DDWhen did you first develop a passion for photography?
I believe it started when I was about 15 years old, though it’s hard to pinpoint the exact moment. My first experience in a darkroom was around that age, but I didn’t pursue photography right away. Instead, I ventured into finance, working on Wall Street while dabbling in sports photography on the side. Ironically, one of those early sports photos became one of the most iconic images in the genre.
DDHow and when did you learn photography?
Photography has been an ongoing journey for me. I’m constantly learning and improving, often through trial and error. I’ve never had formal training, but each experience, success or failure, has been a valuable lesson.
DDWhat has been your favorite location to photograph and why?
That’s a tough question because my experiences blend both my business and artistic sides. Commercially successful locations like Silverton, Colorado, are rewarding, but they don’t necessarily hold personal significance for me. I find joy in places like Montana, where I have a strong connection with the local community and an exceptional crew. Montana stands out because of the relationships and the rich photographic opportunities it offers. I also love photographing in Norway, but Montana holds a special place in my heart. Colorado has been incredibly successful too, as evidenced by our sales there, which reached around $12 million last year. It’s a region that resonates deeply, even inspiring collaborations like a recent project with Robert Redford.
D
How do you approach capturing emotion and storytelling in your work?
DFor me, photography is all about storytelling. Every image should evoke an emotional response or tell a compelling story. I focus on creating a narrative within the frame—whether it’s the intense gaze of a lion or the vast, empty expanse of the Arctic. The goal is to draw the viewer in, make them feel part of that moment, and provoke thought or emotion.
DCan you share a particularly memorable shoot or moment from your career?
DOne of the most memorable moments was photographing a herd of buffalo in Montana. As they charged towards me through the snow, the sheer power and majesty of the scene were overwhelming. It was exhilarating and a bit terrifying, but the resulting image became one of my most iconic pieces. Moments like that remind me why I do what I do.
DWhat inspired the creation of your storytelling collection?
DThe storytelling collection was born out of my desire to go beyond traditional wildlife photography. I wanted to craft narratives that combine cinematic elements with the raw beauty of nature. It’s about creating scenes that tell a story, evoke emotion, and captivate the viewer. Every image in the collection is designed to transport people into a different world, sparking their imagination and encouraging them to ponder the stories behind each frame.
DHow do you choose the themes and subjects for your storytelling collection?
DThemes and subjects are chosen based on their ability to convey powerful narratives and emotions. I draw inspiration from a variety of sources—history, mythology, literature, and even personal experiences. The goal is to select subjects that resonate
universally, allowing viewers to connect with the imagery on a deeper level. Each piece is carefully crafted to ensure it tells a compelling and cohesive story.
DDWhat is the process of creating a storytelling image?
Creating a storytelling image is a meticulous process that begins with a clear vision. It involves extensive planning, including location scouting, casting, and setting up the scene. The shoot itself requires precise timing and coordination to capture the intended narrative. Post-production is also crucial, as it helps refine the image and bring the story to life. Every element, from lighting to composition, is carefully considered to ensure the final piece effectively communicates the story.
DDHow do you incorporate wildlife into your storytelling images?
Wildlife plays a central role in many of my storytelling images, adding an element of authenticity and raw emotion. By blending wildlife with cinematic storytelling, I can create scenes that feel both real and fantastical. The key is to respect the animals and their natural behaviors, ensuring that they are portrayed in a way that is both ethical and impactful. The presence of wildlife often enhances the narrative, providing a connection to the natural world and its timeless stories.
DDHow has the storytelling collection evolved over time?
The collection has evolved significantly as I’ve experimented with new themes, techniques, and collaborations. Initially focused on wildlife, it has expanded to include more complex narratives, involving human subjects and cinematic settings. This evolution reflects my growth as an artist and storyteller, continually pushing boundaries and exploring new ways to captivate and engage the audience.
D
D
What advice would you give to aspiring photographers?
Follow your passion relentlessly and don’t be afraid to take risks. Photography is about more than just technical skills; it’s about having a unique perspective and the courage to tell your story. Embrace mistakes as learning opportunities, and never stop exploring and pushing your boundaries.
DDHow has your work contributed to conservation efforts?
My photography aims to raise awareness and funds for conservation. Through partnerships with organizations like the African Community & Conservation Foundation and Tusk Trust, I’ve been able to support critical conservation projects. It’s incredibly rewarding to know that my work not only captures the beauty of the natural world but also helps protect it for future generations.

FASHION
Jean Paul Gaultier has been honored with a basket full of awards including GQ’s “Man of the Year”, “Best International Designer” including a “Lifetime contribution to men’s fashion and the fight against aids”. His partner died of aids in 1990 and Gaultier, now retired, was also cherished during his career as a generous philanthropist donating to various charities.
“Jean Paul Gautier – Fashion Designer Paramount”
Richard Carroll
Jean Paul Gautier is unique in the fascinating world of fashion, a stand-alone one-of-a-kind fashion designer exceptionally distinctive and phenomenally successful, and who shrewdly disregarded the prevailing decorum of fashion. Incredibly, Gautier never attended a fashion school where prospective fashion designers spend years perusing drawing and composition, scrutinizing design, and the use and intricate character of fabrics. In place of fashion school, Gautier as a young boy browsed through fashion magazines, enjoyed fashion on television, and became fervidly captivated with the world of fashion, together with support from an art-minded maternal grandmother. Born in 1952 in Arcueil, a Paris suburb, 3.3 miles from the center of Paris, his father was a bookkeeper, his mother a cashier, and both with the challenging task of raising an artistic son with talent waiting to be discovered.
Gautier, with absolute inborn skills, is not unlike other remarkably gifted children such as a young boy in Asia with negligible musical training who sits down at the piano and flawlessly plays a difficult Chopin arrangement, or a 10-year-old girl with violin in hand who sight-reads a challenging Mozart composition. By age 13 Gautier had created a splendid collection for his mother and grandmother, and during his teenage years Gautier designed two collections a year as a personal project, again working from fashion magazines. In 1970 he sent off a handful of his sketches to Paris fashion designers and on his eighteenth birthday Pierre Cardin recognized an up and coming shining light and hired him as a studio assistant with zero credentials, no documented training or fashion school diploma, however not a problem for Cardin and his staff. Firmly in place was the first steps of an incredible career, thanks to Pierre Cardin.
While still a teenager sharing his talent with Cardin in the very heart of the Paris fashion world, Gautier was also enticed to collaborate with designers Jacques Esterel and Jean Paton. Only 22 years old, Cardin sent him to Manila in 1974 to head the Pierre Cardin local headquarters, and he also assigned Gautier the task of designing a collection for the North American market, and gratifying one of his clients who was fashion devotee Imelda Marcos, the First lady of the Philippines. Fortunately, Gautier was not detoured by her elaborate and lavish wardrobe which encompassed 3,000 pairs of shoes, 500 gowns, and more than 800 handbags. Manila, not one of Gautier’s favorite destinations, he was unfortunately listed on the regretful “no leave” list and to circumvent the list he cleverly told the authorities he had a family crisis in Paris. Thrilled to return to Paris he never again set foot in Manila.
