W
e start 2020 with our traditional January bridal issue, I know from personal friendships and family that marriages that may have been on hold for several years due to the great recession are now in full bloom. The strong job market has given young couples the confidence to do what generations have done before them. The newly wedded brides have been working in a variety of jobs, and getting married won’t change those endeavors. Office buildings and corporate offices are filled with women working in every line of business at all levels of company responsibilities. Our schools are filled with female teachers. The real estate market is dominated by female agents. Civic organizations rely heavily on female volunteers. Stores of all types are filled with females shopping for the needs of their families. Restaurants and shops are heavily staffed with women of all ages serving the public. Carpool lanes are full of mothers picking up their children. I submit to you that much more than 50% of all cars on the road are filled with women either going to work to provide for their families or going somewhere to meet a need of their family. One of my favorite passages of scripture is Proverbs 31, I love it because when you fully understand Proverbs 31, you will never again believe that the Judea-Christian faiths historically teach that a woman’s position in society is lesser than her husband’s place is in the home. Different yes and arguably 24

much more important, since the working woman more often than not is still taking on the primary role of caregiver to her children. To understand the message of Proverbs 31, one must put in context the economic and social environment in which it was written. The Jewish household of its day was, in fact, a large working farm being run by the woman of the house while her husband was off tending to the matters of the Jewish State. She was running the family business, while seeing to needs of her family and her employees. In verse 16, she is seen expanding the business as she manages all her other responsibilities. The passage has been labeled many things: “The Noble Wife,” “The Godly Woman,” “The Women of Character,” “A Virtuous Woman,” “A Woman of Valour,” but for me she is simply a woman taking care of business. In Memphis, just as the woman of this message of Proverbs , a woman’s responsibilities require her to do many different things while sacrificing much to take care of the needs of others. The last verse of the Proverb proclaims “let her works praise her;” even today in the Jewish community it is one of the most loved passages being recited every Friday night by the husband to his wife to thank her for all she has done for him and the family. 4Memphis joins the author of Proverbs in lifting up and praising newlyweds, and the hard work of women of Memphis. She is like the merchant-ships; she brings her food from afar. 14
םָקָּתַו וט, הָלְיַל דֹועְּב--קֹחְו ;ּהָתיֵבְל ףֶרֶט ןֵּתִּתַו, ָהיֶתֹרֲעַנְל. 15 She rises also while it is yet night, and gives food to her household, and a portion to her servants. הֶדָׂש הָמְמָז זט, ָהיֶּפַכ יִרְּפִמ ;ּוהֵחָּקִּתַו, םֶרָּכ )הָעְטָנ( עטנ. She considers a field, and buys it; with the fruit of her hands she plants a vineyard. 16
ץֵּמַאְּתַו ;ָהיֶנְתָמ זֹועְב הָרְגָח זי, ָהיֶתֹעֹורְז. 17 She dresses herself with strength, and makes her arms strong. הָמֲעָט חי, יִּכ-אֹל ;ּהָרְחַס בֹוט-ּהָרֵנ )הָלְיַּלַב( לילב הֶּבְכִי. She perceives that her merchandise is good; her lamp does not go out at night. 18
ָהיֶדָי טי, ָהיֶּפַכְו ;רֹוׁשיִּכַב הָחְּלִׁש, ְךֶלָפ ּוכְמָּת. 19 She lays her hands to the distaff, and her hands hold the spindle. ּהָּפַּכ כ, ָהיֶדָיְו ;יִנָעֶל הָׂשְרָּפ, ןֹויְבֶאָל הָחְּלִׁש. 20 She stretches out her hand to the poor; yea, she reaches forth her hands to the needy. אֹל אכ-גֶלָּׁשִמ ּהָתיֵבְל אָריִת: לָכ יִּכ-ּהָתיֵּב, םיִנָׁש ׁשֻבָל. 21 She is not afraid of the snow for her household; for all her household are clothed with scarlet. הָתְׂשָע ןיִדָס דכ, רֹוגֲחַו ;רֹּכְמִּתַו, יִנֲעַנְּכַל הָנְתָנ. She makes linens garments and sells them; she delivers sashes to the merchant. 24
זֹע הכ-קַחְׂשִּתַו ;ּהָׁשּובְל רָדָהְו, ןֹורֲחַא םֹויְל. 25 Strength and dignity are her clothing; and she laughs at the time to come. ָהיִּפ וכ, דֶסֶח תַרֹותְו ;הָמְכָחְב הָחְתָּפ, לַע-ּהָנֹוׁשְל. 26 She opens her mouth with wisdom; and the teaching of kindness is on her tongue. הָּיִפֹוצ זכ, תּולְצַע םֶחֶלְו ;ּהָתיֵּב )תֹוכיִלֲה( תוכליה, לֵכאֹת אֹל. 27 She looks well to the ways of her household, and eats not the bread of idleness.

