Julien Renaut: Meet One of Colorado’s Top Entrepreneurs

Julien Renaut, a multifaceted entrepreneur on a mission to change the French pastry scene in Colorado. With ambition in spades, this French native crossed the Atlantic at age 21 with determination to use his pastry skills, without limit. Defying the prejudice of his age, Renaut started La Belle® French Bakery as a one man show back in 2016. A wholesale bakery that would soon earn him accolades from major media outlets within the Denver metro area and placed him on the fast track to becoming one of the highest producing Artisan bakeries in the state of Colorado. As if this wasn’t ambitious enough, Renaut made the pivotal decision to open La Belle®’s first retail location in the midst of the global pandemic. A risk that catapulted La Belle® into the retail scene, and sparked an unquenchable hunger for more. Fast forward to today, La Belle® now serves over 120 wholesale businesses across the Denver metro area and has three retail locations, with a dozen more to emerge in the coming years. With much success, La Belle® has become a gathering place known for its modern yet traditional environment and unique croissant creations such as the infamous, Creme Brûlée croissant. DTell us about yourself. What prompted you to come to the US and start this French Bakery empire?

JThe decision to leave my home country of France when I was only 21 years old, was driven by frustration with the limiting mindset that was around me. Particularly how my age was a barrier to leadership positions, regardless of the skills that I possessed. I wanted to be judged by my abilities, so I looked for opportunities where that would be possible. I chose the U.S. because it offered the greatest potential for growth. The prompting to open La Belle® came years later when I realized that no matter what position I was put in, my mind was always set on growth. Once I saw that the company I was with was not aligned with me on this, I was determined that no one would put a limit on me, except for myself. And this is when I created La Belle®.

JDWhy did you pick Colorado to start your business?

Landing in Colorado was opportunistic for me. I was offered a position as an Executive Pastry Chef in Breckenridge, and though my first choice was to be oceanside- this was something I wanted to explore. Because of the healthy environment I saw, I ended up falling in love with it. I love living here and I think it was the perfect place to start.

DWhat inspired you to go from Breckenridge to the Denver metro?

JAs an Executive Chef, I was very focused on all the pastries, but I came to the Denver area because I wanted a new challenge. I took an opportunity to become the Director of Cuisine for an event center where I would be focused on leadership with a large team and the creation of a bakery inside the event center. So that was a big challenge I was ready to face. And I could also prove somehow that I had the skills required to grow the business.

DWhat made you decide to expand with two more locations?

JI don’t want to limit myself to anything. La Belle® has expanded because once I decide to do something, I go in full direction towards that goal. My determination to have our guests discover French pastries is bigger than myself. So I am constantly evolving La Belle®.

DHow did you meet your wife Alexandra? Tell us about your family.

JAlexandra and I actually met through a social dating app. I knew she was the one the first time I met her. I could feel the energy between us, her kindness, her authenticity. I told her the first week that she had to make a commitment with me because I didn’t want to waste any time dedicating my heart to her. She’s also Canadian and spoke French and that was something that was important to me. It’s been four years now and we have built a family and a life together.

JDWhat gave you the passion to become a pastry chef?

At 17, I chose pastries, randomly. Creating something that makes people celebrate your creation every time they eat it, produces an emotional connection that you cannot duplicate anywhere else.

JDCan you tell us something most people don’t know about you?

I’ve done 10 years of Muay Thai and I won the Colorado Muay Thai tournament back in 2015. I have not been practicing for about 4 years now, but maybe one day I’ll go back to it.

JDWhat is your goal for the next few years?

The goal is to create a sustainable business where we generate careers and build a large community around La Belle®. We plan to open 16 retail locations across Colorado within the next 5 years. Collaborating closely with my business partner, who possesses the expertise to help achieve this goal. With 16 locations, we can cover the major areas of Colorado. La Belle® is not just about the pastries, there is a whole culture to it and I want to share that with everyone.

Monte Carlo is Having a Restaurant Renaissance

Eat your way through this Michelin-starred Mediterranean marvel.

As the evening descends onto Monte Carlo, I’m watching the lights cast a beautiful glow onto the Casino Square from my dinner table at Café de Paris Monte-Carlo. Recently reopened after the first major remodeling in over 150 years of its existence, the café is a cultural icon. Ages ago, women sipped their tea here while waiting for their husbands to finish gambling at the legendary Casino de Monte-Carlo, featured in several James Bond movies. Today the cafe serves an irresistible menu of gourmet creations so tempting that I’m having trouble choosing. I finally settle on the homemade foie gras and Ile Flotante, or floating island, for dessert. Both melt in my mouth, each with their own rich and indulging taste.

A Mediterranean marvel that often is overshadowed by Paris, Monte Carlo is going through a veritable restaurant renaissance, rising to the new epicurean heights with several new openings where chefs now offer authentic worldwide flavors. It’s partially a result of the “pandemic revamp”— when chefs couldn’t stay open, they focused on redesigning for the future. Now they’re expanding dining menus and settings to attract diverse demographics with varied tastes—not only high rollers, but also families, couples on romantic getaways, millennials and even Gen Z’ers.

