Happy New Year! Thai new year that is. Prepare for one Thailand’s biggest and funnest celebrations known as Songkran. If you’ve never experienced it, you are in for an experience you’ll never forget. Read more about it in our ‘What’s On’ section. Whenever people hear Kate Winslet’s name everyone thinks Titanic. And for good reason too; it is an absolutely amazing movie. However, please read the article on Ms. Winslet to see that she has done much more since then and has become a more diverse actress too. By the way, on April 4th, Titanic 3D is being released. I will definitely be there! This issue contains a lot of uber interesting articles. The story about coffee beans that are picked out of an animal’s ‘droppings’ really got my attention, and the new Audi R8 GT Spyder is an amazing machine. Also, in preparation for the launch of Absolute Bali , we have begun writing about some of the wonderful resorts, spas and locations to visit while on that magical island.

SONGKRAN SPLENDOURS 2012 THAI NEW YEAR CELEBRATIONS April 9 - 22, 2012, Bangkok. Ayutthaya. Phra Pradaeng. Samut Prakan. Chon Buri. Suphan Buri. Ratchaburi. Samut Songkhram. Chiang Mai. Si Satchanalai. Sukhothai. Khon Kaen. Nong Khai. Nakhon Phanom. Hat Yai. Nakhon Si Thammarat. Phuket.
S
ongkran, the traditional Thai New Year celebration, takes place April 9-22. Across the country, it’s a time for laughter and entertainment, for religious ceremonies and merit-making; and for family and friends. And of course for splashing water - lots and lots of water!
reflect upon the many acts of kindness and thoughtfulness each has personally experienced and to remember how such acts of generosity and compassion bring peace, happiness and well-being. Songkran is also the time for reunions and renewing family ties. At the heart of each Thai custom and tradition, there is always a logical reason for its existence. The festive elements of the celebration, the cultural values, the social code of conduct and individual belief and practices are intertwined. Songkran embodies the traditional Thai cultural values.
A spirit of good-natured fun permeates the holiday season. Songkran embodies the essential caring and unity at the core of Thai society – enduring qualities that make Thailand truly amazing. An Introduction to Songkran “Songkran” is a word from the Sanskrit language which means to “move into” and refers to the orbit of the sun moving into Aries. It marks the end of a 12-month cycle and the beginning of a new solar year. Songkran is therefore the Thai New Year celebration.
The underlying significance of Songkran is the process of cleansing and purification - the purging of all ills, misfortune and evil and starting the New Year afresh with all that is good and pure. Water is symbolic of the cleaning process and signifies purity.
This traditional Thai custom of merry-making is the Kingdom’s most ‘sanuk’ (fun-filled) festival, celebrated with tremendous enthusiasm nation-wide once a year. In most parts of the country, Songkran extends over a period of 3 days. Known the world-over for its characteristic tradition of water-throwing, ranging from a courteous sprinkle or a polite splash, to harmless water pistols and showers from garden hoses to the well-aimed bucket or water-cannon delivered in a festive spirit. Without a doubt, on the practical side, Songkran is a refreshing solution to “beating the heat” during the hottest part of the year. There is however a much deeper significance to Songkran. Apart from marking a new beginning, Songkran is also a time for thanksgiving. It is an important time for individuals to IMAGE: SAURBKK / SHUTTERSTOCK.COM

orn on Oct. 5, 1975 in Reading, England, Winslet was raised by her father, Roger, and mother, Ann, both of whom were theatre actors, while her maternal grandparents, Oliver and Linda, founded and operated the Reading Repertory Theatre. When she was five, Winslet had her first taste of the family business when she played Mary in a school production of the Nativity. By the time she was approaching adolescence, Winslet decided to pursue an acting career and attended the Redroofs Theatre School in Berkshire, where she spent her time feeling miserable and being mercilessly called “Blubber” by her fellow pupils. When she was 13, Winslet made her first foray into professional acting by starring in a commercial for Sugar Puffs cereal. She made her British television debut on Shrinks (1991), then turned in several episodes of Dark Season (BBC, 1991), Get Back (BBC, 1992) and Casualty (BBC, 1986- ). Winslet then briefly appeared in her first made-for-television movie, Anglo-Saxon Attitudes (1992), a three-part miniseries based on Angus Wilson’s famed satirical novel.
After earning rave reviews for her performance, Winslet followed with a small role as a princess in A Kid in King Arthur’s Court (1995), then received wide critical praise for her subtle performance as the spirited Marianne Dashwood in Sense and Sensibility (1995), writer and lead actress Emma Thompson’s dramedy of manners about two opposite sisters struggling to find romantic fulfillment in a society ruled by financial and social status. Though the lion’s share of praise fell on Thompson, who won an Oscar for her screenplay, Winslet emerged as a star-in-the-making after winning a BAFTA for Best Supporting Actress and earning an Academy Award nomination in the same category.

