RICHARD MILLE RM07-02 Automatic Sapphire Collection

This new collection combines the attractions of a clean design with the mechanical complexity of fine watchmaking. Because Richard Mille connoisseurs are fascinated by the brand’s signature watchmaking techniques, the new RM 07-02 Automatic Sapphire timepieces remain faithful to the first iteration, whose movement could be admired from every angle through a colored sapphire prism. It was back in 2015 that Richard Mille boldly chose to design watches with cases made entirely of colored sapphire. Today, the RM 07-02 Automatic Sapphire collection has been enriched with four new versions –including one in lilac, a brand-new shade – and new interpretations of the gem-set dial.
At the heart of this crystalline cocoon is an intriguing and attractive dial that draws the eye with perfectly symmetrical geometric shapes and refined aesthetics. This central graphic design is a testament to the art of the master gem-setter. The stones adorning this watch catch the light to enhance every facet of the sapphire case, decorating the dial, bezel and flange. A cabochon also embellishes the crown. Here, precious stones,
including dazzling diamonds, hypnotic blue sapphires and vibrant yellow sapphires, are combined with ornamental stones such as orange spessartite, white agate or opal, and various shades of green tsavorite, chrysoprase and malachite.
Behind the sumptuous visual harmony of this piece lies great ingenuity. Protected by its sapphire case, the CRMA5 in-house skeletonized automatic movement, displaying the hours and minutes, is wound by a variable-geometry rotor making it possible to configure the winding of the movement to the activity of the wearer by adjusting two small weights. This compact caliber has a power reserve of approximately 50 hours. The baseplate and bridges – crafted from either red or white gold depending on the version – are microblasted and chamfered by hand. The red gold oscillating weight is set with diamonds for an even more precious result. The combination of these myriad details and the finishes, which have been pushed to their extreme, are distinctive elements that further enhance this model.
The use of sapphire at Richard Mille involves major constraints and
unique expertise. The brand’s iconic tonneau-shaped case is especially difficult to craft because of its curved lines, which render it particularly ergonomic and comfortable to wear. However, working with these curves demands additional time at every stage of the creative process, from pre-production to production itself and finishing. Sapphire will not tolerate even the slightest approximation, particularly during cutting. Its chemical composition gives it an exceptional score of 9 on the Mohs scale of mineral hardness, just behind diamond, which tops the list. Creating a case of this quality requires over 1,000 hours of machining, of which 430 hours devoted to preforming the case parts and 350 hours reserved for polishing the entire case. The front and rear bezels also receive an anti-reflective coating to guarantee optimal visual properties.
Producing colored sapphires involves a process that is even more complex than for transparent sapphire: these stones are created by carefully incorporating metal oxides into the material’s crystalline lattice. However, a colored crystal is more sensitive to the heating and growth
process than its colorless counterpart. Developing a new shade like lilac therefore involves a multitude of trials before the exact shade can be approved.
Setting gems into this particular material is a true feat of engineering, as a laser is required to perform the mitraillage, that is drilling holes for the stones. This must be accurate to the nearest micron. Prongs in hand-polished gold, made separately, are then inserted, creating the multiple settings that hold a graceful row of diamonds.
This new collection is the result of an uncompromising quest to combine refinement with technical skill. The RM 07-02 Automatic Sapphire is limited to seven timepieces for each of the four versions: gem-set pink sapphire, lilac sapphire, green sapphire and gem-set green sapphire.

CHRONOSWISS DELPHIS FIRESTARTER
A Bold Looking Watch with an Intriguing Design
Bold colors are not something that you commonly see in the watch world but Chronoswiss with its radical Delphis Firestarter has certainly piqued our interest. It is a unique design which blends traditional craftsmanship within the confines of new age technology. The design is what dominates your gaze and some of the materials used are also quite space-age. In fact, it is the first watch in the world to use a Titanium Core Nano Shell case. As you might this is a highly durable and a light material plus it simply looks quite striking. This case is finished in this alluring hue while being carved out of a solid block. The red coating is not just for aesthetics as it is also a high-performance composite
Then as you peer closer you look at the guilloché dial while the red accents further take it up a notch. This watch has a 42.60mm case with a thickness of 14.50mm while the sides have a knurled effect with a healthy dose of sapphire too. Polished by hand, the case is built out of a solid block of composite. Other details include the fact that the case is water resistant to 100 meters. The red overdose is perfectly completed by a, you guessed it, a red strap! The other interesting bit is the digital jump hour being juxtaposed against a digital seconds redout. The mix of digital and analogue plus the design is something which makes this watch different from others. The watch also has a C.6004 Manufacture movement while having a 55-hour power reserve. Overall, we love the craftsmanship and the technical detailing along with the materials used while the large central hand is a unique touch. The use of bold colours also marks this watch out from others in this crowded market with intense competition. Limited to just 50 pieces, Chronoswiss Delphis Firestarter is priced at $43,600. While this brand is no stranger to bold designs thanks to the previous Delphis collection, this one is easily one of the stands out watches of the year and something that Santa Claus would love to wear!
ASTON MARTIN VALHALLA
Aston Martin has been busy with numerous launches but the Valhalla has been a long time coming since it is their entry into the supercar world. Aston Martin is known for its GTs including the svelte Vanquish but the Valhalla is a different kettle of fish. It is a plug-in hybrid supercar which takes aim at the Lamborghini Revuelto with an eye-brow raising 1079PS / 1100Nm.
All those horses come courtesy an 828PS flat plane crank 4.0-liter twin-turbo V8 engine with three E-motors delivering a further 251PS. This means performance which is un-heard of for an Aston Martin as the numbers include a 350km/h (217mph) top-speed and a 0-100km/h (62mph) time of 2.5 seconds. However, it also looks extreme but still has the sensual elements of what an Aston Martin is all about including a wide grille plus a race car like rear styling.
There are dihedral doors, sculptured surfaces all built to be as aero efficient as possible. There are Active aerodynamics at play here with creating around 600kg of downforce. In Race mode, the rear T-Wing raises by 255mm on powerful hydraulic rams for maximum downforce which looks even more purposeful. The carbon body can also be exposed for a more sinister look. It looks menacing and has the requisite presence to be in this segment. Other exotic elements being ticked off include Magnesium wheels wrapped around Michelin Pilot Sport Cup 2 tires.
Inside, the steering wheel is yoke like while the cabin is drenched in carbon too while it does not have the leather lined extravagance of the GT models. It is a more serious place to be with a clear bent towards being a racing car. Back to the supercar appeal laced with this car and the Valhalla has a quad exhaust system which includes a pair of top-exit tailpipes while you get low-mounted tailpipes in the underbody venturi tunnels.
Despite its electrified powertrain, the V8 remains the core of the driving experience while also bringing in the necessary drama. Few years back, Aston Martin had promised to build 500 cars but that figure has now ballooned to 999 units with each car being priced at a cool $1 million plus. For Aston Martin, this is a much more competitive space and something Ferrari or Lamborghini are much more famous for. That said, the Valhalla has the exotic looks and the power to justify its presence amongst this rarified lot.
JAGUAR TYPE 00
A Leap of Faith for the brand
Time to reset. That is the Jaguar mantra and beneath the un-ending cloud of controversy, this is indeed a paradigm shift for the revered British brand. The uproar that the new campaign for Jaguar caused showed how we value this brand while having a place in our culture thanks to cars like the E-Type. However, with a troubled history including multiple owners and low sales, Jaguar never really managed to become a bona-fide Mercedes or BMW rival even with multiple attempts including the XF and X-Type. That said, Jaguar is now moving to a different direction fueled by lofty ambitions to take on Bentley and Aston Martin. The brand will of course go all electric but in trying to be a Porsche rival, the new direction did raise a lot of eyebrows but we would say that it is what the brand needed the most.
Jaguar has never been talked this much and there was a lot of anticipation for the new car. Of course, this concept is not a preview but a few details would certainly trickle down to the first production car due in two years. The Jaguar Type 00 is a grand tourer which harks back to the coach-built era of generous proportions along with monolithic styling. Everything is new including the new minimalist styling but details like the absence of a rear window followed by the sculpted panoramic sunroof showcase the new direction of future Jaguars.
Type 00 indicates how Jaguar is now starting from scratch while the buff frontend is somewhat juxtaposed against the svelte side profile. There is yacht like finishing while the new Leaper logo finishes up this modern yet radical concoction. Then the rear-facing cameras, much like the charging ports and front air intakes are hidden until needed. The interior is also modern, sleek, and devoid of unnecessary clutter. However, modernism and architecture have played a big role with three hand-finished brass lines which run the length of the interior, with a central 3.2m-long brass spine that splits a pair of floating instrument panels. There are also ‘totems’ inside the center console which customizes the mood of the interior. This includes the ambient lighting and unique soundscape to the tailored screen graphics, reflect the properties of the chosen material. Bespoke scents are also embedded as well as wool blend. Interestingly, the brass elements will change appearance as its oxides over time and have been untreated.
We will say that some of these details will trickle onto the first Jaguar- expected to be a four-door Porsche Taycan rival. However, in ethos it would be a luxury GT with ample range and power but the focus would be on styling, materials and a new sense of luxury championed by sister brand Range Rover.

