The Adlon Kempinski Hotel A True Classic | BY CHRISTOPHER KANAL

Berlin’s greatest and most glamorous hotel, the Adlon Kempinski remains one of world’s finest. Christopher Rosar samples its charms as 2020 dawns.

S

itting opposite the Brandenburg Gate the Hotel Adlon Kempinski has stood witness to both Germany’s turbulent past and astonishing post-war rebirth. In a city where the marks of history are writ large and where the rapid pace of the present can often be disorientating the Adlon remains a warm, enduring presence. The Adlon opened in 1907 and was largely destroyed in 1945 in the final days of World War II. Since re-opening in 1997 the hotel has hosted an extraordinary number of luminaries across the decades. The hotel’s prestigious location at the heart of Berlin on Unter den Linden gives guests immediate access to some of the city’s most venerated historical sights. The Reichstag and Potsdamer Platz are all 10 minutes walk away. The hotel itself boasts outstanding facilities including a two-floor spa, a ballroom, wintergarden and numerous restaurants and even its own limousine service. A very tall, brightly lit Weihnachtsbaum (Christmas tree) in front of the Brandenburg

Gate as we arrive at the Adlon on a busy evening a week before Christmas. Smiling doormen greet us as we sweep through the large revolving door, past a slightly smaller but no less beautifully decorated Christmas tree and into the bright expansive lobby bustling with people and the sounds of laughter. We were following in the footsteps of esteemed former guests such as Greta Garbo, Marlene Dietrich, Albert Einstein and more recently Nelson Mandela and Queen Elizabeth II. The Adlon remains today the favoured destination of VIPs when visiting the German capital. The Presidential Suite is considered the safest hotel suite in Europe and is bulletproof, bombproof with steel reinforced walls. An extraordinary Murano chandelier hangs from the ceiling of the lobby. Beneath which, guests relax and chatter on bergère armchairs and velvet sofas that are spread around the lobby. There are bespoke haute couture boutiques tucked away in corners of the lobby. Throughout the hotel the modern design and decor is complemented by old world touches

through the use of mahogany and marble. Despite how busy the Adlon is during this festive season, our check in is completed swiftly at the oval reception area. The staff are polite, friendly and eager to answer any questions we have. As always with Kempinski, the lobby has an extensive concierge desk and their signature ‘Ladies in Red’ Kempinski ambassadors. Children are well taken care of at the Adlon The concierge service can advise on child friendly activities in Berlin while the hotel can provide children’s bathrobes, soaps and sweets. ROOMS Our stunning suite had a dramatic view over the Pariser Platz and the front of the Brandenburg Gate. The Adlon has, incredibly, 13 different types of suites. The large limestone floored entrance area comes with large cupboards and an electronic switch for discretely alerting waiting staff to make up your room or simply to not enter. An ice bucket of champagne, a chocolate Brandenburg Gate and a crystal bowl of pink roses greeted us - a lovely welcome after a long flight. With mahogany and cherry furnishings throughout, the spacious suite had all the luxury touches you can wish for. The room also had some nice touches including antique prints of birds and a beautiful retro brown suede sofa that sat opposite a large walnut work desk. There was a cabinet with a pull out flat screen television and a Krups espresso maker as well as a very well-stocked minibar.

The huge bathroom was decked out in black granite with two basins and a delightful large, deep bathtub that was perfect to relax in after a long day at the nearby Christmas markets. The Adlon provides a wide range of Salvatore Ferragamo Tuscan Soul toiletries. THE ADLON SPA BY RESENSE The hotel’s elegant underground spa, the Adlon Spa by Resense, was designed by Anne Maria Jagdfeld and boasts a heated pool, steam room, sauna, whirlpool, 24-hour fitness centre, hair salon and treatments from facials to yoga lessons. RESTAURANT QUARRÉ The Adlon has three main restaurants: The two Michelin-starred Lorenz Adlon Esszimmer has refined dining; Sra Bua serves Asian - European fusion cuisine and the more relaxed Restaurant Quarré, where we ate. Restaurant Quarré serves classic German and French dishes and is renowned for its 600g Chateaubriand served with Béarnaise sauce, which several groups of people were enjoying on the very busy evening we visited. Couples and groups filled the restaurant. After sharing a refreshing buffalo mozzarella salad as a starter we tucked into mains of succulent Kalbsflanksteak (Veal steak) with chimichurri, celery, herb oyster mushrooms and green asparagus and a seasonal Christmas special of roast goose leg. Both dishes were accompanied by a robust Bordeaux, Chateaux

