Shepherd's Pie with Spiced Parsnip Mash The weather is getting colder, but rub your hands with glee, not cold and this great seasonal recipe by Nigel Slater from his Taste of My Life series. Ingredients For the topping 900g/2lbs large parsnips, peeled and cut into large chunks 2 onions, sliced 50g/2oz butter large pinch ground cumin 1 tbsp freshly ground coriander seeds 1 tbsp garam masala about 50g/2oz butter salt and freshly ground black pepper For the filling

6. Add the sliced mushrooms and cook for a further five minutes, then stir in the minced meat. The meat must brown a little here and there, so do not stir it too often. Leave to cook for five minutes or so, breaking it up as necessary. 7. Add the flour and the tomato purée. Continue to cook, stirring regularly, for three or four minutes tomato purée is bitter if not thoroughly cooked. 8. Pour on the hot stock, add a bay leaf and a sprig of thyme and bring to the boil. 9. Turn down the heat and leave to simmer very gently for 25-30 minutes. 10. Preheat the oven to 190C/375F/Gas 5. 11. Season the filling with salt, Worcestershire sauce and a few grinds of black pepper - be generous. 12. Scoop the mixture into a large baking dish and spoon dollops of mashed parsnip over the top. Bake for about 25 minutes until the topping is golden brown.

2 leeks or onions, chopped 1 carrot, diced 3 tbsp dripping or butter 4 Italian brown mushrooms, sliced 450g/1lb cooked roast lamb, minced, or raw lamb mince 1 tbsp flour 1 tbsp tomato purée 250ml/9oz hot lamb or chicken stock 1 bay leaf 1 sprig thyme 1 tbsp Worcestershire sauce Method 1. Simmer the parsnips in salted water until tender about fifteen to twenty minutes. 2. While they are cooking, fry the onions in the butter over a moderate heat until soft and translucent. 3. Stir in the spices and continue cooking for a further two minutes, until fragrant. 4. Drain the parsnips. Mash them with a potato masher, stirring in the butter, salt and freshly ground black pepper, then the sliced onions. Set aside. 5. In a large pan, cook the chopped leeks (or onions) and the diced carrot with the dripping or butter, until they are meltingly soft and golden - don't worry if they have caught slightly at the edges. 10 | ABOUT RATHFARNHAM

Le Beaujolais Nouveau Est Arrivé! by Jennifer Greene At the stroke of midnight on the third Thursday of each November, millions of cases of Beaujolais Nouveau begin their journey through a sleeping France for immediate shipment to all parts of the world. Banners proclaim the good news: Le Beaujolais Nouveau est arrivé! One of the most frivolous and animated rituals in the wine world has begun. But what is the Beaujolais Nouveau race, and where did it begin? In the Middle Ages, many wines turned to vinegar before they could be drunk. Ancient wine producers, wishing to avoid leaving a sour taste in their customers' mouths, discovered that the Gamay grape of the Beaujolais region was drinkable just weeks after harvest. Realising they were on to a good thing, clever bistro owners began shipping wagons-full of still-fermenting young Beaujolais by horse-drawn cart and then barge along the river Saône until it reached the place of consumption, in this case the bistros of Lyon and the surrounding area, and sometimes even as far as Paris. This commercial practice, somewhat less developed than it is today, continued with a few ups and downs until the start of the Second World War. Although the government put in place regulations and restrictions in 1938 to control the trade, in 1951 the region's governing body revoked these regulations and a preferential system for the early release of this wine was set up. The release date was set at 15th November each year. By this time, what had started as a local tradition had gained so much popularity that an international market

had developed. Vintners then started to race to see whose Beaujolais Nouveau would be the first to fill the bars and bistros of the world awaiting the new vintage. Over the years they have employed all methods of transport as part of the fun from trucks to trains and jets to hot air balloons. In 1985, the date was changed, this time to the third Thursday of November tying it to a weekend and making the celebration complete. But wherever the new Beaujolais went, importers had to agree not to sell it before midnight on the third Thursday of November. By the time this early release is over, over 65 million bottles, nearly half of the region's total annual production, will be distributed and drunk around the world. It is celebrated throughout Europe - both east and west, the US, Australia and more recently in the Far Eastern markets. Apart from the fanfare, what makes Beaujolais Nouveau so popular? Simply put, Beaujolais Nouveau is as about as close to white wine as a red wine can get. Due to the way it is made - the must is pressed early after only three daysthe astringent tannins normally found in red wines, aren't there, leaving an easy to drink, fruity wine which is best served chilled. This is definitely not the sort of wine to spend time sniffing and swirling or to age until it improves - it won't. It is relatively low alcohol compared to some of the strong New World wines that are popular these days, and this makes it highly ‘quaffable'. Beaujolais Nouveau day this year is 19th November.

Civil Partnership – A New Beginning by Brendan Dillion, Dillon Solicitors The purpose of the Civil Partnerships Bill 2009 is to establish a statutory civil partnership registration scheme for same-sex couples together with an extensive package of rights, obligations and protections for those who register under the scheme. The Bill also establishes a redress scheme for opposite-sex and same-sex couples, cohabiting couples who are not married or registered as civil partners. The Civil Partnerships Bill will have a significant impact on many areas of the law including family, probate and property law. The following are some of the key provisions of the Bill: Civil Partners • A statutory civil partnership registration scheme for same-sex couples. • The introduction of the concept of a ‘shared home’. Where civil partners share a home one partner will not be able to sell or mortgage the property without the prior written consent of the other civil partner. • A civil partner will have the legal right to claim from the estate of a deceased partner irrespective of whether or not their partner had made a will. • Pension schemes which include a spousal benefit will be deemed to also apply to civil partners.