For her first studio film, Winslet adopted an American accent to play dissatisfied Philadelphia socialite Rose Dewitt Bukater, who finds unlikely romance with a lower-class artist, Jack Dawson (Leonardo DiCaprio), in James Cameron’s spectacular epic, Titanic (1997). As Rose and Jack fall deeply in love, while incurring the wrath of her wealthy fiancé (Billy Zane), the famed ocean liner strikes a large iceberg and plunges into the icy depths, ending the affair in tragic fashion. More than just a film, Titanic was a cultural phenomenon, grossing more than $600 million and earning 14 Oscar nominations, including one for Winslet as Best Actress. Her onscreen chemistry with DiCaprio had a cross-generational appeal, while the young actress found herself splashed across numerous magazine covers and tabloids. Her triumph was tempered by tragedy when her former boyfriend, writer Stephen Tredre, died in December 1997 from bone cancer. Winslet skipped the premiere to attend his funeral. TITANIC WAS A CULTURAL PHENOMENON, GROSSING MORE THAN $600 MILLION AND EARNING 14 OSCAR NOMINATIONS, INCLUDING ONE FOR WINSLET AS BEST ACTRESS. Returning to Oscar caliber material, Winslet co-starred in the touching and contemplative drama, Iris (2001), essaying the youthful incarnation of British philosopher and novelist, Iris Murdoch. Based on husband John Bayley’s memoirs, Iris was a return to form for Winslet, who caught Murdoch’s unconventional, free-spirited youth - a perfect counterpoint to Judi Dench, who played the older Murdoch during her later descent into the ravages of Alzheimer’s. Though Dench had the juicier aspect of the character to explore, Winslet nonetheless delivered a compelling performance that earned the actress another Oscar nomination; this time for Best Supporting Actress. Late in 2001, Winslet announced her relationship with director Sam Mendes, whom she had started dating sometime after her divorce from director Jim Threapleton the previous year. Though she suffered insults about her weight as a child, Winslet proudly refused to conform to the typical Hollywood standard for extreme thinness and her fan base loved her for it. Not only was she happy with her figure as an adult, Winslet was unabashedly nude in several films and spoke openly of defying the industry’s IMAGE: FEATUREFLASH / SHUTTERSTOCK.COM

physical expectations. A small firestorm erupted in 2003, however, when a radically slimmed down Winslet appeared on the cover of GQ magazine. While it turned out that the actress was digitally slimmed by photo retouchers, Winslet blamed the controversy on herself for being so outspoken on the subject. Meanwhile, Winslet took on another free-spirited role for Eternal Sunshine of the Spotless Mind (2004), playing Clementine, a free-spirited book store clerk with multicolored hair whose breakup with her repressed boyfriend (Jim Carrey) prompts him to undergo a procedure to completely erase her from his memory. Again employing a flawless American accent, Winslet turned in a rich, multi-layered performance in one of her more unusual films to date, while earning several award nominations for Best Actress, including nods by the Screen Actors Guild, the Golden Globes and the Academy Awards. IMAGE: FEATUREFLASH / SHUTTERSTOCK.COM
THOUGH SHE SUFFERED INSULTS ABOUT HER WEIGHT AS A CHILD, WINSLET PROUDLY REFUSED TO CONFORM TO THE TYPICAL HOLLYWOOD STANDARD FOR EXTREME THINNESS AND HER FAN BASE LOVED HER FOR IT. Retreating to more obscure, independent roles, as well as motherhood and domestic life with new husband, Sam Mendes, Winslet co-starred in the emotionally engaging musical Romance and Cigarettes (2005), playing a seductive lingerie sales clerk who embarks on a passionate affair with a married ironworker (James Gandolfini). Winslet next starred as a single mom who engages in a steamy affair with a discontented married man (Patrick Wilson) in the critically praised drama, Little Children (2006). She earned several award nominations, including from the Golden Globes and the Academy. In a rare television appearance, she delivered a hilarious guest turn as herself on Extras (HBO, 2005-07), in which she gave series regular Ashley Jansen phone sex tips while dressed as a nun - a performance that earned the actress her first Emmy Award nomination for Outstanding Guest Actress. Back on the big screen, Winslet had a long-awaited reunion with Leonardo DiCaprio in Revolutionary Road (2008), a drama about a young 1950s-era couple looking for fulfillment in France

during an age of societal conformity. She would also appear in a supporting role in the Stephen Daldry-directed historical drama, The Reader (2009). In a remarkable one-two punch, she received a Golden Globe Award for Best Supporting Actress for her role in The Reader, as well as one for Best Actress in a Motion Picture - Drama for Revolutionary Road. After finally striking gold at the Globes, Winslet was poised for an Academy Award following her nomination for Best Actress for The Reader. As many assumed she would, Winslet took home the Best Actress Oscar.
IN A REMARKABLE ONE-TWO PUNCH, SHE RECEIVED A GOLDEN GLOBE AWARD FOR BEST SUPPORTING ACTRESS FOR HER ROLE IN THE READER, AS WELL AS ONE FOR BEST ACTRESS IN A MOTION PICTURE DRAMA FOR REVOLUTIONARY ROAD. Coming off such a cinematic high, she took a rare turn toward television with the titular role in Mildred Pierce (HBO, 2011), a miniseries remake of the classic Joan Crawford 1945 melodrama that starred Winslet as a former housewife-turned-successful businesswoman who loses control of both her spoiled daughter (Evan Rachel Wood) and herself at the expense of a playboy (Guy Pearce). For her work, she won an Emmy for Best Actress in a Miniseries or Movie as well as a Golden Globe for the role. Back in theaters, she next played Dr. Erin Mears an officer for the Centers of Disease Control investigating a pandemic outbreak in director Steven Soderberg’s take on the disaster genre, Contagion (2011). She followed with a tour de force performance alongside actors Christoph Waltz, Jodie Foster and John C. Reilly in director Roman Polanski’s Carnage (2011). Her work in the adaptation of Yasmina Reza’s venerated stage play God of Carnage, a pitch-black comedy-drama about two sets of parents meeting for a civilized discussion after their teenage sons are involved in a fistfight, had already generated substantial awards season buzz before its theatrical release.

