Malta has been a natural hub for relocation ever since the 1994 Malta Permanent Residence Scheme was launched and, more recently, the more advantageous schemes such as the Global Residence Regulation Scheme 2014. ear Guests and friends of Hilton Malta, I am delighted to welcome you to this seventh edition of our magazine. Soon after Malta’s long, hot summer finally faded into Autumn, and life at our hotel had started to settle down to a less hectic pace, we at the Hilton Malta were delighted to welcome a large number of very distinguished visitors, Heads of State from other European countries who were in Malta to take part in the Migration Summit, and stayed at our hotel for the duration of their visit. Immediately following that very important event, we hosted participants in the Commonwealth Business Forum, which was held at the Hilton Malta Conference Centre, as well as delegations to the Commonwealth Heads of Government Meeting. Hilton Malta is proud to have played such a major role in the unfolding of these highly significant events, and to have supported in this way an organisation which brings together diverse peoples who share common interests and values. Even before this very busy time, the hotel had welcomed other visitors whose primary occupation while on the Island was to participate in conferences, meetings, and tournaments, but who still made time to enjoy our restaurants, bars and facilities after the day’s work was done. I am delighted to report that we have had a wonderful response and very positive feedback regarding our newly refurbished rooms, and we are proud to have improved on our home-from-home experience for our guests. And there is more of that to come! Earlier this year we announced a major project of refurbishment for the hotel, from the 6th of February to the 15th of April 2016. We will be closed for the entire 10-week period, with the exception of our award-winning Blue Elephant restaurant, and our very popular LivingWell Health Club. When we do re-open for business on the 16th of April, we will have a totally fresh new appearance to present to our guests and visitors, and my team and I confess to being hugely excited at the prospect.
At the end of what will undoubtedly be a mammoth undertaking, entailing many thousands of man hours, huge quantities of fine materials, as well as much careful and intensive thinking and planning, we will have a new look for our Vista lobby bar, Oceana Restaurant, Executive Lounge, and the remainder of our ‘classic-style’ rooms. Other necessary works elsewhere in the hotel will also be carried out during this time, ensuring that the property is in splendid shape when we welcome back our guests and patrons. Thanks and appreciation go to our owning company, the Tumas Group, for their generous investment and enthusiastic support while the project was being designed; and thanks also, in anticipation, to our many team members who will be contributing their efforts and their talents to the project. Before this chapter in the life of Hilton Malta begins, however, we are also looking forward to a very special time of year, the Festive Season which we celebrate so sumptuously in our hotel. We have recently launched our programme of events, which I’m sure you will agree promise a vast selection of delectable dishes, tempting drinks, and sparkling entertainment. We hope to welcome many of you to our outlets on these occasions, during which you, your families and friends can happily recall the events of 2015 and welcome the new year in. I wish you and your families a winter full of warmth and enjoyment along with a wonderful 2016 full of travels.

In celebration of Hilton Worldwide’s annual Global Month of Service, throughout October, more than 100 volunteers from Hilton Malta have refurbished a crafts and pottery room at the Inspire Foundation used by children and adults.
Upon visiting Inspire in Marsascala to discuss the wish to partner for Hilton’s Global Month of Service event, it was immediately apparent that the crafts and pottery rooms used by the clients as part of their treatment was in a bad state of repair. Hilton Team Members decided to focus their energy on this one project, making sure to deliver a full make over to the two rooms.
“It was great to see our Team Members and Suppliers come together for a good cause. The Inspire Foundation provides services to many people at a subsidised rate and sustainable
The hotel put together contractors and team members who worked over
a two week period in their own time to strip the existent rooms down and set them back up with new ceilings, flooring, furniture and health and safety equipment amongst others. Since its inaugural service celebration in 2012, Hilton volunteers have provided support to more than 6,700 projects worldwide contributing more than 300,000 hours of community service. Last year in just one week, Hilton hosted more than 3,500 projects in 86 countries, volunteering more than 150,000 hours. The company aims to complete 3,750 projects across its global footprint.

