An ice-cold flute of champagne from the Red Carpet Champagne bar would sure hit the spot. When I first read about Nyepi Day, I was really astonished at all of the history and festivities around it. If you’re lucky enough to be in Bali on this day, I hope you can really enjoy and cherish it. These holidays are a great way to learn about other cultures and they help us to look back at our own culture with curiosity.

f all the things to do during the adventures in any foreign land, one not to be missed is taking in the hustle and bustle of the local markets. The perfect playground of sights, sounds, and tastes to get a glimpse into the ground-level inner-happenings of a foreign country - the marketplace offers a real, authentic experience of local culture and customs untouched by the commercialism or modernism resulting from the development accompanying tourism’s usual ef-

fect. There’s something particularly special about these gathering places for the local community that comes alive with an enticing buzz, as merchants deal their wares to shoppers seeking out deals and uncommon finds. The market is also a fascinating location for people watching - observing some peddlers aggressively soliciting foreigners to purchase the most ridiculous of unneeded things. Others more warmly persuading guests with an admirable persistence and seductive charm; and some just lazily kicking back while the day passes by along with the shoppers. And in a place as culturally and artistically-rich as Bali, a visit to at least one of the traditional markets is an absolute must.

place to discover an extensive array of hand-crafted goods and products, Balinese art and exquisite wood and stone carvings, traditionally designed Indonesian clothing, and all kinds of rare goodies guaranteed to please all tastes. What you’d pay top-dollar for overseas in fancy import stores can be yours here for less than the cost of shipping, were one to order the same products online. The local markets are prime grounds for a treasure-scour, with many strange and curious pieces buried amidst the typical commodities. And, whether you’re wanting to take home an extra suitcase or two of cool and fun articles or not, a trip to the Balinese markets comes complete with a commotion and an unmatched excitement that is not to be found anywhere else.

More awaits the trade of your rupiahs than just an intriguing assortment of trinkets, toys, and native artifacts, however. The markets are also an exceptionally wonderful place to sample a range of exotic flavors and dishes unavailable in most tourist-oriented restaurants and warungs found in the popular spots. Forget the expectations of anything resembling formal (or even casual) dining - the foods at most markets will be on display on push-carts, miniature stands, and ruggedly propped-up tables, leaving the taste experience to stand for itself. From satays, to soups and salads, desserts, and the most curious of snacks - those accustomed to conventional western food may not even have the frame of reference to comprehend the surprising taste complexities of small, edible wonders and dishes cooked up in open-air “kitchens” - or shipped in from Balinese family compounds. Yet, the culinary adventurous will not be disappointed, with plenty of surprises to tickle the taste buds and satisfy your palate. And of course, there’s no better site to practice the art of the deal. Bargain hunters best prepare for an engaging banter and back-and-forth price-war, sharpening their negotiation skills to ensure they don’t overpay and become one of the many naive suckers some vendors can’t help but taking advantage of. Simply accepting the first price a vendor offers, you may risk paying 3-4 times as much as what they’re really willing to accept.

Of course, some tourists do agree to the inflated prices, which may still seem like a deal compared to what they would pay back at home - and the sellers complete their transaction with a smile and smug satisfaction of an extraordinarily good pay-day. But, do know that most price-negotiations at the markets are treated like a game, and most often there is plenty of room to haggle down the cost of that special something you’re eyeing to take home before opening your wallet. You may have to battle with a sense of self-consciousness in not wanting to feel like a cheapskate by giving such low counter-offers - but maintain a light-hearted spirit, don’t take it too seriously, and just have fun. Your hosts may appreciate the good-spirit, and you make a new friend out of the interaction as well. And if the seller still doesn’t want to budge, just walk away - chances are, they’ll come running after you to accept or you’ll find the same goods for a better price at the next shop.

Especially on abundant display, are local “batik” designs - a very common colorfully designed fabric produced by dyeing textiles after first applying wax to the parts to be left undyed, whose process originated in Java. Though, the style-conscious westerners are far more likely to find the newest, hippest addition to their wardrobes elsewhere. For those craving a more westernized shopping experience - Kuta’s Discovery, Galleria, and (the new and beautifully laid-out) Beachwalk malls provide those with money to burn plenty of hip retail outlets to saunter through and scan for new additions to your wardrobe. And, a fine selection of designer goods - of both familiar brand names and many from expat fashion designers choosing Bali as their home base - are also to be found in dozens of unique boutiques along the main tourist strips of Seminyak, particularly Jalan Seminyak and Laksmana.

Those seeking some particularly unique clothing might also be interested in having some pieces custom-tailored. Several decent tailors can be found in Legian and Sanur, who specialize in fitting your chosen materials into quality suits and formal dress wear - much similar to those abundantly found in Thailand. But for the fashionistas wanting something even more special, Denpasar’s Jalan Sulawesi - also where Denpasar’s biggest market can be found, smack dab in the middle of Bali’s capital city between Jalan Gahaj Mada and Jalan Gunung Batur - may be the place to go. Lined with dozens of textile outlets, there are literally thousands of designs in all variety of fabrics one could choose from to have any type of garment custom-designed. Some of the shops offer in-house tailors that can either cut your chosen patterning to any provided design, or produce something totally new for you on the spot - and if not, it’s only a stone’s throw to one who can.

