Colour refers to a diamond's lack of colour, grading the whiteness of a diamond. A colour grade of D is the highest possible, while Z is the lowest. Clarity is a measure of the number and size of the tiny imperfections that occur in almost all diamonds. So, what should people look out for when choosing a diamond? “Most people have heard of the four C's in Diamonds 1 Carat, 2 Cut, 3 Colour and 4 Clarity, but they are not sure what this means. Carat is specifically a measure of a diamond's weight. We tend to evaluate diamond size by viewing it from the top because that is how diamonds are presented to us when set into a ring. Cut is a diamond's most important characteristic. It has the greatest overall influence on a diamond's beauty and sparkle. Always select the highest cut grade within your budget.

The Iona Centre, Knocklyon by Fiona Tuomey The Iona Centre is the pastoral centre of the Knocklyon parish. Opened in 2000, the main purpose of the Centre is to accommodate the meetings and workings of the numerous parish committee and groups, to facilitate appropriate courses to meet the needs in the area, and to rent out accommodation for external conferences and seminars.
The Centre is managed by Bernie Rossney, the Director, along with the Management Committee (Michael Buckley, Gerry Pounch, Mary Prendergast, and Fr Jimmy Murray, PP). The amenities include a number of rooms which are available to hire – a large assembly room, a small assembly room, meeting rooms and a series of smaller rooms. The larger rooms accommodate groups from 20 to 60 people, with the smaller rooms being more appropriate for counselling sessions and small group meetings. The Centre also has a Quiet Room, particularly suited to the pursuit of activities such as Yoga, Retreats for schools or groups, Meditation, and Spiritual Courses. Since its opening, the Iona Centre has become the focal point of the parish. It is a hive of activity from Autumn to Summer with a multitude of courses and activities. There is a great sense of community about the place and a warm friendly atmosphere. In addition there is an enclosed garden – a veritable oasis of tranquillity in the midst of the entire bustle. A full schedule of courses and talks are organised twice a year – September and January. Many of the courses are organised in response to the demands and needs of the community, and invariably there is a wide choice. 8 | ABOUT KNOCKLYON

The Food of Love They say the way to a man’s heart is through his stomach, so how about this hearty casserole for him? (pretty tasty for us ladies too) Then a little something for us chocolate lovers! PORK CASSEROLE One for the man in your life on Valentine’s Day 700g / 11/2 lb Diced shoulder of pork 50g / 2oz Plain flour 175g / 6oz Mushrooms 6 Leeks, sliced Can / bottle of Brown Ale or Guinness! Dash of Tabasco sauce Lemon peel - a strip Bouquet garni Lard or oil for frying Salt and pepper Melt the lard in a frying pan (or heat oil). Fry the leeks for 5 - 10 minutes and transfer to a casserole dish. Toss the pork in flour, salt and pepper and cook in the frying pan until browned. Transfer to the casserole dish. Pour over the beer and add the lemon peel, Tabasco sauce and bouquet garni. Cook for 1 - 2 hours at 150°C, 300°F or Gas Mark 2. Remove bouquet garni, add quartered mushrooms and cook for 15 minutes more.
CHOCOLATE NOUGAT MOUSSE …and one for the ladies! 295g (10.4oz) Toblerone, broken into pieces, reserving one piece for decoration 6 tablespoons boiling water 275ml (10 fl oz) crème fraîche 2 egg whites Place the chocolate and the boiling water in a heatproof bowl suspended over a saucepan of barely simmering water and allow the chocolate to melt slowly. Remove from the heat, cool until it thickens and then fold in the crème fraîche. Whisk the egg whites until stiff peaks form and fold into the mixture. Chill in the fridge for at least 6 hours. Cooking up a Storm for Sam by Sandra McKenna Sam McMahon was born on 16th February, 2001 at The National Maternity Hospital in Dublin. He arrived 12 days early and barely tipped the scales at 5 pounds. He lives in Knocklyon with his Mum (Caroline), Dad (Brian) and older brother Ben.
Determined to raise the standards of home cooking, Neven Maguire will demonstrate how to transfer his expertise from the restaurant to the domestic kitchen, offering expert advice to both the novice and experienced cook.
On 14th November, 2008 he was diagnosed with Friedreich’s Ataxia (FA). Although there were many small hints that there was something different about Sam, it took many years of doctors’ visits and tests to establish that he has FA.