Playhouse on the Square Anniversary Gala

On December 1, UNICO Memphis held its Wine and Cheese Tasting in the theater at St. Benedict of Auburndale High School, featuring a concert by John Angotti. UNICO, which means unique or one of a kind in Italian, is the largest Italian American Service organization in the United States. Moonshine Ball
Moonshine Ball 2019, held at the Graceland Exhibition Center. reflected a patriotic theme as they celebrated the 50th Anniversary of landing on the moon. Chair of the ball was Pat Kerr Tigrett, and Astronaut Buzz Aldrin served as honorary chairman. The ball honored Tennessee’s great musicians and honored 50 courageous Veterans, brave policemen, and Women in Blue and Armed Forces. The Rev. Al Green Gospel Choir accompanied by Al Green Band wowed the guests with their amazing gospel voices, and the Color Guard performed as guests joined in to sing God Bless America, amongst several other amazing live performances.

Four Seasons/Memory, Inc held its annual Volunteer Appreciation and Gift-Giving luncheon at Southwind Country Club, and there was a surprise visit from Santa Claus! Memory Vice-President, Carol Jones, greeted guests as they arrived and President Mary Jane Criss opened the luncheon by welcoming everyone. While Rene Koopman played the piano, Santa Claus popped it to visit every guest and add his excitement to the presentation of the 2019 recipients. This year’s awards went to Page Robbins, Church Health, Alzheimer’s Dementia Services, and Trezevant Memory Floor. Instead of candy, Santa offered LiveStrong bracelets stamped with the message “Peace on Earth” that were well received and much appreciated. The event literally ended with a bang when all the guests simultaneously pulled apart their individual Christmas Crackers. They “popped” open and produced the crowns, games, and gifts for which they are famous.

T
echnology has advanced almost every aspect of everyday life. Now, technology is changing the fitness industry with the introduction of Manduu. Manduu utilizes electrical muscle stimulation (EMS) to create a workout experience that is effective, fast, and easy. The entire Manduu process is unlike any other traditional fitness regime – and so are the results. What makes Manduu so different? Let’s begin at the front door. The Manduu gym is intimate, welcoming, and not at all intimidating. It also doesn’t have the sweaty-gym-stench. You’re greeted by a skilled Manduu trainer, who acts as your personal trainer for your session. All Manduu trainers have at least a four-year college degree in either Exercise Science or Kinesiology. Trainers are passionate and knowledgeable about health and physical fitness. Another significant difference is the workout clothes: you change into Manduu leggings and top in a private dressing room. You do not have to invest in a workout wardrobe, make sure you’ve packed everything in your gym bag, or do the laundry. Once you’ve changed clothes, you step onto a machine that looks similar to a large scale you find in a doctor’s office. You place your feet on the sensors, and the machine scans your body (more about the results later). Now it’s time to do what you’re there for: exercise the Manduu way. The fitness area is very sleek, clean, and where the magic happens. You slip on a Manduu-designed vest and pant (similar to water skiing gear) equipped with electronic sensors. The vest and pant are cinched snug with buckles to make sure the sensors are making contact. Manduu uses the only FDA-cleared whole-body EMS system in the United States. The vest and the pant are then plugged into a machine with a futuristic feel, and the workout begins. Did I mention the workout is 15 minutes? That’s right: 15 minutes is all that is necessary to get the same results as a six-hour workout at a traditional gym. The trainer works with you through the entire session, guiding, directing, and assisting with movements to get the optimal effects of the electrical muscle stimulation. The trainer activates different areas with electrical pulses, and for beginners, the pulses last for four seconds. During the four second periods, you flex that muscle group. The pulses are a tingling sensation delivered via a low voltage battery, and there is not enough electricity to hurt. 58