ABSOLUTE THAI THE SCENT HOTEL
THE SCENT HOTEL A Fairy Story come to Life
H
.G. Wells once wrote a fairy story called The Door in the Wall – about a magic world that lay beyond a simple door and how, when you opened it, you’d step through into a beautiful garden where you’d always feel at home.
The lobby doesn’t appear to be such, not really. It’s a little like stepping into some old-time apothecary; you’ll see lots of tiny bottles on display in glass cabinets. The Scent Hotel gets its name from, yes, the fragrances that are almost everywhere on the property. (Guests, when signing in, are asked to choose one of three scents. Whichever one they choose will grace their room for as long as they stay.) The lobby walls are decorated with murals showing colonial days, with merchants standing on shores, ships leaving port and the sense of a world slowly opening up, as it did long ago.
The experience of stepping directly from one world into a totally different one isn’t just confined to stories though. On Koh Samui, if you’re driving up the Bangrak beach road, you’ll pass a wall, forgettably bland, except for the antique door that sits recessed in the center. A simple sign – gone in a flash, even if you are on the lookout – announces that this is The Scent Hotel.
You might wonder then exactly how old the hotel is. The murals appear to be ancient. It turns out they aren’t and the hotel is just three years old. But as you walk through you’ll doubt that. Though it’s modern, there’s something teasing about the atmosphere here that suggests it’s been here a much longer time. Perhaps it’s the antique phones in the rooms. (They all work, by the way.)
The door beckons. It leads, indeed, into another world, that of a remarkable hotel, one that’s quite different from most you’ve probably been in. Think back to fairy stories again and you’ll probably have some idea of what to expect: surprises, a sense of mystery; something that lifts the heart and calls for exploration.

Or the escritoires or the fact that the bathroom taps and fittings are all fine antiques in their own rights. The rooms come in three varieties: Thai, Chinese and European. Don’t expect any bland ‘hotel’-style fittings in either of them. Antiques abound, and so does comfort and a homely sense of stylishness. Floors are pleasant on the feet; beds are just right; TV and minibar are there if you need them. When it comes to food, hotel guests and visitors from outside are in for some real treats at Le Jaroen, the resort’s restaurant. Chef Jutamas Theantae has taught cooking at one of Thailand’s leading universities and the restaurant that she used to own in the north of the country was once voted one of Thailand Tatler’s best of the year. Her dishes are beautifully presented and are packed with taste. Asked to define her style, she’ll tell you it’s French, but with Thai ingredients wherever possible. She uses many locally-produced ingredients so that everything’s as fresh as possible. Not to be confused with fusion food, her dishes are recognizable and classic, but are dependably delicious.
THE GROUP DESCRIBES ITSELF AS FOCUSING ON A CELEBRATION OF THE INDIVIDUAL AND EACH ONE’S QUEST FOR HAPPINESS IN AN INCREASINGLY STANDARDIZED WORLD.
The Scent Hotel belongs to the prestigious group, Relais & Chateaux. They’re basically a collection of very independent hotels. To quote from their guide book, the group describes itself as focusing on ‘a celebration of the individual and each one’s quest for happiness in an increasingly standardized world.’ That’s not hype; they mean it. There are just 6 hotels that have made the grade in Thailand, and The Scent Hotel is proud to be one of them. If you’re looking for a unique experience, where you will be extremely well-looked after, and find a hotel that’s original, then first look for the door in the wall.

ABSOLUTE THAI OPIUM, WAR AND TEA
OPIUM, WAR AND TEA H WORDS: Dan White
igh in the mountains of northern Thailand near the border with Burma, is a town that carries the weight of a recent and very explosive history. Mae Salong is strung along a ridge of mountains, the descent on either side forming the walls of a natural fortress. The people who live here have traditionally been in dire need of impregnable defenses. They are the descendents of fighters from the 5th Regiment of the 93rd Division of the 26th Army, of the anti communist Chinese Kuomintang cut off by Chairman Mao’s all conquering Red Army as it smashed the forces of Chiang Kai Shek in Yunnan province and took the provincial capital of Kunming just after World War II. Eventually they ended up here, high on this ridge in northern Thailand as international anti-communist mercenaries, some of the world’s most prolific producers of opium for the international heroin trade and, more recently, purveyors of some of the finest tea you will find in Asia. Their story is a historical rollercoaster.
ABSOLUTE THAI
These days as you wander the winding streets of Mae Salong you pass a series of neatly turned out shops selling the main product of the area – Oolong tea. These slopes that were once covered with opium poppies as far as the eye could see, now produce 200 tons a year of high quality Oolongs. The climate and geography is perfect. As one passes tea shop after tea shop one encounters groups of experts from around the globe sampling what is on sale as if it was fine wine in Burgundy. It is a growing market, but the reason why it has come to be is a tale of suffering, war and bloodshed that goes back three generations and crosses three different countries. The defeat of the Kuomintang forces of Chiang Kai Shek at the hands of the People’s Liberation Army of Chairman Mao, came in 1950. Most KMT survivors fled to Taiwan. Not the 12,000 men of the 5th. They were left stranded and had to fight their way south into the jungles of Shan State in Burma.
34
A P R I L / M AY 2 012
Although Chairman Mao was victorious in China, the newly branded American CIA saw a useful opportunity to enlist these hardened fighters in a second front against the Chinese who had just invaded Korea. The KMT had just reopened an old Second World War airstrip at Mong Hsat and a mysterious American company called the ‘Sea Supply Corporation’, in reality a front for the CIA, started moving in goods en masse. The 23rd were now well supplied with state of the art American firearms and they set about trying to retake their home province of Yunnan. They made seven invasion attempts over the next two years but each time were beaten back by Chairman Mao’s troops.
SLOPES THAT WERE ONCE COVERED WITH OPIUM POPPIES AS FAR AS THE EYE COULD SEE, NOW PRODUCE 200 TONS A YEAR OF HIGH QUALITY OOLONGS. Meanwhile the Burmese became alarmed at this growth of this well armed and warlike fiefdom within their borders and over the next twelve years they did everything they could to suppress these unwelcome guests. The 23rd were well trained and so strongly backed by the Americans, that they were able to resist the combined forces of the Burmese and Communist China until 1961 when a combined force of 2,000 Chinese and 5,000 Burmese troops swept them out of their headquarters in Mong La and Kyentung in Shan State. Once again, the 23rd were on the move. At this point the US offered to help the survivors relocate to join their KMT brethren in Taiwan. About 4,200 made the trip from Chiang Rai to Taipei, but there the exodus stopped. Taiwan closed the doors on these most loyal of fighters and the 5th Regiment of the 93rd Division of the 26th Army was cut adrift – a well armed force in an unstable and lawless land. It was at this point that the leader of the renegades, General Tuan, led his force to the high forbidding ridges of Mae Salong. To this day it is these men and their descendents who populate the town – a little high altitude corner of Southern China in northern Thailand. General Tuan was faced with a dilemma. The funds were cut off and the situation of his people was precarious. From now on the Chinese fighters of Mae Salong would rely on opium alone to fund their survival.

