Kasey Grenon is a fresh face with an appetite to perform. With a degree in Broadcast Journalism from Emerson College, Kasey has received the tools she needs to succeed in the media. Her training began at a very young age when she was selected to represent her peers for Radio Disney in Boston as their “Kid Correspondent”. Grenon became host of the nationally syndicated talk show, “Kasey’s Korner” for six years. The show featured interviews with celebrities including Beyoncé Knowles, and Destiny’s Child, Jessica Simpson, Hollywood legend Mickey Rooney, members of the New England Patriots and many more, all before the age of sixteen. These experiences streamlined Grenon’s aspirations to be in the broadcast industry. While at Emerson College, she hosted dozens of television talk shows for The Emerson Channel and was a live anchor for WEBN-News. This ambitious young woman is also the creator and producer of an online cooking website, “Kasey’s Kitchen”, as well as the Executive Producer of Dodekay Productions, which she established in 2009. Most recently, Kasey has joined the Upscale Living Magazine family as our Multimedia Correspondent. Her fresh outlook and knack for knowing our Upscale Living readers’ interests will surely make her an asset to our team.

She divides her time between Boston and her families country home in North Carolina, where they currently renovate a 19th century southern plantation. Cuban Artist JAKE FERNANDEZ By Kay Harwell Fernandez


S

ome people work to live; others live to work, as is the case with Cuban artist Jake Fernandez. Unfailingly, he works seven days a week. Whenever he does take a day off, more often than not, it is an art-related trip, he says. Based in Southwest Florida, Fernandez says he is better known for his landscapes. “But I like to think I am a representational artist.” Fernandez’s work has followed a natural progression over the course of 30 years as an artist. After he received a Bachelor of Fine Arts degree from the University of Florida, he went on to graduate school in art at the University of South Florida—thus beginning a stellar career. However, long before his college days, Fernandez gravitated toward art as a youngster.

Born in Havana, Cuba, he settled with his family in Consolacion del Sur. He happened to live a few houses away from famed salsa musician Willy Chirino. “I had a love for the music, but not the talent,” explains Fernandez. “So I put my guitar away,” he laughs. “One day Willy showed up with charcoal drawings that he had sketched. Fascinated, I thought maybe I could do this. I picked up my first paintbrush when I was about nine years old.” After the family moved to Miami in 1960, his parents encouraged his artistic talents. They arranged for him to study under Felix Ramos, son of Cuban landscape painter Domingo Ramos, an important influence on Fernandez. As a young adult armed with his master’s de-

gree, Fernandez made the move to New York where he remained for 12 years (before returning to Florida). “By the time I left college, I had a lot of technical experience, a solid base and a classical education. I had to concentrate on any way to make a contribution. I entered a more conceptual phase and tested ideas. “When I went to New York, I decided to strip everything down and rebuild an aesthetic direction,” Fernandez recounts. “I worked with plaster on paper with some dimension where the light shines through. Then for about 10 years, I drew almost exclusively in black and white until I was confident to introduce color.” His art evolved into using other media, but he says he has no favorite medium. “I love pastels because of the diversity of colors. I


have thousands of pastels in diverse colors. I love oil because it is so versatile. I like graphite since the drawings are very small. I can pack detail into 6x6 inches.” Nowadays, the artist often takes a tiny brush to dozens of panels (wood or canvas) to collectively produce one large art form. “I work one section at a time, generally from the center out. I start almost like a mosaic with each panel being a different painting.” For inspiration, Fernandez ventures outside his studio to natural environments. He takes his camera, not his paintbrush. “I take random photos,” says Fernandez. “I snap, snap, snap; I don’t look at the view finder. I shoot from various angles, up and down. Sometimes I return to the site and re-photograph different times of day and weather conditions.

Then, I bring the pile of photos to my studio and make mental notes of the color palette.” The end result may be paintings that are 7x7 feet or 8x12 feet such as Myakka Fork, which is comprised of 24 oil panels on wood. Rhea Chiles purchased Myakka Fork for the Lawton Chiles Foundation (late governor of Florida). The painting is on permanent exhibit at The Studio in Anna Maria Island, FL. Fernandez’s work has exhibited in dozens of galleries such as ACA Galleries in New York; Southeastern Center for Contemporary Art, Winston-Salem, NC; Frances Wolfson Art Center, Miami; Gallery Gemini, Palm Beach; and Florida State University Museum, Tallahassee. Selected collections have shown in the Florida State Capitol, American Express Corporation and IBM Corporation, among

