Fall came and went, as did the Georgia Apple Festival, The Marble Festival, Arts in the Park and all of the other festivals. Maxine apologizes that she didn’t get to attend any– as short, scruffy, four-legged [shhh…dogs] are not allowed at festivals. Growl. So where did the time go? Maxine and I can usually sneak out for a few days and have some fun, but it seems like the last few months have been go, go, go! We did manage to be in the Paws in the Park parade dressed as Sid and Nancy– got a lot of laughs with that one– but I was surprised how many people had never heard of Sid Vicious and Nancy Spungen! Better think of something more current for next year. Fall is always cabin maintenance time. Richard Waterhouse of Atlas Grading did some expert work on my sad dirt driveway. Now I won’t be knee deep in mud every time it rains. Had the siding on the cabin stained for the first time in over 20 years, and it looks pretty good and protected from the elements. Before ya’ know it Christmas will be here, but first we have to get through Thanksgiving. Maxine and I will be traveling north to visit my brother and cousins near Baltimore. Lucky me, I won’t have to cook! But it also means we’ll miss all of the Light Up this-n-that parties and parades so y’all will have to have fun without us. With the Holidays right around the corner we’ve got some great gift ideas. The best one being, “How about let’s support our local artists and small business owners instead of shopping at the BOX?” Take a cruise through the Gift Guide and make your lists. Holidays = cookies so we’ve got you covered there with a few favorite recipes. Be careful when you make my Grandfather’s Eggnog, that stuff goes down a L-I-T-T-L-E to easy if you’re not careful. There’s also a few interesting fact and Native folklore stories about our local deer, beautifully illustrated by Ande Cook. And a short piece on how we ended up with Rudolph. Our next publication is the February/March issue where we feature everything for planning your destination wedding in the mountains. Looking forward to seeing what the guys at Coast 2 Coast Catering have been up to, they always are doing something fabulous. Also in the next issue is our Home Builders Showcase. You’ll find lists of builders, contractors and everything under the sun to get you started on building your dream cabin. If you’re a builder, give us a shout so you can be included. Walleye! It’s What’s for Dinner

M
My opportunities for outdoor adventure have been scarce lately. Busy with work, I have only managed to ride my mountain bike a couple of days each week and it’s been at least six weeks since I have gone fishing! This work madness has to stop! The weather here in the Blue Ridge has been incredible. Crisp mornings, bluebird skies, and beautiful fall colors really make you want to get out and do whatever it is you like to do. Having plenty of work to keep me busy through the weekend, I had to make the tough decision to take a break from work and get on my bike. I rode my usual hour and a half loop from the house– up and over Green Mountain, back to Turkey Farm and then back to the house. I could feel the lack of riding big time. Regardless of feeling like an old man, that ride was all I needed to get back my motivation to get out and ride. About half way through my ride I got a call from my buddy Destin LeSesne (AKA Bass Pro) inviting me out for a couple hours of fishing. How could I say no? Free afternoon, plenty of sunshine and a Ranger Bass Boat. I really can’t think of a better way to follow up a great ride. Lake Blue Ridge is not the easiest lake to fish. Its deep, clear waters and lack of shallow structure requires some know-how to be successful. Know-how coupled with the right equipment is even better. Destin has been fishing pretty much his whole life. His family owns and operates the Lake Blue Ridge Marina so Lake Blue Ridge is like his back yard. His father Johnny fished on the Pro Tour for years so Destin learned from one of the best. Fishing in late fall/early winter requires a different approach than fishing DEcember/January 2015

in the summer. Water temperatures are lower which tends to make bass less active. Instead of looking for shady cover, they’re often found near rocky banks with lots of sunshine. We headed out toward the middle of the lake looking for secondary points that were in the sun. Keith and I decided to fish a Texas-rigged, watermelon-colored plastic worm, while Destin decided to try a crank bait. As usual, ole Bass-Pro yanks in the first of many Spotted Bass. A few minutes later, Bang! Another one. A couple minutes later, Smack! Keith lands another Spot. What gives? Not a single strike for yours truly. Oh well, I really didn’t care. More than anything, it was just good to be out there. After a couple more Spots