Besides Denpasar, other markets well-worth a visit are Ubud’s, on Jalan Raya Ubud; the Sukawati market, to be found on the way up to Ubud from Sanur; and the markets at Tanah Lot - Bali’s most famous beachfront temple, to the west of Canggu. No need to see them all - most resemble one another, with the same types of things for sale. But, if you’re looking to get away from the usual tourist traps and see a bit more of what makes Bali uniquely Bali, be sure to schedule in at least one visit to take in a bit of the market life.

hether on holiday or living here on the island we all love to have a bit of ‘me time’ and what is better then to visit a beauty salon that will make us feel like a fairytale princess. Sounds just like something you are after? Well ladies I have ‘sacrificed’ one of my days to go on a mission to find THE spot for us all.

any reason at all. That’s right, even tourists are expected to respect the traditions and will not be allowed outside of the grounds of their hotel or use lights until 6 a.m. the following morning. Don’t worry though, because Nyepi day can really be a lot of fun, provided you plan accordingly.

s anyone who has ever been to Bali knows, the culture, the traditions and the holidays especially are a big part of what draw people to the island year after year. These holidays and traditions can range from fun to downright strange and everywhere in between, but the one that seems to perplex people the most is Nyepi Day. Celebrated on a different day each year (although usually around March) Nyepi Day marks the Balinese New Year according to the Balinese calendar. Since the Balinese Calendar works much differently than our own, this year the Balinese won’t be bringing in the year 2013, but 1935 instead. Starting the night before with an elaborate parade, Nyepi goes into full swing at 6 a.m. when people (Balinese and foreign alike) are prohibited from going outside of their homes or hotels for

Understanding the traditions behind Nyepi Day To some it might seem completely nonsensical at first to have to stay inside in the dark for a full 24 hours. Remember though, that stories of a fat man in a red suit led by flying reindeer to distribute gifts to children in the dead of night is another tradition that most cultures hold dear to them. The reasoning behind the story of Nyepi, like many in Bali, at its base is a story of good and evil. Before Nyepi, each Banjar (local Balinese community) in Bali will create a large, elaborate and colorful paper mache monster, often modeled after the creatures from Balinese folklore. These statues are called Ogoh-Ogoh, and are a photographer’s dream come true.

Nyepi goes into full swing at 6AM when people (Balinese and foreign alike) are prohibited from going outside of their homes or hotels for any reason at all. Once completed, these large (2-5 meter tall) Ogoh-Ogoh are attached to bamboo poles and carried out onto the streets where the different Banjars will congregate for a parade, all marching with their own Ogoh-Ogoh down the street. Each Ogoh-Ogoh is carried by 10-25 men depending on its size and they all have the task of keeping it raised off the ground, which can be quite difficult especially given how often they stop to make the Ogoh-Ogoh dance. For what you might ask? Why, to scare off the demons of course. In Bali, the idea the good and evil spirits are all around us in our everyday lives is well-believed and a bit of evil cleansing once a year or so is just what the doctor ordered. So after a parade to shoo the spirits away, the OgohOgoh are set down and the Balinese return to their respective Banjars. Once it gets to be late, everyone gets settled in to their homes or hotels where they will be confined to for the next 24+ hours. Once 6 a.m. rolls around, the real Nyepi Day starts. No one is allowed outside of their homes or hotel grounds (except for village police to patrol the area) and electricity, noise and commotion needs to be kept to a minimum. This is done because when the evil spirits that were just shooed away from the island come back again, they will believe the island is deserted, thus moving on and finding another place to instill their evilness.

Enjoying Nyepi Day These days, if you ask the Balinese you will find some who believe in the demons going away and coming back as much as adults believe the story of Santa Claus in the West. Many still take the holiday very seriously though and in addition to not going outside, they will not use electricity, eat or sometimes even talk. As a very serious holiday in Bali, it is asked that you respect the traditions of the Balinese for just 24 hours per year. If you are staying in a hotel then you will still be allowed to roam free around the grounds of your hotel, interacting with other hotel guests although you won’t be allowed to go into the street. The use of electricity is permitted as well as light to a certain extent for hotel dwellers, but those that get too rowdy will likely be asked to tone it down.

These days, if you ask the Balinese you will find some who believe in the the demons going away and coming back as much as adults believe the story of Santa Claus in the west. Some people find that these rules are entirely too restrictive and plan their holiday in Bali to avoid Nyepi or to leave the island for a few days when Nyepi arrives. While that is perfectly fine, Nyepi can be a great experience and most people that spend Nyepi Day in Bali say they wish it was something that was done all over the world just one day a year.

