Yep. Christmas just flew by us, it’s almost February and darn it, the Christmas tree is still up in my cabin. Sheesh. The Holidays were great with my Mom, her dog Natalie and my brother visiting. It didn’t take Maxine long to figure out how to open her doggie gifts, she jumped right in tearing away the wrapping and then squeaking away with her toys. Good girl. Everyone stayed through the New Year and we all ended up dancing in the new and out with the old until 2am at the Jabulani Lodge– aka our neighbor Lorenzo’s man cave. What a fun night and we could walk home! Seems that everyone got a late “When ya’ gonna be done, Mom?” start this January, and then of course Maxine gets tired of laying on the we all had the 2 or 4 week flu that couch in my office. Won’t someone knocked us back even further. Then I come and take her for a walk? ran over my glasses with my SUV, so I’ve been wearing sunglasses while putting this issue together. Have to replace them as soon as this edition gets sent to the printer. The future’s so bright…trust me, it’s never dull around here! This is our annual wedding issue and features several of the best in the business here in north Georgia. W
Well it’s January again, my least favorite month of all. I’m growing weary of all this cold wet weather and shorter days, but we have at least 6 more weeks of this mess so I might as well accept it. I love to spend as much time as possible outside so in order to get my time in during these winter doldrums, I have to put out a little more effort with planning, timing and attire. To get the volume of outdoor exercise that I NEED– I– like most, have to schedule it around work. Since I work outside, planning my activities according to the weather is a must. For instance, yesterday, it rained almost all day. I had a couple small projects to finish outside so I had to use the few short breaks of dry sky to finish work. I realized at this point that if I wanted february/march 2015
to get in a workout at all, it would have been during a rain shower. Mountain biking is my typical activity of choice. Riding in the rain is tolerable, but since it was only about 45 degrees it made more sense for me lace up my trail running shoes for a jog on Old Dial Road. Old Dial, like many of the forest service roads in the area, is covered with a canopy of trees, which helps protect against the rain. Since the road parallels the river, it’s somewhat sheltered from the wind. So suddenly the rain shower and wind aren’t as big a deal. 40 minutes of jogging was enough to get my fix and I stayed comfortable because of where I chose to run. Exploring the abundance of trails in north Georgia is a great way to get outside and exercise with a little extra

protection from the wind and rain. Most trails in the area are deep under the canopy of the forest. Take Flat Creek Trail for example. A 5.9-mile loop and part of the Aska Trail System, Flat Creek offers a full canopy almost the entire loop. About half of the loop is climbing which will keep the heart rate higher and you warmer. Since the loop stays on the lower eastern slopes of Davenport Mountain, it is even more protected from the wind, which makes it a great winter trail to explore. Choosing the right clothing is so important when it comes to outdoor exercise. A good synthetic base layer and socks is where you want to start. Synthetic materials like polypropylene are excellent for ventilation and wicking moisture from the body. Wool is a great www.aclivingmagazine.com

Target stores for instance, carries Champion brand clothing, which makes a complete line of synthetic performance gear from undies to windbreakers that are affordable and actually work. I was in Wal-Mart a few weeks ago and found a base layer T-shirt from Starter brand for five bucks. It fits well and wicks

