TEAM TEEN How to prepare yourself and your child for the stormy years of adolescence. By Lori Cohen

M

oody, independent, hairy… It’s confronting to see your children morph into nearly-adults, or the phase of their development termed ‘adolescence’. All cultures and societies acknowledge the transition from childhood to adulthood, but according to the World Health Organisation (WHO), putting a number to the phase isn’t ideal. That’s because the timing and speed of change differ in practically every child on the planet. However, it begins at around age 10 and ends around age 21. Some defining changes help tell the story.

THE START OF ALL THINGS NEW

Puberty. It’s technically the first sign that a child is entering adolescence. But it’s only one part of the picture. ‘Adolescence is also a time to develop

knowledge and skills, learn to manage emotions and relationships, and acquire attributes and abilities that will be important for enjoying the adolescent years and assuming adult roles,’ according to WHO.

such as decision-making and impulse control. Yup, adolescents often make poor or risky decisions, but you can literally blame it on their brains.

THE NEURODEVELOPMENTAL CHANGES

Fortunately, while the brain and body changes are happening, adolescents are also making substantial developmental leaps in their intellectual and emotional capacities. As they head into the later teens, reasoning skills and moral thinking start to win over the other impulses that rage within.

Driven by hormones, a storm of neuronal developments takes place during the adolescent years too. They alter the part of the brain that’s responsible for pleasure seeking and reward processing, emotional responses and sleep regulation. Hence, teens have earned the reputation for sleeping half the day away, mood swings and seeking instant gratification (shopping, gaming, alcohol… the list goes on). The pre-frontal cortex is also on fire. This part of the brain is responsible for executive functions

THE PSYCHOLOGICAL AND SOCIAL CHANGES

PREPARING FOR THE STORM

The natural tendency towards experimentation and risky behaviour can impact their health – now, and later in life. As a parent, you can arm your pre-teen with the knowledge to help them make better decisions. It

goes beyond educating them about the risks of pregnancy and STIs that come with sexual activity. Alcohol abuse, for example, can affect their brain development and impair their memory for life. Too much screen time can trigger addictive behaviour. Gail Friend, Neuro-Linguistic Programming Practitioner, and NLP Life Coach says that the most significant gift parents can give their children to cope with adolescence is to teach them how to ‘think’. And this goes right back to the toddler years

Other tactics to prepare you and your child, according to the American Academy of Child and Adolescent Psychiatry are: • Provide a stable, safe and loving home environment • Create an atmosphere of honesty, mutual trust and respect • Create a culture of open communication at family mealtimes • Allow age appropriate independence and assertiveness • Develop a relationship that encourages your child to talk to you • Teach responsibility for their belongings and yours • Teach basic responsibility for household chores • Teach the importance of accepting limits • Teach the importance of thinking before acting

(another rough patch) when you start to implement discipline. ‘You don’t want to create a pattern where your child learns to listen to your instructions; rather teach them how to think about their behaviour. You want to set up this approach early on because as teenagers, they’re vulnerable if they’ve only learned the skills to listen to instructions. Otherwise, when they hit adolescence, they start to listen to their friends rather than their parents,’ she says.

hen you were growing up, there were most probably no iPads, Facebook or Snapchat. Your worries were confined to falling from trees or burning the house down and not whether your identity might be stolen, or the possibility of a cyber bully attacking you. Today, you are responsible for raising a child whose life will revolve around digital technology and it becomes increasingly important to be able to raise techsavvy and tech-safe children.

36

absolute mama | ISSUE 4

SIGNS OF CYBERBULLYING

Many of the same rules that apply to keep your child safe in the real world apply on the Internet. Make it clear to your children that they should keep online interactions limited to only people they really know. Explain the consequences of sharing personal information and make them feel comfortable to come to talk to you should anything make them feel uncomfortable or uncertain. Here is an introduction to some of the most popular apps that kids are using today:

Most of the time teens who are cyberbullied don’t want to tell a parent about it, often because they feel ashamed of the social stigma or fear their screen time will be taken away. Signs of cyberbullying vary, but may include: • being emotionally upset during or after using the Internet or the phone • being very secretive or protective of one’s digital life • withdrawal from family members, friends, and activities • avoiding school or group gatherings • slipping grades and “acting out” in anger at home • changes in mood, behaviour, sleep, or appetite • wanting to stop using the computer or cell phone • being nervous or jumpy when getting an instant message, text, or email • avoiding discussions about computer or cell phone activities

SNAPCHAT

What is it? Snapchat is an app used to share photos, videos, text and drawings. There is one feature that makes Snapchat different from other forms of texting and photo sharing: messages or snaps disappear seconds after they’re viewed—the sender gets to decide how long a photo will “live,” from one to 10 seconds after it’s viewed. What parents should know: For parents who monitor their children’s smartphone use, Snapchat doesn’t save pictures and messages sent so you can’t see them later. If you have a software package that allows you to see the content of your child’s phone remotely online, you won’t be able to see what was sent and then automatically deleted. Even though the photo message disappears from the phone after a few seconds, it does not prevent the receiver from taking a screenshot while it’s live. Parents who allow their children to have Snapchat need to have a serious discussion with their kids to discuss the risks associated with the false sense of security that Snapchat may provide.

INSTAGRAM

What is it? Instagram is an app used to share photos, videos and messages. Whether it’s through Stories, Feed, Live, IGTV (an app from Instagram that lets users share longer videos) or Direct. People use Instagram for visual marketing of their products or businesses, to share everyday moments, keep in touch with friends and family and build supportive communities. It is a great platform to meet others who share your interests and hobbies. What parents should know: Instagram lets you follow people and be followed by them, but unlike Facebook, it’s not necessarily a two-way street. You can follow someone even if they don’t follow you and vice versa. Users with a private account can control who can follow them. Unless you change the default to private, anyone can see what you post.