Grand Bireau (2014). Full and content we decided to share a delicious desert of Rhabarbermousse (Rhurbarb mousse) with strawberry and meringue. The restaurant is noted for its Schwarzwalder Kirsch Kreation (Deconstructed black forest gateau) with chocolate biscuits and cherry which we are sure to sample next time we are in town. We retired afterwards to the lobby bar that is open late. As a pianist played we sank into one of the lovely deep sofas, shut our eyes and reawakened the past. Morning came and we headed for breakfast. The very popular Bel Etage breakfast buffet has to be seen to be believed and serves every breakfast dish you could possibly imagine from fresh Wurst and wide varieties of locally baked delicious German breads to an exhaustive range of mueslis, yoghurts and even caviar. Tea connoisseurs will not be disappointed with a selection of dozens of herbal varieties. There is a champagne on ice for those wanting a morning pick me up. Breakfast includes a separate menu for ordering various egg and vegan options. Vegan and gluten free options are numerous, inventive and tasty. On leaving Bel Etage you are presented with a goody-bag of take away pastries. The perfect start before heading out to explore this extraordinary city.

This year is promising, The ACH130 Aston Martin Edition, the first offering from the recently-announced partnership between Aston Martin Lagonda and Airbus Corporate Helicopters, was revealed at Courchevel in the French Alps.

TELL US A BIT ABOUT YOURSELF – YOUR FORMATIVE YEARS, SCHOOLING, ETC. Growing up, I took a lot of lessons for many different instruments, but I didn’t actually develop a passion for instruments until very recently, about three years ago. However, my passion for the voice began young with my formal vocal training beginning at the age of 14. YOU STARTED YOUR FORMAL VOCAL TRAINING AT THE AGE OF 14. WHICH GENRE DID YOU CHOOSE AND WHY? When I was growing up, I loved the vocals of Céline Dion, Whitney Houston, and Christina Aguilera. When I began singing, I was actually very disappointed, because my voice didn’t lend itself to the same style as theirs. My voice was very big, but in a more operatic way. However, I felt that I couldn’t really express myself through opera; instead of telling my own story, I was showing someone else’s. Also, although my voice was large and powerful, it needed to be reigned in and controlled, like a Siberian tiger (as a teacher told me once). Thankfully, I had a teacher who encouraged me to find my own type of music to sing; she told me to take what I have and who I am, and that if I develop it that I would find my own musical niche and voice. YOUR FIRST PERFORMANCE IN FRONT OF AN AUDIENCE WAS AT A PRIVATE RECITAL IN LONDON AT 16 YEARS OLD. THAT MUST HAVE BEEN NERVE-WRACKING. HOW DID YOU MANAGE TO STAY CALM? To be completely honest, I did not calm myself! I kept repeating to myself over and over the words I was about to sing; my number one fear was to forget the lyrics. HAVE YOU EVER SLIPPED AND FALLEN ON YOUR FACE? Funny enough, my other biggest fear in my first performance was that I was going to trip and fall on my face! Actually, about a year ago I had a pretty good-sized show, and as I was walking across the stage while performing my song Black Widow (Tango), my heel fell into a hole on the stage! The difference between being 16 in London and being 32 in New York, was that I managed