away moisture, which is key for comfort during inclement weather. We can all find excuses for not spending enough time exercising in the winter. If you love the beauty of the outdoors but hate cold weather try getting that heart rate up a little more. With the proper attire and the right choice of terrain it is possible to stay warm and dare– I say it– have a blast in crappy weather. We are fortunate in north Georgia to have the beautiful trails and terrain that make it possible to explore year-round regardless of weather. We have hundreds of miles of forest roads and trails to choose from, so do yourself a favor and check them out. t’s also a wonderful time to attend the second annual Bowls of Hope event in order to sample great soups and chilies, hear good music and get a unique hand-crafted bowl in the process. The event, which will be held on March 21, 2015, from 12:00 p.m. to 4:00 p.m. at Willow Creek Falls in Blue Ridge, benefits Feed Fannin, an all-volunteer nonprofit group that is dedicated to feeding the hungry and teaching self-sufficiency. Every person who purchases a ticket for Bowls of Hope gets to select and keep a handcrafted bowl made by area potters. They also get to sample a wide variety of soups, chilies, breads and desserts prepared by local restaurants and chefs while listening to live music from talented local musicians including Bobby Don Bloodworth, Jennifer Danner, Jim Richter and Linda Clement. Feed Fannin strives to “help others help themselves” – and others – by reviving community spirit in Fannin County, encouraging common-good use of resources within communities, providing people with the means to grow their own food and “paying it forward” to neighbors in need and the Fannin County Family Connection Food Pantry from the abundance of their efforts.
Feed Fannin- founded in 2009, Feed Fannin is a volunteer organization working together to educate and encourage our community towards self-sufficiency while providing food for those in need. We are committed to eliminating hunger in Fannin County and the Copper Basin. Our diverse group of volunteers and sponsors apply their time and energy to help Feed Fannin through the following programs. Community Garden – We manage Community Gardens, located on Ada Street in Blue Ridge and at other sites in Fannin County, that provide space for local residents to grow fruits and vegetables. Our members work in the gardens to provide over 10,000 pounds of fresh produce to the Family Connection Food Pantry. In addition, Feed Fannin participates in the Downtown Market. This is held on Saturday mornings from May through October where local residents and farmers offer fruits, vegetables and crafts for sale. Food Pantry – We support the Food Pantry that is part of the Family Connection by providing volunteer workers, food, and money to mitigate the costs of feeding the hungry in Fannin County. Education Classes – We provide information, education, and training to those who want to learn to be more self-sufficient in growing, preserving, and preparing their own food. Connie Galloway, Feed Fannin’s chairperson, said that last year’s first Bowls of Hope fundraiser was a fun affair. “Everyone who attended had a good time listening to the music and eating the delicious soups, chilies, breads and desserts that were generously donated by our local restaurants,” Galloway said. “This year’s Bowls of Hope is shaping up to be an even better event.” To Bob Seeger, a Feed Fannin volunteer, the main attraction of Bowls of Hope is the chance to walk away with a one-of-a-kind handcrafted bowl. “To me, the neat thing about Bowls of Hope are the bowls,” he said. “Every one is handmade and donated by potters in this area. They’re really unique and beautiful works of art.” “Not only is it a fun event,” Galloway said, “but the money raised by Bowls of Hope goes to such a good cause.” Galloway explained that this year alone Feed Fannin’s volunteers grew over 6,000 pounds of produce at its organic garden in Blue Ridge and raised thousands of dollars which it donated to the Fannin County february/march 2015
Family Connection Food Pantry. Last year the Food Pantry served over 5,200 needy families with over 15,000 meals. Feed Fannin volunteers also work at the Food Pantry to help distribute the food. In addition, Feed Fannin sponsors free classes for the community on topics like gardening, food preservation and food preparation. And while you’re visiting Fannin County, take an hour or so to drive the back roads and take in the early spring in the north Georgia mountains. For many residents and visitors, this is their favorite time of year. The early spring colors are a harbinger of warmer weather ahead and Feed Fannin’s on-going commitment to feed those in need. Tickets for Bowls of Hope are $25 in advance and $30 at the door. Only 400 tickets will be sold. Buying a diamond can be an emotionally and a financially stressful purchase. You must make sure that you have an idea of what you are looking for so that you’ll be able to get what you want at a price that you can afford. Spend some time exploring your diamond ring options. This is the time for looking around and seeing what’s out there— setting YOUR standards. Once familiar with the options, establish your budget based on your income, what you feel comfortable spending, and the type and grade of diamond you wish to purchase. To do this you’ll need a basic understanding of diamonds. It’s also a great idea to find a local jeweler that you trust and have a rapport with to guide you through the process. A knowledgeable jewelry professional will clearly explain the “4 Cs” of diamonds, encourage your exploration, and help you competently compare diamonds in your price range. Talk to your friends about their experiences and check online to find a professional jeweler in your area. Look for jewelers who have affiliations with jewelry industry groups and professional associations such as Jewelers of America. With a diamond, beauty is in the eye of the beholder and bigger is not necessarily better. Diamonds are like people, each stone has its’ own unique qualities and characteristics. The characteristics– the 4 “Cs”– that determine a diamond’s value are Carat Weight, Clarity, Color, and Cut. Diamonds are graded by these 4 factors and assigned a value. The diamond grading system developed by the Gemological Institute of America (GIA) many years ago is recognized worldwide as the standard system for diamond grading. Carat Weight: Diamonds are weighed in carats. Two diamonds of equal weight can have very different pricing depending upon their clarity, color and cut. Clarity: Diamonds have internal and external features that determine how clear the diamond looks. Clarity is graded under 10x magnification. We look for characteristics called “inclusions” (internal) and “blemishes” (external). The diamond is assigned a grade from Flawless to Included.

