an any of us believe it’s December already? Seems to me that my June landing in Georgia was only yesterday. The days turn into weeks, the weeks into months and, months into years faster than a blink of the eye. I certainly hope that everyone got out and enjoyed the fall festivals. It seems impossible to attend them all Completing these three– brand new to me– issues of Appalachian Country magazine has been… well it’s been lots of things. At times it’s been daunting, confusing and hectic. Cajoling some of you to get your ads and articles in on time, and then giving everyone up to the last minute has kept me burning the midnight oil and maybe making a few oops-ees. Deadlines are always challenging. Trying to come up with new ideas that Jodi hasn’t already done is nearly impossible, yes as you all know, she’s that good. However putting all of those hiccups aside, there are two rewarding pieces of this process that I didn’t expect. I’m genuinely pleased to be meeting so many new friends of all stripes who are never too busy to help me when I have a question or need a favor. The other piece, and I think most rewarding, is being able to lend a hand in our community’s growth through AC magazine’s advertising and articles. We all know it’s tough out there and it makes me feel needed to have a part in driving even the smallest amount of traffic to our local businesses. So thank you all for hanging in there with me. We have lots going for the holiday season, great restaurants, community service and family tradition articles as always. Terrific shopping features including a Holiday Gift Guide, a behind the scenes look at north Georgia’s most popular Santa, things to do in Ellijay and the opening of Blue Ice ice skating rink in Blue Ridge. During the photo shoot I had the pleasure of tasting a few of their wines so I can say with certainty that a visit to the winery won't disappoint. Our upcoming February issue will focus on the area’s best venues and resources for planning a spring or summer wedding. We plan to feature everything from catering and florists to photographers, wedding planners and of course that perfect venue. We'll be expanding our circulation for this issue to cover bridal shops and wedding planners in the greater Atlanta metro area. I sincerely hope that this wider circulation brings more business to our advertisers. Lastly, on a personal note, Xena and I recently added a new member to the family. We adopted a little old man Beagle from the animal shelter who was in sad shape. After 2 months, he's fat and happy, livin' the life that all dogs should! The Boy

1 Peppermint Bark Chocolate for decoration (optional) For the Crust Wrap outside of a 9-inch diameter spring-form pan with aluminum foil. Finely grind cookies with sugar in a processor; add butter, process to blend. Press mixture onto bottom and up sides of prepared pan.

For the Cheesecake Preheat oven to 350°F. Beat cream cheese in a large bowl until smooth. Add sugar and beat until well blended. Add eggs 1 at a time, beating until blended after each addition. Beat in heavy cream and vanilla. Pour into prepared crust. Place spring-form pan in a large roasting pan. Add enough hot water to come 1/2 inch up the sides of the spring-form pan. Bake cheesecake until center is just set, about 50 minutes. Remove pan from water; remove the foil and cool cake in the spring-form for about 1 hour. For the topping Heat heavy cream in a small saucepan. Remove from heat, add white chocolate chips and let stand for a minute. Whisk chocolate until smooth, add sour cream and whisk to combine. Stir in crushed candy. Pour topping over the cooled cheesecake, carefully spreading the mixture over the top. Refrigerate uncovered for about 1 hour, then cover and chill over night. Run a sharp knife around pan sides to loosen cake; release pan sides. Garnish top edges with chopped Peppermint Bark Chocolate (optional).

