Marcia Brinkley never aspired to be a chef, but working with food always has been a part of her lifestyle. The New Brighton resident retired from her career as a General Mills food editor in 2014, after years of working on food concepts, products and recipe development. As a home economics major at Iowa State University, Brinkley found herself leaning toward business and prepared for a food science career in the corporate world. Her college degree is in food science. Following college, Brinkley got what she calls “a dream job” in the Betty Crocker kitchen. “I worked on developing recipes for products and did product quality tasting,” she said. In her work as a food editor, she did research on “what’s new and trendy, and what we can do that’s new and unique.” At one time Brinkley worked with Pillsbury Bake Off contestants. “That was a really fun thing,” she said. Now her work with food has come full circle. “When I retired, I thought I might quit learning,” she said. “While I was able to earn a living with a career in food, now I enjoy it as part of my home life.” “I like to cook,” Brinkley said. “Since I retired, I’ve been enjoying cooking immensely.” She and her husband both have chosen primarily vegetarian diets for the last 25 years. “Occasionally we have salmon, but we focus on vegetables, greens and Three generations of Brinkleys working together on gingerbread houses in November 2015, are, from left: daughter Gwen BehnkBRINKLEY - TO PAGE 3 en; grandson Justin Behnken, 11; and Marcia Brinkley.