HR HEALTH WEEK CELEBRATION During the month of October Hilton Malta organised a Healthy Living Awareness Week for all Team members. Basic health tests including Blood pressure, BMI, blood glucose checks and Foot screening where offered to all team members. Daily stretches during pre-shift briefings where organised together with our Livingwell health club. Smoothies, Fruit, Healthy Food Tasting where on offer. In addition a number of information campaigns; breast cancer; quit smoking, and Diabetes awareness were shared during the week. The week ended with a competition amongst team members on health fun facts with the winners winning Gym membership at our Livingwell health club.
HR AND HK APPRECIATION WEEKS Every department gets to have a week of appreciation organised specifically by their Department Head. October was dedicated to our excellent Housekeeping team and November was the week selected to celebrate the hard work and dedication of Human Resources Team. Housekeeping celebrated with food, talent shows, cultural food stands, massages and the much awaited disco party. Cocktail making sessions, tea and breakfast treats, small gifts of appreciation and a cultural tour where a few of the activities organised during the special week for the HR team.

HILTON MALTA HAS RECENTLY SPONSORED THE RESTORATION OF A PAINTING FOUND IN THE CHAPEL SACRISTY IN SPINOLA BAY. WE CATCH UP WITH LOCAL RESTORER ERIKA FALZON WHO HEADED THE PROJECT. Hilton Calling: Could you offer a brief overview of the restoration project? Erika Falzon: The painting represents a Portrait of Fr Paul Raphael Spinola. It has been attributed to Gian Nicola Buhagiar [1698-1752] and it hangs in the sacristy of the Chapel of the Immaculate Conception, the chapel that overlooks Spinola bay. Fr Claude Portelli asked me for a condition assessment, and the painting was found to be in a poor state of conservation. The main issue was the condition of its paint layer. The original paint layer was very fragile, with numerous areas of lifting. This was certainly due to the materials used in a past restoration treatment. Certain glues were applied to the paint surface, which in turn was unable to absorb the contraction of the shrinking glue resulting in blistering and actual loss of paint. The paint layer suffered much abrasion, probably due to several past aggressive cleaning interventions. Some of the paint areas had lost much of the original paint that they were covered with new paint during past restorations. Despite being carried out using oil paints in the same tone as the original, the ageing paint tends to form discolorations that result in the painting looking dull and stained. Finally, the canvas support was also very weak. HC: Could you tell us a little more about the painting and it's history?
EF: The painting is unique as it portrays the Knight. Spinola Palace, the Chapel of the Immaculate Conception and the arched boathouses are part of what is known as the Spinola Complex. The Spinola family were attracted to this picturesque locality in the 1680’s when St Julian’s was populated by a handful
of fishermen and farmers. The Spinola’s were not only famous in Genoa but also in the rest of Europe, they held roles such as doges, governors, bishops and cardinals, authors and so forth. Some of them were knights of the Order of St John, amongst whom we find the Balì Giovanni Battista Spinola who

was Admiral of the Order’s fleet, today buried in St John’s Co-Cathedral. Francesco Napoleone Spinola de Roccaforte, Marquis of the Holy Roman Empire was a great devotee of the Madonna and wanted to build an Abbazia (abbey) in her honour. As he was not a member of the Order he provided the money to his brother Raffaele Spinola, Grand Prior of Lombardy as the beneficiary and first rector of the Abbazia. The foundation was registered in the Acts of the Notary Francesco de Ferraris in Genoa on the 18th November 1689. Fra Paolo Raffaele built the Chapel of the Immaculate Conception with his brother’s money. Dr Keith Sciberras has recently attributed the painting to Gian Nicola Buhagiar. HC: Can you describe the techniques, materials and unique challenges encountered during this project? EF: The painting technique is typical of the baroque period; the artist used oil paint on a canvas support. Prior to painting the portrait the artist prepared the surface with a reddish-brown preparatory layer.