ABSOLUTE THAI OPIUM, WAR AND TEA
As general Tuan said in 1967, “We have to continue to fight the evil of communism, and to fight you must have an army, and an army must have guns, and to buy guns you must have money. In these mountains the only money is opium.” Over the years this brought them into conflict with other regional warlords, such as Kun Sha, head of the nearby Shan United Army based at nearby Ban Hin Taek, and self styled Lord of the Golden Triangle. Both sides were heavily armed with a lot at stake and armed turf battles occasionally blew up into open warfare.
AS GENERAL TUAN SAID IN 1967, “WE HAVE TO CONTINUE TO FIGHT THE EVIL OF COMMUNISM, AND TO FIGHT YOU MUST HAVE AN ARMY, AND AN ARMY MUST HAVE GUNS, AND TO BUY GUNS YOU MUST HAVE MONEY. IN THESE MOUNTAINS THE ONLY MONEY IS OPIUM. With the increasing tension of the Cold War, this well armed group of fiercely anti-Communist fighters became of use to Thailand itself. The Thais had a home gown Communist insurgency on their hands in the shape of the Communist Party of Thailand (CPT) and its military arm, the People’s Liberation Army of Thailand (PLAT). At its height in the mid-1970s, the CPT was only rivaled in numbers by its equivalent in Vietnam and it fielded 14,000 armed fighters. In the rugged and mountainous north they were particularly strong, and the skills of the Chinese fighters of 5th Regiment proved a useful foil to employ against them. For five long years they fought the communists in both Thailand and Laos – a war funded almost entirely by opium, the trade for which was pragmatically tolerated by both the Thai government and the Americans who played a game of quiet facilitation in the name of ‘realpolitik’. By 1982 the CPT were largely defeated and the Thai authorities issued a general amnesty to those fighters remaining. The war was over and after three decades of almost constant warfare the hard-bitten soldiers of the lost regiments of the Kuomintang were at peace. As a reward for their efforts in combating the Communist scourge Thailand gave full citizenship to the people of Mae Salong; the future of their children was assured. One thing that couldn’t continue was the business of opium cultivation. Very swiftly this miniature narco-state was transformed into the series of tea gardens that you see today. These days one can see how the forbidding geography turned Mae Salong into such a useful refuge.

Should you decide to whimsy away your time here it will not be wasted, for Eilish Whitty and her team are impeccable hosts and will attend to your every need.
Given the time of our arrival in Rosslare we decided to stay in the luxurious surroundings of the Whitford House Hotel, an exquisite 4 star property which prides itself on old traditions and first class facilities. Conveniently located less than 20 minutes drive from the ferry terminal and just 2 km from Wexford Town, it is renowned as one of Ireland’s leading family run hotels.
When you think of Ireland’s South East, images of spectacular scenery come to mind. They strike you upon your arrival and remain with you long after you leave. Set within a diverse natural landscape of rolling mountains, tranquil valleys and a coastline fringed with expanses of white sandy beaches and secluded coves. Historic towns like Lismore in County Waterford, Enniscorthy, County Wexford, Cashel, County Tipperary, St Mullins, County Carlow or Inistioge in County Kilkenny serve as reminders of the rich cultural heritage of the region.