For expats or longer term residents including nonBalinese Indonesians, Nyepi is a great excuse to get together in a common place with friends and spend the day together. Lots of people rent a villa or similar accommodation and use it as an excuse to either party or relax, whatever suits their fancy. When staying in a villa or at home though, you will be without the luxuries of a hotel (which will cook food for guests on Nyepi) and preparation is essential. You will need to stock up on enough food to last each person for two days and whatever else you might need to keep you happy. Past

One of the big things that people can’t help but notice about Nyepi is how quiet it is. Being in Bali it can be quite easy to quickly adjust to lots of background noise going on around us as motorbikes whizz by honking at each other but on Nyepi there is none of that. You will hear the sounds of birds singing, no matter how quietly and lots of other things you might not pick up on in Bali on a daily basis. If you are lucky enough to have Nyepi fall on a sunny day, you will be amazed at how clear the sky is too. The absence of cars and motorcycles on the

road for just one day really cuts down on pollution and the difference is definitely visible. A clear, starry night on Nyepi while the rest of the island is pitch black is one of the most breathtaking sights a person can witness.

Nyepi is a great excuse to get together in a common place with friends and spend the day together.

Will you be in Bali for Nyepi this year? If you can be, it’s a fantastic experience, and I highly recommend it. Don’t be scared off by the thought of not being able to leave your house, villa or hotel for 24 hours, slowing down and relaxing for a day is good for you. Just 24 hours later, life will pick up right where it left off although possibly with a much calmer, more serene state of mind for you.

The thing that always sticks out to me the most is that upon waking up after Nyepi Day with the freedom to go out again, I usually have no desire to and am perfectly content to spend another few hours, by choice, relaxing in the exact spot I had been confined to for the past 24.

nika Tanya Maraj was born on December 8, 1982 in Saint James, a suburb of Trinidad and Tobago’s capital city Port of Spain to parents Carol and Robert Maraj, an accounting clerk/gospel singer and an employee at American Express, respectively. Her parents are of mixed Indian and Afro-Trinidadian ancestry and she lived in Saint James with her grandmother. Minaj is the middle sister to brothers Makiya and Jelani, as mentioned in her song I’m the Best on her debut album, Pink Friday. Her mother would occasionally visit, and one day, when Minaj was five, her mother picked her up to move to the Queens borough of New York City. According to Minaj, her father drank heavily, took drugs, and once tried to kill her mother by setting the house on fire. Minaj attended Elizabeth Blackwell Middle School 210, where she played the clarinet. She then graduated from LaGuardia High School, which specializes in music and the visual and performing arts. erhaps much of Bali’s development boom can even be contributed to the steady influx of surfers flocking here in search of the perfect wave. Countless surf movies and magazines feature this Island Of The Gods as the epitome of the island paradise. And for decades, masses of religiously-devoted surfers have made their pilgrimages to this treasure of the Indian Ocean - boards under their arms, eager with anticipation of the ultimate ride.

For the newbies excited to check learning to surf off their list of things to do on vacation, there’s no better place to head than Kuta. The busiest and most developed beach in Bali - it may not be the most serene sandy nirvana. Yet the waves here are among the island’s most tame and forgiving on those daring to take up the skill. One only needs to step onto the beach before being offered a surfboard to rent or lessons. Or for those on a budget, deals can be found at many of the shops down the Gang Poppies 1and 2. The whole stretch of beach at Kuta has been taken over by surf culture, with locals and tourists alike reveling in the glory of a lifestyle centered on the wave, sun, and smiles that inevitably accompany it. Up the other direction from Kuta, some decent waves can be found at the beaches of Seminyak - though the closest and most-frequented being Canggu’s Berawa,

Batu Belig, and Echo beaches. There are surely waves to be found venturing yet further out along the coast to the west - as well as the eastern coastline up past Sanur -Keramas, in particular, a favorite with locals wanting a good, uncrowded ride. These destinations may be a lengthy trek away, but perhaps far preferable for those craving the solitude unavailable at the “popular” beaches, enjoying the ocean’s best all to themselves. For the more experienced, the stuff dreams are made of are to be found down south in the Bukit peninsula. The beautiful, epic, powerful sets of waves steadily rolling in against the stunning cliff-line are absolutely breathtaking, whether you surf or not. And for the hardcore surfers, the scene is one that is quite likely to cause a waterfall of salivation. The Bukit is the picturesque fantasy all surfers at some point have drooled over, complete with a laid-back surf culture guaranteed to make locals, expats, and visitors alike feel at home.

Uluwatu is undoubtedly the biggest and badest of them all - definitely not for beginners. Countless classic photography sessions have gone down here, turning the once hidden-gem into one of the all-time must-surf locations. Equally as cool as the excitement to be had on the water, is the mini-community built above the “beach.” A terrace of cool warungs, homestays, surf shops, and bars climbs the cliff-face all the way up to “Single Fin” - a bar/restaurant and spectacular place to take in the sunset, perched high upon the cliff with sweeping wide views and all-good vibes, known especially for their Sunday night parties.