Nearly 100% of muscle fibers in all nine major muscle groups are activated, compared to 65% in a traditional workout. After 15 quick minutes, the session is over. No sweat, no stress, and no more excuses for not working out. EMS has been a known therapeutic, rehabilitation, and training tool for decades. A quick Google search says the earliest known use of EMS dates back to over 2,000 years ago when the Egyptians discovered that certain fish emit electrical impulses, and these fish were used to treat pain. “Electrical stimulation has been used in the rehab-world over the last 50-60 years, using it to make patients well over time, to treat different types of illnesses, and to treat muscular-skeletal-type injuries in a healthcare role,” explains Wiley Robinson, Chief Operating Officer of Manduu America. Whole-body EMS began in Europe. Recently the Food and Drug Administration cleared EMS training for use in nonmedical settings, and Manduu is at the forefront of whole-body EMS in the United States. Erling Jensen Pork Belly with Pickled Fruits & Vegetables Pork Belly: Cure pork belly in a salt-sugar mixture, spices as desired. Cure for two days. Rinse mixture off with water, braised at 250 degrees for 8 hours or until tender. Pickled Fruits & Vegetables: 1 cup rice wine vinegar ½ cup lemon juice Salt to taste Sugar to taste Black pepper Bring all ingredients to boil. Place desired fruits and vegetables separately into bags or containers, pour hot pickling liquid into each vessel and cool. Refrigerate for at least 6 hours before serving. 60

Salud! at Whole Foods, Poplar Avenue Seared Scallops with Asparagus and Lemon Beurre Blanc Zest and juice of 1 lemon ¼ cup white wine vinegar ½ cup dry white wine 5-6 tablespoons unsalted butter, cold and cut into small pieces Salt and white pepper, to taste Olive oil, as needed 1 bunch asparagus, ends trimmed and cut into ¾” pieces Salt and pepper, as needed 20 bay scallops, dried with paper towels For the Beurre Blanc, combine in a small saucepan over medium high heat the lemon zest and juice, white wine vinegar and white wine. Bring the mixture to a boil and reduce down until about 1 tablespoon of the mixture remains. Off the heat, begin whisking in the butter a few pieces at a time to thicken the sauce. If the butter is melting too quickly, cool down the mixture before adding more butter; if the butter is not melting into the sauce, return the pan over a low heat and continue adding the butter. Keep warm. In a fry pan, heat 2 tablespoons of olive oil over medium high heat. Add the asparagus pieces and season well with salt and pepper. Cook, stirring occasionally, until tender and lightly charred. Remove from the pan and wipe clean with a paper or kitchen towel. Season the dried scallops with salt and pepper on both sides.Return the fry pan to high heat and add 1 ½ tablespoons of oil, swirling the pan to coat. Once the oil is almost smoking, add the scallops in an even layer without touching, cooking for 1-2 minutes until nicely browned on one side. Turn over and cook for 1 minute more until the scallops are firm, yet bouncy when pressed in the center. Arrange on a serving platter. Top with a drizzle of the prepared sauce and two pieces of asparagus. Serve immediately. You may need to cook the scallops in batches depending on the size of the pan used. If so, make sure to wipe out the pan and use fresh oil with each batch.

Owen Brennan's Calamari
8 ounces calamari 2 cups buttermilk 1 green bell pepper, julienned 1 red bell pepper, julienned 1/2 cup peppadew peppers, chopped 1/2 cup banana peppers, chopped 1/2 red onion, julienned Corn flour Cut the calamari into bite size pieces. Soak in buttermilk for one hour. While soaking, put all of the peppers and onions in a skillet and sautee with butter and garlic until tender. Once done, drain the buttermilk from the calamari and toss evenly into corn flour. Make sure grease is at 350 F and drop calamari into fryer for 2 minutes. Once it is cooked, drain the grease and top with sauteed peppers.

Poached Shrimp served with Coctail Sauce For the Shrimp: 2 pounds shrimp 2 onions, chopped 1 carrot, chopped 1 bunch celery, chopped 2 tablespoons whole black peppercorn 2 bay leaves Place all ingredients except shrimp into a stockpot of water. Bring to a boil, and boil for 30 minutes. Put shrimp in the stockpot, and let sit for 5-7 minutes. Once the shrimp is cooked through, strain and cool immediately, discarding all cooked vegetables and seasoning. Served with cocktail sauce.