Gautier in 1976 presented his first runway show and pret-a-porter label along with his life-long partner, Francis Menuge at the Palais de la decouverte planetarium, a large Parisian science museum to mixed reviews. A free thinker, and searching for fashion styles that were ignored he said, “I want to show the world in all its diversity.” Gautier skillfully combined the different genres, cultures and materials, blended street styles, celebrated androgyny or gender neutrality, and unconventional designs with motifs that included corsets and marineras such as the striped sweater with horizonal blue and white strips reminiscent of the French naval uniform. On various exhibitions he stunned the fashion industry mixing customary gender roles employing tattooed models, older men, and models with “granny grey” and silver-haired hair color.
Enfant terrible
Jean Paul Gaultier was dubbed by the French media Enfant terrible, meaning in this circumstance, a fashion designer with unconventional ideas, sometimes shocking, embarrassing or annoying, but his irreverent style was noted by fashion editors of Elle magazine and French Marie Claire, who were fascinated by his creativity and mastery of tailoring. A Japanese company was also impressed and in 1978 asked Gaultier to design their pret-a-porter for women. His Enfant terrible tag was further emphasized when his corset-style dresses were shown with the corset not beneath the clothes but are the clothes, and a line of skirts for men’s that caused an uproar though they were actually kilts, and a cone bra. Regardless, the first Jean Paul Gaultier boutique opened in Paris’ Galerie Vivienne, and later Gaultier presented his first Junior Gaultier collection featuring reasonable prices for the general public, and among numerous awards his Junior collection was selected as the “Dress of the year.” By 1985 Gaultier company made 50 million in sales worldwide and substantially increasing in popularity yearly.
Celebrity Finesse
His fashion style a smash for performers, actors and entertainers, Gaultier designed costumes for accordionist Yvette Horner’s show at the Casino de Paris, and many of tours including the stage dress for her Blond Ambition World Tour, and the Drowned World, Confessions, and MDNA tours. Gaultier’s fashion was also seen in a vast number of films including The Thief, His Wife and Her Lover, The Fifth Element, and three Pedro Almodovar films, among a host of others. His talent in full orbit he hosted the MTV Europe Music Awards in Paris, created popular fragrances for both men and women, a Junior Gaultier collection for children, and designed his first haute couture collection. Enfant terrible aside, he was the women’s wear designer for the elegant Paris based Hermes from 2004 to 2011, in addition to his own brand. (see Hermes in the Fall, 2019 issue).

Belizean Fry Jacks
“A popular Belizean recipe, fry jacks are usually eaten for breakfast with refried beans, sausage, bacon and eggs. For those of you with a sweet tooth, some Belizeans also enjoy drizzling honey or guava jam on the top.”
Ingredients:
2 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon vegetable shortening
1 cup water vegetable oil (for frying)
Directions:
1. Sift flour, baking powder and salt in a bowl.
2. Cut shortening into flour.
3. Add water, a little at a time, to make a soft, but not sticky dough.
4. Divide dough into two rounds.
5. Let rest for 15 to 20 minutes.
6. Lightly flour counter top or cutting board.
7. Roll dough out to about 10 to 12 inches round.
8. Cut lengthwise into 2 to 3 inch strips and then crosswise to desired size.
9. Heat oil and fry on each side until golden brown. Serve hot with honey, jam, sugar or refried beans and cheese and fully enjoy.
BELIZE RECIPE TIPS:
Frying in very hot oil will ensure that fry jacks “puff” when cooking. If you prefer your fry jacks not to puff you should place slits in the dough slices before placing in hot oil.

The Villas at Cocoplum in Placencia, Belize
Trisha Ventker
Traveling the world for Denver Colorado Luxury Magazine, I’ve often wondered how it would be to own a home or condominium in another country, the details involved, banking specifics, maintenance and upkeep, security, and so much more.
From a previous visit to Belize (see issue Spring 2024), I was aware of the upscale The Villas at Cocoplum in Placencia, located in a country I adore. My husband, Tom, who has a splendid eye for detail and specifics, and I decided to cover editorially The Villas at Cocoplum and experience another region of the country. Though Belize is on a small scale, about the size of the state of Massachusetts, tucked away on the Caribbean Coast of northern Central America, sharing a border with Mexico and Guatemala, the country is filled with history and adventure. Known as British Honduras until June 1973, when the name was changed, and became the last British colony on the Americas’ mainland with English the official language. However, Belize has retained its historical link with Great Britain through membership in the Commonwealth, and is the only English-speaking country in Central America.
Belize Appreciated
My first visit was an eye-opener. I fell in love with Belize, the dazzling splendor of the landscape, the ever-changing Caribbean Sea, the laid-back demeanor of the Belizean’s, the bare-foot lifestyle of a sun-tanned beachcomber without a worry in the world, and admirable dining opportunities. I further researched the country and The Villas at Cocoplum’s locale before we headed south to Belize via a United Airlines 4-hour non-stop flight from Denver to Belize City. We transferred to a 10-seat Tropic Island Air Cessna turboprop with a pilot who looked as if he knew how to fly before he could walk. He flew us on a scenic flight to Placencia, a quaint small village/town tourism destination on the southern tip of the 16-mile-long Placencia Peninsula, lined with towering palm trees and sandy beaches. A six-mile drive took us to the gated Naia Resort & Residences community where The Villas at Cocoplum is located with a separate check-in booth, and were dazzled by Denver-based developer Boris Mannsfeld and his vision of luxury.
The Villas at Cocoplum
First impressions; We were astounded by Mannsfeld’s condominium location, and the incessant panoramic views. We were booked in a beautiful 3 bedroom beachfront condo that had an incredible view. Our condo was modern and fully equipped with cable and high-speed fiber optic internet. Our unit included a washer and dryer, housewares, beach towels, high-end appliances, flat-screen TVs, and locally inspired artwork. The expansive deck spanned the entire beachfront side of our condo, with doors that open wide to create a seamless indoor-outdoor living experience. An elevator provided easy access to the 3rd floor. The 3-bedroom unit was thoughtfully designed with a lock-out option, allowing for separate 1-bedroom and 2-bedroom rental configurations to maximize rental income potential.
The Villas at Cocoplum in Placencia, Belize
The Villas at Cocoplum
-continued
We also toured the 4 bedroom penthouse in the same building, and I have to tell you, I would love to reside in this penthouse! The stunning fully furnished penthouse boasted an exquisite contemporary design with natural wood, highlighted by large glass windows that also showcases stunning views of the Caribbean Sea. The opulent residences with lush tropical gardens, are bordered on one side by the turquoise waters of the Caribbean, and a placid lagoon on the other, with the majestic Maya Mountains and verdant jungles, painting a breathtaking backdrop, creating an exquisite blend of elegance and tranquility
During a walk around, I noticed an infinity pool that seemed to melt into the horizon and a picturesque pier on a private mile-long beach where guests or residents can test their skills at kayaking and paddleboarding or marvel at dolphins and manatees gliding by. The Villas at Cocoplum provides an exceptional Caribbean home, combining unmatched value, prime location, superior quality, and top-tier amenities. In my opinion, few other Caribbean condominiums offer this level of design and value in one package. With residences already completed, new owners are enjoying the stunning infinity pool, a mile of beautiful beach and a high degree of privacy.
