Welcome to the October/November issue of About Ballinteer Hurrah, a little warmth in the air and Spring has Sprung! So, let’s open the windows and spring into action! The Watoto Children’s Choir from Uganda The Watoto Children’s Choir from Uganda sang at the morning service on Sunday 21st February in Rathfarnham Parish Church, Rathfarnham Village, followed by an evening performance. The Watoto villages cater for those orphaned as a result of AIDS and war. Over 2000 children are catered for and a new village has been opened in Northern Uganda to cater for former child soldiers. The Choir were on a European tour and we were delighted to be able to host them.

ABOUT EDUCATION

Highlighting the Work of the South Dublin Adult Learning Centre South Dublin Adult Learning Centre (SDALC) was established over 20 years ago to deliver basic education courses. Located on the Main Street, Dundrum, SDALC provides services to meet the needs of adult learners through a range of programmes, free of charge, from one-to-one courses to accredited courses. These courses are run periodically throughout the year. The SDALC supports adult learners and encourages them to identify their educational needs. Our classes concentrate on: • • • •

Improving Reading skills Improving Writing and Spelling skills Brushing up on Maths Introduction to I.T. for people with basic education

In addition to FETAC, Junior Certificate courses in English and Maths are also available to students. Many of our students have also had great success with Leaving Certificate English. All of our classes are organised to meet local demand. We offer a wide range of classes to assist students to improve their skills and we take into account their special interests. A highlight of the SDALC year, is the publication of the students’ writings. SDALC provide a professional, confidential, free service to local people aged 18 years and over. We strive to make all of our classes welcoming and learner-centred. If you want to find out more about our courses, do not hesitate to contact us. All courses are available on a part time basis during the day or evenings. One of the programmes we currently offer is the ITABE (Intensive Training in Adult Basic Education). This course helps students improve their general communication skills, including reading and writing. Revising and improving numeracy and Maths for Life is also available to students, as well as an Introduction to Computer Skills. The ITABE is a 14 week intensive course, which students attend for 6 hours a week. Former students have gone on to take certification courses, such as FETAC. SDALC is part of the County Dublin VEC, so it is approved to deliver courses accredited by FETAC at Levels 2, 3 and 4. The FETAC certification is recognised both nationally and internationally. Some of the courses accredited by FETAC and delivered by the Centre include Communications, Maths, Computer Literacy and Personal Effectiveness. 8 | ABOUT BALLINTEER

ABOUT RECIPE

Golden Lamb Stew & Rosemary Shortbread by Fiona Tuomey

GOLDEN LAMB STEW

Add the flour, semolina, salt and the rosemary to the butter mixture, and mix until thoroughly combined. The dough will be soft, so refrigerate it for an hour so that it is firm enough to roll out. Roll the dough out to about a centimetre thickness. Cut shapes as required, or fingers and place them on the greased baking sheets. Sprinkle with sugar and bake in the centre of the oven until they are gold at the edges, between 12 and 15 minutes. Remove from the oven and place them on wire racks to cool. Pack in an airtight container where they will keep, their flavour improving, for at least a week.

500g Lamb, diced Small green pepper, chopped Small onion, chopped 1 Large tomato, chopped 5 Small potatoes Tomato puree 2 Carrots, sliced 500ml Vegetable stock Small yellow pepper, chopped Oil to fry • • • • •

Parboil the potatoes and drain. Lightly fry the lamb until all the juices have been sealed. Add the onion and fry until soft. Add the stock, along with the potatoes and other vegetables. Simmer gently for 1 hour. Add the tomato puree to taste and stir in the chopped tomato. Cook for a further five minutes. Serve with boiled rice.

ROSEMARY SHORTBREAD 350g Unsalted butter, at room temperature 150g granulated sugar 2 Tbsp Fresh rosemary, or 2 tsp dried 340g Plain flour 75g Semolina ¼ tsp Salt 2 tsp Demerara sugar for topping • •

Preheat the oven to 190°C and grease two baking sheets. Cream the butter in a large bowl until light and creamy. Add the sugar, and continue mixing until the mixture is fluffy. If you are using fresh rosemary, chop it very finely and if using dried, crush it until it is fine but not a powder.

