The Budapest Business Journal, with its prominent track record spanning more than a quarter of a century, has always regarded it as one of its missions to provide a comprehensive overview of the best culinary destinations in Hungary. The Fine Restaurants magazine, published since 2004, has been a reliable source of information on the most outstanding restaurants the Hungarian capital and the countryside have to offer, seeking to help locals and visitors in keeping up-to-date with the everchanging gastronomic scene. The editorial section of the publication is a compilation of the year’s highlights and provides readers with useful clues as to which restaurants to choose to best fit each occasion. Ranging from the most accomplished, Michelin-starred venues, to latest openings, the best brunch spots, the classiest destinations for a business meal, and the most celebrated countryside eateries, Fine Restaurants is a must have and must read publication for lovers of the culinary arts. The Budapest Business Journal’s aim is to be a chronicler of this progress and the Fine Restaurants review is our way of keeping up with the changes taking place in this segment, but also of providing our readers with a comprehensive overview of long-established, exquisite venues that continue to reinvent themselves. As a testament to the spectacular evolution of local gastronomy, the city now boasts six Michelin-starred restaurants, which we have reviewed for our readers who are seeking the ultimate fine-dining experience. Restaurants A French-Hungarian Love Affair If you want to experience a bit of Parisian flair mixed with the perennial elegance of downtown Budapest, do not miss KOLLÁZS – Brasserie & Bar in Four Seasons Budapest. This stylish and chic eatery, designed in vibrant contemporary style, awaits visitors in one of the landmark buildings of the Hungarian capital, the Gresham Palace. An Art Nouveau masterpiece overlooking the Chain Bridge and offering a stunning panorama of the Duna Castle, the building was completed in 1906 and named after the 16thcentury English financier Sir Thomas Gresham, the founder of the Royal Exchange in London. Withstanding the stormy decades of central Europe’s tumultuous 20th-century history and following extensive renovations, today it is home to the luxury Four Seasons Hotel and the KOLLÁZS restaurant. As reflected in the choice of name, this Art Deco establishment is a collage of different ambiances and décors. The understated elegance of the magnificent interior is the work of San Francisco-based architects EDG Design, reflecting on the luxury of the interbellum years. KOLLÁZS is grand in every detail, without a hint of stiffness or self-serving formality.

“The goal is to have a different and characteristic atmosphere in each part of the restaurant, reflecting the theme of the current season,” said Sebastien Dehaye, restaurant manager. The walls are adorned by exclusive pieces of modern art, the work of international artists provided by local gallery LUMAS. The paintings and photos are changed four times a year, with a new exhibition greeting the start of each season. The spring collection features enlarged portraits of Marilyn Monroe alongside works depicting gardens in exuberant colours, exuding a vibrant, youthful energy. The menu is dreamed up by the young and sprightly chef Árpád Győrffy, whose motto “Take a dose of adrenaline!” is reflected in the innovative and authentic mosaic of dishes. A finalist in the local round of the world’s most prestigious cooking competition, the National Bocuse d’Or Hungary, Győrffy’s eyes sparkle with enthusiasm as he speaks about his culinary inventions and his love of traditional Hungarian cuisine. The food selection depends on the time of day. The lunch menu is a limited collection of French, classic Hungarian and Plant Based dishes, also featuring sandwiches and hamburgers. A whole “Traditional Taste” section is dedicated to Hungarian all-time favourites, such as the bone marrow with oxtail ragout and spring onions or the chicken paprikash with cheese noodles and cucumber salad. Do not expect any “finetuning” or international twists; these traditional dishes are meant to showcase the real Hungarian kitchen at its best.

The dinner menu is more encompassing and sophisticated, featuring a more pronounced French focus. The octopus and scallop with potato paprikash and sausage is a delectable example of the French-Hungarian love affair á la KOLLÁZS. The potato paprikash is a reinvention of the French potato gratin with the flavours of the sausage permeating the potato slices. The Plant Based section consists of vegetarian dishes, starring the main vegetables and fruits of the season, which are mostly purchased from local farmers and producers. Both at lunchtime and dinner, guests can create their own grilled dishes – with side dish and sauce – from a selection of excellent seafood or beef, thanks to the imposing charcoal grill and rotisserie set up inside the restaurant. The chef and sommelier invite the more adventurous visitor on a culinary “Blind Date”, a set menu of surprise dishes put together on a daily basis using seasonal ingredients. The Blind Date is designed to delight the palate and test one’s gastronomic boundaries. While dishes in the menu can be adjusted to guests’ dietary needs, Győrffy believes that one’s dislike of particular ingredients can be overcome by skilful preparation and innovative combinations. If, for example, you’ve harboured a dislike for liver all your life, this is the time to give it a second chance. Don’t be surprised if Győrffy’s mastery emerges victorious. The wines, mostly French and Hungarian, are selected by sommelier Gábor Becker to perfectly complement the ingenious culinary creations.