Diamonds with fewer visible clarity characteristics at 10x magnification are more valuable. Color: Colorless diamonds are the most popular. The color grading scale begins with “D” (colorless/white) and ends at “Z” (light yellow or brown). Cut: While diamonds are available in many different shapes, cut actually refers to the proportions of the diamond. The well-cut diamond is a prism. It divides light into spectral colors and reflects the light as colorful flashes referred to as “Fire.” Diamonds with the wrong proportions will have less sparkle or fire. Many times a diamond will have a grading report or certificate. The grading report outlines the 4 Cs for that particular diamond. There are many diamond labs that issue certificates, but the Gemological Institute of America (GIA) and the American Gem Society (AGS) are the two most widely regarded and recognized diamond grading labs in the world. While there are many other diamond grading labs in operation (many of which produce their own grading reports), different labs have different grading standards, and some labs are more lenient with their standards than others. Trust yourself to really look at the diamonds, put aside the grading reports and explore each stone’s unique beauty. You don’t need a piece of paper to tell you what you can see, and often a grading report from an online retailer doesn’t tell the whole story. This is why it’s important to carefully select a local jeweler to help you make a decision. Brick and mortar jewelry stores will be more than happy to let you see the diamond up close and under magnification. Two diamonds with very similar lab reports may look very different when you actually hold them in your hand. Smaller, independently owned jewelry stores like North Georgia Diamond tend to have a more relaxed atmosphere and less of the high-pressure “Buy it Now” sales force than the larger chain jewelry stores. These local stores strive for a comfortable environment and a personal approach to customer service. s Peppermint Bark Cheesecake Crust 1 9-ounce box chocolate wafer cookies 2 tablespoons sugar ½ cup butter, softened Filling 4 8-ounce boxes cream cheese, room temperature 1 cup sugar 4 large eggs 2 tablespoons heavy cream 1 teaspoon vanilla extract

Topping ¼ cup heavy cream 1 cup white chocolate chips ½ cup sour cream 1/3 cup hard red-and-white peppermint candy, crushed 1 Peppermint Bark Chocolate for decoration (optional) For the Crust Wrap outside of a 9-inch diameter spring-form pan with aluminum foil. Finely grind cookies with sugar in a processor; add butter, process to blend. Press mixture onto bottom and up sides of prepared pan.

For the Cheesecake Preheat oven to 350°F. Beat cream cheese in a large bowl until smooth. Add sugar and beat until well blended. Add eggs 1 at a time, beating until blended after each addition. Beat in heavy cream and vanilla. Pour into prepared crust. Place spring-form pan in a large roasting pan. Add enough hot water to come 1/2 inch up the sides of the spring-form pan. Bake cheesecake until center is just set, about 50 minutes. Remove pan from water; remove the foil and cool cake in the spring-form for about 1 hour. For the topping Heat heavy cream in a small saucepan. Remove from heat, add white chocolate chips and let stand for a minute. Whisk chocolate until smooth, add sour cream and whisk to combine. Stir in crushed candy. Pour topping over the cooled cheesecake, carefully spreading the mixture over the top. Refrigerate uncovered for about 1 hour, then cover and chill over night. Run a sharp knife around pan sides to loosen cake; release pan sides. Garnish top edges with chopped Peppermint Bark Chocolate (optional).

Chocolate Pudding Cake Every cook should know how to make a chocolate cake. This one is so rich and decadent, we found people kept sneaking back for more! Once served, it was still warm in the center and when paired with a side of vanilla ice cream, it became a slice of heaven. The gooey chocolate chips were just the thing that made this cake one of our favorites. 1 box dark chocolate cake mix 1 (3.9 oz) package instant chocolate pudding mix 16 oz. sour cream 3 eggs 1/3 c. vegetable oil ½ c. strong coffee 2 c. semisweet chocolate chips Preheat oven to 350° F. Grease and flour a 10” Bundt pan. In a large bowl, combine cake mix, pudding mix, sour cream, eggs, oil and coffee. Beat until well blended. Gently stir in chocolate chips. Spoon mixture into Bundt pan. Bake for 1 hour and then cool in the pan 10 minutes. Gently, turn out the cake onto a wire rack and let cool completely. Decortae with sifted confectioner’s sugar and your favorite fruit topping- we recommend cherries or strawberries.
Chocolate-Strawberry Lava Cakes
This one gets high marks for the simplicity of making it and they taste like they came from a 5 star restaurant. If you want a dessert to impress your guests, this is it. The gooey trufflelike chocolate on the inside oozed into every pore in our bodies. It was like sin on a plate. Guaranteed to satisfy. 1 c. butter 8 oz. semi-sweet chocolate chips 5 eggs ½ c. sugar Pinch of salt 4 tsp. flour 8 muffin cups 2 Tbs. low sugar strawberry jam Melt butter and chocolate in a medium bowl over a saucepan of simmering water. Remove from heat. Beat eggs, sugar and salt in a bowl until dissolved. Beat egg mixture into chocolate until smooth. Beat in flour. Refrigerate batter for 3-5 hours.

