have a team that loves to be around each other and wants to work hard for one another, it obviously makes practices and games fun...the way it's suppose to be. What do you think will be your biggest game this season? We truly have a pretty tough schedule this year with some big tournaments (Allen and Plano) and some big schools in our regular season games along with tough opponents such as Krum and 2018 State Champions Decatur. Any matches you’ve played so far that were just plain FUN? The most fun thus far I believe was starting our season off with our first game against Frisco Independence and beating them in 5 sets. I really feel like that set the tone for what we were truly going to be capable of. This win set the tone for the upcoming season and the girls continue to look back at that game as a reminder of what they are capable of. What is the most rewarding part about coaching this group of ladies? The most rewarding part of coaching this group of ladies is to see their heart, hustle, and desire and ultimate love for the game in every practice and every game. Tell me about your assistant coaches. Coach Bartlett and Coach Colbert both have unique strengths that I am able to rely on as my assistants. They both do an incredible job and I am very thankful for them.

It was an action-packed summer at Celina Public Library. As part of the 2019 Summer Reading Program, an obstacle-course demonstration for youngsters was presented by John and Amanda Jones of Celina Ninja Fitness. Also, kids' comedian Brett Roberts starred in an outer space-themed comedy-magic show that was staged under the pavilion. On Aug. 3, Celina firefighters were on hand to congratulate kids for completing the Summer Reading Program and allowed them to explore one of the department's rigs. Finally, the winner of our contest was announced. Alexyanna guessed that there were 315 candies in a jar that had been on display this summer at the library (the correct number was 316). Way to go!