For instances of love at first sip, KOLLÁZS offers the opportunity to sample their most exquisite wines without buying the entire bottle. Using a state-of-the art technology called Coravin, even the most high-end wines can be tasted without removing the cork from the bottle and the process is a show worth seeing in itself. Make sure you leave room for the final act: dessert. KOLLÁZS boasts a fully-decked patisserie and the cakes are designed to delight both the palate and the eye. Chocolate is undeniably the main star of the show, but unexpected ingredients such as olive oil, black tea, wasabi or truffles also play key roles. The humbly named King cake is a reinvention of the old classic Black Forest gateau, a chocolate and cherry layered cake. True to the inventive spirit of pastry chef Attila Menyhárt, the KOLLÁZS version comes in the shape of a disc, all decked out in white with a one-of-a kind decoration. The summer menu will include a signature Gresham cake, made of locally produced chocolate and raspberry. Menyhárt politely declined to offer any more clues, saying it was a work in progress. I will definitely stop by this summer to satisfy my curiosity and my love for all things sweet. The bar, illuminated at night by an immense chandelier, is an architectural gem in itself and a must-see place when you visit KOLLÁZS. There are more than 30 cocktails on the menu, each designed by the staff and mixed with homemade bitters, compressed and dried fruits, and syrups. Order a Calamansi and Tonic, an exotic version of the Gin and Tonic served with dark chocolate, or a Dawn of the Cask, which features mescal and Hungarian raspberry brandy, all aged in a barrel, take a seat on the open-air terrace to take in the buzz of downtown Budapest, or enjoy the live music provided by local bands from Wednesday to Saturday. Be it lunch, a quick bite with friends or colleagues, dinner, or an evening drink, KOLLÁZS will treat you to a memorable experience.

The Stars of the Show The Michelin star, that most coveted of awards among restaurateurs worldwide, was first endowed on a Hungarian restaurant in 2010. It was Costes that spearheaded this culinary revolution in Hungary and the past several years have witnessed a number of other establishments winning the prestigious award, helping place the city on the culinary map of the world. This year, guests with a taste for an exquisite fine-dining experience can choose from among six local restaurants that boast a Michelin star and another three venues that have been rewarded with a Bib Gourmand, a Michelin award given to restaurants that offer "exceptionally good food at moderate prices".


Restaurants Stand: Where Tradition Meets Perfection Celebrity chefs Szabina Szulló and Tamás Széll have delivered the performance the gourmet industry expected from them: merely nine months after opening Stand in downtown Budapest, the restaurant won a Michelin star. Széll is the most accomplished Bocuse d’Or contestant in Central Europe, having made it to the Lyon final at his first attempt in 2013. The Michelin Guide praises Stand for its “unfussy dishes that have their heart in the Hungarian classics; with the confident kitchen taking just a handful of top quality ingredients and allowing them to shine.” Try booking a table next to the kitchen, which is on view behind a glass partition, and marvel at the dynamic and passionate work unfolding in front of your eyes. The menu is designed to showcase the diversity of local gastronomy and the possibilities afforded by Hungarian ingredients, while ensuring that it meets all the expectations of modern times and contemporary gastronomy. It offers simple, well-thoughtout dishes, focusing on balanced flavours and harmonising ingredients. The restaurant uses very few ingredients that are not local and the dishes are created with the aim of surprising diners. The menu is concise and focused on Hungarian classics, like duck liver with marinated apple, smoked peanut, and Tokaji 6 puttonyos Aszú, Gulyás soup or the superbly cooked sterlet with cucumber salad and clam sauce. All dishes are presented without pomp and circumstance, accompanied by the very best Hungarian and European wines.