Please tell us a bit about yourself (schooling, formative years etc.)
I attended the University of Michigan where I earned dual degrees—a Bachelor of Fine Arts (BFA) and a Bachelor of Arts (BA). Later, I pursued a Masters in Integrated Marketing from North-
western University. My background is rooted in both business and art, with a strong emphasis on consumer behavior and understanding the “why” behind purchasing decisions. After graduating from Northwestern, I joined Spiegel Catalog as a Consumer Trends Forecaster in the Home division, where I learned about merchandising, behavioral trends, and catalog marketing. I also attended High Point Market (HPMKT) when it was only two floors in one building, the IHFC, and discovered my passion for sourcing. After my time at Spiegel, I worked as a product development specialist for an entertainment company, where I was responsible for finding new, emerging products for the mass market, as well as leading creative direction and product positioning. Following the birth of my twins, I pivoted to interior design and completed a certificate in Interior Design from Parsons. My combined expertise in fine art, marketing, product development, and merchandising has been invaluable to my career in design.
Did you have an influence in your youth that shaped your career path?
My parents had a significant influence on my career path. They valued the arts, culture, and creativity, and always encouraged me to pursue artistic endeavors. At just ten years old, they sent me on a train to New York City by myself to attend art classes on the weekends, which was a
formative experience that helped shape my passion for design.
When and why did you start your firm, k+coLIVING, Interiors by Karen B Wolf?
I started K+Co Living as a rebrand of my original firm, Karen B Wolf Interiors. I believe in the strength of my team and felt that naming the company after myself was limiting and took away from the credibility that my team deserved. Over the years, we evolved as a firm and developed a cohesive brand message that we call “laid-back luxe.” K+Co Living now represents that brand and reflects our collective approach to design.
What does a day in the life of a creative principal entail?
As a creative principal, my days are long—about 14 hours, 7 days a week. However, I still find joy in the small moments and successes, like when a color choice works perfectly even though it seemed uncertain when ordered online. What I love most about this profession is its constant motion and unpredictability. No two days are ever the same, and we are always problem-solving.
Please talk us through the process of designing amazing homes for your clients.
When designing homes for clients, the process begins with an intake session to
define the client’s style. From there, I approach design from the ground up, starting with foundational elements like tile, wood, and carpet. Once the base is set, I layer the design with various elements, carefully balancing the space with color, patterns, and materials. This might involve pairing textures like boucle with velvet or chenille, mixing performance fabrics with woven blends, and adding window fabrics such as sheers.
How hands-on are you with each project?
I am extremely hands-on with every project. I am most involved at the beginning, setting the design direction and approving the first pass, and at the end, where I handle the styling. I also check in throughout the process to ensure everything is on track.
Your design aesthetic of layering colors, patterns, finishes and textures is stunning. Has that become your trademark?
Yes, layering colors, patterns, finishes, and textures has become a trademark of mine. Thank you for noticing!
How often do you introduce pops of color? I introduce pops of color intentionally and with care. I typically like to integrate a color pop in a room at least three times. Imagine it like a triangle, moving the color around the space to maintain balance and cohesiveness.
The use of metallics in your interiors look absolutely incredible! It really adds a touch of class.
Thanks! When it comes to metallics, we enjoy mixing different metals, such as polished nickel, satin brass, and nickel. These metals complement each other beautifully. Chrome, which is a cooler metal, pairs well with black, while burnished metals like satin nickel mix wonderfully with metals that have a sheen. The key is to match warm metals with warm tones and cool metals with cool tones.
How can people create a fresh look without breaking the bank?
To create a fresh look without breaking the bank, invest in well-made larger pieces, like sectionals or sofas. These core items take up the most visual space, and it’s easy to tell when they’re poorly made. For accessories, pillows, and smaller accent pieces, look to budget-friendly, trend-forward stores like Target, World Market, At Home, and HomeGoods.
Do you believe in repurposing?
Yes, I do believe in repurposing. If a family heirloom or a specific item holds sentimental value or is a must-keep, we make sure to measure it and incorporate it seamlessly into the overall design.
What sets your firm apart from others? What sets our firm apart is not just our warm, layered, and inviting design aesthetic, but also how we show up as individuals. Office culture is crucial to me, and I’ve made difficult hiring decisions to ensure we maintain our core values. This,

Favoring clean lines and shapes, Nicole Hirsch’s home in Cape Cod is contemporary and timeless.
Nicole, did you have an influence in your youth that shaped your career path?
Growing up, my mom was an interior designer, so I was always surrounded by the business and got to learn from her, firsthand. The industry was very different back then, with frequent trips to the design center in Boston since sourcing online wasn’t a thing yet. I was always inspired by beautiful homes and knew one day I wanted to pursue it as a career path.
Please tell us more about your home.
This is a home we recently bought and renovated in Cape Cod which is a popular summer destination for people who live in and around Boston. It is four bedrooms and 4.5 bathrooms across 2 floors. This was our third summer in this home. The bones and location of the home were gorgeous but everything was very dated, so we

came in and overhauled a vast majority of the home. Everything from floors to walls to millwork, doors and lighting. After a substantial renovation throughout, I fully furnished every room.
You have your own boutique design firm. Did you opt to do your home’s own interior design?
Yes, I did all the design work throughout the home myself. I worked with Kevin Smith of LDS Construction to help bring my vision for our oceanfront home to life.
How would you best describe your design style?
My design style is contemporary with a timeless, neutral sensibility. I am not so modern that it feels cold or edgy. Everything I design has a certain warmth via texture and finish details, but I also lean towards very clean lines and shapes. I like to call it livable luxury.
Where / what / who inspires your design style?
There are so many incredible designers throughout Europe and Canada and the US - I love following their work and seeing what boundaries they are pushing. But at the end of the day, a lot of what we create for our clients is truly customized by us for them and their home and lifestyle. We are often told that our designs have a really unique, recognizable aesthetic that is truly representative of our brand, which we are very proud of. We also let our amazing fabric and bespoke millwork vendors inspire us with their gorgeous designs to create showstopping pieces.
How do you keep things fresh and new in terms of decorating?
Every house truly invites its own unique aesthetic. Sometimes we are working on a historic brownstone in Beacon Hill or the South End and sometimes we are working on a large, new contemporary build in the suburbs. Each new job we embark upon needs to marry with the aesthetic and layout of the home. As we start
to source the floorplan and design for each project, there are certain attributes that we lean towards so it works with the vibe of that particular house. We always let the architecture of the house guide us down a unique design path for each project.
Is there a specific color you are drawn to in interior design?
We are shamelessly invested in neutrals. We always tell our clients that we like to create homes that feel timeless and we find the best way to achieve that is to stick with calm, neutral shades that stand the test of time. We are big fans of White Dove by Benjamin Moore and Swiss Coffee also by Benjamin Moore. These are both incredible shades of white that have a little warmth but go with anything. We typically use this as our blank canvas that we take throughout the home and of course pair it with unique wallpapers and wood stains/finishes in select spaces to give the home warmth and character.
Do you believe in repurposing?
We absolutely believe in repurposing if the scale of the piece still works in the space. Our clients often come to us with gorgeous pieces that we love to pepper into a room. We frequently will reupholster a gorgeous lounge chair or re-stain a table to give the piece new life, but if the dimensions fit within the space, it’s wonderful to be able to retain some pieces in a client’s existing collection.
Do you have any special heirloom pieces?
My favorite heirloom pieces are most definitely pieces of art. My parents love art and I have definitely removed some pieces from their walls over the years to use in my own home. The piece we have in our bedroom in this house is a special piece my parents purchased decades ago on a trip to visit me in New Orleans when I was living there for college. It feels like it was made for the space and has special memories around it.
Which part of your home is you favorite?
My favorite part of the home is the patio/pool area. When we purchased the house, it had a very small backyard that
was overgrown with bushes and grass. We knew before we purchased the house that we wanted to clear out the whole space and build a gorgeous pool and patio to entertain and our kids could have friends over. I worked with Shoreline Pools to create an outdoor space that not only took advantage of the ocean view but had every finish and detail that I was hoping for. Being out on the back patio, relaxing in the pool or jacuzzi, sunset cocktails … it is truly my happy place.
In which part of your home do you spend the most time?
If we are not outside by the pool, I love the cozy sanctuary that is our primary bedroom. The high ceilings, light oak furniture pieces and glass doors looking out to the ocean is such a soothing place to relax. At night we often open the glass sliders and listen to the ocean as we are falling asleep. It’s pretty awesome.
May I please ask who you share your home with? As an expert in your field, were / are you open to design suggestions from them, especially your child(ren)?
My husband and I have three children (15, 13 and 9) who also love spending time on the Cape in the summer. We most certainly designed the house to accommodate the needs of our large family. Each of our children have their own room with space for friends to come stay over, which was very important to us. Although I got some input on décor decisions from each child for their rooms, they are typically always happy with my design aesthetic and trust the process.
Parting thoughts?
After working on many client projects, this was such a wonderful process to get to create an entire home for myself and my family. As a designer, it means so much to have a space that you created that you can entertain in and show people what your design aesthetic looks like. We host so many dinners and get- togethers at this home. I love filling it with fresh, summer flowers and hosting large, delicious BBQ’s in our outdoor kitchen. It truly is a special place where our family will be spending time for years and years to come.

