The wisdom of Proverbs tells us that the key to living with each other is Love and Faithfulness. Love and Faithfulness are the glue that holds friendships, marriages, cities and countries together. It is the key to being friends with those you disagree with because you trust their motives, even though you have a difference of opinions on method. This weekend I was working on a project with Reggie Davis, who is the Executive Director of Streets Ministries. He and I may have voted differently in this recent election, but if I could vote for Reggie to be President of the United States, I would have no fear of what he wants for our country.

It has been two weeks since the world woke up in shock to the election of Donald J. Trump as the next President of the United States of America. Newsweek scrambled to pull their hot-off-the-press issue entitled “Madam President.” They were so sure that Secretary Clinton would win that they set in motion the distribution of their current issue to cover what they thought would be her victory. The citizens of this country have not only been in shock, but in some cases and in some places nearly at war with each other. I have many friends and colleagues that I don’t necessarily agree with in the voting booth. In most cases, this disagreement isn’t about what we want for this country or for our fellow citizens, our disagreement is more about which party and policies will deliver the shared desires of a kinder, safer, better-educated, and more prosperous country for all of our fellow citizens.

I do not the fear the motives of my friends, nor am I afraid of what they want this country to look like, because we have a mutual respect for each other and we are not fighting over money and power. The politicians, who claim to represent us, live off the power that the government gives them, and the media makes a living by tearing us apart versus pulling us together.

While our country may be politically polarized down the middle, evidenced by the election of President Obama eight years ago and the election of Donald Trump today, I do not believe that the majority of Americans, when dealing with each other, are polarized to each other’s motives. Love and Faithfulness are what blesses a family; Love and Faithfulness strengthen friendships; Love and Faithfulness build peace in a city; Love and Faithfulness, eight years ago, were the key to a splintered nation overcoming the great recession; and Love and Faithfulness will be the key to this country overcoming the shock of this election. By our nature, we all work for what we think is best, but Proverbs tells us to “trust in the Lord and lean not on our own understanding.” Newsweek would not look so silly today if they had listened to the wisdom of Proverbs. In the political realm, elected officials battle over methods of governance, but we as individuals have to trust in the Lord and let Love and Faithfulness serve as the glue that governs our relationships to each other. Seek the Peace and Prosperity of Memphis. Jim Walker

By Rishab Jain, Lausanne Collegiate School It was a slow day in history class. Every student sat hunched over his or her computer typing frantically on the long research paper that was due at the end of the week. I was no exception. I grabbed one of my many resources off the shelf at the back of the room. As I did, I turned around and noticed a laminated sheet of paper by the door, which had apparently been there since I first entered the classroom a year ago. At the top of it, printed in large, bold letters, it read: The Lausanne Way. It was the set of core values that defines what, how, and why we do things at Lausanne, but often sits in its own corner, collecting dust until some teacher outsmarts a lazy or sassy student by quoting it. As I scanned the sheet, I saw two bullet points at the bottom that caught my eyes. • •
· We build character through service to others. · We empower individuals to seek their own journeys.
Eager to distract myself from my history assignment, my mind flashes back to the summer before my sophomore year—similar to those movie flashbacks with the piano playing and the main character falling into a swirly abyss. I saw myself, sitting at my desk, tense with some sort of anxiety. I had discussed with my parents earlier that day that I wanted to do a sort of project with the elderly. After seeing how my own grandparents struggled with using the iPad my dad gave them, I wanted to help other senior citizens connect with their families more easily. My parents, being the dedicated individuals that they are, tasked me with calling two assisted living facilities in the area to pitch my idea and put it in action. Easy, I told myself. I have all day before my parents come home. I can do this in no time. Little did I know that a phone call could cause so much stress. I waited, and waited, and waited; pushing off my obligation until just 30 minutes before my parents would get home.

Frantic, I sketched out exactly what I was going to say, verbatim, on a sheet of paper. I thought out how I was going to say it, and how I was going to greet whoever was on the opposite side of the call. After that, I dialed the phone, and patiently prayed for a voicemail. “Hello?” Great, I thought to myself. Now I have to talk. I nervously stumbled through the conversation, trying my hardest not to misspeak or go blank. Eventually, when all was said and done, two calls later, I had my plan. Fast forward to the first day I arrive to volunteer. I walk into a room, and am enthusiastically greeted by 12 grandparents and great-grandparents. As I made my way around, helping people turn on their iPhones and iPads and get started, I was introduced to the grandparents and parents of my peers and teachers. While I started the whole process hesitant and fearful of speaking out, I began to grow into a more social person—sharing stories, chatting, and being able to communicate more effectively—much like my elderly students after mastering their computers. As I snap back to history class and am pushed out the door by a fast-moving pack of students, I realize how the Lausanne Way has impacted my process. I see how my character has grown as a result of my community interaction, and how my learning at Lausanne inspired me to move beyond the standard service project and pursue my own path. As I move beyond my high school career, I now understand the power of giving back to the world around me, and I can continue that throughout my life. At least I don’t have to write down my script for a phone call anymore.

