ABOUT ADULT EDUCATION

St Colmcille’s Adult Education Programme by John Egan Since its inception, the Adult Education Programme at St. Colmcille’s has gone from strength to strength. Originally it offered twelve courses, however our most recent term presented close to fifty different options. Alongside our hugely popular courses of Computers, Cookery, Pilates and Yoga, some new courses added this year include: Ultimate Fitness, Sewing Classes, Wood Turning, Web Design and D.I.Y. Without the support of the Knocklyon community this would not have been possible. We would encourage parents to get involved in the Adult Education courses, as a greater participation in the St. Colmcille’s educational facilities, enhances the social aspect of the community at large, whilst you are attaining new skills. With the exceptional work of our adult education tutors, many of our students return term after term to participate in different courses. We are continually

reassessing our courses and updating our technology and software to meet the ever evolving needs of our students. Due to the increase in participants, we have introduced a new on-line enrollment system. This has made the registration process easier and more accessible for students. Classes take place Monday, Tuesday and Wednesday evenings usually running from 7.30pm – 9.30pm for a ten week period in both January and September. Here life-long learners have the opportunity to take part in a wide range of classes to suit many interests. Enrollment for new courses begin in January 2010. Have a Stylish Christmas! by Janice Coyne, Style Consultant With the festive season approaching, many of us are watching the pennies this year as never before, I was thinking about the many ways to update an existing outfit with the use of accessories. If your budget doesn’t allow for a completely new look, then take some time and consider how to update what you have with a few additional well chosen pieces. What will work with what you already have? This will depend on whether your outfit is already detailed or plain, but if we assume that you have the ubiquitous “little black dress” in the wardrobe then the options are many and varied. For “little black dress” think of any combination of dark separates and consider the following options: Adding a Belt – would your dress/separates work with a belt? If you have the hourglass or triangular body shape then your waist is a great asset and drawing attention to it with a gorgeous belt could be the answer. Remember too that adding a belt where you don’t naturally have a waist can give the illusion of one, especially if worn slightly lower than the natural waistline. For those that are ‘straight’, belts are designed to be worn on the waist and those with a slight curve are designed to be worn on the hips with the belt, sitting slightly higher at the back and lower at the front. This allows the buckle or fastening to lie flat at the front.

Add a splash of colour with either jewellery or scarves can help brighten your complexion. As we mature, wearing black near the face can sometimes seem harsh. Brightening the neck area with added colour is easy and very effective. Footwear and Handbags. This year there is a fabulous range of dressy pumps and ballet flats as well as all heel heights in between. Remember, that wedges support the full length of your foot more than stilettos and are available in a range of heights and styles. Add a stunning handbag and you’re off! Whatever you do over festive season ladies, I hope you have a great time and feel fabulous. Necklaces – these do a great job of distracting the eye. Long necklaces can elongate your neck and draw the eye down, creating length which also acts as a slimming aid. If you want to draw attention upwards then try multiplying several necklaces to create a dramatic statement. Knitwear or Scarves – from colourful pashminas to shrugs, scarves and lightweight loose long cardigans, there is plenty to choose from. Decide what length or shape suits you best, whether it’s a small shrug, tie-wrap cardigan or a longer length waistcoat or jacket. ABOUT RECIPE

Saffron Turkey with Wild Rice and Cranberry Stuffing Most of us enjoy turkey at Christmas, so we thought we would publish Phil Vickery's recipe for success, with a fab stuffing! Serves: 12 Prep time: 30 mins Cooking time: 3 hrs 22 mins approx For the stuffing: 1 tbsp olive oil 50g butter 2 onions, chopped 2 large sprigs rosemary, leaves only, chopped 100g cooked wild and long grain rice 50g dried cranberries 100g dried apricots, roughly chopped 175g fresh white breadcrumbs 6 good quality pork and herb sausages, skinned 1 lemon, finely grated rind 1 egg, beaten

Brussels sprouts with chestnut and sage butter

For the turkey: 5.6kg turkey, giblets removed 1 lemon, halved 1 bay leaf 50g butter 1/2 tsp saffron threads

Chestnuts are so seasonal, and work beautifully with sprouts. This recipe is very simple to make and sure to impress your Christmas guests on the big day.