t’s that time of year once again when the weather outside can be frightful, but the Christmas spirit is alive, warm and delightful in the North Georgia Mountains. We all tend to get a little stressed out during the holidays, what with family coming into town, Christmas parties, and gifts to purchase. So do yourself a favor - take a break during this holiday season and get away from the crowded malls. Visit historic Downtown Blue Ridge for some of the best shopping North Georgia has to offer during Christmas time. You’ll quickly realize that Downtown Blue Ridge is the perfect setting for a relaxing December afternoon. “Silver Bells” plays softly from speakers along East Main Street as jolly shoppers peruse in and out of quaint shops. Jolly chatter can be heard from the diners sitting underneath holly-lined awnings as they sip homemade soups and drink unctous hot chocolate. Children play around charming blowup Christmas decorations and stand in awe underneath the giant Christmas tree in the center of City Park. It's small towns like this that you can only find on postcards. Downtown Blue Ridge offers a plethora of unique baubles and rare finds that are sure to tantalize and intrigue every holiday shopping taste. The Rusted Buffalo, which boasts a wide selection of Himalayan Salt Crystals used to purify air and reduce dust, is one such option. If you’re hunting for a good book look no further than E. If you’re looking for something quick, stop by Sue’s for a burger as big as your head, or head to The Trailer for scratch-made biscuits (made with lard, the only real way to eat biscuits) and sausage. There are several dinein options that offer fine dining at reasonable prices, such as Harvest on Main, which focuses on high-quality American food. Harvest is located in the heart of town, and the chef does a great job of using real, local, sustainable ingredients in creative ways. One of my greatest joys each year is finding the perfect gift for everyone on my list. eorgia’s own, Tim Cavender, who is renowned nationally and internationally for his portrayals of Santa Claus, looks forward to visiting you again this Christmas. He’ll arrive wearing his authentic Coca-Cola Santa Suit, with shiny gold buttons, designed by a Hollywood costumer. What else to wear in the state where the drink was brewed in Atlanta? He’s indeed the fashion plate, a model for authentic Santa portrayal. His “Story of the Day” TV appearance with his wife Mrs. Claus (Pam) in 2009, on CNN, is one of Santa’s highlighted memories. That was the year he was asked by a four year- old girl, “Please, bring my daddy home for Christmas.” Daddy was fighting in Afghanistan. That little girl knows there really is a Santa Claus because he brought her daddy home on her fifth birthday, December 18, 2009. Daddy! Birthday! Christmas! Santa sure knows how to make the magic happen! That same Christmas season Santa helped Georgia Governor Sonny Perdue light the Governor’s Atlanta mansion Christmas tree. He’s

returned again and again for that honor. Santa Tim (who resides in Ball Ground) has been appearing in parades, visiting schools, community events and corporate gatherings for nearly 40 years. He’s been featured in newspapers, and other journals such as Georgia magazine, with 1.2 million subscribers, Cherokee Life magazine and has been

highlighted in a book, Hometown Holidays. Santa Tim has made many television appearances, including acting as a guest meteorologist with the weather forecaster for Georgia and visiting Channel11’s Can-a-Thon each year. He and Mrs. Claus have taught other Mr. and Mrs. Claus’ how to perfect their image and work with the media. He’s even worked with the United States Marine Corp Toys for Tots program, all of this Santa experience tucked under his real leather Santa belt of memories, with probably a few of them stashed away in his leather boots too. Nothing’s fake about this Santa’s appearance. He fits the traditional picture of the jolly old elf. Like Coke, he’s the real thing. Diane also operates Chocolate Moose Consignment adjacent to the retail part of the store. Items are previewed before they are brought in, so the inventory is in good shape and clean. There is a varied selection of antiques, casual, inexpensive or quality furniture and heirlooms for the home. Great bargains abound. With consignment, Diane offers price-tag bargains, frequent shopper cards, and items discounted 10-20-30 percent at 30-60-90 days, respectively. Few items are returned to the consignor after 120 days because turnover at Chocolate Moose is usually quick. There is a generous 40/60 split, as well as store credit with discounts for consignors. The consignment shop also offers the same design and consulting services as the retail area, which includes window treatments and several lines of bedding. Oysters Bienville 2 tablespoons butter, separated ½ cup shallots, finely chopped ½ cup shitake mushrooms, chopped 2 tablespoons flour ¾ cup chicken stock 1 egg yolk 1/3 cup white wine ½ cup seasoned breadcrumbs ¼ cup grated Parmesan cheese Salt and cayenne pepper to taste 2 dozen oysters on the half shell Preheat oven to 400° F. Sauté the chopped shallots in 1 tablespoon butter until edges begin to turn gold, add mushrooms and cook until all liquid is evaporated. Add the rest of the butter, let it melt; sprinkle flour over onions and mushrooms. Cook stirring for about a minute. Add chicken stock, stirring to combine. Whisk egg yolk with wine, add to the mixture; season with salt and cayenne, and cook for 5 more minutes over low heat. Crinkle aluminum foil; place in on the bottom of a cookie sheet. Position oysters on top of the foil, using the foil to prevent the filling from spilling out. Spoon the mushroom mixture over each oyster, top with breadcrumbs and cheese. Bake until the breadcrumbs are toasted. December/January 2012-13

