A M I N DSE T O F THA N K FULNESS “The rinds of plants, the skins, hair or wool of brute beasts, and the bowels of the silkworm: the very excretions and superfluous apparel of unreasonable creatures. Which, as it doth magnify the wisdom, power, and goodness of God, in choosing, and turning such mean things to such excellent for us.”1 Presbyterian author Henry Scudder, in his daily devotional book, The Christian’s Daily Walk written in 1627, charges his readers to begin their day with a mindset of thankfulness. He reminds his readers that God has used base materials to provide comfort, warmth and beauty in the clothes they need. In the second chapter of his devotional, he is laying the groundwork for his reader to receive all the events of the day, both good and bad, as God at work in their lives. This dependence on such base elements humbles us all, calling us to be grateful for all the circumstances of our lives. November and December are the season of thankfulness. Families come together over Thanksgiving, Chanukah and Christmas to enjoy friends and family. The focus of these celebrations is thankfulness to God for getting through another year. For some, the year may have been full of obstacles and heart ache, and for others it may be a celebration of joy. In either case, Henry Scudder’s devotional calls us to thankfulness. The first Thanksgiving was held in 1621, and seven years later Henry Scudder’s devotional was published. The mindset of thankfulness is the basis of both. The first Thanksgiving was a celebration of the first
successful harvest in the new world. It had been a year of struggles; loss of life and hard work, but at the end of the growing season there was an ample harvest to store and prepare for the coming winter. The first Thanksgiving and writings of Henry Scudder deal with the concept of thanksgiving far removed from the commercialization of the Thanksgiving of today, but I believe in the homes of Americans all over this country, the spirit of celebration is the same. We gather with friends and families, grateful to be able to come together for another year, crying over loss of life or financial difficulties, while also celebrating birth and the accomplishments of the past year. We catch up with each other sharing our plans for the next year, whether it is a wedding or birth of a child, job change or college plans, or even selling the family home to move into a retirement community. The Grit and Grind of Memphis is born out of the same spirit of the first Thanksgiving. The citizens of Memphis fight to overcome the difficulties that have been placed before cities such as ours, then we come together to work and celebrate our successes, and reach out to help others still struggling. 4Memphis is thankful for the five years of celebrating and highlighting those who make the Grit and Grind of Memphis possible. I t was a beautiful day at the Germantown Performing Arts Center’s Grove as c hildren and adults enjoyed for great music, local food trucks and family fun. T he free festival also included performances by Memphis Jones, Motel Mirrors, S outhern Avenue, School of Rock and DJ Mark Anderson. Carnival games with p rizes, a bounce house and children’s activities entertained the little ones, and donations from the kid’s zone went towards GPAC’s Arts Education Fund.

New Non-Surgical Injection Blasts Away Double Chins Having a double chin is a huge concern for people with all body types. Many people as they age experience excess fat and loose skin along the jawline, even those who are thin. It’s frustrating to look in the mirror and see a double chin, especially if you’ve put in the work to stay fit and trim though diet and exercise. Fortunately there is a new treatment available that blasts away at double chins, without surgery.
What is it?
KYBELLA® is the first and only FDA-approved treatment for reducing moderate to severe fat on the upper neck, otherwise known as a double chin. The non-surgical injectable treatment is made with deoxycholic acid, a molecule that breaks down fat in the body. KYBELLA® is much less invasive than liposuction and other surgical procedures.
How does it work?

I
came home from a track meet and ate a sandwich quickly before my soccer game, so I thought that was why I got sick at half time. The lights at Mike Rose did seem a lot brighter than usual, but it was probably just me. The next morning I woke up with an extremely painful headache, and at school my teacher’s voice pierced my ears. The fluorescent lights were killing me. Every little noise was like knives in my head. I couldn’t focus on anything. What was going on with me? The bell rang, much louder than usual it seemed, and I went to my next class where my teacher pointed out how awful I looked. Only then did I put it together that when I was hit in the head by the ball during my soccer game, I actually suffered a concussion. My goalie had punted the ball, and as I ran down the field I lost sight of it in the lights. The ball came down and hit me right on the temple, and I saw stars for a short time but kept playing. I went home and didn’t think anything of it until the next day. I honestly don’t think I would have put all of my symptoms together to realize I had a concussion if it weren’t for rhetoric. That’s right, rhetoric. Westminster Academy students start taking rhetoric, the art of persuasive speech, in tenth grade and culminate their studies with a speech their senior year. It just so happens that during my junior year I gave a fifteen minute final speech on concussions in soccer, so I had greatly researched the topic and knew all about the danger and uncertainty of head injuries. Being me, I probably wouldn’t have said anything about my headache and just tried to suck it up and go on with everything if I hadn’t learned so much about concussions during my rhetoric speech preparation. I ended up missing a lot of school as a result of the injury, and whenever I would try to go back all the sounds and lights would overwhelm me and give me awful headaches again. I think I actually set a new record for absences. It was a week until college decision day, and I had just as little direction about what I wanted to do as when I started high school. I had a really hard time reading, my memory was awful, and my concentration was pretty bad. I had no clue what I was going to do. Luckily God did. My parents called me downstairs one night, and as I slowly descended the stairs I thought about what they were going to say to