Friedreich’s Ataxia (FA) is a debilitating, life-shortening, degenerative neuro-muscular disorder. Onset of symptoms can vary from childhood to adulthood and can include loss of coordination (ataxia) in the arms and legs; energy deprivation and muscle loss; vision impairment, hearing loss, slurred speech; aggressive scoliosis (curvature of the spine); diabetes mellitus; and a serious heart condition.
Sam is bright, out-going and fun to be with. He loves reading, playing PS3 and watching TV. He likes to swim and wants to learn to play the drums. His favourite colour is red. While the mental capabilities of people with FA remain completely intact, the progressive loss of coordination and muscle strength caused by FA leads to motor incapacitation and the full-time use of a wheelchair. There is currently no treatment or cure for it. The Sam McMahon Trust and Friedreich’s Ataxia Research Alliance Charity are to benefit from a cookery demonstration by award-winning chef and restaurateur Neven Maguire in the D4 Berkeley Hotel on 8th March 2010. Round The Garden in February by Tom Percy February is a month for preparation in the garden, so here are some top tips to get your garden ready for the Spring. Prepare Check the potato bed for any leftover potatoes to avoid passing on diseases or blight. Apply compost or rotted manure to the new potato bed and fork in. Roses will be looking for manure or (if you're lucky enough to find some) cow dung. This is the month for rock gardens to be dressed with gritty loam. Look out for any plants that have been lifted by frost and firm them in. While doing this, divide and replant any specimens you'd like more of in the rockery.
You can plant any roses this month, but do remember that if you do so, you will need to prune them after about four weeks. Seeds, such as antirrhinums and verbena should be sown and given gentle heat, but balsam, begonias, cannas, cyclamen, fuchsia, lobelia and petunias should be sown directly from the packet to the soil. Prune February is a good month to prune gooseberries and currants. With currants you should shorten the side shoots down to one bud and remove the old stems from the centre of the bush.
Now is the time to check that bulbs haven't been attacked by mice or snails. Plant Broad beans and early peas can be sown in February to give a May and June harvest. Shallots can also be planted now, although they will do better if covered with a cloche.

Kung Hei Fat Choi - Happy (Chinese) New Year by Jennifer Greene One of the few highlights in the dull winter months is Valentine’s Day on the 14th February. Well in 2010 it’s a double celebration because the Chinese New Year - 2010 is the year of the tiger - falls on the same day.
The Chinese believe that at this time of year they should put the past behind them. Before New Year’s Eve they pay off debts, clean their houses from top to bottom, paint doors and windows and get their hair cut. All these activities symbolise new beginnings.
The origin of Chinese New Year is centuries old and gains significance because of several myths and traditions. Ancient Chinese New Year is a reflection on how the people behaved and what they believed in the most.
They decorate their homes with flowers and paper decorations in red and gold to represent power, wealth and happiness. They also exchange gifts and give children small red envelopes containing ‘lucky money’.
Although its exact origins are lost in history, popular legend states that the beginning of Chinese New Year started with the fight against a mythical beast called the Xin Nian (which means ‘year’ in Chinese). Xin Nian would come on the first day of New Year to devour livestock, crops, and even villagers, especially children. To protect themselves, the villagers would put food in front of their doors at the beginning of every year. It was believed that after the Xin Nian ate the food they prepared, the attacks would stop.
The biggest event of any Chinese New Year's Eve is the dinner every family will have, which has as much significance as Christmas dinner in the west. Traditional foods are fish for abundance; chicken for prosperity; long noodles to represent long life; seaweed for wealth and bamboo shoots which in the Chinese language sound like the words ‘wishing everything be well'.
On one occasion, people saw that the Xin Nian was scared away by a little child wearing red. The villagers then understood that the Xin Nian was afraid of the colour red. Hence, every time when the New Year was about to come, the villagers would hang red lanterns and red spring scrolls on windows and doors. However this is just one rendition of the legend – another states that an old man who was an immortal god advised the villages to hang red decorations in their windows and set off fire crackers.