TIK TOK

What is it? People film clips of themselves lip-syncing or acting out comedy sketches. The video clips can be up to 15 seconds long and users can choose from a database of songs, effects, or sound bites. What parents should know: Because of TikTok’s emphasis on popular music, many videos include swearing and sexual lyrics, so it may not be ageappropriate for kids to use on their own. In 2019, due to all the children under 13 on the site, the developers created a separate section of the app for kids that only allows them to access curated, clean videos: They can’t comment, search, or post their own videos based on the birth date entered upon signup. It is every parent’s responsibility to stay up to date with the different apps and how to use them. Simply saying no or avoiding technology because you don’t know how to use it, will not encourage conversation.

isposable plastic items are so common that it is easy not to notice them, but they are everywhere. Plastic is the leading cause of ocean pollution, harming wildlife and wreaking havoc on the environment. It is no wonder that more and more people are demanding plastic alternatives and refuse to participate in the grotesque plastic waste that is filling our planet’s landfills. If we don’t make some drastic lifestyle changes soon, there will be more plastic in our oceans than fish by 2050! The question for most people wanting to lead a plastic-free lifestyle is this: Where do I start? Here are some easy tips to help you reduce your plastic footprint:

42

KEEP REUSABLE SHOPPING BAGS WITH YOU IN THE CAR

Plastic bags are generally used for a matter of minutes before being discarded, and then take hundreds of years to break down. About 160,000 plastic bags are used every second worldwide and only 1-3% of them are recycled. When it comes to reusable bags, it isn’t so much about “choosing” as “using”. It’s about remembering to bring them with us because let’s face it… we all have reusable bags. They are most effective when we take them with us! Remembering to bring a reusable bag is a habit we can train ourselves to do. In the beginning, we need reminding. Place reusables in places where you’ll notice them as you leave the house. Place them in strategic locations: where you keep

your purse, in the car, in the bicycle basket. Pop a reminder on the back of the front door.

GIVE UP BOTTLED WATER

Plastic water bottles are another of the top 10 items found in beach clean-ups. Plenty of research has highlighted that as well as being less eco-friendly, bottled water is less healthy than tap water. Having a reusable water bottle stops us from buying water when we’re on the go.

BRING YOUR OWN CUP

Many people do not realise that takeaway coffee cups are lined with a thin layer of plastic. That’s what makes them watertight. It also makes them almost impossible to recycle. The best solution is to carry your own travel

WHAT ARE SHAMPOO BARS? Shampoo bars, are natural conditioning shampoos in a solid bar form. Although they may seem new to many, solid soap shampoos were commonly used before liquid detergent shampoos became popular in the 1940’s. This concentrated shampoo bar can do the job of 4 to 5 bottles of commercial liquid shampoo and there is no plastic bottle to throw away afterward.

mug / reusable cup with you. Many coffee shops even offer a discount for bringing a reusable cup! Even without a discount, the environment is winning.

SAY NO TO PLASTIC STRAWS

We use straws for just a few minutes and then toss them away, but they stay on our planet for centuries, harming marine life as well as our fellow beings on land. Try to always refuse a plastic straw. If you really need to use a straw then use a metal, paper or bamboo one.

USE BARS OF SOAP

Using shampoo and soap bars can radically reduce the amount of plastic household waste we throw out each year. Choosing eco-friendly or vegan soaps will also help avoid water and soil pollution.

UPGRADE YOUR TOOTHBRUSH

We all brush our teeth, and we tend

44

absolute mama | ISSUE 4

to change our toothbrush every few months. We replace them because the bristles wear out, yet the handle is often perfectly fine. But the whole thing needs to be replaced and tends to end up in the bin. One alternative is to switch to a bamboo toothbrush. With bamboo toothbrushes, once the bristles have

worn out, they can be removed, and the handle can be composted. If they somehow end up in the ocean, the wooden handle will biodegrade naturally. It is in all our best interest to make good choices. You can do your bit to save the planet while there is a planet left to save.

You’re not crazy, it’s just your

hormones By Mariza Halliday

47

food & fitness | ESTROGEN DOMINANCE

O

ur world has rapidly become very estrogen dominant due to artificial estrogens in our environment in the form of plastics (BPA), canned food, pesticide sprayed fruit and vegetables, skin care products, cleaning supplies and other chemicals. In addition, a highly processed diet with unhealthy fats, caffeine, alcohol, sugars and dairy (which is loaded with growth hormones) all contribute to higher estrogen levels. Estrogen dominance occurs when the level of estrogen in the body supersedes the level of progesterone that is circulating in the bloodstream. Once you discover the symptoms of estrogen dominance it is hard not to see the signs all around you – in your own life, and that of your friends. That’s because it is a very common issue, but not something that is

48

absolute mama | ISSUE 4

spoken about often. Women worldwide are struggling because their bodies are not equipped to cope with the incoming estrogen overload. According to Desi Horsman, Clinical Nutritionist and wellness expert, these are some of the most common symptoms we should be looking out for: • Heavy bleeding or post-menopausal bleeding • Severe cramps and increased PMS symptoms • Fibroids • Migraines • Unexplained weight gain • Ovarian cysts • Endometriosis • Gallbladder problems • Miscarriages • Insomnia • Infertility • Thyroid dysfunction • Low libido • Depression or anxiety

HOW TO TREAT ESTROGEN DOMINANCE NATURALLY AND EFFECTIVELY

The natural treatment for estrogen dominance is not only the healthiest way but also the most effective and the longest lasting. This is because it gets down to the root cause of the problem, changes your hormonal ecosystem, and supports your elimination pathways. The below tips will help your body to deal with some of the unavoidable sources that inevitably come your way.

