Clean, Renewable, Efficient
WHEN TO CHOOSE WOOD HEAT
For some households, heating with wood is a smart, sustainable option. By JOHN GULLAND The significance of wood heat as an energy resource can be seen during a drive through small towns or down country lanes: The long lines of piled firewood in the yards prove that heating with wood remains a viable option. Every winter, people who choose to heat with wood devote time to cutting up logs, and every spring they split the logs and stack them in rows to dry under the summer sun. In fall they move firewood to the house and stack it again, and in winter they burn it to warm their homes as they begin cutting again for the next year’s supply. Why do so many households in forested areas choose to heat with wood -- a bulky, messy, and labor-intensive fuel source? Firewood is a homegrown energy resource that helps families stretch their household budgets, strengthen their local economies, and continue a generations-long tradition. Pros and Cons During tough economic times, more people turn to heating with wood. The U.S. Energy Information Administration data released in August 2017 says more than 2.5 million households heated their homes with wood in 2015, a 26 percent increase since 2005. Wood heating mostly attracts attention when people discuss pollution. Wood smoke has caused real problems in small towns and large cities throughout North America, and an increasing number of activists clamor to have wood burning banned from their communities because of its associated air pollution. Some environmentalists warn that an increase in firewood use would damage forests. As a result, wood burning has become more often identified as a problem to be solved rather than an opportunity to be harvested. Fuelwood is a renewable energy resource that most governments -- and even some renewable energy advocates -- don’t seem comfortable with. Woodstove Efficiency Emissions from older, conventional woodstoves average at least 25 grams of smoke particulates (almost an ounce) per hour of operation, and the emissions from older, wood-fired outdoor boilers range from 50 to more than 100 grams per hour. By contrast, the Environmental Protection Agency (EPA) limits emissions of certified woodstoves to no more than 4.5 grams per hour; in 2020, the limits will be lowered to 2 grams per hour. Since the regulation was established in 1988, the average emissions of certified stoves have declined steadily because of advances in technology and competition among manufacturers. Most new woodstove models emit only 2 to 4 grams per hour. Renewable Resource These days, there is plenty of debate over what to do about climate-changing carbon dioxide emissions from fossil fuels. But firewood literally grows on trees, and the ability of a woodlot to regenerate is the secret to its status as a renewable energy resource. Wood is about half carbon by weight, but its use as a fuel is almost carbon dioxide-neutral, because trees absorb CO2 as they grow. When trees fall in the forest, the same amount of CO2 is emitted when they decompose as is released when they are burned for heat. But large parts of North America are relatively thinly populated and have highly productive forests -- these are the regions where wood heating makes sense. Forests need to be managed sustainably, but the methods to do so are now wellknown: selective harvesting, thinning of dense stands, removal of poorer-quality trees, leaving seed trees of all present species and ages, and allowing some standing dead trees to provide wildlife habitat. Benefits and Costs Economists focus on the monetary cost of energy, but the net energy cost can provide better insight into environmental costs and the underlying reasons for the monetary cost. “Net energy” is the usable amount of energy left after extracting, processing and transporting an energy commodity to market. Natural firewood has a high net energy ratio compared with almost all other options because it needs little processing, much of which can be done with human labor. Considering the rising cost of conventional fuels, households located outside major urban centers that have access to forests can save some money by heating with wood. A household that heats with wood trades its own labor for big savings in home operating expenses. Depending on climate zone and other available fuel options, a household that produces its own fuelwood supply can save $2,000 or more each year. Plus, consider the intangible, non-monetary benefits: • The beauty and ambience created by a fire burning behind clear glass doors
• The special warmth given off by a woodstove located in a main living area • The satisfaction one feels in mastering self-sufficient home heating, largely through personal labor and ingenuity • The sense of security, both in terms of energy price stability and in the ability to remain fed and comfortable during electrical power interruptions But those savings and benefits do come with some costs: • The investment in a new woodstove and, if necessary, a new chimney • The space needed to store a winter’s supply of firewood outside the house, and space indoors for a few days’ supply • The physical strength and stamina required to split, move and stack firewood, or the effort of finding and purchasing wood from other sources • The time spent gathering the fuel supply, tending the fire and dealing with regular maintenance, such as cleanup of wood chips, bark and wood ash Buy Local Fuel A woodlot owner who produces and sells firewood provides employment and income to the area. If the producer uses sustainable forestry methods, the quality and value of the woodlot increases as it is worked. If a household buys its winter fuel supply from a neighbor, the transaction has a multiplying effect by keeping the money circulating within the community, increasing local incomes and creating jobs.