Once I used to steam just my puddings and sponge cakes. It took a while and some advances in technology for me to start steaming my floors, carpets, curtains, upholstery, car and every possible creice and every conceivable surface. Except my face. My Ayurveda assessment determined that I’m stout and not symmetrical. That my chest is broad and neck wide. My eyes are small and active, skin warm, my sleep deep and my hair scarce. My joints crack, my appetite is strong, my digestion quick and my eliminations dry. My cheeks are rounded and my belly “defined”. I’m on the heavy side. It also revealed I have a caring nature, cry easily but am occasionally prone to anti-social behavior like flatulence. Apparently, my mental activity is moderate, my intellectual response average, my memory medium and my thirst impressive. As result of which I suffer from acute ego loss which means I have poor self-image which means that weight management is tricky.

All self-truths having been ascertained, my Ayurveda profile defined, my “gunas” (attributes) quantified, my disposition and psychological constitution categorized; I waited – as Oprah and Nicole Kidman had done before me – on recommendations on how to become better equipped to achieve greater mind/body balance.
Expecting the usual harmonious regimen of smoothies, carrot pulp, sprouted whole grains, lean proteins, plenty of coconut and holy basil “Thulsi” water tonic, chakra-realigning tongue-scraping tips and clarinet reed lunches, it was a surprise to be told to seek a more profound sense of vitalization and relaxation by playing the hotel’s six hole par 3 course, or billiards, on one of the oldest snooker tables in the world.
It was rather unnerving arriving and a turbaned gentleman asking me how old I thought his balls were. Having blown the dust off them before inviting me to handle them the revered objects.
At dinner my meal plan was prescribed. My waiter confessed to be a bodybuilder. Never have I been served by someone so mindful of my bowels. So concerned with my kidney function and prostate health, my “Vata” (wind), “Pitta” (bile) and general humors (“dosas”). Ayuraveda (meaning “knowledge of life”) is two millennial old. Its origins are the sixth century Athatvaveda texts comprising a hundred hymns and incantations sung as magical cures
for disease.
Executive Chef, Calcutta-born Sandeep Biswas has attained mastery of the way of Mung and gained absolute comprehension of the split yellow lentil. His knowledge of pulses is profound and supreme. His kitchen brigade prepares menus for an ailment-free existence. He has just launched an Ayurvedic cookery app.
“Your body is made up of three elements –earth , wind and fire. Every dosha has a
preferred therapeutic cooking style and the most beneficial favored ingredients,” he said, introducing me to his signature “Sattvic” menu devised to gain higher consciousness, and free you from bloat. He gave the impression of a man who knew how to shave an almond.
“Sattvic foods are calming foods abundant in Prana- the Life Force. My dishes will raise your vibrational levels. Sattvic means pure essence. It’s the purest diet for a consciously spiritual and healthy life. True health is a peaceful mind
in control of a fit body. Many Sattvic foods are sun foods. Organic, fresh and ripe.”
Having recommended some life-extending neem leaves, some life-affirming legumes and fenugreek too control dandruff and lice infestation, chef disappeared leaving the waiter to execute a textbook Indian head wobble suggesting that my meals would have plenty of joint-and-cartilage friendly turmeric and be high on hing (asfoetida).
My waiter also offered guidance to my “agni”
(digestive powers), recommending certain combination spices for optimal nutrient absorption. His complexion testified to frequent sesame oil facials and his teeth a testament to betel nut abstention.
“Your digestive juices must be at peace. Your tummy must sing like the Upanishads! Your stomach must chant the mantra,” Happy Digestion! Happy Digestion!” he said without saying it. I got the message. It transcended speech. He approved the goat masala and jasmine rice with the complements of the chef. “Avoid banana and milk. That impedes salivary production, wreaks intestinal havoc which leads to discomfort and poor sleep. Always avoid aubergine and cucumber.” His wide smile implied that if he could not guarantee I’d become a unique paradigm of beauty, chef would certainly do his best to minimize un-neutralized stomach acid.

Chardonnay, excluding government taxes; and mandatory contribution to the country’s Women’s Empowerment Fund.
I met one lady- a fellow Kaptha-dominant guest - who had successfully mortified her ego annihilated the self and sweated out much intense Karmic sickness. She claimed to have transformed unilateral passion into universal adoration.
Thanks to Tibetan “ila” treatments, various body and mind healing sessions and the administration of highly-priced decoctions via various, time-honored routes, she said she had become more accepting. Even of sitar music, and the lack of WiFi. The honey enemas had clearly worked for her. Her pathways had been miraculously cleansed. She had been converted to miscellaneous vegetarian chutneys.
After a few days I too found serenity through my room’s spelt chaff-filled pillows, vetiver (khus) bath salts and better brain wave coherence and inner resilience through sunbathing and sleeping a lot and well without any gastric discomfort, distress or unease.
All the New Age pampering, ancient pummeling and functional super-food
fine dining miraculously cleared the mind and belly of chatter until I checked out and was delayed seven hours at the airport. And began to lose faith in my mantra and the calming efficacy of Mr Biswas’s cure-all ghee-saute ed cumin seeds and slow roasted cauliflower. My stomach began to grumble and my dosha wasn’t far behind.

ROME Flock to The Eternal City of

Flock to this Eternal City, this ‘urbs sacra’ for the 2025 Jubilee Year of Hope, the first ordinary jubilee since the Great Jubilee of 2000. Celebrate a special year of grace as the jubilee begins just before Christmas to end on the Epiphany next year. For the papacy gives the Jubilee a spiritual meaning in granting the remission of the temporal punishment of sins for all pilgrims who visit Rome during this specific year. The most exciting and wellknown rite is the opening of the Holy Door (open only during the jubilee year): a symbolic re-enactment of the opening of the gates of Heaven. The four main doors to open are at the four major papal basilicas: St. Peter, St. John Lateran, St. Paul outside the Walls and St. Maria Maggiore.
For a really special treat, like a honeymoon or a wedding anniversary come to Bvlgari Hotel Roma (www.bulgarihotels.com/ it_IT/rome). It only opened last year, set on 7 floors right beside the river Tiber and the famous Ancient Roman landmarks of Augustus’s mausoleum and Ara Pacis. It’s close to the luxury shopping district that of course includes the Bvlgari store. The entrance runs under a large portico of classic travertine colonnades and vast canvas sunscreens that hide giant vivacious banana plants. A 2nd century statue of Augustus adorns the entrance and the décor is magnificent with Murano glass, framed photos of celebrities and walnut wood throughout. I indulged gloriously in the luxurious pool and serene sanctuary-like spa. Of the 110 rooms and suites mine had 7 different pillows on offer (from the aloe vera or lavender to the spelt, buckwheat or millet) and a divine marble bathroom. The staff, with their motto “veritas tibi et alteris” (“truth to yourself and others”), are telepathically attentive in their golden uniforms. No wonder Virtuoso awarded it Best Hotel in the World 2024.
La Terrazza, the rosemary, thyme and sage scented rooftop terrace bar, has smart cabanas and a true panoramic view of Rome, Bulgari’s birthplace. Beneath is the hotel’s Niko Romito restaurant (www.bulgarihotels. com/en_US/rome/dining/il-ristorante-niko-romito). Here I walked, to ambiance music, down an uber-cool runway-cum-tunnel to the lengthy restaurant. With its gorgeous autumnal colors, I sat on a long orange velvet banquette, beneath a coffered ceiling and before a wooden lacquer backdrop. As the chef declares in the menu his “sophisticated ingredients are further fine-
tuned by the touch of simplicity. Humble ingredients, ennobled by technique ... clear-cut light fare dishes where flavor builds up then explodes”. So opulent and luxuriant. Such a special treat.
Nearby just off Piazza dei Popolo, for a seasonal weekend Bloody Brunch, in the ‘Artist’s District, is Bar Locarno (www.hotellocarno. com/it/cocktails-dining) where neighbor Fellini once frequented. It has Liberty and Art Nouveau décor with original Tiffany lights and 1920s music. Though now part of a hotel, it felt like its former house, set in a courtyard with ‘kentia’ palm fronds and birds darting and twittering. Here I had a delicious lunch consisting of beef carpaccio, roasted artichokes, mustard and honey alongside a Caesar salad.
It’s so fascinating to watch today’s Romans play out their daily dramas. So exuberant, bold and egoistic as immaculate policemen delivering instructions or garrulous shopkeepers gesticulating exaggeratedly. I loved the juxtaposition of nuns, ice cream shops, children irreverently kicking footballs against church walls and vespas zooming past restaurant tables, amongst offices and shops, spilling out onto the streets.
To rest from all the shops on Via Corso I ate nearby at one of my
favorite Roman restaurants: Le Terrazze at Singer Palace Hotel’s (www.singerpalacehotel.com/ rooftop-restaurant) Here on the rooftop, I was surrounded by elegance and luxury: a neutral décor with white canopies, heaters and a gorgeous olive tree. I looked appreciatively over Rome’s monuments and churches. “We present you the colors and perfumes of our Italy” stated the menu and certainly each recipe offered its own origin and seasonality. The staff were charming and attentive and after my ‘benvenuti’ (amuse bouche) I loved my Ravioli di ricotta e spinaci, followed by a Filetto di Manzo and seasonal vegetables pared with a glass of Marjun Pinot Noir.