Black-Eyed Pea Soup with Ham & Collard Greens This simple soup is supposed to bring prosperity in the New Year! 2 tablespoons butter 4 strips of bacon 1 onion, chopped 1 tablespoon minced garlic 1 teaspoon Italian Herb 1 tablespoon cider vinegar 2 tablespoons flour 3 cups chicken broth 8 ounce cooked ham, cubed 1/2 pound collard greens 3 cups water 2 cups frozen black-eyed peas Salt and pepper to taste In a medium pot bring 3 cups of water to boil, add frozen peas and cook for about 35 minutes or until tender. In a heavy bottom pot, melt butter over medium heat. Add bacon to pot and crisp on both sides about 8 minutes. Remove bacon to a paper towel. Sauté onion, garlic and ham in bacon drippings over moderate heat, stirring occasionally, until onion is pale golden. Add cider vinegar and cook, scraping the caramelized bits from the bottom and sides of the pot, for about a minute. Add flour to the pot and cook for another

minute, stirring constantly. Add chicken stock and Italian Herb; bring to boil, lower the heat to low. While onion mixture is cooking, discard stems and center ribs from collards and coarsely chop leaves. Add collards, to onion mixture and simmer until collards are tender, about 20 minutes. Mash half of cooked peas, stir mashed and whole peas with cooking liquid into soup and simmer for 5 more minutes. Season soup with salt and pepper and serve topped with bacon bits. Living in a modern world of corporations and cookie cutter franchise stores, businesses like the Ellijay Tire Company are getting harder to find. They are a reminder of an America where you knew the business owner’s name, where people cared enough to give you a smile and where you aren’t a statistic to a boardroom full of business suits.

Ellijay Tire is one of the older businesses in Ellijay. Since 1955, the Williams family has owned and operated their business on the theory that customer service and quality are a way to attract and keep their customers. Once inside the waiting room, customers are welcomed with a cup of coffee and a friendly greeting. Family photos and school sponsor appreciation awards line the walls. It is obviously the home of people who care. Ellijay Tire Company was started in 1948 by Thad Beck and Hub Callahan. In 1952, Russell W. Williams, or “Pa” Williams, as he is known to most everyone in town, bought out Thad Beck’s interest in the company. Three years later in 1955, he bought the rest of it and operated it under the name “Russell’s Recapping.” Pa was legendary for his strength – able to bend construction rebar like it was licorice, or so the legend goes. He could also break down tires with his bare hands. His grandson, Russell, manages the shop today. “I started when I was nine sweeping floors and washing December/January 2012-13