INCREASE YOUR FIBRE INTAKE

Eat lots of fibre rich food which feeds your good gut bacteria and reduces estrogen dominance by safely excreting excess estrogen from the body. Broccoli, flax seeds and pears help your liver to process the excess estrogen so that it can be transported to the large intestine and then eliminated quickly.

food & fitness | ESTROGEN DOMINANCE

GET SOME SLEEP!

Make it a priority to get seven to eight hours of high-quality sleep each night to balance your hormones. If you have trouble drifting off to dreamland you should try a relaxing tea, a warm bath or maybe a melatonin supplement.

GET MOVING…

Movement, exercise and outdoor activities are extremely important. Do everything you can to reduce your body fat percentage below 28%. Estrogen is stored in your body’s fat cells, so by losing excess weight through a proper diet and exercise, you will eliminate excessive estrogen storage.

GO GREEN

ORGANIC IS THE WAY TO GO

Eat lots of organic fruit and vegetables with adequate amounts of protein that is not soy based or grown with artificial growth hormones. Dark leafy green vegetables are high in magnesium and B vitamins that are essential for the metabolism of estrogen in the body. Meat and

50

absolute mama | ISSUE 4

poultry should be grass fed (free range does not mean the animals are reared in a healthy manner).

GUT HEALTH

It is your gut’s job to move out the estrogen that your liver has processed for elimination. Poor gut health means estrogen probably isn’t making its way out efficiently and instead could be reabsorbed back into your body.

Get rid of all chemical-based personal hygiene and cleaning products. You absorb a substantial portion of the things that meet your skin, so it makes sense to be conscious about what’s in the products you use. Whether you switch out your products as you run out, swap one thing a month, or go nuclear on your shelves, you’ll need to pay attention to your personal care products to reduce your estrogen load.

THE BEGINNERS GUIDE TO

gut health By Mariza Halliday

absolute mama | ISSUE 4

53

health & wellness | GUT HEALTH 101

"If you want to fix your health, start with your gut. Gut health literally affects your entire body." – Dr Mark Hyman

T

he gastrointestinal tract is a complex and vital part of the body that people often underestimate. It is responsible for transporting food from our mouth to our stomach, converts it into absorbable nutrients and stored energy, and helps our bodies remove waste back out of the body. If you don’t properly nourish yourself, you don’t survive. It’s that simple. In recent years, scientists have done various studies and discovered that gut health has an even bigger function than we previously thought. It has been linked to many other aspects of health, some that have seemingly nothing to do with digestion - from immunity to anxiety, cancer, Type 2 diabetes and more. We have only just begun to scratch the surface of the importance of gut health, but studies have already found

54

absolute mama | ISSUE 4

that certain environments, foods and behaviours can influence it for better or worse. According to Emma de Beer, Marketing Manager at Ascendis Pharma, we often associated gut health with regular toilet visits and a lack of or diarrhoea or bloating. But gut health is so much more than that. Your gut is like a security system for your body - keeping the bad elements out and allowing the good in. A healthy gut can control more than just bowel movements and can impact our mood, health and overall wellbeing. Discomfort in the gut can be an early warning sign when something is out of order in your body or even your surroundings. That is why people talk about a” gut feeling “or tell you to “always trust your gut”, she says. If your gut is the security, the good bacteria is the maintenance team. They prevent bad bacteria from entering your body and blood.

HEALTH CONDITIONS LINKED TO THE GUT MICROBIOME • Alzheimer’s disease • Anxiety • Autoimmune disease • Cancer • Dementia • Depression • Diabetes • Eczema • Fatigue • Fibromyalgia • Hashimotos thyroiditis • Heart disease • Inflammatory bowel diseases, including Crohn’s disease • Obesity • Parkinson’s disease • Rosacea

Bacteria is found all over your body (gut, skin, ears, nose etc). In fact, scientists believe that there are more

health & wellness | GUT HEALTH 101

microbes than cells in your body. Your gastrointestinal tract is lined with microbes collectively called the microbiome, which includes bacteria, fungi and even viruses. The importance doesn’t only lie in how much, but also what sort. The human microbiome differs from person to person and is almost as unique as a fingerprint. But some species are the most prolific and the ones that we see declining in humans as our hygiene habits improve and our food becomes more processed. Today, most of us have a microbiome seriously lacking in diversity because we only feed the “bad” bacteria as we follow a diet of unhealthy fats and refined carbohydrates. A lack of gut diversity is an important marker of inflammation, which is linked to obesity, heart disease, arthritis and even depression. It also leads to more fat storage and poor insulin sensitivity.

56

absolute mama | ISSUE 4

HOW TO DIVERSIFY YOUR HEALTHY GUT BACTERIA 1

EAT MORE FIBRE

Aim for 40g or more per day

2

DIVERSIFY YOUR DIET.

Variety in your diet may be as important as the quantities, as the chemicals and types of fibre will vary, and each supports different microbial species.

3

GO FOR THE POLYPHENOLS

Polyphenols are antioxidants that act as fuel for microbes. These are found in red wine, green tea, blueberries, pomegranates, cherries and dark chocolate.

4

EAT FERMENTED FOODS

Fermented foods such as sauerkraut,

kefir, kombucha and kimchi all contain good bacteria that can help fight against and crowd out the bad bacteria in your gut, resulting in a healthy balance of bacteria in the intestines. Aim for one to two servings of fermented food every day.

5

BE MINDFUL ABOUT ANTIBIOTICS

Antibiotics destroy the good and the bad bacteria in your gut and it can take weeks to recover, so don’t take them unless you need them.

6 THROW AWAY THE ARTIFICIAL SWEETENER & PROCESSED FOODS

Sugar and artificial sweeteners feed the bad bacteria and can cause gastrointestinal distress in the forms of gas, bloating and diarrhoea..