others. Fernandez is married to classical realist artist Linda Chapman. Although they have separate studios, they do share a deep passion for art. “I like the idea of a work of art that’s completely handmade from one’s imagination rather than a juxtaposition. I like the idea of a plain white canvas and having a vision to put across,” says Fernandez. Judging from the artist’s stunning paintings, he does, indeed, put his vision across. What does fashion means to you? Fashion is when the utilitarian aspect of clothing changes to expression. How would you define your city’s fashion? Casual. What was the first article of clothing you ever designed? An apron as an elementary school project. I was disgusted because I wanted to make something glamorous. I thought “Who wears an apron? How long does it usually take you to construct a piece? I seldom construct an entire garment now, but work with pattern makers, sample makers, then the factory to finish the garments. Who is one of your favorite local models to work with? I work with several, usually selecting the model to fit the look of the garment. Describe the general process you go through to design and realize a piece of clothing. I start with a sketch, then go to pattern making or draping. This pattern is cut and sewn into muslin, fit corrected, necessary changes made to the pattern. Then the final garment is made from this pattern.

Designs e had the opportunity to interview Sherri Hill, a distinguished and respected fashion designer, whose expertise in special occasion dressing is filled with iconic design achievements for some of the world’s most prestigious brands and fashion labels, culminating with the launch of her own design house in 2008. Born in Oklahoma, Ms. Hill attended the University of Oklahoma majoring in Fashion closing, textiles and design. She grew up in the family retail clothing business, enjoyed selecting merchandise for the stores, then was drawn to the creative aspect of design. “I enjoy art, learning about other cultures, and spending time with family” Ms. Hill added. Her design achievements can be found worn by Carrie Underwood, Martina McBride, Katie Armiger, Shontelle, Maria Sansone, Kate Gosselin and many more. Sherri’s meticulous attention to detail is evident in her selection of beautiful fabrics and trimmings combined with innovative combinations of cuts to accentuate the best features of every woman. 18

What are some of your accomplishments as a designer? I feel most successful when my customers look and feel better than they ever dreamed for their special occasions. Who are some of your favorite designers? Halston was amazing for making garments that looked effortless, but fit the body beautifully. How do you select your models? I choose models who are able to show joy. I never choose models who look \hungry or miserable. My clothes are for special occasions where women are usually celebrating. What do you believe makes a quality article of clothing? Fabric is, of course, important, but pattern making and construction must be done by the finest skilled artisans. Do you consider yourself an artist? Sometimes What matters to you most as a fashion designer? It is most important to me to make a woman look and feel wonderful for her big event. What is your favorite part about conceptualizing a design? The finish. It can often take months to realize a design from original sketch to final sample because of all the processes involved. How do you prepare for a fashion shoot or show? We choose the garments to be shown, find accessories, choose the location, models to suite the mood of the garments. Our photographers, Fadil Berisha is very involved in this process. Do you prefer sketching designs or actually constructing them? I seldom make an entire garment now, but sketch almost every day.


What advice do you have for aspiring fashion designers? Experience, experience, experience! Seize every opportunity you can to be around any part of the industry. Retail experience is very useful. If you assist customers in selection and fitting, you get a sense of what works and doesn’t work on an actual body. No school can teach this. What do you like best about your personal style? I enjoy the creative aspect of designing. How would you define the style your line exemplifies? My line is all special occasion, from prom to wedding, to red carpet; we do gowns for the special events in a woman’s life. Our line is designed to celebrate the moment. What are some of your fashion goals? I want to create with my family a fashion company known for high quality products that are enjoyed and treasured. Of course, we would love to grow the company to a world wide enterprise and have taken the first steps toward this goal.

“The Guide to Getting Long Lasting Youth”

