UPDATES IN LOCAL BUSINESS Tea lovers rejoice — Elaine’s Tea Shoppe has finally found a new home at 3115 W. Sylvania Ave., three blocks east of Secor Rd. The shop, which was founded in 2001 by Elaine Terman, hopes to re-open its doors to the public by mid-June. As of May 1, All Crumbs Artisan Bakery will no longer be baking as a business. According to their Twitter account, owners Kelly Thompson and Gabe LeMay “no longer have the space or free time to continue such a big production.” Their goods were formerly available at the Toledo Farmer’s Market and at a space next door to Glass City Cafe.

ECDI (the Economic and Community Development Institute), a non-profit economic development organization that specializes in microlending, is expanding their business and opening an office in Toledo. The new office will be located at the One Maritime Plaza off of Walnut St. and will be managed by former director of strategic initiatives at JobsOhio, Anneliese Grytafey. Part of the solution I am writing to commend Johnny Hildo for the article that appeared in the April 10th issue, entitled “Men are men: The vicious cycle against women.” As someone who works with and for young people in our community and as a concerned citizen who cannot help but notice how often reports of women being attacked or killed in our region litter our newspapers and airwaves, it is sometimes astonishing to me that there still are people who fail to recognize how systemic social sexism contributes to violence against women. I applaud Hildo for writing concisely and eloquently to link the ways that sexism, whether through language or action, contributes to a social devaluing of women, a social devaluing that inescapably contributes to intimate partner violence.

When everyone starts to realize that they don't have to be complicit in women's degradation, that they don’t have to call women bitches, and speak of them in dehumanizing terms, or seek to lessen their standing in the world in even small ways, that will be the day when all of us can help stop tragedies like what horrifically befell Kaitlyn Gerber, from occurring. It takes everyone's willingness to see how easily we can be a part of the problem and just how easily we can be part of the solution.

It’s like a game of eye spy set in the great outdoors — The Biggest Week in American Birding draws birders from around the world who are eager to spot the warblers and other winged beauties that migrate through the area every year in early May. Feeling ‘Blue’

Biking on the railroad

Celebrating National Bike Month on the rail-trails

Since the conversion of disused railroad tracks into bike trails, Shawn E. Richardson has pedaled (on his 1979 Schwinn Voyageur) many miles across the country and especially on Ohio’s rail-trails.

The outdoor adventurer has biked, mapped and chronicled these roads for his Biking Ohio’s Rail-Trails 4th Edition (available at amazon.com), creating a comprehensive Richardson guide for bicyclists. We interviewed Richardson, a Worthington, Ohio native and expert on rail-trails, in anticipation of National Bike Month in May.

Why write the book and keep updating it?

I really enjoy riding and the rail-trails are a dream come true. I wanted to pass my love for the trails along in an in-depth format, from an experienced biker’s point of view.

It is a great atlas of the trails in Ohio, the cities you travel through and their history and the rural and natural areas as well as all the people you meet along the way, all without encountering traffic.

You have a degree in environmental geography and cartography, and the maps for each trail are truly impressive. How did you get them so detailed?

I took maps from all over the state, focusing on county and city maps, and created my own, putting the bike route in to show how the bike trail traverses the area. Then I tried to show the major points of interest and where you can find parking. All the maps and descriptions of each trail are based on my actual biking experience.

What are some other useful features?

The book is a wonderful guide and easy tool to use; it allows you to look up trails by alphabetical order and by region. From there you can see how many miles each trail is, the surface treatment, hills, difficulty and points of interest along the way. There is a mile marker system so you can gage your overall time and how far away each point of interest is. A state locator guide at the bottom of each map page shows where the trail runs through the state.

Name one of your favorites in Ohio?

The Little Miami Scenic Trail. It is the longest in the state and goes through some gorgeous areas including the Scenic River. With its deep ravines and small mountain inclines, you almost feel like you are on a train as you pedal through. It’s like what passengers may have seen looking out the windows on a train. It’s a cool experience.

What’s your take on the Wabash Cannonball Trail near Toledo?

I am really looking forward to its ongoing development. I enjoy the rural areas and really enjoy the Oak Openings metropark section. Lucas County has done an excellent job.

How do we get the most out of a rail-trail experience?

Use the book as your guide to get the most out of your trip, so you’ll know what to expect and you will be prepared; then you can relax and enjoy yourself along the route.

The rail-trails offer a wonderful experience, a mix of urban, rural and natural areas like no other—cycling on the trails is that perfect feeling of freedom.

The inside track in City Politics

It’s one of the biggest myths in our cherished system of guvmint. You know, the one about the rail splitter from Illinois who became President. Or the poor kid from Hope. Or any one of a hundred like stories. We’re a guvmint of, by, and for The People, and any one of you peeps can make it into elected office if you try hard enough.

Well, buddy boyz and girlz, here’s yer chance at a run for the roses! There’s about to be an opening in the citizen-led state legislature, and if you meet a few simple credentials you could be packing yer bags for a trip to Columbus and the hallowed grounds of the State House!