One of the greatest challenges for human wellbeing in the 21st century will be to focus on the advantage of having a healthy colon and therefore a good immune system – this is where probiotics can play a significant role. Probiotics are critical for normal digestion and for defence against infection. Bacteria in the gut are known to: • Stimulate the immune system • Enhance the mucosal barrier • Aid digestion and break down toxins • Inhibit adherence of pathogens

A good probiotic can be beneficial in the following ailments: • Diarrhoea or constipation • Bad breath, gas and bloating • Irritable bowel and lactose intolerance • Gastroenteritis and playschool diseases in young children

HELLO

sunshine! Could a simple vitamin deficiency be making you feel bone tired? We look into why you may need to top up your Vitamin D intake. By Lori Cohen

health & wellness | VITAMIN D

M

odern life means we spend more time at work, school and indoors than ever. Getting outside is great for our mental and physical health generally, but there’s an excellent reason experts are encouraging us to kick our ‘indoor habits’ and expose our bodies to more sun. Safe sun exposure (avoiding the hours between 11am and 2pm when UV rays are at their most intense) is not only good for us; it turns out to be essential. That’s because when our skin absorbs that beautiful UVB, our kidneys and livers can convert the sunlight into a nutrient we call Vitamin D.

THE SUNSHINE VITAMIN The length of time we’re exposed to

60

absolute mama | ISSUE 4

the rays and the amount of melanin in our skin determines how much Vitamin D our bodies can form. Those with darker skin and people using sunscreen can absorb less because the melanin (which gives skin its colour) prevents all the rays from reaching the substance in our skin where it is converted into the vitamin. To naturally produce enough

Vitamin D, aim to get up to 30 minutes of sun exposure every day. If you have light, sensitive skin you’ll need less. If it’s overcast, you’ll need to increase it. You get the picture. Of course, we also get the vitamin from dietary sources such as fatty fish, cheese, eggs and beef liver, but our skin makes most of it when it’s exposed to sunlight.

WHAT IS VITAMIN D TOXICITY? • Vitamin D toxicity, also called hypervitaminosis D, is a rare but potentially serious condition that occurs when you have excessive amounts of vitamin D in your body. • Vitamin D toxicity is usually caused by mega doses of vitamin D supplements — not by diet or sun exposure. That’s because your body regulates the amount of vitamin D produced by sun exposure, and even fortified foods don’t contain large amounts of vitamin D.

health & wellness | VITAMIN D

THE LOWDOWN ON LOW LEVELS

A lack of Vitamin D can have severe consequences for both children and adults, says homeopath Dr. Laura Chella. ‘A lack of Vitamin D can affect the absorption of calcium and phosphorus and that can lead to thin, brittle bones, which we call rickets in children. If this happens in adults, then we can call it osteomalacia.’ Children also need it to assist in the formation of healthy teeth. Our bodies need Vitamin D to absorb calcium and promote bone growth. ‘We often see Vitamin D deficiency in the elderly because they don’t go out a lot and their appetites shrink,’ explains Laura. Brittle bones are expected in our retirees, but the number of children in first world countries suffering from rickets is soaring. Other more subtle changes in our kids are causing concern. Shortsightedness in adolescents is on the

62

absolute mama | ISSUE 4

rise, for example, which is being linked to too little exposure to natural light. Vitamin D deficiency has also been linked to peanut allergies. Laura explains that early research seems to show there’s an association with increased levels of Vitamin D and protection against cancer. ‘It’s a loose association, but one that I think is important and shouldn’t be ignored,’ she says. Vitamin D also plays a role in our immune system. Without enough of it, we’re more susceptible to illness. Signs you or your child may be vitamin D deficient: • Bone pain, stiffness, and brittle bones. • Muscle aches, tiredness, malaise, low mood, and fatigue. • Constant infections and illness

THE CASE FOR SUPPLEMENTING

Increasing sun exposure and adding vitamin D-rich foods into the diet

VITAMIN D FOODS FOR STRONG & HEALTHY BONES • Cod liver oil • Swordfish • Salmon • Tuna • Sardines • Mackerel • Rainbow Trout • Cod • Herring • Haddock • Beef liver • Eggs • Milk • Yogurt • Cheddar cheese • Orange juice

doesn’t work for everyone to solve their low levels, explains Laura. ‘Some people are deficient in the process it takes to manufacture vitamin D in their bodies.’ A simple blood test can determine your Vitamin D levels and if you’re found to be lacking, and you haven’t been able to ‘eat yourself healthy’, try the following, says Laura. Take Vitamin D3. ‘This is the most absorbable form of a D vitamin. It’s also called cholecalciferol. You want to get about 5000 IU a day through a quality vitamin supplement if you have a deficiency, but 1000 IU is appropriate as a maintenance dose.’ Vitamin D is available as a tablet, liquid, or even transdermal patch. Give baby a boost. You can use a nasal spray formula such as Better You DLux Infant Daily Vitamin D Spray for babies. ‘If you’re concerned your baby isn’t eating enough of the right foods or has been indoors a lot because of poor weather, an oral spray is advisable to give them about 800 IU. If the baby is breastfed, you’ll need about half of that. Formula is already fortified with Vitamin D.’

A TRIBUTE TO THE absolute mama,BRENDA HANNAH SMITH - 07/10/1975 – 08/09/2018

WHAT IS IT?

Parkrun is a group of 5km running events that take place every Saturday at over 1400 locations in 23 countries across the world. Originally founded by Paul Sinton-Hewitt in England, and originally called the Bushy Park Time Trial in 2004, this event grew into a network of events called the UK Time Trials. Eventually taking on the name Parkrun in 2008, it expanded to countries across the globe. The first parkrun outside of the UK was held in Zimbabwe, it then moved on to Denmark, reached South Africa and Australia in 2011 and the USA in 2012. As of October 2018, over 5 million runners are registered worldwide.