to stay calm, and played it off by performing a tango step called a boleo to unstick my heel from the hole. Nobody even noticed because I maintained my composure and continued performing, but in my head, I was saying all kinds of PG-13 phrases! WHAT HAS BEEN YOUR BIGGEST MISHAP IN TERMS OF PERFORMING, IF ANY? At that same show, I was performing with both an electronic track and live musicians as I usually do, and we had a conductor as well. I moved on to the next song on the setlist after the hole in the floor issue, Black Widow (Shamani). As I sang the first two vocal phrases of the song, I realized something wasn’t quite lining up. At first, I wondered if I had come in wrong, but quickly realized that the track and the orchestra were not in the same place in the song, and it was not going to work. I looked at the orchestra, then I looked at the audience, then I swished my dress around, held up my hands and said: “I’m sorry everyone, I can’t do this to you”. As the music faded out, I explained to the audience “we are having a technical problem here, the orchestra and the track are not lining up; let’s try one more time and if it doesn’t work, we will move on”. We started the piece again, and the same error happened once again so I held up my hands again and just said “NEXT!” The next song on the setlist went perfectly, then I left the stage for my final gown change of the concert. When I returned to the stage, I finished the performance, and had an impromptu moment as a comedienne; I told the audience they would now have to listen to me talk for three more minutes since that song was not performed, and the theater was booked until 10! HOW DO YOU PREPARE FOR A PERFORMANCE? I try to drink a lot of extra water three days before, I have quiet evenings leading up to the performance, don’t go out or socialize. I have a throat spray that I use to protect my throat. It can be hard to sleep with the anxiety of a performance, but I do try to sleep a lot a few days before I’m due to perform. WHAT TECHNIQUES DO YOU USE TO STAY RELAXED BEFORE A PERFORMANCE?

If I need a distraction, I like to watch mid2000’s chick flick comedies! YOU ARE ALSO A FASHION DESIGNER AND DESIGN YOUR OWN RANGE UNDER YOUR OWN LABEL RADMILA LOLLY. HOW DID THAT COME ABOUT? I would create gowns for myself for all my performances. Afterwards, people would always come up to me and ask where I got my dress from. At the time, I would usually brush it off by saying that I got it from a small unknown boutique; I felt like I had to choose to be either a singer or a fashion designer, and that if I told people that I designed clothing too they would get confused and try to put me into one box or the other. I’m happy now to be able to be an artist of multiple facets. WHAT IS YOUR FAVORITE ITEM OF CLOTHING TO DESIGN? A gown that flatters the wearer’s body. AND FAVORITE COLORS? Red. I think it represents passion, confidence, and I also think it’s an attractive color. WHAT DO YOU LIKE WEARING? A red gown! I LOVE YOUR MOTTO ‘LIFE IS TOO SHORT TO BE ORDINARY’. I believe life is too short for a lot of things; I think we should all shine in the most positive way that we can. No matter what you choose to do, it doesn’t mean it has to be ordinary. I think we can all leave a legacy in some way; it doesn’t have to be anything as large as building a skyscraper; it could be something as small as having a positive impact on somebody’s life. I BELIEVE YOUR MUSIC AND FASHION GO HAND IN HAND? I absolutely believe that. When I compose music, I envision in my head the gowns or other creations that will go together with it. WHERE IS HOME? At the moment, it is Miami and Los Angeles; previously it was New York. New York will always have a special place in my heart, because that is where I developed into the person I am today.

WHAT CREATURE COMFORTS CAN’T YOU LIVE WITHOUT? For me to be comfortable, I really need to have a clean and tidy home. I’m not saying I am always perfectly neat, but if I do things like make my bed in the morning, it puts me in a good frame of mind for the rest of the day. I ASSUME YOU TRAVEL FOR YOUR WORK AND HOPEFULLY FOR PLEASURE TOO. WHICH PLACES HAVE LEFT A LASTING IMPRESSION AND WHY? To me, work is my pleasure, so usually I travel only between the places where I have work. Specifically, I spend most of my travel time in Los Angeles, where all my music production and recording takes place. I happen to have