Wexford Town – existed and developed in relative isolation of each other giving rise to three different urban centres, each with their own distinct personality and geographic setting. The port city of Waterford, the region’s capital, sits sheltered in a deep harbour, Kilkenny on the banks of the River Nore and Wexford on the shores of Wexford Bay. Today, these cities are bursting with contemporary restaurants, bars and cultural events, forming the economic and cultural core of the region, offering visitors complementary, yet distinct experiences all within a short distance. Wander the cobbled lanes of Kilkenny, Ireland’s Medieval capital, trace 1,000 years of history in the museums and historic monuments of the Viking Triangle in Ireland’s oldest city Waterford, or visit the bustling coastal town of Wexford, with its narrow streets and broad quayside, home to the internationally acclaimed Wexford Opera House and Festival. The coastline is ideal for sailing, surfing and swimming, while scenic drives like the Copper Coast, Hook Peninsula and the River Barrow Heritage Drive are some of the best in the country. Anglers will experience some of Ireland’s finest fishing, while walkers and hikers will be welcomed by unsurpassed views from the summits of the region’s Blackstairs, Comeragh and Galtee Mountains. Ireland’s spectacular South Coast offers an equally extraordinary diversity of experiences within its compact space. From the rolling countryside, cultural attractions and lakes, to the pristine beaches, towering cliffs, remote islands and breathtaking sea views, visitors have a fascinating array of things to discover. So where better to end our sojourn in Ireland’s uttermost South, than the region’s capital. Cork City may be second to Dublin in size, but its unique blend of contemporary style and old-world charm has no peer. It is a cosmopolitan yet friendly place where the locals are famous for enjoying life to the fullest. Steeped in history, Cork is fast gaining a reputation as one of Europe’s hippest cities. Like Venice, the city is built upon water, and the city centre is built on an island in the River Lee, just upstream of Cork Harbour. The two channels of the River Lee which embrace the city centre are spanned by many bridges, and this gives the city a distinctive continental air.

fascinating shops, restaurants and cafés; and numerous pedestrian walkways and wide sidewalks flanked by smart boutiques and major department stores. At every corner you’ll come across another panoramic view, another interesting architectural feature and some of the best art galleries, theatres and museums in Ireland. For sophistication and elegance in the centre of the city, my wife and I usually stay at Hayfield Manor – a veritable oasis of calm set in two acres of tranquil, leafy gardens, close to University College Cork. The ambience is warm and friendly with the overall feel of a private manor house. A suitably grand staircase leads to 88 individually decorated rooms and suites with antique furnishings and plush fabrics, including a plethora of special touches such as golf-putters in every room. Overlooking beautifully manicured gardens, Hayfield Manor’s exclusive Orchids Restaurant is the premier choice for fine dining in Cork City, while Perrotts Garden Bistro, located in the conservatory area of the hotel, is the casual dining alternative that has become a favourite among guests and locals alike, where the service alone is an elaborate ceremony of almost forgotten rituals.
THE COASTLINE IS IDEAL FOR SAILING, SURFING AND SWIMMING, WHILE SCENIC DRIVES LIKE THE COPPER COAST, HOOK PENINSULA AND THE RIVER BARROW HERITAGE DRIVE ARE SOME OF THE BEST IN THE COUNTRY. No visit to Cork would be complete without a trip to Blarney Castle, home to the famous Blarney Stone. Tradition has it that those who kiss the stone will receive the gift of eloquence. If cultural overload sets in, there are numerous picturesque fishing villages within easy reach that offer a welcome break to the bustle of the city, including Kinsale, the renowned “Gourmet Capital” of Ireland. The wide variety of restaurants found along its narrow lanes offer choices to suit all palates with many providing world-class dining experiences. Foremost among them has to be the renowned Fishy Fishy Cafe on Crowley’s Quay, and Jola’s Restaurant in Lower O’Connell Street. Try their Seafood Chowder, Platter of Oak Smoked Salmon or the Irish Rack of Lamb with Basil and Walnut Pesto – pure perfection !

hen Peter Poudyel first stepped off the ferry and onto the jetty on Koh Samui, he was one of the very first tailors to set up shop on the island. Back then it was a new holiday destination and he probably had little idea that custom-made clothing would become so popular, and that in the space of a few years there would be almost 200 tailors on the island. Even in some of the most remote parts of the island you’re likely to find a brightly-lit tailor shop, where the owner will be willing to run you up a suit in no time. The problem is that it’s become hard to spot who really does deliver quality. You have to know who to trust.
If you visit Peter at Trend, you’ll find he has a calm sense of poise about him. No rush, no quick talking, no jumping to conclusions – here is someone who is used to dealing with people, and is in no hurry to hurry them. And this turns out to be one of the really crucial steps in the process of making clothes. “When people visit me, often they’re not quite sure what they want,” says Peter. “There are many different choices, and it can be hard to know what’s best. So the first thing we do is listen to the customer, and that also means asking plenty of questions. If we know why the client wants a suit, when he or she wants or needs to wear it, we can make appropriate suggestions.”
Peter Poudyel has remained in business ever since he arrived here and is probably the island’s best known tailor. He’s certainly one of the most successful. Despite being surrounded by so much competition, Peter doesn’t seem in the least fazed. Trend Fashion has carved out a solid reputation offering great quality at very affordable prices.