The Heights
heightscdc.org The Heights, a neighborhood located north of Summer Avenue, south of Jackson Avenue, east of Graham St., and west of Scott Street, is a bluecollar neighborhood in Memphis that is on the rise! Disinvestment has led to high rates of crime and blight, and while several organizations have reinvested in the neighborhood there was still a missing piece - housing. The Heights CDC builds community through just-housing redevelopment and a commitment to serving with and learning from their neighbors. “The Heights CDC believes that our community can rise by lifting others and we welcome those who are wanting be a part of reviving this community in the heart of Memphis,” says Executive Director Jared Myers. “We use grant dollars and donations from Memphians, mostly Heights residents, to rehab homes that will be turned into quality, affordable housing for families. Currently, the Heights has a grant from Tennessee Housing Development Agency, that can take a one dollar donation and turn it into three dollars.” Jared says to come visit the Heights! Grab some popsicles at La Michoacana, try the cheese pie at Pandaria de Michoacan, or visit the Randolph Library. Or, you can volunteer at one of the many organizations and ministries serving the neighborhood, such as Service Over Self, Memphis Teacher Residency, Streets Ministries, Collegiate School, Boys & Girls Clubs of Greater Memphis, Memphis Athletic Ministries, and Su Casa. “We hope that as we enter a new year the momentum being built in this neighborhood would continue to build and others would want to join us and even consider calling the Heights home.”

Our goal is to assist law enforcement through partnerships with citizens to make Memphis/Shelby County the safest possible community for our citizens,” says Executive Director Jim Tusant. “We hope to build a better awareness for the foundation and increase the participation by all citizens and businesses within Memphis and Shelby County. It is a win-win for all involved when we come together to fight crime and actually make a difference in making our city a safer place for all,” Jim adds. Helping the homeless during the cold, winter months at churches throughout the city...that is what Room in the Inn-Memphis is doing. An ecumenical ministry that is now beginning its sixth year in Memphis, Room in the Inn provides emergency shelter and meals during the coldest months of the year—November through March. It is modeled after the incredibly successful Room in the Inn program that started in Nashville 30 years ago.
Streetdog Foundation is dedicated to saving the lives of dogs and enriching the lives of people. This nonprofit, volunteer-run organization works to rescue, rehabilitate and rehome stray and abandoned dogs in the Mid-South area. Streetdog Foundation works with all breeds, sizes, and backgrounds, and believes that all dogs have the potential to be wonderful, adoptable pets.
Room in the Inn-Memphis offers many opportunities to serve our unsheltered neighbors in a variety of ways. You can volunteer at a congregation site and make new friends among the guests and other volunteers. Or you can encourage your faith community to become a congregation site. Either way you will experience a transformational ministry that will change the way you look at the homeless. Their goal for the coming year is to increase the number of sites so that more people experiencing homelessness will be sheltered each night in warm sanctuaries. Also, they are working on renovation of a permanent downtown location, The Carpenter’s House, 212 North Second Street, for day hospitality, showers and laundry services for Room in the Inn guests.
It takes the help of the community to accomplish their mission. Streetdog needs volunteers to walk their dogs in boarding, help at adoption events, fundraisers, education, and community outreach events, and to foster dogs while they look for their forever homes. They also need volunteers who can offer professional expertise for photography, media, and training teams. Donations are necessary as well, whether they are one time gifts, recurring gifts, or donations from Streetdog’s Amazon.com wish list.

Streetdog’s greatest hope is that they won’t be needed because all of the stray dogs of Memphis will have found their forever homes, but since that is not likely to happen in one year, they hope to see more members of our community engage with and help find happy homes for the pups in their care. Streetdog is committed to finding the perfect home for their dogs, and they take the time necessary to properly vet potential adopters to ensure that the environment is right for both the dog and the family.
avemariahome.org Ave Maria Home is a nonprofit, Catholic retirement community located in Bartlett, that was established in 1956 by a group of Catholic women, the Ave Maria Guild, now known as Wings of Ave Maria. Ave Maria offers non-medical home care and adult day programming for those wishing to remain at home, as well as a specialized residence for individuals requiring short-term rehabilitation in skilled nursing, intermediate long-term care, assisted living, and dementia care. There are so many simple ways you can help. Whether visiting residents, writing cards, sharing talents through music or art, or engaging with elders during a game of Bingo, the time and attention given by Memphians wanting to get involved is invaluable. Ave Maria offers volunteer opportunities for once a week, once a month, or even a one-time volunteer opportunity. Donations to support resident programs and activities are always welcome. Gifts can be made in honor or in memory of a loved one, to commemorate a special occasion, or can be unrestricted and used for the greatest need at Ave Maria. Best Buddies
bestbuddies.org/find-programs/tennessee/ Best Buddies is a 501(c)(3) international nonprofit that works to establish a global movement that creates opportunities for one-toone friendship, leadership development and job placement for the over 200 million individuals in our world living with an intellectual and developmental disability (IDD). Best Buddies Memphis is mostly funded by private donors, or receives funding through one of the three main fundraising events it puts on each year. Whether showing your support through volunteer efforts or monetary donations, Best Buddies calls all Memphians to band together to promote inclusion for all within our surrounding community. Students with and without an intellectual and developmental disability (IDD) are growing and thriving because of the presence of Best Buddies in their lives during the course of our elementary, middle,
high and collegiate school level programs. When they graduate and enter into the next phase of life, they become part of the “citizens” and “jobs” programs. Best Buddies Memphis recently finalized plans with SRVS Memphis to bring the first “citizens” program to the Mid South. This citizens program will allow individuals with IDD currently participating in the SRVS Memphis program to be perfectly matched with a typical peer from within the surrounding community in a rewarding and life-changing one-to-one friendship. Best Buddies looks forward to its annual “Best Buddies Prom” to be held in February, and its annual “Friendship Walk” to be held on Saturday, April 23, 2017.

