Preheat the oven to 375 degrees F and line a baking sheet with parchment paper 1 1/4-ounce packet active dry yeast 1/2 cup sugar 7 1/2 to 8 cups all-purpose flour, plus more for dusting 12 tablespoons (1 1/2 sticks) unsalted butter, melted and cooled, plus softened butter for brushing 2 cups whole milk, at room temperature 2 large eggs, at room temperature 1 tablespoon kosher salt, plus more for sprinkling Bloom yeast first by measuring ½ cup warm water (between 110 and 120 F) into a bowl and sprinkle the yeast over, and adding the sugar. Let sit for a minute or two – you should see it begin to bubble and activate. Gently stir in one cup of flour; set near a warm place. Mix melted butter and milk in a mixer with the hook attachment on low speed. Add eggs and mix, adding the yeast mixture until incorporated. Add 6 ½ cups flour and 1 tablespoon salt, mixing until dough forms a ball, adding up to ½ cup more flour as needed. Brush a large bowl with softened butter and transfer dough, covering it with a towel. Let rise in a warm place, 2 to 2 ½ hours until doubled in volume. Dust a clean flat surface with flour and turn the dough out onto it. Flour hands and gently press the dough into a 16-by-8-inch rectangle, about 1/2 to 3/4-inch-thick (don’t use a rolling pin). With short side in front of you, cut the dough in half lengthwise with a floured knife and then crosswise into 12 strips. Fold each strip of dough in half so the top part slightly overlaps the bottom half, then tuck the overhang underneath. Place the rolls seam-side down on the prepared baking sheet in 3 tightly packed rows. Bake until golden brown, 18 to 20 minutes. Remove from the oven and brush with softened butter.

Welcome to the 26th celebration of the Merry Merchant Munch and Winter Wonderland Tree Lighting Ceremony. The Merry Merchant Munch invites you to visit open houses, do some shopping, enjoy some delicious treats, hear local music throughout the weekend all in our local community. Use the map and Munch Punch to plan your weekend! Be sure to drop your completed passport off at Jitters by 3pm on Saturday to win some amazing prizes! The Winter Wonderland & Tree Lighting ceremony is celebrated on Friday evening beginning at 5:30pm in the Eagle River Town Square. Choirs from local schools will entertain us while we await the arrival of Santa and his reindeer at 7pm. It is a wonderful way to celebrate the season and our community by sharing time, laughter, and good fellowship with our neighbors and friends. In this generous season, we encourage you to consider sharing as you are able, by bringing an unwrapped toy for the Eagle River Sleeping Lady Mountain Lions’ Tree of Giving program. You can also bring nonperishable food items to the Eagle River Area Rotary table for the local Food Pantry. The Chugiak-Eagle River Chamber of Commerce is pleased as always to coordinate this special seasonal event. Coconut Sour Cream Cake
Preheat oven to 350 Degrees. Spray a 9x13 pan. ¼ Cup Melted Butter 3 Large Eggs 1 TBSP Fresh Lemon Juice 1 White Cake Mix (18.25 ounces) 1 1/4 Cup Sour Cream, divided 1 Cup Canned Cream of Coconut, divided 1 Can Coconut, reserve a couple of tablespoons for top Combine the first four ingredients, then add 1 cup Sour Cream and ¾ Cup Cream of Coconut. When blended, add the Can of Coconut (reserving a bit for garnish). Blend well and pour into prepared pan. Bake for 35 minutes or until toothpick comes out clean. While the cake bakes, combine the remaining: ¼ Cup Sour Cream ¼ Cup Cream of Coconut Let cake cool for about 15 minutes. Spread the sour cream and cream of coconut over the cake and top with coconut. Return cake to oven for 5 minutes (to toast the coconut).

Homesteaders Cranberry Nut Bread
Preheat Oven to 350 Degrees. Grease and lightly flour a bread pan or muffin tin. 2 cups AP Flour 1 cup Sugar 1 ½ tsp Baking Powder ½ tsp Baking Soda 1 tsp Salt ¼ Cup Shortening ¾ Cup Orange Juice 1 tbsp Grated Orange Rind (be sure to grate your orange before you squeeze it!) 1 Egg, well-beaten ¼ Cup Chopped Walnuts (optional) 1-2 Cups Alaskan Cranberries (store bought will also work) Stir together dry ingredients: flour, sugar baking powder, baking soda, and salt. Cut in the shorting and blend to resemble corn meal. Combine OJ, orange rind, and egg until foamy. Add to dry ingredients and fold in the nuts and cranberries. Pour into prepared pan, spreading corners and sides slightly higher than center. Bank for 1 hour until crust is golden and toothpick comes out clean. Cool and remove from pan.