PARKRUN IN SOUTH AFRICA

On local shores, Parkrun was initiated and promoted by ultra-marathoner Bruce Fordyce and the first Parkrun in South Africa took place in 2011. The interest has steadily grown over the years with a regular number of 1200 runners participating each weekend. A

record number of 2527 runners took to the shores of North Beach, Durban for the largest Parkrun that South Africa has seen on the 20th of January in 2018.

WHAT ARE THE BENEFITS OF JOINING PARKRUN EVENTS?

It’s no secret that exercise helps reduce depression, anxiety, stress and feelings of isolation. So beat the blues, get outside and get your heart rate pumping! Even if you’re not capable of participating, volunteering gives you the opportunity to be included and to offer support and connect with participants. Participating in a Parkrun can do wonders for your fitness motivation. And we’re not talking about world records either. Simply finding the motivation to get up and meet a group of friends for a chat while participating is all most people need to get themselves out of bed. Joining your local Parkrun is a great way to connect with your community. While most of our modern lives are

Gone, but never forgotten. spent on the proverbial run, we don’t get much time to connect with those outside of our immediate circle. Having people with similar interests to support and motivate you transcends beyond the Saturday morning meet ups in the park is definitely rewarding. You’ll see how these relationships grow and expand beyond the Parkrun itself. What happens on the Parkrun is between you and you. Beating an opponent is not the aim on a parkrun, but that doesn’t mean you can’t improve your own results by setting new personal best times. Whether you’re an experienced runner or not, there is plenty of opportunity to improve on pace, stamina and record times. Achieve all of this in your own time, on your terms, that’s the beauty of Parkrun. So what are you waiting for? Check out www.parkrun.co.za for more info and get started, you have nothing to lose.

The earliest record of fermentation dates back as far as 6000 BC in the Fertile Crescent regions in the Middle East and nearly every civilization since has included at least one fermented food in it’s culinary heritage.

WHAT ARE FERMENTED FOODS? Fermented foods are foods that have been through a process of lacto-fermentation in which natural bacteria feed on the sugar and starch in the food creating lactic acid. This process preserves the food and creates beneficial enzymes, B-vitamins, Omega-3 fatty acids and various strains of probiotics.

Easy Kimchi at Home

Kimchi is made by lacto-fermentation, the same process that creates sauerkraut and traditional dill pickles. Ingredients • 1 medium head Chinese cabbage (about 1kg) • 1/4 cup iodine-free sea salt or kosher salt • Water, preferably distilled or filtered • 1 tablespoon grated garlic (5 to 6 cloves) • 1 teaspoon grated peeled fresh ginger • 1 teaspoon granulated sugar • 2 tablespoons fish sauce or salted shrimp paste, or 3 tablespoons water • 1 to 5 tablespoons red pepper flakes • 225g Korean radish or daikon radish, peeled and cut into matchsticks • 4 medium scallions, trimmed and cut into 1-inch pieces Method 1. Cut the cabbage lengthwise through the stem into quarters. Cut the cores from each piece and cut each quarter crosswise into 5cm wide strips. 2. Salt the cabbage and place in a large bowl and sprinkle with the salt. Using your hands, massage the salt into the cabbage until it starts to soften a bit. Add enough water to cover the cabbage. Put a plate on top of the cabbage and weigh it down with something heavy, like a jar or can of beans. Let stand for 1 to 2 hours. 3. Rinse and drain the cabbage under cold water 3 times. Set aside to drain in a colander for 15 to 20 minutes. Meanwhile, make the spice paste. 4. Rinse and dry the bowl you used for salting. Add the garlic, ginger, sugar

Prep: 30-45 min

and fish sauce, shrimp paste, or water and stir into a smooth paste. Stir in the red pepper flakes, using 1 tablespoon for mild and up to 5 tablespoons for spicy (we like about 3 1/2 tablespoons); set aside until the cabbage is ready. 5. Combine the vegetables and spice paste. Gently squeeze any remaining water from the cabbage and add it to the paste. Add the radish and scallions. 6. Mix thoroughly, using your hands, gently work the paste into the vegetables until they are thoroughly coated. The gloves are optional here but highly recommended to protect your hands from stings, stains, and smells! 7. Pack the kimchi into the jar. Press down on the kimchi until the brine (the liquid that comes out) rises to cover the vegetables, leaving at least 1 inch of space at the top. Seal the jar. 8. Place a bowl or plate under the jar to help catch any overflow. Let the jar stand at room temperature out of direct sunlight for 1 to 5 days. You may see bubbles inside the jar and brine may seep out of the lid. 9. Check it daily and refrigerate when ready, opening the jar and pressing down on the vegetables with a clean finger or spoon to keep them submerged under the brine. (This also releases gasses produced during fermentation.) Taste a little at this point, too! When the kimchi tastes ripe enough for your liking, transfer the jar to the refrigerator. You may eat it right away, but it’s best after another week or two.

Homemade Sauerkraut

The simplest way to make classic sauerkraut - a fermented food that’s great for your gut. Ingredients • 2kg very firm, pale green or white cabbage (any leathery outer leaves removed), cored • 3 tbsp coarse crystal sea salt (or 6 tbsp flaky sea salt) • 1 tsp caraway seeds • 1 tsp peppercorns Method 1. Thoroughly wash a large mixing bowl, then rinse with boiling water from the kettle. Make sure that your hands and everything else coming into contact with the cabbage are very clean. It’s wise to use a container that will comfortably fit the softened cabbage, allowing 5cm of room at the top to avoid overflow. 2. Shred the cabbage thinly – a food processor makes light work of this. Layer the cabbage and the salt in the tub or bowl. Massage the salt into the

cabbage for 5 mins, wait 5 mins, then repeat. You should end up with a much-reduced volume of cabbage sitting in its own brine. Mix in the caraway seeds and the peppercorns. 3. Cover the surface of the cabbage entirely with a plate, then press out all the air bubbles from below. Weigh the cabbage down using a couple of heavy plates, or other weights that fit your bowl, and cover as much of the cabbage as possible. The level of the brine will rise to cover the cabbage a little. Cover the tub with its lid and leave in a dark place at a room temperature (about 18-20C) for at least 5 days. It will be ready to eat after 5 days, but for maximum flavour leave the cabbage to ferment for anywhere between 2-6 weeks (or until the bubbling subsides).