ftkmemphis.com For The Kingdom (FTK) started as a dream of Becky and Dr. Eddie Cunningham. They believed that every child should have the opportunity to have the summer camp experience, so they bought the land, that would later become FTK, in the early 1990s, and donated the property to Memphis Leadership Foundation - who then formed For The Kingdom. FTK is a camp in the city where faith and fun collide. They are a Christian, non-profit camp, retreat center, and conference center all rolled into one, also hosting church picnics, overnight retreats, workshops, and more! FTK’s mission is simple: Seek to inspire and impact inner-city youth with the gospel in a safe and fun camping experience. There are several volunteer opportunities, including helping with the yard work, or even cleaning the cabins, and organizing closets. FTK is always ready for a fun project to help beautify the campgrounds, like planting new flower beds or painting a mural. For $125, you can participate in the Camper Scholarship Program and send one child to camp for the week. 2017 brings a lot of promise to FTK as they continue to grow operations with new leadership. Marketing Specialist Whitney Steinfeld says For The Kingdom wants Memphis to know who they are, what they do and who they serve. When you know those three things, you’ll understand why they are so important to Memphis’ underprivileged youth.

memphisleadershipfoundation.org Memphis Leadership Foundation (MLF) is a faith based, nonprofit organization dedicated to seeking the “welfare” of our city by bringing people of faith and goodwill together to address our biggest issues; building the capacity of grassroots leaders and churches in their work in under-resourced communities, and incubating new ideas or programs that change lives.
MLF has a number of programs that desperately needs volunteers and board members: programs addressing refugees, ex-offenders reentering society, kids caught up in gang activity, juvenile offenders, affordable housing, education, summer camping and so much more. According to MLF Director of Advancement Ramsay Clark, “We are always increasing our impact throughout our city, particularly in areas that people might call the ‘inner city.’ One of our hopes is to bring more churches, nonprofit organizations and civic groups together to address violence in Memphis while at the same time increasing opportunities for young people to engage in healthy activities.”

Urban Bicycle Food Ministry
ubfm.net Urban Bicycle Food Ministry (UBFM) is a nonprofit, Christian-based organization in Memphis that provides food and supplies to people in need. Their mission is to offer needs to the people of our community one interaction at a time. On Wednesday nights and Saturday mornings, volunteers meet at The Carpenter’s House (212 N. 2nd St Memphis TN) to participate in the delivery of supplies. Volunteers use bicycles to travel around midtown and downtown with loaded backpacks full of food and miscellaneous supplies, seeking people in need. Before both rides, a group prepares food at the First United Methodist Church, next door to the Carpenter’s House. Preparing food is another way to volunteer. Food prep begins at 6pm on Wednesday and 7am on Saturday. You may donate money at ubfm.net, and they also accept clothing donations. Other items that are constantly in high demand are socks, bottled water, gloves, and blankets or sleeping bags. These items can be dropped off at The Carpenter’s House Wednesday night 6:00-7:30pm or Saturday morning 7:00-8am. Founder and President Tommy Clark says, “In 2017 we hope to see more people get involved in a movement to show random acts of kindness. The more people that get involved in this movement, the more it radiates.”

madonna-learning.org Madonna Learning Center (MLC) provides a nurturing, faithbased educational and social environment that empowers children and young adults with special needs to reach their full potential while offering support to their families. MLC’s target population is children and young adults with mild to moderate intellectual disabilities (Down syndrome, autism, rare genetic disorders, seizure disorders, etc.) beginning at age 4 in Memphis and surrounding counties. The Adult Program focuses on daily living skills, social skills, and job preparation. MLC participates in work-based learning where they partner with area businesses to ease the transition between school and work while reinforcing life and job skills.

