COOL SEASON VEGETABLES A fresh start for the new year

The first months of a new year are full of promise for gardens and gardeners. A variety of cool-season vegetable seedlings (also called starts) are available at nurseries. Now is the time to transplant them into your garden so they can mature before it gets warmer. Cool season vegetables include beets, broccoli, Brussels sprouts, cabbage, carrots, cauliflower, endive, kale, kohlrabi, lettuce, peas, white potatoes, radishes, rutabagas, and turnips.

Since weather can be unpredictable this time of year, watch out for frost, hail, or heavy rainfall. An unexpected hard freeze or hail can ruin young plants, so keep some floating row covers or old sheets on hand to cover plants and provide necessary protection in case temperatures dip below coldtolerance guidelines.

In the case of a heavy rainfall, our drought conditions combined with substantial downpours may contribute to flooding conditions. When the ground is dry and does not absorb water quickly, runoff and flooding can be a serious problem. Check containers and raised beds to be sure that they are draining well. Avoid compacting the soil by not walking on muddy ground. Stay off squishy spots until they dry out and don’t dig or till waterlogged soil. As the ground becomes saturated, rake back some of the mulch to give the soil a chance to dry out.

It is no longer recommended to till your soil. In fact, scientists have proven that it is best to mimic Mother Nature by adding organic matter (compost) to the surface of garden beds. You can buy compost by the bag or create your own from kitchen and garden scraps. Spread a thick, even layer of two or more inches of compost over your garden bed soil without disturbing it. Top with a layer of mulch (wood chips, straw, grass clippings, or shredded leaves) to discourage weeds and improve moisture retention. One of the most rewarding parts of growing your own vegetables is how good they taste fresh from the garden. When purchasing vegetable seeds or transplants, you’ll notice each variety has a stated “days to maturity” listed on the package or plant label. It is best to use this number as an estimate because there are many variables that can alter that number such as too little or too much water, temperature, and pests. The only fail-safe way to guarantee harvesting vegetables at the optimal time is using the taste test. If you harvest your vegetables just before they reach full maturity, you are certain to have the maximum flavor and the best texture. An application of fertilizer rich in nitrogen, which too often

is in short supply in San Diego soils, will help your plants thrive. Nitrogen content is indicated by the first of the three numbers on a fertilizer bag. Pick one with more nitrogen "N" (the first number), than phosphorus "P" (the second number), or potassium "K" (the third number). Scatter fertilizer granules lightly and evenly at the edge of the plant’s root ball or out to where the foliage ends, scratch it into the ground taking care not to harm feeder roots, and then water lightly if soil is dry. It’s tempting to fertilize when rain is forecast, but heavy showers could carry the granules away in runoff. Another important tactic is to monitor irrigation and adjust it to suit the weather. Use the Be Waterwise calculator (bewaterwise. com/calculator.html) to find out how long your sprinklers should run. The changing seasons also can shift shadows from places that earlier basked in the sun, reducing irrigation needs. Check your system for leaks every few months and, if your timer has a rain delay feature, use it whenever precipitation is forecast. ✲ Linda Morse is a San Diego Master Gardener. Some people simply have a gift for choosing the right gift. It certainly comes naturally to Lynn Silverthorn, who opened Lavender Home & Garden Shop in Del Mar’s Flower Hill Promenade early last year. She wanted to create a place where people could find just the right gift for a friend, neighbor, or loved one. The enchanting shop is filled with unique, thoughtful items. “When selecting my merchandise, I simply buy what I, my sisters, or my mother would like,” Lynn says. “I look for items that I don’t see everywhere and things that make us feel nostalgic. I definitely keep the price point in mind because I want everyone to feel like they can shop here and find something without spending more than they want to.”