What a city, so rich in history with emperors and popes. Around every corner there’s always a surprise. Colonnades, cupolas and cobbled streets. It’s what makes Rome for me so alluring and exciting. Seven hills alive with fountains, mosaics, talking statues, aqueducts and obelisks. And ancient Roman ruins of marble and bricks dotted throughout. Much more focused are the crowds who typically concentrate on the major sites: Piazza Navona, Spanish Steps, Trevi Fountain, St.
Peter’s, Vatican Museum (housing the Sistine Chapel) as well as the Ancient Roman monuments: the Pantheon, still, after 2000 years, the world’s largest unreinforced concrete dome the Colosseum and the Forum.
Perfect, when visiting the latter, for a Sunday buffet lunch is Ristorante Roof Garden (www.ristoranteroofgardenforum. it/en/). It’s all about the exquisite view, on the 5th floor of Hotel Forum perched proudly, beside the campanile of a former convent, in prime position over the Roman ruins of the Forum. Here I sat beside potted plants and overlooked vibrant pine trees. The restaurant’s one long spacious gallery punctuated with ancient lanterns and immaculate waiters sporting bow ties and colored jackets. As with all buffets I ate too much: the ideal restoration after a morning of site-seeing.

It’s fabulously central, right by the Capitoline Hill, and only opened this year. The intimate, informal reception lies between the breakfast room and the lounge dotted with art books, lime green seats and red patterned rugs. Of the 84 rooms (with rates from E300 / US $320) mine was elegant and contemporary with Fornasetti wallpaper and a Carrara marble bathroom. There’s an outdoor lounge and a basement Turkish steam bath where I chilled out. You can’t beat a brand-new hotel. It all felt so fresh and contemporary.
The hotel and its restaurant, Modius on the Roof, is set over Porticus Minucia that encompassed four temples of Largo Argentina where Julius Caesar met his “Et tu Brute” downfall. Here the Roman people gathered to collect the grain given by the state: hence Modius meaning a bushel. The 8th floor restaurant looked inspiringly around Rome and straight across at the Vittoriano and Campidoglio. Tucked in, amongst jasmin and a mandarin tree, I loved my risotto with radicchio, walnuts and gorgonzola, followed by a filetto with celery, turnip and Cardoncelli mushrooms pared with Petit Verdot red wine.
In Rome, architecture is not simply a matter of stone and mortar. It’s a true reflection of the city’s rich and storied past, a testament to the enduring creativity and ingenuity of the human spirit. It
signifies a critical part of the city’s artistic development of the Western World with the Roman empire, Early Christendom, the capital of the Papacy, the cradle of the Baroque and then Neo-Classicism. The larger-than-life churches, dwarfing and daunting, summon all within. They reassert Ancient Rome’s massive, masculine, monumental scale of magnificence. The counter-reformation, when Baroque came into being, insisted that religious art should play on the emotions of the believer. I loved the stunning Daphne and Apollo statue in the Borghese Gallery where she turns into tree from his touching her. Yes it’s a myth but it shows the potential of a miracle.
Directly in front of the Termini Station before catching my train to the airport I had lunch at Senses restaurant at Palazzo Montemartini Rome, a Radisson Collection Hotel (www.radissonhotels.com/enus/hotels/radisson-collection-rome-palazzo-montemartini). This grand, solid hall felt so uplifting with its large statement central fountain of water cascading from its high ceiling. Sturdy Ionic columns and Tuscan arches surround forty tables though I sat out in the large courtyard that’s home to Rome’s oldest Servian Wall built with tufa blocks. After my mimosa (prosecco with orange juice) I had a wonderfully fresh trancio di spigola (sea bass). Indeed Senses lives up to its name with the food and décor having such a positive effect.
For general tips: the best guidebooks are DK Eyewitness Travel and, for more indepth the Blue Guide. Georgina Masson’s Companion has also stood the test of time. Italians don’t generally expect tips. For speed and cost I recommend taking the Leonardo Express train from the airport to the center. It leaves every 15 minutes, takes 30 minutes and costs E28 for a return ticket. Having superstitiously thrown my euro backwards into the Trevi fountain I, for one, will be returning whenever but soon.

Forming part of the Kafue National Park in Zambia, Chisa Busanga Camp sits in the northern part of the park and is exclusivity at its finest. With only four nests paying homage to the weaver birds of Busanga Plains, guests are guaranteed the most exceptional service from the staff here. Arriving at the Busanga airstrip on a Sunday afternoon with ProCharter, guide Harry and spotter Robby decide to embark on a game drive en route to camp.
We encounter the very shy oribi, a small antelope who dashes off into the distance. Having read about the different prides of lions at Busanga Plains, I ask Harry about them, and he is keen to tell me. “We have the Main Pride, The Papyrus Pride, The Kasonso Pride, The Vega & Savannah Pride, Killing Machine, The Princess Pride, Yaya’s Pride, Mohawk and Alex. There are so many prides it’s hard to keep up, and guests at Chisa Busanga Camp will most likely set eyes on a pride of lions during their stay.”
When Green Safaris Managing Director and Founder Vincent Kouwenhoven initially visited Busanga Plains, the remote wilderness truly captured his heart, and the decision to build Chisa Busanga Camp materialized once he put pen to paper by sketching his vision for what is clearly an architectural marvel. “The architecture of Chisa Busanga Camp is truly remarkable,” Vincent tells me. “It was the weaver bird nests, which particularly caught my eye in this area of the Busanga plains that inspired me to create human sized versions. The camp has just four of these elevated ‘Nest’ rooms that I wanted to blend seamlessly into the surrounding environment and give guests a bird’s eye view from their own ‘nests’. These trailblazing structures were designed/ sketched by myself and brought to life by architect Bert Meerstadt to resemble giant bird nests, with a large circular opening at the front to maximize the views over the Busanga Plains and allow wildlife to pass through the camp undisturbed.”
Chisa Busanga Camp opened in June 2021 and celebrates the natural and cultural heritage of this stunning location. It was specifically built in the Busanga Plains to offer guests a unique experience in one of Zambia’s most beautiful and wildlife-rich areas that had little to no visitors. Situated in a tiny grassy island surrounded by seasonal floodplains and dotted with date palms, Chisa’s setting was the perfect locale to build something unique and special. Sustainably built, the camp runs completely on solar power and has a composting and
recycling process. Chisa is the local Nyanja word for ‘birds nest’, an ideal moniker for the camp’s name.
The challenge to create a nonintrusive camp that doesn’t detract from the local ecosystem but still has an absolute wow-factor was fraught with challenges. To minimize impact on the local ecology and wildlife, and survive the floods from November to April, the unique design of the Nest rooms were carefully integrated into the existing trees, albeit four meters off the ground. Local artisans used fallen twigs, vines, and sticks from the immediate area to weave around each framework, hiding non-natural elements like structural timbers, electrical wires and water pipes.
The interior design incorporates natural elements and textures to reflect the surrounding environment. Nests are lined with sustainably made canvas, the handmade chandeliers from Katundu in Malawi form a focal point, comprising strings of seeds, adding a subtle nod to the weaver bird theme. Efficient use of space was achieved through careful planning and innovative design along with Vincent’s architect’s expertise. Each Nest room includes a queen-sized bed, an indoor-outdoor shower, and a cozy seating nook, all oriented around the most amazing
central view over the floodplains. Light and airiness were prioritized in the design through the large circular openings in each Nest, which placed strategically allow natural light to flood the space. The elevated position of the rooms also contributes to the light and airy feel, providing guests with those all-important panoramic views of the surrounding Busanga plains.
The uniqueness of Chisa Busanga Camp makes it a special place to visit, if not for its groundbreaking biomorphic design, but also for its minimal environmental impact.
As the only camp in the Busanga Plains to operate Silent Safaris with electric game drive vehicles, Chisa offers a truly immersive low impact wildlife experience. What struck me is the exclusivity of the location, the incredible architecture and the hospitable team in camp. With plentiful game, even from my birds nest, a myriad of species can be seen in and around camp. Not forgetting the famous lions of Busanga Plains, and with just five lodges in this vast area, guests will be guaranteed to encounter many of the current 70 lions on a game drive without a single other vehicle in sight.
Experiencing a game drive in Busanga Plains is completely different and very exciting. Not only is the
terrain vastly distinct due to the floodplains, but the wildlife here is iconic. Encountering a number of the lion prides during my 3-night stay at Chisa Busanga Camp, it’s clear that these are no normal lions – they are muscular since they have to survive during the rainy season by swimming through the water! Highlights include loads of hippos, wildebeest coming to drink at the waterhole in front of camp, a pair of crowned cranes, and the cutest lion cubs. There is something enchanting about the wine country, where rolling vineyards and golden sunsets seem to slow down time. When my husband, Steve, and I decided to visit Healdsburg, California, we were seeking not just a destination but an experience—a blend of luxury, charm, and indulgence. Hotel Les Mars, a Relais & Châteaux property, promised exactly that, and it delivered in ways we could not have imagined.
First Impressions: Old-World Elegance
From the moment we stepped into Hotel Les Mars, we were transported to another era. The hotel exudes the kind of old-world elegance that is rare to find these days, with its French-inspired architecture, exquisite woodwork, and crystal chandeliers that cast a soft and welcoming glow in the lobby. The staff greeted us with warm smiles as they checked us in. The atmosphere was intimate and serene, a world apart from the hustle and bustle of daily life. It felt like a boutique chateau tucked away in the French countryside rather than a hotel in the heart of Healdsburg. Our room was nothing short of spectacular. Designed with European sophistication in mind, it featured antique furniture, a canopy bed draped in the finest linens, and an elegant marble fireplace that offered warmth from the chill outside. The bathroom was equally luxurious, with Italian marble, a hydrotherapy deep soaking tub, and plush robes.
Exploring Healdsburg: A Wine Lover’s Paradise
After settling in, we ventured out to explore Healdsburg, a picturesque town
known for its world-class wineries and farm-to-table dining. Hotel Les Mars is ideally situated just steps away from the town’s central plaza, where boutique shops, art galleries, and tasting rooms abound.
Our first stop was the Spirit Bar, located inside the Hotel Healdsburg’s lobby just around the corner from Hotel Les Mars. Steve ordered his standard old-fashioned, and I sipped on a slightly sweet lemon drop martini. After the tasty cocktails, we walked out of the hotel and over to Dry Creek Kitchen for a delicious multi-course dinner.
A Quiet Evening After a Delicious Dinner
Back at Hotel Les Mars, we donned our robes and sat by the fire, appreciating the tiny details that made our stay feel so special. The turn-down service included handmade chocolates and a card with the next day’s weather forecast, which I found delightfully quaint.