arring the discovery of Neverland, Ogygia, or the Fountain of Youth, time is going to continue to move on a linear path. Although age is just a number, we never want anyone to guess how high that number truly is. At every turn there are products promising rejuvenation and erasing fine lines and wrinkles, yet few actually perform and many don’t live up to their promises. So how do some women, and men, look so much younger than their chronological age? Is it genetic? Surgery? Or skin care? We met Michael S. Spicer, MD, a Florida dermatologist promoting a new skin care line called Épicé to clarify some of these myths of skin care. He believes that much of your appearance depends on heredity and your genetic makeup. Dr. Spicer goes on to explain that the environment has a lot to do with how your skin looks later in life. Your skin is most vulnerable until about 25 years of age. It’s during those years that the environment has its most detrimental effect on the skin. The most dangerous environmental hazard to the skin is ultraviolet light exposure from the sun. Most dermatologists will tell you that it is estimated that 80% of the damage is done during those formative years when the skin’s DNA is most susceptible that damaged skin can lead to skin cancer. What is less discussed is the more insidious and silent damage of the collagen and elastic tissue. This damage causes the skin to lose its tensile strength, affecting its firmness and feel. Sun exposure, usually from UVA sunlight, causes fine lines and wrinkles associated with older skin. This particular wavelength of light is also responsible for those brown age spots that begin to appear on the face with time. How do we keep our youthful good looks? Prevention is the best medicine. Skin care such as daily facial sunscreen, sun protective clothing and eye protection will give you the best advantage against the signs of aging. There are skin care products to help maintain skin health and in some cases reverse the damage. Dr. Spicer makes the point that there is more hype than science in many over the counter skin care products. Épicé, however, “Is one of the best skin care lines to achieve and maintain healthy skin?, according to Dr. Spicer. Épicé uses many natural antioxidants in its formulation such as pomegranate, green tea and grape seed oil, combined with traditional moisturizers like aloe and glycerin. Newer research has shown that targeting the stem cells of the skin can help reverse some of the damaged DNA. Some skin care products use animal and even human stem cell extracts to promote skin rejuvenation. In the last few years a revolutionary technique has been developed enabling the cultivation of the rare apple species, Uttwiler Spatlauber. Thanks to this technology, plant stem cells can be obtained and incorporated into skin care products to improve longevity of skin cells. Epicé’s Epicell Recovery Serum utilizes this Apple Stem Cell extract which helps the skin stem cells to maintain their characteristics and their ability to build new tissue. It also delays aging and has an anti-wrinkle effect. The benefits of the Épicé skin care products are clinically proven and very impressive, but Dr. Spicer warns that no skin care cream is going to “replace surgery”. There are times for surgery, or noninvasive skin treatments, but you can always use the Épicé skin care products along with other treatments for rejuvenation. Dr. Spicer encourages following your dermatologist’s advice for rejuvenation treatments and using Épicé products for your maintenance skin care regimen.

Rarely do you come across a stylist that elicits such charm, and his appreciation of quality and timelessness is a much-welcomed attribute. Gerard possesses the kind of jet-set sophistication common among the fashion industry, but his appeal is most greatly evident in his kind and caring nature, and ability to enhance the beauty in life. 27

Where did you grow up, and where do you live now? I grew up between Spain, Italy & France while attending boarding schools. Later on reaching the age of 12, I moved with my father to the country of Guatemala, my father who is a doctor was conducting studies on epidemiology there. After that I moved back to America and enrolled in high school and college in the city of Providence RI. I’ve also lived in Miami Beach Fl. and Boston Ma. I now live in New York City. Did your European upbringing influence your style? Yes of course, the elegance and style that naturally flows thru out the air of Europe has definably made an impact on my style yet it doesn’t define it. One’s personal style should be achieved by one’s on personality. Who are your favorite designers? I have many favorite brands; as for actual designers I am very found of Tom Ford’s work now and before while at house of Gucci. I adore John Galliano for Dior. Elie Saab and I will say my forever favorite is Yves Saint Laurent for his early work and for the work he did while he was the head of his house I also think Stefano Pilati does for a great job designing for the brand. Marquesa, Carolina Herrera & Oscar De la Renta remain very close to my heart. What is your inspiration in life? My inspiration is the beauty that is given to us by the world around us and that many of us fail to or ignore to see. The sky, trees, oceans, deserts, the beauty of nature. The appetite of life and glamour inspires me everyday. Who is your favorite client? Seeing Kerry Underwood happy on the red carpet has always been a pleasure. Who is your dream client? Angelina Jolie Pitt What is your favorite red carpet moment? The forever-beautiful Penelope Cruz in Atelier Versace for the 2007, 81st academy Awards (The Oscars) What is your best styling advise for women? Be confident when you dress. It is not an easy task but it is easily achieved by self-acceptance and self-honesty as well as trusting your stylist. Name your essential accessories for men and women? For men: A quality briefcase, great pair sunglasses, a nice pair of black and brown shoes, mouth spray and pinky gold ring. hat do Morgan Freeman, Harrison Ford and Cliff Robertson all have in common? Of course we recognize them as Academy Award winning Hollywood actors. But they have another bond; they are all licensed pilots, with a serious love of flying, and they came to their “hobby” later in life. Morgan Freeman grew up with two dreams; to be a fighter pilot and an actor. He joined the U.S. Air Force at 18, hoping to become a jet pilot. “That wasn’t happening in the 1950s,” he said. “I don’t blame the Air Force so much as time and circumstances.” Freeman served as a mechanic. After the military, Freeman turned to acting, and then to producing. He earned his private pilot’s license when he turned 65, in 2002, and has since earned instrument and multiengine ratings, followed by the purchase of a succession of airplanes. He has owned at least four aircraft, including a Piper Seneca, a Cessna Citation 501 jet and a Cessna 414 36 | Upscale Living Magazine | Issue 23