Customers often say they felt drawn into the shop by the delicious scent wafting at the door. “I firmly believe in giving our customers an overall shopping experience,” Lynn says. “Although we’re working on adding an online store, these products are best appreciated in person. Color was the chief symbol of expression for post-Impressionist artist, Vincent van Gogh, who created almost 900 paintings in less than ten years. Although his illustrious career was brief and he died at the age of 37, he is inarguably one of the world’s most famous artists. This winter, San Diegans can celebrate more than 300 of his greatest works freed from their frames, when they visit Beyond van Gogh: The Immersive Experience at Wyland Center at Del Mar Fairgrounds. In San Diego for a limited engagement from January 14 to March 6, this unique sensory multimedia experience was created by French-Canadian Creative Director Mathieu St. Arnaud and his team at Normal Studio in Montreal. Working in tandem with Art Historian Fanny Curtat and the Paquin Entertainment Group, they created an exhilarating way to tell van Gogh’s story using cutting-edge projection technology. The journey, which takes about an hour to experience, brings to life the natural elements in van Gogh’s paintings, making them interactive. Guests are transported into van Gogh’s world through an exclusively designed space comprised of three areas that segue fluidly into each other. The Education Room leads into the Waterfall Room which flows into the Immersive Experience Room. Freed from their frames, van Gogh’s masterpieces appear on projection-swathed walls inviting guests to fully immerse themselves into the incredible detail of his work and be enveloped in his ever-shifting, swirling, and colorful flowers, cafés, and stunning landscapes. Set to a symphonic score and using van Gogh’s own words, thoughts, and dreams to drive the experience as a narrative, the art comes to life by appearing and disappearing, and flowing across multiple surfaces. The minutia of details titillates the senses. Stars twinkle in “Starry Night,” petals drop from branches in “Almond Blossoms,” waves ripple in “Starry Night Over the Rhône,” and eyes in the portraits offer an occasional wink. The canvas walls are wrapped in light, color, and shapes that swirl, dance, and refocus into his popular subjects. “This distinct and unique multimedia artistic adventure is deeply resonating with audiences. Beyond van Gogh: The Immersive Experience encompasses a refreshing new twist [on the museum]. It’s unlike anything art lovers have seen before. Did you know there’s an inexpensive way to stay in shape, boost your mood, and even reduce the appearance of fine lines and wrinkles? Better yet, it’s as simple as stepping outside.

Studies have proven that regular low-intensity workouts, like walking, can help a person reduce belly fat and lower the risk of obesity, which, can lead to a positive domino effect for our health. In fact, a study published in the journal Arteriosclerosis, Thrombosis, and Vascular Biology demonstrated that walking reduces the risk of hypertension, diabetes, coronary heart disease, high cholesterol levels, and more. Walking is also a much easier cardiovascular activity than running for people with back, knee, and joint issues. In addition to the physical perks of regular walking, you may get a mood boost simply by taking a stroll around your neighborhood. A study published in the Primary Care Companion to the Journal of Clinical Psychiatry showed that 30 minutes of brisk walking could reduce anxiety and depression. When walking, your brain releases “happy chemicals,” like

serotonin and dopamine. Interestingly, walking outdoors increases the amount of these chemicals more so than indoor exercise. This may have to do with the amount of vitamin D you’re exposed to while outside. Walking regularly also has another surprising perk: younger looking skin. Regular walkers are reported to have increased collagen production, which helps keep skin smooth and elastic. It also appears that the faster a person walks, the better. Researchers found that walking at an average pace compared to a slow pace resulted in a 20 percent reduced risk of overall death, and those who walked at a pace of four or more miles an hour reduced their risk by 24 percent. To reap all these benefits, experts recommend 30 minutes of brisk walking at least three days a week. This may sound like a lot if you’re not already a regular walker. But it’s worth a try and the only supplies you need are sunscreen, water, and a great pair of shoes. Conscious Fashion Weaving sustainability into our wardrobes BY ALEXANDRA EWART

Welcome to the new world, where shopping for clothes has become a more mindful experience. Today, when we step out of the dressing room in a pair of jeans to see what the salesperson thinks, it’s not unusual to hear more than “you look fabulous” and “we also have them in red.” Thanks to the emergence of many initiatives by fashion activists to help make our planet a better and healthier place, we can often learn about the fabric the jeans are made of, where they are made, and the principles that the brand was founded on.