Stellar Food in a Relaxed Setting The basic concept behind Borkonyha (Wine kitchen in English) is encapsulated in the name: a combination of outstanding food and wine is its recipe for success. This casual, laid-back restaurant in a pedestrian street next to the majestic St. Stephen’s Basilica offers just that: excellent dishes and an astounding selection of wines. The Michelin-starred Borkonyha blends the atmosphere of a French-style bistro with a contemporary family restaurant ambiance, offering the best of Hungarian cuisine. The wine assortment includes 200 different, mostly Hungarian wines that represent not only well-known wineries, but also small and yet-to-be-discovered cellars. More than 40 wines are available by the glass and the temperaturecontrolled wine shelf has a capacity of 1,200 bottles, allowing guests to buy wine by the bottle for take-away or to drink on spot. The cuisine is based on fresh ingredients, where possible purchased daily, and on the weekly-fortnightly changing offers written on the black board. Chef Ákos Sárközi had dreamt of becoming a photographer and his affinity for visual arts is perfectly demonstrated by the beautifully composed plates that leave his kitchen. Reservation is highly recommended.

Success Stays in the Family Costes Downtown, as the name suggest, is the downtown sister restaurant of Costes, the first Hungarian establishment to ever win a Michelin Star. Costes Downtown followed in the footsteps of its sibling and won its Michelin Star shortly after opening. The restaurant, which serves breakfast, lunch and dinner, is located underneath the Prestige Hotel in a quaint little street just meters away from the Danube River. It boasts an open kitchen and real gastro fanatics can even book the Chef’s Table. Executive chef Miguel Rocha Vieira’s cooking style is based on international flavours, while blending the best of Hungarian and Mediterranean cuisine. Costes Downtown awaits guests with a friendly, “bistro-like” environment, a relaxed atmosphere, more affordable prices and bigger capacity than its older sister. The motto, however, is the same: “Quality gastronomy without compromise.”

Restaurants Fine Dining Without Compromise Costes entered into the annals of Hungarian gastronomic history as the first restaurant in Hungary to become Michelin starred. Since winning the star in 2010, it has remained true to its founding concept of “quality gastronomy without compromise”, thus upholding not only its status as one of the most exclusive dining destinations in the city but also keeping its star. Costes is the only restaurant in its category to have a female chef at its helm in the person of Eszter Palágyi, who applies a distinct international approach to classic Hungarian cuisine. The result is an unparalleled balance between tradition and innovation. The degustation menus, ranging from four to seven courses, are the best options for mapping the intricate world of flavours, textures, colours and designs at Costes. Palágyi’s dessert creations are truly spectacular, make sure you save room for dessert even if you opt for the á la carte menu. Restaurants Tradition and Innovation Blended to Perfection Onyx, the only restaurant in Budapest to have won two Michelin stars, is the ultimate venue for those seeking a fine-dining experience in the classic sense of the word. Located in the heart of downtown Budapest, next door to the iconic Gerbaud Confectionery and Café, this exquisitely elegant restaurant awaits diners with an opulent interior design, dominated by crystal chandeliers and silk tapestries and with closed heavy curtains sealing off the outside world. Entering the interior space at Onyx, one has the distinct feeling of stepping into a sacred space dedicated to enchanting the senses. The restaurant offers two tasting menus christened “Within our Borders” and “Beyond Our Borders”, with the first highlighting the best ingredients the country has to offer, such as the Water buffalo tartare with shallot and mushrooms or the Venison “montage”, duck ravioli, celeriac, and chervil. The international menu is based on gastronomic inspirations from around the world and includes beautifully crafted combinations such as the Trout roll with shrimp and mushroom or the Stuffed paprika with lamb and tomato.

A Meal Down Memory Lane The classy Bábel restaurant invites guests on a culinary trip to the magic world of Transylvania, the birthplace of chef István Veres. He uses simple yet unusual ingredients such as hay, nettles and lichen in his fascinating creations, all inspired by his Transylvanian childhood memories. Budapest’s 300-year-old former Piarist gimnázium (grammar school) gives home to Bábel and the interior designers decided to keep the walls in their original state – featuring, among other things, the marks of the Great Flood of 1838 – as a reflection on the venue’s dedication to keeping traditions alive and returning to one’s roots. Do not expect, however, this respect for tradition to be mirrored by either design or menu, as both are sleek, modern, elegant and singular. This finedining establishment offers a five-course classic menu, a ten-course tasting menu and a seven-course vegan tasting menu, with the featured dishes marrying unexpected ingredients to yield a distinguished and unique result.