ou could say it was love at first sight - and bite! Renee made this delicious Mediterraneaninspired dish while she was dating Justin, and the rest is history. Justin and Renee got married May 7, 2019. The couple loves to travel and are self-proclaimed foodies, and Renee says they base a lot of their trip planning around if that country has good food. “We both really enjoy Mediterranean food, and one of the first big trips we took together was to Greece last year, and we spent our honeymoon in Italy - spending most of our time on the Amalfi coast,” Justin says. Other international places the couple have traveled are France, the Netherlands, Jamaica, the Bahamas and South Africa. Renee’s enjoyment for cooking has grown since dating and marrying Justin, and she really enjoys meal planning for the week. “I could eat non-American food every day of the week, and the Mediterranean region is my favorite. I love the flavors, I love the fresh ingredients, and the healthy aspect to it. We try to do a lot of vegetables, chicken, fish, and use olive oil and lemon. On any given day of the week, a meal can easily be Meditearranean based,” Renee says. While at home, these working professionals - Justin is an attorney and Renee is a CPA - enjoy being in the kitchen, watching Food Network, Memphis sports, or the news. “For our home the way it is set up, we spend the most awake time in the kitchen,” Renee says. She loves the whole theory of cooking for loved ones. “Meals bring people together, whether it is your neighbors, your friends, or family can be an appetizer or a dessert - but food just brings people together,” Renee says. Renee says this is a simple, mid-week dish that has special meaning to her and Justin. “This dish is reminiscent because it is one of the first things I cooked for Justin while we were dating, and it is just one of those happy meals that brings back a lot of memories of Greece and Italy, and you can’t beat it for being healthy,” Renee says.

Ingredients:
4 chicken thighs, boneless and skinless 1 shallot, peeled and sliced thinly 6 garlic cloves, peeled and minced 4 seedless English cucumbers, cut into rounds ½ cup sliced Kalamata olives 10 ounces container petite tomatoes, halved ½ cup chicken broth 1 bunch parsley, chopped

Mid-Week Mediterranean Chicken 1 cup uncooked orzo ¼ cup feta cheese 2 lemons, halved 3-4 tablespoons extra virgin olive oil (EVOO) Seasoning rub for the chicken: ½ teaspoon salt ⅛ teaspoon pepper ¼ teaspoon ground cumin ¼ teaspoon ground coriander ¼ teaspoon dried oregano
Instructions: Rub the seasoning for the chicken onto both sides of the chicken. In a large skillet, add 2-3 tablespoons of EVOO or enough to lightly coat the skillet. Cook the chicken in a single layer on high heat for about 3-4 minutes on each side until it starts to brown. Remove the chicken from the pan, and set aside on a plate. Reduce the heat to medium. In the same pan with the remaining oil in the skillet, add the shallot and garlic, cooking for 1 minute until fragrant. Next, add the cucumbers, tomatoes, olives, juice of 2 lemon halves, and chicken broth. Scrape up any bits on the bottom of the pan, and bring to a simmer over medium-high heat. Return chicken to the pan with half of the chopped parsley. Cover with a lid to finish cooking for about 10-15 minutes or until chicken is cooked through and the sauce has thickened. While the chicken is cooking, prepare the orzo according to package instructions. Once the orzo is cooked according to desired texture, drain, but do not rinse the pasta. Next put the cooked and drained orzo into a mixing bowl, add 1 tablespoon EVOO, the juice of 2 lemon halves, remaining half of parsley (leaving a small amount for garnish), feta cheese, and gently mix it all together. Plate the orzo in an open circle toward the outer edge of the plate, next the vegetable mixture from the pan as the second inner circle, and finally the chicken in the middle. Garnish the chicken with a small amount of fresh parsley. Enjoy! Optional Substitutions: Feta can be removed to make the recipe dairy-free. 4 tablespoons of capers can be substituted for ½ cup of Kalamata olives. JANUARY 2020