There are several offshoots to the sustainable fashion movement, including ethical fashion, minimalist fashion, zero-waste fashion, and slow fashion. Many of these efforts overlap and are often oversimplified, because they involve complex concepts that are new to the average consumer and not everyone entirely agrees on what they mean. In this article, we use “conscious fashion” as an overarching term for all efforts to empower consumers to make informed, thoughtful choices that align with their values. In many ways, conscious fashion is pushback against fast fashion of the previous few decades. Fast fashion manufacturers rely on consumers to endlessly buy new garments and they produce them at an accelerated rate to meet demand, often using inexpensive synthetic materials that are quick to produce. Unfortunately, these fabrics take decades or more to biodegrade. The United States Environmental Protection Agency (EPA) estimates that Americans throw away 17 million tons of textile waste each year. Conscious fashion encourages us as consumers to slow down and think about what we’re buying and whether it supports our own personal values. Is it eco-friendly? Was it made ethically? Is it made to last? I was curious about how San Diego–area business owners feel about conscious fashion and visited a handful of fine clothing boutiques to ask. I was impressed that the owner of every single shop I visited was enthusiastic and had a lot to say about the subject.

At Cedros Soles in Solana Beach, owner Stephanie Stock spends a good deal of time researching brands to find garments with sustainable properties. She discovered that brands like AG’s Jeans of Tomorrow (100 percent biodegradable denim fabrics made from a blend of organic cotton, Tencel, and cottonized hemp) and Ilse Jacobsen slip-on shoes (made with recycled water bottles) appeal to her customers when they learn how the products are made. Stephanie is always finding new recycled materials (such as pineapple pulp and fungi for leather-like substances) that are being used to create beautiful, environmentally friendly garments. Cedros Soles also offers customers sustainability with several outstanding brands that use the finest natural fibers for garments made to last.

Eda Albayrak opened Interlux six months ago. Eda reports that most of her customers are seeking sustainable, eco-friendly products, and they express an interest in how her stunning garments are created. Everything she carries is made of the finest silk, cotton, or linen. One of her popular lines is dut.project, a slow fashion company that produces clothing and household products from natural and highquality cotton fabrics. Colors are achieved with the use of a certified low impact dye

Roya Parviz, the owner of Satori Designs in Solana Beach, has carried garments and accessories by Desigual for more than seven years. With high standards for sustainability, Desigual launched a set of initiatives with its Love the World campaign and plans to manufacture 50 percent sustainable fibers by 2023, reduce its carbon footprint by 2025, and become carbon neutral by 2050. Desigual’s vegan leather handbags as well as faux fur items by several designers are popular with Satori Designs’ customers. “As much as possible, we carry brands that align with our desire to protect the earth,” Roya says. “People in our area are very conscientious about this.”

that does not use toxic chemicals. Eda says that her customers prefer this type of product because they appreciate the feel of these fabrics against their skin. At Sweetpea Children’s Shop in Del Mar’s Flower Hill Promenade, Owner Leanne Wynder has found that many expectant mothers and mothers of newborns insist on brands that are either organic, 100 percent cotton, or made from recycled materials. Leanne thinks this is because today’s moms want to do what’s best for their babies and the environment. One of the more popular brands they carry is Molo, a Global Organic Textile Standard (GOTS)–certified organic company (the world’s most extensive, far-reaching certification program), which evaluates all aspects of the value chain from harvest to the final product and the company’s business practices. Alex and William Rhett, who own Del Mar’s beloved children’s store, Sandcastle Tales, are opening Caballito Del Mar,

a new boutique dedicated to conscious clothing, slow fashion for children. After three years of sourcing eco-friendly, sustainable brands, they have built a team that cares for the environment and the social impact of the clothing industry. Caballito Del Mar caters to conscious consumers who care about the materials and the processes used for making the clothes they wear and how these affect the environment and the people who make the clothing. Caballito Del Mar features sustainable children’s clothing lines made from resources such as organic cotton fiber and reclaimed and recycled materials. Conscious fashion is happening all around us, but for it to become the norm, we must all become more mindful of what we choose to wear and why. It’s not just about how we look, but how we feel about our planet and the principles we support. Simply put, it is just as important to feel amazing as it is to look amazing. ✲