The Center has settled into their new larger space, and is looking to increase enrollment to help make a difference in the lives of more children and adults with special needs in the Memphis community. “We are also looking to increase our scholarship fund to assist families with the financial burden of tuition,” says Carrie Roberts, Development Director.

rootsmemphis.com Roots Memphis Farm Academy is a 501 (c) 3 nonprofit that trains and launches new beginning farmers into the Mid-South region. The farmers train in a six-month long intensive business farming course, and then head out to the field in spring to put their skills to the test. Together, with the support of the Roots Memphis staff, farm students grow local, chemical-free, certified naturally grown produce and flowers. These items are then sold to the community through CSAs, farmer’s markets, and wholesale.
Founded in 2007, Jonah’s Journey’s is the foster care charity affiliated with Palmer Home for Children. Jonah’s Journey’s mission is to provide Christian foster care to children in need of a safe place to call home. Jonah’s Journey originally began as a ministry to serve the children of incarcerated mothers, and now it includes children of all ages, regardless of their circumstances. Jonah’s Journey Caregivers are more traditionally referred to as foster parents. Individuals who step into this role are opening their homes and hearts to help fill the gap for vulnerable children in need of a safe place to call home. The 22nd Annual Sip Around the World Wine Tasting, one of the largest wine tasting events in the state of Tennessee, was held at beautiful Shelby Farms Park in the FedEx Event Center. Sip Around the World is one of the largest fundraising parties of the year in Memphis. Guests enjoyed tasting more than 300 wines from over 100 wineries from regions including California, Oregon, Italy, Argentina and Spain, as well as bidding at a silent auction and dining on delicious hors d’oeuvres.

E
very year when December rolls around, I begin daydreaming of the perfect Christmas. I’m not sure why I insist it be so magical every year, but I do. And for what it’s worth, I don’t think I’m alone. Maybe it’s the joyful holiday music that plays all month. Perhaps it’s the fairytale-like movies that make us all feel we need our own Christmas story. Or it could just be the chilly weather, warm fires, and cozy cups of hot chocolate that make us want to put on our jammies and stare at twinkling lights for an eternity. But there’s more to it than that. I think we all cherish Christmas so much because of its rarity. It only comes once a year, and in a lifetime, we only get so many of them. Thus, we make the most of each one, by going over the top with décor, hosting and attending numerous parties, spending as much time with family as possible, and most importantly, cooking our most precious recipes. Whether you’re a chef, a home cook, or someone who likes to play around in the kitchen during the holidays, one thing is for certain: many of your favorite recipes are and will always be family heirlooms that have been passed down. There’s something familiar and warm about them. They bring back memories and make you feel like a kid again. Some, you can’t even begin to imagine Christmas without. I started my blog, Andrea’s Cooktales, based on exactly that – precious family recipes and the stories that inspire them. Andrea’s Cooktales, now a website filled with recipes and a cooking show, got the name “cooktales” because I believe there’s a story behind every recipe. Several Christmases ago, my grandmother gave me a family cookbook with recipes passed down from generations as far back as the 1800s. As I looked through the antique recipes, discovering their uniqueness, I thought of my ancestors and imagined their holidays – their time in the kitchen and around the dinner table, the stories they told and the memories they made, and the food that was created 64 / 4Memphis
around it all. As I started cooking from the book and becoming inspired to create my own recipes, I realized there’s no such thing as a recipe without a story or memory behind it. Food is created from life experiences. Over the years, I have received personal stories with a family recipe attached from blog readers. I always love getting mail like that because it’s great to see that “cooktales” is real and so many people have their very own. Something that most of these recipe stories have in common is they’re typically served during the holidays and have been for many years. It makes me think of when I got my family cookbook. I opened it and immediately thumbed through to one specific recipe, Holiday Ravioli. My grandmother served that dish every Christmas, and I couldn’t wait to have my hands on it to continue the tradition. The next Christmas, I made it, and I’ve made it every year since. Because it’s the most cherished of recipes, I consider it top-secret and have never shared it. One Christmas, I decided I had to come up with another main dish for the holidays – one that I could share with friends and family and post on my blog. That’s when my Brown Sugar Short Ribs were created. I wanted to come up with my very own holiday dish that I could pass down for generations to come. To make this dish even more special, it’s the one I used when auditioning for MasterChef Season 6 where I was chosen as a Top 100 contestant. Now, I have my own holiday recipe to add to the family cookbook, and I serve my Brown Sugar Short Ribs alongside Holiday Ravioli every Christmas dinner – it’s too difficult to pick just one. We all have in our minds what the definition of a magical Christmas is all about, but with each passing holiday, we are all writing our very own holiday stories without even realizing it. Brown Sugar Short Ribs 2 tablespoons olive oil Kosher Salt Pepper 4-5 pounds short ribs 1 large onion, chopped 4 garlic cloves, minced 1 ½ cup good red wine 2 cups beef stock 2 tablespoons tomato paste 2 bay leaves 2 teaspoons rosemary 2 teaspoons thyme ½ cup brown sugar Preheat oven to 350 degrees. Heat 2 tablespoons of olive oil in a Dutch oven or cast iron pot over medium high heat. Sprinkle short ribs liberally with kosher salt and pepper. Sear all sides of the short ribs until browned and a nice crust is formed. Set ribs aside on a plate. Turn the heat down to medium and add the onion. Cook until they start to brown then add the garlic and cook for one minute or until fragrant, making sure to not burn the garlic. Deglaze the pan with the red wine and scrape up all the brown bits from the bottom. Let the wine reduce by half. Add the beef stock, tomato paste, bay leaves, and stir together well. Add the ribs back in, making sure they are almost covered in the liquid but you can still see the tops of them. If they need more liquid, add more stock. Sprinkle the rosemary, thyme and brown sugar over the top of the ribs. Roast in the oven for 2 ½ to 3 hours until tender and almost falling off the bone. Plate the ribs and blend the leftover liquid with a hand-held blender. Serve gravy over the top of the ribs or on the side. This dish tastes great over creamy grits!