Our range includes Thai silk, Cashmere, Merino wool, linen, wool and cotton.” When clients have made a decision, it’s time for the second step. Measurements are carefully taken and noted, then Peter and his team get to work to produce the clothing, with a first fitting at the clients’ convenience. It’s a question of getting things exactly right and details are all important.
IT’S THE HUMAN ELEMENT THAT MAKES ALL THE DIFFERENCE, BEING ABLE TO TALK TO A PROFESSIONAL AND GET THE BEST ADVICE – AND THEN END UP WITH EXACTLY THE RIGHT CLOTHES, OF COURSE. AND THEY ALSO HAVE TO BE WELL DESIGNED. A second fitting comes a while later. “This time there are more adjustments, usually smaller, with the essential idea being to get everything exactly as it should be,” says Peter. “The end result has to be the satisfaction of each client.” Trend Fashion offers both casual and formal styles for men and women, as well as evening wear, and then there’s a selection of warmer or cooler materials. Peter also makes sumptuous wedding dresses, and children’s clothes, too. There’s an almost unlimited selection of designs from the classic to the latest trends. ABSOLUTE THAI CIVET COFFEE
CIVET COFFEE Good to the Last Dropping
G
oad Sibayan went prospecting recently in the remote Philippine highlands here known as the Cordillera. Reaching a valley where coffee trees were growing abundantly, he scanned the undergrowth where he knew the animals would relax after picking the most delicious coffee cherries with their claws and feasting on them with their fangs. His eyes settled on a light, brownish clump atop a rock. He held it in his right palm and, gently slipping it into a little black pouch, whispered: “Gold!” Not quite. But Mr. Sibayan’s prize was the equivalent in the world of rarefied coffees: dung containing the world’s most expensive coffee beans.
ABSOLUTE THAI
Costing hundreds of dollars a pound, these beans are found in the droppings of the civet, a nocturnal, furry, long-tailed catlike animal that prowls Southeast Asia’s coffee-growing lands for the tastiest, ripest coffee cherries. The civet eventually excretes the hard, indigestible innards of the fruit – essentially, incipient coffee beans – though only after they have been fermented in the animal’s stomach acids and enzymes to produce a brew described as smooth, chocolaty and devoid of any bitter aftertaste.
54
A P R I L / M AY 2 012
As connoisseurs in the United States, Europe and East Asia have discovered civet coffee in recent years, growing demand is fueling a gold rush in the Philippines and Indonesia, the countries with the largest civet populations. Harvesters are scouring forest floors in the Philippines, where civet coffee has emerged as a new business. In Indonesia, where the coffee has a long history, enterprising individuals are capturing civets and setting up minifarms, often in their backyards. Neither the Indonesian government nor the Association of Indonesia Coffee Exporters breaks down civet coffee’s tiny share of Indonesia’s overall coffee production. The Association of Indonesian Coffee Luwak Farmers, created in 2009 to handle the rising demand for civet coffee, or kopi luwak, as it is called in Indonesian, said most civet producers were small-time businessmen who exported directly overseas.
THE CIVET EVENTUALLY EXCRETES THE HARD,
Given the money at stake, fake and low-grade civet coffee beans are also flooding the market.
INDIGESTIBLE INNARDS OF THE FRUIT – ESSENTIALLY, INCIPIENT COFFEE
Competition is touching off fierce debates. What is real civet coffee, anyway? Does the civet’s choice of beans make the coffee? Or is it the beans’ journey through the animal’s digestive tract? Can the aroma, fragrance and taste of beans from the droppings of a caged civet ever be as tasty as those from its wild cousin?
BEANS – THOUGH ONLY AFTER THEY HAVE BEEN FERMENTED IN THE ANIMAL’S STOMACH ACIDS AND ENZYMES TO PRODUCE A BREW DESCRIBED AS SMOOTH, CHOCOLATY AND
Vie Reyes, whose Manila-based company, Bote Central, entered the civet coffee business five years ago, said she bought only from harvesters of the wild kind. Ms. Reyes exports to distributors overseas – Japan and South Korea are her biggest markets – and also directly sells 2.2-pound bags for $500, or about $227 a pound.
DEVOID OF ANY BITTER AFTERTASTE.
Maintaining quality was a constant challenge because distinguishing the real stuff from the fake was never easy. One time, harvesters sold her regular beans glued to unidentified dung. “I washed it,” she said. “But the glue wouldn’t come off.” One of her suppliers, Mr. Sibayan, 37, buys beans from collectors throughout the Cordillera, a mountainous region in the north that can be reached only after a punishing 12-hour drive from Manila. On a recent day, he dropped by to see the Pat-ogs, who own a 1.7-acre lot just outside this town. Until Mr. Sibayan began buying their civet coffee four years ago, the Pat-ogs had never given much thought to the droppings left behind by the civets that came to munch on the family’s coffee trees at night. They discarded the beans or mixed them with regular beans they sold to agents. Now, they were getting about $9 a

pound for the civet beans, or about five times the price of regular coffee beans, which, furthermore, required labor-intensive harvesting. Mr. Sibayan inspected their batch and said he would pay just under top-grade price. He had found some impurities – inferior beans that the civet had spat out; beans chewed on, not by civets, but bats – that were indiscernible to all but Mr. Sibayan’s expert eye or, rather, tongue. Licking one bean, he explained that real civet coffee beans should have lost their natural sweetness and acquired a rough texture. “This is pure, good quality,” he said, adding, “Once, some farmers tried to fool me by slightly roasting regular beans to remove the sweetness.” Alberto Pat-og, 60, a retired school principal, said he did not understand why foreigners were willing to pay so much for a cup of the stuff. “We are a bit surprised,” he said. “A bit perplexed.” His son, Lambert, 20, added, with a big grin, “We are ignorant.” The Pat-ogs wished they could expand their business but said there were simply not enough civets around. Compounding the problem, farmers around these parts tended to trap civets, which also have a taste for chicken. Local residents still prized civets less for their coffeepicking ability than their meat, which was typically dried before being prepared adobo-style. “It’s very difficult to convince my neighbors not to kill civets because they’re considered such a delicacy here,” the father said. In Indonesia, too, a shrinking civet population is creating obstacles for those hoping to ride the civet coffee boom. Civet coffee has long been centered in the western island of Sumatra, where a growing human population, economic development and deforestation have eroded their habitats. Mr. Widjaja, the Jakarta store owner, said that the Dutch, who ruled Indonesia for more than three centuries, and Japanese soldiers, who occupied the country during World War II, were the most die-hard drinkers of civet coffee. But the coffee all but disappeared after the late 1950s, he said, and resurfaced on the market only after its reputation began spreading overseas. After he began fielding inquiries in 2007 from interested buyers in the United States, Japan and Taiwan, he secured a regular supply of wild civet coffee and began selling it only last year – at $150 a pound.