good reason! These rolling surf, long-stretching beaches with golden sunsets are awe-inspiring. But close your eyes and listen. San Diego County’s backcountry, just 50 miles northeast of downtown San Diego, is calling. Set in 4,600 acres of gently rolling hills dotted with oak trees, fields of native grasses and wildflowers, and hawks soaring overhead, the Santa Ysabel Preserves is a fabulous place to start. Besides trails for hiking, cycling, and horseback riding, there is the fascinating family-friendly Santa Ysabel Nature Center, complete with an engaging outdoor playground to enjoy. The headwaters of the San Diego and San Dieguito rivers lie within the preserves, and there is an array of wildlife, including deer, wild turkeys, red fox, and even an occasional horned lizard and mountain lion. You’ll find a few picnic areas, markets, and delis along our route, as well as a few restaurants nearby in the town of Julian. Plan to start your day with a hike. There are more than 15 miles of trails through both the East and West Preserves including two loops that traverse through unique habitats. Each trail starts at one of three staging areas (trailheads), so before you head out, go online to decide which trail you’d like to take so you can set your GPS for the proper trailhead. Not up for exerting yourself too much? Plan to follow a short trail upward from the Santa Ysabel Nature Center to enjoy exhilarating vista views. Regardless of the trail you choose, be sure to bring plenty of water, dress in layers, and wear sunscreen and appropriate footwear. The Santa Ysabel Nature Center’s beautiful, brand-new 6,000-square-foot LEED Gold and Zero Net Energy facility features interactive exhibits and displays and a large community room for special meetings and events. Although it’s geared toward the youngest nature enthusiasts, the center is a great educational resource for all ages. Exhibits teach us about the history of the area, the importance of watersheds and dark skies, how to identify monarch butterflies and the Preserve’s rare Engelmann oaks, and much more. Plan to spend about 45 minutes to fully appreciate all the displays and activities. More fun awaits outdoors at the play area where most of the equipment resembles hollowed tree trunks and branches. When appetites stir, the answer lies less than a minute away, where CA-78 and CA-79 intersect. Open every day but Tuesday, Farmhouse 78 Country Eatery serves country-style breakfasts until 11 followed by lunch and supper fare. If you want to picnic, most of the items on Farmhouse 78’s menu are available to-go, or you can

Also, if you’re planning on taking home a Julian pie or two, the Santa Ysabel location for The Julian Pie Company is located here. The line tends to be shorter at this location than the lines you may find later in the town of Julian. With picnic provisions gathered, continue your journey on CA-78 East. Inaja Memorial Park is an excellent place to stop with a dedicated picnic area and beautiful lookout point. At an elevation of 3,440 feet, the park provides clear views of the San Diego River canyon, Palomar, and the Volcan Mountains. To fully appreciate the views, take the short loop trail. Just about four miles past Inaja Memorial Park, you’ll reach the sign for Wynola Road. Turn left and follow this enchanting, winding mountain road. At this point of your journey, you will know for certain that you are in backcountry. It’s not uncommon to drive all the way to the outskirts of Julian without seeing another vehicle. Before you know it, you’ve reached the charming mountain town of Julian. If the cute shops and galleries on Main Street tempt you to rejoin civilization for an hour or more, go ahead. In fact, the Julian Visitor and Nature Store is home to the California Wolf Center, where you can learn about wolves and wolf conservation. On weekdays, if you make an advance reservation online at reservations@californiawolfcenter.org, you can also take a public or private tour of the conservation’s wolf habitat located about five miles from downtown Julian. When you’re ready to head for home, follow 79 South. Pretty Lake Cuyamaca offers a couple of easy-access picnic areas in case you want to pause, nibble on something, and enjoy the scenery. A little farther down the road in Descanso, watch for Pam’s Place, where you can buy wildflower honey made right across the street, jams made from old family recipes, and fruits from neighboring orchards and fields. Stop and gather some tasty reminders of the glorious day you spent connecting with nature in San Diego’s stunning backcountry. ✲

We know how harmful ultraviolet light can be to our skin, but did you know that ultraviolet light and some wavelengths of blue light can also harm our eyes and possibly lead to vision loss? Our eyes require daily protection from the hazardous effects of both visible and non-visible wavelengths of light, particularly UV light and certain wavelengths of high-energy blue-violet light.

