This Summer has brought some serious heat and there’s no better way to cool off than being impossibly chic by a sublime pool. Today’s swimwear trend is focusing heavily on the maillot de bain, which makes perfect sense as it is a practical singular garment, but can be very sophisticated with revealing cut outs, high-cut legs, and plunging necklines. PARADISE SEAFOOD
Paradise Seafood’s owners Ted Perkins and Don Willadsen have a passion for fresh seafood and providing their customers with fresh, wild-caught seafood. Sold at the Agricenter Wednesday through Saturday, plus other locations throughout the city, Paradise offers a variety of fresh seafood, fresh jumbo lump crab meat, fresh shucked oysters, smoked tuna dip (one of Ted’s creations), boiled shrimp, fresh yellowfin tuna and snapper, trigger triple tail, redfish, king crab legs, lobster tail, royal red shrimp, and much more. As a young boy growing up in Gulf Shores, AL, Perkins watched his grandfather run a seafood market and work as a commercial fisherman. Perkins' uncle, a Millington native, saw the need for fresh seafood in the Memphis area. Ted, having amassed several connections in the seafood industry down in coastal Alabama, seized the opportunity to deliver fresh fish from his friends and wholesalers on the beach to landlocked Western Tennesseans; Paradise Seafood was born. One of Ted's more loyal customers, Don Willadsen, would house Perkins in a spare bedroom for his five-day-at-a-time business venture, and the friendly relationship proved to be very profitable: Don and his wife became business partners. The idea for Memphis Barbeque Supply (MBS) started when Jimmy Shotwell saw the need for a onestop shop for all things barbeque and grilling in Memphis. Through his travels around the country with his previous job, Jimmy discovered many great barbeque supply stores around the country but nothing available in the home of barbeque - Memphis. As an avid backyard griller and barbeque competitor, Jimmy realized that he and many others wasted time and money going from store to store or shopping online to get the supplies they needed for competitions or for grilling in the backyard. Jimmy turned to longtime friends and Memphis in May teammates Chris West and Will Hampton with his idea. With their help and the support of other family and friends, Memphis Barbeque Supply quickly went from just an idea to a thriving store carrying “everything but the meat!” The store opened in April of 2014. MBS carries “everything but the meat” for the backyard weekend griller and the professional competitor. Stocking over 250 rubs and sauces, MBS listens to their customers to carry the brands and products they need, as well as plenty of new rubs, and injections from around the country for them to try. Smoking a Fatty AKA Bacon Explosion with MBS Shotwell Rub and Blues Hog Original 1 package of Breakfast sausage 8 ounces of sliced mushrooms 2 packages of bacon 1 package Feta cheese 1 diced red onion MBS Shotwell Rub Blues Hog Original Sauce
Mix breakfast sausage, mushrooms, cheese and red onions. Place in an oiled 1 gallon zip lock bag. Using a rolling pin or large can roll the sausage mixture flat. Once you have an even layer of the sausage mixture cut the bag along the sides. On a clean cutting board create a basket weave of bacon slightly larger than sausage mixture. Place the sausage mixture on top of the bacon. Then from one side start rolling the bacon over the sausage mixture until you have a nice bacon roll. Shake on your favorite BBQ rub. Close the ends of the bacon roll. On a heated grill place the bacon roll over indirect heat at approximately 200-250 degrees. Cook the bacon roll until the internal temperature is approximately 160 degrees. Brush the bacon roll with your favorite BBQ sauce. Remove from grill and let it rest for 5 to 10 minutes. Then slice the bacon roll and serve.