The Best of Italian Cuisine Amid Refined Elegance Fausto’s Ristorante and Osteria is a destination we highly recommend for those looking for elegant dining and exceptional service. Fausto’s is a long-time favourite business dining stop in Budapest, so don’t be surprised if you run into clients or business acquaintances. The restaurant overlooking the majestic Dohány utca synagogue is, in fact, a two-inone establishment. The Ristorante section is a fine-dining locale with an ambiance of refined elegance, while the Osteria is a more casual bistro. Two places, two kinds of atmosphere, the same unmistakably flawless service and the same excellent selection of savoury dishes and excellent wines. Fausto’s Ristorante, open for both lunch and dinner, offers classic Italian dishes enriched with a touch of contemporary culinary know-how. Although the á la carte menu is comprised of uniquely designed and executed dishes, feel free to ask for one of your Fausto favourites and the chef will prepare it for you. Make sure you try one of the many raw fish dishes for a truly authentic and unique culinary experience. Should making a choice prove difficult, go for one of the tasting menus, with up to seven courses. The dress code is smart casual, reservation is recommended. The Osteria is perfect if you are after a more laid-back dining experience. The menu here is slightly simpler, but the ingredients are of the same outstanding quality as in the Ristorante. A five-course daily menu is also available.

Restaurants ARAZ: The Secret Ingredient for a Fruitful Business Meeting The ARAZ Restaurant in Budapest’s historic Jewish district is set to bedazzle visitors with its monumental interior and exquisitely elegant design. Hungária Bath, one of the most outstanding works of the Hungarian Art Nouveau, gives home to this upscale eatery that only recently decided to dust off the initial concept of offering a fusion of French and Hungarian cuisine and reinvented itself as a bistro-style restaurant. The underlying realization behind the new concept is that guests no longer wish to spend up to three hours over a business lunch and prefer swifter service and less elaborate dishes without compromising on quality. The revamped restaurant now boasts an environment full of youthful vigour and casual ambiance, an ideal setting for a work-related lunch or dinner. The ARAZ theme-dinners held each month, such as the Monet dinner based on the recipes of the renowned French painter, combine the culinary and fine arts, providing an extra incentive for the lovers of high-end cuisine to stop by. The lunch menu, which includes two or three courses and changes every week, is a culinary trip around the world with a touch of ingenuity lent to every dish. For a more formal meal, the á la carte option offers such delicacies as the Foie gras, hazelnut, cranberry, beetroot, brioche or the Salmon with spinach, sugar snap peas, onion in red wine, butter pastry, champagne velouté. Capturing the Spirit of Now A few years ago, a successful business lunch or dinner would have required a formal venue with starched white tablecloth and solemn atmosphere. But times are changing fast and few places are better suited to illustrate this new concept than the easy-going, vibrant and hip ÉS Bisztró in the Kempinski Hotel Corvinus Budapest. Walls covered by white tiles featuring drawings of animals and graffiti-like inscriptions, red-top tables and comfortable, leather-bound chairs lend the place a cosy, relaxed ambiance, rendering it a perfect venue for a firstrate meal and a fruitful business conversation. True to its name (és means “and” in Hungarian), the menu is a collection of traditional Hungarian AND Viennese dishes, building on the idea that good neighbours share recipes, among other things. Executive chef Roland Holzer, who himself hails from Austria, devoted an entire section to the cuisine of the Austro-Hungarian Monarchy, including such all-time favourites as the stew of veal tongue with bread dumplings or the legendary Tafelspitz, which consists of beef broth, bone marrow with toasted rye bread, meat and garnishes. The steak and grilled meat selection at ÉS is undoubtedly one of the main attractions, and for something truly special, try the signature Hay & Herbs Rib Eye, which is aged for 21 days with lavender, basil, and rosemary and sealed in its own fat to soak up the flavours and scents of the herbs. As a curiosity, the herbs, along with cocktail tomatoes and chili peppers, are grown on the rooftop of the Kempinski Hotel. The carefully curated menu comes complete with an outstanding selection of wines and artisan beers. In the summer, the spacious terrace – seating upwards of 100 people – is a must try.