One of my favorite parts of staying at Hotel Les Mars was the leisurely mornings. Breakfast, delivered to our room, arrived on a silver tray, complete with freshly baked croissants, seasonal
fruit, and French-pressed coffee. We sat wrapped in our robes, bathing in the warmth of the fire while we took our time enjoying the simple yet luxurious spread.
Feeling rejuvenated, we got dressed and ready for the day and then left to indulge in more of Sonoma County’s incredible wine. We spent two hours in the cave at Roth Estate sipping on wines made from grapes originating from the Russian River and Alexander Valleys.

On our second night, we dined at another fabulous place located on the Healdsburg Plaza,
Goodnight’s Prime Steak and Spirits. Dining at any of the restaurants on the plaza makes for an effortless evening. We enjoyed cocktails and more decadent Sonoma County wine along with our steak dinner and then joyfully walked back to our room.
As we packed up to leave, I found myself already planning our next visit. Hotel Les Mars is not just a destination—it is an experience, one that lingers in your heart long after you have left. For anyone seeking a blend of romance, luxury, and the unparalleled beauty of Sonoma County wine country, Hotel Les Mars makes the perfect luxurious base camp to experience the area.
A Six Night SOJOURN in SARDINIA

What fun sometimes merely to fly and flop. It is just 20 minutes from a small airport like Olbia. To see out over a wide expanse and lie under the great globe of the unblemished sky that’s simply serene. To witness the mesmerically azure blue sea along miles upon miles of untrammeled coastline. This ‘endless island’ is for tourists all about the stunning blue water the granite cliffs and its caves most numerous per square mile on earth. It’s in the very heart of the Mediterranean, the 2nd largest island after Sicily. Her population is outnumbered by sheep 3:1. It brought us the words sardine (where once they were plentiful) and sardonic (meaning Sardinia). The four moors on the flag of Sardinia (as opposed to just one on Corsica’s) represent either the four Moorish princes defeated in battle or four Sardinian victories. Indeed whilst invaded and exploited the island never was conquered.
For Sardinia is an exotic wild outpost, a frontier landscape isolated beyond its granite boulders. A bathing paradise of that unsung glory one finds amongst the quieter regions of the Mediterranean. This Costa Smeralda, this ‘emerald coast’, was introduced by Aga Khan to become the 1960s playground of the famous and fashionable. But it’s different from Biarritz, Mustique, Acapulco, or St. Tropez and, after July and August, it passes back into the hands of her inhabitants and nature lovers.
I came first to Golfo Aranci, a refreshingly low-rise ex-fishing village with its backdrop of hills and sea views across to islands. At Gabbiano Azzurro Hotel and Suites (www.hotelgabbianoazzurro.com/en) I stayed, an elegant and refined, independent 4-star hotel. Despite what DH Lawrence says in his legendary 1921 novel ’Sea and Sardinia’ things have changed and there’s now a plethora of seagulls such that Gabbiano Azzurro has adopted the name ‘blue seagull’.
There’s something wonderfully authentic about family-owned hotels. Ones where they live ‘in situ’ as the Datome family has been here for 57 years. It has real heart and became a true home for me too with the infectious warmth of the staff who went the extra mile with their delicate little generosities of beach bags and restaurant fleeces. Open during the April-October season and built in the 1960s, it has soft, yellow de Chirico-esque alcoves. In the bright, airy foyer are ceramic artifacts and nautical sculptures, an inviting white piano, vivacious banana plants, and white sofas with traditional turquoise needlework.
The rooms are timeless and tasteful, fresh, airy and spacious. They are uber-cool and on-trend with their earthy taupe colorings. All have private balconies overlooking either the sea or the village. All have inspirational sandstone bathrooms with the hotel’s own-brand local myrtle-scented products renowned for their
anti-inflammatory and healing properties. My suite came with its own jacuzzi-cum-mini pool on its generous-sized top-floor terrace. My massage on this roof was sublime. Such an added dimension to be ‘en plein air’ with heaven unimpeded and the lapping rhythmic waves taking me further into paradise. Inside had a beach look with aquamarine tones of sea and sky. Each room had fresh orchids, painted driftwood lampshades, and tree-trunk tables. Out from my shutters and glass-screened veranda, I saw both sunrise and sunset. Dawn brought a chorus of seagulls and an orchestra of activity as fishing boats chugged, catamarans bobbed and yachts urged on their prows.
Down a myrtle, mimosa, and oleander-scented walkway is Blu Restaurant, with wooden rotating fans and clusters of wicker lampshades blowing breezily. Such a presentation of that wonderful Italian tradition and such artistry from such simple ingredients. I loved my branzino (sea bass) baked under salt, my salad of julienned carrots, and my Sa Fregula Nera, Sardinia’s unique pasta dish, similar to couscous, worked with the fingertips using water and salt. On the hotel’s private white sandy beach, very much the prime spot, a forest of tasseled beach parasols, tickled by the breeze, fluttered like balletic swans across their lake. For, with its shallowest of waters, came the calming and gradual process of wading to the deeper water, perfect for parents and their toddlers, as I trod,
like comfy slippers, on rock-free ripples of the sandy seabed shaped like the lulling waves above.
I joined Oltremare Escursioni (www. oltremareescursioni.it) for an evening trip (that included aperitifs on board and a chance for a dip) with a group of a dozen to watch a community of bottlenose dolphins feed near Figarolo Island. The 4-strong staff claims a 95% chance of success as they strain to point out the iconic fish who await the calm before leaping with grace, power, and speed to show their shiny selves. How mesmerizing
Across the gulf I came next to Cala Cuncheddi (https://vretreats.com/ en/cala-cuncheddi/), a 4-star hotel meaning ‘shell cove’, renovated in 2014 and part of the Italian hotel collection VRetreats. So captivating, such a gem positioned in the Capo Ceraso promontory, with panoramic views of the Tyrrhenian Sea and the legendary micro-kingdom of Tavarola. It was wonderful also to look expansively across the gulf that offered every shade of blue before dusk. From the sea, this sandstone hotel reminded me of Corot while the backdrop is pure Cezanne as it’s immersed amongst ancient olive trees in the Mediterranean maquis or underbrush: scrub consisting of cistus, lentisk, juniper, arbutus, and myrtle. I loved my walks past the hotel’s signature grey and white parasols and past the herons and pomegranate trees to the local bays and beaches. My head-to-toe spa treatment was set in the peaceful, zen-like simple natural décor of the wellness zone with its bikini and kaftan boutique. It felt like floating on water, with a rare yet effective belly massage, helped me unwind deeper. My life was restored with which to step outside into life and its activities. Some cycle, some trek, and most amble down to sunbathe and bathe where the beach, beneath the hotel, is perfect for swimming. The hotel’s outdoor pool with its single olive tree is the central feature and feels very tranquil. The wild-flower landscaping is sublime with its panoply of ferns, foliage, and shrubs. Tamed wilderness with gorgeous paving stones. A flourishing of native plants sweetening the air with their scent. Everywhere is very spaciously laid out with a sofa here,
and a rocking chair there. Nowhere felt crowded. Inside, the airy foyer resembled a contemporary art gallery exhibiting its animal masks, sea-inspired artifacts, and its mosaic flooring sparkling like the sun upon the sea.
Most of the 79 rooms and 3 suites (with double rooms starting from £211 / €250 / $270) have patios and charming Moorish verandas with oak railings embracing nature’s curves. Most have a sea view and some overlook the garden. The rooms are stylish yet simple, an art in itself, decorated in calming neutral tones with little adornment, as it’s all about the view and the nature beyond.
Of the three restaurants, I had breakfast at Asarena (meaning ‘to the sand’) and confident dinner menus at both Zinnibiri (‘juniper’) and Asumari (‘to the water’). The former has a stunning setting as six tables sit under bamboo shelters and wicker lanterns. All so natural in the open air. So rustic and yet so stylish. The latter has a lovely basketry display and here I explored all things local: Vermentino white wine, Pecorino cheese, and a Myrto liqueur.
Like DH Lawrence I too loved a 6-day Sardinian sojourn and assuredly, as he famously said, “this land resembles no other place”. For a paradise it always was, a land of outstanding beauty, hard, strong, wild, and ever mysterious.