Destin hooks into something big. Pretty convinced he was fighting a good size Bass, Destin brings the fish up to the boat. I grabbed the net, scooped it up, revealing a nice sized Walleye! Sweet! I have tried to catch Walleye ever since I moved here and have only caught two, so this was a treat to say the least. These northern freshwater members of the Perch family (not Pike or Pickerel) have lived in Lake Blue Ridge for years due to its depth and cooler temperatures. It’s a great habitat for these toothy predators but catching them is rare. This is partially due to the fact that most sport fishermen in the area are focused on Bass fishing but it also has to do with the behavior patterns of the fish. year like late spring, Walleye migrate toward the headwaters of the lake to feed and spawn. I’ve talked to a few locals that claim to have had success around spawning time, but the rest of the year they have little luck. Walleye prefer cold deep water most of the year. They travel close to the bottom feeding on smaller fish. What makes them more elusive is the fact that they can cover lots of ground in a day. Scientists who study Walleye in the Great Lakes Region have recorded them traveling up to 15 miles a day. So if a fish is constantly on the move in deep dark water– then it’s probably going to be harder to catch. Aside from the fact that the Walleye is just a cool fish, it’s apparently the best tasting of all freshwater fish. I’ve heard this my whole life but have never had a chance to taste one– that is– until yesterday. With four good-sized fish in the Livewell, it was time to head in so that Destin could get attend a family get together. Knowing he had no time DEcember/January 2015
to clean the fish before leaving, he offered them to me. I released the three Bass and kept the Walleye. Since it was just Carrie and myself for dinner, there was no reason to take more fish than we needed. Having never cleaned a Walleye, I did some research and found that most people fillet and deep-fry their fish. Lacking a great fillet knife, I decided to clean it like a trout. Adding butter, salt, pepper and a little cornmeal, Carrie baked it at 375 degrees in an iron skillet for about 15-20 minutes. Superb! That was hands down, the best fish I have ever eaten. I’m definitely going to have to find way to be more proficient at catching these elusive fish. I’m hooked! Destin runs a guide service out of Lake Blue Ridge Marina. I fish with him quite a bit and rarely go home empty handed. He knows this lake as well as, or better than anyone around, so if you want to “catch” and not just fish, look him up. ACLM

Homeward Bound Pet Rescue is a 501(c) (3), non-profit organization located in Gilmer County, Georgia dedicated to the rescue and rehabilitation of homeless companion animals. The all-volunteer staff provides the necessary medical care for these animals, attends to their emotional, behavioral and socialization needs, and then seeks to place them in loving homes through adoption. Homeward Bound also aggressively supports an on-going spay/neuter program in the community. A Little Bit of History. Homeward Bound was founded in August 2000 by two caring women who fostered and vetted stray dogs before adopting them out to loving homes. They soon discovered that the need in their community was overwhelming. They opened an account with a $500 deposit, and subsequently sought and obtained 501(C)(3) tax exempt status. DEcember/January 2015
An old chicken coop served as the organization’s first shelter. It had dirt floors, no heat, no air conditioning and only the bare necessities to care for the animals. In 2006, Homeward Bound received a building on 2.88 acres of land. The 30 year old structure, formerly the Gilmer-Fannin Humane Society facility, stood vacant for years. It, too, had no heat, air conditioning or fencing and the grass was as tall as the building itself. But in the eyes of the dreamer, the potential was there and the facility soon became the official home for the organization. In April 2012, Homeward Bound was on the verge of closing its doors, --not for lack of funds but personnel. A community meeting was held in Ellijay Georgia to renew interest in the work of the organization and increase its volunteer base. The response was both positive and immediate. The revival of community participation