In February, Blue Bay  reopened after a major renovation, featuring Caribbean dishes and décor, dreamed up by chef Marcel Ravine, who grew up on the islands watching his grandmother cook. The long-awaited Amazonico has finally opened this spring, serving Latin American favorites in the rainforest ambiance. Last fall,  Taera welcomed guests with bright Venezuelan colors and cuisine, thanks to chef Victoria Vallenilla’s vision. Finally, chef Yannick Alleno, who holds a long list of Michelin stars, has just opened the Japanese-themed L’Abysse at the Hôtel Hermitage, aiming to redefine the art of sushi.

That’s not to say that Monte Carlo’s ever lacked high-end culinary offerings—all of its iconic Michelin-starred dining legends continue to whip up unforgettable and instagrammable creations. Pavyllon’s shelled edible crab arrives juicy and tender and the meringue dessert lives up to its promise of “incredible lightness.” Le Louis XV delights with flavorful sauces, intense broths and colorful presentations. And Le Grill serves its legendary souffles against the stunning backdrop of the Mediterranean Sea. That might as well be the best view in town, because, as you lick your spoon, you can see France, Italy and Monaco at once. Pack your best clothes and come hungry!

Where to stay. Hôtel de Paris, which overlooks Casino de Monte-Carlo and Café de Paris, puts you within strolling distance from all top culinary spots and shopping, too. The breakfast spread is boundless, and the Thermes Marins spa will scrub your stress away.

Biscuit Pépites de Chocolat

French Chocolate Chip Cookies

Ingredients:

1 lb. unsalted butter

2 cups of sugar eggs about 9 (16 ounces)

3 1/4 cup of all purpose flour semi-sweet chocolate chips

Directions:

1. Pre-heat oven to 400 degrees

2. Place butter in mixer and mix with paddle until white

3. Add sugar and mix thoroughly

4. Slowly add the fresh eggs, 2-3 at a time until fully incorporated

5. Add flour slowly until combined

6. Use small cookie scoop to add to cookies to parchment on tray, leaving at least 3 inches in between each cookie, as they will spread during the baking process

7. Add chocolate chips to the top of each cookie gently pressing into the batter and flattening cookie

8. Bake 8-12 minutes or until golden brown

Belize- Newly Discovered

Belize was newly discovered for me and I hope for many of my readers that Belize is newly discovered for them.

I’m immersed in the rich and profuse jungles of Belize. Howler monkeys are skimming through the trees, vocal cords greatly aroused, while large drifting clouds guide the light casting shadows as colorful birds flash by in a rainbow mantle of attraction. Ancient Maya ruins are standing tall signifying a heavy gesture of creativity that clearly is the scale of history and legend that permeates this country. I see brilliant threads of sunlight and enjoy rich aromas as the turn of a leaf is made by an unseen animal. My innocent joy is a beacon shining through this incredible atmosphere, a surprising and uplifting encounter with nature, while the easygoing Belizeans are recharging the spirit at every turn of the road.

Sixty percent of Belize’s land surface is covered by lush forests, mangrove reef ecosystems, winding rivers and caves, ageless rain forests, and home to the only Jaguar Preserve in the world. The northern most Central American country, Belize is bordered by Mexico to the north, the Caribbean Sea to the east and Guatemala to the west and south. Before the trip I was informed that Belize was a British Colony from 1862-1981, known at British Honduras, and today it is the only Central American country where English is the official language. I did hear many linguistic dialects, though the Belizeans usually speak a lilting Creole to one another. Moreover, it was fascinating to learn from a population of some 400,000, that many Belizeans are related through extended families woven from the proud cultures of Maya, Garifuna, Creole, and Mestizo. So possibly it might not be too difficult for a Belizean traveling through the country to run into an uncle, aunt or cousin.

Hidden Valley Wilderness Lodge

Amongst all this gorgeous nature wilderness I was surprised at the comfort and class of the Belize accommodations. I booked two nights at the splendid Hidden Valley Wilderness Lodge located about two hours from the Philip S.W. Goldson International Airport. The Lodge is an idyllic hideaway for those who wish to travel to a remote nature setting, leave the ills of the world behind, experience peace and privacy, and the vibrant culture of a small Central American country about the size of New Jersey. Originally a logging home, the Lodge was purchased by the Belizean Roe family in 2001 who pressed sustainability into place before the word was a popular catchphrase. I found the eco-property to be Belizean luxurious using solar energy, no plastic allowed, and for coffee aficionados they grow and roast their own coffee. The produce is garden fresh, and the cuisine is created by local chefs who grew up in the rainforest. Tucked away in a vast 7,200-acre private reserve in the Mountain Pine Ridge area of Belize, and accompanied by the songs of unseen birds, before me are rolling hills, a private forest reserve, 90 miles of biking and hiking trails, as well as a 25 minute hike to Butterfly Falls, active half-day canoeing excursions. Amongst this shining natural beauty the country has 5,000 species of plants and hundreds of species of animals and creepy crawlers, rare and endangered wildlife, and for bird aficionados, some 300 species of feathered friends are flitting about in the pristine rainforest..