twin-engine prop. In 2008 he purchased a Sino Swearingen SJ30, a long-range private jet. He is certified to fly all of them. Freeman is a thoughtful pilot. “If I’m going on a long trip, I spend a lot of time thinking about it. I fly it three or four times in my head first.” He pauses and then adds, “They say every air crash is the result of lots of small things missed.” Harrison Ford also came to aviation in later years, earning his first license at the age of 54. In the film “Six Days, Seven Nights,” which was filmed in Hawaii, most of the film locations were accessible only by helicopter and flying in a helicopter on a daily basis piqued Ford’s interest. By the time filming had ended, Ford had 24 hours of helicopter flying in his logbook. He went on to qualify for his helicopter license about a year later. It was director Sydney Pollack who interested Ford in becoming a pilot. “I had been flying with Sydney in his Lear 60 and I realized he was having fun.” It rekindled memories of him taking a few flying lessons in a Tri-Pacer, in the 1960s. He quit because then he couldn’t afford the $11 an hour flight lessons. “I wasn’t sure at the age of 54 or 55 that I still had the capacity to learn something. I was never a great student.” Ford went out and bought a used Gulfstream II jet, and hired a pilot to fly the airplane and teach him to fly as a condition of employment. He took his first lessons in a Cessna 182 and earned his license in a Cessna 206. He quickly earned additional ratings and began buying airplanes. He recently replaced his Pilatus PC-12 turboprop with a Cessna Citation CJ3 jet. He owns seven airplanes, including a Bell 407 helicopter. Ford, who has just finished a six year stint as chairman of the Young Eagles; the Experi-

mental Aircraft Association’s program that offers young people their first (free) flight in a private aircraft. Ford has flown more than 250 Young Eagles in his de Havilland Beaver (his favorite), and helicopter since he first participated in the program in 2001. “Every flight is different,” Ford said. “I love flying in the mountains and landing at back country strips. It is challenging and rewarding.” When World War II broke out, Cliff Robertson though he’d be a natural as a Navy pilot, but when one of his eyes tested at less than 20-20, he joined the Merchant Marine, and saw action in the South Pacific, and the North Atlantic. “It was a dangerous way to spend the war,” he said. After military service, Robertson entered Ohio’s Antioch College, beginning his professional career as a radio announcer. His first extensive stage work consisted of two years with the touring company of “Mister Roberts.” Robertson became interested in general aviation in 1965. He bought a de Havilland Tiger Moth, learned to fly it, and then flew across the English Channel for the film “Up from the Beach” in 1965. Now a pilot now with several thousand hours in his logbook, he enjoys spending time in his Grob Twin Astir, a German twoplace glider. Among other aircraft, he has owned are three de Havilland Tiger Moths, a Messerschmitt Bf 108, a Supermarine Spitfire MK923, both genuine World War II warbirds, a Beech Baron, and a Stampe SV4. “I have a big hole in my head, and a stable of airplanes,” he said. Robertson holds multiple licenses including multi-engine instrument and commercial licenses as well as balloon, gliding and seaplane ratings.*





T

he most important feature of a property is often its location. No matter how many amenities a home may feature, its location is usually a make or break element for many buyers. When Richard and Jacqueline Mulhern were searching for a new home, it had to have the perfect location. “Every home we’ve ever owned has always had water access, and we wanted the same thing here,” says Richard. Moving from abroad, finding the perfect home was no easy feat for the Mulhern’s. Originally from Ireland, they were searching for a spectacular waterfront setting which reminded them of home. The moment they saw Brittany Lane, they knew it was the perfect location for them. Jacqueline explains, “When we first moved to New York, we traveled north in search of beachfront property. My husband and I were overcome with the natural beauty of this site. You could capture the natural wildlife in action, especially the beautiful white swans which were breathtaking!” After purchasing the property, the Mulhern’s quickly set about designing the grand home they envisioned. “I wanted to create a warm and welcoming home that anyone would feel comfortable coming to visit,” said Richard. Richard and Jacqueline personally worked with architects to design the home. They carefully considered each detail and material to be used throughout the home. “It was important that everyone who visited the home feel welcome and comfortable,” said Jacqueline. “We gave everything a lot of thought.” The home was specifically customized to enhance water views from every room and offers easy access to the Long Island Sound. “Having a waterfront home allows us to get up every morning and enjoy some of the most incredible