That’s right, State Rep. Matthew Szollosi (D-46) is about to vacate his seat representing the 46th House District to take a job with the newly formed Affiliated Construction Trades (ACT) Ohio. That means his seat will be open for the taking. Provided you meet some simple requirements.

First, you have to be eligible to vote in the 46th, which includes Eastern Lucas County minus most of East Toledo. It then jumps the Big Muddy to snake through much of South Toledo. See, the district was drawn by Republicans during the redistricting fight, and they combined the parts of Szollosi’s district where he resides with the area formerly represented by then-State Rep. Teresa Fedor, including her then-residence.

This could have set up a nasty primary fight, but Fedor instead moved into East Toledo, thus jumping into the newly created 45th House District. The 45th includes most of East Toledo, then jumps the Big Muddy to snake through North and Northwest Toledo. She won the 45th without an opponent.

So far so good. If you live in the 46th, you just might be able to take Szollosi’s place after he resigns. Oh, and you have to be eligible and registered to vote there, so

you have to be over 18. Whether or not you actually reside in the 46th is another matter for another column, but if you’re registered there, you’re eligible for the seat.

Follow this to an appointed political seat

That’s about it. Qualified? Start dreaming of the big time, baby!

One last minor detail before you go off the deep end, though. Did ya notice up above, that little parenthetical notation “D-46?” That means that Szollosi is a Democrat, in a partisan seat representing the 46th. Which means the House Democratic caucus gets to make the appointment. So you might be registered in the 46th, but if you’re not registered with a “D” behind your name, keep dreaming, suckah!

And while we’re on the little matter of a partisan appointment, the caucus will most likely want to make sure that you have a good chance to win and retain the seat for

the D’s when it’s up for election. That would mean you pretty much have to have worked within and for the Party so they will reciprocate in kind on your behalf. And you’ll have to have experience fundraising and winning an election. That probably narrows the field down to someone who is in current office and either represents a good portion of the 46th or has in the recent past.

Is your last name Fedor? If not, none of this applies to you. Your dreams are of the pipe variety. Word has it T. Fed is moving back to South Toledo, into the 46th, to take the appointment.

But never fear, dreamers, that will open the seat in the 45th! For those favored by the D’s registered in the 45th who can win an election and fundraise there … Basically narrowing the field to Lindsay Webb, current Toledo Council Representative for District 6, representing North and Northwest Toledo. Who is expected to be appointed to the 45th seat.

Like Steven Tyler sang, dream on! Are you registered in Toledo District 6? Once Webb is appointed to the legislature, the 6th District council seat will be wide open! It’s nonpartisan, and once that seat opens, go for it!

Except that Council will make the appointment, and D’s control 8 of the 12 votes on Council, and they will likely appoint someone in favor with the D’s who can show an ability to fundraise and win, and, well, you get the picture.

Seems current school board member and former President Lisa Sobecki of Point Place is the shoe-in for the Council seat.

Yup, looks like the dominoes have all fallen into place even before Szollosi takes his leave. A few variables could throw it into flux, like other notable electeds throwing hats into the ring. Or perhaps a desire to bring in fresh new candidates with fresh new ideas. You might have a chance after all!

Right. Dream on, indeed.

How do you define a good meal? When I’m eating, I’m very simple.

There’s really only one thing that I look for: does what I’m eating taste like what it’s supposed to taste like? What’s the end goal, besides taste? If a restaurant meal is executed properly, then when you walk out of there you don’t feel like you just paid for a meal, you paid for an experience. I definitely have that old world philosophy that a meal should last three to four hours. One of the things I find myself repeating to my staff over and over is that America has lost it’s way a little bit. Lost their way in terms of dining? We really lost our way of what it means to nourish ourselves.

Our goal at Bar 145 is to teach people that food is not a convenience, it’s something that you do out of necessity but that you should have a real passion for. My wife’s family is a hundred percent Italian, and when we go to dinner at her parent’s house, it starts at 2 o’clock in the afternoon and it finishes at 2 o’clock in the morning. It’s a full-day experience where you’re nourishing yourself and recharging yourself with food, laughter and love.

And if I can get my guests at my restaurants to experience even a fraction of that in the hour that they choose to spend with us in their day, then we’re going to call it a job well done.

[Laugh.] You can’t eat Ramen noodles every day. Why do you think the burgers concept works? They’re the all-American food, for starters. Really, they’re a great canvas.

There are no limits — you can build layers upon layers upon layers.

We’ve pushed the boundaries, and we still keep pushing it. How

would you describe your kitchen work environment? Close quarters. You get to know each other very well. It’s a small, tight staff. It’s kind of like being on a ship. In our case, a submarine. What’s your favorite meal? People get a lot of laughs out of this, but I eat a lot of simple

foods. Macaroni and cheese — I could eat it everyday. I think I was eating it every day for a while, until I got a notification from my wife to stop doing that.