Restaurants Émile Awaits You in the Buda Green Belt The classy Émile restaurant located in a splendid villa in the leafy hills of Buda is a great option for a relaxed business meal away from the hustle of downtown Budapest. The name choice is by way of homage to Swiss-born Hungarian confectioner, chocolate producer, industrialist and entrepreneur Émile Gerbeaud. Émile is actually the Buda side-business venture of the iconic Gerbeaud Café on Vörösmarty tér. From spring to autumn, the restaurant’s garden offers an amazing ambience, fit not only for a romantic dinner but also a business meeting that is somewhat different from the more formal settings of a downtown restaurant. Visitors can choose from a range of rooms at Émile, depending on their mood or the purpose of the meal. The dining room on the ground floor boasts an open kitchen and an airy atmosphere, while the Salon on the upper floor exudes a warm, elegant ambiance, reminiscent of an upper-class dining room. For a more intimate atmosphere, we recommend the Petit Salon, which can accommodate up to ten guests and which is an excellent setting for private business meetings or smaller family occasions. When it comes to food, the staff at Émile pay special attention to the harmony of ingredients and to being up to date with the latest trends in gastronomy. Chef András Frideczky places a great emphasis on international culinary innovations, which he combines artfully with local traditions.

New Venues for Culinary Adventures in Budapest Budapest’s gastronomic Renaissance of recent years continues in full swing and those out for an untried gourmet experience can cherry-pick among the new places the city has to offer. Be it state-ofart fine dining or a chic, unconventional establishment, the range of new restaurants popping up across the city is astounding. We have tried and tested some of the new venues and found it challenging to pin down the best that Budapest is now boasting. While home to a myriad of well-established and internationally recognised restaurants, some of the capital’s newly opened eateries will surely awe even the most seasoned gourmet visitor. Be prepared to be pleasantly surprised.



Restaurants Where Cooking Excellence Meets the Arts and Sciences The owners of Michelin-starred Borkonyha had long been brewing the idea of opening another restaurant. Years of brainstorming and meticulous planning yielded Textúra, which was created and designed with the intention of bringing back the intimacy and informality of Borkonyha at around the time of its opening days. This easy-going fine-dining establishment, located literally a few metres away from its “big sister” in the centre of Budapest’s business and tourist district, is a place where playfulness, experiments and new discoveries are part of everyday life. Dinner in the Midst of the Family Gléda in Budapest’s District III on the Buda side of the river invites guests to travel back in time. The Dolce Vita Factory La Fabbrica is a culinary “factory” dishing out elegant and sumptuous southern Italian and Mediterranean courses, with a little twist from a classical Hungarian kitchen. This latest addition to the array of excellent restaurants in downtown Budapest, delighting guests with a picturesque, panoramic view of St. Stephen’s Basilica, is the “casa” of real passion for gastronomy. The first “vow” impression upon entering hails from the magnificent size of the restaurant, decked out in a vibrant and ornate style. The interior designers integrated the original elements of the building, the ceiling with the stuccos and the 150-year old mosaic floor, into the design concept. The main hall leads directly to the restaurant with an open kitchen, and next to it there is the bar and the winter terrace. The generous use of wood and the warm lights create a cosy and eclectic atmosphere in this urban space. The menu is a mélange of treats from the south of the continent, with such highlights as the sensuous homemade spaghetti “alla chitarra” with black squid ink and salmon caviar or the beautifully presented Sardinian Fregula with mussels. Restaurants A Bite of the Far East Where You Least Expect It It is safe to say that Aum restaurant is a bit of a “wild card.” Located in a nondescript shopping mall reminiscent of the Socialist era and far from the centre of the city, it is typically the kind of place that welcomes locals in the know as regulars. Do not let the location, however, dissuade you from visiting this hidden gem. Chef Dániel Varga has spent years in Southeast Asia and returned to Hungary with a treasure trove of culinary knowledge that he now shares with everyone at Aum. The menu does not differ much from the location: Spartan in design and eclectic in terms of offerings. But as the food starts arriving the situation changes dramatically for the better: beautifully designed plates presenting Asianinspired dishes prepared in a novel and highly experienced manner. Let’s just take the pork knuckles with kimchi and papaya as a starter or the Coq au vin Massaman with parsley potatoes: this should give you a taste of what the chef is up to. The lemonade is frothy, guests can use tweezers for chopsticks and these are just some of the playful twists that await the adventurous diner. Dinner with a View Moored right next to the iconic Chain Bridge in the heart of Budapest, Spoon is a restaurant boat offering a dazzling view of the Castle and the rolling hills of Buda. The owners decided to keep the frame of the vineyard house, one of the oldest surviving buildings in the area, and the designer placed a huge glass cube under the roof of the old barn, which is now the interior of the stylish bistro. Light floods the bistro from all corners and the old red brick walls and ancient wooden beams visible through the glass lend the place an atmosphere of airy elegance. Czakรณ Kert is a favourite hang-out for residents in the neighbourhood and guests start streaming in as soon as the bistro opens for a hearty breakfast or a cup of coffee to kick start the day. Great emphasis is placed on breakfast, which is served until 4 p.m., and the offerings include French, Hungarian and Vienna-style breakfasts, egg variations served with white or rye mini breads and fresh salad, all prepared using fresh ingredients from local farmers. The bread is made on the spot by the Czakรณ bakery and you can buy most of their bakery products at the small kiosk located in the middle of the garden.