views. But the view itself would not have been enough for us. Having a beach right here is the best part. The sand, sun and surf, what more could you ask for?” At just over 6,500 sq. ft. of living space, the home boasts luxurious amenities and details. A circular staircase by the entryway reaches up to the 25’ ceiling and includes three 15’ windows which allows the light to shine through. “We wanted our home to be bright, open and airy. No matter what the weather, we always get great light,” says Jacqueline. When it came time to design the layout of the kitchen, entertaining and warm family gatherings is exactly what they strived for. The large space exhibits breathtaking water views. In the middle of the kitchen is a large center island with breakfast bar. “This is where we spend the most time. My children bring their friends here and we entertain our friends here. Even the dog loves it.” Professional grade appliances include a Wolf range and double ovens. In the winter, a gas fireplace allows the family to remain cozy and comfortable. Right off the kitchen is the living room. “We refer to this space as the Anchor Room since it brings together the whole house and outside,” says Richard. Here, the room boasts a gas fireplace, coffered ceiling, built-in library and multiple French doors out to the rear deck. Water views envelop the room. “The kitchen is where we can have a bit of fun, but the Anchor Room is where we can relax and just take some time to breathe.” When the Mulhern’s were contemplating the design of their master bedroom, they wanted to create a space which was comfortable, convenient and cozy. “Here are timber floors which add so much warmth to the space, along with a gas fireplace and some of the best water views in the home.” Thoroughly enjoyed on

warm nights and early mornings is the balcony where Richard feels, “It’s like you control the whole ocean.” Situated on over one-and-a-quarter acres, the Mulhern’s estate has an amazing beachfront location which was created to be enjoyed yearround. “In the autumn, spring and summer, we sit out on the beach, play on the grass and kayak. In the winter, we can sit on our deck and entertain by the fireplace. Even inside our home, we still bring the outdoors in,” says Richard. On weekends, the Mulhern’s enjoy kayaking to Huckleberry Island and all around the Long Island Sound. “The kids love it, my wife loves it, and I love it.” Jacqueline explains, “You have a selection of facilities to choose from while living in this majestic home. There is a large outdoor heated swimming pool with spa, your own private beach, a gym complete with ocean views, and a cabana which has a play area for kids and a sauna. The whole outside surroundings have manicured lawns and the landscape is complimented by a pond which has a cascading waterfall! You can anchor your boat at a number of boat clubs adjacent to the home. New Rochelle has a sailing club for adults and kids and you can see the array of sailing boats going to and from Long Island, which has many restaurants where you can anchor your boat and visit.” Asked if they will miss this home they are now selling, Richard’s response was, “I love the house and the beach. It’s an invigorating place to live. The ocean is always changing, everyday is a new day. f you wanted to have an expensive bottle of wine...Do you know how much it would cost you? Some might answer $50 or $100. Others might answer even higher - they would be right! Some bottles of wine are so expensive they are simply collected for their value. Others are quite valuable and wine connoisseurs drink and enjoy these wines for the experience of drinking something that not everyone has the exposure to. But these wines can cost dearly, often thousands of dollars. Some are worth more than your car, or even your home.

A 1787 Chateau Lafite, a Bordeaux was sold at Christie’s auction house in the 1980’s for (pounds) 105,00 ($160,00). The Guinness Book of World Records lists it as the world’s most expensive bottle of wine. While the age of the Chateau Lafite would have made it well worth a high price, what really drew great attention were the initials “Th.J” in the bottle. “Th.J.” were the initials of the bottle owner, Thomas Jefferson. Jefferson had been the ambassador to France and often visited the vineyards of both Bordeaux and Burgundy. This bottle of wine is considered no longer drinkable, but is still quite valuable for its historical sentiment. It is now in the Forbes Collection in New York City. Would you drink champagne that had been on the bottom of the ocean floor? You might if you are a guest at the Ritz Carlton hotel in Moscow. Bottles of 1907 Heidsieck vineyard champagne were aboard a vessel, being shipped to the Russian Imperial family. In 1916 this vessel was shipwrecked. But in 1997 divers discovered more than 200 bottles of the bubbly stuff in the wreckage. The champagne costs $275,000 a bottle! Both the amazing story of being lost at sea and the champagne’s age make this a very expensive champagne. We are sure it tastes just divine. The Pernod-Ricard Perrier-Jouet champagne set is also quite unique, making it special for champagne drinkers. There are only 100 sets of the 12 bottles of very fine and expensive champagne. When you purchase this special set of champagne you’ll have the choice of what liqueur will be used in the champagne - and you actually need to fly to Eastern France to make the choice. A set of the 12 bottles costs $50,000 If you are a vodka drinker and looking to splurge then you’ll want to know about Diva Premium Vodka. The bottle looks as beautiful as any perfume bottle - splashy, glittery and glamorous to please even the fussiest diva out there. At a charity event in 2008 in Napa Valley, an executive at Cisco Systems bought the 1992 Screaming Eagle, sold for $500,000 (about $80,000 a bottle). With this auction prize the lucky winner received a lovely dinner at the winery. The perfect way to open up a bottle of his wine and enjoy it! In 1997 an anonymous buyer at a Christie’s auction bought a bottle of 1945 Chateau Mouton-Rothschild Jeroboam for $114,614. Wine enthusiasts know this as one of the very best vintages of the 20th century. A very fine bottle of wine for any wine collector or connoisseur.