How did you transition from head chef to having your own spot? All this came about because when I was [chef] at Ciao, I had

an interview with Mike Gibbons, [president and CEO of restaurant group Mainstreet Ventures]. Mike came in and asked me what I wanted to do, what was my goal, and I told him that I wanted to own my own little place someday. Years went on and we ran into each other, and he said “What are you doing? You told me you wanted to open your own little place?” And I said I do, but I can’t financially.

He came to me and he said “I have an idea,” and here we are. So I owe it all to him for his support and giving me the opportunity to learn how to be a restaurateur, not just a chef. You’re known

for having a certain front-of-the-house swagger. How did you develop that ease with customers? I just really

like to interact with the guests. Somehow I feel more comfortable communicating with people in that dining room than, say, in a social environment, where I’m the guy in the corner. How

do you handle all the good reviews Revolution Grille’s received from the critics? It’s hard.

Because [to me] it’s not perfect, so to hear that people really like it, like I said in an interview with Smash Toledo recently, it’s overwhelming. Accepting compliments is difficult.

like asking my favorite child. The American craft brewing revolution is probably my biggest interest right now, food wise, and I do consider it a food. I’m really into charcuterie. I’m into making sausages, salamis, hams, mustards, ketchups. It’s that old, old, old world brought into nouveau. People were making sausages before America was America.

crazy about them? [Laughs] They’re bull testicles. I’m definitely more adventurous than the average eater. To be a chef you have to be a certain kind of person. You have to be creative. Once you say “I’m not going to do this,” you’re shutting a door. Experimental eating is a way of opening your mind. What is the secret to great Italian cuisine? Simplicity and fresh ingredients. We grow fresh herbs and vegetables in our garden at Ciao — things like rosemary, thyme, eggplant, zucchini. I buy almost no herbs during the summer, because we grow our own. There are little things that put you above your competitors, and every time you master one of those things, they put you above. And the freshness of your ingredients will put you way above the guy next to you. What’s the marker of a great Italian restaurant? Here’s something that Italians eat with every dinner: breads. That’s what opens the meal, sets the tone. If you don’t start the meal with good bread, what’s going to follow?

What childhood experiences primed you for being a chef? Growing up in an ethnic [Lebanese] home, it was just always food, food,

What led you to restaurant life? I was born and raised in

food. When I was a kid, my mom used to take me with my grandmother in the North End to pick grape leaves from the fences. Then we’d go back home and roll grape leaves together. But then on the other side of things were the hamburgers and mac and cheese.

Our Thanksgiving table was huge — half Lebanese food, half traditional. If you weren’t a restaurateur, what would you be? I wanted to be a fireman. That was my dream job — I took the test three times. I wasn’t supposed to be on ladders I guess. What future projects are you looking forward to? Mama La Scola’s Italian Kitchen will open on Holland Sylvania in the former Hungry I. It will have more of an old-school feel, black and white checkered tablecloths, heavy red sauces and pasta. And me and Tony [House, co-owner of Burger Bar 419] are combining with Joey Skaff [of Star Bar] and doing another Burger Bar 419 on Monroe St. Monroe St. to me has always been like restaurant row. I think if the concept we did on Heatherdowns can work there, it can work anywhere.

New York. My parents owned three Japanese restaurants, so I was born into the business. I kind of wanted to get away from Japanese food, which is a big deal in my family, so I started off in an Italian restaurant for two years and went back to my parents and they sent me out to train in another restaurant. It’s always been in the blood. Why train outside the family business? Traditionally [in Japanese culture] you’re supposed to, when you plan on taking over the family business, train at the family restaurant for a year, and then go elsewhere to train for at least four years. After that four years is up, you come back to your family. [Otherwise] you get babied. No matter how strict your parents are or what kind of stance you take, in the back of your mind you always have the thought of “My parents own this restaurant.” You go elsewhere and it’s a little more hardcore, something like boot camp. How did your sushi bar in Koreana come about? When I go back to New York, there’s a repertoire of cuisines I have to have, and Korean is one of them, it’s one of my favorites. It’s almost like Asian comfort food — there are so many stews, grilled foods. So when Mr. Kim [Koreana’s owner] approached me about partnering with him, it was hard to leave my friend at Sakura, [where I was working at the time], but I thought it was something that was good. There isn’t a Korean restaurant in Toledo except for them, so I thought it would be nice to join up with them and serve quality sushi and awesome Korean food.

woman, except for in large hotels. It’s like anything else — the novelty of it wears off after the first couple of weeks. Erika Rapp the restaurant owner is very polished and congenial.

What is Erika Rapp the chef like? I want what I want when I want it. That’s the extent of it. I have very high expectations, I have very little room for error, and everybody who works for me knows that.

It’s like tunnel vision — everything else is irrelevant except for that plate, that order, that table. What are you trying to achieve with ingredients? There’s a whimsicalness that I think food should have, whether it’s the way flavors play together or the way you combine ingredients or the way it looks on the plate. When somebody tastes something, I want it to be like a party; it should touch every sense. Do you ever struggle with constantly creating? It’s funny because I don’t think of myself as a creative person at all. It’s something that I have to work at. How does a chef hone her skills?