Preheat oven to 450˚. In a muffin pan, spray liners and divide batter into cups. Bake until batter puffs and the center is not yet set, about 10-15 minutes. Carefully lift cakes from pan and set on a solid surface. Pull papers away from cakes and transfer to plates. Top with low sugar jam (we used Smuckers®). Note: It’s not sugarfree, it’s low sugar.
Raspberry White Chocolate Cheesecake It’s like creamy raspberry dream. The marble swirls are so beautiful, we could get lost. Not only does this cheesecake make a lovely presentation, but it tastes like white chocolate heaven…rich, inviting and velvety. 1 c. Oreo® cookies, crushed 3 tbs. sugar ¼ c. butter, melted 10 oz. frozen raspberries 2 tbs. sugar 2 tsp. cornstarch ½ c. water 2 c. white chocolate chips ½ c. half and half cream 24 oz. cream cheese, room temperature ½ c. sugar 3 eggs 1 tsp. vanilla Preheat oven to 325˚. In a small bowl mix cookie crumbs, sugar and butter. Press into bottom of spring form pan and set aside. In a saucepan combine raspberries, sugar, cornstarch and water. Bring to a boil and boil for 5 minutes. Strain sauce to remove seeds. In a small bowl, microwave white chocolate chips until melted, stirring often. In a large bowl, mix cream cheese and sugar until smooth. Beat in eggs individually. Add melted chips and vanilla. Pour half of batter over crust. Spoon 3 tbs. of raspberry sauce over batter and spread thin. Pour remaining batter into pan and spoon 3 more tbs. of sauce on top. Swirl batter with the tip of a knife. Bake for 50-60 minutes or until filling is set.Cool and refrigerate for 8 hours. Serve with remaining raspberry sauce and top with fresh berries.

Top Ten Wedding Trends in 2015!
1. Classic elegance and dining al fresco are the leading wedding trends. Elaborate table settings, juxtaposed on undressed farm tables set in an open-air setting, is all the rage. Burlap and galvanized tins are being replaced with vintage silver platters, crystal stemware and gold flatware.
7. Couples are choosing cake flavors that are rooted in their hometowns or family heritage, where they began dating or a favorite destination. We’re hearing about blueberry, chai tea latté, Aztec hot chocolate, caramel apple cider and more. Yum!
2. Garden roses, hydrangeas, peonies, dahlias and ranunculus are top choices for brides. “They’re dramatic, they’re romantic and they’re versatile, so they look perfect whether you’re planning a traditional wedding event or something more relaxed,” says New York City event planner Shawn Rabideau. Herbs such as rosemary, mint, lemon leaf, magnolia leaf, ivy, smilax and maidenhair fern are being strung together and used in surprising ways. They are fantastic as table runners or as chair swags, to frame cocktail menus, to redefine tent ceilings or to give chandeliers a soft edge. Consider adding them to bridal bouquets and boutonnieres.
8. Edible favors, especially ones that can be eaten as a midnight snack will be very popular.
3. Buttons and ribbons and gems. Couples will be generating excitement for their celebration by wowing guests with an invitation suite that’s delivered in attention-grabbing style: wrapped in shimmery cellophane; boxed in decorative paper; tied up with ribbon, leather rope or baker’s twine; studded with crystals; or adorned with dried flowers. Wax seals have also made a comeback. 40
4. Champagne towers and fountains are back. Add a fruit puree to a champagne cocktail for a personalized touch. Hand selecting craft beers, wine pairings or a flight of bourbons tell your guests you want to share more than just a toast. 5. Serving family style or setting up tasting stations for appetizers or part of the main meal can offer a relaxed, yet intimate, feel. Think mac ’n cheese or build your own taco bar. 6. Wedding cakes will take on texture for 2015. Rough or tree trunk finishes will be replaced by tempting-to-touch textures of quilting, ruffles, tulle and lace designs. Textured buttercream frosting also remains a strong trend for brides going for a vintage or soft, romantic feel. For a modern wedding, the texture might be a three dimensional lattice, herringbone or other geometric pattern. Another tactile approach is to have your designer roll out black fondant and hand-paint it to look like a chalkboard.

9. Updated classics, standards and 70s style bands will replace traditional wedding music. Check out Jason Mraz’s acoustic version of the Etta James classic, “At Last” or Yacht Rock. Couples might consider the music of Hall & Oates, Kenny Loggins or the Doobie Brothers. What started as an underground music movement based on the comedic TV/ online series “Yacht Rock,” this musical genre is gaining major play at weddings. “We’re not the typical wedding band,” says Nicholas Niespodziani of Atlanta’s Yacht Rock Revue (YRR). “But the dance floor is always full.” Like YRR, most of these style bands dress in period garb, complete with polyester suits and Ray-Ban Wayfarers. Party on! 10. Photo booths may have taken their last picture. Hire a silhouette or sketch artist and your guests can leave with a treasurable keepsake.