Buying international real estate in Belize is much easier than you probably think! As a member of the British Commonwealth, Belize offers secure, clear title ownership for property purchases. Real estate transactions are conducted in U.S. Dollars and with English as the official language, all contracts and negotiations are straightforward. The Villas at Cocoplum has multiple completed condo units (all of which are sold and occupied), along with a finished pool, pier and full infrastructure. Property and resort management are also fully operational, ensuring a seamless experience. Your Belize property investment is safeguarded with secure title ownership.
After settling in, Mannsfeld joined us for a delightful table of appetizers at the Maya Beach Bistro, appreciating that cuisine embodies the country’s vibrant culture and gastronomic diversity, while savoring Seasonal Ceviche, Shrimp French Toast, and Chorizo in a Chardonnay broth with grilled ciabatta bread. An indulgent Whole Roasted Garlic with sweet tomato chutney, French goat cheese, and crostini, and a side of classic French Conch Fritters was enchanting. Dessert, a yummy peanut butter pie peanut brittle ice cream pie was a first for my taste buds.
Nearby Pleasures
As I mentioned before, The Villas at Cocoplum is the exclusive condominium resort inside the Naia Resort & Residences 224-acre gated beachfront community known for its exclusive lifestyle and luxurious offering, which entails the award-winning Naia Resort & Spa, which was graced with “Hotel of the Year” in 2023 and offered a spa, fitness and yoga center, and two exquisite restaurants.
A short walk south of The Villas at Cocoplum is the award-winning Sirenian Bay Resort, which was graced with “The Best Hotel in Belize, 2021”, and where guests of The Villas at Cocoplum can enjoy exclusive discounts at Inky’s 18-hole mini-golf course, the 19th Hole Bar & Grill, and a range of leisure activities, including pickleball, tennis, and a splendid fitness center and spa.
Enjoying wonderful neighbors, the popular The Villas at Cocoplum have completed five sold-out condominium buildings for a total of 27 residences and are set to expand to a total of 100 units in a total of 19 buildings in the future. The onsite hassle-free rental and property management program has been operating for 10+ years. Two more buildings just broke ground right on the majestic Caribbean beach with half already presold. Guests I spoke with start their day with a leisurely walk to Naia for breakfast and immerse themselves in the vibrant, upscale atmosphere that defines Caribbean living.
Later, we ventured into the enticing village/town of Placencia, a vibrant hub of culture and commerce, lined with boutiques, art galleries, where local artists display their talents, and dining opportunities. Placencia in English translating to “Point Pleasant”, appears like a setting for a Hollywood movie with its palm trees bending seaward, a shoreline of sand, the Caribbean Sea sparkling like a diamond, and a waterfront that has recalled its bygone charisma. The main street is just a sidewalk, with the Guinness Book of World Records recognizing it as the narrowest main street in the world. There is also a main paved road which provides car access. We stopped at a small grocery store to stock up on essentials, and for lunch it was the famed filmmaker, Francis Ford Coppola’s, beachfront, 24-room Turtle Inn. Francis and Eleanor Coppola acquired the Balinese-style hideaway in 2001, and often enjoy Belize and the Turtle Inn. With an organic vegetable garden, the kitchen serves an array of fresh grilled seafood, curry chicken, and wood-fired pizza. Later that evening we had a delightful dining experience at The Blue Lagoon located at a beautiful marina set against the backdrop of the region’s natural beauty. At first my memory took me to the 1980 movie named the same starring Brooke Shields and Christopher Atkins, but then I soon came to present time as we sat at the bar and I checked out the surroundings. The restaurant was decked out (pun intended) with a kitchy chic design. The art was created by Sherry Flack. Well known for its fresh seafood and Caribbean-inspired cuisine, diners can savor the flavors of Belize. I enjoyed the the Next Level Fried Sticky Chicken while Tom indulged in the Grilled Snapper.I found out only while sitting there that Boris owns this gem with his partner Jason.
Belize’s Coral Reef
Belize is a paradise for those who love the magic of the sea. We hopped on a boat and cruised the islands, slicing through the deep blue, crystal-clear waters, seabirds following the wake, and skimming above the surface with aeronautic skill. The coast is lined with an astounding coral reef and some 450 islets and islands. The 190-mile-long Belize Coral Reef, a section of the largest in the Western Hemisphere and second in the world after Australia’s Great Barrier Reef, is home to an incredible web of sea life, attracting visitors world-wide. The juxtaposition of the sea, a white bleached beach, and wandering clouds was striking.
A Journey of Flavors, Wildlife, Cocoa and Jaguars
When we planned our trip to Placencia, Belize and The Villas at Cocoplum, we were eager for a trip packed with involvements that would excite the taste buds, expand our knowledge of the country, and connect us to nature. So one day we decided to embark on a tour of the nearby rainforest and a Maya chocolate making facility. Led by Narciso, a knowledgeable and enthusiastic farmer, we were transported into the ancient origins of chocolate, and “ The Sweet World of Cocoa at Che.
The Villas at Cocoplum in Placencia, Belize
Maya Chocolate, which translates to “Wild Maya” a family-operated cocoa farm and chocolate factory. Walking among cacao trees, we learned they yield multiple harvests each year, about every two weeks, with chocolate tracing back to the tropical forests of Central America, when the Maya began crafting bitter hot chocolate as early as 1800 BC, and believing it was divine, a gift from the heavens, reserved for the elite who often consumed up to 15 cups a day. Narciso shared fascinating organic cacao insights such as its high antioxidants and its ability to regulate mood, rejuvenate energy, and at one time the cacao seeds were so valued they even served as currency.
Creating Chocolate
We watched the meticulous process of chocolate-making, the fermentation of the cacao beans in wooden boxes for six days, sun-dried for several days to enhance their flavor, and then carefully roasted over an open fire for an hour. In the fourth step, after crushing the beans, the shells are blown away, leaving nibs ready for grinding on a ka’ stone, a 150-year-old volcanic grinding tool. A true delight was tasting the final product, which was a 60 percent, rich cacao chocolate. The earthy, slightly bitter flavor offered a connection to the ancient Maya tradition.
Exploring the Famed Cockscomb Basin Wildlife Sanctuary
With the taste of chocolate brewing, we entered the astounding Cockscomb Wildlife Sanctuary, recognized by National Geographic Magazine, and managed by the Audubon Society, as the world’s first jaguar preserve. The vast and gorgeous 136 square-mile Sanctuary, designated in 1984 to protect the forests, fauna, and watersheds of the eastern slope of the Maya Mountains, is home to more than 350 species of birds, and various other wildlife. Even though we didn’t spot a Jaguar, the vibrant birdlife, lush greenery, serene trails, and tranquil rainforest, created a magical experience.
Back in downtown Placencia, we were urged to visit La Dolce Vita, a charismatic Italian restaurant, and a staple of the community for more than 20 years. Owned by Simone, a chef from Rome, the cuisine is classic Italian, such as my Pollo Alta Parmigiana, Chicken Parmigiana with penne pasta. On our final morning, we checked out another wonderful suggestion for a Belizean breakfast at Wendy’s Creole Restaurant. We ordered a beloved Belizean dish, which is an omelet with fry jacks, a fluffy, fried bread that sets nicely with refried beans, eggs, sausage and bacon.
When You Go
Belize offers a glimpse into the country’s rich history, vibrant ecosystem, untamed beauty, and warm hospitality. We departed for Denver with a heart full of memories and a palate that craves more. Maybe some day we’ll contact Boris Mannsfeld, the “EXPERT” about Belize to purchase one of his outstanding residences at The Villas at Cocoplum

ABoris Mannsfeld
BDTell us about yourself . Where are you originally from? Family ?