Procrastination works for me. [Laughs]. The closer I get to deadline, the easier it becomes. I work better under pressure. How do you juggle creativity with profitability? When you’re cooking, you’re cooking for your guests, you’re not cooking for you. It’s a very humbling discovery, because you have this [initial idea that] it’s all about your vision. That’s great, but at the end of the day your business is to serve others and to cook their food, and if they don’t want to eat what you’re making, you’re not a very good chef. Your mother is your

partner in the restaurant. How is it working with family? Everyone asks that question — they’re waiting for

some saucy details. It’s funny because I come from a family of business owners. My dad has owned a construction company since I was born. It’s in our makeup, I guess. But my mom and I, we hang out when we’re not at work. She’s my best friend. And we trust each other. My background is in restaurants and cooking, and her background is in business. We take each others’ points of view very seriously.

What’s the secret to delicious barbecue? Lisa: It’s a secret! [Laughs] Bob: Barbecue is slow. You’ve got to have love for it.

Everything has to be done just right. There’s a big difference between grilling and barbecuing — barbecue takes anywhere between 3 and 15 hours.

Trevor: Overall, from step A to Z, there’s nothing that can be rushed, not only in the cooking time but in the developing of the recipes. Lisa: Even down to details like how many pieces of wood, what size they are, and where they’re placed makes a difference. What’s the mark of a perfectly barbecued piece of meat? Bob: It has to be rich and succulent and tender and juicy. You should bite into that meat and it should be like a shark bite on a surf board. Trevor: It easily pulls off the bone. You could take a bite out of it, and you don’t pull the entire thing off. How do you define success? Bob: What is Toledo full of? Restaurants. We’re in the middle of all these restaurants. I think if someone comes in and pulls your door, you’ve already won the lottery. So now you have to exceed their expectations.

Trevor: We’re still to this day, three years in, tweaking recipes. We’re never going to settle on something and say ‘Yeah, it’s good enough.’ What’s it like running a family business? Lisa: One of the things that I have come to think about our partnership, is that a lot of time we have to learn to work around each other. We see each other’s strengths and weaknesses. Bob: Everybody does their thing. When push comes to shove, we sit down and work things out just fine.

What were some of the foods you grew up with? Shepherd’s pie, corned beef and

cabbage, bangers and mash. Keane is a very Irish last name — they’re still over in Ireland. If you look at the soccer teams, there are Keanes on the soccer teams. How did potatoes become such a prominent part of your menu? It’s pretty much the basis for Irish food. You can do anything with a potato. You can use it as an appetizer, entree, desert. It’s very diverse. We even make chocolate cake with potatoes.

How did you get into cooking? I was doing factory work, tool and die. I reached almost 30 before the tool and die shops started closing. I liked photography and food. My thinking was people need to eat, people don’t need to have their picture taken. So I dropped everything and went to Pittsburgh to culinary school at the Art Institute.

culinary schools make great chefs. They make great cooks. To be a great chef, you have to have a great passion for food. You have to be prepared to sacrifice your life for your passion. I can tell you personally I haven’t seen my mother on Mother’s Day in 23 years — it’s my busiest day. Great chefs are well-tempered.

They can work their way through adversity relatively quickly.

They have patience. They must be a great teacher. They have to stay educated, because there’s always something new. You can classroom all you want, but we’re blue collar folks — we work with our hands. You have to have the practical, you have to have your feet on the dirt. You’re going to get dirty, burned, cut. How did you feel when the ca-

What has your training been like? I never went to culinary school. I went

through the restaurant school of hard knocks, I guess you could say. I started working kitchens in high school. As I grew through the restaurants, so did my career. How did you learn

What’s the secret to working the wok? There’s really no muscle involved in it actually — it’s more finesse, in a way. People who hold it for the first time are very tense, and that’s how they mess it up. The main thing is relaxing your whole body. Where do you get inspiration for your menu? A lot of it is my Korean background. I try to balance out the lighter flavors and the raw ingredients of Korean food with the saltiness and sweetness and powerful palate of American food. A lot of it is what I’ve been exposed to. Why is the eco aspect of Balance so important to you? It’s another movement.

The environment is a huge deal right now. Restaurants can cause a lot of waste, and that takes a toll on the environment. As business owners and as we gain more locations, I think it’s only a mandatory duty for us to care. That’s why we’re switching over to more green soaps and detergents, and we try to conserve water. It’s not always all about cheap prices — it’s about putting an impact on your community.

The training for me was really hard because I’m really passionate about what I do. So the fifth day of our ten-day course in New York with [Italian pizza legend] Roberto Caporuscio, I was in tears, because I wasn’t getting how to work the dough. That night I kind of had to break myself down mentally and practice on top of our entertainment center with a wet towel — I actually wore the varnish off the top of the entertainment center. But sure enough the very next day, I had it. And the notoriously

tough-to-work-with dough — how do you manage? The dough is

very light, it’s very airy, so you have to be very delicate with it. You’re essentially pushing the air out to the crust of the dough. There’s more art behind it — that’s why it’s artisan pizza.