me. They ended up telling me about the World Race Gap Year. The funny thing was that my friend told me about that exact program earlier in the year over coffee, and I had already looked it up and read all about it. I thought my parents would never be ok with me taking a whole year off before going to college, so I never said anything about it. I knew when my parents presented the World Race to me, that it was what I was supposed to do. Through all the indecision about college, the concussion, and everything else, this was what God had planned for me the whole time. I have been called by God to go and love His people around the world. I will be traveling to Cambodia for one month, Thailand for two, Malawi for three, and Guatemala for three, launching in October. This trip is much more than a year off from school. It is an opportunity for ministry and for the gospel to be shared in places that have never heard Jesus’ name. This trip will allow me to discover more about the world, God, and myself in many new ways. I know this adventure will forever change my life and shape me into the person God intends me to be. There are a lot of unknowns for me about this trip. I don’t know where in those countries I will be serving. I don’t know anyone else going. I don’t know what specifically I will be doing. I don’t know what I will do when I get back. Luckily, there are a lot of knowns as well. I know I will leave this October. I know I will sleep in a tent with a sleeping bag for nine months. I know I will live out of a backpack. Most importantly, I know that God will provide for me. His plan is always the best one, and it will all work out. Please pray for me and my team as we prepare for this incredible adventure. Times will be hard, and we will need loads of encouragement along the way. Pray for health and safety throughout this trip. Please pray for the people we will encounter and that their hearts will be open and prepared for the Holy Spirit. It’s going to be a crazy, amazing journey, and your prayers are greatly appreciated! Dietrich Bonhoeffer said, “We must be ready to allow ourselves to be interrupted by God.” God has definitely interrupted my plans, and I am ready to begin this adventure! How Memphis Brought an Incomparable Health Drink to the Nation

emphis spas and health food stores carry this one-of-a-kind product because of their focus on wellness. Now, a major grocery chain is on board. When Hydrogen Water was approved by the FDA for public purchase, this much success was not anticipated. In fact, the owners were just trying to get it approved for prescription-only sales. Now Memphis and the surrounding area are the first in the nation to offer this cuttingedge product to anyone. What makes this water so special? When you try a pouch, you don’t taste any difference from regular water. That’s because it’s actually not the water itself – it’s the molecular hydrogen infused in the water that makes it a unique product. The patented pouch is key: it took years of testing to perfect and was proven as an effective way to trap molecular hydrogen, or H2, a natural gas. “The water is just a vehicle for getting the hydrogen into your body,” says Mike Conley Sr., CEO of Hydrogen Water. Dr. Cody Cook MD/PhD is the medical scientist who brought the idea to Conley Sr. At the time of their discussion in 2010, there was no product in the making. Dr. Cook just wanted Mr. Conley’s input, a former Olympic champion and businessman who has an extensive background and knowledge in sports/ athletic performance. The idea originated after Dr. Cook worked with cancer patients at UAMS, Arkansas’ only comprehensive academic health center, where he continues to instruct and lead research. Cook saw first-hand the benefits molecular hydrogen gave these patients: reduction of fatigue, a 50% reduction in lactic acid, and reduction of inflammation, to name a few. Put simply, many patients felt better overall.