I was born in Koeln Germany, moved to Alabama when I was 5. Grew up in Mobile, Alabama under a German household. I had lots of freedom and super smart and encouraging parents. I have an International economic degree from UCLA and an MBA with a specialization on economic development from the University of Denver. I have 3 kids in high school. Colorado and Belize are my homes. I’ve been an entrepreneuer all my life. I have been in the real estate business since earning my MBA. I work hard. Play hard. Enjoy the ride. Be a good person, but stay strong.
BDWhat made you choose Placencia, Belize to build?
I arrived in Belize on a whim in 1992. Fell in love with Placenica. Great vibe here so I figured if I felt “it” then others would too. I noticed it was a good place to invest in tourism and real estate. The location with mountains
and ocean, the super friendly people, the investment opportunities, safety, stunning scenery and English language create a perfect destination to call home.
BDHow has this area changed over the years?
People always ask this. Yes…the Placencia peninsula has changed. Now we have more people, more nice hotels, more amazing restaurants, pizza every night of the week, beautiful multi-million dollar homes, pickleball, art galleries, a hospital, 2 private schools and much much more. But, fortunately, what has NOT changed is that we still have the same old low key relaxing small community vibe and NOT a huge over crowded all concrete mega development. The small town charm remains where everyone gets along.
BDHow can you describe the special feeling you get when you are on this peninsula?
A big benefit of Placencia is that we are not an island. Here we have the special feeling of “this feels like a place that one can call home and be totally content”. Everybody gets along and works together to better the 16-mile long community. No feeling to look over ones shoulder since everyone gets along. We have the islands, beaches, warm waters, the jungle, Maya ruins and other adventurous activities. It’s all about: Tranquility. Rejuvenation. Peace.
BDWhy invest in Placencia?
Why? The booming international real estate and tourism destination. for one. I invested too early since I had to WAIT for markets to eventually pick up. Now markets are super active but pricing is still low, opportunities still exist and you have not yet missed the boat. There’s a limited and well defined real estate supply. Since it’s only a 16 mile long peninsula and limited height options, demand will continue to increase for real estate then supply can not keep up. Then the prices will have to increase. So right now, great money making opportunities in Belize. And it’s a great place to live! Invest where you love to live!
BDTell us about your goals for the next 5 years:
My goal is to complete The Villas at Cocoplum community with the resort building, all the condos, the island ocean research and education center and much more. My goal is to create a true world-class destination Caribbean resort with service and amenities to distinguish us as “THE” place to be in the world.
BDPlease explain your role and goal on/for Little Water Caye:
50% is under conservation easement and managed by an environmental NGO. The rangers are based there who patrol our protected waters. We own
the other 50%. We will created a small lowprofile environment oceanic researched and educational center. We will provide a space for research and operations for local conservation agencies and also over night experiences and educational opportunities for our guests. The regrowth of Coral, planting of seaweed and removal of plastics from our waters would be some of our goals.

Belize Real Estate - was foamed in 2011 - 14 years ago. We opened due to a lack of professional real estate services at the time so we saw an opportunity. We have a team of 10 and work as one team to service all clients so there’s no individual agents fighting over leads. Our clients have the service and expertise of 10 verses Another important differentiating factor is that I walk the walk in that I too buy, sell, own and operate all the “items” that I am selling. I too reside in the USA (Denver) and am in the same shoes as my clients when they first buy a property abroad. And with 32 years of visiting and investing under my belt here, I know the contacts, I know the market and I know the deals.
...a hideaway, The Villas
AT COCOPLUM
Placencia, Belize, is the definition of community. As a luxurious gated Caribbean beachfront development, ex-pats and locals alike find an unreplaceable sense of privacy, security, and home on the peninsula. The Placencia Peninsula is approximately 16 miles long and separates the Caribbean Sea from the Placencia Lagoon. The Villas at Cocoplum are perfectly situated to enjoy both.
Purchasing Belize beachfront real estate has never been easier... or SMARTER.
SLS Playa Mujeres
Trisha Ventker
Cancun’s white sand beaches were blazing under the sun, stretching an incredible 14 miles, while offshore the Caribbean Sea’s clear turquoise water is home to the second largest Barrier Reef in the world. Located off the northeastern tip of the Yucatan Peninsula, Cancun is often recognized as the Honeymoon Capital of North America, and with a vibrant nightlife. However, Cancun is an extremely young city evolving from the sand in 1974 when I was seven years old, and living in Long Island, New York. Cancun first took it’s baby steps, removing suntanned, barefoot, Canadian backpackers who were camping on the beach with their dogs and fishing poles, and also residing in wobbly little tree houses with a rickety ladder, and loudly complaining, “Mexico is ruining our secret paradise! Please don’t lay a hand on this gorgeous landscape, just leave us alone!” Today, they can reminisce and remember Cancun in the old days.
The SLS Playa Mujeres Hotel
I booked a stay at the SLS Play Mujeres. The luxury hotel opened on November 10, 2024, marking the first all-inclusive SLS property. I’m reviewing only a month after its opening, which brings to mind some questions: Will everything be up to par? Is the staff experienced enough? And, of course, dining is always a key piece of the puzzle, especially in a new hotel or restaurant. SLS Playa Mujeres is a mid-sized hotel. My room, 1406, was a lovely Oceanfront King. From the balcony, the feeling of island life was pervasive, with views of the sparkling sea under a bright sun. A balcony is always distinguishing, as I’ve found that sometimes the best views and photo opportunities are right there. The room was tastefully decorated with warm, welcoming colors and featured a luxurious bathroom with a panoramic view. I was eager to tour the property and found the setting, with its lush landscaping, absolutely glorious. The hotel overlooks an inviting beach with a private marina, a large spa, and eye-catching restaurants that I was looking forward to experiencing. I noticed suntanned guests with snorkeling gear, others walking on the beach, large hats flopping in the breeze, all with smiles on their faces as the sun moved slowly toward the end of the day.
Dining at Fi’lia
My first choice for dinner was Fi’lia, an Italian-focused restaurant with a Mexican twist. The Insalata Di Burrata/Pasta A La Carbonara was a delightful Neapolitan-style burrata filled with Genovese pesto, fried pickled squash, and enveloped in a tangy mint dressing. The Pasta Cacio E Pepe was made with Mezzi Rigatoni, freshly cracked and toasted black pepper, and a sweet Pecorino Romano cheese fondue. I couldn’t resist the Milanese Alla Parmigiana, a lightly breaded organic chicken breast served with a rustic potato purée, tomato sauce, and pungent melted mozzarella. I crowned the meal with Limón Limoncello, a juicy lemon infused with limoncello, sitting on an almond and vanilla crunch, with a sprinkle of mint sauce. The wine for the evening was the exquisite and layered house Merlot. Overall, the dinner was a perfect introduction to SLS’ culinary reputation.