Method: 1. Heat the oil and butter in a saucepan and fry the onion and rosemary for 5-6 mins. Remove from the heat and stir in the remaining stuffing ingredients until well combined. Season.

Ingredients: 25g butter, softened 25g chestnuts, cooked, peeled and chopped 1 tsp chopped sage 300g Brussels sprouts

2. Preheat the oven to 190째C/gas 5. Melt the butter in a small saucepan, stir in the saffron threads and leave to cool slightly.

Method: 1. Put the butter, chestnuts and sage in a bowl and mix well. 2. Scrape the mixture onto a large piece of greaseproof paper and shape into a log. Wrap in the paper and refrigerate until firm. 3. Cook the sprouts in salted boiling water for 10-12 minutes until tender. Drain. 4. Cut the chilled butter into slices. Toss 4 of the slices with the sprouts until they are well coated in butter, and season well. 5. Arrange the remaining slices on top and serve at once.

3. Push some of the stuffing into the neck end of the bird packing it right up to the breast meat. Secure the neck skin with cocktail sticks. Roll the remaining stuffing into balls [these can be cooked separately for 30 minutes] 4. Weigh the turkey and calculate the cooking time at 20 minutes per kg + 90 mins at the end. Push the lemon halves and bayleaf into the cavity and place in a roasting tin. Brush the whole bird with the saffron butter and season well. Cover with foil and roast. Remove the foil and baste with any remaining saffron butter and roast uncovered for the last hour of cooking time. To check to see if the turkey is cooked push a metal skewer into the thickest part of the leg - if the juices run clear the turkey is cooked if the juices are slightly pink pop back into the oven for a further 15 minutes before checking again. Cover with foil and allow to rest for 20-30 minutes before carving. 10 | ABOUT KNOCKLYON

For the red wine I suggest a French Rhone - Chateau Neuf De Pape Grand Veneur (€28.95) - which is showing layers of ripe fruit and lots of complexity. Alternatively, go for the stunning Naughton’s Flight Shiraz from South Africa at €18.50. Be sure to decant the Shiraz two hours before serving and I promise you a memorable experience. Enjoy your Christmas pudding with a nicely chilled glass of Mitchells Gold from Bordeaux at €15.50 - an international award winner, displaying exotic fruits, orange and honey in abundance. And after lunch why not try one of our Barao de Vilar Ports from €15.50. For those looking for something truly sparkling, don’t wait until New Year’s Eve to try the Montaudon Reserve Premier Champagne. At €34.50 it is hard to beat.

To start, how about the perfect pre-dinner wine for your guests, the Bortolomiol Prosecco at €11.50 - sparkling, light and refreshing and hitting just the right note. Family Law Mediation by Brendan Dillon, Dillon Solicitors Many people associate marital breakup with letters between solicitors, trips to court, huge legal bills and an enormous amount of stress and emotional trauma for both spouses and, in particular, their children.

There is little doubt that by engaging in a mediated process the parties will reduce their legal costs significantly from the costs that would be incurred if they went to court. There is also the added advantage of retaining control of the outcome as mediation can only be successful if the parties themselves reach an agreement which is obviously much better than asking a judge to impose an outcome on the parties. A number of years ago a family law resolution model known as collaborative law was developed here. This involves both solicitors working together with the two spouses and all four parties meeting on several occasions with a view to the resolving in a mature and constructive fashion all of the issues which require to be agreed in relation to property, other assets, maintenance, custody and access, pensions, taxation and succession act issues. In the last six months a number of solicitors in Dublin have trained as family lawyer mediators. Mediation is a process where the husband and the wife attend a number of sessions of mediation with a view to resolving their issues and coming up with a set of proposals which is then converted into a binding agreement by their solicitors. The role of the mediator is to facilitate the discussions between the husband and the wife. The mediator can provide information but not legal advice. The mediator’s role is to maintain a focus on the resolution of the issues and look for ways and mechanisms as to unlock the difficulties. The training which was conducted through a U.K. model known as Resolution which has been operating successfully in the U.K. for the last fifteen years is based on a child centered approach to the resolution of family law issues. The experience in the United Kingdom has demonstrated quite clearly that the impact of family law breakup on children is greatly alleviated if the parties can reach a resolution of the issues between them in a constructive and mature manner, without having to engage in lengthy and confrontational legal proceedings. 14 | ABOUT KNOCKLYON

This makes the whole process a little less overwhelming and if you concentrate on a limited number of areas you’ll be sure to get your look right and have a happy, healthy and stylish Christmas.