The main challenge was the fragility of the paint surface. Before removing the painting from the wall we had to apply a protective paper, this is a first aid treatment to ensure that no paint film is lost in transportation and throughout the initial treatments. The treatment of the paint was delicate, as we had to remove the glues used in the past treatment, notwithstanding that the paint was actually too delicate to ‘touch’. The cleaning treatment removed the accumulated grime and the old varnish layers bringing out the original colours and textures. HC: What made you pursue a career in restoration and what do you feel passionate about? EF: I always liked to paint. My greatgreat-grandfather was the artist Giovanni Schranz so I’d like to think that this passion was passed on through my ancestor. When I was a teenager I visited Florence on a school trip, and saw a team restoring a statue inside the Galleria degli Uffizi. I was fascinated by this and dreamed of doing the same on
paintings some day. Eight years later I moved to Florence for three years to follow a course in conservation and restoration of paintings. After working for a number of years I still feel excited whenever working on a new painting, and especially love analysis and investigations. Over the last couple of months we worked on two paintings, and in both cases we saw other colours through the top layer of paint film. We performed X-rays in a local hospital and both revealed very different older compositions beneath. HC: Following its restorations, what are you overall comments with regards to the project? EF: When I first saw the painting, the condition was really very poor and aesthetically Fr Raphaele appeared very poorly. Today we can see him in his full majestic glory, which we feel he surely deserves. This is very satisfying.

I
That’s been quite a journey! I remark. “I feel that having experienced the various aspects of the business from so many angles really helps me in my position today. I believe that it is important to consider the operational and business functions of the hotel in a holistic manner rather than separate entities.”
Fabien explains how following four years in that role, he then took on a Sales Manager in the MICE sector position. He also spent some time in Tour Operations and eventually moved into Local Corporate Sales. Three years ago he was appointed Director of Sales at Hilton Malta.
Surely in the past 14 years, the industry has changed dramatically. I am curious to know what Fabien has to say about this. “The leisure sector is a great example of this,” he replies. “Back in the day, people would visit a local agency and browse through a series of available leaflets before booking their summer holiday. Nowadays technology has changed the way a hotel operates in its entirety. This refers to individual

There is an increased demand for shared information and media, as well as online review opportunities, forums and blogs – it’s a completely different ball game,” he enthusiastically remarks. So we can agree that booking trends have changed, but what about the traveller? “People today expect good value, and it is our duty to offer this to them. Our job is to take care of our clients and delivering what we promised each and every time.”
He recounts the importance of communication between the Sales and Operations teams. “Details need to be precise, and the success of an event relies almost entirely on an impeccable flow of communication,” Fabien mentions. “Of course, years in business help us pre-empt certain situations. I think it’s important to always know a little bit more than the customer actually tells you, without ever assuming anything,” he concludes.

THE MILLENIUM HILTON’S GENERAL MANAGER JIMMY SARFRAZ HOLDS A SPECIAL PLACE FOR THE HILTON MALTA WHERE HE WAS THE DIRECTOR OF OPERATIONS FOR 2 YEARS, STARTING SEPTEMBER 2007.
Hilton Calling: Could you give a brief overview of your professional career? Jimmy Sarfraz: Earlier in my career, I held leadership and operational roles at the Hampshire Hotel, Hotel Arena, Bilderberg Hotel Oosterbeek, Bilderberg Residence Groot Heideborgh, Renaissance Amsterdam Hotel and various Sheraton hotels, all in the Netherlands, and the Sheraton Karachi Hotel & Towers in Pakistan. Following my tenure in Malta, I was successfully assigned the role of Director of Operations at Hilton Park Lane in London – Hilton Worldwide’s flagship hotel in Europe – responsible for day-to-day operations and a $20 million refurbishment of guest rooms and public spaces. In 2011, I was presented with the option to form part of the opening team at the Conrad New York as the Resident Manager. Having previously worked in Asia and Europe, I welcomed the opportunity to gain experience in a fiercely competitive market like New York City.