Spa Time
The early morning sun was a splendid wake-up call, and the Caribbean Sea was in all its splendor as I walked to the spa, listening to the whispering waves. SLS, which stands for “ Style, Luxury, and Service,” has also integrated health and fitness into the resort with a huge fitness room, a sand volleyball court, and the spacious, full-service Ceil Spa, featuring bubbling thermal baths, an outdoor tranquility pool, and 20 treatment rooms. I spent time in the thermal bath and enjoyed a full-body massage while chatting with other ladies, some of whom were repeat visitors. The conclusion: the spa is a winner. Following the spa, I had a quick lunch at Twiggy, a casual poolside restaurant, and enjoyed another stroll around the property. Kudos to the landscape designers! The placement of trees, pathways, fountains, and greenery all radiate a sense of pleasure and well-being.
Tequila/Mezcal Tasting at Caocal
An informative tequila and mezcal tasting were arranged with Sommelier Juan Flores at the restaurant Caocal, designed with vibrant Mexican décor. Over the past few years covering Mexico, I’ve learned that tequila is the national drink of Mexico, originating in the town of Tequila, circa 1530. Tequila, a designated World Heritage Site in Jalisco, is where the first large-scale distillery was created in 1600. Flores explained that top-shelf tequila is made from the blue agave plant native to the Tequila area, while mezcal, a variety of tequila, is made only in Mexico and dates to 400 B.C. It is traditionally cooked in earthen pots and prepared in a mill operated by a horse or donkey. I was surprised to learn that the “worm” often found in mezcal bottles is actually the larva of a moth found on the agave plant, and it was thought to bring luck and strength. Flores also suggested that when drinking tequila, forget the salt on the rim of the glass and chugging it down. Tequila, like wine, should be sipped, not gulped. I tasted an 1800 Cristalino Anejo, aged three years from handpicked agave, with notes of oak, vanilla, and melon. I also sampled Ojo de Tigre Mezcal, made from two agaves and distilled using ancestral methods, as well as a Bosscal Mezcal, aged in oak, which was crisp and smooth with layers of citrus, orange, pepper, and a balance of sweet and tart. After the tasting, I enjoyed a refreshing Watermelon Splash made with Grey Goose Essences, watermelon basil, Aperol, and fresh watermelon mint. I also loved the fresh guacamole with vegetable root chips and the perfectly prepared Spicy Tuna with cucumber, tobiko egg, chives, and lemon mayonnaise that enhanced the dish’s flavors. I ended the meal with a slice of Lime Meringue Pie and a recipe that I wished I could take home!
Cancun Mornings
The start of a Cancun day is spectacular, absorbing the rhythms of the day as they mingle with the sea and the freshness of the morning. Guests are up and about, walking the beach, while the sea in all its glory welcomes another day. Breakfast at The Press, a casual snack and coffee shop bar, offers guests bracing drinks and delicious bites from early morning until sunset. I continued exploring the property, watching boats chugging by on the horizon and chatting with guests from around the world. I stopped by the Bungalow for lunch, a poolside retreat designed for kids to soak up endless fun in a serene setting with mocktails and kid-friendly snacks. However, there are also intriguing and savory options for the adults, such as beef, chicken, and vegetable Jamaican-style pastries with curry, and two sandwiches: a Smash Burger layered with cheddar cheese, onion, pickles, and sauces in a brioche bun, and a Pulled Pork Sandwich with Cajun-spiced pulled pork, coleslaw, corn peppers, and maple syrup on a brioche slider bun. The splendid selection at the Bungalow was comfort food for me. The House Fajitas, made with bell peppers, onions, spices, and guacamole, with options of beef, chicken, or pork, were delightful, as was the Colosal Mexican Pepper Soc, created with guacamole, lettuce, cheddar cheese, and a side of Monterey cheese French fries. The best for me in this setting was the Caribbean Catch of the Day—a Red Snapper prepared with plantain, coconut rice, black beans, and mango sauce with coconut. Five stars to the chef!
Sunset Cruise to Isla Mujeres via Cancun Adventures
This little corner of Mexico, just a boat ride away from the hustle and bustle of life, is a laid-back destination where the Caribbean Sea rules and another world awaits. On the historic Isla Mujeres (Island of Women), seagulls glide gracefully in the wind, and beneath the gentle waves, a treasure of marine life emerges. Long a favorite of marine biologists, including the eminent Jacques Cousteau, divers and snorkelers from around the world experience Isla Mujeres’ spiritual glow. I anticipated this editorial coverage with great excitement. Isla Mujeres is located just eight miles off the coast of Cancun, close to the Yucatán Peninsula, surrounded by the warm, sparkling clear waters of the Caribbean Sea. It is a destination for those who adore exploring life under the sea or simply love the relaxed, stress-free atmosphere of an island life in Mexico. During the 15-minute crossing from Cancun, with the fresh sea air filling my lungs, the ever-changing texture of the water, and large white clouds moving with the wind, I felt as though I was leaving the troubles of the world behind. I had received several requests from readers to cover Playa Mujeres and the Cancun SLS Playa Mujeres, so here I am with my trusty notebook.
The Island of Women
The island’s name originates from the Maya, not surprisingly, as Mexico is home to more than 16 million Indigenous people across 68 ethnolinguistic groups, including the Maya who once worshiped Ixchel, the Goddess of the Moon, on Isla Mujeres. The island was a sanctuary dedicated to this goddess of love and fertility, and Maya women would make pilgrimages to the island as part of their transition from girl to woman. When the Spanish arrived in 1517, they discovered numerous statues of Ixchel, crafted in gold, silver, and clay, which led them to etch the island’s name into history. The island was also favored by infamous pirates, buccaneers, and even scandalous slave traders, who contributed to its heady legends of buried treasures and lost love.In 1850, Yucatán fishermen settled on the island, founding the town of Dolores. Interestingly, despite Cancun’s rise as a major tourism hub and Cozumel’s popularity as a busy cruise ship port, Isla Mujeres was often overlooked by visitors. However, several American and Canadian expats discovered a utopia here and now call Isla Mujeres home. The sland is four miles long and one-half mile wide at its widest point—a wonderland of nature and history, home to a natural habitat for turtles that spawn between May and September and are protected by Mexican law. At the southern tip, guests can snorkel along a majestic coral reef and among a huge diversity of marine species at Park Garrafon. The Underwater Museum of Art, where over 440 sculptures are submerged, is another wonderland for divers and snorkelers. Also on the southern tip are the remains of the temple dedicated to Ixchel, the Maya goddess of love and fertility. Most impressive was the clear, sparkling water, changing colors as the light faded beneath a stunning sunset of lingering pastels.
SLS Playa Mujeres
Dinner at Union with Executive Chef Orozco
My final dining experience at SLS before returning home to Denver was at Union, a New York-style steakhouse offering authentic meat selections and hearty vegetables. Chef Orozco, one of Mexico’s elite chefs, highly schooled and an award-winner, was chosen to represent Mexico in Europe, promoting pre-Hispanic Mexican cuisine and its pairing with tequila. My server, Mitz, gave me excellent recommendations. The crab cake vegetable salad with remoulade sauce was delectable, as was the goat cheese salad with mixed seasonal greens, blueberries, crunchy toasted nuts, and a balsamic vinaigrette with extra virgin olive oil. A plate of empanadas filled with caramelized onion short ribs, mixed cheeses, creamed spinach, and grilled corn was divine. I couldn’t resist the Lobster Bisque, a creamy lobster soup with a touch of dill oil. Chef Orozco also prepared a Petite Fillet with asparagus and mashed potatoes, followed by a sampling of mac and cheesemade with creamy cheddar sauce. A side of spiced Potato Mille Feuille was full of flavor. Dessert was a Lemon Tart (or, for me, a classic lemon pie, Alaska style), accompanied by raspberry gel and flamed passion fruit. It was an honor to experience Executive Chef Orozco’s talent and versatility.