Dill Pickles

4. Check the cabbage every day or so, releasing any gases that have built up as it ferments, and give the cabbage a stir to release the bubbles. If any scum forms, remove it, rinse the weights in boiling water and replace the plate. You should see bubbles appearing within the cabbage, and possibly some foam on the top of the brine. It’s important to keep it at an even, cool room temperature – too cool and the ferment will take longer than you’d like, too warm and the sauerkraut may become mouldy or ferment too quickly, leading to a less than perfect result. 5. The cabbage will become increasingly sour the longer it’s fermented, so taste it now and again. When you like the flavour, transfer it to smaller sterilised jars and keep it in the fridge for up to 6 months.

Use this simple dill pickle recipe to make easy and delicious homemade pickles. Ingredients • 500g fresh cucumbers • 650ml brown vinegar • 2 cloves • 1 teaspoon black peppercorns • 50mm whole cinnamon bark • 1 teaspoon mustard seeds • 1 whole red chilli • 50g salt • Screwtop jars Method 1. For the soaking process, select a large glass bowl, pour in 650ml water, add 50g salt and make sure it dissolves. Add the cucumbers. 2. After 3 days, select a large standard pickling jar, sterilise the lid and the jar. Remove the cucumbers from their three-day

soak in brine, rinse them and dry with paper towels, then pack them into the large pickling jar. 3. Now for the pickling agent. In a stainless-steel saucepan, pour in the brown vinegar and the spices. Don’t crush the spices, keep them whole. The same applies to the solo red chilli. Bring the pan to the boil and let it boil vigorously for 10 minutes or so. Taking great care, pour the hot spiced vinegar over the cucumbers in the large pickling jar. Close the lid and store for 24 hours. 4. After the 24 hours has passed, pour the spiced vinegar out of the pickle jar and back into a stainless-steel saucepan. Bring to the boil, then pour the pickling

liquid back over the cucumbers which are still in the original large jar. Do this process twice, 24 hours apart. Sterilise the smaller screw top jars by heating them and their lids in an oven at 110°C for 15 minutes or so. 5. Allow them to cool and remove the cucumbers from the large jar and pack them carefully into the smaller jars. Pour in the spiced vinegar, topping it up if necessary with plain brown vinegar. Seal the jars and label them with the date. Store the cucumbers in a cupboard for at least a week, noting that the intensity of the flavour increases with time. Once you have opened a jar, keep it in the fridge with its lid on.

apple cider vinegar

Apple cider vinegar has an array of benefits and super simple to make at home with some organic apple scraps and in little time.

Prep: 5 min

Ingredients • 3 small apples (core and peel included, no stem) • 3 tsp raw sugar (muscavado works well) • filtered water to cover

Total fermentation time: 2-3 months

82

absolute mama | ISSUE 4

Method 1. Wash and chop your apples into medium sized pieces (or use the peels and cores of 6-7 small apples after making apple pie or puree). Place them in a clean, rinsed and sterilized wide mouth jar. 2. Mix the sugar with 1 cup of water and pour on top of the apples. 3. Add more water if needed to cover the apples. 4. Cover the jar with a paper towel or a cheesecloth and secure it with a band. This keeps nasties away while letting the liquid breathe. 5. Place the jar in a warm, dark place for 2-3 weeks – in your pantry works well. 6. Strain out the liquid and discard the apple pieces. 7. Return the liquid to the same jar and cover it again (same paper or cheesecloth). 8. Return the jar to the same warm, dark place and leave it do its thing for roughly 4 to 6 weeks, stirring with a plastic or wooden spoon every few days or so. 9. After the first 4 weeks, you can begin to also taste your vinegar and once it reaches an acidity you like, you can actually transfer it to a bottle with a lid and begin using it.

home décor | KITCHEN Tip #1

Pick colours that you love and that you respond to emotionally.

Black and White A black and white kitchen can be both dramatic and exquisite. It’s amazing how the use of these two simple colours can instantly make such a bold visual statement and do so in any design style or choice. The black and white kitchen is a never ‘out of style’ classic, making it a perfect choice for those not too keen on constantly changing the look of their kitchen every other year. While a contemporary kitchen with bright backsplashes and cabinets might fall out of fashion pretty quickly, black and white will always stay relevant.

That Country Feel If warm, comfortable and beautiful is your style, you’re likely a fan of French country design. This style evokes a familiar, friendly feeling of traditional and a somewhat simple lifestyle. The design hidden in history and reminiscent of the past doesn’t sacrifice the function of modern amenities. Inspired by the colours of the provincial landscape, soft, pale colours are typically used in a French country kitchen. Think warm, soft and muted hues in earthy tones. Because cabinetry tends to take up the most visual space in a kitchen, using warm surfaces and muted tones on the cabinets is a must to create an authentic French country feel.

Tip #2 Backsplashes can make a colour splash in a big way.

Dark and Sleek

Tip #3 Be prepared to be flexible and make compromises. As you go through the process of selecting all the colours and finishes, your plan will be constantly revised

86

absolute mama | ISSUE 4

Dark isn’t the first theme that comes to mind when designing a kitchen. Stereotypical assumptions are of white and bright kitchens, matched by light wood the colour of breakfast pancakes. What if your kitchen broke the mould? A dark kitchen creates a stunning space for cooking, entertaining and eating and is amongst the sexiest interior design can muster. All divulging in shades of black, navy, or dark brown, they add what white kitchens cannot – a seductive allure that says sleekness and sophistication at the same time.