from blues bands to opera—awaits the Memphis area. January weather is anyone’s guess, but the new year holds some new opportunities. Please boldly go where you have never gone before, (or gone recently). The International Blues Challenge is perhaps the most significant Memphis musical event that most Memphians have never been to. Remember how excited we were to watch Bluff City Law and see the Stax kids on Ellen? Yeah, it’s like that: An amazing love letter to Memphis from 20+ countries sending their best blues musicians on a pilgrimage to Memphis. You really should go for at least one night. Did you know that Metropolitan Opera has been holding regional auditions in Memphis… for about 50 years (Gail Robinson won here in the mid-1960s and went on to a fabulous career). I can go on, but these two juxtaposed events so well encompassed the tremendous variety of artistry that is Memphis that I probably don’t need to. Case closed. SIDEKICKS: A MUSICAL LEGACY
By: Anna Rose Thomas his past weekend was the first showing of the original musical Sidekicks written by Hutchison students Katy(12th) and Zoe Gilmore(10th) and their father, the late Dr. Barry Gilmore. An institution at Hutchison, Dr. Gilmore served as an administrator, teacher, and mentor to all who were lucky enough to meet him. The play which follows the story of a group of kids with specific powers desperately in need of honing who all attend a Sidekick Convention to train for the possibility of working alongside a hero. Playwriting is a complex task with a lot of moving parts; after writing the script, Dr. Gilmore and his daughters had to choreograph every dance and block every movement. With the help of Leisa Collins, they also wrote the music for every musical number including a personal favorite of Katy’s: “Partners in Crime.” The amount of time and planning that went into the musical demonstrates the care that everyone involved put forward for the show. According to Katy and Zoe, the play really came alive and felt real when they heard the music played by a live band for the first time. It was then that everything started to come together and feel official. The cast includes a variety of schools including Lausanne, Ridgeway High, and Hutchison. Katy, Zoe, and their dad originally started writing the musical about three years ago, but because of the time demands of high school, life got in the way and postponed the finishing of this task until last spring when Dr. Gilmore was diagnosed with liver cancer. Because of his creative character and musical mind, they wanted him to be remembered for his artistic abilities and lovable humor. Together, the family wrote and finished the comedic-action musical that will be remembered for years to come for its originality and exigence. The play ends with the sidekicks joining together to save the heroes and correspondingly the day. Something interesting about the growth of the characters in the play is growth of the adults as well as the children signifying one of the overarching themes in the musical: “that all people have room to grow.” Even though humanly dilemmas cause some hiccups on the road to their success, the sidekicks persevere through worldly issues like social exclusion, teenage crushes, and friend troubles. Sidekicks the musical was simply wonderful to watch and will definitely serve as a memorable legacy for Dr. Gilmore for years to come.

t. Mary’s senior, Brooklyn Johnson (17), was recently awarded the “Keeper of the Dream Award” by the National Civil Rights Museum for her work establishing Empower Memphis, which provides low-cost, dance and cheer camps for the youth of Memphis. Johnson said that the idea for Empower Memphis was suggested to her by someone when she was “sitting at home over the summer without much to do… but, after looking into [teaching classes], [she realized] the easiest way to teach would be to set up a non-profit to benefit the community.” Johnson worked for over a year to create this organization independently with some help from her family. Johnson opened her first camp during the last week of May of this year due to the fact that, “most summer camps don’t start until the first week of June, and kids that get out of school before that and rely on the food from free meals don’t have food for that period of time, so I wanted to try to fill that gap.” With that goal in mind, she provided the campers with a healthy breakfast, snack, and lunch every day, ranging from foods such as carrot sticks, bananas, yogurt, sandwiches, and salads. Johnson and her team of volunteers also thought of fun, creative activities for her campers such as creating birdhouses out of water bottles, tie-dye shirts, and picture frames out of popsicle sticks. They also taught a dance routine and a cheer routine to each of the age groups which they performed in a “recital” for their parents at the end of the week to showcase their hard work. Johnson does not have any more camps planned for 2019 thus far, but she is planning on doing more camps in May and August of 2020 and hoping to recruit more volunteers (any person age fifteen or older).

ince 2002, the St. Jude Marathon Weekend has celebrated the outstanding work done by the children’s hospital in downtown Memphis. Not only does the massive event bring in thousands of runners from across the world and millions of dollars for the city, but it also is the single largest fundraising event for the hospital.
On December 7th, a whopping 26,000 participants and 40,000 spectators crowded the tight downtown streets to help fight childhood cancer. The streets were closed off for the majority of the day as runners of all ages were seen taking part in the 5k and 10k, both of which began before the sun had fully peeked over the river. Those who were brave enough ran the half and full marathon. In total, over $12 million was generated for St. Jude. My running of the St. Jude Half marked the completion of my first half marathon. Going into it, I had heard of the race’s massive and exciting scale, but no story can properly put into perspective how fun and life-changing such a run was. Running 13 — or 26 — miles is no easy accomplishment whatsoever. The difficulty and pain, however, is immediately set aside when you begin to run through the St. Jude campus and see patients and supporters cheering you on. Signs like “YOU’RE MY HERO” and overwhelming support from complete strangers elevated this truly special experience. I realized that logging mile after mile suddenly isn’t as bad when you do it for a purpose. Few runners received more roaring applause than Adam Cruthirds, the 22-year old former St. Jude Patient who completed the full marathon — all 26 miles. While that achievement is impressive enough, Adam’s crossing of the finish line cemented perhaps a more impressive one. Early in December, it was revealed that Adam and his fundraising team had raised over $1 million for St. Jude. In the coming weeks, he would appear on the Today Show to discuss his accomplishment, both through the marathon and fundraising. Completing a full marathon after a grueling 30 months of chemotherapy is almost impossible, but Adam’s choice to turn an unfortunate tragedy into a positive experience made it achievable.