The beautiful, epic, powerful sets of waves steadily rolling in against the stunning cliff-line are absolutely BREATHTAKING, whether you surf or not. Heading back up toward the mainland, one can find a number of other great surf beaches (though less treacherous than Ulu): Padang-Padang, the secluded Bingin, notorious Dreamland, and Balangan. Each is well worth checking out, with a unique atmosphere and vibe all their own. Bingin and Balangan are probably the best two for an extended getaway - each secluded and offering a variety of low-cost on-beach accommodations. Forget about the crowds, traffic, and solicitors - a couple nights at these beachfront paradise hideaways is a treat any surfer would be missing out on experiencing. And, there are also a few other options on the Bukit, with good surf to be found at Green Ball, some random unmarked and unnamed beaches, and certain parts of Nusa Dua. If looking to buy surf gear - boards, shorts, clothing, or other paraphernalia - most of Bali’s surf shops can be found scattered around near the more popular beaches. Bargain hunters might best try their luck searching at one of the bigger outlets on the main road between Kuta and the airport/Bukit, which offer a great selection of factory-direct goods and unbeatable deals. And here and there off the beaten path, you may find a local shop selling custom hand-designed boards run by wide-smiled, big-hearted surfers whose love for their sport and art is as evident as the detail going into their carefully crafted works.

One major downside of Bali’s accelerated growth, as several veterans here have voiced, is that the innocent feel of the pure surfing experience has been somewhat spoiled as the beaches have gotten crowded with foreigners bringing with them not such happy attitudes. Note to visitors: the fact you’ve traveled across the sea to be here does not entitle you to a wave before everybody else! Be mindful, and show respect for others - stay cool, and have fun. And while Bali’s business may have become a turnoff to some, the island is still a great jump-off point to several quieter surrounding islands. To the immediate east: Nusa Penida, and Nusa Lembongan. Venturing a bit further, Lombok, and Sumbawa. And the larger islands to the west, Java and Sumatra, are also well-known in the global surf community as home to countless off-the-map jewels.

In summary: Whether a seasoned pro, or a complete beginner, there’s no better place than Bali to grab a board and hit the water. Bring your smile, leave your worries on the beach, and live by the simple wisdom: “surf’s up!”

any people come to Bali to rest, party, surf, shop and many these days come looking for a spiritual experience. I came to Bali with some friends on a retreat research trip in October 2010, while I was here I ‘got the call’. Four months later I was back, with two suitcases and no plan and no idea why. The call was so strong that I simply couldn’t ignore it. Bali’s reason for calling became very apparent within a month and my spiritual experience began and then compounded and then got really really big, there are so many of these stories, here is one of my favourites I would like to share.

This ceremony only takes place twice a year and I heard it was quite an interesting spectacle involving men in trance coming at each other with a traditional Balinese sword called a Kris. I travel to Bongkasa with a group of my Spiritual Balinese family. We spend a lot of time traveling together in Bali and Java doing spiritual work.

Upon arriving at Bongkasa, we find a massive gathering comprised of roughly 1200 locals. At some point, a frenzied commotion breaks loose in the arena area. Four men have been put under hypnosis and are being carried out on bamboo contraptions that look like stretchers. They are wrapped up like mummies and are decorated in flowers. They get placed in a Bale (Balinese open roofed area), where several priests are chanting and carrying out the ceremonial rituals. The men were

I’ll set the scene for you. It’s February 2012 and I’m a few weeks into my Spiritual Training to become a Balinese Hindu Energy Master. I am advised very strongly that I should attend the Calon Arang ceremony up in the village of Bongkasa- around 30 minutes west of Ubud.

then hypnotized to sleep. Their eyes were closed and they demonstrated the slowest breathing I have ever seen. They almost looked dead. Some time passes and they are then taken into the main temple, unwrapped and more chanting ensues. They are blessed with Holy Water and slowly they come alive. They sit and pray for a while and then are taken back to the main arena. A man emerges with a wooden mask with big intimidating eyes. Most foreigners find these masks quite intense and even frightening when they first see them but now that I understand more about Balinese culture, I actually find these masks beautiful. The masked man puts the other men into trance and gives them each a jagged sword called a Kris. The men start running around in a crazed frenzy. As an outsider, the spectacle was extremely exciting. They start grabbing men out of the crowd and holding them while the men come at them with the swords. What’s fascinating is that they don’t seem to be getting hurt.

THEN…before I know it, a Jero Mangku from my Balinese family has got me by the arm and is pulling me down the stairs towards the area where the men with swords in trance are. It all happened so fast that I was in the middle before I knew it. Before going to the ceremony, I knew the premise of it and was very excited to witness this purported ‘stabbing event’. I guess, on reflection, part of me wanted to experience it but I really didn’t think it would actually happen. So when I was almost at the bottom of the stairs I recall thinking, oh well, here we go! Everything went into overdrive from there. I was in the middle of the arena. 1200 Balinese cheering, yelling and hooting at the Bule (Bule means white ghost or foreigner in Balinese). Two men held each of my arms. I looked up and about 10 metres away a man in trance with a Kris was coming straight for me, full pelt, Kris pointed at my stomach, I started screaming and fighting and saying, Oh My God, Oh My God, I was fighting so hard, I didn’t really think I was going to die or anything but I didn’t really feel like I was in this world- I was just reacting. The guy hit me just above my belly button, Boooooooooooooof! I was involuntarily thrown

backwards and got the wind knocked out of me. I grabbed the Kris with my hands and was trying to stop it, but his strength was out of this world. I was beyond shock- I was in Total Fear.