AMAKHALA GAME RESERVE

Situated in the malaria-free Eastern Cape province of South Africa, Amakhala Game Reserve comprises 35,000 acres of wilderness and is home to a variety of lodges catering to different audiences. What was once a sheep and cattle farm became privatized in 1999, making way for tourism and conservation. Upscale Living magazine visited the top three 5-star lodges namely Bush Lodge, Bukela Game Lodge and Woodbury Manor.
Bush Lodge
Rustic luxury with a modern twist, Bush Lodge can accommodate up to 18 guests in eight tented suites. Wooden floors pave the way to a king-sized mosquito-net draped bed covered in soft white bedding. We are staying in the spacious family suite, which is cleverly positioned at the end of a winding gravel path, ensuring privacy and exclusivity.
Arriving in time for lunch, we are shown to our table by our host and the view over the watering hole allows us to spot any potential wildlife coming in for a drink. Today on the menu, guests are served kudu burgers with fries and fruit salad for dessert.
The private plunge pool beckons, and the water is a very pleasant temperature. Much to our delight, we have wildlife roaming right in front of our tented suite –a warthog and piglets are seen from our deck following a roll in the mud, zebras are feeding on the greenery and right above us, two lesser striped swallows are busy constructing a house for themselves and their chicks. Ranger Roan meets us after lunch to take us on our afternoon game drive. With a maximum of six guests per game drive vehicle, everyone is guaranteed a window seat. He goes in search of cheetah, who seem to favor the outskirts of the reserve, making it challenging to find them. Our game drive in the morning yields the most spectacular male lion, who is keeping close tabs on a female that is lying fast asleep in the shade next to him.
Bukela Game Lodge
Set at the top of a hidden valley with sweeping views over the Sundays River Valley, Bukela Game Lodge offers two accommodation options – four suites and ten luxury safari tents. Connected by wooden walkways, the main area is inviting with plush loungers and a friendly barista who will conjure up any drink you may
wish to indulge in. Lunch is a veritable feast of lamb chops and fries, and lamingtons or fruit salad for dessert.
We are staying in tented suite number 13, which has the most incredible vistas of the surrounding wilderness, and it’s not uncommon to spot wildlife from the comfort of your room or to see a bird perched in a tree outside your suite. Open the doors to your private patio and enjoy the unpolluted bush air.
Time has come for our afternoon game drive and ranger Ryan rounds up all the guests that will be going on safari. Heading out into the reserve, we spot impala, kudu, vervet monkeys, zebra, blesbok, hartebeest and the rare sighting of an olive pigeon. Our morning game drive has everyone clamoring for their cameras when we happen upon a herd of elephants with a tiny baby. It’s fascinating to watch these youngsters, and their inability to manage their trunks properly never ceases to amuse safarigoers.
Woodbury Manor
Sole use Woodbury Manor is the ideal place for multi-generational families or friends wanting to take a break together. With four bedrooms, each with their own en-suite bathroom and private deck, groups of up to eight guests can delight in what this home away from home has to offer.
Located on the eastern side of Amakhala at the edge of a rolling grassland plateau, Woodbury Manor comes with a private chef who will be at hand to ensure that guests never go hungry. Interiors are the handiwork of the incredibly talented Tracy Mills, who has incorporated colors of the encompassing bush.
A private guide will tailor-make the schedule to fit in with the guests’ schedules, and traversing in the Amakhala Game Reserve, wildlife is never far away. Seeing cheetah from the vantage point of a game drive vehicle is a wonderful privilege, and coming to grips with the fact that they are the fastest land animal makes it even more special.

An unwavering success story of conservation and eco-tourism, Founders Lodge by Mantis is a beacon of sustainability fueled with a passion for protecting species that are set to thrive. When founder and CEO of the Mantis Collection started the rewilding process in the Eastern Cape, his home was the 1940s farmhouse for two decades that today is the spectacular Founders Lodge by Mantis.
Driving towards a hilltop, five striking bluegum trees are clearly noticeable. They set the scene for what is about to unfold at the end of a gravel road, and stopping at the gated entrance, the writing is on the wall, quite literally – Founders Lodge -Where It All Began - by Mantis. This is the legend of what Adrian Gardiner put blood, sweat and tears into. Adrian and his wife, Shirleyanne, have three children –Paul, Murray and Angela, who were all raised with a vested appreciation for wildlife and the conservation thereof.
Disembarking the vehicle, the welcome by management and staff is warm and sincere. My daughter and I are each offered a cool towel and a refreshing drink after which we are shown to our suites. I am staying in the recently built Honeymoon Pod, with marvelous vistas over the property, while my daughter is residing in a Contemporary Suite, with similar views of wildlife coming in for a drink or a graze at the nearby watering hole. The Honeymoon Pod is tucked away in an upstairs corner of the property, and furnishings are warm and modern with a King-sized bed and a private verandah. Four Contemporary Suites were added to the original Manor House and are decorated in hues of yellow and cool greys. There is also the Heritage Suite, the Master Suite, and the renovated Railway Carriage, an ode to train travel of yesteryear but with all of today’s conveniences.
A table has been set in the courtyard for lunch. I choose the delicious beef burger with fries while my daughter opts for the tasty hake and fries. For dessert, we both enjoy the homemade vanilla ice cream, serenaded by Cape Weavers busy constructing their nests in the surrounding trees. Great care and consideration is put into an elevated guest experience, and when it comes to dining, guests will never dine in the same spot during their stay at Founders Lodge by Mantis. Dinner is served in the formal dining room, where a silver service has been laid out for our starters of butternut & thyme ravioli, our main course of pan seared fillet and crème brûlée for dessert. It’s a wonderful surprise
to see where we will be sitting for our next meal, and none of the locations disappoint. The food is sensational, and Head Chef Sbu and his team go to great lengths to ensure that the cuisine being served is top notch.
Founders Lodge by Mantis has many facets when it comes to wildlife immersion, and guests will be thrilled to know that they have definitely come to the right place for that. There are different programs, from Interactive Wildlife Tracks & Signs Experience, Rhino Observation and Monitoring and the only Bear Grylls Survivor Academy Experience on the African continent. A highlight for photographers and guests alike is the sunken photographic hide, which you can access by walking through a 115 ft. tunnel and voilà – at the end of the passage you might just be amazed at what greets you at eye-level. During our stay, we see a warthog quenching his thirst, rhinos having a muddy roll-around, and a shy giraffe deciding whether or not he should take a sip of the water.
The plight for rhino conservation is something that is taken very seriously in the Eastern Cape, and Founders Lodge by Mantis is at the forefront of ensuring the longevity of these near threatened species. With the latest AI innovation, adult rhinos are fitted with Rouxcel Technology ankle bracelets, a monitoring system that sends alerts through an algorithm should there be
abnormal behavior from any of the rhinos. We go in search of Mandy and her calf one afternoon, and seeing mom with her youngster is incredibly special, knowing full well how the numbers have dwindled through poaching. Staying at Founders Lodge by Mantis would be incomplete without going on a game drive. Guides Marthus and Cillié show us the magnificence that is found in the private concession, from the fauna and flora to the incredible wildlife sightings. Favorites include different lion prides with the most gorgeous males, two cheetah brothers, a large herd of elephants with tiny calves, yellow mongoose, a melanistic springbok, a herd of melanistic impalas and the sighting that will hopefully be visible for many decades thanks to the conservation efforts – a white rhino happily grazing in the wild, where they belong.