Bright and Airy

Tip #4

Choose one element to launch your colour palette, but don’t buy that item until all accompanying selections have been fully researched.

The term classic white is a cliché for a reason. White kitchens repeatedly stand the test of time. This timeless colour which will always be in trend, has many advantages. The fact that if we speak about dècor, it makes any space look bigger, it goes well with almost any colour and creates an airy feeling in the interior. Vintage, rustic, minimalist or mid-century modern, white will be superb for absolutely any décor style.

Blue With blue being the colour of the sky, there is something innately tranquil about the colour – and why it’s such a natural hue for the heart of the home. For many people, the kitchen is a sanctuary; the perfect place to rid your mind of the day’s stresses. Like gazing at the deep expanse of the sky on a perfect summer’s day or taking in the sight of a deep blue ocean, a blue-centred kitchen provides a bust of freshness after a long day. Why not try this cool shade during your kitchen remodel with blue kitchen cabinets? It will make your kitchen appear bigger, seem cooler and feel more relaxing. One other interesting characteristic of blue scientists have uncovered is that it suppresses appetite.

Tip #5 Do not underestimate lighting. Look at all your colour and finish choices in daylight and in the artificial light that will be in that particular room.

Tip #6 For granite and other countertops, the safest approach is to keep it neutral and versatile. This is a big ticket item that you don’t want to replace when the trends shift again.

PLANNING YOUR FAMILY GETAWAY

Before jumping on a plane to Amalfi, check that everyone has a valid passport and the Schengen Visa. Luckily no vaccinations are required but make an appointment with your doctor for a routine check-up. Your first encounter with Italy is at Leonardo da Vinci-Fiumicino, the main airport in Rome which will be buzzing with activity. This will also be the best time to exchange your Rands for Euros. Getting around is relatively easy. You have the option of hiring a car to drive yourself around, but be warned, the roads are narrow and winding, which make it difficult to navigate during the busy season. Also, speak to the hotel concierge to organise a local

To fully enjoy this beautiful destination, plan your holiday between May and September when the coast is at its most beautiful waking up from hibernation with lush blooms, mild weather and fewer tourists; prices are lower with lots of concerts and festivals written into the annual events calendar.

WHERE TO STAY

The Amalfi Coast is dotted with family-friendly towns, the most

popular being Maiori and Minori. Not only are they affordable, but their short boardwalks also add to their popularity. With little or no stairs and great for moms using prams or travelling with small children, the beaches and hotels close to one another is a bonus. If you’re travelling without the little ones, also visit the gorgeous town of Positano and Sorrento which has an array of hotels, restaurants and shopping options. TOYOTA’S NEW TIER 1 SUPPLIER IS A CHAMPION Meet Judith Serafim, major shareholder and Managing Director of Imvusa Interior Trim (Pty) Ltd.

S

outh Africa in the early ‘80s was very different to today. Television was still a novelty, typewriters, telexes and adding machines were must-haves for businesses, and fishing on the Free State side of the Vaal River was illegal on Sundays. And then there was Apartheid. The future for a small black girl, even one from a relatively wealthy background, looked dismal. Judith Serafim was just four years old when her father died, but luckily blessed with an extraordinary strong woman as a mother. “With nothing to his name, my

106

absolute mama | ISSUE 4

Dad came from Mozambique in the ‘60’s, starting two businesses and did very well through the 1970s until he passed away. Thereafter my Mom carried on with the businesses - a mail order company retailing homeopathic medicines, and a franchised slimming clinic. In those days it was unheard of for a black woman to be successful in business, but she did exceptionally well in taking over, and we moved from the township to suburbia. With the growing violence and political uproar of the late ‘80s she sent me and my siblings to a Catholic boarding school in Ixopo. I believe

that made all the difference in our lives. My Mom was adamant that an education was the only thing that could give her kids a chance of making something of themselves. The school was all about responsibility, discipline and structures, working according to a plan. I think that the Christian ethos that comes out of it moulds you into doing and understanding things better. We cried every time we were dropped off there, but looking back you appreciate the lessons you learnt. We were incredibly fortunate.”

advertorial

Being fortunate isn’t enough, though. You have to give your luck all the help you can, and after matriculating Judith studied for her finance qualification with the SA Institute of Chartered Secretaries and Administrators, following up by achieving her Bachelor of Philosophy (Honours) in Marketing Management through part time studying. “My first full-time employment was with a parastatal in KZN where I was exposed to the world of marketing,” she remembers. While juggling her time between studies and work, Judith had a son, so she had to factor parenting into her career plan. “My son was with me the whole time,” she laughs. “I’d go to work, then pick him up from school afterwards and take him to my lectures at the marketing college where he’d sit in the canteen doing his homework. As he grew older, getting bored he’d walk home and cook himself noodles while he waited for me to get home. To this day he can’t stand noodles!” Judith has never been a jobhopper using her status as a black woman to stalk larger salaries, more status and bigger perks. Her most recent position as Regional Manager (KZN and Gauteng) of Sasfin Commercial Solutions saw her actively involved in the administration of governmental incentives for industries over a period of twelve years. This often concerned the automotive industry, which garnered her loads of experience with the International Trade Administration Commission’s incentive programmes, the Automotive Production and Development Programme (APDP) and various other incentive and development schemes. “I like to do my job well, build relationships, networks and contacts, and carry on growing. For me job-hopping on BEE would