Mega Kurniawan, 28, entered the business two years ago by setting up shop in the backyard of his family home. He had already expanded to three other locations and was now in civets full time. With a total of 102 civets, he gathered about 550 pounds of beans a month. During the day, Mr. Kurniawan’s civets slept inside their small wooden cages before growing active at dusk. At night, the animals ate from fresh plates of coffee cherries, replenished every two hours, or paced back and forth at a brisk, caffeinated clip. Though caged, the civets ate only about half of the beans placed before them, choosing only the best specimens, Mr. Kurniawan insisted. He dismissed connoisseurs’ criticism that stress felt by the caged animals invariably affected the taste of the beans. “It’s the same,” he said, acknowledging, however, that some buyers preferred wild civet coffee. “Maybe it’s the prestige.” A few blocks away, Ujang Suryana, 62, had his own firm opinions about what constituted real civet coffee. A reflexologist, Mr. Suryana began moonlighting in civets three months ago after catching a local television report on the brew’s popularity abroad. He pooled $1,000 to buy three civets and cages.
LOCAL RESIDENTS STILL PRIZED CIVETS LESS FOR THEIR COFFEE-PICKING ABILITY THAN THEIR MEAT, WHICH WAS TYPICALLY DRIED BEFORE BEING PREPARED ADOBO-STYLE.
He had already found a way to increase the civets’ output exponentially by mechanically stripping the coffee beans from the cherries and mixing them in a banana mash. The civets gobbled it all up. This way, no beans were wasted. What is more, he had raised the dung production from 2.2 pounds a week to a whopping 6.6 pounds a day. But wasn’t Mr. Suryana denying the civet its renowned ability to sniff out the best beans? He scrunched up his face as if to wave away the suggestion. “The most important thing is that the beans go through its stomach and are fermented,” he said. “It all tastes the same, anyway.” Thailand produces its own brand of this unique coffee offered by Doi Chaang Coffee. Ask around to find a local coffee shop serving this one-of-a-kind coffee!

ABSOLUTE THAI THE KINGDOM OF A 100 FRUITS
THE KINGDOM OF A HUNDRED FRUITS T
here are many possible reasons for people to go to a foreign country – on business, for pleasure, to study, to visit relatives and friends, for shopping, etc. But the reasons probably do not include eating, even less eating fruit.
after the English names to facilitate the identification of the fruits. Prices given are just rough indicators. The actual prices may vary according to the season, the harvest and where the fruits are bought. Banana (kluai), there are 3 main species: 1. The fragrant banana (kluai hom), most palatable and most commonly eaten by foreigners; 2. The namwa banana (kluai namwa), either eaten raw as fruit or cooked in many different ways and eaten as a snack; and 3. The egg banana (kluai khai), small in size with a thin skin, a specialty of Kamphaeng Phet Province. Season: All year round.
Those who come to Thailand, however, will find that fruits in this country are so plentiful, so diversified, so inexpensive and so delicious that they constitute an unexpected reward, a bonus. It is not simply because of its geographical position as a tropical country that Thailand produces so many different kinds of fruits of good quality. The tropical climate is certainly favourable to the growth of vegetation.
Coconut (ma-phrao) Only the young ones are eaten as fruit. Scoop out the tender meat with a spoon and drink the refreshing milk with a tube. Season: All year round.
But there are other factors that have contributed to the rich production – the fertile soil, the introduction of new species from foreign countries, the continued efforts to improve the quality of fruits by scientific methods, and the comparative length of Thai territory, which extends right into the subtropical zone, making it possible to grow fruits native to places of higher latitudes.
Custard Apple (noi-na) Transplanted from Central America long ago. Easily broken with a squeeze. Eat the soft, white meat with the help of a spoon and leave out the seeds. Season: June to August. Durian (thu-rian) A very special fruit. Reputed to be the king of all fruits, its strong smell sometimes turns people away before they have a chance to taste it. However, if one can overcome one’s initial dislike of its foul smell and give it a try, one is likely to love its rich, unique flavour.
Here is a brief introduction to several kinds of fruits produced in Thailand that are worth special recommendation. Names in Thai with their romanized spellings are given