SAUCE 2 ounces port wine 4 ounces of foie gras 2 ounces veal demi 1 ounce sun dried tomatoes
FOR THE LAMB: Have the butcher remove the fat cap and french the bones . Preheat the oven to 450 degrees and season the lamb with salt and pepper, place loin side down on a roasting pan .
FOR THE VEGGIES: Wash and dry them, then coat them in good olive oil and season with salt and pepper. Spread on a sheet pan. Put them both in the oven for 15 minutes .
FOR THE SAUCE: In a heavy-sauce pan add the port wine and sun dried tomatoes, reduce by 1/2 and add the veal demi. Season with salt and pepper.
FOR THE FOIE GRAS: Score the liver with a knife and season it, then get a skillet almost smoking hot and sear the liver; remove and rest on a paper towel. To serve, arrange the lamb and veggies to your liking, then add the liver and sauce. December 2016 / 67

ROASTED BEET SALAD: Roast beets with skin on in olive oil, salt, pepper, cinnamon and nutmeg; wrap in foil and bake at 375 degrees for 1 hour until soft. Peel and slice beets; top with a blood orange vinaigrette.

FOR THE RIBEYE: Grill a 16 ounce ribeye with salt and pepper until desired doneness. Blanch desired amounts of broccolini and baby carrots then sautée in butter with salt and pepper. Dauphinoise potatoes: peel and thinly slice 1 large Idaho potato. Layer in a baking dish with 1 cup of heavy cream and 3 ounces of gruyere cheese, minced garlic, salt and pepper.

5 cups unsalted mixed nuts 1 ½ tablespoon unsalted butter 1 tablespoon light brown sugar ½ teaspoon cayenne pepper, or to taste ½ teaspoon smoked paprika 2 teaspoon kosher salt 2 tablespoons fresh rosemary, chopped Preheat oven to 350 degrees. Arrange nuts in a single layer on a sheet pan and toast until golden brown and fragrant, 7-10 minutes. In a small fry pan, heat over low heat the butter, brown sugar, spices, salt and rosemary. Cook until the butter is melted, sugar is dissolved and the herbs and spices are warmed through. Transfer mixture to a medium bowl. Add the toasted nuts to the bowl and toss thoroughly with the rosemary mixture. Spread out on a cool, parchment lined sheet pan, and cool completely before serving or packaging up for gifts. If using salted mixed nuts, omit the additional salt called for in the recipe.
CAKE BATTER: Cream the butter and sugar until the mixture is light. Mix in eggs and vanilla. In a separate bowl, combine the flour and baking powder. Gradually add flour mixture and milk to the butter mixture. If dried cranberries are desired now is the time to mix these in. Using a 13 inch by 9 inch greased pan, pour in the batter.

MAPLE SAUCE: Use a sauce pot to bring the syrup, brown sugar, cream and butter to a boil, constantly stirring. Gently cook 2 minutes longer on reduced heat, or until sauce has reduced a little bit. Gently pour sauce over the cake batter before placing in a 350 degree oven for 35 minutes. Bake until cake is light brown on top, a toothpick when inserted should come out clean. Let cool for approximately one hour. Make sure to spoon extra sauce over the top of the pudding, and feel free to add vanilla ice cream on top.