and the effort put forth by the volunteers kept the doors of Homeward Bound open. Our Volunteers. It takes more than a village to run Homeward Bound. It takes a passionate army of volunteers who devote time, energy, and expertise to the rescue and rehabilitation effort. Some volunteers are only vaguely aware of their significance. They are preoccupied instead with doing what they do best, --creating a safe, nurturing environment, and helping forgotten, discarded animals find the courage to try again, trust again, love again. Without their feedback, their initiative, their ideas, their diligence, their grueling hard work... without their flexibility, their enthusiasm, their passion, their open and loving hearts, we would not be who we are, what we are, where we are. How the Deer Won His Antlers And Other Native American Cherokee Legends passed down through time
The Little Deer, Awi Usdi
Back when the world was young, the humans and the animal people could speak to each other. At first they lived in peace. The humans hunted the animals only when they needed food or skins to make clothing. Then the humans discovered the bow and arrow. With this weapon they could kill many animals quickly and with great ease. They began to kill animals when they did not need them for food or clothing. It seemed as if all the animals in the world would soon be exterminated. So the various animals met in council. When the bears came together and talked about what the humans were doing, they decided they would have to fight back. “How can we do that?” said one of the bear warriors. “The humans 18
will shoot us with their arrows before we come close to them.” Old Bear, their chief, agreed. “That is true. We must learn how to use the same weapons they use.” Then the bears made a very strong bow and fashioned arrows for it. But whenever they tried to use the bow, their long claws got in the way. “I will cut off my claws,” said one of the bear warriors. He did so and then he was able to use the bow and arrow. His aim was good and he hit the mark every time. “That is good,” said Old Bear. “Now can you climb this tree?” The bear without claws tried to climb the tree, but he failed. Old Bear shook his head. “This will not do. Without our claws we cannot climb trees. Without our claws we will not be able to hunt or