Then I heard a voice in my head say, ‘well this is what you wanted, you are in it, why are you fighting it?’ In an instant I knew that I needed to put my trust in the process and completely surrender to the experience. I let go of the Kris and allowed the men to hold my arms. The man fell away. I looked up and there was another coming at me full pelt again, this time I knew that I couldn’t fight, Bammmmm! He hit me and was jabbing really, really hard into my stomach, I was watching the Kris push my stomach very deeply in yet it wasn’t really hurting me nor was it piercing me. Then he fell away, I look up again. Another was on his way, he came in just as hard as the last. Then a thought crossed my mind about how grateful I was to be getting stabbed in the stomach by a man in trance with a Balinese sword! Just as quickly as the thought came, he was gone. The last one just stood there and looked at me. He didn’t come towards

On walking back, the only way to describe how I was feeling was having a complete soul breathing shaking cellular orgasm, every part of my body was vibrating, I could hardly breathe, I was flanked by all my family saying Nicole, Nicole, Nicole, I went and sat down and after some time regained composure. I then closed my eyes and felt into the part of my stomach that had been hit, it started to expand and I was feeling very light almost as if I was going to fly away. I was having trouble keeping it together. I went over to Jero and said, I feel like I’m on some weird drug and I can’t ground myself. He energized a bottle of water for me and I drank it. In no time I came back to myself and felt ok. Just another night in the life of NikStarr!

I learned a myriad of things from this incredible experience but the most paramount was certainly trusting myself and the process. I totally understood that in surrendering and having faith, no harm would come to me. In fact it would expand my essence even further.

Bali Seminyak Retreat & Spa, with its whatever/ whenever attitude, is happening 24 hours a day and at the time of your choosing. Laurence Civil checked into a spectacular ocean facing retreat to discover what makes W the coolest hotel on Bali.

I had 64 square metres of space, subdivided into three zones. The dressing room/bathroom has a pair of hand basins. Between them, the entrance into the tub and shower area; an oversized rectangular bathtub with a body splashing free standing rainforest shower and conventional side shower. At the entrance to the sleeping/living space a beverage station for hot and cold drinks and the too tempting Munchie Box.

Their Airports Ambassador efficiently met me at the airport. On the drive to the retreat, he asked if I was comfortable and apologised for the slow moving traffic delaying us. Welcome to Bali, coping with traffic delays is part and parcel of the Bali experience.

The room is a teckie’s dream, a 40” LED flat screen TV, DVD/CD player and iPod docking station and a crystal clear BOSE surround sound system. Split waste bins engage in the overall recycling. The signature W bed with plush pillow-top mattress, 350-thread-count Egyptian cotton sheets and an astonishingly soft

goose-down duvet is snugly comfortable. The third element is the retreat’s wide spacious balcony with its incredible unrestricted ocean views complete with its own chaise longue. Starwood manages many other brands, but W was specifically created to appeal to a younger crowd. The decor is minimalist, hip and informal. What defines the brand is their positive attitude where nothing is a problem, every challenge is somehow doable. The W brand was launched in 1998 with the opening of W New York, a conversion of the old Doral Inn hotel in Manhattan. The first few W hotels were mainly conversions of existing hotels already within the Starwood group. The brand has since expanded with the newer of the fifty hotels worldwide being purpose built.

Lobbies are “Living Rooms,” the concierges are “Whatever Whenever,” that’s their can do attitude and the laundry bag is known as “Wash.” The most memorable line I heard was from the buggy driver, “Buckle up in the back, it’s time to rock ‘n’ roll at W Hotel.” What a refreshing attitude to hospitality, they have just the right balance with being friendly and approachable without crossing the invisible line of appropriate behaviour. The retreat was beautifully inspired by tropical scenes of Indonesian rice fields, their cool WET pool overlooks the spectacular Seminyank Beach with some of the best views of the famous Bali sunset. The lush poolside area has lounge chairs with neck pillows, chic double daybeds and hand or foot massages always available. At the Sweet Spot guests will find comfy robes and slippers, and enjoy its hands-on deck service, from bringing you sun care amenities, fresh towels, snacks, cocktails, frozen treats, and games too; they even cleaned my sunglasses. When I asked for sunblock lotion it was delivered with a minute-long back massage. It’s not just about the grownups, they look after the wee ones equally, they have a 0.6 metre splash pool with an endless array of water toys and floaters to maximise their kidding around time.