1 cup sugar 1/2 cup softened butter 1 teaspoon vanilla 2 eggs 1 teaspoon baking powder 2 cups flour 1 1/3 cups milk 1 1/2 cups 35% cream 1/3 cup butter 1 1/2 cups pure maple syrup 1 1/2 cups brown sugar OPTIONAL – ¼ to ½ cup dried cranberries
1 duck leg 1 tablespoon oil 1 cup black cherries 1 shallot, minced 1 sprig rosemary chopped 1/2 cup red wine 1/2 cup chicken stock 2 tablespoons butter salt and pepper
Season duck leg well with salt and pepper. Lay duck leg skin side down in a cold pan. Heat to medium high heat. (This will create a crisp skin) Cook 3 to 4 minutes and transfer pan to a 400 degree oven and cook 15 minutes. Set a sauce pot over medium heat. Cover the bottom of the pot with oil and add shallots. Sweat shallots, add rosemary, and saute 1 or 2 minutes. Deglaze with red wine. Add chicken stock and black cherries. Reduce to syrup like consistency. Remove from heat and whisk in butter. Serve with sweet potatoes.

750 milliliters ruby port 750 milliliters burgundy 750 milliliters Coke, or as needed to cover 3 teaspoons cayenne pepper 2 stalks fresh rosemary 2 stalks fresh sage 6 tablespoons oil 8 tablespoons butter 4 vanilla beans, spilt
Mix together salt, pepper, minced garlic, and thyme. To season, roll ribs around in it, but not too much or they will get dizzy; then dredge ribs in flour. In a large, heavy-bottomed pot or rondeau, sear ribs on both sides to produce a nice golden crust. Add diced vegetables and sweat until they are clear. Add wines and Coke, and reduce heat to medium-low. Next add in cayenne, garlic, rosemary, sage, vanilla beans, and butter; cover pot loosely with foil. Cook ribs slow and low, allowing the meat to soak up all the juice. This will take time, roughly 5 hours, but if you don’t go down the yellow brick road, you’ll never get to the wizard. Once the meat is tender and falling off the bone, carefully remove from cooking liquid and keep warm. Continue reducing the liquid by half to create a lovely sauce. Serve with reduced braising liquid and your favorite holiday sides.

Marinate ribeye for 2 hours. Grill ribeye to desired temperature. Sprinkle with ancho dust and slice; serve with scalloped potatoes and roasted asparagus.

½ cup day-old cornbread pinch of lemon zest pinch of thyme pinch of parsley ¼ teaspoon salt ¼ teaspoon pepper 4 redfish filets 1 cup baby spinach ½ teaspoon garlic 1 shallot, chopped
¼ teaspoon lemon juice ½ teaspoon Worcestershire 3 ounces Abita Amber beer 4 ounces shrimp stock 2 ounces crawfish tails 2 ounces jumbo lump crab meat 2 tablespoon cold butter ½ cup buttermilk 1 tablespoon olive oil
Place cornbread, 1/8 teaspoon salt, 1/8 teaspoon pepper, lemon zest and parsley in food processor; pulse until combined. Place redfish in buttermilk, then crust Redfish with cornbread mixture. Saute with butter over medium heat on both sides until golden brown, about 3-4 minutes per side. Saute spinach with olive oil, ¼ teaspoon garlic, and quarter of shallot until spinach has wilted. FOR THE SAUCE: Saute ¼ teaspoon garlic, remaining shallots, crawfish and crab meat in medium sauce pan for about 3 minutes. Add Worcestershire, lemon juice and beer; reduce by one quarter. ½ pound smoked ham, small dice ¼ cup acorn squash, diced ½ cup red bell pepper, small dice ½ cup red onion, julienned ¼ cup celery, small dice ¼ cup carrot, small dice ½ cup black eyed peas 1 sprig fresh rosemary, finely chopped 3 sprigs fresh thyme, finely chopped 2 teaspoons garlic, minced 2 quarts chicken stock or chicken broth 2 tablespoons Worcestershire sauce 3 tablespoons vegetable oil Salt and black pepper to taste In a medium-size, heavy bottom sauce pot on high heat, add the vegetable oil and allow to heat until it smokes. Add the smoked ham and render, allowing it to brown. Add the carrot and begin to sweat with a decent pinch of salt. Once the carrot starts to soften, add the remaining vegetables. Again, add a pinch of salt and cook until the red onions turn “pink” in color. Add the minced garlic and incorporate until it is aromatic. Add the black eyed peas and continue to cook for 5 minutes stirring constantly. Add the chopped herbs and Worcestershire and allow Worcestershire to come to a boil. Check seasoning for taste to your liking. Add the chicken stock and bring to a boil, then reduce to a simmer for 35-40 minutes or until peas are cooked to your liking.