a lot of friends there, so the best reward after a busy day of work is to go out with my girls and have silly chats. Girls Just Wanna Have Fun! YOU ARE IN ABSOLUTELY MAGNIFICENT SHAPE. WHAT IS YOUR FITNESS ROUTINE? I like to vary my workouts for both my body and my mind. My personal trainer is a professional boxer, so we do everything from weights and resistance training, to tennis, basketball, and swimming. I have recently started incorporating dance into my routine; I have been working with a choreographer to develop dances for my performances. ANY PARTING THOUGHTS? Augusta These exceptional courses across the pond all offer memorable golfing experiences . . . and connections to one of the sport’s most celebrated traditions. | BY SHAUN TOLSON

ach spring, as the flowering dogwoods bloom throughout the southeastern United States, the golfing world turns its attention to the city of Augusta, Georgia—specifically to the 140 or so acres of tightly mowed fairways, pristine Bentgrass greens, and the lush second cut of Perennial Ryegrass that define the 18 holes at Augusta National Golf Club. The Masters is billed as “a tradition unlike any other,” and while that may be true, several exceptional golf clubs and resorts throughout the United Kingdom and Ireland—many steeped in history and traditions of their own—are forever linked to America’s most famous, invitational championship (and the immaculate course upon which it is contested).

CONNECTED BY DESIGN At first glance, the rugged landscape that characterizes the Old Course at Lahinch doesn’t draw any parallels to the pristine parkland conditions of Augusta Nation-

al; but this historic championship layout meandering across the northwest coast of County Clare in Ireland is intimately linked to that Georgian jewel. Originally built in 1897 and designed by Old Tom Morris, the Old Course at Lahinch was redesigned in 1927 by Alistair MacKenzie—a celebrated and talented course architect who utilized his training as a camoufleur in World War I to enhance the difficulty of the golf courses that he designed. Five years later, MacKenzie partnered with Bobby Jones to build Augusta National, a course that MacKenzie described as the “world’s wonder inland golf course.” The site at Lahinch, however, stirred even stronger emotions in the British architect. “Lahinch,” MacKenzie said during a tour of the site in 1926, “will make the finest and most popular golf course that I, or I believe anyone else, ever constructed.” Both the Old Course at Lahinch and Augusta National spotlight MacKenzie’s affinity for camouflage; yet, the

courses manifest that in different ways. Augusta National employs several false-fronted greens and other confounding slopes, whereas natural mounding at Lahinch effectively conceals devilish (and deep) pot bunkers strewn across the fairways and around the putting surfaces. “The Old Course at Lahinch is a traditional, subtle links,” says Marty Carr, the CEO of Carr Golf (carrgolf.com), a private golf travel company that specializes in journeys throughout Ireland and the United Kingdom. “It requires all of the shots in the bag.” Unlike that rugged Irish links layout, Adare Manor, set further inland and only about nine miles southwest of Limerick, draws immediate comparisons to Augusta National. After all, the 850-acre property has existed as an exquisitely manicured Irish manor for centuries. In 2015, the luxuriously appointed golf resort was purchased by Irish businessman JP McManus, who immediately invested millions of

Euros to further elevate the property and to secure the Ryder Cup, which will be contested there in 2026. As part of that enhancement project, McManus hired course architect Tom Fazio to overhaul the layout—a project that included the installation of more than 250,000 feet of French drains, Sub Air systems under all 18 greens, and sand-capping across the entire 170 acres of grassed playing surfaces. “Always considered one of the best parkland courses in Ireland before Tom Fazio and JP McManus got their hands on it, Adare Manor is aptly compared to Augusta National,” says Carr, “simply given its unprecedented conditioning.” Parallels to Augusta National are also easily drawn due to Adare Manor’s appearance. Like Augusta National, this Irish parkland course features no discernable rough (the second cut is mowed at a length less than an inch and a half high); the shape, contours, and elevations of the greens are all similar to that of The Masters venue; and all the work was completed by the same architecture firm that has made consistent tweaks and upgrades to Augusta National over the past two decades—Fazio and his associates, however, refrain from commenting publicly about that partnership. “It’s a rare experience to play a golf course like this,” Tom Marzolf, a senior design associate with Fazio Golf Course Designers, says of Adare Manor. “The first time you play a round of golf there, it’s overwhelming. It’s perfection of presentation.”