dig for food. We must give up this idea of using the same weapons the humans use.” So the bears gave up their idea of fighting back against the humans with weapons. One by one each of the animal groups met. One by one they came to no conclusion. It seemed there was no way to fight back. But the last group to meet was the deer. Awi Usdi, Little Deer, was their leader. When all were gathered together, he spoke. “I see what we must do,” he said. “’We cannot stop the humans from hunting animals. That is the way it was meant to be. However, the humans are not doing things in the right way. If they do not respect us and hunt us only when there is real need, they may kill us all. etly and came back and told the other animals. When the Rabbit came out at last they accused him of cheating, but he denied it until they went into the thicket and found the cleared road. They agreed that such a trickster had no right to enter the race at all, so they gave the horns to the Deer, who was admitted to be the best runner, and he has worn them ever since. They told the Rabbit that as he was so fond of cutting down bushes he might do that for a living hereafter, and so he does to this day.
Why The Deer’s Teeth Are Blunt
I shall go now and tell the hunters what they must do. Whenever they wish to kill a deer, they must prepare in a ceremonial way. They must ask me for permission to kill one of us. Then, after they kill a deer, they must show respect to its spirit and ask for pardon. If the hunters do not do this, then I shall track them down. With my magic I will make their limbs crippled. Then they will no longer be able to walk or shoot a bow and arrow.” Then Awi Usdi, Little Deer, did as he said. He went at night and whispered into the ears of the hunters, telling them what they must do. The next morning, when they awoke, some of the hunters thought they had been dreaming and they were not sure that the dream was a true one.
How The Deer Got His Horns
In the beginning the Deer had no horns, but his head was smooth just like a doe’s. He was a great runner and the Rabbit was a great jumper, and the animals were all curious to know which 20
could go farther in the same time. They talked about it a good deal, and at last arranged a match between the two, and made a nice large pair of antlers for a prize to the winner. They were to start together from one side of a thicket and go through it, then turn and come back, and the one who came out first was to get the horns. On the day fixed all the animals were there, with the antlers put down on the ground at the edge of the thicket to mark the starting point. While everybody was admiring the horns the Rabbit said: “I don’t know this part of the country; I want to take a look through the bushes where I am to run.” They thought that all right, so the Rabbit went into the thicket, but he was gone so long that at last the animals suspected he must be up to one of his tricks. They sent a messenger to look for him, and away in the middle of the thicket he found the Rabbit gnawing down the bushes and pulling them away until he had a road cleared nearly to the other side. The Rabbit felt sore because the Deer had won the horns, and resolved to get even. One day soon after the race he stretched a large grapevine across the trail and gnawed it nearly in two in the middle. Then he went back a piece, took a good run, and jumped up at the vine. He kept on running and jumping up at the vine until the Deer came along and asked him what he was doing? “Don’t you see?” says the Rabbit. “I’m so strong that I can bite through that grapevine at one jump.” The Deer could hardly believe this, and wanted to see it done.. So the Rabbit ran back, made a tremendous spring, and bit through the vine where he had gnawed it before. The Deer, when he saw that, said, “Well, I can do it if you can.” So the Rabbit stretched a larger grapevine across the trail, but without gnawing it in the middle. Deer ran back as he had seen the Rabbit do, made a spring, and struck the grapevine right in the center, but it only flew back and threw him over on his head. He tried again and again, until he was all bruised and bleeding. “Let me see your teeth,” at last said the Rabbit. So the Deer showed him his teeth, which were long like a wolf ’s teeth, but not very sharp. “No wonder you can’t do it,” says the Rabbit; “your teeth are too blunt to bite anything. Let me sharpen them for you like mine. My teeth are so sharp that I can cut through a stick just like DEcember/January 2015
a knife.” And he showed him a black locust twig, of which rabbits gnaw the young shoots, which he had shaved off as well as a knife could do it, in regular rabbit fashion. The Deer thought that’s just the thing. So the Rabbit got a hard stone with rough edges and filed and filed away at the Deer’s teeth until they were worn down almost to the gums. “It hurts,” said the Deer, but the Rabbit said it always hurt a little when they begin to get sharp, so the Deer kept quiet. “Now try it,” at last said the Rabbit. So the Deer tried again, but this time he could not bite at all. “Now you’ve paid for your horns,” said the Rabbit, as he jumped away through the bushes. Ever since then the Deer’s teeth are so blunt that he can not chew anything but grass and leaves.
“All right,” said the Rabbit. So they went back to get a good start, and when the Deer gave the word Kû! they ran for the stream, and the Rabbit made one jump and landed on the other side. But the Deer had stopped on the bank, and when the Rabbit looked back the Deer had conjured the stream so that it was a large river. The Rabbit was never able to get back again and is still on the other side. The rabbit that we know is only a little thing that came afterwards. ACLM tended to be friendly until the Rabbit was off his guard. Then one day, as they were going along together talking, he challenged the Rabbit to jump against him. Now the Rabbit is a great jumper, as every one knows, so he agreed at once. There was a small stream beside the path, as there generally is in that country, and the Deer said: “Let’s see if you can jump across this branch. We’ll go back a piece, and then when I say Kû! then we’ll both run and jump over the stream.”

In the still air of morning, a gentle rain falls on a hundred million leaves. The soft patter of raindrops on the forest canopy resounds to fill the silent spaces beneath the trees. Our little secret: The road less traveled is in the mountains of North Georgia. Here, deer watch people more than people watch deer. Like silent shadows, their nearly invisible forms freeze in full arrest with every approach. You see them long after they see you, their ears erect and their eyes alert. Water courses, rushing everywhere, collecting into a labyrinth of almost trackless creeks and rivers winding their way through the land beneath the Blue Ridge. Clouds cling in the crevasses and above creeks and bodies of water, lending an air of mystery and wonder, and giving birth to the name “Great Smokies.” Overhead, or sometimes flying low over rivers and streams, waterfowl are on patrol today same as millennia past, cacophonies of quacking ducks and honking geese.