Overlooking the beach and Woobar is the ‘up where you belong’ spot with extensive ocean views. It is the must be at location to watch the spectacular Bali sunset. The design was inspired by the ocean symbolising a giant wave in action with the main bar as a stunning direct representation of a coral reef. With the DJ spinning and the sun setting, just sit back and chill. The signature cocktail that caught my eye was the W BBQ Mary, their take on the all-time 1920’s Mary classic. They blend W-made bacon, Kettle One vodka and the tangy BBQ Mary mix to create a cocktail with attitude befitting its location. My colleague chose to sip on W Cranberry Fusia Bellini; a blend of dry cranberry juice, Cointreau topped up with Louis Roderer Champagne. Oh what a night.

The next morning was time to get on my bike, rather, on one of their mountain bikes from the Whatever/ Whenever counter for a guided bike ride around Seminyak. Before I was allowed to get on my bike, I had to put on a cycling helmet to wear. It’s a great way to explore the local community, and it is low level exercise. I am not a biker by nature, but welcomed the challenged. After 45 minutes of pedaling using muscles that had been undisturbed for years, I got off my bike feeling and moving like a train wreck. Luckily my next scheduled activity was a spa treatment at Away Spa. I was given the Morning After Massage primarily designed for those who have danced the previous night away and shopped till you dropped. This signature massage is designed for guests who wish to detox from a long playful night out or to refuel for what’s next. Using a combination of finger, hand and forearm pressure along with friction and herbal oils infused with fresh lime, basil, mint and rosemary leaves, this massage works deeply to relieve muscular aches and pains. It was just what I needed, and my body was functioning again. Time for breakfast at Fire with its open kitchen with a fired grill and pizza oven perfect to watch chefs take the spotlight and sizzling culinary sensations to a fiery finish. The central feature of the room is a dramatic chandelier as strong reds, yellows, blacks and whites stream through marbles inspired by local black and white poleng cloths

When I arrived at the restaurant, I was asked to select a mug from a collection on shelves by the door, making me feel part of the extended W family. Breakfast is interactive ordering from the a la carte menu and self-service from the buffet. I ordered Egg benny salmon, W’s light tasty interpretation of the classic Eggs Benedict, a glass of freshly squeezed orange juice and a pot of Earl Grey tea. In addition to the main hotel building on the other side of the drive are 79 Villa Retreats, private sanctuaries where luxury beckons with W’s sleek touches surrounded by generous lush tranquil greenery, individual private pools and BBQ facilities.

here are restaurants that simply serve food. And then there are restaurants that provide their customers a complete, unique experience beyond what comes on the menu. For those coming to Bali in search one of those “special” drinking and dining experiences, they need look no further than the infamous Naughty Nuri’s.

Since its start 18 years ago in Ubud, this novelty eatery has built both a steadily-growing positive reputation and loyal fan base. And just two years ago, one of those fans - a Frenchman living in Seminyak - became tired of the lengthy trips to Ubud for his regular dose of naughty fun. Taking the initiative to share his love for the Naughty with visitors to and residents of the south, he opened the first Naughty Nuri’s franchise location on Jalan Batu Belig, and it’s been rocking since opening its doors in September 2010.

All of the inimitable interior is based on an atypical warung, the style is a tad chic, with a love for piggies reflected in a diverse assortment of naughty artwork throughout. Funky lamps constructed from recycled materials, bottle cap curtains leading into the restrooms, all sized and shaped piggies spread everywhere, and a huge ogoh-ogoh ruling from above - the ramshackle decor gives the joint an exclusively-novel feel, as though one’s stepped into a different world where fun, good food, and good times rule. The menu does differ slightly between the two locations, with the dishes at Batu Belig taking on a bit of a French touch. Yet what remains the same regardless of which you shall visit: the quality. The food, the drink, and the fun - not to forget a standard of customer service second-to-none, with staff taking the “Naughty but Nice” slogan to heart - cheerful, accommodating,

ayuputi means “white wood” in Indonesian which most of the beachfront vision in white at St Regis Bali has become the beacon for Bali’s dining scene. The decor is perfectly modern with the Indian Ocean as an elegant back drop. The seating options are either al fresco, with soft ocean breezes and an unobstructed ocean view, or snuggled on white cushions inside the majestically high ceilinged restaurant where the two story wine cellar and grand totally open kitchen are additional elements of the theatre of the dining experience.

His food style is vaguely described as Asian influence haute cuisine, free thinking not dominated by any one geographical cuisine style, rather it sits under the comfortable umbrella of being the best available underscored by Balinese flavors. The name given to the food style doesn’t really matter, what does is their clear vision of who they are and what they do best. And this is why they have become the beacon of the Bali’s culinary scene.

The perfect dining experience needs invisible orchestration; make it to appear to happen effortlessly as if by magic. If only that was reality, in the real world it only happens by meticulous planning down to the most minute detail. Here, that is done by Chef Agung Gede in the kitchen and Restaurant Manager and Sommelier Harald Wiesmann.