The lunch and dinner menu reflects the chef’s determination to rely on seasonal ingredients to the largest possible extent. It features a range of salads with smoked trout or quail eggs, a whole section devoted to lecsó, the Hungarian version of ratatouille, and meat dishes such as duck legs or game ragout beef. The dessert section presents a sweet challenge: the cakes and pastries are so delicious and beautiful to behold that choosing just one is a dilemma in itself. The lemon tartelettes, the mulberry cottage cheese cakes or the pecan brownies, made on the premises by Czakó’s own confectionery, are tastefully displayed in a glass refrigerator inside the bistro, and one can easily linger for minutes just gawking at them before making a final decision. Restaurants Spend a Sunday by the Danube The Budapest Marriott Hotel’s renovated DNB restaurant boasts a novel “farm to table” concept and a design that was inspired by the Bauhaus style and cubist art. Designers utilized brass, steel, granite, oak, white Carrara marble and leather to create a modern, yet warm and airy atmosphere. Marriott’s Sunday brunch has a track record of close to two decades and attracts a steady local clientele in addition to hotel guests and tourists strolling along the iconic Danube promenade. The buffet-style brunch offers a mix of international and local dishes and a kid’s corner with such classics as spaghetti with tomato sauce or mini burgers. A new initiative at the DNB is a separated stand dedicated to the culinary delicacies of a particular country with the theme changing every month. The á la carte restaurant is also open during brunch, catering to guests with special dietary needs. Which is your favourite restaurant in Budapest? What I love about eating out in Budapest is that there are a lot of seriously great places, and not necessarily the white tablecloth restaurants. In Hungary in general there’s a remarkable focus on trying to deliver something great, and the wine lists are especially fantastic. My absolute favourite is Bábel, one of my most outstanding culinary experiences here in Hungary. The place is Transylvania only and has a very strong emotional tie to that area. What makes it attractive is that it is truly a journey, and at the time I was there it surprised me it hadn’t yet received a Michelin star. It’s not just for a night out since there are 11 courses on the degustation menu with matching wines. The chef here is really pushing the envelope and has set up something creative. Is there a place you visit regularly for business meals? Zóna is my no-frills favourite with its fantastic service, great atmosphere and beautifully prepared food. Seriously, I’ve never had any issues with food here; it was always prepared very well. I’d also recommend Petrus for the same reason; it never disappoints. The only problem here is that they’re quite understaffed, but the French bistro ambiance, and the lovely food are worth the visit. Esca Studio is an exciting pick, very small and cosy with an eight-course seasonal menu and natural wines from the region. Do you have a favourite Hungarian wine? I love the small wineries, the excitement in making new discoveries from time to time. The house I rent now has a wine cellar and I’ve already started filing it up. It’s curiosity driving me to try new wineries but I especially love to make personal encounters. I love the stories behind the wines and I love to learn to trust the winery, too. Quality is very high and there are few types of grapes that are unique to Hungary, which add a local flavour to wines here. I love Bolyki and Gál Tibor in Eger, Gere in Villány; they can’t go wrong. And Balaton regions such as Somló and Tihany. My current favourite is Gallai, with its white wine.