Belize- Newly Discovered

Maya Magic

On my first full day, I recognize the fleeting scent of wildflowers as golden seams of light trickle through the trees and boisterous birds low on the wind sing their songs with a throaty gusto. Led by MayaWalk Tours with guides that help to bring the landscape and culture alive, we journey for two hours on rough dirt roads past flowing rivers and limestone caves, arriving at Caracol, a sprawling Maya archaeological site. Caracol translating to “snail” from Spanish, covers nearly six square miles high on the Vaca Plateau in the heart of the sub-tropical Chiquibul Forest Reserve. Flights of fantasy and puzzlement swirl about me, while time is locked firmly in place in a continuance of the ancient Maya civilization, and a culture developed in its own unique way embracing aspects of life that were unpredictable. Standing atop the Temple 135 feet above the courtyard, the view of Belize and Guatemala was spectacular, and in a moment in time I admired the architectural sophistication of the Maya and their diligence to detail, the Maya calendar based on a dating system, their immersion in astronomy, studying the development of the sun, moon, Venus, and stars, and best of all, chocolate, discovered and used extensively by the Maya. The immense fabric of the sky, a stunning palette of color and the grassy smell of the panorama, was a brilliant sensory Maya overload, as the turning of the seasons move onward, the wind beating out the passage of time.

Rio on Pool

Following the Maya tour a delightful picnic lunch was organized, and then we backtracked through the Pine Ridge region stopping for a cooling dip at the Rio on Pool, a fascinating area of smooth granite rocks and ledges forming pools of crystal-clear water, and small bubbling waterfalls cascading into connecting pools, appearing like a small oasis surrounded by towering trees and multi shades of greenery and bird life. The setting emerging to me like an artistic rendering that Disney’s Imagineers might have designed, and with a little imagination I could see the ancient Maya from Caracol, and the Maya of today submerged in the pools, enjoying an appealing relief from the radiating sun. We also stopped by the Rio Frio Cave, which I’m told has the largest entrance of any cave in Belize. The limestone caves and passageways of Belize must be fascinating, but I’m enthralled with the diversity of life above ground.

Butterfly Encounter

What’s not to love when a country takes great attention to the upkeep and support of butterflies. The five-star Green Hills Butterfly Ranch does exactly that with extensive conservation practices in place. After a ride on a slightly bumpy dirt road, where the drivers must have a PhD in the art of negotiating pot holes, we arrived at the Green Hills Butterfly Ranch in Belize’s western Cayo District at the edge of the Mountain Pine Ridge area and a broadleaf tropical rainforest. On this trip, the butterfly encounter was a Belize highlight with 30 native species of butterflies, and thousands of live butterflies on display in a large walk-in flight area, and with a space nicely designated for viewing and photography. Observing these fragile and colorfully elegant creatures it’s utterly astounding to realize that butterflies are known to fly thousands of miles from Europe to Africa. The butterfly encounter is bordered by a botanical garden and a rainforest with birdlife galore. A visit to the Butterflies of Belize is an experience the entire family would recall with a smile.

Back at the Hidden Valley Wilderness Lodge, with swirling memories of a wonderful day, the Lodge created an al fresco dinner with Maya specialties overlooking a sunset that lingered on the horizon flashing shades of diminishing colors across the landscape, while the trees whispered softly in the breeze.

Cooking Maya

Absorbing more of the Maya culture I took an authentic Maya al fresco cooking class working with a genuine fogón or grill with recipes passed down through generations such as tamales and vegetables in a chicken stock sprinkled with achiote seeds that add a peppery flavor, as well as a portion of rice and beans, and of course, a semi-sweet chocolate dish. However, with 40 species of plants found nowhere else, the Maya chefs of the past and today have a treasure trove of diversity in their dining selections with mango the national fruit and a selection of fresh cashews, coconuts, guava, papaya, bananas, and pineapples, to make use of.

San Pedro, Ambergris

My second accommodation booking was the Phoenix Resort on the island of Ambergris Caye off the coast of Belize. MayaWalk Tours shuttled me to the International Airport where I boarded Tropic Air’s small prop plane to Ambergris Caye, and a Rigo Patt taxi to the resort. From the forest to the sea, it was a sweeping change of atmosphere and environment, including the tone and mood, quality of light, and salty San Pedro town jammed with character and personality. San Pedro’s foremost street, Barrier Reef Drive, and adjoining streets host sea food restaurants galore, people sipping drinks festooned with petite umbrellas, boutique hotels, wall-towall shops displaying flamboyant beach apparel, and the island’s major means of transportation, golf carts and bicycles, buzzing past sunburned tourists and tanned San Pedranos, while a large dog is sleeping soundly in the shade of a two-story wood building, paws twitching, as the pungent scent of suntan lotion catches a breeze.

The Phoenix Resort at San Pedro

Kelly McDermott Kanabar, born and raised in Belize, and her husband, Mukul, opened the Phoenix in 2008, following in the footsteps of her parents who opened the island’s first hotel. They designed the property with two heated saltwater pools, a fitness center, an attractive Sol Spa offering Maya abdominal massages, a kid’s club, and remarkable dining at the Red Ginger restaurant, the menu offering fresh local seafood such as fresh ceviche, conch fritters, stone crab and lobster, a Caribbean lobster chowder, and locally grown produce with vegan options. I would need a week to fully enjoy this brilliant selection. The hotel is also the headquarters for everything sea, from snorkeling, wind surfing, scuba diving and fishing, to kayaking and Jungle River Tours.