VICTORY LANE BBQ For Victory Lane BBQ owners Doug Golden and Erik Garner, the business got started during a conversation between the friends. “We were discussing what to do with a racecar I had, and Erik said, ‘Dude, let’s turn it into a grill.’ So we did,” Doug recalled. “In 2010 we formed Victory Lane BBQ, LLC, built the racecar grill, and started cooking at Tiger Lane for friends at Tiger football games.” Their first barbecue competition was in 2011 and since then they have grilled victorious as the Memphis BBQ Network Hog Team of the Year in 2013 and Memphis BBQ Network Overall Team of the Year for 2014, 2015, 2016, and 2017. Victory Lane BBQ offers a wide variety of sauces, rubs, injections, and marinades, and they are excellent on pork and beef, as well as seafood and veggies. Competition pitmasters all over the world use Victory Lane, and often layer the flavors to enhance what they’re cooking. Victory Lane BBQ Meatloaf Turtle:
Make a bacon weave (Google instructions, if need be) and set aside. 3 pounds of ground beef 1 onion 1 bell pepper 3 eggs 1/2 cup bread crumbs 1/2 cup of Victory Lane Original Sauce 1 tablespoon Victory Lane Season All Make a bacon weave (Google instructions, if need be) and set aside. Mix all ingredients then form in a pan in the shape of a turtle. Place the bacon weave on top of the meat. With a smoked sausage, make a 3” head for the turtle; cut four 2-3” pieces of sausage for the feet. Slit the ends of the sausage and spread to make toes; use the last of the sausage for a small turtle tail. Once your turtle is assembled, add about 1/4 cup of water in the pan. Cook in an oven to 160 degrees. If too much grease, remove excess reserving some to mix with Victory Lane BBQ Original Sauce (or Victory Lane Spicy for a little more kick). Mix grease and sauce, then using a silicone brush, glaze the bacon weave and put back in oven for 5-10 minutes to let the sauce caramelize. First one to back away from the table is a turtle! Honestly, I am not interested in many other options as we approach the dog days of summer (that phrase refers to the astronomical position of the star Sirius, not your panting chocolate Labrador retriever). In the days before air conditioning, Southerners who could do so fled in droves toward cooler climates – Camden, Maine or the Highlands of North Carolina – and the local arts largely took a break. I do not entirely understand why we now flock to sunny beaches to test

the capacity of sunscreen, but the other change from days of yore is that the arts are with us through the warmer season. True there are fewer performances, but programs such as Opera Memphis’ Summer Conservatory or Children’s Ballet Theater are keeping busy as ever. The listing below includes a very respectable number of art openings and a couple of musical events. There is really plenty to do to keep your mind occupied and your horizons expanding, and it is also perfectly acceptable to relax and enjoy the slower pace while you can. Stay cool.

Creative her entire life, local artist Deanna Hamsley is in her season of painting. “My right-brain has been on overdrive for as long as I can remember. I began painting about four years ago. I always wanted to paint for other people. I truly believe that we all have seasons of life. For now, this is where God has me - it’s my season,” she shared. She brings a diverse background of creative pursuits, and began working in mixed media with an experimental approach. “Being self taught with little awareness or concern for the ‘rules,’ I find myself with a natural tendency to break them.” The result is Deanna’s beautiful paintings that are inspired by nature, the human form, emotions, music, and the life stories of others. “I find that people are always looking for more positivity and happiness in their lives, and I believe art is a way of offering that to them.” Deanna’s work can be found locally at Palladio Interiors in Memphis, Southern Muse in Collierville, First Fruit Collection in Collierville and Southern Avenue Company in Germantown. SALUD! at Whole Foods Market, Poplar Avenue Grilled Succotash Salad with Tomato Tahini Dressing
Prepare the dressing: Preheat a grill pan or large cast iron skillet over medium-high heat. Toss the tomatoes with a small amount of olive oil and grill until charred on all sides but not bursting, about 4 minutes. Transfer to a blender and combine with the tahini, vinegar, smoked paprika and salt and pepper. Blend until smooth, adding

1 red onion, peeled and cut into thick rings

Reduce ingredients in a pot over high heat. Remove from heat once small tight bubbles have formed at the bottom of the pot and vinegar is in a glaze state. Cool and remove bay leaves.
Lucchesi's Ravioli & Pasta Shop Corn & Tomato Salad Dressing: 4 tablespoons mayonnaise 2 tablespoons vinegar ½ teaspoon dry mustard ½ teaspoon pepper ½ teaspoon celery seed 2 teaspoons salt Mix all ingredients together and refrigerate overnight. Salad: 2 cans white corn, drained and rinsed ¾ cup cucumber, chopped ¾ cup bell pepper, chopped ¼ cup purple onion, chopped 2 tomatoes, chopped Combine all ingredients in a large bowl and toss. Blind-bake the pie crust and set aside while preparing filling. Note: remove as much moisture from the tomatoes as possible. Heat pan with olive oil and butter until hot but not smoking. Saute the diced tomatoes and onion (with salt to taste) until caramelized, then drain on paper towel and set aside. Salt tomato slices and place in a strainer to allow liquid to drain. Once drained, layer along with whole basil into the blind-baked pie shell. Topping: In a bowl add grated cheeses, sour cream, mayonnaise, sautéed onion and tomatoes, salt and pepper to taste, and mix well. Once mixed, place directly on top of filling. Garnish with 3 thin slices of tomato prior to baking. Bake on the middle rack of oven for 30 minutes at 350 degrees. Remove from oven once topping becomes golden brown. Serve warm with fresh basil leaves to garnish. July 2018