In essence, Hydrogen Water is described as a metabolic drink. Mike Conley Jr. of the Memphis Grizzlies touts that it allows him to recover more quickly after games and long road trips, stating “I’m able to sustain a high level of performance for longer periods”. High-school, college, and professional athletes across the country are using it for the same reasons: better endurance, stamina, and recovery. Conley Sr. hopes to get it recognized in the Memphis marathon and cycling community as a natural performance tool. While some may not understand the exact science behind this product, they can most definitely feel it. Ms. Adrienne Bailey, a native Memphian, is one example. She drinks a pouch of Hydrogen Water daily, as recommended, and says the biggest benefit she experiences is increased energy. “Sometimes I’ll replace my morning coffee with Hydrogen Water. It gives me a boost, which elevates my mood,” she says. As for the future of Hydrogen Water, the biggest obstacle is educating people. “This is a brand-new market in the U.S., so we are working to get the story out to a wider audience,” says Conley Sr. Along with athletic organizations, he also hopes to work with St. Jude in the near future. “We want to form a research relationship with them because of the ever-changing benefits,” he explains. The 2nd annual Wine on the River Memphis was a sold-out, wine-sipping extravaganza on the banks of the Mighty Mississippi. The “World Tour� theme highlighted wines from various regions across the globe and featured hundreds of varietals of wine for sampling. A portion of the ticket sales benefited Youth Villages, a local nonprofit dedicated to helping emotionally and behaviorally troubled children and their families live successfully.

Ducks Unlimited is able to multilaterally deliver its work through a series of partnerships with private individuals, landowners, agencies, scientific communities and other entities. Ducks Unlimited conserves, restores, and manages wetlands and associated habitats for North America’s waterfowl. These habitats also benefit other wildlife and people.

Deedra Stone Bergeron, owner and lead designer for Deedra Stone Designs, set two beautiful tablescapes - one features a more casual, rustic look, while the other a more formal, traditional style. Her advice for making a festive table this holiday: Decorate with elements of nature, right from your yard! “Gather greenery from outdoors, which can be pulled the night before,” Deedra says. Then, incorporate pumpkins, gourds and candlesticks. For the Christmas season, swap pumpkins and gourds for evergreens and holly berries.

Happy Non-Traditional Thanksgiving By Andrea LeTard Once a year, we all sit down to a big spread of dishes that for some odd reason, we never eat again for another 364 days. Call me a contrarian, but the thought of stuffing my face with green bean casserole, sweet potatoes topped with marshmallows, and jellied cranberry from a can has never tickled my fancy to the point that I’m counting the days to Thanksgiving – and believe me, I love celebrating any day where calories don’t count. So years ago, I had a thought: Would everyone hate me if I hosted a non-traditional Thanksgiving dinner? The answer is yes, and I don’t want to influence anyone to take this route entirely, thus be responsible for the family fight when your ham-loving brother shows up and there’s a whole fish on the table. The reality is, most people adore traditional Thanksgiving foods a nd can’t wait to gobble them up that one day each year – my husband is included in this population and he thinks I’m a nut case f or dreading turkey and dressing – however, there’s no harm in changing the menu up a bit. Plus, it may surprise you how thrilled your guests are when they’re presented with a unique spread of food. Here are my tips for hosting a non-traditional Thanksgiving and still keeping the traditionalists happy.
Keep the Menu Seasonal A lot of the reason people like traditional Thanksgiving food is b ecause it’s all very fall themed – warm flavored comfort food. Consider a few side dishes that aren’t traditional but stick to the season. Side dishes like pan-seared brussels sprouts with bacon, d ried cranberries, and a warm balsamic dressing; spaghetti squash tossed in a brown butter, sage, parmesan sauce; or roasted butternut and acorn squash seasoned with pumpkin pie spice and maple syrup all scream Thanksgiving without being so basic.
Serve Uncommon Appetizers There’s no need to jump right to the dinner table – Thanksgiving should not just be a dinner; it should be an event. Start the day with a spread of untraditional appetizers such as oysters on the h alf shell, foie gras or pate, and unique cheeses. If you want to get extra fancy, pair each unique appetizer with a wine tasting or cocktail.
Scratch the Buffet Tradition Traditionally, Thanksgiving dinner is all served at once in a buffet