Let’s not forget about the world’s most expensive beer: Vielle Bon Secours, available only at the London-based bar Bierdrome. It costs about $1,000 (500 pounds) a bottle and $78 (39 pounds) a pint. I was in heaven: Twin 4 oz. Filet Mignon served with rosemary and sage roasted potatoes, topped with a Chianti wine sauce. Whether I ate the Filet, potatoes, or tomatoes, every bite was savored and I found myself closing my eyes to make each mouthfilled moment last. In addition, there are other enticing restaurants whether you want to try Pan-Asian dishes from Zen, play pool and grab a steak at David’s Club, or a lighter fare offered poolside at Croc’s, and more. For the older children, there is a water slide that took some convincing for me to try. Yes, I finally agreed to go into the black hole and have a swift ride in the dark tube before being unceremoniously dumped into the water. After that, I became one of the kids and jump in line for another turn! You can grab an inner tube and glide along the 850 foot lazy river that treats you to waterfalls, palm trees, water rapids and a canon that shoots water that you can try to avoid, but you aren’t always that lucky! Needless to say, the water activities are incomparable and you and your family can spend hours having fun outdoors at the Omni Orlando! Try the pitch and putt golf course and whether you are a beginner or expert, this is a fun course to play day or night with your family. For serious golfers, you have access to two world class 36 hole golf courses designed by golf legend Greg Norman. Dishes may vary each day, but when I visited the resort, breakfast included grilled tomatoes, fresh fruit, made-to-order egg dishes, several cheeses, bacon, muffins, yogurt and cereal. The vast lunch options included cook-to-order grilled pork chops, grilled grouper with pesto, chicken cacciatore, cheese risotto, eggplant ravioli, zucchini provençal, Creole lentil soup and an assortment of salads. Unlimited free alcoholic beverages, water, soda, juice, coffee and tea are readily available throughout the day. Across from Coconut Walk is Bites Beach Grill, where hungry guests can grab grilled cheese sandwiches, veggie wraps, salads, burgers, pizza, chicken, fish, and brie baked focaccia. On the second floor are the two specialty restaurants open for dinner. Belliago serves a four-course Italian meal, while Silk offers Asian cuisine fused with local ingredients. There is no extra charge, but reservations must be made in advance in the lobby. I enjoyed a pan-seared sirloin steak with mushroom sauce and a glass of red wine at the elegant Bellagio. The second floor is where the manager’s weekly welcome party takes place on Monday evenings on the outside patio. Lively and interactive, with music and entertainment, Saturday’s Caribbean night features tropical dishes, while the Tuesday country night’s spread includes hearty ribs and corn on the cob. Fire-eaters, acrobatics, and kids’ talent contests come together to create endless fun. Activities Each day Coconut Bay organizes more free activities than you can possibly participate in. I checked out a morning yoga class, water polo, beach volleyball, an aqua fitness session, a cricket match, a reggae dance class, a dart tournament and an afternoon tea. On the property is a kitesurfing school, 2Elements Kitesurfing, geared to showing surfers of all levels how to harness the strength of the ocean’s wind and water. Windsurfing equipment is also available at 2Elements. The Zone Paintball field is the first facility of its kind in the Caribbean. The resort has invested in its own stable of horses for horseback riding adventures along the beach. Coconut Bay also has four basketball courts and six tennis courts. Tennis lessons are available for no extra fee and staff members coach teens in basketball pick-up games. The beachfront gazebo, on the Harmony