OWEN BRENNAN'S Ombre Caprese Salad 1 purple tomato, ¼-inch thick slices 1 heirloom tomato, ¼-inch thick slices 1 handful of grape tomatoes, sliced in half 1 pound of fresh mozzarella, ¼-inch thick slices 20 to 30 leaves (about 1 bunch) fresh basil Balsamic glaze, for drizzling Coarse salt & pepper Layer alternating slices of tomatoes and mozzarella, starting with the purple tomatoes first. Next, add the heirloom tomato slices. This creates the ombre effect. Add a basil leaf between each layer on a long, wood platter. Surround the dish with grape tomatoes. Drizzle the salad with balsamic glaze and season with salt and pepper, to taste.

Tomato Caprese Salad with Proscuitto and Artichoke 8 ounces cherry tomatoes, heirloom (all colors) cut in half Arugula lettuce 6 slices prosciutto 2 ounces artichoke heart quarters, drained 1/2 ounce basil pesto 2 ounces balsamic vinaigrette Vegetable oil as needed Preheat oven to 350 degrees. Using 2 cookie sheet pans, place prosciutto flat between the pans; place in the oven for 10-12 minutes or until it is crispy and golden brown. Remove from the pan and set on paper towels. In a frying pan, add oil and heat to medium heat. Dust artichoke heart quarters with flour and cook until golden brown. Remove from oil and drain on a paper towel. Dress arugula with balsamic vinaigrette, tomato, fried artichoke and drizzle basil pesto on top. Garnish with prosciutto.

Editor’s Note I heart Memphis: a phrase that echoes across our city. Lately, I have realized how lucky I am to have grown up in a city like Memphis because Memphis truly has it all, from sports leagues, exciting events, and most of all, people who care about the city as a whole. Memphis, itself, is growing and prospering because there are countless people who are striving to improve the city and attract newcomers. As high school students, we have a profusion of opportunities to grow and serve within our community, and I believe that it is important to take advantage of the fact that we are able to impact Memphis so member of 4Memphis Impact. I wanted to engage our youth community into the core of Memphis and open the eyes of my peers and fellow high schoolers to see beyond the realms of our own institutions and into the happenings of Memphis. phis monthly by writing articles about community in fashion shoots with local boutiques; featuring

If you are passionate about Memphis and want to instigate positivity in and around your school, you have ample opportunities want to see a change in the world around you, do it yourself, and encourage your friends to do it with you.
Again, Memphis is an amazing city, and we have countless modes to discover more about it. Putting future of our community, and that is the kind of cycle that we want to perpetrate from our high school community. My First Mission Trip to Kenya By: Laila Travillion
on missions with my family and close friends. In a country with HIV/AIDS, many children are placed in orphanages with few resources. I am so grateful to have been introduced to a vast array of beautiful cultures and interesting personalities. I found Kenya to be full of opportunity and possibilities. We met so many beautiful people who truly care about bettering their communities and spreading joy in the lives of children. One of the people we met is named Benson Manyunyu Barthel, a self taught professional photographer and the creator of “put a smile on a child’s face.” Barthel works alongside his mother, Pascaliah Nduku, with 122 children at the Inua Mimi Rescue Center in Kibera which is one of the largest slums in world. Additionally, I had the pleasure of meeting Alex Gudah, a famous “hype-man” in the city and Oscar “the Juggler,” the #1 freestyle football (soccer) player in Kenya. He encourages kids to pursue their God-given talents despite their circumstances. nation. Upon arrival, we were greeted with large smiles and a warm meal consisting of classic Kenyan delicacies such as traditional stew and chapati. I was initially surprised by the abundance of fresh produce included with our meal. Immediately following our dinner, we were given a tour of the rooms and found that the fresh produce was grown by the children with help from the children’s home the orphanage, and rows of peppers, tomatoes, watermelon, and a rooms to house the children and very little personal belongings for each child. Each room held around twelve kids and each of their “closets” consisted of small cubbies containing a few toothbrushes, shoes, and a change of clothes.