I was aware of the island’s culinary reputation and joined a walking food tour led by Rose of Where’s the Food, (WTF) to experience the best and most authentic creations in San Pedro, stopping at rustic and popular El Fogan for a taste of Belizean food, cooked over firewood on an open stove; Briana’s Food Place for a dish of stewed chicken with rice and beans; and Big Taste, noted island wide for their tacos. Nearby at Lily’s Treasure Chest I enjoyed a bowl of fresh conch ceviche, and at friendly Saul’s Cigar & Coffee House, with outdoor seating, I sipped a bracing Rum flavored Cream drink.

Barrier Reef, Caye Caulker and Coral Gardens

The following day was an additional highlight. I climbed aboard a skiff at Ramon’s Pier under a cloudless sky and bright sun reflecting artistically off the dappled Caribbean, and along with others I headed to Hol Chan and the famed Barrier Reef where waves endlessly break over the reef rolling into a sandy headland. The Barrier Reef is the country’s number one tourist destination, where visitors arrive from throughout the world to experience a UNESCO World Heritage Site, home to over 400 species of fish and sea life. Stretching 190 miles, it’s the second largest barrier reef in the world, and one of the world’s largest marine reserves encompassing more than 450 island, three atolls, and a teaming sea life with color-tinted coral. The guides stated that it’s by far the best snorkeling the Caribbean has to offer, and famed Jacques Cousteau, a pioneer in marine Exploration and conservation, agrees. The underwater world of coral and swarms of sea life in crystal clear water was a lifetime memory. We hiked a short distance to Shark Ray Alley for a swim with nurse sharks, then back on the skiff for a short ride to Caye Caulker, a delightful village that resembles a movie set. The small, limestone coral island has a few thousand residents, hotels, restaurants and shops, and a large sign that states, “Go Slow, we have Two Cemeteries and No Hospitals.” Our lunch stop was at Kareem’s UnBelizeable Lunch Stand on the north end of the island. Chef Kareem serves, what else but Whole Snapper or Whole Lobster with salad, rice and coleslaw, a coconut curry, and with a big smile, other seafood delights. The final visit on the snorkeling tour was a visit to the majestic Coral Gardens in the Caye Caulker Marine Reserve, an aquatic wonderland with pulsating coral formations, and captivating schools of fish of all shapes and sizes moving as if they were performing rhythmic and exquisitely designed choreography. Coral Gardens, because of the shallow and protected water, is best for all levels of snorkelers and divers, and unequivocally a must for families.

Black and White Garifuna Restaurant and Bar

Back on Ambergris among the San Pedranos, that evening I enjoyed a Garifuna drumming and dancing show at the Black and White Garifuna Restaurant, an indoor, outdoor, Garifuna culture center and gift shop. The Garifuna’s originally from West and Central Africa, were survivors of human cargo ships that wrecked off the island of St. Vicent around 1675. Today with a mixed heritage and six communities of Garifuna people in Belize, they speak their own language, fly their own flag, have their own specific dance movements and music, and can fill a table with Garifuna cuisine. I selected a bowl of Hudut, a fish stew prepared with coconuts, plantains and vegetables, though the restaurant has a full menu of buffet-style Garifuna fare. The following morning, I bid Belize farewell. I fully enjoyed reporting on the richness, depth, authenticity and culture of the country.

I was aware of the U.S. State Department’s warning about safety in Belize. There are thousands of United States and Canadian expat’s living in Belize with many of them settled in Ambergris, but safety first when traveling, and thankfully for a woman traveling solo, this excursion was flawless.

The Inn at Rancho Santa Fe –

The community of Rancho Santa Fe, choice and elite, proudly stands alone like a select sanctuary, a destination where celebrities of today and yesteryear relished with enthusiasm and fervor. It seems to me like it’s always been the place to be for the so called “in crowd.” From 1937 to 1947, Bing Crosby hosted a golf tournament at the Rancho Santa Fe Country Club, matching celebrities against professionals, the event drawing a huge crowd and an enormous collection of Hollywood’s superstars, and today the community remains high-end with a sense of intimacy and style. Bill Gates, Jenny Craig, Julia Roberts, Shirley MacLaine, Tiger Woods, Arnold Schwarzenegger, Bill Murray, Howard Hughes, and a host of others have built homes and exclusive estates here and have also booked in at the Inn at Rancho Santa Fe

A California Planned Community

On this reporting trip I visited the Inn at Rancho Santa Fe with close friend and associate, Roger Hublitz, whom I’ve known for some 45 years. Roger lives in Palm Springs and is familiar with Rancho Santa Fe, which was immensely helpful. Rancho Santa Fe is an affluent suburb north of San Diego in San Diego County, where some 3,000 or so residents call home, but to me Rancho Santa Fe appears like a nicely designed village where pride and care are a top priority, and Roger agrees. A designated California planned community with exclusive estates, popular with retirees and families, it has a rural feel with lots of parks and a relaxing outdoor equestrian lifestyle, and for golfers it’s an unbelievable nirvana with 11 golf courses in the area including 11 private courses, and another 55 within 20 miles of the community.