Ultraviolet (UV) light is a type of electromagnetic radiation that originates primarily from the sun but can be found in other artificial light sources such as black lights, tanning booths, and some types of lasers. We can see our skin’s reaction to UV exposure when it tans or reddens. With overexposure, freckles, sunspots, and even skin cancer can develop. Although it’s harder to detect, UV exposure can also be dangerous to the eyes. Excessive exposure to UV light without proper protection can lead to cataracts. It can also cause a sunburn on the cornea of the eye known as photokeratitis, which can lead to temporary blindness. High energy visible (HEV) blue light wavelengths are part of the electromagnetic visible light spectrum emitted by the sun and artificial light sources such as light-emitting diodes (LEDs), computers and smartphones, and fluorescent light bulbs. Although some types of blue light can be beneficial and help regulate our bodies’ sleep-wake cycles, recent studies have shown that when high-energy blue light passes from the cornea (front of the eye) through the lens to the retina (back of the eye), it can have a harmful impact on the eyes. HEV blue light is a risk factor for retinal damage and age-related macular degeneration, a deterioration of the part of the retina responsible for maintaining fine detail, color, and central vision. “The best UV protection for your eyes is 100 percent UVA and UVB protection,” says David Dumangas-Klehr, the owner of Be Seen Optics in La Jolla. “You want that for all

your sunglasses because when you wear sunglasses, your pupils open very wide allowing UVA and UVB radiation in. All sunglasses should have that protection, but you can also get it in your prescription glasses as well. Some prescription lenses will automatically have it. It’s a byproduct of the material that is used.” When it comes to polarized lenses, don’t assume that yours offer UV protection. “Polarized lenses will block surface glare,” David explains. “For example, when you are on the water and rays from the sun bounce off the water, polarized lenses prevent the rays from blinding you and make everything nice and clear. Be sure your polarized lenses have UV protection to protect your eyes from damage.” The only way to know if your sunglasses have proper UV coverage is to consult with an eye care professional. Be Seen Optics has a full scope, California-licensed optometrist on staff. The shop also features a machine that determines the percentage of UVA and UVB protection in a pair of glasses, and all the sunglasses they carry offer 100 percent UVA and UVB protection. One of the best ways to care for your eyes is to see an optometrist for annual exams. They look for signs of cataracts, macular degeneration, sun damage, skin and eye cancers, and other eye conditions affected by UV and blue light exposure. An optometrist can also prescribe lenses to optimize vision, digital device viewing, and sun protection. ✲

About her studio: What is the vibe like at Kim Kelly Fit? KK: I like to provide an environment that promotes community, fun, and accountability. Unlike typical crowded exercise classes, we focus on giving everyone the attention they deserve. My clients quickly become my friends and friends to each other. Together, they become inspired to be the best version of themselves. I love building a sense of community, and we have all kinds of fun special events and workshops to further strengthen our bodies and our bond. I am looking forward to hosting various wellness workshops at the studio this year. We are also bringing back popular events like Kim’s Tighten, Tone, and Toast class, where we finish with a champagne toast on Del Mar Plaza’s beautiful ocean deck, and Kim’s Beach Fit classes, where we start at the studio and finish at the beach. About her other efforts: Can you tell us about Kim’s Virtual Studio? KK: I started Kim’s Virtual Studio at kimkellyfit.com at the beginning of the pandemic. IF YOU’RE LONGING FOR A PLACE with quiet country roads, open spaces, and friendly smiles, set your GPS for Fairfield, California. Located in the Suisun Valley, about 45 minutes from both San Francisco and Sacramento and just 15 miles from Napa Valley, Fairfield isn’t exactly hidden—but it most certainly is an uncomplicated, uncongested, and unspoiled gem.

TOURING AND TASTING I first came across Fairfield a few years ago when I was doing research for a story on lesser-known wine regions near the Napa Valley. Gazing across the rolling vineyards from a lightly traveled country road, I muttered, “This must be what Napa was like in the 1960s.” My guide heard me and nodded heartily in agreement. Rustic and unpretentious, Suisun Valley offers a total of ten wineries and tasting rooms. Happily, they are easy to find—just off I-80 in Fairfield—and easy to navigate, thanks to the clear directional signs. The wines are also easy to like. Offering exciting diversity (the vineyards are reportedly growing 23 different wine grape varieties), the region is best known for Petite Sirah, Merlot, and Cabernet Sauvignon. Best yet, wines from the Suisun Valley tend to be at price points that are easier on the wallet than those you find in better known wine regions.

Fairfield is also home to plenty of family-owned farms that grow a bounty of produce. Farm stands are a common sight between April and November. During the remainder of the year, many farms have indoor shops offering the highest quality fruits and vegetables. Expect to find delicious olive oils, honeys, dried fruits, mixed nuts, homemade candies, and more.