The sink is a never ending pile of greasy bowls, dye stained squirt bottles and spatulas. Whether it’s a plate of family favorites for the kids or five dozen for the annual cookie swap, it’s time to get in gear and bake those Holiday Favorites that everyone loves!
Holiday Mint Patties
If you just want to be thoughtful, fill a Christmas mug with these patties and give it to someone you care about. It’s the perfect way to tell them to have a sweet day! Ingredients ¾ c. sweetened condensed milk 1 ½ tsp. peppermint extract 4 c. confectioners’ sugar 3 c. semisweet chocolate chips** 2 tsp. shortening Preparation In a large mixing bowl, combine condensed milk and peppermint DEcember/January 2015
extract. Beat in enough confectioners’ sugar, a little at a time to form a stiff dough that is no longer sticky. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let patties dry at room temperature for two hours, turning once. In a medium saucepan over low heat, melt chocolate with shortening, stirring often. An alternative method is to microwave on medium at 30 sec intervals. Remove from heat. Dip each patty into chocolate and let cool on wax paper. Decorate with drips of melted mint colored white chocolate.*

Stylish Chocolate Macaroons
A little bit of tart combined with a lot of sweet. These chocolate macaroons make a beautiful display for guests. Store them in a tight container and eat them within a few days before the chocolate begins to bloom. Ingredients 1/3 c. butter, softened 3 oz. cream cheese, softened ¾ c. sugar 1 egg yolk 2 tsp. almond extract 1 ½ c. all-purpose flour 2 tsp. baking powder ½ tsp. salt 5 c. flaked coconut, divided 48 chocolate kisses**
FIVE TIPS FOR BAKING BETTER COOKIES 1. Read your cookie recipe carefully before starting. Trust us on this one.
Makes for easier clean up and your cookies come out looking beautiful.
2. Give yourself two days. Do all of the mixing on one day and the baking on another. Almost any cookie dough (roll out or drop) can be refrigerated for a week or so before baking, and is most often better after refrigerating.
4. For drop cookies, use a cookie scoop to assure that all of your cookies are the same size and will bake evenly.
3. Don’t grease your cookie sheets. Use parchment paper or silpats instead.

5. Don’t use flour to roll out your cookies. For light colored dough, use powdered sugar, and for chocolate cookies, use cocoa powder. Or you can simply use waxed paper.

Preparation In a large bowl, cream butter, cream cheese and sugar until fluffy. Beat in egg yolk and extract. In a separate bowl, combine flour, baking powder and salt. Gradually add to creamed mixture and stir well. Stir in 3 cups of coconut. Cover and refrigerate dough for 30 minutes until it’s easy to roll. Preheat oven to 350 F. Roll dough into small 1-inch balls and roll in the remaining coconut. Place 2 inches apart on an ungreased baking sheet. Bake 1015 minutes or until slightly brown. Immediately press a chocolate kiss** into the center of each cookie. with a cup of hot coffee. Watch the snow, sing some carols and relax with the smell of cinnamon. Ingredients 1 c. butter, softened 1 ½ c. white sugar 1 egg 1 ½ tbs. molasses 2 ¼ c. all-purpose flour 1 1/8 tsp. baking soda 1 tbs. ground cinnamon Preparation Preheat oven to 350 F. In a large bowl, cream together butter and sugar. Mix in egg and molasses, stirring well. In a small bowl, mix flour, baking soda and cinnamon. Slowly add flour mix to the molasses mixture in the large bowl and stir until well mixed. 32
Drop onto ungreased cookie sheet 2 inches apart. Bake for 10-12 minutes and cool on wire rack. Store in tight container to keep soft.
Sugar and Spice Pecans
The incredible smell while these are baking will have everyone waiting at the oven door with anticipation. You also might consider doubling or tripling this recipe since the pecans disappear in a hurry! Ingredients 1 egg white 1 tsp. ground cinnamon 1 c. white sugar ¾ tsp. salt 2 tbs. water 1 lb. pecans

Preparation Preheat oven to 250 F. In a large bowl, beat the egg white until foamy. Mix in cinnamon, sugar, salt and water and stir well. Stir in pecan halves, stirring well until coated thoroughly. Spread on baking sheet. Bake for 1 hour, turning over pecans every 15 minutes.
Old Fashioned Snow Ice Cream
We had to include this old favorite just in case we had a white Christmas. If you can remember making this when you were a child then you’ll know why you can’t have snow without it.