HC: The media has described you ‘a self-starter and people manager’ – how would you describe your management style? JS: Indeed, I truly believe that being visible and approachable to the team is at the forefront of successful leadership. I encourage and challenge my management team to get involved in the decision making process of the hotel operation and hence my mantra lies behind Harry Truman's (33rd President of the United States of America) quote 'It is amazing what you can accomplish if you do not care who gets the credit.' HC: How would you describe your tenure in Malta? JS: The Hilton Malta is beautiful and the staff is fantastic — just the most kindhearted and attentive people I have ever encountered. The team is truly passionate and proud of the service they provide and the product they deliver and hence why the Hilton Malta consistently receives rave reviews. Immediately, upon my arrival on the idyllic island, I was made to feel truly welcome by the team. Ever since the re-opening of the Hilton Malta in 2000,

the success of the hotel was further consolidated by great leaders and supportive ownership that incessantly strive to keep the hotel ahead of the competition – in my opinion, the Hilton Malta is the best hotel on the island. HC: Are there any distinct ‘Malta Memories’ you might be willing to share? JS: I truly fell in love with the island immediately. I enjoyed the impressive history, the beautiful beaches, the long summers and the occasional social 'fenkata'. I have made true friends who I am still in regular contact with – I also married a Maltese lady so I will forever have a fond connection with the island! HC: As of 2014 you have been appointed General Manager of the Millenium Hilton Hotel in New York. What is your vision here? JS: It is my great privilege to lead such a talented team of individuals, most of who have been working here since the hotel opened in 1992. The Millenium Hilton is prestigiously located in Lower Manhattan, the birthplace of New York City. The hotel is next to St. Paul's Chapel, which is the oldest surviving church building in Manhattan. The said chapel was the place where George
Washington worshipped on the day of his inauguration as the 1st President of the United States. It also stands at the epicenter of the rebuilding of Lower Manhattan – the best shopping options, the new One World Observatory and easy access to the rest of the city are all within a few steps of the hotel, making the Millenium Hilton the ideal destination. The Hudson River is also very close by and walking or jogging along this river is a fantastic way to unwind whilst taking in the beautiful views of Lady Liberty and Ellis Island. The hotel operates in a very competitive environment and my vision is to remain at the top of its competitive set in all fields, namely market share and guest satisfaction. And even more so, I want to continue to make the Millenium Hilton a great place to work for our team since our employees are at the heart of our success. I am confident we shall be successful in achieving our vision through our team's diligent and hard work, coupled with the support received from our ownership group and Hilton senior leadership.

THE FOURTH CD BY PETER CALAMATTA ENTITLED ‘HELLO YOUNG LOVERS’ HAS JUST BEEN LAUNCHED AT THE QUARTERDECK BAR AT THE HILTON, MALTA. This CD is dedicated to the memory of the melodic British singer Matt Monro who, according to the greats of his time, including the master of them all Frank Sinatra, had the best voice in the industry. Matt Monro was able to achieve success in the UK and across the Atlantic in the United States, at a time when the Beatles were creating the most significant revolution in the music industry. He did this with a voice so mellow and rounded that he stole the hearts of all those who chose to listen carefully to his vast repertoire of romantic songs. Peter was always a great fan of Matt Monro and when he embarked on his singing career, aged 72, it was his hidden wish to record an entire CD dedicated to Monro’s songs. This CD personifies a wish come true. Alas, Matt Monro died at the young age of 54, a victim of excessive drinking which led to liver cancer. But his songs live on and still give great pleasure and arouse loving emotions in all those who listen to them. Peter had the pleasure of meeting Matt personally when he performed in Malta at the then famous Verdala Hotel. They exchanged a couple of words and a warm handshake after the concert – a memory that is fondly remembered by Peter till this present day. Once again, this year’s CD is intended to raise much-needed funds for the Millennium Chapel. Fr Hilary praised Peter’s efforts during the launch event, and noted that so far, close to €15,000 have been raised from the sale of Peter’s CDs. ‘Hello Young Lovers’ should prove popular due to its iconic choice of songs from the 60s and 70s.