The Mangalitsa pig, which stands out for its curly white hair, was developed in the mid-19th century for its hardiness and rapid growth, but with the rise of refrigeration in the mid-20th century, economies of scale in pig farming began to crowd out such specialty breeds. By 1991 there were only 200 of the pigs in Hungary. However, a changing food culture that values small local farms has picked up the Mangalitsa and blessed it. A Spanish company bought the last of the breed and began promoting them, and then other countries took notice. Since the first Mangalitsas arrived in the United States in 2007, the hardy hobby-farm pig has become a favorite with chefs for its fat. Gourmets contend that it’s the fat in meat that gives it flavor, and the well-marbled meat of the Mangalitsa is flavorful, indeed. Aaron Caiazza, with his wife Kelly Cerialo, runs Kate Mountain Farm, where they raise Mangalitsas as well as other pigs, turkeys, ducks and chickens. Although he provides the Mangalitsas with shelters for the winter, on their own they rarely put themselves inside. The cold doesn’t bother them, he said. “They don’t sweat, so they need the shade of the trees,” he said as he led a tour of the farm. “The trick is to treat them — to treat all animals — with respect. They’re just bossy sometimes.” If you go shopping on the internet, a pound of Mangalitsa bacon runs around $16 a pound, with lesser cuts going for $8 a pound. Chefs prize the meat as “the Kobe beef of pork” because of its tenderness and flavor. Natural food enthusiasts laud its health benefits because, when the pigs are
raised on a natural diet, Mangalitsa pigs produce monounsaturated and polyunsaturated fat high in omega-3 and omega-6 fatty acids. Kate Mountain Farm is entering its fifth year with 9 acres under cultivation and a new greenhouse for growing vegetables. With typical farmer caution, Caiazza anticipates an “official” opening next year, when they plan to put a sign out on state Route 3. For now, the only way to find the farm is to look for the greenhouse. Most pork sold in the United States comes from pigs slaughtered around four months old. For commercial hog farmers, rapid growth is a moneymaker: more meat for less feed. Pigs raised by huge commercial growers like Smithfield grow rapidly due to a combination of genetics, corn and soy-based feed, plus a growth stimulator, ractopamine. Naturally raised pigs take more time to gain full weight, with the Mangalitsas being “finished” around 15 to 18 months. Although they don’t require a lot of feed, the added time for growth means Mangalitsas eat up to 40 percent more. Although the limited availability of certified organic feed means Kate Mountain can’t certify its pork as organic, the farm is currently applying for a humanely raised animals certification. They do some meat processing on the farm, but most goes to a certified slaughter facility in Ticonderoga. Meanwhile, local chefs already know about the Kate Mountain Farm pork. Along with other locally sourced products, Mangalitsa pork can be found on the menu in Saranac Lake and Lake Placid at Fiddlehead Bistro, Bitters & Bones, Big Slide Brewery and Top of the Park. Aaron Caiazza of Kate Mountain Farm in Vermontville feeds several young Mangalitsa pigs.

A Life of Animal Care
A
By Emily Luxford
fter 42-and-a-half years of practice, 40-and-a-half of them in the Tri-Lakes area, Dr. John Cogar is retiring from his High Peaks Animal Hospital practice, based in Ray Brook. He will continue to make himself available once weekly at the Malone satellite clinic but is retiring from full-time service to spend more time with family and to travel. It’s a “bittersweet change,” he states, sitting on his back porch overlooking a beautiful mountain horizon. It took years for Cogar to develop the veterinary hospital, years of nights on call, missing his daughter’s Christmas pageant even, to tend to animals in need. But he says he remembers it all fondly. “I’m extremely fortunate in spending my professional life in doing what I love,” he said. Cogar graduated from Cornell University College of Veterinary Medicine in 1975 and spent two years practicing in Newburgh. At the time, “There was no full-time veterinarian in the Tri-Lakes and none in Lake Placid or Tupper Lake.” In 1977, he went to
work for Dr. Bob Brown in Bloomingdale, but after one year Brown, struggling with health problems, decided to sell his practice to Cogar. “I had a young family and the stress and pressures of being a sole practitioner and business owner [not to mention the only full-time veterinarian in the area] were very challenging,” Cogar said. However, Bloomingdale was not the ideal location to serve the TriLakes, so in 1988 Cogar purchased the current location in Ray Brook and built a new veterinary hospital that was twice the size of the facility in Bloomingdale. Within 12 years the practice expanded even more with three more doctors hired. The building had to be expanded yet again in 2002 to accommodate hightech equipment including digital X-rays, dental X-rays, an ultrasound machine, exam and operating rooms, dog and cat kennels, and a fenced-in exercise yard. Cogar did this as well as being a husband, father and even a bobsledder for 10 years on six national teams, which brought him all around the world to participate in four World
Championships and three Olympic trials. He says it is with the utmost confidence that he leaves his practice in the hands of his present staff including Dr. Jacquelyn Bentley, Dr. Melissa Granell and Dr. Donna Mensching. They are “all extremely accomplished, as well as compassionate and totally devoted to their patients,” he says. Cogar would also like to thank his clients who have supported him over the years as he moves on to the next journey of his life. “You have put your faith and trust in me with your precious family members,” he said. “I hope I always lived up to that trust. “It’s all about the animals. These special creatures made going to work Monday morning a privilege. I brought many into the world, attended to their health care needs throughout their lives, and often times, sadly, but meaningfully, was with them at their last breath. It was an honor to be part of life’s journey with them. No question, they gave me every bit as much as I gave them.”