Do You Know Your Director Duties? by Brendan Dillon, Dillon Solicitors When deciding to go into business people frequently opt to set up as a limited company due to the advantages it provides. It is important however that people becoming directors of these companies become Brendan Dillon familiar with the legal obligations and responsibilities attaching to their position. The primary function of the directors of a company is to manage the company on behalf of the members. A director has a fiduciary duty to act in a manner which places the interests of the company ahead of their own. This can be difficult as in many Irish companies the directors and members of the company are one and the same and therefore, it can be difficult to distinguish between the company’s property and the director/ member’s property resulting in directors treating company property as though it was their own.

Directors are obliged to carry out their functions with due care, skill and diligence and are liable for any loss resulting from their negligent behaviour. Director’s statutory duties: These duties arise under the Companies Acts 1963 2001 and include: 1. A director has a duty to comply with their obligations under the Companies Acts and to ensure the requirements of the Companies Acts are complied with by the company. Round The Garden: Awkward April by Tom Percy April can be delightful on the weather front, but it can also be an awkward month to predict. Cold snaps and even snow can occur, so keep lots of horticultural fleece at hand to protect tender plants – not forgetting trees of the peach family. Prepare On the subject of horticultural fleece, it’s a good idea to cover the ground for a few days before planting, as the slight rise in soil temperature of the soil will be beneficial. This is the month for weeds to really take hold, so remember to hoe frequently. The gardener’s nightmare is coming into its own this month – so do keep a careful watch for the first signs of slugs and snails. Deal with them before they can do too much damage to young seedlings. Peaches and nectarines can be pollinated with a small brush.

Spring Clean Your Thinking! by Janice Coyne, Style Consultant Isn’t it good to see the stretch in the day and realise that spring really is around the corner? At this time of year we often think about a spring clean: the house, the garden, the wardrobe, etc. But, how about a spring clean of our thinking? How challenging would it be to re-think how we felt about ourselves - especially our bodies when we look in the mirror? Imagine that when you get up and have that first bleary-eyed look at yourself in the morning you were pleased with what you saw? This is not a pipe dream or wishful thinking. We are all too ready to be self critical. How much better would it be to be self praising – or at the very least selfaccepting?

When this life force energy is channeled through a practitioner’s hands to the recipient, the body’s natural ability to heal itself is activated. Sam McMahon Trust – A Fundraising ‘Culinary’ Triumph! by Caroline McMahon You may remember in our last issue we highlighted the story of local boy Sam McMahon, who suffers from Friedreich’s Ataxia. We asked your help to support a fundraising event organised by his family to raise funds for the Sam McMahon Trust. Well, on March 8th at the Grosvenor Suite in the D4 Berkeley hotel, over 400 people attended the Neven Maguire Cookery Demonstration. It was a complete sell-out! His mum Caroline wrote this report. The evening kicked off with a wine reception, during which Neven's new book ‘Home Chef’, was snapped up!

The second session saw Neven bake Warm Pear Tarts with Citrus Mascarpone Cream and Spun Sugar Curls to decorate. When the show was over Neven posed for endless photos and signed book after book. Words can’t convey his generosity and kindness. Not only is Neven Maguire a superb chef but he is a gentle, kind man who was willing to give his time to the Sam McMahon Trust. He presented Sam with a signed copy of his book and encouraged him and his brother to try out the recipes. We, at the Trust are also grateful to Neven’s wife Amelda, who was involved in planning the event and John from Flogas who assisted Neven and supplied copies of the recipes for the demonstration.

During the first session, Neven selected what he considered to be the perfect three-course meal from ‘Home Chef’ and guided the audience through the recipes. Gratin of Hake with Prawns, Spinach and Pesto and a Chicken Chorizo Rice Bake looked and smelled divine.

Thanks are also due to all of the people who bought tickets, donated prizes for the raffle and who worked so hard to ensure that the event was a great success. We raised a fantastic total of €10,500.

We were instilled with confidence that we could recreate them at home.

We have arranged another cookery demonstration with TV3 celebrity chef Andrew Rudd in aid of the Trust and at the Loreto National School, Rathfarnham Parent’s Association on 23rd May.

We raffled some fantastic prizes, including a meal at Neven’s McNeans Restaurant, during the break - all of which added to the fundraising cause.