Harald Wiesmann graduated from Hotel Management School in 1990. He worked in some of Europe’s finest restaurant and hotels. It was during his tenure at Hotel Le Grand Chalet, Gstaad, Switzerland that he achieved his first Wine Spectator Award, the Best Award of Excellence. He had another four under his belt before he joined St Regis Bali, where he has gained another two taking his tally to seven.

Agung Gede was born in Bali where he has the combined responsibility as Executive Chef of St Regis Bali as well as Chef de Cuisine for Kayuputi. It was through his competitive passion for culinary excellence that was a factor in him achieving the top position in Bocuse d’Or Indonesia and to represent the country at Bocuse d’Or Asia 2012 in Shanghai. It was the same culinary precision that influenced Kayuputi being nominated in Guide Miele for the past two years.

Glancing through Harald’s 30 page wine list, the reason for its recognition by Wine Spectator. He has cellared the finest wines from the four corners of the globe complimented by the best of local wines. It reads like The Decanter’s Who’s Who. While being impressive it’s equally appropriate. Wine Spectator have a practical approach; they aren’t looking for a show pony wine list rather that it should complement the food menu, which it most certainly does.

When it came time for dinner, I glanced through the dinner menu the gastronomic choice was for appetizers Strivia caviar from Bordeaux or Parc Saint Kerber oysters from Mont St Michelle. For the soup course, a light spiny lobster infused with lemongrass. The hot entree choice of soft poached organic eggs with vanilla potato mousseline and a white truffle emulsion or pan seared Rougie duck foie gras with caramelized Granny Smith apples. A classic main course of whole live Bali lobster either simply grilled or as a Thermidor in a cream, mustard and cheese sauce. From the stove should the choice be Margret River beef sirloin or a filet of Australian milk fed lamb. A selection of French cheeses from Mon Fromager -Affineur accompanied with walnut bread, fig chutney and olives. Finishing with Desserts By Flavours. With such a sumptuous selection I asked Executive Chef Agun Ardiawan to prepare a menu that gave a balanced reflection of Kayuputi. First he served tuna medallion with balsamic reduction encircled by a delicate ring of edible flower making for an exquisite meticulous presentation. He then served seared Canadian scallop in a silky smooth carrot soup. With the first two dishes he poured Peter Lehmann Sauvignon Blanc.

Next came his 62 hours slow poached beef oyster blade in a nutmeg broth, root vegetables, steamed potato dumpling which he perfectly paired with a Shiraz from the same winemaker. He finished the menu with Chocolate - Valrhona with Guanaja bar, chocolate caraibe coulis, white chocolate sherbet, dried fruit and cocoa tuile, liquored chocolate stick that releases its contents in the mouth when crushed by the tongue; such a decadently divine indulgence. The mark of a fine dining experience is serving Petit. Other restaurants may offer a selection on a plate. Here they have refined the presentation with a table side cabinet with an individual drawer packed with each of the selections. I was asked which I cared for, I opted for all four. A classy and friendly atmosphere that got casual elegance just right.

When I arrived, I was escorted upstairs to the dining room and seated at the table looking out over the beach club and I could hear the waves crashing on the beach in the dark. To get a clear understanding of the taste of Mozaic I opted for their 6-course tasting menu with an optional wine pairing. It should be noted that they will only serve the tasting menu if ever one at the table is taking that option. A mix of a la carte and tasting menu is just too complicated to serve at the same table

hef Chris Salans and his team have built the award winning Mozaic Ubud into being Bali’s premiere fine dining restaurant. During his two year tenure there Chef James Ephraim has continued to build on the philosophy of the finest French cuisine with Balinese flavors James has spent the past two years work on translating the Mozaic philosophy for culinary excellence to work on the beach before the opening of the Beach Club in mid-2012. Situated on Bali’s hip, chic and trendy Southwest Coast in Batu Belig the new Mozaic Beach Club remains faithful to the Mozaic philosophy yet has been translated into a style appropriate for its beachside setting. Overall it’s the perfect place for all day lounging, sunset drinks and late nights. The fine dining restaurant is on the second floor. The use of the word fine can conjure up an image of stiffness and starchy formality but not here I would prefer to change fine to elegant as a more apt description of the experience. The food is excellent, the service impeccable yet comfortable without crossing the line into familiarity. All elements of the experience work harmoniously work well together. Dining isn’t just about the food it’s an experience where the quality of the service is equally important.