Among the various species, the golden pillow (monthong) is most agreeable to the beginner.Other famous varieties include the long-stemmed (kanyao) and the gibbon (cha-ni). Season: May to June.
GRAPE
Grape (a-ngun) First transplanted from Europe about a century ago, it has thrived for the past two decades after new varieties suitable to the tropical climate were developed. Both the green and the red varieties are available. Season: December to April. GUAVA
Guava (farang) The Thai name means a White or a Westerner. The fruit derived its name because it originated from tropical America. It has become a popular fruit only after the new Vietnamese species was widely planted more than a decade ago. Eat the white, crisp flesh either alone or with the condiment provided free by the vendor. Don’t eat the core, which would cause constipation. Season: All year round.
JACKFRUIT
Jackfruit (khanun) Somewhat like a durian but even bigger, it takes an expert to open it with a sharp knife. But people usually don’t buy a whole fruit. The vendor will open it and take the yellowish flesh out for retail. Its large seeds are edible after being boiled, and are nutritious too. Season: Almost all year round. Longan (lamyai) Brought into this country by Chinese immigrants hundreds of years ago, it was first planted in Bangkok and then in the North. It is in the North that the fruit has flourished and become one of Thailand’s largest export fruits. The most famous species is the pink longan produced in Chiang Mai. Its flesh is pinkish and thick and delightfully sweet. Season: May to July.
LONGAN
Lychee or Litchi (linchi) Also transplanted from South China, but much later than the longan. Now, it is widely grown in Chiang Mai and other northern provinces and is just as good in quality as the fruit produced in China. Its slight tartness gives its sweet pulp a unique taste. Season: April to May.
LYCHEE OR LITCHI
Mango (ma-muang) Like the persimmon, the mango can be eaten both ripe and unripe. Some varieties are best eaten ripe and some others, unripe. The former includes namdokmai and okrong, and the latter, the khiao-sa-woei and nangseam. The Thais are fond of eating ripe mangoes with sticky rice and coconut cream. It is sold everywhere when the fruit is in season. You should give it a try. Season: March to May.
MANGO

contained in the skin stain your clothes, which would leave marks hard to remove. The white juicy pulp is divided into 5 to 8 segments, of which 1 to 3 contain a seed. The sweet flesh has a delicate texture and will melt in your mouth Season: May to July. PAYAYA
Papaya (malako) Originating from tropical America, the plant has been grown in this country for so long and so extensively that the Thai people tend to consider it a native of their land. It is easy to grow and highly productive. That is why it is among the cheapest. But don’t judge its quality by its price. The former is out of proportion to the latter. Slice it lengthwise and eat it with a spoon, or remove the skin and eat with a fork. A squeeze of lime juice will enhance its taste. Season: All year round. Pineapple (saparot) Sweet, succulent and rich in vitamin C. Add a little salt to enrich the flavour. Largest plantations are in Prachuap Khiri Khan and Phuket in the South, Chon Buri and Rayong along the eastern coast, Prachinburi near Cambodia, and Lampang in the North. Most of the fruits are canned and exported. This serves to prove the excellent quality of the pineapples produced in this country. Season: All year round.
PINEAPPLE
Pomelo (som-o) The Siamese pomelo was well known in the native country of the ethnic Chinese in Thailand decades ago. In fact, that was about the only Thai fruit known to their relatives at home. Although that was partly because the pomelo is more durable than most other fruits and can endure a long sea voyage without perishing, it is an undeniable fact that the Thai pomelo has earned fame for its country for long. The fruit is easier eaten than peeled. But the good taste is certainly more than worth the effort. Anyway, the vendor can do the job for you free of charge. Season: August to October.
POMELO
Rambutan (ngo) In bright red with yellowish or greenish hair, the rambutan is beautiful in appearance. Its white flesh is firm, sweet, and juicy. The most widely grown species are the pink rambutan, the school rambutan and the che-mong. If you find that the meat does not come off the seed readily, you may use a knife to help. Season: May to June.
RAMBUTAN
Rose Apple (chomphu) Another lovely fruit mostly in light green. Shaped like a bell, it can be eaten whole after the hollow end is cut off and a few tiny seeds inside removed. The fruit is crisp and succulent and only slightly sweet. Thais often eat it with a sugar-pepper condiments or nampla wan sauce to add to its taste. Season: May to June.

Tangerine (som) Much improved in taste and texture in the past few decades. Formerly, only those grown in Bangmot district in the outskirts of Bangkok were famous. Now, orchards in Samut Sakhon, Rayong, Chanthaburi and Chiang Mai also produce tangerines of high quality. Season: All year round. Watermelon (taeng-mo) The large round fruit has a hard green rind, a watery red pulp and small brown seeds. It provides plenty of not-too-sweet water and is an ideal fruit to eat when you are thirsty. Its quality is by no means inferior to any famous species produced in other countries. Season: All year round.
TANGERINE
There are many, many other fruits produced in this country. Indeed, it is no exaggeration to call Thailand the kingdom of a hundred fruits. Those not mentioned above may be less well known. Yet they each have their special flavour liked by some at least. As you can see from the above, May and June are the two months when most of the famous fruits are on sale in Thailand. You are fortunate if you happen to be in this country during this period. If not, do try to come before the end of summer in order to claim the bonus which is waiting for you to collect. WATERMELON

One special app highlights just the “Top 50 Amazing Experiences in Thailand.”

A dedicated IT development team was set up to create these special tourism-related apps under the global marketing theme, “Amazing Thailand: Always Amazes You.” The applications are full of interesting facts, travel tips and destination details; all available for free.
TAT Governor Suraphon Svetasreni said, “With the TAT targeting more first-time visitors, these apps will go a long way towards helping travellers get around more comfortably without having to carry guidebooks. They can plan their journeys in advance, research their requirements and get assistance.