Be a Participant in Life not a Spectator! by Ita Breagy, Alive & Kicking Are you guilty of procrastination? Does the expression - 'Never put off until tomorrow what you can do today', ring a bell? Most of us have a never ending list of things we 'Must Do'. We are full of good intentions but never actually get around to doing most of the things we either want to or need to do. Why is this? We know it makes sense to 'just do it' and be finished with it. So what is stopping us? Is it laziness or tiredness or are you just not very interested in the task? The simple answer is we procrastinate. We intend doing it but not right now. So how do we stop procrastinating? Ita Breagy The easiest and most effective way to stop procrastination is to take action. Pretty obvious you may say, but how? First things first, make a 'To Do' list instead of a 'Must Do' list. Start by doing the things you least like to do first. Do them early in the day if you can and give yourself a reward for completing them. Set out a time frame within which you would like to get things done. Be realistic. Take one task at a time. Work your way down the list, crossing off the tasks you have completed. You will get great satisfaction from this and it will spur you on to do more. Imagine how relieved and satisfied you will feel when you get the tasks done - whether it is tidying your office desk, making some necessary calls, tidying your bedroom or decluttering your wardrobe. Spring into Action! by Kevin Mills, Chem Dry Express Yes, it is that time again - Spring Cleaning! As the weather gets milder, flinging open the windows to the fresh air and attacking the house is something which many find very therapeutic! To help make things easier we’ve got some great tips from a local professional – Kevin Mills at Chem-Dry Express.

“With anything you must prepare in the right way. You want to get the job done fast but not cut corners. You want to use safe products but they have to be effective. Most importantly you don’t want to take on a job that is meant for a professional, as you’re only wasting your time and energy! The good news is I have enough tips for you to get through everything and have your house like new again! 1. Planning Don’t take on more than one task at a time. This will enable you to work efficiently and effectively. When items are found that belong in another area, place them in a basket and take the time later to return each item to its rightful place. 2. Clutter This is a great time to simplify and de-clutter your home. Recycle old books, magazines and clothes which you no longer wear. Replace with candles and flowers. 3. Fridges Springtime brings a change in diet, so this is a great opportunity to clean the refrigerator. Use a chemical free combination of salt and soda water. The bubbling action of the soda water combined with the abrasive texture of the salt works great as a cleaner. 36 | ABOUT BALLINTEER

4. Kitchens and Bathrooms (We can help here!) There may be a build up of limescale around your taps. The best way to get rid of it is to lay paper towels over the fixture and soak it with vinegar, letting it set for one hour. The deposits will soften and become easier to remove. The same applies for shower heads in hard water areas. In the bathroom, pop any mildewed or scummy plastic shower curtains into the washing machine on a warm wash - say 40°C. Don't spin - remove and hang back up straight away so that the creases fall away! Use old toothbrushes to clean awkward nooks and crannies - like plug-holes and drains. If you find that the bottom of your shower tray or shower doors have watermarks which are difficult to remove - get a nylon scouring pad and water, it works wonders! Want an eco friendly way of removing stains from the toilet? Just pour some cola down, flat or fizzy, it works a treat (honest!) If the grouting around your tiles is looking mouldy, you can get it professionally cleaned – which will save you money and make your tiling look like new! 5. Carpets & Upholstery (We can help here too!) Invest in a good vacuum cleaner! Vacuum your carpet twice a week. This will help keep dirt from settling to the bottom of the carpet. If you have pets, try to vacuum three times a week especially in the areas where your pet lies on the carpet. For fresh stains, carbonated water works well. Just pour a generous amount to the soiled area and gently blot the area with a typical white towel. Avoid cheap carpet cleaning products, they leave behind a soapy residue and the carpets will get worse over time! The Dublin Society for Prevention of Cruelty to Animals is a registered charity, established in 1840 to prevent cruelty to animals. This year marks their 170th anniversary of saving lives and fighting cruelty. Cruelty, neglect, accidental injury and sickness to animals continue today - and the DSPCA are still here dealing with these problems. They fight animal cruelty and abuse in all of its forms. The DSPCA provide direct care for thousands of animals, both domestic and wildlife, at their shelter on Mount Venus Road in Rathfarnham.