An Evening of Culinary Discovery at BAROLO GRILL

There’s something magical about dining with someone who shares your appreciation for food, wine, and the backstory of a restaurant or chef. When my daughter-in-law Victoria and I stepped into Barolo Grill, nestled in Denver’s upscale Cherry Creek neighborhood, we knew we were in for an extraordinary experience. With its warm ambiance and focus on Northern Italian Piemontese cuisine, Barolo Grill is more than a restaurant—it’s a portal to Italy shaped by Owner Ryan Fletter, Executive Chef Darrel Truett, and the staff.
Our evening began with cocktails, and mine was a revelation, The Key to Clarity. Crystal clear, it sparkled in a whiskey glass over a large square ice cube. The bartender explained the milk punch technique. She clarified the milk with the mix of rhum agricole, Nonino Moscato Grappa, vanilla, and key lime. This process was as intriguing as the drink itself, which tasted like the lightest, most ethereal key lime pie.
Victoria opted for the Negroni Presto, a ruby-red masterpiece infused with beet CapRock gin, Contratto Vermouth Rosso, and Cynar. Its subtle bitterness balanced perfectly with the rhubarb bitters, setting the tone for the evening.
The Artistry of Antipasti
We began with the Sofflé di Formaggio, a delicate Parmigiano Reggiano soufflé paired with artichoke and black truffle purée. The flavors were exquisite—earthy yet refined, with the truffle offering a whisper of decadence. Accompanied by a glass of Fallegro Gianni Gagliardo 2020 Piemonte, the wine’s delicate floral notes and crisp acidity amplified the soufflé’s richness. Next, we savored the Crudo di Ricciola, a luminous dish of thinly sliced amberjack adorned with kumquat, grapefruit, puffed quinoa, and a touch of osetra caviar. The interplay of citrus
brightness, nutty crunch, and saline caviar was divine. Victoria does not care for fish, but when dining with me, she is compelled to taste each dish. To her surprise, and mine, the Crudo di Ricciola was one of her favorites of the evening. Our third course, the Insalata di Barbabietole, was a vibrant roasted beet salad with whipped goat cheese, pistachios, and Banyuls vinaigrette, beautifully complemented by Esoterra greens. Paired with an Etna Rosato, the wine’s minerality and red fruit notes elevated the earthy sweetness of the beets.
A Symphony of Primi Piatti
For our pasta course, Barolo Grill showcased their mastery with two unforgettable dishes. The Risotto was a study in elegance—seven-year-aged Acquerello Carnaroli rice, butter-poached frog legs, salsa verde, and nasturtium. The Risotto was creamy and luxurious, with the salsa verde adding an herbal brightness.
The Agnolotti del Plin—traditional Piemontese pasta filled with veal and Parmigiano Reggiano, was a comforting embrace of savory perfection. Paired with a glass of Langhe Nebbiolo ‘Batie’ Gianni Gagliardo 2019 Piemonte, the wine’s cherry and cranberry notes harmonized beautifully with the veal’s richness.
The Grandeur of Secondi Piatti
Victoria and I shared two second courses that exemplified Barolo Grill’s ability to balance rustic tradition with refined technique. The Barolo-style braised duck, accompanied by Kalamata olives, roasted potatoes, and seasonal vegetables, was a dish of depth and warmth. The duck was tender, the vegetables perfectly cooked, and the potatoes—crisped in duck fat—were heavenly.
The Bistecca di Manzo, grilled beef tenderloin served with a sweet English pea purée, sautéed
morels, and grilled ramps, was a triumph of seasonal flavors. The tenderloin’s smoky richness paired seamlessly with the Barolo Daniele Conterno 2019 Piemonte, a wine with bright acidity, fine tannins, and hints of cherry and spice.
Dolce Delights
No meal at Barolo Grill is complete without dessert, and we indulged in a quartet of dolce. The Torta di Formaggio, a Castelmagno cheesecake drizzled with lavender honey and toasted hazelnuts, was light yet indulgent. The Panna Cotta, adorned with chocolate sauce and caramel pearls, was a study in silky perfection.
Victoria and I both adored the Crème Brûlée, with its flawless caramelized crust
and creamy custard. But the standout was the Cioccolato, a chocolate olive oil cake paired with chocolate crémeux and freezedried strawberries. The strawberries provided a playful crunch that contrasted beautifully with the cake’s moist richness.
Paired with the desserts, the Moscato d’Asti Vietti 2023 Piemonte brought a delicate sweetness and floral aroma that complemented the lighter desserts, while the Brachetto d’Acqui ‘Pineto’ Marenco 2022 Piemonte, with its berry-forward profile, was the perfect match for the chocolate.
Reflections on Pairing
As we sipped the last of our wines, the sommelier shared a sentiment that stayed with me: “The beauty of a pairing is when the food
and wine are each lifted higher.” That idea echoed throughout our meal. Each pairing, from the Fallegro to the Barolo, amplified the dishes’ flavors, creating moments of discovery and delight.
Dining at Barolo Grill is more than a meal; it’s an immersion into the artistry and heart of Italian cuisine. From the meticulous sourcing of ingredients to the thoughtful wine selections, Ryan Fletter and his team have created a dining experience that bridges the distance between Denver and Piedmont.

An Evening of Culinary Indulgence

On rare occasions, there is a kind of magic that unfolds when fine dining is done right—the ambiance, the flavors, and the attentive service, all under the supervision of Chef David Lawrence, combine to create an unforgettable experience. That is precisely what my husband Steve and I discovered at Goodnights Prime Steak + Spirits, where a multi-course dinner turned into an evening we will be reminiscing about for years to come. Chef David Lawrence, originally from London, creates sits at the kitchen’s helm.
Starting with Sips and Small Bites
The evening began with colorful cocktails and, although simple in appearance, almost too beautiful to drink. However, within moments, their aromas quickly tempted us otherwise.
I started with the Sunset Slinger, a vibrant concoction of Hanson’s vodka, Amaro Nonino, honey, lychee, and a touch of prickly pear bitters, topped with a frothy egg white cap. The drink was a work of art, its delicate balance of sweet and bitter rounded out by a faintly floral raspberry note. Steve, ever the bourbon enthusiast, could not resist the Gravenstein Apple Gang, a warm, autumnal blend of Starward Two-Fold bourbon and tart apple juice, sweetened just enough with brown sugar syrup. The Italicus foam on top added a soft, citrusy-herbal finish that elevated each sip. We exchanged tastes, marveling at how each drink captured a mood—the Sunset Slinger playful and bright, the Apple Gang cozy and refined—perfect for kicking off our evening together.
As we sipped our drinks, the Ahi Tuna Tartare arrived. This dish was as much a feast for the eyes as it was for the palate. Nestled atop creamy avocado and served with crisp sesame
seed tuiles, the tuna was tender and impeccably fresh. Each bite was a harmonious blend of textures and flavors: the crunch of the tuile, the richness of the avocado, and the bright notes of preserved lemon and capers, all tied together by the delicate, umami-laden whiskey barrel-aged shoyu. It was a standout dish that set the tone for the rest of the meal. Next came a shareable plate of fried sunchokes, an unexpected delight. Golden and crispy, the sunchokes were accompanied by serrano peppers, a shower of shaved Parmesan, and a bright, tangy lemon-herb topping. The bagna cauda sauce added an earthy, garlicky depth that we both enjoyed.
Red Wine and the Main Event
When it came time to choose wine, we went straight for the 2019 Laurea by Accendo Cellars, a Napa Valley red that immediately captivated us with its rich, velvety texture and layers of dark fruit and spice. It was the perfect pairing for the pièce de résistance: the ribeye steak.
The steak was an absolute showstopper. Perfectly cooked under the broiler, then seared on the flat top to a juicy medium-rare. It was served with an array of accompaniments that elevated every bite. Four decadent sauces— peppercorn, béarnaise, chimichurri, and a red wine demi-glace—allowed us to customize each taste. On the side, a trio of salts added intrigue: a smoky salt that brought out the meat’s char, a delicate fleur de sel for balance, and a truffle salt that gave an earthy, luxurious finish.
To accompany the steak, we had hollandaise-topped asparagus, a dish so simple yet so exquisite. The spears were tender yet crisp, their grassy flavor enhanced by the creamy, lemony hollandaise. It was a masterclass in how to let high-quality ingredients shine.
A Toast to the Perfect Pairing
As we transitioned to our second wine selection, we could not resist ordering two glasses of the 2018 Chateau St. Jean ‘Cinq Cépages’. This Bordeaux-style blend was beautifully structured, with notes of blackberry, plum, cocoa powder, cassis, and hints of cedar that complemented the steak’s richness and the herbaceous accents of the chimichurri. Between bites of steak and sips of wine, Steve and I found ourselves lingering in conversation, savoring the intimacy of the moment. Goodnights is not just a restaurant—it is the kind of place that invites you to slow down and truly enjoy life’s pleasures.
A Sweet Ending
No meal of this caliber would be complete without dessert and Goodnights delivered with a delicious warm berry crisp topped with vanilla ice cream. The crisp was bursting with the bright, tart flavors of ripe berries, balanced by the buttery, crunch, golden crumble. The ice cream melted slowly over the top, creating the ultimate indulgence with each spoonful.
To pair with our dessert, we indulged in two glasses of NV Presidential 10-Year Tawny Port. Its nutty, caramelized notes and hints of dried fruit made it an ideal match for the crisp, rounding out the evening on a sweet, luxurious note.
Reflections on an Exceptional Evening
As we finished the last sip of port, Steve and I sat back, fully satisfied and completely in awe of the meal we had just experienced. From the expertly crafted cocktails to the unforgettable steak and the sublime dessert, every element of the dinner at Goodnights Prime Steak + Spirits had been thoughtfully curated and executed to perfection.

The visionaries behind it all, Bobby Stuckey, Lachlan Mackinnon-Patterson, Peter Hoglund, and Mark Falcone, have seamlessly combined their expertise to bring a taste of Italy to Union Station. Their stories, intertwined with commitment and ingenuity, reveal a collective mission: to make every guest, including my son, Garrett, and myself, feel at home while savoring the artistry of exceptional food and wine.
A Union of Passion
Stepping into Tavernetta is like catching a train straight to Italy—its aromas, warmth, and energy all mirror the traditions of Italian hospitality. But what truly fuels this celebrated restaurant is the remarkable synergy of its owners, a quartet of dreamers and doers who share a love for culinary excellence and heartfelt service.
It begins with Bobby Stuckey, a man whose journey epitomizes dedication to craft. Raised in Arizona, Bobby’s restaurant career started humbly as a busser but blossomed into a legacy as one of the most decorated Master Sommeliers in America. His time at The Little Nell in Aspen set the stage for excellence, but it was his tenure at Thomas Keller’s French Laundry

that defined his ethos. There, he honed his belief that service wasn’t just about excellence but about making every guest feel at home. It was also there that Bobby crossed paths with his future partner, Lachlan Mackinnon-Patterson—a meeting that would spark a culinary revolution.
Lachlan, a culinary artist in every sense, brings precision and passion to the table. A Top Chef Masters competitor and James Beard Award winner, his journey from The French Laundry to founding Frasca Food and Wine in Boulder reveals his enduring commitment to showcasing the beauty of Italian cuisine. Inspired by the frascas (pizzeria/winebars) of Italy’s Friuli-Venezia Giulia region, Lachlan and Bobby sought to create more than a restaurant—they built a sanctuary of community, flavors, and memories.
Peter Hoglund and Mark Falcone add even more to this powerhouse of talent. Peter’s background in hospitality operations ensures that every detail at Tavernetta sings in harmony. At the same time, Mark, a visionary with Continuum Partners, grounds the project in Denver’s vibrant Union Station neighborhood, where the restaurant’s elegant simplicity feels like a natural extension of the city’s heartbeat.
Together, this team brought Tavernetta to life in 2017, blending their shared histories and diverse expertise into an establishment that resonates with authenticity. At its core is a commitment to gracious hospitality.