HILTON MALTA RECEIVES
15 MILLION REFURBISHMENT INVESTMENT HILTON MALTA HAS BEEN MAKING BIG MOVES LATELY AND THIS IS REFLECTED IN THE REFURBISHMENT PROJECT SCHEDULED TO KICK OFF NEXT FEBRUARY FOR A PERIOD OF TEN WEEKS.

s part of its recent multi-phased refurbishment programme, the hotel’s event spaces and restaurants are next on the agenda along with 293 bedrooms, extended executive lounge facilities as well as the hotel’s elevators. The project will also include investment in new engineering technology to provide a more energy efficient operation. Tumas Group announced this intensive investment programme during a press conference, where it was noted that that the total investment would amount to around €15 million. Matthew Mullan, General Manager of Hilton Malta said “Hilton Malta has

positioned itself as the premium hotel in Malta and this significant upgrade to the facilities will ensure we are best placed to continue to provide world class quality and service to our guests. According to Jean-Philippe Nuel, the architect-trained interior designer behind some of France's boldest new
boutique hotels, and also the designer heading the Hilton Malta project, “Hotel interiors should reflect an oasis to relax and escape. It’s important that if you had to spend a couple of days in your hotel, you’d love every minute of it.” Due to this extensive project of refurbishment, the hotel will be closed for a short period of ten weeks from the 6th of February to the 15th of April 2016. This investment will ensure the facilities provided at Hilton Malta will continue to be among the best offered anywhere in the world.

eautiful surroundings, stellar service and exquisite cuisine are just the bare minimum of what to expect from Blue Elephant, the chic Thai eatery located by the marina at the Hilton Hotel in Malta.
Unwind in a lush orchid garden and expect to be pampered and surprised by the flavours, scents and textures of the Far East. I once again had the pleasure of visiting this marvellous restaurant last week in the company of friends and colleagues, and it’s needless to say I was well impressed. As we seated ourselves around a large table, orchids and brass cutlery form an elegant contrast with the hand painted artisanal crockery. We are greeted by Matthew DeBono – Blue Elephant Manager who would be our host for the night. There’s a bubbling stream running right along our table, and I’m suddenly distracted by trying to follow the large koi carps swimming beneath. A glass of Melqart, a blend of Maltese Cabernet Sauvignon and Merlot is just what I needed to snap back to reality. It’s been a while since I’ve seen these people and we definitely have a lot to catch up on. Soon after, we are presented with an assortment of starters that included chicken satay served with an incredible homemade peanut sauce, Blue Elephant spring rolls, crispy Thai fish cakes, steamed dim sum, crispy paper prawns and a fresh enoki seafood salad with rice noodles. Leaving the best for last, I’d definitely recommend trying the Thung Pu. These light and crispy
egg pastry parcels are stuffed with crabmeat, spring onion and a whole lot of love – you’ll thank me later. Next up was a selection of soups that included a Menam chicken soup made with coconut milk and flavoured with lemongrass and herbs, or a Tom Kha seafood soup prepared with young coconut and flavoured with lemongrass and gangal. I opted for the latter and was initially surprised by its vibrant freshness. It’s a little hard to describe as I don’t think I’ve ever tasted anything of the sort before, but the easiest way would probably be an initial tangy flavour that is elegantly mellowed out by the milky coconut and the spicy gangal ginger – that sounds just about right. For the main course we were served with an interesting seafood curry that included a selection of fish and seafood in a delicate red curry sauce. A roasted duck curry, served in spiced coconut milk with grapes and pineapples was next, followed by my absolute favourite dish at Blue Elephant; the Massaman

Lamb. This traditional Southern Thai dish includes slow-cooked lamb stewed in coconut milk, Thai sweet potatoes, roasted peanuts and cashew nuts and is absolutely divine. They say that it’s great to try new things; but sometimes all you need are a couple of constants, and this is definitely one to keep returning to. The main dishes were accompanied by a selection of rice-based dishes that included steamed jasmine rice, Royal Fried rice and the Blue Elephant Pad Thai that takes a classy twist on the traditional composition of rice noodles served with shrimp, bean sprouts, eggs, peanuts, spring onion and red chilli. Bringing the evening to a pleasant end was a selection of typical Thai dessert options that included Thai mango, a fresh fruit skewer, jasmine pudding, vanilla ice cream, chocolate fondant and a fresh rambutan, an exotic fruit from Southeast Asia. We were presented with a fresh orchid on our way out which really added a special touch to the end of an already magical evening. If apart from a passion for the discovery for new flavours, you’re looking for a transcending experience in itself, the Blue Elephant is definitely a restaurant to visit, and visit, and visit. The Blue Elephant restaurant will remain open throughout the year.