I feel like this is what I’m supposed to do in my life. You use

social media a lot — why is that important for chefs? It might be something to do with my youth, but I

just like to be able to talk to my customers. I want to know their opinion. I’m very passionate about what I do and I want to share that with people, so I communicate with all our customers on social media as much as I can. You’re handy with

the mason jars. Why so much passion for preserving food that way? Preserving’s

kind of a lost art. I want people to experience what it’s like to eat preserved food — that’s why we do so much preserving, smoking and curing. Not many people are doing that right now, and I want to keep it going.

Brent Billmaier, head chef, Doc Watson’s How do you approach bar food?

Just trying to take basic things and put a little spin on them. I guess it’s glamorizing food staples — elevating simple, basic dishes that are like homestyle food. We’re kind of a meat and potatoes town, and people just love the basics, especially when they’re given a little extra love. Bar food has become it’s own creative genre. To me, the most important thing is it’s easy to tell what is frozen garbage and what is given extra care and handmade and prepared from scratch. And that’s what we do — almost our entire menu, which is huge for a bar, is all made from scratch. Making our spinach pies with 20 layers of phyllo dough, smoking all our meats — that little bit of extra work pays off. How

do you go about naming dishes at Doc Watson’s? Some

of them have to do with employees that currently work there or have in the past.

Some of them may have to do with a sports team we really like. The owner Charlie and myself are big Red Wing’s fans, and if you win the trophy, it’s called Lord Stanley’s cup, so we named our tenderloin Lord Stanley’s Loin.

my uncle owned a small cookie company. When I was little I’d make funny cookies in different shapes. I was always around kitchens and the restaurant business. How does

Chinese food differ from American food? With Chinese cooking, they like to use a lot of stir-fry.

Chinese like seafood. We have American and Chinese food at Hong Kong Buffet, over 200 items. We try to represent the food from different cities — that’s why we say ‘explore the many flavors of China.’ I’m from Fushun, it’s a big city across from Taiwan. Why is it important to share your culture’s food? Food is part of life, a part of living.

When you eat Chinese food, you will get into the culture. You can experience a little of what the country is like. I’m really happy when people like it. Of course I feel so proud of this.

Everything was a packaged salad. As it’s progressed, some of the places that wanted to upgrade everything started creating as much homemade food as possible. Now the goal is to make it as good as if they went out and purchased it at a sit-down restaurant. It won’t be out of a bucket and dumped in a bowl. If you’re going to have mashed potatoes in our cafe it’s going to be potatoes, milk, butter, salt and pepper and that’s it. Nikolai: I had the unfortunate experience of spending a year at a corporate store, which I hated. We had to conform to this standard thought up by a corporate store that didn’t have the connection to the customer that we did. Walt, on the other hand, gives us a certain amount of autonomy to make decisions in the department. Emily: I see Walt around the store all the time. He sets a good example of how you should treat the customers.

owner/head chef, Kyoto Ka How did you get into restaurant business? I started a long time ago

working as a chef. When I was young, 26 years old, I moved from Korea to Japan, to Kyoto City.

That’s where the name Kyoto Ka comes from.

For two years I lived in Kyoto City, and next door in my neighborhood was a man named Sakimoto, he was a Japanese restaurant owner.

He made creative sushi and the customers loved it. I saw that and I thought okay, I want to become a sushi chef, too, so I asked if he would train me. What was the training like? I worked 365 days every year for a long time, 12 hours a day. When you start, you spend a long time learning only how to cook the rice and cut vegetables; you don’t touch any kind of fish. You do simple things, again and again and again. In most Japanese restaurants, the most important thing is the rice — it’s a really important material. Not too wet, not too dry. What

makes Kyoto Ka special?

Kyoto Ka restaurant uses really high quality fish.

Some items are directly from Hawaii, especially tuna. I know everyone’s name, and what they like — I still remember that for customers I knew from 10 years ago.

chef/general manager, Rosie’s Italian Grille How did you become a chef? Actually, I started with Rosie’s when I was 16. I did bussing and dishwashing, and I just moved up in the kitchen. I started thinking about it and decided I wanted to go to culinary school. Basically my theory is if you’re going to do something, give it a 120 percent — I’m not a person who wants to jump from job to job. I’m dedicated. Phil [Barone, Rosie’s Italian Grille owner] and I are like brothers. I see him everyday, because we’re always at work! What kind of person does a successful chef have to be? Very dedicated, self-motivated, willing to work a lot of hours. You have to be able to handle stress. Think on your feet. It’s a lot of pressure, trying to feed so many people — on a normal night we’ll cook for 300 people on average. You’ve just gotta be very focused, because it gets chaotic. Rosie, the restaurant’s namesake, is Sicilian. Do you feel like you’re an honorary Sicilian after so many years working there? [Laughs] I’ve been doing it for a long

time, so I could see that a little bit.