Lilian J. Rice Architect Preeminent

In 1841 Rancho San Dieguito, as it was originally named, was a Mexican land grant of 8,824 acres from Governor Pio Pico of Alta California to Juan Maria Osuna, the first mayor of the Pueblo of San Diego. From this historic land grant, community leaders over the years have made some splendid Rancho Santa Fe decisions. In 1927 Bing Crosby, Douglas Fairbanks and Mary Pickford commissioned architect Lilian Rice to design buildings for the village. Rice, hugely talented, was one of the first women to earn a degree in architecture from the University of California, Berkeley, class of 1910. Her design genius was fully enhanced with travels to Spain, and then integrating her California Spanish Colonial Revival style of architecture into numerous Rancho Santa Fe designs. Beginning in 1922 and for years following she shared her talent in Rancho Santa Fe, designing the Civic Center, the Inn at Rancho Santa Fe, various buildings, and a vast number of homes. In 1928 Rancho Santa Fe was officially established as a country residence community with an emphasis on agriculture and preserving the rural landscapes, all of which can capture your heart as it did mine.

National Register of Historic Places

Today 11 of Rice’s buildings are listed on the National Register of Historic Places. I enjoyed Rice’s wonderful work during a stroll along a few shopping blocks, as well as the attractive Rancho Santa Fe Plaza, the architecture following Rice’s concepts with red tiled roofs, Spanish tiles, the plaza’s open tiled courtyard, which at first glance suggested the sensation of a Spanish village in the south of Spain. Rancho Santa Fe remains the oldest active planned community in California, and appropriately Lilian Rice became a permanent resident of Rancho Santa Fe until her death in 1938 at age 49. Rice’s incredible vision was acknowledged when the State of California in 1989 recognized Rancho Santa Fe by designating the community a State Historic Landmark, and in 2004, the historic landmark was modified to include the unique character and beauty of the landscape.

The Inn at Rancho Santa Fe

Appreciating the historic background of Rancho Santa Fe, and the brilliant and artistic architect, I was not surprised at the superb service and refinement of the 80-room Inn that offered all the lush qualities and demeanor of the area. Opened in 1923 and celebrating its 100th anniversary, the Inn is the essence of timeless elegance hosting distinguished personalities worldwide, and with an opulent history that most properties would love to have. We took a tour of the Inn past lush gardens, cozy courtyards, and taking great pleasure from Lilian Rice’s Spanish Colonial-style architecture. I might add, she also incorporated an enjoyable touch of rustic grace throughout the Inn. The smoke free property, which is exceptionally walkable, and dog friendly has tennis and pickleball courts, an outdoor pool lined with private cabanas, and an acclaimed spa. It was easy to see why the Inn is celebrated for its enticing wedding ceremonies and receptions suggesting three intimate and alluring outdoor spaces, including a flourishing and luxuriant rose garden, my favorite, however for large wedding parties the ballroom is the place, as well as for business meetings and gala dinners. Fully equipped meeting rooms are also available, and well-liked for the stress-free and tranquil setting.

The rooms and suites exude a sense of warmth and comfort, embellished with classic furnishings and contemporary amenities. We were booked in a bungalow with two queen beds, a bathroom designed with attractive Calacatta marble, a rain shower and clawfoot tub. I enjoyed relaxing by a blazing wood burning fireplace draped in a Frette robe, which enhanced an impeccable touch of intimacy to the cool California evenings.

Dinner at Lilian’s

Speaking with our server we discovered the fruits and vegetables are sustainably sourced locally from farmers, ranchers and fishermen, orchestrated by Executive Chef Moira Hill, a young, attractive red headed San Diego native, who has been cooking her entire life. She worked in some of San Diego’s finest restaurants and was an executive chef before the age of 30. She said, “I’m always researching new methods and techniques, and my cooking style involves traditional French and Italian cooking.” The menu offers revised medleys on traditional Coastal California cooking, and the selections I ordered tantalized my taste buds and delighted the senses. I savored every bite and sent my compliments to Chef Hill with five gold stars. My starter was a Caviar Hare with bits of onion, egg and herbs. Then a two-pound whole grilled lobster with crispy fries and grilled lemon. My drink was the Minty Mist, a refreshing and original drink created with cucumber, mint, lime and agave. Roger’s selection was the Rancho Cobb, a nicely arranged salad with farm egg, bacon, slices of tangy cheddar, and chef Hill’s Moody Blue dressing. We both savored the fluffy, chocolate cognac, butterscotch, and strawberry Brulee beignets, the latter my favorite.

The following day on a quiet Saturday with a few scattered clouds, we drove to Carlsbad, a coastal town overlooking the Pacific Ocean with stunning white sandy beaches and coves. We explored the city and popped in to the Naked Café located in Village Fare with restaurants and shops, for a nourishing lunch. Back at the Inn we lounged by the pool in private cabanas, and in the evening dined at the hustling and lively Bing’s Bar. Roger and I shared Brandt Beef Wagyu sliders and crispy frites served with Cajun Aioli. In a festive mood, and thinking of the singer and actor Bing Crosby, I ordered a craft cocktail called White Christmas, the movie with the same name was a smash as was Bing’s recording selling 50 million copies.