manner, leaving everyone over-stuffed and ready for a nap. I’m all about family style, particularly on Turkey Day, but consider doing i t by course and spacing out each one. After appetizers, have a f amily-style first course. Consider dishes such as pumpkin or butternut squash soup, spinach and brussels salad with molasses d ressing, and sweet potato latkes with smoked salmon. Take a b reather, then serve the main course with sides. Take one more break and make room for dessert at the end of the evening, pairing w ith coffee, a specialty latte, or flavored cappuccino. Pumpkin spice, anyone?
Throw a Main Course Curve Ball No kidding, my brother and I hated Thanksgiving food when we w ere growing up – literally dreaded it. So every year, my mom o r grandmother would make us lasagna or baked ziti. Baked p asta was always our Thanksgiving and that’s what we looked forward to eating. Serve the traditional turkey, dressing, and ham for guests who look forward to tradition, but consider one or two d ishes that surprise everyone. An apple stuffed pork tenderloin, brown sugar short ribs, whole citrus and herb branzino, pistachio pesto pasta, or pumpkin ravioli with sage sauce all sound peculiar f or Thanksgiving, but they’re all seasonal comfort-food and will put a huge smile on the face of many.
Consider Atypical Treats E very good Thanksgiving celebration has to end with dessert. W hile I’m not big on traditional dinner items, I will disown someone if pecan pie is not a part of the spread, so keep the pies but add other sweets to the menu. Anything from sweet potato bread pudding with a bourbon caramel sauce or Bailey’s pumpkin m ousse will keep the Thanksgiving custom alive but add a little non-tradition to the holiday.

Brussels Sprouts 1 pound whole, fresh brussels sprouts sprinkle of salt and pepper
1/4 cup extra virgin olive oil 1 cup chicken stock 1/2 cup chopped cooked bacon
Peel and cut in half one pound of brussels sprouts. Toss in half of the olive oil and sprinkle lightly with salt and pepper. Place on sheet pan in a 350 degree preheated oven and roast for 10 minutes until brussels sprouts begin to wilt and have a light, golden color. Remove from the oven and cool in refrigerator until needed. These can be roasted up to one day ahead of time. W hen needed, heat the remaining olive oil in a s aute pan on a burner set to high. When the oil is very hot and begins to smoke, add the b russels sprouts and chicken stock. This will sizzle and pop quite a bit. C ook quickly for 2-3 minutes while tossing until the chicken stock has soaked into the brussels sprouts. Remove from heat and add the chopped cooked bacon. Toss to combine.

Autumn Cobb Salad 1 acorn squash, seeded, peeled, cut into cubes 1 butternut squash, seeded peeled, cut into cubes 4 slices of cooked bacon, chopped 2-3 hard boiled eggs, chopped 1 stalk of celery, chopped
1/2 avocado, diced 1 honeycrisp or gala apple, diced (skin-on) 1/2 cup of craisins 1 cup of candied walnuts (halves or pieces. See method below) your favorite salad greens (we use spring mix)
S quash: Preheat oven to 425 F. Line baking sheet with aluminum foil. Toss squash with 1-2 tbl extra virgin olive oil (enough to thinly coat) then spread in single layer on sheet tray. Sprinkle with kosher salt and pepper. Roast for 20-25 minutes or until squash is tender. Allow to cool completely before adding to salad, so as to not wilt your lettuce.

Walnuts: Melt 2 tablespoons of butter in small skillet on medium heat. Add 1/4 cup of brown sugar (packed firm), 1/2 teaspoon pure vanilla extract, and a dash of salt. Stir until all sugar is dissolved. A dd walnuts and continue to stir until all walnuts are coated. Transfer to parchment or wax paper, separating pieces, and allow to completely cool D ressing: Combine the following in a squeeze bottle or other small container that can be sealed well and shake vigorously until mixed well: 1/3 cup apple cider vinegar 2/3 cup extra virgin olive oil 1/8 cup honey salt and pepper to taste

Roasted Root Vegetable Salad 1 small butternut squash, peeled and diced 1 onion, large dice 2 carrots, peeled and sliced 2 parsnips, peeled and sliced 2 beets, peeled and diced 3 cups kale, ribs removed and cut into small, bite-size pieces ¼ cup plus 1 ½ tablespoon olive oil
1 ½ tablespoons apple cider vinegar ½ tablespoon dijon mustard 1 tablespoon maple syrup ½ tablespoon fresh thyme, minced ½ tablespoon fresh sage, minced ¼ teaspoon cinnamon cracked black pepper, to taste
Preheat the oven to 425 F. Line 2 sheet pans with parchment paper. In a medium bowl combine the squash, onion, carrots and parsnips together with 1 tablespoon of olive oil. Spread out into an even layer on one of t he prepared pans. In a separate bowl, toss the beets with another ½
t ablespoon of olive oil and spread out on a separate sheet pan. Roast in the oven for 18-22 minutes, or until the vegetables are soft and lightly browned. In a small bowl, whisk together the apple cider vinegar, mustard, maple s yrup, fresh herbs and cinnamon. While whisking, slowly pour in the remaining ¼ cup of olive oil to create a dressing. For a cold salad, allow the roasted vegetables to cool before combining w ith the kale and dressing. For a warm salad, toss the kale with the roasted squash to help wilt down the greens before adding in the beets and dressing. Season to taste with cracked black pepper.