AUBERGES
THE RESIDENCES OF THE KNIGHTS THE TERM AUBERGE REFERS TO THE PALACES INHABITED BY THE KNIGHTS OF ST JOHN DURING THEIR STAY IN MALTA. DURING THEIR FIRST YEARS HERE THE KNIGHTS SERVED IN THE EXISTING HOSPITALS ONCE A WEEK, AND IN RETURN WERE GRANTED BOARD AND LODGING IN THEIR RESPECTIVE AUBERGES.

hese habitations were organised into eight languages of the Order, these included Castille et Leon (Portugal), Italie (Italy), Aragon (Spain) Angleterre et Bavière (Anglo-Bavarian), d’Allemagne (Germany), France (France), Auvergne, and that of Provence (historical counties and provinces of France). Out of these eight buildings, only five have survived. The Auberges of France and Auvergne were both destroyed during WWII, whereas the Auberge d’Allemagne was demolished to make way for the Anglican Cathedral of St Paul. The remaining Auberges encircle the area around St John’s Co-Cathedral, some of which are built on two floors housing ceremonial halls on the lower level, and bedrooms upstairs. Every Knight was entitled to two rooms for their personal use, and were assisted by a pawn. Despite the apparent luxury, the Auberges demanded discipline from all who inhabited them. Knights were expected to dine in at least four days a week. The head of each Auberge headed all of the meals on a separate table that was raised by a platform at the centre of the room. Auberge de Castille Designed by Maltese architect and military engineer Girolamo Cassar in 1571, but later entirelyremodelled under Grandmaster de Pinto in 1741, the Auberge de Castille et Leon is one of Malta’s most finest architectural works. Located in Castille Square, this Auberge is situated at the highest point of Valletta and overlooks the Grand Harbour. Today, the Auberge de Castille houses the Office of the Prime Minister. Auberge d’Italie Also originally designed by Girolamo Cassar, the Auberge d’Italie is found along Merchant’s Street and is considered another architectural gem in the city of Valletta. During the French occupation, the Auberge became the French Military Command, whereas under the British it became the Corps Headquarters. Today the Auberge d’Italie houses the offices of the Malta Tourism Authority.
Auberge de Provence Located along Republic Street, this Auberge was built in the 16th century to house the Knights of St john from the langue of Provence. The building was eventually extensively renovated during the 17th century under the guidance of architect Mederico Blondel whereby a new wing was added. In 1789, the Order lost Malta to the French and the Auberge was vacated. Today this Auberge houses the Museum of Archeology. Auberge d’Aragon Built in the 1570s the Auberge d’Aragon is Valletta’s oldest Auberge and housed the Knights of the langue of Aragon and Navarre. The Auberge suffered extensive damage during the Sicilian earthquake of 1693 but was immediately restored. Along centuries, the French, as well as the British, inhabited the Auberge during their rule. It was also leased out to a number of tenants that included the Bishop of Gibraltar George Tomlinson who took residence in 1842 and renamed the building to Gibraltar House. Today the Auberge d’Aragon, or Gibraltar House, is home to the Ministry for EU Affairs.
Auberge de Bavière Formally known as Palazzo Carniero, the Auberge de Bavière was built as a private residence in 1696 and housed the Knights between 1784 and 1798. The original building was raised where a lime kiln once stood and was designed by Maltese architect Carlo Gimach and was rented to the owner, Portuguese Baliff Fra Gaspare Carniero, for the term of his life, and that of another person nominated by him, and thereafter reverted to common treasury. In 1782 the Auberge was taken over by the Knights, and two years later the newly-formed Anglo-Bavarian langue instituted by Grandmaster Emmanuel de Rohan. Today this Auberge houses the Department of Government Property.