side, is a romantic wedding ceremony spot for up to 40 guests. Now that an American audience has been introduced to the beauty of St. Lucia via the filming of the reality show “The Bachelor” here, Coconut Bay is upping its wedding options. The resort now has exclusive rights to weddings held at the newly-renovated historic Cape Moule à Chique Lighthouse. I rode up an extremely windy, narrow road to observe the world’s second highest lighthouse, rising above the Caribbean Sea. Activities outside of the resort can be booked in the lobby through the Adventure St. Lucia desk. Nerv’s Taxi Service brought me to Sulpher Springs, where I witnessed the boiling pools of foul-smelling liquid spewing from the unique La Soufrière drive-in volcano, which is now inactive. I also walked through the nearby Toraille Botanical Gardens and marveled at the waterfall cascading 50 feet. While in the area, I sailed half the day by the Piton Mountains, leaving the Soufrière waterfront on a catamaran from the Mystic Man Tours fleet. Mystic Man also offers glass bottom boat, snorkeling and dolphin watching tours. Colleagues were excited about zip lining over the rainforest canopy with Palm Services at the Treetop Adventure Park and riding All Terrain Vehicles provided by A & E Tourism Services. ituated on the shimmering white sands of the pristine 12-mile Grace Bay Beach in Turks & Caicos, Ocean Club Resorts is a deluxe duo of allsuite hotels with a “stay at one, play at both” policy of shared pools, beaches and dining facilities. A turquoise playground for scuba divers and kiteboarders, Turks and Caicos is a 166-square-mile archipelago in the eastern Caribbean offering visitors fine dining, golf, tennis and sailing. The 6,500-acre Princess Alexandra National Marine Park, one of the best snorkeling spots in the Caribbean, extends the length of Grace Bay. Its 13 miles of protected beach runs from the dunes out into the Atlantic Ocean to the barrier reef. Accommodations Ocean Club Resorts, on the island of Providenciales (commonly called Provo), is a complex of two beachfront properties hosting three swimming pools, three tennis courts, a watersports center, a dive shop, spa, fitness center, conference space and a trio of restaurants. Elegantly appointed suites are a home away from home, with most units featuring patios, fully equipped kitchens, washers and dryers, board games, books and DVDs. Dining The island serves up a world of tantalizing treats, including those from three fabulous eateries at Ocean Club, home of the awardwinning conch burger and beet mojito. In Turks & Caicos, where conch is king, Seaside Cafe’s signature conch dish is the scrumptious conch burger with Caribbean calypso sauce. Concocted by Ocean Club’s Chef Nicola Giordano, this colorful mix of ground conch meat, diced red and green sweet peppers, red onion, diced celery and Caribbean spices is melded into patties, grilled on a hot fire and served on a bun with a leaf of red lettuce, a tomato slice and dill pickles. It won first place at the annual Turks and Caicos Conch Festival in the category of Best Specialty Conch in November 2009. At the same competition, Ocean Club’s mixologist Kamario Smith won first place in the Bacardi Mojito contest. While I enjoy an occasional beet in my salad, I had never tried beet in liquid form until I was offered one here. The pretty fuscia-colored sweet drink is made with a bit of a boiled batch of beets pureed in a blender, Bacardi rum, and sugar. Sprite is added for effervescence. Served in a clear glass and garnished with a lime wedge, a sprig of fresh mint and a stick of sugar cane, it was a refreshing accompaniment to my conch burger. At the resort’s Cabana Bar and Grill, which purports to serve the largest selection of premium rums on Providenciales, I shared a trio platter of conch fritters, cracked conch

and fish fingers with friends. Separately, I ordered a grilled shrimp kebab with vegetables over rice and a Turks Head amber beer. Opus Wine Bar & Grill, across from Provo Golf Course, provides a casual dinner in a garden setting with a menu featuring locally caught seafood, sizzling steaks and vegetarian dishes. Dining al fresco amidst the sound of live jazz, my party ordered an assortment of tasting plates, including yellow fin tuna spring rolls, caramelized pear with gorgonzola and arugula and pan-seared scallops in citrus ginger butter. For my entrée I indulged in the Turks & Caicos lobster tail with habanero butter and a glass of the recommended Jekel Chardonnay. Off the property, we visited the stylish Lemon Café, an innovative Moroccan restaurant in the Village at Grace Bay. Menu items include North African moussaka with eggplant, lamb burger with yogurt mint cucumber sauce and a long-simmered tangine (lemon olive chicken, beef or vegetarian). My companions and I also made a short trek to Coco Bistro, a romantic restaurant headed by popular Chef Stuart Gray. Open for dinner, the bistro is known for its local lobster and fresh ingredients culled from the chef ’s garden of lemon grass, basil and mint. My appetizer here was a grilled shrimp satay on sugar cane skewers served with banana chutney and Jamaican curry dip. Afterwards, my pals and I headed to the boisterous Danny Buoy’s Irish Pub for a quick night cap. And here we gave a full-throated toast to our treasured island getaway.*

Drain and allow to cool. - Wash and dry the salad leaves, and drizzle half the vinaigrette over the leaves and gently toss. - Cut the truffle into thin strips. - Cut the cooled potatoes into discs and distribute between the 6 plates. Sprinkle with the remaining vinaigrette, season with some sea salt and fresh ground black pepper. - Strew the truffle pieces between the plates. - Serve accompanied by a dry white wine or Prosecco.