Collard Green & Wild Mushroom Gratin 2 pounds collard greens, cleaned and chopped 2 pounds sliced wild mushrooms (Oyster or Chanterelle are best for the season) 2 pounds yellow onions, julienned
1 quart heavy cream ½ pound parmesan, grated 2 cup panko bread crumbs 3 tablespoons fresh parsley, chopped ½ cup vegetable oil
Place a heavy bottom stock pot on high heat for approximately 7 minutes u ntil it is very hot. Add ¼ vegetable oil. Allow to smoke. Add julienned o nions and a pinch of salt to begin caramelization. Once the onions have begun to brown, reduce heat to medium and add the sliced wild mushrooms. C ontinue cooking until the mushrooms begin to soften. Begin adding the collard greens, a handful at a time, and wilt them in batches. Once all collards are in the pot, add a pinch more salt and black pepper to taste. When the g reens are fully wilted and incorporated with the onions and mushrooms, add the quart of heavy cream. Allow the cream to reduce by half its volume. Transfer entire mixture to a casserole or baking dish and allow to cool. While the mixture is cooling, place the grated parmesan, chopped parsley, bread crumbs and remaining ¼ cup vegetable oil in a mixing bowl and mix b y hand until fully incorporated. Cover the collard green and mushroom casserole with the bread crumb topping. Bake the casserole at 375 degrees for 25 minutes or until the bread crumb topping is golden brown. Remove from oven and let stand for 7 minutes prior to serving.

Saute corn, red and green bell pepper, caramelized onion, and bacon over m edium heat until thoroughly heated. Add balsamic vinegar and sugar, and cook for one minute. Garnish with fresh cilantro.

Maple Syrup Grilled Sweet Potatoes 2 tablespoons spicy brown mustard 2 tablespoons Russian mustard 1 teaspoon seasoned rice vinegar ½ cup dark maple syrup
8 – 10 slices thick cut bacon, cooked and chopped 4 sweet potatoes ¼ cup extra virgin olive oil 6 cloves garlic, crushed salt and pepper
Mix mustards, maple syrup and vinegar in a bowl and set aside. Cook sweet potatoes by cooking them in a microwave for 3-4 minutes until tender outside, but still firm on the inside. NOTE: m ake sure to pierce skin with a fork prior to placing in the microwave. Once cooked, slice the potatoes into rounds that are ¼” to ½” thick and toss them in oil, crushed garlic cloves, and salt and pepper and let sit for 15 - 20 minutes. Using either an i ndoor or outdoor grill (make sure the grill is greased prior to using), grill the potato rounds until slightly charred and crispy. Combine the mustard and maple syrup mixture with the grilled potatoes, season with salt and pepper and sprinkle bacon bits over the top and serve.

3 quarts Chicken Stock 2 tablespoons cilantro, chopped 1 tablespoon herb blend 4 tablespoons butter, divided Salt and pepper to taste
In a heavy bottomed pot, sweat onion, pepper, and lime zest in 2 tablespoons of butter until translucent. Add stock and bring to boil. Add rice, bay leaf, and lime juice and cook, covered, until rice is tender, roughly 30 minutes. Remove f rom heat and season with cilantro and Uncle Merrit’s herb blend. Add the remaining yellow stuff and serve warm. Chorizo Croquette 1 pound spicy chorizo ½ onion, minced 2 rib celery, minced 4 clove garlic, minced 3 eggs

Mix spicy meat together with onion, celery, garlic, 2 eggs, and chopped herbs of your choosing. Shape meatballs into quenelle, (football shapes) roughly 1 ounce by weight. Mix remaining egg with stock, or water, or … whatever you like to thin. Dredge meatballs in flour, then egg/liquid mixture, and finally bread powder. Mixture should hold its shape nicely, it should stand together like little soldiers. Fry at 350 degrees until golden brown, roughly 2 minutes. Drain onto tray covered with paper towels. Shrimp & Andouille Bread Pudding 3 large eggs 2 quarts heavy cream 1 french baguette, cut into 1” cubes 1 tablespoon olive oil 1 pound andouille, chopped 1 pound 41/50 shrimp, peeled
and deveined 1 yellow onion, chopped 1 cup green onions, sliced 2 cloves garlic, minced 1 tablespoon fresh thyme, chopped
Whisk cream and eggs in a large mixing bowl. Add bread, coat, and set in the refrigerator. Set a skillet over medium-high heat. Add oil and onions, sweat. Add andouille and garlic, cook 1 to 2 minutes. Add shrimp and green onions. Saute until shrimp are cooked through. Combine saute mixture and thyme with bread. Transfer to a 9×13 baking dish and bake at 400 degrees for 45 minutes.