As an aperitif, a glass of Brut Louis Roederer one of the best non-vintage Champagnes and a personal favorite. It’s rich, with an overt fruitiness and nutty, yeasty notes, the finish is long, complex and rewarding. It was paired with an amuse bouche Tuna ginger soya and wakame salad. A second glass was poured with the Fine de Claire Oyster with Japanese ‘ponzu’ dressing and seaweed salad. The dressing added a pleasant layer of complexity to the dish without overpowering the taste of the sea flavor of the oyster Before the next course a glass of Allegrini Treviso Prosecco Millesimato Dry 2010, a slightly sweet wine with just a hint of coffee note and espresso flavor. blackberry jelly bean finish. Nice grip and good sense of balance with more depth than the typical Prosecco. It was paired with fresh water baby lobster served on a ragout of tapioca and crispy Pata Negra ham, the tastes and textures paired perfectly, everything was balanced in harmony. The next wine to be poured was Altano Duro 2006 from the Upper Douro. The wine comes from 25 years old mature vines and this was their first vintage to be certified as organic. In the glass there were heady Port-like aromas of blueberry and rose petals characterize the nose, while the palate delivers a rich, warm body of dark loganberry fruit. It was served with crispy foie gras, olive powder, cocoa reduction and raspberries. The wine is not the obvious choice with foie gras, but worked brilliantly due to the raspberry and chocolate elements in the sauce

The cheese was AOC St Vernier from Haut Jura, France has its rind washed with a local wine ‘Affine au vin de Savagnin (Jura)’ that gives the cheese its stickiness. The cheese has a rich, soft, sherry-like flavor with a creamy texture served with vanilla gastrique, walnut sable and nashi pear salad. It was paired with Monkey Bay Pinot Noir from New Zealand, A delightfully smooth and silky with flavors of ripe cherries and plums. Soft subtle oak with just a hint of spice. For dessert a Chateau Lafon 2009 Sauternes with a medium sweet flavor of pineapple and dried apricot paired with Mozaic’s chocolate fondant with local pepper reduction, turmeric and lemon sorbet. he arrival is on the top floor with another six below. Originally designed and built 23 years ago by the Sukawati family and named Bridge Café. When the restaurant came under the professional management of Claude Chouinard, it underwent a nine month total redesign. In addition to the restaurant there is the Divine wine bar and cellar, a place where people meet, share a glass of wine or two, enjoy a tapas menu and also buy wines at discounted prices.

He walked me through the seven levels before leading me down to the split level terrace restaurant. Our table was perfectly positioned on the edge of the terrace with the spectacular view of the ravine to my left and over the restaurant to my right.

To take charge of the kitchen team of 11, Claude brought in the talented young and dynamic chef Nicolas Lazzaroni who had made a name for himself in Byron Bay, Australia. “When I started my career I was in love with the food and passionate about my cooking, but now I have the added responsibility of managing the kitchen to ensure every customer has a great dinner at an affordable price. There are times when sourcing ingredients can be an issue, but it’s up to me to manage the situation to ensure our customers still get the best possible experience.

Glancing through the a la carte menu the one dish that caught my eye was Chèvre Beetroot Brûlée, roasted beetroot stuffed with creamy goat’s cheese topped with burnt caramel. On the side was served a golden pecanchive polenta, roasted beetroot purée and crisp prosciutto. Tree House Sauvignon Blanc, with tropical fruit aromas of stone fruit and passion fruit coupled with gooseberry and dried herbs. In the mouth good fruit flavors, richness, crisp acidity and a lingering finish.

It was then time to taste the signature dish of Bridge’s twice cooked duck breast lightly dressed with five-spiced soy sauce, served with seared bean sprout dumplings, sautéed bok choy and your choice of cardamon-infused steamed rice or potato purée.

The second starter we tasted was rare seared lamb. Thin slices of seared, rare lamb loin marinated in cumin and coriander, layered between crisp potato floss and surrounded by a dry spiced tomato and coconut curry— garnished with crisp tomato skin, mint yoghurt dressing and fresh mint. This dish was creative, tasted delicious and a presentation that pleased the eye. With this we enjoyed a glass of Ralph Binder Shiraz made with fruit from five Barossa Valley Shiraz vineyards. The final blend is 90% Shiraz, 5% Granache and 5% estate grown Mataron that gives an earthy backbone to the palate of dark cherry with cassis, anise and pepper.

The Bridge’s cheese platter includes nut and apple toast, crisp lavosh bread, sliced fruits, pecan praline, vanilla-infused honey with a choice of seven imported French cow and sheep’s milk cheeses. Finally, for dessert, cinnamon crème brûlée, an enchanting oven-baked cinnamon-flavored crème brûlée, accompanied by soft lime-butter stewed apples and finished with crisp vanilla tuilles. With this course a Pino de Bali, red was served, made by Hatten wines with local AlphonseLavallee grapes delivers a luscious amber colored wine with aromas of walnut and dried apricot and red fruit flavors. A restaurant where the ambiance, the table setting, the service and the food are all of equally high standard.

For our main course we first shared pumpkin rusted salmon, a plump fillet of Atlantic salmon seared with a crust of grilled pumpkin placed on honey-glazed baked fennel and baby carrots, served with cauliflower cannoli and truffle-infused compound butter. Simply flavorful with an enchanting combination of tastes. Rolf Binder Selection Chardonnay is wine made solely for resort islands throughout Asia such as Bali. There is a light touch of oak in this wine to enhance the complexity of the mouth-feel complimented by ripe stone fruit characteristics balanced by a fresh acidic backbone.