We also had the opportunity to showcase some of our talents as well. We taught them a few American dance moves and watched them fall in love with the Memphis “Shoot” dance. We ended the night by giving them a donation of food and supplies and then formed a line to touch and pray for each child in the home. Prior to our departure for Kenya we discussed visiting Kibera. Our discussions involved both schools of thought on visiting the slums of the world: “was it okay to walk through the slums and view object poverty and then return to our homes where we lack very little?” Initially, were very torn on the decision to go and also were was much to our surprise when Gudah and Oscar announced that town and introduce us to their friends that still reside in Kibera. We my experience the lack of resources. Most people do not have running water or electricity, and trash is burned on the street. Howev aspects of the area. St. Jude Classic
One of the most important events for the city of Memphis is the FedEx St. Jude Classic, an annual golf tournament that has been held at TPC Southwind since 1989. Originally created in 1958, the St. Jude Classic continually manages to recruit some of the world’s top professionals for a PGA event that the entire city has helmed as a Memphis tradition. Not only is it special to have hosted a PGA Tour event within the city for nearly 60 years, but the tournament also raises an average of over $35 million for St. Jude Children’s Research Hospital. “St. Jude Children’s Research Hospital has been the sole charitable beneficiary of professional golf in Memphis for more than 40 years,” said Jack Sammons, who acts as the General Chairman of the FedEx St. Jude Classic. “Approximately $40 million dollars has been raised by our event during that period for the kids at St. Jude.” Big profiles such as Phil Mickelson and Dustin Johnson attended this year, while others like Ricky Fowler and Rory McIlory have competed in the past. A Wednesday morning pro-am kicked off this year’s event, with one of the most notable participants being the future Memphis Men’s Basketball coach, Penny Hardaway. He was joined by Memphis Football coach Mike Norvell, PGA Tour pro Charles Howell III and former NASCAR team owner Joe Gibbs. Not intimidated by the growing number of ecstatic Memphis fans trailing close behind, Penny and his group managed to hit fairly well at 15-under par. However, they ultimately fell short of victory at the hands of a tiebreaker. “Those ProAms together accounted for over a million dollars of revenue for St. Jude,” Mr. Sammons confirmed. Dustin Johnson, who had already won a PGA Tour event previously in the year, oversaw a comfortable lead as the tournament progressed and, by the 18th hole on Sunday, was holding a four-stroke lead over runner-up Adam Putnam. His final shot managed to find the hole from 171 yards out as the 33-year-old closed the event with an eagle. He

moved to 19-under for the tournament and wrapped up another victory, his third straight season with multiple PGA Tour wins under his belt. “Dustin Johnson’s final score of 19 under par was an extraordinary accomplishment,” Mr. Sammons said. “That’s the lowest score since the golf course at TPC Southwind was redesigned 25 years ago. Runner-up Andrew Putnam impressed the crowds at Southwind, just three strokes off of DJ’s winning total, and was tied with DJ after three rounds of play.” With the event over, Johnson solidified himself as the best player in the world, moving up to number one in the World Golf Rankings. 29-yearold Andrew Putnam, finishing in second place, held on to the best finish of his career and managed to stick to Johnson when most expected a walkover; however, a double-bogey from Putnam to start the final round turned out to hurt him beyond recovery. While many still celebrate the St. Jude Classic as it wrapped up only last month, some are beginning to look towards the future. Beginning in 2019, Memphis will expand its golf influence by hosting the World Golf Championships-FedEx St. Jude Invitational. This new WGC FedEx St. Jude Invitational will take the place of the current St. Jude Classic at TPC Southwind sometime near August of 2019. The WGC events are considered massive, where only the top 50 players in the world and select winners from other tournaments are eligible to compete. It is estimated that a typical WGC event brings in economic revenue of around $40-60 million for the host city, an incredible boost for the entire area of Greater Memphis. “The World Golf Championship will have a massive economic impact on Memphis and our region,” Mr. Sammons said. “Hotel rooms reservations will fill up fast once the actual date of the 2019 event is announced by the PGA Tour. Airlines, restaurants, hotels and business in general in Memphis will benefit by the onslaught of international tourists that will visit Memphis next summer for the WGC FedEx St. Jude Invitational.” Hosting a tournament of this caliber will not only impact the future of golf in Memphis and the outlook of the city from neighboring areas, but it will also raise more awareness for St. Jude for years to come. “The WGC will put Memphis on the world sports stage and create a fabulous platform for celebrating our city’s 200th birthday.”