Alli-gouda Mac & Cheese 1 pound smoked gouda 1 quart heavy cream 2 cups cavatappi noodles
½ pound diced alligator sausage 1 green onion, diced
Bring the cavatappi noodles to a boil for approximately 8 minutes or until soft. Drain the noodles and let sit while preparing other ingredients. Combine the smoked gouda and heavy cream thoroughly in a medium saucepan. Let the gouda and heavy cream slowly melt while sautéing the alligator sausage in a separate pan. After all ingredients are prepared, combine the sausage and noodles in a serving dish. Drizzle the smoked gouda and heavy cream sauce over the dish and serve immediately.

Creamy Autumn Risotto 1 cup of arborist rice ½ cup yellow onion, diced 1 each clove of garlic, minced 1 cup butternut squash, diced 2 each ears of corn 2 tablespoons clarified butter
1 quart chicken stock ½ cup heavy cream 1 cup grated parmesan 1 teaspoon thyme, chopped 1 teaspoon oregano,chopped to taste salt and pepper
Heat butter, then onions and garlic in a heavy bottomed pot. Sweat for five minutes. Separately grill corn until just done and cut from the cobb. Peel, dice, and blanch the butternut squash. Add rice to the pot and stir for one minute. Add the stock and bring to a boil. Reduce heat to a simmer and cook until rice is just done, stir often, and add stock if needed. Add corn, squash, herbs, and cream, and continue cooking for five minutes. Stir in cheese and season with salt and pepper, serve immediately

Erling Jensen – The Restaurant was named by OpenTable as one of the “100 Best Restaurants for Foodies in America.” “The whole idea behind Erling’s was to create a restaurant on the idea of excellence. Excellent food and excellent service,’’ said Erling. “Each dish, whether it’s an appetizer or an entrée or a dessert, is based on optimal freshness.” It’s a tough challenge to remain at the top of a growing and very competitive dining scene in Memphis, but Erling said keeping current with trends in food is critical. “Tastes and interests in food change, but the ideas of freshness and quality and unique flavors never change,” he said. rling Jensen – The Restaurant will celebrate its 20th anniversary this month and still remains what this much-heralded restaurant started out to be: the hallmark of fine dining in Memphis.
Tucked away on Yates at Murray Road in the heart of East Memphis, Erling’s (as the restaurant is affectionately called) still serves exceptional cuisine with a European flair and often with a hint of flavors from his native Denmark, where Erling began his career as chef. Naming a restaurant after himself was a risk Erling was willing to embrace, mostly as a reflection of his culinary creativeness and his skills as a chef. “I give this restaurant everything I’ve got seven days a week, and that includes my soul and spirit as a chef,’’ Erling said. “I’ve heard it said that the most powerful message a chef can send a customer is to put his or her name behind the food he or she creates. I believe that’s true and it has worked for me.” And it works for his customers, as well, many of whom have been following Erling and his top-notch culinary creations since he came to Memphis in 1989 as the chef at the old LaTourelle in Midtown. He opened Erling Jensen – The Restaurant in November of 1996. The customer count at Erling’s keeps growing, with

According to Erling, keeping up with trends caused him recently to put filet of ostrich back on the menu, bouillabaisse and, for the winter months, there will be more root vegetables. They’re trendy, but also fresh at this time of year and not hard to find. Some dishes, though, won’t change, said Erling. “They’re just too popular.” Like the rack of lamb, crab cakes, buffalo with lobster bearnaise, fresh fish like the Dover sole and, of course, the chocolate souffle. Erling’s has grown throughout the years and now has more than two dozen employees who embrace his culinary vision. They help to create and serve the best continental cuisine in Memphis and they work hard to keep the restaurant’s atmosphere relaxed and sophisticated. Erling expanded his bar in 2010 and it has grown in popularity, becoming one of East Memphis’s favorite bars because it offers the same culinary expertise and excellent service in a warm and welcoming setting. “I guess you might say that Erling Jensen is a labor of love,” said Erling. And after all these years, it still shows. Erling will celebrate the restaurant’s 20th year with a special menu for guests who make reservations for dinner on November 17th, 18th, and 19th, by calling the restaurant at 901-763-3700.