Dinner
My son, Garrett, joined me for dinner. Our evening began with a couple of cocktails that set the tone for the meal. I opted for Late for the Train, a delicious, nicely balanced beverage made with Jones House Vodka, grapefruit, lemon, honey, and coconut and garnished with a lovely rose petal. Garrett chose the Batida Amarga, a tropical blend of Ypioca cachaca, cardamaro, passion fruit, condensed milk, and lime. Both drinks were tasty and appetizing, the perfect start to our culinary adventure.
Dinner officially began with a glass of MV Extra Brut, Enfant de la Montagne, Premier Cru, from Chamery, Montagne de Reims. This lovely Champagne sparkled in our glasses as we enjoyed rosemary focaccia and Burrata topped with trapanese pesto, pangratatto, and basil. The focaccia’s toasted crumble added fabulous texture, and the Burra-
ta served with sundried tomatoes and Marcona almonds, was some of the best I have ever had— creamy, rich, and bursting with flavor.
We shared the Fritto Misto next, a delightful medley of prawns, calamari, market fish, and a creamy lemon aioli. The seafood was perfectly crisp and tender, and the aioli provided a tangy, luscious accompaniment. The Pancetta Cotta, a dish of pork belly with Nduja, black garlic, and mache that was wonderfully meaty and indulgent. The pork belly paired perfectly with a glass of J. Hofstatter Pinot Noir Meczan 2022, Vigneti delle Dolomiti, Alto Adige. The wine’s fruit-forward notes balanced the richness of the dish beautifully.
One of the highlights of the evening was the Crudo made with hamachi, aqua pazza, fennel, olive, and Calabrian chili. The fish was incredibly fresh and clean, with gentle spice and a pleasant saltiness from the olives. It was a dish that epitomized simplicity and elegance.
For the Primi course, we enjoyed two standout pasta dishes. The Capunti featured braised rabbit, English peas, and smoked ricotta salata, creating a hearty and deeply satisfying dish. The Tagliatelle with Maine lobster, Calabrian chili, preserved tomato, and celery was equally rich and flavorful, the sweet lobster perfectly balanced by the chili’s mild heat.
The Secondi course was a masterclass in Italian cuisine. The Agnello, a dish of lamb loin with nettle sformato, olive, and pistachio, was exceptionally tender and bursting with earthy flavors. Meanwhile, the Manzo, a New York strip with pesto calabrese and ramps, was succulent and perfectly cooked, the pesto adding a vibrant, herbaceous note to the dish.
By the time dessert arrived, we were pleasantly full but couldn’t resist sampling both offerings. The Panna Cotta served with white chocolate, strawberry, and rhubarb sherbet, was light and refreshing—a delightful palate cleanser. The Rotolo Tropicale, a vanilla cake with ricotta, passion fruit, pineapple, and sweet cream gelato, was equally enticing, its tropical flavors perfectly balanced and not overly sweet.
The meal, service, and atmosphere at Tavernetta were nothing short of extraordinary. Enjoying a fabulous dinner with my son and watching him embrace each dish with curiosity and enthusiasm was a reminder of how food has the power to connect us—not just to a place, but to each other.
ROTH ESTATE
Exploring the Art of Winemaking

Roth Estate has undergone quite a transformation over the years. Initially produced with a focus on volume, Roth wines were sold primarily to wholesale markets. This earlier phase of the winery’s history allowed it to establish a foothold in the industry, but its focus shifted significantly when the Foley Family Wines group acquired it. Under Foley’s ownership, Roth transitioned to a more premium approach, emphasizing small-lot, high-quality wines that reflect the unique terroirs of Sonoma County, particularly the Alexander Valley and Russian River Valley.
The Vodka Connection
In its earlier days, Roth Estate also ventured into spirits by producing vodka. This endeavor was an exciting chapter in the winery’s history, as the vodka was made from wine grapes rather than traditional grains or potatoes. The use of wine grapes for vodka production resulted in a smoother, fruitier spirit with a unique character—a reflection of Roth’s innovative spirit at the time. However, the production of vodka has since ceased as the winery pivoted to focus entirely on crafting fine wines.
The Caves at Roth Estate
The brick caves at Roth Estate are a highlight of the winery, offering guests an immersive journey into the heart of winemaking. These caves, built into the hillside, are both functional and striking, serving as the perfect environment for aging wine while creating an unforgettable tasting experience.
Design and Ambiance
The brick-lined walls give the caves a rustic yet refined feel, blending old-world charm with modern sophistication. The warm, reddish hues of the bricks contrast beautifully with the dim lighting that filters through the tunnels. The ambiance is serene.
Functionality
The caves are more than just a visual treat—they play a critical role in the winemaking process. The naturally cool and stable conditions within the caves are ideal for aging wine in barrels, helping to maintain consistency in temperature and humidity. This controlled environment allows the wine to develop its complexity and balance over time.
Tasting Experience
The caves also serve as a venue for exclusive tastings. Here, guests sit at elegantly set tables or stand among rows of French and American oak barrels, surrounded by the earthy aroma of aging wine.
Our Cave Tasting at Roth Estate
My husband, Steve, and I were excited as we approached Roth Estate. I have previously enjoyed wine tastings at several of the other Foley Family Wineries, and the two of us had enjoyed a cave tasting at Lancaster Estate the day before. Our guide for the day welcomed us warmly and led us to the estate’s famed wine caves. Steve and I discussed the difference between the Lancaster caves and the Roth caves and came to the joint conclusion that the caves at each estate were stunning in different ways.
The Pinot Gris: A Symphony of Brightness and Creaminess
Our first tasting was the 2022 Pinot Gris from the Russian River Valley. Our tasting guide passionately described the journey of this wine. This white wine was aged for five months in neutral French oak before being finished in stainless steel.
I swirled the wine in my glass, noticing how the oak treatment had transformed the wine’s texture. The viscosity was slightly thicker, giving it a creamy mouthfeel while still maintaining a crisp acidity. Each sip was a melody of tropical notes, with pineapple taking center stage.
Our guide explained how the oak aging tempers the malic acid, creating a softer profile. Yet, the wine retained a lively acidity that balanced its creamy texture beautifully—a testament to the winemaker’s finesse. Our tasting was paired with a delicious cheese plate
with triple crèam French brie, a white cheddar with espresso rind, and mild goat gouda. Marcona almonds from Spain, poached in olive oil and sea salt, accompanied the cheese, along with dried cherries, Turkish apricots, rosemary and sea salt crackers, and a dollop of fig jam.
The Elegance of the 2022 Chardonnay
Next up was the 2022 Chardonnay, also from the Russian River Valley. This wine was aged for nine months in French oak, with 30% of the barrels being new. Made entirely from chardonnay grapes, it was a classic representation of the varietal with a Roth Estate twist.
As I took my first sip, flavors of ripe apple, pear, cantaloupe, and a hint of vanilla danced across my palate. The influence of the oak aging was evident but not overpowering, lending a richness that balanced the wine’s bright fruit character. A subtle nuttiness added depth to the finish.
The Unique Sauvignon Gris
Steve and I were excited to taste the sauvignon
gris, a propriety white wine. The wine’s acidity comes from the 72% sauvignon blanc and its body from 28%the pinot gris. This wine is typically only found in Bordeaux, Chili, and at Foley’s Chalkhill and Roth wineries. Small amounts, generally 2%, of sauvignon gris can be found at a scattered number of other wineries in the Sonoma and Napa valleys.
The 2021 Malbec: A Juicy Delight
The 2021 Malbec was a blend of 85% Malbec, 10% Cabernet Sauvignon, and 5% Petit Verdot, aged for 20 months in 75% new French and American oak. Juicy, fruit-forward, and bursting with flavors reminiscent of a freshly baked blueberry muffin, it was a delightful surprise. The extended aging process had given the wine a luscious mouthfeel, while the careful blending added complexity.
The Grande Finale: 2019 Reserve Red Wine
Our tasting concluded with Roth Estate’s 2019 Reserve Red Wine from Alexander Valley. This
Bordeaux-style blend, comprising 71% Cabernet Sauvignon, 23% Merlot, and 6% Petit Verdot, was a true masterpiece. It was aged for 20 months in 85% new French and American oak and was a wine crafted for savoring. Steve took a sip and leaned back with a smile on his face. The wine was bold yet refined, with layers of black currant, plum, and a touch of spice unfolding with each sip. The tannins were present yet velvety.
A Day to Remember
As our tasting concluded, Steve and I found ourselves lingering in the cave, reluctant to leave. We again discussed the beauty and functionality of the caves. Although we love to taste wine in the vineyards, on a picnic, and in beautiful wineries, tasting in the caves was a unique and memorable experience.