Being among the crowd of fans in the FedEx Forum at a Grizzlies game is an exciting, electric, energy-filled experience - one city and all fans. But what if you have to miss a home game or the Grizz are on the road? You still put on your favorite Grizz gear, and tune in to cheer them on via the magic of television, and the knowledgeable voice you hear calling the fast-paced action is veteran sportscaster, Pete Pranica. It is a special, well-honed talent to be a play-by-play announcer, especially in the NBA, and fans are in capable ear-shot with Pete at the microphone. This season marks the 12th for him as the on-air, television voice of the Grizzlies. He began with the Grizz as a radio announcer for the 200405 season, but following the untimely death of the original voice of the Grizzlies, Don Poier, Pete assumed the role he has held since January, 2005. For an avid sports fan such as Pete, this is a dream job and one that he had been training for since high school. A native of the small town of Sobieski, Wisconsin, he attended an all-boys high school, Premontre in Green Bay that had a small, 10 watt radio station. “If you were in good academic standing, you could spend a study hall spinning records in this tiny converted broom closet of a radio station. Some of us who aspired to be sportscasters, we had the opportunity to do play-by-play of basketball, football, and hockey,� described Pete of his broadcast beginnings.
After high school, Pete attended the University of Notre Dame and continued to advance his skills by participating in a lot of student radio opportunities while in college. After graduating with a degree in American Studies, he began working for the Notre Dame Alumni Association, his sights still set on becoming a sportscaster. While working at Notre Dame, he was introduced to George Blaha, a fellow Notre Dame grad and storied announcer for Michigan State football and also the Detroit Pistons. It was just the intro he needed to begin his career path into broadcasting, and he was soon tapped to fill in for the veteran, calling Pistons games on the radio on fall Saturdays while George was working the State football games. “This was 1990, just after the Pistons had won their second championship, so I got to see some pretty good basketball with Dennis Rodman, Isiah Thomas, Joe Dumars, Chuck Bailey and that whole cast of characters. And that was my introduction to the NBA,” Pete chuckles. Since that time, he has gone on to work for the Portland Trail Blazers organization, been a part of NBC’s Emmywinning coverage of the 2004 and 2008 Olympic coverage, and been a three-time nominee for Tennessee Sportscaster of the Year. He has seen some great basketball, and one of his favorite parts of the job is being close to the game. Excitement is still in his voice as he recalls some of his favorite moments in Grizz history, including Rudy Gay hitting a game-winning shot over LeBron James, the Courtney Lee buzzer-beating lob against Sacramento, and the playoffs in 2011: “Beating San Antonio in game six of the first round, just realizing what an incredible moment it was for the entire franchise, knowing that they had never won a playoff game until game one of that series, and Shane hits the three from the left side to give Memphis the lead, and they end up winning the game! I remember game six and being on the court afterwards with Sean Tuohy and Brevin (Knight), and just trying not to be too giddy as we were doing the post-game show because you were so happy obviously for team, you realize what a momentous upset that it was, and you’re just trying to keep it all together despite the fact that inside you just feel like a little five-year-old kid!” While sports are an obvious passion for Pete, he also is devoted to aviation and spaceflight, having written “Spaceflight Updates” for Discovery. An active member of the Memphis community, he serves on the board of the Memphis Grizzlies Charitable Foundation and Making It Happen/Tuohy Family Foundation; he lends his support to St. Jude Children’s Research Hospital and the “Hoops for St. Jude” program, plus the Tennessee Shakespeare Company, for whom in 2014 he portrayed the title character in Mark Twain at Twilight.

With December’s arrival, holiday soirée invitations suddenly swarm our calendars. And if you’re anything like me, an entertaining expert and bonafide foodie in town, this season’s retail offerings in-store and on social media urge us to host parties in our own homes. Whether an office affair, a girlfriend get-together or a family gathering, the volume of holiday-themed parties require a game plan for our schedules and our wardrobe. Luckily, New York-based celebrity stylist and TV personality George Brescia visited Memphis at the perfect time to advise us in party-ready attire. I spent one morning with George at Oak Hall, where he regularly frequents to style his clientele, to grasp his expertise and put it to practice. George’s approach is both attainable and brilliant. Here are a few key takeaways by George to make your season’s wardrobe seamless and sophisticated.