She and her cohort, brother and musician Ben, are the leaders of a motley crew of friends and family creating food that is as soulful as their music at this Bowling Green restaurant.

Happy Badger’s former life as a fair trade gift and clothing store in Toledo — the iteration of the business parents Alan and the late Donna Cohen started in 2000 — informs the indie spirit of the cafe today. Sarah and Ben (who returned from New York City to take over the family business with his sister) have found that integrity is as challenging a pursuit in the food industry as it is in music. After a summer of renovations and menu tinkering, they’ve reinvented the Happy Badger into a “forward-thinking restaurant.” Every week, the pair take separate cars to trek to area farms and bakeries to source Happy Badger’s menu with — Ann Arbor’s Zingerman’s bread and coffee, Calder’s Dairy for milk and cream, Rosewood for organic raw milk cheese, the Toledo Farmer’s Market and Schooner Farms for produce. The Cohens have “transposed directly on to the food” the fair trade philosophies they learned from their parents, even if it means much more work to get it done.

“We could easily have everything delivered from [a food service distributor], but to me that industrialization of food culture, it’s just incredibly pervasive and negative,” Ben says. “We’re trying to provide an alternative to that. I really

believe in the products that we use.

[It’s] really simple food that focuses on ingredients.”

Unadulterated food, as Ben describes it, is the focus of the Badger’s Sunday brunches, a mellow midday affair with melancholy musicians playing live and a mix of professors and students seated in the ragtag, mismatched chairs of the comfortable-home-turned-restaurant.

The hand-scrawled Badger Brunch menu changes weekly — a mound of truffle butter eggs sauteed with spinach and mushrooms on a puffy, buttery croissant, or buckwheat pancakes smothered in grilled apples, cinnamon, Calder’s Dairy butter and Michigan-made maple syrup. There are other hearty, charmingly-titled dishes,

too, like the Springtime’s-A-Comin’ BLT (a farm bread sandwich of thick Belleville bacon, tomato, sharp white cheddar, fried egg, greens, pickled turnips, cilantro, mayo, and tomato jam) or the Lumberjack Wrap (local eggs, potatoes, squash, spinach, tomatoes, cheeses, onions and peppers).

They’ve started collaborating with Black Kite Coffee and Pies to bring Badger Brunches to Toledo the last Saturday of every month, setting up shop in the Old West End cafe from 10am to 2pm. And they’ve begun to host reservation-only slow food dinners seasonally, in addition to being the spot for area activist groups who want to meet around Happy Badger’s regular lunch menu of “giant sandwiches” made with everything from fresh basil chicken salad to avocado tofu.

To the Cohens, the extra effort to represent their beliefs with the food they make is the only way of making a “highidea restaurant work.”

“It’s a crazy amount of really awesome ingredients that go into everything we make,” Ben says. “To me, it’s not worth sacrificing those things to make more money, because if that’s the case I’m just going to cook at home and do a different job. There’s a sense of responsibility to maintain the ideas that we’re really pushing.”

Carry on, but not out

After a two-month limbo for the hopheads and wine aficionados who frequented Middle Grounds Market at the Oliver House, there’s a final (and slightly disappointing) verdict with the specialty retailer’s liquor license.

Since the shop shares the same space as Maumee Bay Brewing Company, it will have to adhere to a 1939 Ohio law called the Tied House Act that prohibits manufacturers of alcohol from selling the products of other brands ‘to go’.

The shop will carry on, though, transforming into a lounge and tasting bar for wines and craft beers, along with specialty foods and ice creams. Stage Lights, and an Empty Chair The departure of Steve Burnette, and the future of the Toledo Rep.

The Toledo Repertoire Theater, has been staging theatrical productions consistently since 1933, as is proudly displayed on their webpage and every scrap of paper bearing the troupe’s logo. Since 2009, however, the Repertoire’s artistic leadership has changed hands several times, and soon will again.

In the near future the Rep will say goodbye to Steven Burnette, current Artistic Director, who announced at a Toledo Rep Board Meeting on Saturday, April 6 that he would resign from his position on an undisclosed date. At that meeting, the Board decided to keep him on payroll until Saturday, April 30. Now that Burnette’s last paid day has passed, the future of the Artistic Director position — and with it the direction of the historic troupe — is as uncertain as precisely when Burnette will leave.

Changes at the top

But the Artistic director position has stood on shaky ground for some time — Burnette is the third person to man the helm since the departure of Gloria Moulopoulos in 2009, who directed for the better part of the 00’s. Afterward, the position passed to local director Lee Krahenbuhl, who directed for a single season. Current board president Brad Smith served as interim director until Burnette was hired in 2011.

The artistic director position is financial as well as creative. Jim Norman, current costume coordinator at the Rep, was also in contention for the position at the time Burnette was vetted—according to Norman, the Rep board most wanted “someone who would be a strong fundraiser.” Burnette had promise in this regard: he acted as executive producer and director at the financially successful City Theater in Biddeford, Maine before

founding the Legacy Theater Company in Saco, Maine.