Mila Moursi Spa

Sunday, our last full day, I booked a 90-minute intensive and rejuvenating treatment at the Mila Moursi Spa. It was a bit different from other spas I’ve experienced using dry contouring and sculpting techniques in addition to advanced technology to lift and firm the skin. The treatment included additional remedial procedures in addition to effective serums to improve elasticity and realize flawless radiance. Moursi opened her first spa in 1981 on Sunset Boulevard in West Hollywood using French skincare treatments and was an immediate favorite with celebrities. Her second spa here at the Inn was honored by Conde Nast Traveler, as one of the best new spas in the world. Mila also offers Fitness Classes for guests and residents.

I bid an early farewell to Lilian Rice at a 1 p.m. brunch with a tasty Crab Benedict on an English muffin and a delightful side salad at Lilian’s. Departing the Inn I felt a deep appreciation for this special retreat that has gracefully stood the test of time. The Inn is not just a place to stay, it’s a journey through history, a celebration of elegance, and a sanctuary of tranquility. Here’s to 100 years of timeless beauty and many more to come.

As part of the centennial celebration, the Inn has organized a series of dedicated events and activities that honor its storied past and transporting guests back to the roaring twenties. Inn visitors can also stop by the historic 27-acre Osuna ranch and experience one of California’s oldest adobe homes dating to the 1830’s. The ranch with miles of walking trails has equestrian boarding for 50 horses, many of them show and jumpers. If location is everything, the Inn is only 15 minutes from the Del Mar Racetrack, and seven miles from Del Mar’s beaches, six miles from San Diego’s Botanic Gardens, and for the young crowd twelve miles from LEGOLAND.

Gastronomic Fiesta – Unico Riviera Maya 20°

The sun was beating a quick ceaseless tempo, while a wash of air ruffled the trees. A mist from the Mexican Caribbean was rising in luminous tendrils and the feeling was of another time as a large bird launched from the sea flying over a blazing white beach. I sat on a bench amidst this gorgeous setting writing in my notebook, “Leave the cell behind, embrace nature at its best, smell the earth’s tropical bouquet, and enjoy the scale of history and legend that permeates Mexico.”

On this editorial excursion I’m traveling with my friend Rachael, we landed at Cancun International Airport and were met by a private shuttle that drove us an hour south to Solidaridad Municipality, and the Unico Rivera Maya 20° 87° hotel, tucked between Playa del Carmen and Tulum, the famed Maya architectural site. (See Tulum, Fall Issue, 2024). The spectacular location of the hotel is the spirit and mood of the property and the specific reason they included the region’s latitude and longitude in the hotel name. The setting is of unsurpassed grandeur and steeped in eternal beauty. Spanish owned with 448 guest rooms, all-inclusive, adults only, three swimming pools, and landscaping that looks as if it was lifted from a private estate.

Mexico’s Epicurean Canvas

The hotel is noted for its culinary intensity and passion, where renowned chefs, artists and mixologists are invited to share their talent. With countless pleasure and appreciating that Mexican cuisine is among the best on the planet, varying dramatically from region to region, with Mexico City always a top ten dining destination, I booked the week of August 5-10 featuring chef Mauricio Leal, mixologist Pei Guti and artist Gibran Julian. Chef Leal noted among the finest Mexican chefs in North America, studied at the École Grégoire-Ferrandi Paris, cooked at the historic Parisian La Closerie des Lilas, where Hemingway spent mornings working on a novel and in the evenings where Cole Porter played piano. Chef Leal also worked at Café de Artistes in Puerto Vallarta, the Four Seasons Resort Punta Mita, and co-owns the lauded ICV in Puerto Vallarta.

A Culinary Poem

This year’s culinary adventure will feature flavors from Italy, Japan, and talent from the Nayarit and Jalisco regions, while Mexico’s eclectic food culture remains based in traditional Mexican staples such as pumpkin, tomatoes, sweet potatoes, limes, papayas, pineapple, chili pepper, squash, meat, a large variety of fish, and vegetables galore. Conversely, the Maya in Mexico originated four foods to share with the world: chocolate, avocados, corn tortillas, and tamales. Mole is the national dish of Mexico, and maize was the grain (corn) considered a gift from the gods. Raul was our personal concierge providing white glove service, reserving pool and beach lounges, answering loads of questions, and arranging dining, mixology, art and reservations. Our spacious and inviting room had a lovely ocean view, two queen beds, and a tub on the balcony. We also visited the Esencia Wellness Spa with a menu of signature, Maya-influenced, spa treatments, a full-service beauty salon, barber shop, and an excellent fitness complex. The hotel has four main restaurants for dinner and dining, and I must report that every sitting was spectacular. For me, fine dining is a combination of science and art, and the chefs here fully understand the challenging structure, and with a robust sense of place. Our first night we dined at Grill 20° 87°, a casual beachside venue, dress code was smart beach casual.

