Over the last 14 years, owner and Chef Thomas Salamunovich has assembled a creative team of directors dedicated to providing hospitality and delicious cuisine at Larkspur Events and Dining. Depending on the size and goals of your group you may choose to buy out the entire restaurant, dine in our 45-seat private dining room or host an outdoor reception. The refined, contemporary and elegant ambiance in our recently renovated dining room is enhanced by the entertaining view of our open kitchen where our talented chefs can be seen creating your meals. The options at Larkspur are limitless and our tenured team continually strives to exceed guests’ expectations. Whatever your needs, we will work with you to create and execute the dining experience that your group is looking for.
At Larkspur we know how valuable your time with clients or associates can be, even while traveling. Our private dining room can comfortably hold up to 45 people in a customizable, intimate setting for lunch and dinner, business meetings and small conferences. Utilize a boardroom style table arrangement or round tables for convenient group breakout sessions. The private dining room has all of the capabilities for your Audio and Visual needs including full dimmable lighting and floor to ceiling curtains. When business is done, enjoy Larkspur’s Modern American cuisine and signature handcrafted cocktails.
The Larkspur Great Room is centrally located in Golden Peak Lodge adjacent to the main Larkspur dining room. It can be used as an extension of the dining room for large groups, increasing our capacity to over 300 guests. The Great Room may also be used as an expansive pre-function space to enjoy cocktails and hors d’oeuvres. Additionally, it is often transformed into a late night venue for a relaxed and spirited evening of live music, DJ’s and dancing.
Larkspur Events and Dining specializes in creating unique and memorable dining experiences in the Vail Valley. The views in Vail are so exquisite we encourage groups to take advantage of our slope-side patio, located at Golden Peak, one of the three portals to the Vail Mountain ski area. In the winter months it is ideal for lunch or après ski in the middle of, or at the end of your groups’ ski day. Likewise the summer months lend themselves to outdoor dining on our expansive patio or planning a special experience on our lush garden lawn with the breathtaking Gore Mountain Range as a backdrop.

arrangements Larkspur will provide china, glassware, silverware and white linens, menus and table numbers for our guests. If you desire special items, these can be rented at an additional cost, and we will be happy to assist you with this. Stages and dance floors will need to be rented if required. There will be a 20% surcharge for all outside services arranged & billed through Larkspur Restaurant. The Client is responsible for all arrangements with florists, entertainment and photographers, and any accessories needed for their seating plan. We would be happy to help with vendors for these arrangements. There is a $35 per person charge for any vendor meals that are served. All outside decoration, rental equipment and entertainment must have the approval of the Event Coordinator prior to the event. The Client is responsible for the setting up and tearing down decorations. All food and beverages must be purchased through Larkspur Restaurant. The Event Coordinator must approve any special arrangements and additional charges may apply. Complete cocktail, beer and wine service are offered. All charges are billed on consumption on a per drink basis or per bottle for wine. All charges are added to the final bill. Per Colorado State Law, alcoholic beverages may not be brought into the restaurant. Larkspur Restaurant management reserves the right to deny service of alcoholic beverages to anyone who may appear intoxicated. Under no circumstances will persons less than 21 years of age be served alcohol. The Golden Peak Great Room is available for Larkspur events. There is an additional fee to use this space and may be required dependent upon the season and size of group. Larkspur Restaurant will not assume or take responsibility for damages to or loss of any items. The Client is responsible for payment of damages to Larkspur Restaurant caused by any member of the party as well as damage to any rental items used during the event.

noise ordinance The Town of Vail noise ordinance dictates that music may not be amplified after 12:30am in the Great Room or after 1:00am in Larkspur Bar. Larkspur reserves the right to monitor and regulate noise levels.
pets and animals Under no circumstances will pets be allowed in Larkspur Events and Dining (Service animals excluded).

thomas salamunovich owner • chef Internationally trained chef Thomas Salamunovich hasn’t limited his culinary identity. From the elegant Larkspur Restaurant to the quick-service Larkburger, Thomas is comfortable as long as he’s producing authentic fare. Both a graduate and instructor of the California Culinary Academy, he continued his education in San Francisco during the West Coast’s food revolution. Under the seven-year tutelage of first Jeremiah Towers at Stars and later Wolfgang Puck at Postrio Restaurant, Thomas developed his penchant for New American cuisine. On a year-long French tour he worked and learned in the kitchens of Michelin rated three-star restaurants Paul Bocuse in Lyon and Lucas Carton in Paris, two-star restaurant Elysee Lenôtre in Paris, and world-famous bakery Poilane Boulangerie. In 1993 Thomas moved to Vail to become the Executive Chef of Sweet Basil, and designed and opened Zino Ristorante in Edwards a few years later. He and his wife, Nancy Sweeney, opened Larkspur at the base of Vail Mountain in 1999. The energetic bar area and graceful dining room are known as much for the atmosphere as for the menu, which elevates regional American fare. In 2002 Thomas created Silver Sage and Summer Thyme restaurants for Red Sky Golf Club, one of the premier mountain golf experiences in North America featuring courses by Tom Fazio and Greg Norman. Fall of 2005 brought the opening of fast-casual Larkburger, a new concept born from the popular bar item at Larkspur. Natural, organic, and eco-friendly, Larkburger has built a loyal following in the Vail Valley. Larkburger has expanded into Boulder, Denver and Fort Collins. In September 2008, Thomas opened Restaurant Avondale in the Westin Riverfront Resort & Spa at the base of Beaver Creek Mountain. Social and posh, Avondale’s stylish interior and welcoming ambiance provide a haven for residents and guests alike. The success of Restaurant Avondale and the entire food & beverage department was integral to Westin Riverfront being awarded Condé Nast’s Best Resort in North America for 2010.