WATERWAYS AND WILDLIFE There are miles upon miles of hiking and biking trails that facilitate the exploration of the rolling grasslands, oak forests, and pristine marshes in Fairfield’s backyard. The Suisun Marsh, measuring 116,000 acres, is the largest contiguous estuarine (brackish water) marsh remaining in the western United States. More than 220 bird, 45 mammal, 16 reptilian and amphibian, and 40 fish species stop, rest, and feed here. It is a major stopover for birds migrating along The Pacific Flyway, which stretches 10,000 miles from southern South America to the Arctic. Visitors can rent kayaks, canoes, and paddleboards to explore the marsh. For those who prefer to stay on dry land, there are plenty of dirt roads for biking and hiking trails to follow. In the heart of the Suisun Marsh, The California Fish and Wildlife’s Grizzly Island Wildlife Area provides habitat for more than 200 species of birds and is home to a variety of threatened or endangered wildlife and plants.

JELLYBEANS AND JEEPS Fairfield is family friendly. In fact, nearly everything—short of wine and beer tasting—is something you can do with the kids. The highlight attraction for many is the Jelly Belly Candy Company. The self-guided factory tour leads guests along an enclosed elevated walkway around the factory floor to watch the step-by-step process of making jellybeans. Video monitors placed along the route explain what is happening below. At the end of the 30- to 40-minute tour, there is an expansive shop with the full line of Jelly Belly candies for sale. There is also a special Chocolate Shoppe with a Fudge Bar where guests can sample a variety of fudge. The American Armory Museum features more than 60 vehicles on display, indoor and out. Many date back to World War II, the Korean War, and the Vietnam War. General George S. Patton’s 1943 Command Jeep is the fleet’s superstar. There are also several other rare tanks and vehicles. Visitors are invited to climb inside some of the larger vehicles for photos. ✲

{ CHEF PROFILE } The intimate and beautifully appointed grand dining chamber of Mystique Dining sets the perfect stage for the gourmet cuisine of Executive Chef Johnny Hornibrook. In fact, it is winning as much praise as the magic shows that follow his five-course presentations. It sounds like you have been perfecting your craft since you were a young boy. How important is “hands-on” learning to a chef? I think hands-on learning is very important. I think back to some of my training, and the tips and tricks my mentors taught me to become the most efficient chef I can be. To me, a hands-on approach is the act of constantly tasting and improving. When I do this daily, I never stop learning and perfecting my craft. Repetition and experience also give me the confidence I need to take risks and excel in the creation of my dishes. How do you describe your culinary style? My culinary style is derived from my culturally diverse ethnicity and expansive palate. For one thing, I eat everything. If there ever is something I don’t care to eat or cook, I find a way to modify the ingredients to better suit my taste. In a word, I’d call my culinary style “adaptive,” because I’m adaptive to location and resources. I grew up on California’s coast and Central Valley, so I feel connected to the land and the local ingredients available to us here. I also credit my palate to my extensive international travels where I’ve gained knowledge of other flavors and culinary styles. I love to prepare dishes with Asian, European, and Latin influences.

Can you describe the Mystique Dining culinary experience? The culinary experience at Mystique begins with the elegant atmosphere of the dining room itself. It was designed by the owner, Terry Commons, whose attention to detail is unmatched. The cuisine appeals to the senses through exquisite plate presentation and the intoxicating aromas and flavors of the food. The timing of the evening is meticulously planned so nothing is overlooked. The duration of the experience is 2.5 hours: 1 hour and 45 minutes to enjoy five seasonally rotating courses including an appetizer, soup or salad, palatecleansing sorbet, entrée, and dessert. I change up the entrée selections every 90 days to appeal to our returning guest and provide them with new selections to try each visit. We also feature a chef’s showcase every 60 days that allows me to offer something truly spectacular, unique, and different for our guests that want a little something more. You currently oversee three kitchens. How do you and your team continually produce five-star culinary excellence? Communication, honesty, integrity, and accountability are all standards we uphold to the highest degree. Feedback doesn’t go ignored. We have frequent team meetings and nightly staff dinners to keep morale strong. Team members also receive free tickets to our shows, so they know what it’s like to be a guest. Each team member plays a vital role in facilitating a world-class experience for our guests, who are all VIPs. ✲