AFFILIATION TO GREATNESS Crossing the Irish Sea and St. George’s Channel, there’s no shortage of courses that also boast a connection to Augusta National and The Masters. Unlike those Irish ties, however, the revered courses throughout England and Scotland bearing such distinction are linked by Bobby Jones’ remarkable competitive accomplishments. Those who tee it up at Royal Lytham & St. Annes, for example, will walk the same fairways, putt on the same greens, and escape from the same treacherous bunkers as Jones did in 1926 when he won the Claret Jug for the first time. As Jones was presented the championship’s trophy, John Henry Taylor, one of England’s pioneering professional golfers, told the gallery: “We have just watched the greatest golfer in the game win the game’s greatest prize.” It was a pivotal moment for Jones. the 24-year-old amateur won golf ’s oldest championship, he had done so by tying the Open’s all-time low final score, which had been set 18 years earlier by James Braid, a five-time Open champion and one of Scotland’s golfing heroes. Recognized as the birthplace of the sport, the Old Course at St. Andrews is a golfing Mecca—one that attracts thousands of golfers every year and one that appealed to Bobby Jones for that same reason. “I have achieved the ambition of my life,” Jones humbly announced immediately following his Open Championship victory at the Old Course in 1927, “because I have won at a place where golf was played nearly five centuries ago. This wonderful experience will live in my memory until my dying day. If I never win anything again, I am satisfied.” Jones continued to win, however, including his third Open Championship in 1930 at Royal Liverpool. The triumph was one of four that comprised Jones’ unprecedented Grand Slam—victories at all four of the era’s major golf championships (the U.S. Open, the Open Championship, the U.S. Amateur and the British Amateur) in the same year. During a dinner at Royal Liverpool the night before the 1930 Open Championship began, Jones was seated next to Kenneth Stoker, a former captain of the club, who wore a striking red sport coat that signified his position at the club. As the story goes, after Jones asked Stoker numerous questions about the jacket, the former club captain told him that if Jones should win the Open that week, he would give him the jacket. True to his word, Stoker presented Jones with a red sport coat at the conclusion of the tournament, which later inspired Jones to establish the green jacket as a ceremonial trophy for The Masters. The latter three courses all intertwine with Bobby Jones’ illustrious accomplishments as a player, but they are courses that shine first and foremost for their history and their connection to golf ’s oldest championship. That’s what attracted Jones to them in the first place almost a century ago. “The British Open resonates with everybody,” says Carr. “If you think of how old the Open Championship is, you feel privileged to be associated with that history and the great players who have stepped on those courses. To play such historic courses, it’s incredibly rewarding.”

CHEF GABRIEL KREUTHR BRINGING A TASTE OF ALSACE TO THE BACCARAT HOTEL IN NYC | BY DEVE SANFORD

Earlier this year, Culinary Director and Two Michelin-starred Chef Gabriel Kreuther unveiled his interpretation of an Alsatian-Inspired menu to be debuted in the Grand Salon, in-room dining and The Bar. Hailing from the French region of Alsace, Chef Kreuther’s inspirations are driven by both his deeply rooted Alsatian heritage and an unwavering commitment to excellence. Perfectly aligned with the same defining qualities that are synonymous with the legendary Baccarat name, Chef Kreuther became the ideal culinary partner for the 255-year old iconic crystal brand. That opened a whole new chapter in my life and career; it gave me access to work with the best in the field and contributed to expanding my mind about food. WHO HAS BEEN YOUR BIGGEST INFLUENCER OR MENTOR? On the early side, my greatest influence was my mother, she is an amazing cook. Also, my uncle, under whom I did my apprenticeship. He was my early mentor and instilled in me the values and concept of quality in cuisine. Later in my