Ingredients 1 gallon clean snow 1 c. white sugar 1 tbs. vanilla 2 c. milk
Why would you buy store-bought eggnog when you can make this simple recipe at home?
Prepartion Use a large bowl to scoop up the clean top layer of snow. Stir in sugar, vanilla and milk. Serve immediately with sprinkles and your favorite cookie or freeze quickly. To make this a festive adult Holiday dessert, top with an ounce your favorite liqueur. Perhaps Peppermint Scnapps or Green Chatruese? Enjoy!

Ingredients 4 eggs* 1/3 cup sugar 1 pint whole milk 1 cup heavy cream 3 ounces bourbon, rum or brandy** 1 cup whipped cream 1 cup vanilla ice cream Cinamon, nutmeg and cloves to taste Preparation In large bowl, beat the eggs on high until they lighten in color. Gradually add the 1/3 cup sugar and liquor. Continue to beat on high

until the sugar is completely dissolved. Here the liquor and sugar are meant to “cook” the eggs. Add the milk, cream, and nutmeg. Beat on low to combine. At this point you have 2 choices, chill overnight to let flavors expand. Or chill for one hour and serve. To serve, stir in whipped cream and ice cream. Sprinkle top with cinanmon. * To avoid the slight risk of salmonela, use shell eggs that have been treated to destroy salmonella, by pasteurization or another approved method. ** The O’Keefe family like their eggnog a bit strong therefore adding all 3 liquors to taste. The Origin of Santa’s Reindeer

Santa’s Reindeer come to mind as soon as you start to think about Christmas. We’ve all heard the legend about Santa flying around the world to deliver toys in his sleigh pulled by eight reindeer, but they weren’t always part of the Christmas celebrations.
Different Ways to Travel
As Christmas legends go, the story of the sleigh with Santa’s reindeer is very new. For many centuries there have been stories about a kind old man delivering gifts to children all over the world, whether he’s known as St. Nicholas, Sinterklaas, Father Christmas, Santa or any of his other aliases. Stories of the mysterious and generous old fellow have been around since the fourth century. But it wasn’t until the 19th century that the eight famous reindeer entered the Christmas scene. Prior to that, Santa traveled on a white horse in Europe and a donkey in South America. It is believed that Dasher, Dancer, Prancer, Vixen, Comet, Cupid, Donner and Blitzer first appeared in 1823, in the poem “A Visit From St. Nicholas,” commonly known as “The Night Before Christmas,” by Clement C. Moore. It didn’t take long for them to become an essential part of holiday lore. It soon became common for artists to depict Santa with reindeer. Santa’s sleigh full of toys being pulled across the sky by the team of reindeer has become an iconic holiday image. DEcember/January 2015

But what of Rudolph, the most famous reindeer of all? Rudolph, the red-nosed reindeer, was created in 1939 by Robert May, an employee of Mongomery Ward. The department store wanted to create a free giveaway book for children as a promotion. May wrote the story in rhyme for the book, which was a big hit with Montgomery Ward’s customers. By the late 1940s, approximately six million copies of the book had been distributed. May’s words were set to music in 1947. “Rudolph the Red-Nosed Reindeer” was recorded by Gene Autry and became a huge hit, cementing Rudolph’s place in Christmas history. New tales and stories of Santa’s reindeer sleighpulling team continue to make their way into popular culture in the form of books, movies and television shows, showing us that the legend of Santa’s famous reindeer is here to stay. 12/6 12th Annual Run for the Children Reindeer Run Historic downtown Canton. The Service League of Cherokee County will present the 1-Mile Fun Run on Saturday at 8:00 a.m. and the 5K will begin at 8:30 a.m. The holiday-themed race begins and ends at the gazebo in Cannon Park located at the square in downtown Canton and follows a route through the historic business district and surrounding neighborhoods. The event will take place rain or shine. All pre-registered runners will receive a long-sleeved t-shirt. Cash prizes will be awarded in the 5K race to the top three overall male and female runners.