windows,” says Russell, grinning at the memory. “Pa and my dad also taught me how to change a tire by myself.” Russell worked in the summertime and vacations from college helping his parents, eventually coming back in 1996 to work full time. “It always seemed like a good fit,” says Russell. “It’s outside, it’s seeing people, it’s working with cars and I’m in charge of my own future.” The three Williams generations have brought their own changes to the company. While Pa was the one that got it started, his son, Mike, brought the business into a modern age, updating equipment, building stock and suppliers. Then, Russell took steps to have a wider variety of stock, including additional tires and custom wheels, by building a 12,000-square foot warehouse for storage. “We’re constantly searching for market trends and deals to pass on to our customers,” he says. “Anytime we find deals, we stock up so we can pass on the savings to our customers.” He and his wife, Jodi, also initiated a website for the company (ellijaytire.com) that is able to help customers research brands and prices online from the office so they can find what they want immediately. Russell doesn’t have it in stock, he can usually get it the very next day. From talking to him, it’s obvious that he possesses a respect for others and a persistence that pays off for customers because he doesn’t give up on doing a quality job until it’s done right. Thankfully, being independent helps Ellijay Tire Company sell any brand of tire and wheel. While larger chain stores offer a price and then add extra charges, Ellijay Tire doesn’t. They include in their quotes everything that a customer needs to get out the door. They specialize in tires and wheels because the Williams family believes in doing a quality job at a few things instead of a questionable job at many things. “Because we’re established,” says Russell, “our customers can depend on us being here the next day. We’re not going anywhere.” Ellijay Tire Company has grown as the area has grown and attracts customers from around the southeast because the prices and service quality are worth the trip. The company has one of the few Corgi tire changing machines in the area, which changes run-flat tires. They even do many commercial accounts because fleet vehicles need fast service to get back out on the road. “Many people have heard about us by word of mouth,” says Russell. “We have a reputation of caring about what the customer needs. We don’t just sell to make the sale.” Generations of families come back again and again to do business. “Family and loyalty are important to us. December/January 2012-13

We enjoy people coming in with stories about Pa and our ancestors. It’s the result of doing business in a town for almost 60 years.” Russell and his staff are currently planning classes for women and new drivers to educate them on how to keep their car running smoothly (including how to change a flat tire in case of emergency). Russell attributes their success to a good foundation. “I was taught the business by a professional, who was taught by his father—my grandfather. Each of us learned from the ground up; we learned from the experience of the one before us.” The men at Ellijay Tire Company use that experience to the benefit of their customers and they appreciate the opportunity to serve regulars and meet new customers. “We deal with tires every day. Most only do it once in a while. We try to educate our customers and answer any questions they have so they feel comfortable. We do our best because each time when a customer leaves with our wheels and tires on the car, our reputation is also riding on it and we always want him or her to come back.” While they occasionally have sales throughout the year, this

Christmas the tire shop initiated a large wheel sale with almost every in-stock set marked up to $200 off per set (perfect for that person that loves his or her car). They also offer gift certificates which make a great year round gift – very practical, very easy. There are also easy financing programs available if needed. “We understand that when it comes to family, there's nothing more important than safety,” say Russell. “The rugged mountain terrain of north Georgia can take its toll on tires, so it's important for a family's safety to keep their tires working at optimum capacity all the time. We have almost 60 years of experience keeping customers on the road. We've been in business that long because we listen to our customers. We never try to sell something a customer doesn't need and we never sell something low-quality or defective that endangers his or her family.” Russell and his sales staff make a point to listen to what a customer wants and do their best 32

They currently operate diabetic programs at three locations: Jasper Drugs in Jasper, the Pickens County Senior Center in Jasper, and the Fitness Center in Big Canoe. oys for tots Began in 1947, when Major Bill Hendricks, USCR and a group of Marine Reservists in Los Angeles collected and distributed 5,000 toys to needy children. The idea came from Bill’s wife, Diane. In the fall of 1947, Diane crafted a homemade doll and asked Bill to deliver the doll to an organization that would give it to a needy child at Christmas. When Bill determined that no agency existed, Diane told Bill that he should start one, and he did! The 1947 pilot project was so successful that the Marine Corps adopted Toys for Tots in 1948 and expanded it into a nationwide campaign. Marines have conducted successful nationwide campaigns each year since 1948. The initial objective still remains the hallmark of the program today; “To bring the joy of Christmas to America’s needy children.” The Ellijay Georgia Toys for Tots local campaign covers the Gilmer and Fannin County Areas of North Georgia. The primary make up of this local campaign are members of the North Georgia Marine Corps League, Detachment #1280. Local community and church organizations also get involved as volunteers to collect toys from drop off sites, sort toys, take toy requests, fill toy orders, and wrap all of the toys. We are always looking for additional sponsors and volunteers, so please come by our office and apply. This year the Fannin and Gilmer Counties Georgia Marine Toys For Tots Campaign is located in the store front just off the Gilmer-Ellijay Square:
