Foreword Once again, we have had an eventful year. Although the shadow of the coronavirus still looms over the international culinary scene, the past 12 months have been a period of renewal here in Hungary. And this year’s Fine Restaurants, a Budapest Business Journal publication, aims to capture these changes as faithfully as possible. While there were some unfortunate closures, many places have opted for renewal, adding colour to the gastronomic palette not only in the capital but also in the countryside. To everyone’s delight this year, we have also seen the ascension of two restaurants into the elite club of Michelin-starred establishments. This is another excellent sign that the journey that began in 2010 with the celebration of the first Michelin-starred restaurant in our country is still going strong. Today, Hungary boasts a total of seven stars among its restaurants. It is well worth noting that the country is the home not only of excellent restaurants offering local cuisine but also to an ever-expanding range of eateries awaiting customers with international delicacies from all over the world. The increasing culinary diversity now encompasses many styles, from Italian trattorias through Asian restaurants to South American grills. The importance of Budapest as a significant destination for food tourists is also underpinned by the fact that a growing number of internationally-renowned chefs are opting to open up a business here. An excellent example of this is Wolfgang Puck, who decided to choose Budapest as the home of his first European Spago restaurant. Dear reader, I am sure that you will be able to find the perfect place for each dining occasion in this year’s Fine Restaurants, be it a simple night out for cocktails, a meal to mark a special event or just a Sunday brunch. The editorial team and I wish you a pleasant journey through the delicacies offered by restaurants all over this country.

New Culinary Destinations In a sense, 2021 was the year of rebirth on the Hungarian culinary scene, as many restaurants opened up once again, in a renewed form after the strictest coronavirus-related restrictions were lifted. To illustrate the extent of the changes, one could mention that last year’s edition of Fine Restaurants kicked off with content about Matild Palace’s plans for 2021 which included a new restaurant called Piac, led by Michelin-starred chef Eszter Palágyi. However, in the end, Matild Palace decided to change plans and invite culinary star Wolfgang Puck to Budapest to open up his first Spago restaurant on the entire continent. Spago opened its doors this summer, becoming one of the hottest new culinary destinations in the country. Another newcomer to the scene is the Clarisse Restaurant at the Botaniq Castle of Tura in Pest County, which serves as an exciting new destination for both dining and admiring the beauties of the castle itself.

Wolfgang Puck’s Signature Restaurant Lights up Budapest Worldwide-renowned industry leader and trendsetter Austrian-American master chef Wolfgang Puck brought the Beverly Hills culinary and social phenomenon Spago to Budapest in 2021, further elevating the city’s status as a gastronomic epicentre. Located at Váci utca 36, in Matild Palace, Spago by Wolfgang Puck Budapest is the first European outpost of Puck’s flagship restaurant. The restaurant offers contemporary design, a stunning lounge, and a terrace located at Duna utca.

FROM AUSTRIA TO THE UNITED STATES Originally from Austria, Puck began cooking at his mother’s side as a child. She was a chef in the Austrian town where he was born, and with her encouragement, Puck started his formal training at fourteen years of age. As a young chef, he worked in some of France’s greatest restaurants, including Maxim’s in Paris, the Hotel de Paris in Monaco, and the Michelin three-starred L’Oustau de Baumanière in Provence. At the age of 24, Wolfgang took the advice of a friend and left Europe for the United States, and the rest is history. Today, his name is synonymous with a bold, innovative school of cooking that redefined fine dining in America and around the world.

The Best Places for a Memorable Dinner The diversity of Hungary’s culinary landscape is remarkable: fans of traditional Hungarian cooking and those looking for something more international are equally sure to find a place where they can have a memorable dinner. The setting of these restaurants is also exceptional, as many overlook one or other of the capital’s landmarks, or a beautiful countryside scenery, adding an extra visual layer to the fine dining experience. Several buildings hosting these establishments are also part of the country’s rich architectural history. So, dear reader, feel free to stroll the streets, immerse yourself, and sample the delicacies on offer.

All the Kitchen’s a Stage, and Guests are not Merely Players Rumour offers a unique, theatre-style chef’s table dining experience, which means guests witness the preparation of each dish as if it was a theatrical performance. This transparency and direct contact between guests and chefs make the experience casual and friendly. According to the philosophy of the restaurant’s founder, chef Jenő Rácz, the experience provided to guests should be much more than just a simple meal. Having started his journey around the globe at a young age, learning from some of the best chefs in iconic destinations such as London, Copenhagen, Singapore, and Shanghai, he quickly became an expert on different culinary techniques. Due to his extensive international experience, he was invited to support a new restaurant opening in Shanghai, which was awarded by the Shanghai Edition of Michelin Guide only five months after opening. In 2018 and 2019, Rácz was selected as the coach of the Chinese national team for the Bocuse D’Or. Also in 2018, he returned to his homeland and starred as coach and member of the jury in five episodes of one of the major Hungarian cooking TV shows.

A Cuisine That Makes you Feel at Home Generally speaking, what do you think about Hungarian cuisine? Do you have a favourite local dish? Hungarian cuisine is very tasty, with a lot of meat (close to Kazakh cooking, that’s why I feel at home sometimes). However, it can be heavy, as the size of the servings is also large. For most foreigners, it is far from their regular daily portions. My favourite is summer fruit soup, specially meggyes (sour cherry). Another pick is töltött káposzta (stuffed cabbage), or paprika, and lecsó (ratatouille). My Hungarian dessert of choice is kürtős kalács (chimney cake). FR: Do you have any countryside favourites?

One of my countryside favourites is Platán Bisztró in Tata. In the Balaton area, I’m fond of Kistücsök Étterem in Balatonszemes, and I also like Új Tanyacsárda, near Lajosmizse. Where would you recommend for a business lunch? While it is not directly in Budapest, Punto Café in Budaörs is a good option. There are many good spots in the capital for a business lunch, such as Á la Maison Buda in District II, Rafello Ristorante in District XI, and Akademia Italia near St. Stephen’s Basilica in the heart of the city. Do you have a favourite restaurant for dinner with wine? I have two; one is Korhely Faloda&Daloda, next to the Academy of Music, and the other is KisPiac Bisztró, near Szabadság tér.

Art Deco Brunch With Elegance and Flair Kollázs - Brasserie & Bar, located in Four Seasons Hotel Gresham Palace Budapest, mixes a bit of Parisian flair with perennial downtown elegance. The Art Deco establishment is a collage of ambiance and décor. The interior is the work of San Francisco-based architects EDG Design, reflecting on the luxury of the interbellum years. The menu was dreamed up by executive chef Árpád Győrffy, whose motto “Take a dose of adrenaline!” is reflected in the innovative and authentic mosaic of dishes. The food selection depends on the time of day. The lunch menu is a limited collection of French, classical Hungarian, and vegetarian/vegan dishes, also featuring sandwiches and hamburgers. The dinner menu is more encompassing and sophisticated, with a more pronounced French focus. The establishment offers a leisurely brunch experience featuring music from a variety of local artists. The brunch menu offers a large selection of appetizers, soups, salads, pasta, fish, and various other main courses (including grilled dishes from the Rotisserie), signature Kollázs desserts, unlimited wine, beer, coffee, tea, or lemonade, and a glass of sparkling wine served upon arrival.

A Fresh, Uncompromising Approach to Traditional Pasta The mission of the Nudli “pasta canteen” is to present the favourite pasta dishes of Hungarian cuisine in a fresh, if uncompromising version to locals audience and tourists alike, just the way Hungarians enjoyed them in grandma’s kitchen. The secret goal is to elevate hand-kneaded dough, prepared exclusively from fresh, high-quality ingredients, back to its rightful position. Traditional Hungarian cuisine features fantastic pasta dishes that most of the world knows nothing about, even though pasta is a universal language of love, understood everywhere from Asia to America. The owners thought that it was high time to showcase these Hungarian specialities. In addition to sweet specialties such as mákos nudli (poppy seed noodles) or vargabéles (an egg noodle dessert), the menu includes one of the most popular salty pasta dishes of Hungarian cuisine, túrós csusza (cottage cheese pasta), but it is hoped that potato or cabbage pasta will also prove a great success. Forgotten highlights such as layered lamb (as published by Pál Kövi in the book “The Transylvanian Feast”) and “ecsó dumplings,” one of the classics of Roma (gypsy) cuisine, are also on the menu. A variety of side dishes can also be chosen to accompany the pasta dishes that are excellent in themselves, such as grilled sausage or confit duck leg. Appetizers, soups, and desserts complete the selection.

1st European Outpost of Wolfgang Puck’s Signature Restaurant Located at Váci utca 36, in Matild Palace, Spago by Wolfgang Puck Budapest, a Michelin Guide restaurant, is the first European outpost for the Austrian-American master chef’s flagship restaurant chain. Spago’s modern yet inviting design was envisioned by the award-winning MKV Design London, using natural materials as decoration, including marble, brass, wood, and leather. It features a series of food counters and show kitchens that allow the guests to spend an evening in an epicurean setting. The restaurant’s culinary team, spearheaded by Hungarian chef István Szántó, is dedicated to sharing culinary pioneer Puck’s passion for artistry and uncompromising quality. The menu features a selection of Puck’s signature dishes, such as his famed smoked salmon pizza with caviar, as well as locally-inspired dishes and classics with American, Mediterranean, and Asian influences. Reformed Specialities and Quality Wines at Lake Balaton Bock Bisztró Balaton has been welcoming guests at the historical building of the Festetics Helikon Taverna (184 km south-west of the capital, not far from Keszthely on the north-eastern tip of Lake Balaton) since February 2014. Part of the Bock Bisztró group that is famous domestically and internationally, in addition to the traditional flavours of Bock Bisztró, the menu offers guests reformed specialities from Balaton and Zala under the guidance of corporate chef Lajos Bíró. Qualified sommeliers pick the wines; those looking for alcohol-free refreshments can sample the restaurant’s lemonades. The dishes combine characteristic ingredients and flavours with homemade simplicity; however, the harmony of proportions and tastes complement each other in a highly sophisticated way.