Gastronomic Fiesta – Unico Riviera Maya 20° 87°

I ordered crab cake with a lightly flavored garlic chipotle aioli sauce sprinkled with fried leek shavings, a small bowl of onion soup prepared with caramelized onions in a light beef and chicken consommé, served from the oven with gruyere cheese gratin and croutons from Chef Angel Jimenez’s menu. The grilled heart lettuce salad and cherry tomatoes were swathed in a light ranch dressing, accompanied by baguette croutons in extra virgin olive oil, garlic, and a segment of aged intense and zesty Manchego cheese. The filet mignon was perfectly prepared, and my beverage was a cucumber mocktail. Rachael’s selections were an Iberian ham and fig salad prepared with organic lettuce and spicy, sharp arugula, thin slices of Iberian ham, pine nuts, caramelized figs, and crowned with a reduced red wine fruit dressing. After the feast we walked to one of the various boutiques, the sky filled with radiant stars and fluttering night birds. Tuesday

It was a magical day, the beach, ocean and earth, dripping with richness. We spent most of the day mesmerized by the strong breath of the ocean, the ongoing birdlife skimming low on the water, a few lazy drifting clouds casting fleeting shadows, and thinking about the many secrets and wonders that lie below the surface. After a day at the beach Mi Carisa was our dinner choice, the hotels most elegant dining experience with an Italian kitchen and wood-burning oven. Our servers were Miquel and Erick.

Dining Italian

This was an evening in Rome with a touch of Mexico. First up was Lattuca e Parmigiano Reggiano, beautifully served with romaine lettuce and Italy’s most famous cheese, Parmigiano, an Italian spice blend, the crisp lemon and grassy flavored citronea, and toasted bread. Followed by Parmigiana Di Melanzane E Zucchine, a breaded eggplant and pumpkin covered with mozzarella cheese, olive oil, herb sauce and pomodoro, a succulent, fresh tomato. The Lasagne Bolognese was pasta sheets with beef ragu and hot melted cheese. Rachael had Insalata De Spinaci, a baby spinach salad with strawberries and aged goat cheese, Zuppa Di Pomodoro E Burrata, a steamy tomato soup created with basil oil, creamy burrata and croutons, and her last course, Tonno Con Cavolo Nero, a grilled tuna filet with bell pepper coulis and kale, sauteed with garlic and olive oil. Our Italian feast was a five-star beauty.

Wednesday

It was another gorgeous day at Unico 20° 87°, the sea was relaxed as was the environs with a soft offshore breeze. I checked out Cafe Inez for a quick breakfast, and after a long walk on the beach, lunch at the pool, and back to Italy. Grace was our server, and we shared a Margarita Pizza, designed with mozzarella, basil leaves, tomatoes, nicely seasoned with pesto, and Argentinian beef empanadas with Argentinian chimichurri sauce. Our second pizza was the classic Italian dessert, a small Nutella sprinkled with powdered sugar, and some ice pops and passion fruit.

Dining Japanese Hibachi

The Mura House Teppanyaki commonly known in the United States as Hibachi was made popular by the Benihana restaurant chain, which opened their first restaurant in New York City in 1964. The Mura House hibachi experience, not like some I’ve visited, was relaxed and subdued. We enjoyed an excellent Japanese pancake, steak cooked to order, and shrimp from Mazatlán, the shrimp capital of the world. Suka was our absolute favorite mocktail, infused with watermelon and lime juice, rosemary syrup and sparkling water.

A nice finish to the evening was guest artist Gibran Julian’s art exhibit. A visual artist and muralist originally from Guadalajara, he has shown throughout Mexico, Europe and the United States, conveying timeless characters and landscapes. In 2021 he was honored as a National Artist by Traza Jalisco. His work in progress is a collection of elevated temperature ceramics titled “White Cuscos” 2024.

Thursday

We began the day with an elaborate breakfast brunch buffet with an array of both Mexican and American specialties, and then back on the beach with Raul reserving beach lounges. On the horizon was a small fishing boat searching for the catch of the day, birds following close by, while on the beach with the ebb and flow of the tide, Sanderlings or Sandpipers are running in sync with the waves looking for tidbits in the wet sand yet with dry feathers. The Mixologist event was led by guest mixologist Pepe Guti. Guti is Tequila Patron’s Ambassador for Latin America and the Caribbean, a culinary and sommelier graduate, a national cocktail champion, and renowned speaker and instructor. When in Querétaro, drop by Guti’s Dodo Café and Cocktail bar. Also of note, Luis Felix Vallejo Martin is Unico’s head mixologist developing cocktail influenced by the Maya culture.

In all my travels the evening dinner was virtually a first with other brilliant dining choices existing, nevertheless returning to Mi Carisa and both reordering identical dishes from our first sitting such as the Lattuca E Parmigiano Reggiano and Tonno Con Cavolo Nero. New though was the Pollo Alla Parmigiana, a crispy breaded chicken topped with tomato sauce and cheese, served with a side of vegetables. Rachael’s selection was Risotto Di Carne, carefully braised ribs with risotto, caramelized onions, parmesan and a wispy gravy.

Friday

On our last full day sitting near the quiet pool area Eugenio served us fish tacos and pizza, however also looking forward to dinner with guest chef Mauricio Leal at Cueva 7, the Mexican restaurant where the guest chefs cook, and named after the legendary Maya seven caves. For our first course, Miquel served us Zucchini Toast created with white balsamic vinaigrette aged for ten years, parmigiano Reggiano, and artile de truta. My second course was Tuna Tiradito, prepared with leche de tigre or tiger’s milk which is a citrus-based marinade collected from the juices of a ceviche, and a sweet chili mulata sauce. The apple, radish, cucumber salad with a sprinkle of creole cilantro, was a seamless choice. For the third course, I selected a Beef Steak and Black Mole, Mole a classic national dish from Puebla, and prepared with carrots and roasted cactus. Rachael enjoyed the Catch of the Day, and we were wondering if it was from the fishing boat far on the horizon. It was served with corn puree, bitter leaves and Pipian, a mole sauce made with pureed greens and ground pumpkin seeds, originating from the ancient Aztec and Maya cuisines. Dessert was a Chocolate Tamale with English cream, mascarpone mousse and dehydrated chocolate mousse. After experiencing Leal’s cooking, I’m looking forward to visiting his ICV restaurant in Puerto Vallarta.

Around Town: The Rally Hotel

I have driven past The Rally Hotel numerous times and was overdue to finally report on the property. The Rally, in lower downtown Denver at McGregor Square, a cool Denver playground in the LoDo neighborhood, smartly overlooks Coors Field, which is the home of the Colorado Rockies baseball team. The location is absolutely unique for an upscale family-style hotel to be practically located on the Rockies’ home plate. I booked an overnight with my husband Tom and was overwhelmed with the versatility of The Rally, a midsized, independent, boutique-style hotel, opened March 2021 with 182 rooms which includes 29 suites, and is utterly unique to Denver if not the entire West.

Americana Thrives

After a few hours in the hotel, I recognize the property effectively offers a fun-filled visit for a wide range of visitors, ideal for families, romantic weddings, and a huge event space too. Americana abounds paying homage to the game of baseball, a major theme throughout, and even the name refers to an old baseball superstition in which fans wear hats backward as an appeal or rally for their team to pull off a come-from-behind victory. A café and bar is named the Grandstand and when shopping it’s the Colorado Rockies

Dugout Boutique

We popped into the Call Me Pearl restaurant and under a massive and glamorous chandelier made of 1,350 pearl-like glass orbs, we imbibed with some inspired liquid refreshments. Tom ordered the classic Escape to Paradise created with coconut washed negroni, beefeater gin, Campari, coconut, tangy orange bitters, and a touch of Carpino antica sweet vermouth with vanilla notes. I enjoyed one of the house martini’s, a Sauve & Peppery Vesper, the Vesper Martini was invented by author Ian Fleming for his iconic British secret agent, James Bond. I think Bond would like this one made with botanist gin, Colorado Vodka, Dolin dry vermouth, and a tincture of salt and pepper. We shared a Wagyu Slider, brushed with rich and earthy black garlic aioli, and a taste or two of Humboldt fog goat cheese that offered a clean citrus zest.

A Denver Sunset

Twilight was upon us, and we relished a magnificent lingering sunset on the rooftop skybridge pool with commanding views of Coors Field, the Front Range, and a timeless cityscape that was settling in for the evening. The sky was ablaze with pastel colors and a flaming red that slowly faded into that magical time between dusk and darkness. Before arriving to the rooftop, I knew that my favorite sushi restaurant, Uchi Denver, was offering the special “Uchi Sushi Box” with Uber Bites delivery. I ordered a box, picked it up at the front desk, and with the glorious sunset, we dined on nigiri-style sushi. In Japanese, the term nigiri means “Two Fingers” referring to the typical small bite portions or translated, “hand-pressed sushi”.

The box was brimming with delight. Served sashimi-style on an ovalshaped mound of rice sprinkled with seasoning and with a variety of fish and other small bites, which included avocado nigiri, Japanese sea bream, yellow tail, flounder, tuna, Atlantic salmon and salmon belly, nigiri. Another taste was the Chirashi, a clever mix of Greater amberjack, bluefin otoro tartare, and salmon eggs over seasoned sushi rice, and with bits of avocado, cucumber and shiso, nigiri.

A Mile High

Our room was comfortable, clean with enhanced cleaning measures, rainfall showerheads, leather headboards reminiscent of a baseball catcher’s mitt, large view windows, and for kids’ rooms, bunk beds and board games to keep them happy. We were on the 11th floor with views of the pool and city, but on the eighth floor the room is exactly 5,280 feet above sea level and is appropriately called The Mile High Room. Speaking of mile high, the following morning, or last day, we were back to the rooftop for the view, and then to the OG for an extraordinary brunch served by Jesse who had an incredible personality, was knowledgeable, articulate, and welcoming. We shared cinnamon Sugar Dusted Churro bites with crème anglaise and chocolate ganache, and hard-boiled Pimento Deviled Eggs with chips and chives. Following a sip or two, Tom said that it was the best Bloody Mary he had ever tasted, and possibly because of the Family Jones Vodka, pickled vegetables, and marinated Brussel sprouts balanced on the top of the drink. He also enjoyed a Brioche French Crème De La Crème Toast with a light maple syrup.