Burnette carried that east coast enthusiasm into his tenure at the Rep. For instance, he proposed a new $2.5 million building to house the theater in. Regardless, the frequent reassignment of the position has coincided with a series of budget cuts within the Rep’s programming — the Young Playgoers program was excised in 2012, and the salaries of several designers and directors have been cut for the upcoming season. The proposed new theater was never acted upon.

Heading back East

Burnette, in an email correspondence with TCP, said his reasons for leaving the position have nothing to do with finances, rather his family is moving once again to the east coast. Burnette is a Northwest Ohio boy, but his wife, Sarah, works out of Boston. Both Burnettes travel frequently for work—Burnette lives in Findlay and commutes to his office at the Rep—and the rising cost of travel has made his staying here untenable. “While I would prefer to be in Ohio, my desire to see my wife happy and not as stressed trumps my wishes. So we have put our house up for sale,” Burnette said.

“We’re sorry to see him go, he brings a lot of energy to the theater,” said Rep business manager, Kathy McGovern Burnette will continue to work on a volunteer basis. “Once we have an offer on our house, that will serve as my two week or thirty day notice, whatever works best for the organization.” In regards to his tenure in Toledo, Burnette said “We have had a wonderful time working together, and it’s been a blast to be part of the organization. If circumstances were different... I would stay in a heart beat.”

Authors of your childhood dreams

These days, with budget cuts to schools, it's harder to get youngsters interested in reading. Thankfully there are events like the 12th annual Claire's Day, a family book festival, held this year at the Maumee branch of the Toledo Lucas-County Public Library. The event — sponsored by nonprofit Claire's Day Inc. — will bring a host of children's authors and illustrators to the area, including Mark Crilley, creator of beloved children's character Akiko, and Rhonda Gowler Greene, whose newest book “No Pirates Allowed! Says Library Lou,” was just released in February. The event will feature music by Wilson Lake and the Rock Bass. For Neal Harmon, one man’s trash is another man’s treasure By Russell Axon Neal Harmon lives by the idiom “One man’s trash is another man’s treasure.”

In his Highway Robbery Art Collection, the Oregon, Ohio artist creates industrial installations out of materials he collects off the side of the road.

Harmon developed the idea during conversations with his wife, Amy Beeler.

“The joke was, as you get closer to Detroit on [Interstate] 75, to start a reality show based on people actually surviving[...] off of what they could find on the highway.”

Harmon fused bungee cords, fender brushes and shreds of a truck tire into art. His first piece in the collection, “Unintended Consequences of Industry,” debuted at an industrial-themed show in Lima. The work sparked his creative energy.

“I can’t paint or draw, I don’t take pictures very well, I can’t work with metals or anything, but I want to create something,” he says.

“I’ve tried different things, but I think I’m onto something with the Highway Robbery collection.”

Highway finds

While inspiration isn’t difficult to find, securing the right materials can be a challenge. Except for a few background components, Harmon is adamant about using only highway deirtus. He’ll note debris during his day drives as a service technician and then come back at night to grab it. “I just find something and it strikes me how I can use that with another piece that I found, or [I] put on a search to find another one.” Which can mean lengthy pre-production — it took him five months to collect the 50 or so bungee chords used in his favorite piece, “Northbound on 75.”

Even so, Harmon is selective about what he uses and trashes most of what he collects.

When he’s not scavenging, Harmon plans each piece ahead of time to make sure the construction goes smoothly.

“It doesn’t take a long time to actually assemble the piece, maybe a day per piece, once I have the idea and I have the parts because I do put a lot of work into sketching it and laying it out,” he says.

Creative support

A piece isn’t finished until it earns the approval of Beeler, his strongest proponent and harshest critic.

Beeler has won several awards for her seed pod jewelry, which has been featured in festivals and galleries around the country. She acts as Harmon’s accomplice during night runs to collect materials.

“She’s my quality control because she actually has the art background. [...] She’s just got a good eye.”

Beeler thinks the two feed off each other creatively. “If he wasn’t supportive of me I don’t think that I could have done it for as long as I have, and I think without me, I don’t know that he would have pursued it either. We needed each other to create.”

The couple’s teamwork was apparent at this year’s Art-o-matic 419!, where they shared a booth. “It’s an interesting combination that you don’t expect to see together,” Beeler says.

Debuting the collection at Art-o-matic 419! was important to Harmon, who says the feedback and reception there was excellent. Several pictures of his works popped up on local blogs and art websites, and multiple people complimented him on his work. “I had a guy write a little note that he liked the work and left it with the [Northbound] piece; he didn’t know that I was on the other side of the wall,” Harmon says.