Park Hyatt Beaver Creek Resort and Spa
Trisha Ventker
Colorado has been an extensive world-class mecca for ski aficionados, and Park Hyatt Beaver Creek Resort and Spa, just west of Vail, adjacent to the massive White River National Forest, and head-tohead in the historic Rocky Mountains, is among the state’s prevalent ski and year-round destinations. Park Hyatt has hosted skiers and celebrities from throughout the world, and with an attentive staff offering language skills. The ski-in ski-out resort, opened in 1980, nicely placed at the base of Beaver Creek Mountain, has hosted an incredible 65 World Cup events and, in 1999 and 2015, World Championship events. Skiers can access three purpose-built villages, ski on 2,000 acres of terrain, 167 trails, which include five mountains, with a summit elevation of 11,440 ft. and an enormous 323 inches of snow annually.
Colorado Splendor
So, with notebook and camera in tow, it was time to cover the Park Hyatt Beaver Creek Resort and Spa property firsthand. I’ve chatted with a number of avid skiers and friends who are familiar with the resort and Beaver Creek Mountain; however, I booked a few days here, and that should place everything in perspective. The weekend drive from Denver with my close friend Erin was a little over two hours with little traffic, arriving at 4 p.m. Concierge Dave Brown, an esteemed golf pro at Frost Creek, helped us with our bags, and the front desk, manned by Tyler, was excellent and welcoming. Covering Beaver Creek editorially, strikes a sparkling chord, impressing on me that I live in a great state teeming with natural beauty, and with a staggering 58 named peaks that are 14,000 ft. or higher, and 637 peaks that are between 13,000 and 13,000 ft. spreading through seven major mountain ranges, and it’s no surprise that Colorado is the most mountainous state in the country. The midsized property offers 193 guest rooms and suites. Our booking was a standard room, double bed, designed with floor-to-ceiling windows offering mountain views of the gondola, and a comfortable and relaxing interior.
Dinner – Brass Bear Bar & Grill
Walking to dinner at the Brass Bear Bar & Grill the stars appeared in a soft glow and filled the Valley with dappled light, as the wind swept down from the peaks. On this reporting excursion all dining will take place in the busy Brass Bear as the 8,100 Mountainside Bar & Grill is undergoing renovation. Located at 8,100 feet above sea level, the restaurant’s name appropriately refers to virtually dining in the clouds. Down a few thousand feet at the Brass Bar, I was lucky to meet and chat with Sushant Kumar, the hospitable and articulate Food and Beverage Manager, regarding the menu. With his suggestions, we shared nearly the entire dinner, which consisted of; a zesty Classic Shrimp Cocktail with large chilled tiger prawns, emerged in a tangy house cocktail sauce with a squeeze of lemon. Next up was a delightful, Sweet Potato Gnocchi, flavored with brown butter, wild mushrooms, sage, lemon, and a sprinkling of hazelnut crumb, then a Burrata & Tomato, created with marinated tomatoes, saba, elderflower, tossed strawberries, and toasted brioche. Pursuing the flow of the evening, we both selected a Prime Center Cut Filet, prepared by extracting the fat and sous-riding it with bacon and thyme, and fittingly accompanied by sautéed asparagus and whipped potato.
Park Hyatt Beaver Creek Resort and Spa
The filet seemed to melt in my mouth, and we mutually agreed the cut was one of the best. Our server, Austin, arrived at the table with a shared and flawless Cherry Verrine dessert, created with crispy meringue, whipped Chantilly, yuzu, a fragrant citrus fruit, and layers of luscious cherries. Finally, we were distinctive with our wine selections. I enjoyed a glass of Napa Cellars, Merlot, smooth and light, and Erin went to France with a full-bodied, Les Cadrans, St. Emilion, Bordeaux.
Saturday Brunch
The mountain air is wonderful for a good night’s sleep, and the resort’s quality linens were also a welcomed bonus. We loosened up with a brisk morning walk and headed to the Saturday, 9 a.m. brunch. Last night, Sushant Kumar suggested not to miss the Saturday Brunch with Chef Jitender Chaudhary, and again, with a touch of luck, I had a chat with Chef Chaudhary, who was welcoming and sincerely outgoing to us and other guests. Our server, Bulgarian, Todor, was helpful, and professional. Again, we shared a Bakers Basket, brimming with freshly baked Danish muffins and croissants, a spread of honey butter, and house-made compote. Our Avocado Toast was a healthy seven-grain from Michael’s Bakery, dressed with honey, and whipped goat cheese. The microgreens from Pete’s Farm, were charred tomatoes, avocados and cress. Michael’s Bakery, a close hotel associate, also baked fresh bagels for Everything Bagel, and complemented with seasonal compote, whipped butter and smoked salmon with capers. All were enjoyable, and it was easy to comprehend why they were popular menu selections.
A Walk-Through
When reporting on hotels, a favorite for me is the overview or walk-through. In this case, it was Adam Sassi, the Front Office Manager, originally from Tunisia, who led the tour. Park Hyatt Beaver Creek Resort and Spa has one heated outdoor pool bordered by a number of hot tubs, a state-of-the-art fitness center overlooking the pool, and an award-winning spa with 23 treatment rooms. A large ski school is also adjacent to the hotel, and ideal for children who want to experience the thrill of a snowy downhill chute.
Exhale Spa Time
Exhale, in my years of covering spas and fitness centers, is among the best that I’ve encountered. How so important is Exhale for this extremely active ski-in-ski-out hotel, and for the tired and aching skiers, snowboarders, and ice skaters, while during the warm months, there are miles of hiking trails, you’ll find three world-class, championship golf courses at Beaver Creek Golf Club and Red Sky Golf Club. Both clubs offer picturesque, mountain backdrops as you take your time on the links. Hotel guests have access to tee times at the private Rocky Mountain golf courses and tennis year-round. Yet, regardless of the sport, Exhale will unwind the active guest with a 30,000-squarefoot spa and fully equipped fitness center with private training sessions, steam and sauna rooms, and private men’s and women’s locker rooms and relaxation areas, as well as a special couple’s only leisure room. Something veryspecial for a spa is the phenomenal Aqua Sanitas (healing waters), that we experienced with relaxing thermal and magnesium water, and with the helpful guidance of Jennifer, the manager, we did the five-step wellness ritual that included steam, soaking pools, and a cold-plunge designed after the ancient Roman bath houses. Next, I was very fortunate enough to enjoy a 60 minute classic massage that calmed my nerves and made me relax.
Dinner with Chef Greniel Klaudyna
The spa put me in a soothing and tranquil mood, as we shared Oysters Rockafeller, attractively presented with chunks of scrumptious black garlic, creamed spinach and mild and nutty, alpine Swiss cheese. Our second shareable was a Truffle Parmesan Pretzel, with an intense blend of garlic, onion, black pepper parsley, valley lager mustard, and bacon-infused olive oil. The Bison Oxtail & Onion Soup was a caramelized onion broth, alpine Swiss cheese, crispy leeks, and chives, and a winner for a cold, breezy day. Erin selected a Paccheri Pesto, a classic and traditional Italian Neapolitan pasta with wild mushrooms, lemon gremolata and whipped burrata. I kept in the Italian mood with Chicken Parmesan and enhanced with herbs and Parmesan panko, creamy polenta, san Marzano and buffalo mozzarella. Spending the weekend here, I’m again convinced that Colorado’s chefs are among the best anywhere.