Transition From Day To Night George’s motto is to make it easy. Thus, day-to-night outfits are the key to juggling a full day of work with an evening holiday party. For example, velvet is a new trend for daytime apparel; but we also know it’s a fantastic feel for holiday looks. George grabbed a black velvet jean to pair with metallic sparkle top and gold jewelry for a party; but the same jeans can be worn earlier in the day with a denim shirt, down vest and boot.
Prep Basic & Party Bedazzled When planning a party at your own home, the notion of cooking, prepping and looking glamorous by the first doorbell might feel impossible. George advises to take something simple and comfortably to wear— such as a jumpsuit or basic knot dress—and wear with flats while preparing your bites and sips in the kitchen. Stay away from drapy long-sleeved blouses
or one-shoulder tops, as they might distract your cooking and cause more spills than necessary. Twenty minutes before guests arrive, throw on a heel and jazz it up with sparkled jewels. Add a smoky eye and red lip to your makeup foundation. When getting the party ready, you should feel at 60% of your look. During the final moments, bring it up to the 150% we’re going for.
Let The Trends Find You George emphasizes the importance to let the trends find you—you don’t need to find the trends. A wardrobe, especially this time of year, is all about clothing you look good and feel good wearing. The stores’ selection will offer plenty of trendy choices, so spend your time addressing and adjusting the pieces that speak to your personality and presence.
Style In Southern Comfort Though he travels and works all over the country, George has a special affinity for the South and, especially Memphis. “What’s in a name?” as Shakespeare famously wrote. For a renowned Memphis organization, a new name and new logo are just the beginnings of the significant changes going on at Church Health. Notice the word “Center” has been dropped from the name, and the former logo featuring a small building with a cross on top has been retooled, all in advance of the expanded mission of Church Health (CH) and the monumental move to the Crosstown Concourse in January, 2017. Marvin Stockwell, CH Communications Director, explained that they had outgrown not just the building, but also their branding. “A logo of a little house didn’t accurately represent what we had become. Even before the move to Crosstown, we were already no longer ‘the little clinic that could’ on the corner of Peabody and Bellevue, and that’s what a lot of people thought, still to this day.” So as they begin their 30th year, the nonprofit is certainly no longer a small band of committed folks in a converted boarding house, managing a little medical clinic. In fact, Church Health is one of the largest faithbased healthcare organizations in America, and more than 30 clinics across the country have been founded, replicating the CH model. They are a vital part of the social safety net locally, currently serving over 58,000 patients of record, all without relying on government funding. As their big move and a new era was being conceived for CH, it was also time for a logo re-do. The mission of CH “seeks to reclaim the Church’s biblical commitment to care for our bodies and our spirits.” Working with Hemline Creative Marketing, the new logo itself expresses this mission and who they are as an organization. Marvin described the intricacies of the logo, each element an important aspect of the work of CH. “We wanted a logo that spoke to who we are so there’s a cross in our logo in the shape of a thumbprint. The thumbprint to us signifies God’s personal touch on us. We are all unique. The other thing about touch is healing touch. There is also a heart at the center of this logo as well, and the heartbeat unites all of us. The heartbeat is a symbol of our health.” Since the debut of the new design, people have seen some additional components including a labyrinth representing the journey of life, health, and faith, and the lines radiating out expressing the love and healing of CH. “If you have a logo that says that much to people, and that speaks and is consistent with your mission and your work for almost 30 years, then I call that a success!” This new logo is a small, but very visible facet heralding a new era for CH. Currently, operations are spread across 13 separate buildings for a total 78 / 4Memphis
of 120,000 square feet. With the move to the Crosstown Concourse, CH will have 150,000 square feet, all under one roof. Not only will this give patients easier access to the various services and programs, but it will also give partnerships with other organizations a place to flourish. While CH has long utilized partnerships, the Crosstown move will provide the space and the synergy to develop. The new CH fitness facility will be in conjunction with the YMCA, and will be a Church Health-YMCA branch. The Teaching Kitchen will be expanded, and a partnership with Tulane will offer culinary medicine classes. Current partnerships with the Southern College of Optometry and the Baptist Memorial Healthcare Family Residency Program, as well as partnerships with the 600 area medical professionals who volunteer their time with CH, will have a revitalized synergy in the centralized Crosstown location. “The work we do is no longer about a center, it’s about engaging the church and all people of faith about health in the world,” said Dr. Scott Morris, Church Health founder. “We also see each person as one unique heartbeat at a time. I believe our new brand reflects this broader way of fulfilling our mission.” With the new year, Church Health will serve even more of the underserved, each as a whole patient -- body and spirit. “We have a very whole-person view of health. Health is more than just the absence of disease. True whole-person health is about what you eat, how you exercise, the strength of your family unit, the way work factors into your life, your emotional health, your faith life. All of that contributes to your health. We call that our Model for Healthy Living,” said Marvin. “What Crosstown Concourse will allow us to do is to more fully live into that whole-person model that we have been programmatically knitting together. It’s not enough to have a medical clinic, where doctors in white lab coats distribute medicine. It’s all of our services working together -- the comprehensive, whole package, and that’s what going to come to the fullest expression at Crosstown Concourse.” And a brilliantly, beautiful new Church Health logo on the signage will point the way. Lakeland recently hosted ribbon cutting celebrations for two of the newest businesses opened in the area, Starbucks and Wellness Walk-In Clinic. The weather was perfect for both events, and the excitement of a growing community was evident!
Kathy and Kelly Fish hosted their monthly Cocktails for a Cause event at their lovely midtown home recently to benefit Playback Memphis. The nonprofit organization, whose mission is to “bring stories to life in a safe space to unlock healing, transformation and joy,” raised over $10,000 with the help of generous tips from nearly 100 friends and supporters as well as a matching donor. Playback Memphis also works with a host of community partners including Job Corps, OUT Memphis and Christ Community Health Center.

Carnival Memphis held their annual meeting November 1, 2016, at the Memphis Country Club to re-cap the 2016 Carnival season, and look forward to the 2017 season! New officers and board members were elected during the evening’s festivities, and attendees enjoyed a preview of the upcoming 86th Anniversary Carnival year.