not work. I’m a person who likes to cement myself, make a difference so people who see me realise my value. People need to see who you really are.” And then, of course, there was the dream. “I’ve always had this longing for entrepreneurship,” she says. “I knew what the next step for me would be – my own business. I wanted to leave a legacy for my children the same as my Mom and Dad did for me. It was just a matter of what it would be. I didn’t do this because I was unhappy at work – I wasn’t.” Judith spoke to various friends and business contacts in the automotive industry about her intention to go into business and did a lot of research over two or three years. “I had discussions with several companies who knew me from outside business, soon I had a few offers. I needed to do the right thing at the right time, and didn’t want a partnership just for the sake of it. I needed the same commonalities and values, and eventually found exactly the right team to work with.” Judith took up her post as MD of a new company Imvusa Interior Trim in January focusing on interior trim components. “I’m intimately involved with the business and we’re going to be fully up and running in a couple of months. We have our engineering staff on board already and I’m very fortunate to be working closely with such a skilled team from Toyota. I don’t have automotive manufacturing experience so this is all new to me, but my team does, and I’ve worked closely with the industry for years. I’ve read many business plans, studied automotive production processes, bills of materials, everything that goes with the business except actual manufacturing. Then there are my marketing and financial skills so we fit together perfectly. Toyota is

being wonderful – they’re drilling us in terms of doing things the Toyota way, on quality assurance, safety, and personnel development and I’ve learnt so much. One thing I need to say is that a lot of people talk about BEE and it just remains talk. But we’re going to do it and well, because Toyota is so supportive. They’ve been like a big brother holding my hand all the way.”

NAACAM At the recent NAACAM (National Association of Automotive Component and Allied Manufacturers) convention in Durban speakers made a few points very clear. To comply with the APDP and the South African Automotive Masterplan to escalate car production from today’s 600,000 to 1.4 million by 2035, South African manufacturers need to find buyers for locally built cars and components in a rapidly expanding African marketplace. In terms of the APDP and masterplan, local content also has to be lifted from just under 40% to 60% over the next few years, and small and medium black-owned businesses must be brought into the supply chain to help the country succeed in transformation. Toyota’s strategy to support SAAM is clear and developing small Black Owned suppliers is a priority. The Interior Trim commodity is one in which there is room for another supplier to allow competition and increase the number of small black businesses. Toyota selected Judith and her company as an early Tier 1 supplier, and are doing everything they can to ensure that she and Imvusa are successful.

ON THE FIELD OFF THE FIELD By Alasdair Cunningham

rowing up, I was lucky to live close to my primary school so that I could partake

absolute mama | ISSUE 4

in some of the after hours activities and sports that were on offer. If memory serves, there was rugby, more rugby, and possibly even more

rugby. I vaguely recall a smattering of tennis, a bit of the ol‘ track and field, some aquatic hijinks, and football being a swearword.

parenthood | DADDY DIARIES

In those days I couldn‘t speak a lick of Afrikaans so playing rugby was entertaining. I didn‘t know the rules either. I knew that you ran one way, passed another, and hung onto that ball for dear life - which made for some pretty one-sided conversations at the breakdown where I wouldn‘t budge until the exasperated ref (once again) told me to get up. Good times. I also remember that we played barefoot on grass that was more barbed wire than anything. I shouldn‘t complain, though, there were millions of kids who didn‘t even have that.

So I played for a few years, shifting from position to position as my body changed shape, and I got bigger and taller than the rest of the team. Then we moved to another province, and I lived far enough away from school that virtually anything after hours wasn‘t going to happen. Did it bother me? Not really, I had learned the lessons you are supposed to learn from team sports, and enough was going on in my new location to keep me occupied and out of trouble. The lessons learned - for me at least - were about teamwork, winning, losing, and practising until you couldn‘t anymore but still found enough in the tank to push yourself just that little bit further. You can apply this to just about anything in life too. Now it‘s time for my six-year-old to try his hand at it. Did I force him into it? Nope. Did he want to try it himself? Yup. Will he continue with it? Don‘t know, and frankly, I don‘t care. There is a multitude of activities and sports, and hobbies he can try his hand at throughout his school career and his life, and I like to think that as his dad it‘s my role to expose him to as many of them as I possibly can. Will he be passionate about one of them, or more than one of them? I certainly hope so, but I want his passions to be his passions and not mine. I don‘t want to ever force anything onto him ( except for my taste in music of course ) because of a misguided sense of ‘I couldn‘t be a professional, but you most certainly can.‘ I‘m also not advocating in indulging his every whim either, I was young once, and wanted to try a billion things that only ever ended up gathering dust under my bed or in the garage. I see the same intensity in his eyes when he tells me that he must have that electric guitar because, dude, how‘s he ever going

to be a rock-star without it?‘ To which I reply to his young self, Learn to tie your shoelaces and stop picking your nose, then we can talk again. My passions are mine and mine alone. I would love for some of them to overlap with my two boys, but you can‘t force it on them as they are as skittish as the buck at a watering hole, just one whiff of something being valuable to you, and BAM!, they are off and away. That‘s why I like driving them to school and back as they are stuck/trapped listening to my music for at least an hour a day. But jokes aside, what they learn on the field, we as dads and parents have to mirror off the field, or what exactly is the point? I‘ve recently borne witness to some decidedly un-sportsmen like jeers, jibes, and altercations that left me feeling more than a little disappointed in my fellow parents. Haranguing the referee to such an extent that you get yourself banned from ever attending a primary school match again is just over the top. Especially when the game in question was under tens, I mean, come on. All you‘re doing is undermining every single lesson that boy, and all the others on his team, have ever learned. It‘s embarrassing to you, embarrassing to him, embarrassing to his teammates, and all the other parents that came to show support on the day. Don‘t be that guy, no matter how passionate you are; there are other healthier roads you can take to deal with situations like this. A lot of the times the kids do sports for fun, and so they should, but the moment it becomes anything other than that? I hope they get the chance to walk away on their terms as they should be playing the game, no matter what it is,for them and not for you.