Winter Details to Enjoy
The luxurious resort has terrain for all skill levels, and for skiers, don’t miss the famous “Cookie Time” when warm cookies are handed out at the base. Haymeadow Park is where beginners can learn to ski, snowboard or cross-country ski, while McCoy Park offers attractive trails with stunning views of the Rockies. Guests can also book the guided snowshoe tours to learn about the local ecosystem’s. Family-friendly activities include ice skating on the rink located in the heart of Beaver Creek Village, and sleigh rides via a magical horse-drawn sleigh through the snow-covered landscape.
Thursday Night Lights
An entertaining, and fun-filled torchlight parade down the slopes with fireworks blazing, and also the Beaver Creek Chocolate chip Cookie Competition, where guests can enjoy cookies baked by local chefs. Best of all, after a day of snow play, guests can warm up by the fire pit with hot cocoa, hop in one of the hot tubs, relax in the brilliant spa, or stroll through the charming village. Park Hyatt Beaver Creek Resort and Spa is a one-stop destination.
DREAM IN Color
Limelight Hotel, Colorado Luminous
Trisha Ventker
With hotel companies spread across the world like blossoming wild flowers, it’s enormously remarkable that Colorado has its own hotel corporation that originated in Colorado, based in Colorado, and ranked number two in Condé Nast Traveler’s “Top 15 Hotels in Colorado, and the 2024 Readers’ Choice Awards.” With the Colorado state flag flying high, Limelight Hotel’s has notable properties in Denver, Aspen, Snowmass, Ketchum, Idaho, and expanding in 2025 to Boulder and Mammoth, California.
Limelight’s Beginning
In the 1950s, Aspen’s earthy old west, cow punch, Ski and Spur Bar, serving formidable thirst-quenchers to skiers, bawdy bohemians, gents on the run, and faded horse wranglers with scuffed boots and stories to tell, whether, truthful or not, and dazzling ladies who could ski, and, at the time, was the place to be, not only for skiers, but writers searching for juicy material. Later, the famed folk singer, Glen Yarbrough, marched into town and renamed it the Limelite Dinner Theater, and booked well-known performers such as Judy Collins and others. Yarbrough’s dinner theater was popular at the time, however, in 2008 the historic building evolved into the 126-room Limelite Lodge, and two years later Aspen One, purchased the property and with a slight name change, it became the Limelight Hotel, and the beloved sweetheart of the Limelight collection. With expansion on the drawing board, and extracting from the personality of the historic Ski and Spur Bar, the Limelight hotels have a definite identity.
With Limelight’s Colorado history in tow, it was exciting to check in on a Friday night, with close friend Lisa, an optometrist, and for us, the Limelight visit was a first. For this review, I booked a Deluxe, Two Queen Room with Union Station views via dramatic, floor to ceiling windows. The hotel has 200 guest rooms and suites, and their marketing advertised a luxury visit, and we did find some luxury, our room with space to spread out was nicely organized with plush bathrobes, down pillows and duvets, a Lavazza espresso/tea machine, complimentary premium Wi-Fi, and a 55-incch television with Bluetooth speakers, and some wood wall paneling, maybe reminiscence of the Ski and Spur Bar. The location was five-star as well, in the heart of downtown, and steps from Ball Arena and Coors Field, Union Station, Colorado Symphony, Museum of Contemporary Art Denver`, and the top shopping opportunities in the state.
Dinner at Ajax Downtown
I absolutely adore covering downtown Denver, which is alive and vital, and not a generalization, there is something for everyone. We walked to Vintage Label near Union Station, which I’ve covered in a previous downtown posting, and chatted with Carolyn Carrington, the owner, and made a purchase too. We were looking forward to dining at Limelight’s Ajax, again a first for the both of us. Limelight, with deep roots in Aspen, reached back to the city and Ajax Tavern located at the base of Aspen Mountain in the Little Nell Hotel, the sister restaurant and stimulus for Ajax Downtown. We were greeted by Alice, the assistant food and beverage manager, Sam was our server, and we also met Executive Chef Jared Becker, and he guided us to the kitchen and the Frigidaire on a back wall where they age their meats, and shared that the fresh vegetables are from a local farm. Ajax Downtown has an open kitchen, and they cook with a mesquite and charcoal, live-fire style, for added taste and hands-on attention.
We shared our selections, and I started with a Big Feelings craft cocktail made with Smith & Cross traditional Jamaican rum, del maguey Vida, Mezcal, an orange blossom flavored piere ferrand dry Curaçao, and a squeeze of peach and lemon, and cinnamon fire sticks. Next up was a spaghetti Fall Squash Tart cooked with pickled butternut squash, house goat cheese mousse, and candied pepites. A side of Oven Bake Sourdough, with crema di lardo, appetizing, fire roasted peppers and saba. My main, was a 12oz Ribeye richly flavored with perigueux sauce, parsnip purée, and roasted maitake mushrooms. Lisa’s selections were an Expatriate craft cocktail, fashioned with Clear creek pear eau de vie, which is a Brandy with Pacific Northwest grown fruit, and St. Germain elderflower, and a crush of lime. Lisa selected Dry Aged Park Chop, with rye spatzle, garlic emulsion, cider pork reduction, and Roger’s mesa apple; the organic apple picked straight from the tree to the restaurant. The chef sent out two dishes, one was a superb Sea Scallop Udon with fermented black radish, Dungeness crab, macadamia, and in a mushroom shoyu broth, the other surprise was Burnt Kohlrabi swimming in a wild strawberry broth, bits of caviar and crème fraiche, a cultured, French-style, heavy cream. Both dishes were excellent and on my next visit, hopefully, I can enjoy them again.
Desserts were a work of art, a carrot cake decorated with pickled golden raisins and candied pecan, on a cream cheese frosting and carrot purée. Two slices of White Chocolate Apple Cheesecake, devised with caramelized apples, almond crumble, a miso butterscotch sauce, and crème Chantilly. Then server Sam brought to table Peanut and Butter Gelato, which was so delicious it tasted like a homemade peanut butter and jelly sandwich from my childhood in Long Island, New York!
I feel with Limelight and all their Colorado History, that they landed in downtown Denver, and are spreading their joy.

A WINTER VACATION IS CALLING
Dinner at Elway’s Downtown
Trisha Ventker
I read the reviews on Elway’s Downtown, and it was finally time for me to check out Elway’s Downtown, which is located in the lobby of the Five Diamond Ritz-Carlton hotel. The restaurant has undergone some beautiful extensive changes, with esteemed Executive Chef David Schaumburger coming aboard in August 2024 and stamping his signature on the menu with fresh local ingredients, and a menu to please. Born and raised in Zweibrucken, Germany, located on the French border, Schaumburger has cooked in various parts of the world, including Dubai, and for Michelin-starred restaurants. I made overnight reservations for myself, my husband Tom, our son Tristan, and his girlfriend Talia. It should be a fantastic opportunity to expand our menu options at Elway’s, especially since it’s their first time visiting.