Round The Garden in November by Tom Percy This month is the prime time for planting deciduous trees and shrubs if the weather is fairly mild. If you have ordered new trees and shrubs from a garden centre or nursery, dig out a trench so they can be heeled in on arrival if they can't be put in their final positions immediately due to bad weather. Perennials need to be cut down to around 40cm above ground height and then right down in March. Shrubs such as Lavatera, Leycesteria and Buddleia should also be cut down to one third of their height this month. If they are left too tall, winter winds will break their branches, which will let in damp and diseases. This could seriously damage or even kill your shrub. By removing one third of the height, the risk is far less and the plant still has a canopy for protection. Another third can be removed in March when the threat of severe, long-term frosty weather is over.

The lawn can have its final cut towards the end of this month, if the weather is mild, although ensure that the cut height on the lawnmower is set at maximum, as the ground underneath will now be very damp. Avoid walking on the grass when it's frosty (as doing so will kill it) and sweep any remaining leaves from the lawn to stop them blocking the light and air. At the end of the month, drain down the petrol from your lawnmower, clean it thoroughly and consider getting it professionally serviced to prolong its life.

Have a Stylish Christmas! by Janice Coyne, Style Consultant With the festive season approaching, many of us are watching the pennies this year as never before, I was thinking about the many ways to update an existing outfit with the use of accessories. If your budget doesn’t allow for a completely new look, then take some time and consider how to update what you have with a few additional well chosen pieces. What will work with what you already have? This will depend on whether your outfit is already detailed or plain, but if we assume that you have the ubiquitous “little black dress” in the wardrobe then the options are many and varied. For “little black dress” think of any combination of dark separates and consider the following options: Adding a Belt – would your dress/separates work with a belt? If you have the hourglass or triangular body shape then your waist is a great asset and drawing attention to it with a gorgeous belt could be the answer. Remember too that adding a belt where you don’t naturally have a waist can give the illusion of one, especially if worn slightly lower than the natural waistline. For those that are ‘straight’, belts are designed to be worn on the waist and those with a slight curve are designed to be worn on the hips with the belt, sitting slightly higher at the back and lower at the front. This allows the buckle or fastening to lie flat at the front.

Add a splash of colour with either jewellery or scarves can help brighten your complexion. As we mature, wearing black near the face can sometimes seem harsh. Brightening the neck area with added colour is easy and very effective. Footwear and Handbags. Herbalist and Naturopath by Jennifer Greene Herbal medicine, also called botanical medicine, refers to the use of a plant's seeds, berries, roots, leaves, bark, or flowers for medicinal purposes. Recently, the World Health Organization estimated that 80% of people worldwide rely on herbal medicines for some aspect of their primary health care. Rathfarnham resident, John Maher, is President of the Irish Register of Herbalists and has had a lifelong interest it Herbalism, Naturopathy and its benefits. He explained “My interest in herbs goes back to my childhood summers spent in Kerry with aunts who had remedies for all sorts of ailments. During a bad bout of colitis about six years ago, it was treatment with herbs and natural therapies which gave me the best results”. “My role as an Herbalist/Naturopath is to offer people a natural alternative of medicine to fit the health needs of the individual”.

Is Herbal Medicine Safe? Yes. Most of us are familiar with herbal teas such as camomile, dandelion, nettle etc. and this is probably the most popular way to take herbs. Tinctures are now commonly available from health food shops. These refer to liquid alcohol extracts of plants, i.e. Echinacea drops. Most herbs are quite safe to take for all ages. During an herbal consultation, it is important that the patient’s full medical history is recorded before herbal formulae are prescribed, as possible herb/drug interactions need to be considered. As with any health care system it is important to understand, especially with chronic conditions that lasting results take time, commitment and a positive outlook. In saying that a lot of people taking herbal medication and implementing simple diet and life style changes, in the short term do see a decrease in stress levels, general increase to energy levels, improvement in sleep, feel more positive, are calmer and more alert.

What kind of conditions can Herbal Medicine treat? Herbs are excellent for most acute conditions, for example respiratory - coughs, colds, sinusitis, digestive complaints - constipation, reflux, indigestion, insomnia, stress etc. but work equally well for long term complaints such as IBS, colitis, menstrual imbalances, arthritis, depression etc. (for more chronic conditions, longer treatment may be required). What can you expect from a consultation? The first consultation takes approximately 1 to 1½ hours as this allows me to build a complete picture of the individual’s symptoms and general state of health. Many aspects of their life will be asked about, such as diet, symptoms, sleep patterns, moods, current and past medication, and much more. Additional tools I use are tongue/pulse diagnosis and Iridology (the study of the coloured part of eye). Iridology, as a diagnostic tool, provides information on the patient’s constitution, inherited deficiencies, possible future health issues and also their strengths and adaptation mechanisms.