2. Get back to basics Go for a walk and gather a collection of branches. Spray-paint the branches in silver or gold; pop them in a vase and voilà…elegant Christmas decor. Use them to decorate the mantle, intertwine with fairy lights and add a few inexpensive glass balls. Take it a step further and tastefully tie some festive ribbon, or hang some simple decorations from them.

For example start a ‘Christmas Star / Santa Collection’, adding a new piece to the collection every year. Your family can look forward to choosing your yearly star/Santa together every year. It will be a fond memory for everyone, and can be passed on to future generations. Remember, it's the memories you're interested in here, not a collectable based on monetary value.

5. Give the gift of baking This has been made so easy with websites such as www.videojug.com. You can watch simple 5-minute videos, some by Michelin Star chefs, showing you exactly how to make your festive dish. It’s really great, as you’ll see exactly what you should be doing and how it should look at each stage. This makes it almost fool proof, worth the effort and creates a thoughtful gift, sure to impress your friends or family!

Round The Garden in December by Tom Percy Garden work is difficult in December and January but it is a very good time to tidy up by carrying out winter digging, cleaning tools and pots, tidying sheds and repairing fences. Damage to lawns in the winter is caused by wet rather than cold weather. Long periods of mild wet conditions starve the roots of air as they are trying to grow. Spike the lawn with a garden fork or use a machine to scarify, then top dress with a mixture of sand and loam, brushing it into the holes.

If the weather permits now is a good time to dig over any ground. This is especially useful if you have clay soil as it gives the winter weather a chance to break the clods down before spring arrives. If you didn’t dig in manure in the autumn, it can be done now as long as the manure is well rotted. Consider investing in a garden shredder to shred your woody prunings. Apart from being more environmentally friendly than burning or binning them, the shredded wood makes a perfect mulch for your flower beds or you can add the results to the compost heap.

Winter is pruning time for many shrubs and trees. Variegated plants may revert to being green all over and these green shoots of evergreens and deciduous shrubs need to be pruned out in winter. Protect buried bulbs from mice and squirrels by laying panels of chicken wire across the ground. When your early bulbs such as snowdrops, scillas and muscari begin to flower you can clear away leaves and other debris from around them but avoid forking or hoeing the surface as this can cause damage.

Reduce Your Energy Costs this Winter by Brian McGarry, Plumber As the weather gets colder and heating bills rise, there are many low cost options which will help you to reduce your bills. You know that closing doors and windows, adding insulation, installing double glazing and turning off radiators in rooms which are not in use all help. Here are a few you may not have considered:

Turn Your Heating Down Just 1ºC can knock 10% off your heating bill! Keep your thermostat at 20ºC. Programme Your Heat Get a programmable thermostat or programmable radiator controls to vary temperatures throughout the day, keeping the heat down when not needed. Follow the 30-Minute Rule Set the heating to switch off 30 minutes before bedtime, and set it to turn on 30 minutes before you get up in the morning. Take a Shower Consider a shower instead of a bath - a shower usually uses about a fifth of the energy of a full bath. You might also consider installing a low-flow shower head to reduce the amount of hot water being used. Get Your Boiler Serviced Have your boiler inspected and serviced by a professional every year and you will save a minimum of €150 a year! An annual boiler service will reduce the likelihood of breakdown, save money; reduce CO2 emissions and improve your boiler's reliability and safety. Remember, by law, only an RGII member can service a gas boiler. If you have a boiler older than 15 years then it is likely that during the next few years that you will have to replace it on reliability grounds. Change it now and start saving immediately! If you have a natural gas supply then it is likely to be the lowest cost option in terms of both boiler installation cost and running cost. Local Ladies Get Stylish! Last month, over 50 ladies gathered in Giddy Studios on the Grange Road, for a Personal Style Night’ with local Style Consultant Janice Coyne.
