Yacht Club Skewers on a Bed of Rice

2 scallops, 150 g shrimp, 150 g monkfish, 80 g rice, 1 Tbsp butter, 1dcl olive oil, salt and pepper

Remove scallops from the shell, peel the shrimp and monkfish. Cut monkfish in 4 medallions. Make skewers with a piece of fish, scallop and shrimp. Season with salt and pepper and briefly marinate in olive oil.

Sauté rice in butter, season with salt and cook in stock. Grill the skewers and serve them on rice. Serve with some sauce tartar.