However in modern practice, many households hold parties and even hold a countdown to the new lunar year. The ancient Chinese used a lunar calendar so the actual date of the New Year varies. Each year is assigned the name of an animal. There are twelve animals; rat, ox, tiger, rabbit, dragon, snake, horse, sheep, monkey, rooster, dog and boar.

One of the best and easiest ways to find out what motivates you (if you don’t already know) is to do some brainstorming. Choose a quiet place where you are not likely to be disturbed. Give yourself a few minutes, about ten to fifteen, to think about motivation and what difference it would make to your life if you were motivated. Get a large sheet of paper and start writing down anything that comes into your mind. You will be surprised at what you will discover. Once you know what it is that motivates you then you can plan how to stay motivated. In order to stay motivated you will need to have a plan of action, so the first step is to set about developing a plan. Put a time frame on it and set some goals and targets for yourself, so that you can monitor how you are doing. Remember, nothing happens until you take some action. So, if you want to grow your Facebook fan base, move beyond simple Wall posts and add photos, videos, links and other interesting and engaging content. 6. Customised News Feed Facebook’s news feed means that just because someone is your fan does not mean he will see your Wall posts or status updates. Instead, the default news feed is comprised of content that Facebook thinks you’ll like, based on your interactions with content from that author in the past, and interactions by your friends with that content. So test content type regularly, and pay attention to what works best for your brand. 7. Real-time Search Changes the Game Facebook is now making most content available publicly, unless you tell them not to via your privacy settings. This means that a negative status update about your brand might now show up on the first page of Google search results for your company name (at least temporarily). You need to be on top of realtime search. Today. Some brands are concentrating all their efforts and placing all their eggs in the one Facebook basket. Given the facts above, that can be justified. ABOUT SHROVE TUESDAY
Flip Out on 16th February by Jennifer Greene PANCAKES – don’t you just love ‘em? Crispy, sweet or savoury, thick or thin, the very thought makes your mouth water. Pancakes are eaten all-year round, but one date in the Christian calendar is always associated with this delicacy.
celebrations are associated with New Orleans or Rio de Janeiro. This year’s processions in Louisiana will be especially poignant as the first Mardi Gras since the devastation of Hurricane Katrina. In England, no Shrove Tuesday would be complete without pancake tossing and racing, the origins of which go back to the 15th century. A housewife in Olney, Buckinghamshire is reputed to have lost track of time whilst pre-paring pancakes on Shrove Tuesday 1445. Summoned by the bell’s tolling, she raced to church, clutching her frying pan and wearing her apron. The village is now world famous for its annual pancake races.
‘Pancake Day,’ or Shrove Tuesday as it is officially known is a tradition that has been observed for a 1000 years or more. So what’s it all about? Shrove Tuesday derives from the Christian practice of shriving whereby a believer receives absolution for confessing their sins. It's not only a day of penitence, but also a great day of celebration and merry-making. It was party time – it still is in many parts of the world! Shrove Tuesday was the last chance to feast before Ash Wednesday signalled the first day of Lent.
There are many traditions and superstitions attached to Shrove Tuesday. It’s significance has changed with time but religious festival or not, one constant remains – it’s a great excuse to pick up the frying pan and serve up a feast. So, get out the eggs and have a cracking time!
Traditionally, Lent is a time of abstinence, of giving things up. So Shrove Tuesday is a time to indulge, using up foods that aren't allowed in Lent. In the past, observers of Lent might refrain from eating a whole range of foods such as meat, fish, fats, eggs, cheese and milk. Families ‘celebrated’ the arrival of Lent with a feast that consumed all supplies that wouldn’t last the forty days of Lent. Pancakes became associated with this as they are a simple dish which uses up all the milk, eggs and fats with just the addition of flour – and could be served in many different ways. Like Easter, Shrove or Pancake Tuesday is a moveable feast. It usually falls in late February, but it is always 47 days before Easter Sunday. This year it falls on 16th February and will be recognised throughout the world. In Italy, it is called Carnivale – the origins of our word carnival – coming from the Latin know the festival as Fasnacht or ‘night of the fast.’ Perhaps the most famous alternative is the French Mardi Gras, which translates as ‘Fat (or grease) Tuesday.’ The most famous Mardi Gras 42 | ABOUT KNOCKLYON