urtis Stone, the face of a new generation of Chefs, has conquered the hearts of many of us. Born on November 4th, 1975 in Melbourne, Victoria, this Australian celebrity chef began cooking with his grandmother at the age of five, and while studying for his Bachelor of Business, he decided his heart was in food, so he started working at some top Australian restaurants before leaving to work at various restaurants in London. Stone began cooking alongside legendary Marco Pierre White at the Café Royal and Mirabelle. He went on to become head chef at Marco’s Quo Vadis before moving to the exclusive Restaurant 301 located in Eureka, California. No stranger to television, Stone has appeared in a number of cooking programs in the UK, including “Dinner in a Box”, “Good Food Live and Saturday Kitchen”. He also hosted the first series of “My Restaurant Rules”.

All of us have had jobs that we knew didn’t suit us. We might be good at them but it became the same old grind. We’ve wished we could be doing something else but life intruded and you have to put food on the table. Sometimes though, you get the chance to do what you really want, to create a deeper beauty. John Yarema was a systems engineer. It paid well, there were benefits and no weekends and in today’s technologically savvy society, it was a job that wasn’t going away. He hated it. While he and his wife were renovating their first house, a 1850s era one-room schoolhouse, John found his calling. He wanted the floors to be true to the history of the building and ensured they were. He was a self-taught apprentice. He found, as he so aptly put it, “a love for architecture and design, an appreciation for fine craftsmanship, and an understanding that there are no shortcuts.” That was 20 years ago. Since then, Yarema built his business the way he crafts his hardwood floors and other works of art; step-by-step with an eye to detail. Many companies boast they have been doing hardwood floors for three generations. John brings a deep love for his craft, the knowledge earned through many years of trial and error, and an eye for design and art. If other companies have generations of experience in stock solutions to unique problems, then Yarema trumps them with the ability to treat each project as its own entity. There are no stock solutions for John Yarema. John is keenly aware of the need for sustainability in today’s world and while he knows no business is truly sustainable, he

strives to bring forth the best product possible while using the most sustainable methods. He prefers to use local materials. He does not deal in stock solutions to flooring problems. Each project is unique to the building. The wood tells you where to go. John recently completed a flooring project for the SC Johnson Complex’s Fortaleza Hall designed by renowned architects, Norman Foster and Ralph Applebaum. The flooring project was a wooden mosaic topographical map of the western hemisphere tracing Sam Johnson’s journey from Racine to Brazil. The map set in a sea of white terrazzo is crafted from black walnut, American cherry, maple and hornbeam and the outlines with a 1/8” aluminum strip and using brass to depict Johnson’s route and his stops. Yarema has worked for Robert F. Kennedy Jr., and their families are close friends. John refurbished the floors in the Kennedy’s New York home after it sustained flood damage. Environmental sustainability was paramount to the Kennedys, and John used hardwood from woodwork recovered from turn of the century housing slated for demolition. He designed and created hand crafted parquet floors for the entire main floor. Robert F. Kennedy Jr. states, “John’s floors are the soul of our house. He is a gifted artist who takes woodworking to a new level.” He adds “John Yarema is the ‘Michelangelo of Wood Floors”. John also created the visually stunning woodwork for the Ann Arbor Library. John has done projects all over the world for individuals and corporations. He brings consummate artistry and craftsmanship to every project he takes on. When I talked to him he was in the middle of a project in Michigan but graciously took time from his busy schedule to discuss Yarema Creative Hardwood Flooring

and his philosophy with me. But it’s not just about creating beautiful woodwork for John. He is concerned about the environment and has created the Yarema Forest Foundation dedicated to reforesting areas such as the South American rainforests stripped of their trees not only by lumber harvesters for hardwood flooring wall treatments and furniture but for use as fuel, a usage that accounts for between 12 – 30% of deforestation, and also adds to greenhouse gases and global climate change. For Yarema, giving back to the earth isn’t just a nice thing to do, it’s a responsibility. What’s in the future for Yarema Creative Hardwood Flooring? He is expanding from hardwood floors to cabinetry and furniture. There is a deeper beauty in Yarema’s creations. It isn’t just the artistry. It’s not enough to provide the customer with a hardwood floor of enduring beauty if nothing is done to renew the basic building block of that beauty. Many companies are technically competent to lay a hardwood floor. One, Yarema Creative Hardwood Flooring breathes life into every project. Future generations will marvel at his beautiful topographic map in Fortaleza Hall and gasp with delight at the intricate parquet in the Kennedy’s green house and that is as it should be. But hopefully others will take up the mantle of environmental sustainability as John Yarema has, so that the magnificent forests that provide not just hardwood but the very breath of life and a deeper beauty than any person can create, will be around for future generations.