General Manager Air France KLM, ACE- Alps, Balkans and Central Europe Which is your favourite restaurant in Budapest? My absolute favourite right now is Mák Bistro. This restaurant has been such a complete experience, from the interior design to the food with matching drinks, the service, the atmosphere that I absolutely fell in love with the place. What I like about not just visiting but living in Budapest is that I get the chance to explore places. I’ve been to a number of restaurants already and I prefer the leisurely, simple venues, or even the ruin pubs that have such a great milieu. Is there a place you visit regularly for business meals? Monk’s Bistro is a place where a very high-standard threecourse dinner comes at affordable prices. The name choice is telling, as it was inspired a former kitchen of Piarist monks in the 19th century. I’ve also taken our CFO out once to MazelTov, which he really appreciated. The relaxed, homely feeling and the fact that locals also visit this place was the reason for my choice and the evening turned out just perfect. Do you have a favourite Hungarian wine? Well, to be honest, I’m more of a beer person, and I prefer simple, no-nonsense lager. Nevertheless, I do appreciate a nice glass of wine every now and then, especially when it comes with a matching meal. We visited Eger with my family for instance, where I tried the famous local wine, the Bikavér or Bull’s Blood.

Which Budapest restaurant is your current favourite and why? My favourite restaurant changes often as I constantly try out new places. Currently, my favourites are Caviar and Bull, Bábel, and Textúra, but I’m always happy to go to Zeller, Urban Betyar and Bock Bistro. Which Budapest restaurant would you recommend for a business lunch? Considering that I work in the 13th district I like to go to Melba, Dunapark Etterem and La Perle Noir in the Andrassy Hotel. Do you have any favourites in the countryside? Unfortunately I haven’t had a lot of time to discover the countryside but when I did go I enjoyed Márga Bistro in Csopak, the Rókusfalvy Inn in Etyek and the LaBor Bistro in Tokaj. Which wine/winery/wine region is your current Hungarian favourite? I prefer white wines so I lean towards the Tokaj wine region. Szepsy wines are the closest to me, especially their Furmint. It also gives me a great pleasure to see that the Tokaj area has some great female winemakers. Stephanie Berecz of Kikelet Pince is one of them in Tarcal. At the same time, I also enjoy a nice bottle of Gere Kopár, or Németh János’ Sygno Bikavér.

The Michelin recommended “Golden Caviar” is a quiet and charming restaurant with a romantic garden, only a five-minute walk from Castle Hill. Restaurants A Site of Pilgrimage for Food Lovers Tucked away in the remote village of Encs in north-eastern Hungary, Anyukám Mondta (My Mother Said) is a veritable family-style restaurant that could hold its rank among the finest of its kind anywhere in Hungary. Many food lovers from Budapest make the 212 km-long trip to Encs only to try one of the restaurant’s pizzas, or the stuffed cabbage with the heavenly homemade bread, or the succulent spare ribs. When it comes to home-made food, nothing beats Anyukám Mondta: the pickled cucumbers, the sausage, the lavender syrup, the jams and the tiramisu are all created on the spot, with loving care and uncompromising professionalism. The menu is a melange of traditional Hungarian fare with a slight twist, local curiosities like the grilled pig’s ear with chick peas, and Italian delicacies, including pancetta and gorgonzola. The Italian touch is the result of the owners, brothers Szabolcs and Szilárd Dudás, having spent years there working as a waiter and a chef. Restaurants A Celebrated Star of the Balaton Region Balázs Csapody, the owner of the Kistücsök (Little Cricket) restaurant in Balatonszemes, 137 kilometres from Budapest, is an intrepid “culinary” traveller, often on the road to immerse himself in the spirit of the art of the Mediterranean cuisine, keen to discover new restaurants, ingredients and techniques that he can put to use at home. The mission of Kistücsök is to paint a picture about its region, Lake Balaton, through its meals and wines. Chef László Jahni and the staff keep a close and trusting relationship with local producers, fishermen and wineries. They seek to connect all these players of the local gastronomic scene and thus help restore the local wine and food culture. (As a side note, the sous chef Ádám Pohner was the youngest chef to take part in the 2019 Bocuse d’Or finals, representing Hungary.) The offerings are a tasteful blend of local specialties with a Mediterranean touch. We recommend the Mangalica ham with sautéed asparagus, rhubarb and soft-boiled egg with soy dressing, the roast wild boar loin with early mushrooms, potato and spring onions or the heavenly stuffed cabbage with summer flavours. The floating island is the perfect last act to finish off an excellent meal. The fact that Kistücsök has been selected among the ten best restaurants in the country, and that Csapody was voted restaurant owner of the year in 2010, show that the restaurant is on the right track.