He already has ideas for next year’s Art-o-matic 419!, but right now he’s focused on expanding his Highway Robbery collection. “Northbound on 75” is currently on display at PRIZM’s 2013 Art-A-Fair at the Fifth Third Building, One Seagate, and he’s reached out to several galleries about displaying his work. He also applied to adopt a two-mile stretch of highway to more easily secure materials for future work.

“Since I know that I’m onto something with the Highway Robbery art collection and I’m excited about it, this is what I’m going to stick with,” Harmon says. “I think I finally found what I want to keep doing.”

Nature as art

As part of Blue Week 2013, the annual celebration of the Oak Openings Region (see related story on pg 6), Toni Andrews, owner of American Gallery, was asked to put together an art exhibition that related to the natural beauty of the area. She proceeded to gather the work of 15 artists in the mediums of watercolors, photography, acrylic and ceramics (to hold plants) for the forthcoming show Exploring Oak Openings. Call her a working woman Abby Ray on her rough ride in local music

The first thing I ask a musician to gain insight into his/her work is always: “What style would you consider your music?” The answer provides a general idea of how their work is seen, and also shows a glimpse of how the artist views his own work, and life in general. The answer, different every time, usually evokes the same sort of response.

“Country/pop is what most people think,” says Bowling Green songstress Abby Ray, sounding a bit annoyed, “but I consider it to be more alternative rock or alternative country.”

Although it definitely has a country feel, what sets her music apart is, first and foremost, her lyrics. Ray has been blending lightly-twanged guitar with somber, melancholy alternative rock lyricism since 2007. “I consider myself a storyteller more than a singer,” says Ray, singing the songs she writes, not writing songs to sing. That focus is evident when she is asked about her inspirations, which include great storytellers like Susan Tedeschi and Bob Dylan. Instead of relying on what the crowd wants (the nature of pop music), she plays music that inspires her, in hopes that the crowd will agree (the nature of alternative rock, wearing your heart for everyone to see).

Making music

Helping people to forget their everyday troubles is an invaluable escape that musicians provide.

Unfortunately, not everyone respects the sacrifices a musician must inevitably make. “People see it as a hobby. It’s hard, it’s a business, and people don’t realize that.” Ray continued to rattle off a list of at least 20 different jobs a musical artist must do to be successful; charity work, tour manager, referee, artist relations, promotion, booking, press, etc. “The idea that a musician only works on stage is a slap in the face.” She also expressed her respect for the bars, clubs, and all other venues that “are fair to bands as far as payment and promotion.” It’s not easy to do all that work out of pocket or for an empty house.

into. Ray credits her songwriting partner, Cory Hillman, for all he has done for her musically and throughout her life. She and Hillman joined forces in 2010 after the release of her debut LP, The Naked Truth. Hillman has added a noticeable layer of complexity to her music.

Hillman co-writes much of Abby’s material, and with the addition of a new Producer (Bob Davenport) and new Sound Engineer (Chris Stohl), she hopes to breathe new life into her lyrics. “Sometimes [studio recordings] can sound so polished, it takes away from the depth of the storytelling,” explains Ray, who strives for a more “live sound” for the new record. She is hoping a change in studio space will help achieve that energy, as her band moves to Holland OH’s Audio Flare Studios, which has a large room for live recording.

Before that new record is released, Ray will tour around Ohio this summer, and will play Andrea’s Sports Pub, 3338 W. Alexis Rd., on Friday, May 24. She will take the stage at midnight as an acoustic three-piece. Ray’s new single, “Baby Girl,” is available for free download on her website, www.abbyray.com.

After a thrilling nine months, it is time for the Toledo Symphony to prepare for the 2013-14 season, but not before closing their current run with a bang. The symphony to end the year is none other than Tchaikovsky’s 5th. In the tradition of ‘per aspera ad astra,’ the 5th rises from sorrow to triumph, and its conclusion combusts with all the triumph and bombast that Tchaikovsky is known for. The work was tremendously popular during World War II, after the Leningrad symphony played it in a live broadcast to London — while the city around was being bombed. If you were never lured by classical music, this is the performance you’ve been waiting for. There will be a repeat performance on Saturday, May 18. $34-22. 8pm.

Our first-ever Style Sense pairing is a couple who've mastered the art of thrifting. We stopped Kirsten, a New Zealand native, and Chris, a rockerturned-designer, and asked them to share their frugal fashion wisdom with us.

How would you describe your personal style?

Chris: Honestly, I just like classics.

If it's functional and classic, I don't really care about much else.

Kirsten: I try to take the best of styles past. But I think I'm most influenced by the '40s and '50s, because the women were just trying to make do with what they had when World War II was on. And that whole make do and mend attitude has really affected me.

What considerations are important to you now, style-wise?

Kirsten: Both of us just because of the time in our lives, we're trying to move towards professionalism.

So something that is unique and perhaps of a different era, the things that we're influenced by, but at the same time it's appropriate for work.

Chris: I have tattoos, but I wear them in what I consider a business suit fashion where if I put on professional clothing you don't see any of them, but I put on a pair of shorts and they're everywhere. I don't know why I walk that line. But that's important to me.