John Elway
Dining at Elway’s Downtown holds special significance for me. The name Elway is synonymous with Denver greatness, as it’s the legacy of John Elway, a celebrated NFL quarterback who spent his entire 16-year career with the Denver Broncos. Widely regarded as one of the greatest quarterbacks of all time, Elway led the Broncos to two Super Bowl victories and was inducted into the NFL Hall of Fame. After retiring from football, he remained deeply involved with the Broncos for over a decade, serving in various front-office roles, including Executive Vice President of Football Operations, and also worked in television. In previous issues, I’ve highlighted some of Denver’s other iconic athletes, such as Coach Prime (Deion Sanders) in the Spring/Summer 2024 issue and the incredible Nikola Jokić in the Holiday 2022 issue. Now, at long last, I’m thrilled to feature John Elway and his restaurant, Elway’s Downtown.
Elway’s Downtown
Entering the restaurant that seats 160 guests, we noticed a group of Bronco players dining at a huge table, and they must have felt perfectly at home with Bronco colors infused in the interior decoration along with football memorabilia, and photos and mementos skillfully honoring John Elway, in a modern and relaxing setting. The evening chef was Stella Wright, originally from South Korea, who has cooked at five-star hotels for some nine years. I began the evening with a blueberry, lemon drop Blitz. Tom enjoyed a glass of Chianti from Tuscany that was prominent with earthy and rustic aromas. For starters, the table shared a plate of Rhode Island-style Calamari, prepared with cherry peppers, baby corn, appetizing bits of blue cheese, olives, and pepperoncini, a mild Italian pepper. We each had our turn at a platter of a delightful Tuna Tartare, Ahi Tuna-style, which is a yellowfin tuna offering a mild, meaty flavor with firm large flakes, accompanied by a scoop of guacamole, scallions, yuzu ponzu, a tart and tangy Japanese citrus sauce, a spicy garlic aioli, and wasabi, while the layered flavors in the dish touched on four countries. Tom and I took turns at an Iceberg Wedge Salad, effectively plated with red onions, chives, a blue cheese crumble, bacon, cherry tomatoes, and a savory blue cheese dressing. Tristan and Talia both ordered the House Salad, which arrived with mixed greens, cherry tomatoes, shared radish, chopped bacon, Parmesan, a shredded egg, lemon croutons, and a zesty Parmesan vinaigrette.
The two salads looked so appetizing, that, for me, on a return visit they will be a go. With space for entrées, Talia selected an 8 oz filet, the restaurant using the finest USDA prime steaks, and she remarked that the filet was delicious. Tom’s selection was a 16 oz Ribeye, sprinkled with black pepper and horseradish aioli. Tristan and I both ordered Twin Lobster Tails, which were two 5 oz tails with drawn butter and a squeeze of lemon. The sides were Loaded Baked Potatoes, Creamed Spinach, and Mac and Cheese. We shared the Basque Cheesecake topped with whipped cream and vanilla anglaise. A surprise was the Fresh Baked Chocolate Chip Cookies. Overall, the four of us awarded the dinner a five-star rating. The cuisine was fresh and creative, and the service was remarkable.
The Ritz-Carlton
We booked a one-bedroom suite with an adjoining Deluxe King Room. The suite is loaded with advantages, such as Club Lounge access, complimentary midday and late-night snacks, appetizers, grab and go snacks all day, evening bar service, high-speed Wi-Fi, complimentary non-alcoholic beverages, business services, and pressing two garments per night. With the name Ritz, “deluxe” is in full force. The suite has a separate living and dining room, a walk-in closet, the windows are soundproofed, the air allergy-free and non-smoking throughout. I loved the oversized chair with ottoman that would be adequate for two people and their pet dog. The marble bathroom was my favorite, with an oversized bathtub, double vanities, a lighted makeup mirror, robes and slippers. The beds are adorned with Frette luxury linens and duvets, a pillow top mattress, and a feather bed. The bottled water is complimentary, and there is 24-hour room service for those in need of a snack at 2 a.m.
Ritz Heritage
It all began with Swiss hotelier César Ritz (1850–1918), the ultimate hotelier in history. He redefined luxury accommodations across Europe with his unwavering commitment to grandeur and opulence, while still maintaining a sense of intimacy. His vision came to life in iconic establishments like the Carlton in London and the historic Ritz Hotels in Paris and London, which set the standard for unparalleled comfort. The stunning restaurant in the Ritz London, long noted as the most beautiful dining room in the world with its use of natural light reflecting off a ring of chandeliers, inspired by classic French 18th century interior architecture. Ritz-Carlton has 108 luxury hotels and resorts in 30 countries and territories, the first in the United States was opened in New York City in 1911, with the celebrated Cesar Ritz at the helm along with his wife Marie-Louise. While dining, I was thinking about the incredible history of the Ritz-Carlton hotels and wondering, if the great Cesar Ritz was hovering about? Regardless, I award Elway’s Downtown and the Ritz-Carlton, Five Stars.

“Winter Skincare & Makeup”
How can I keep my skin looking great this year?
Michael Moore
To get a flawless complexion and naturally glowing skin this winter, it all starts with one thing. Start with what you put into your stomach. Strengthen the diet and you will improve your skin barrier. Start by increasing the fats in your diet…not French fries, but the healthy fats! While you do this you will improve your skin function and age with grace!
Skin is the largest organ in your body. Treat it will and it will thrive. Think about how you are treating this organ, I guarantee it will take care of you!
Winter Makeup Must Haves:
• Serum: Start with a Hyaluronic acid before moisturizer. It will help your skin bind and hold your moisture in place. MUST HAVE HYALURONIC ACID: Lira Clinical BIO Hydra Infusion
• Moisturizer: Look for a moisturizer that will work beyond the call of duty. In the Colorado will bind and stay on the skin as well as the fact that it will not freeze the skin as it’s not water based. MUST HAVE MOISTURIZER: Truth Treatment Systems Transdermal C Balm
• SPF: Protect, heal and prime the face with all all-in-one moisturizer. The evolution of SPF has been huge over the past few years. Zinc Oxide is where it is at! With an SPF of 30 and Aspen Bark for healing properties, this acts as a great base and primer for your makeup! MUST HAVE SPF: Antedotum SPF 30
• Foundation: Treatment foundations is where the industry is currently at. Moore For Life started years ago with treatment-based foundations that are mineral based, and 100% custom blended to be. A perfect match to your skin type and tone!
• Shadows: Keep it cream but long lasting. A cheer cream shadow will keep the lid supple in a dehydrated season. With a polymer base, it holds color, as well as hydrating the lid with the benefits of an eye cream.
• Cream Blush: Fresh as if it is coming from the inside of the complexion. Dewy as if you are still in your teens!
• Lips: Tinted lip balms are the way to go, especially after you heal those dry Colorado lips. Lira Clinical BIO Recovery Balm will do so much more than just coat your lips and make them feel good. The product contains colloidal gold and silver to heal the lips or any place that is needing to be healed. After you repair, then add a tinted lip balm in the shade Grape Jelly or Sweetheart. These are great everyday colors that will compliment anyone and everyone. Add Moore For Life SPF 30 Lip Gloss on top for some shine AND protection!
We take sun protection seriously! We are here to help you but adjust to ever changing Colorado skincare needs.