WHAT DO YOU THINK IS ONE OF THE BIGGEST MISCONCEPTIONS ABOUT FINE DINING? That it’s only for the rich or the elite. I cannot disagree more. I grew up on a farm and ate my first lobster at age 18. When I was an apprentice, I saved my money to go out and eat, educate myself and try to differentiate between okay and great. I realized that eating at a high level of quality came at a price and that great products as well are expensive. But for me, it was always worth the money in the end. This level of dinning is an experience to cherish and remember, and certainly not an every-day adventure. It’s always been very amusing to hear people talking about that, and by the same token see them spend loads of money on concert tickets, shoes, perfumes, etc. Food is culture and it deserves just as much attention. WHAT HAS BEEN ONE OF THE BIGGEST CHANGES OR TRENDS IN THE CULINARY WORLD SINCE YOUR CAREER BEGAN? The dress code in restaurants. It has become more relaxed and enjoyable, which is a good thing in my opinion. Tasting menus are longer than it used to be; more of an experience today than just eating out. The trend that sticks out to me the most is the interest people have in understanding how things are made, where it comes from, who’s behind it, growing it, and if it’s sustainable and healthy. DO YOU HAVE A DREAM COLLABORATION OR DREAM PATRON? I would love to do a collaboration with Dominique Crenn. My dream patrons include Lewis Hamilton, Zinedine Zidane, Roger Federer. WHAT WAS YOUR FAVORITE DISH GROWING UP AS A CHILD? As a child, I always looked forward to eating foie gras twice a year, on Easter and Christmas. My favorite regular dish was a veal escalope with a cream and button mushroom sauce, served with french fries. I also loved rabbit in mustard sauce with spaetzle.

They look like giant goldfish bowls but really they are human bowls. The luxury see-through bubbles are being offered by Anantara Golden Triangle Elephant Camp & Resort in northern Thailand. But also close to the Laos and Myanmar borders.

Other elephant experiences include an elephant walk (you accompany them on their daily “free roam”, an elephant picnic, and a yoga session with elephants on your private and exclusive “sala” in the middle of a paddy field.

hen The Royal Portfolio’s owner and founder Liz Biden decides to put her stamp on something, you know it’s going to be absolutely spectacular. The Farmstead at Royal Malewane is no exception, and this intimate lodge is sure to make an impact on the safari world as well as the community.

A new addition to the already extraordinary properties that make up The Royal Portfolio, The Farmstead is situated in a southerly direction from the main lodge at Royal Malewane and boasts three magnificent stand-alone luxury farm suites and a three and a half bedroom farmhouse. The suites are raised to allow an unobstructed view of the surrounding bush, punctuated by animals meandering past to the drinking hole in front of the dining area. mom to return from a hunt. The youngster is safely esconded in the dry riverbed, looking at grazing waterbuck on the opposite site of the banks.

My bedroom is significant in size, and doubling the space is an equally proportioned room, which is the most opulent bathroom, with an extra-large shower, and a heavenly freestanding tub, where you can soak the day away while having your gaze transfixed on the outdoor area for passing game. The walls in the bedroom and bathroom are adorned with colorful paintings and prints.

After a hearty breakfast, I spend my day at leisure taking in the superb surroundings from the confines of my sparkling solar-heated private pool on my veranda. I consider indulging in a nap but realize that I could miss out on this once in a lifetime experience at one of the most magical places I have been to. Instead, I take a leisurely stroll to the dining area, where I admire the handiwork of what must have been a labor of love.

Arriving in time for lunch always comes with a great prospect, especially when dining options are plentiful, and an indoor or outdoor dining area is at your disposal. My table is set up on the outside deck and being the only guest at this stage, my menu is tailor-made to suit my palate. Lunch is the best chicken stir-fry I have ever tasted, thanks to chef Leroy and attentively served by butler Ivy. The time has come for my first game drive and following Royal Malewane on social media, I have a feeling I’m in for some great sightings. With more than twenty years of experience in guiding and being a master tracker, I cannot be in better hands than in the company of Juan. Tracker Patrick is at the ready to direct Juan in which direction the animals are to be found. As we start our drive, we stumble upon a large breeding herd of buffalo with loads of babies. The sound is overwhelming when they stampede past us to a nearby watering hole. Further afield, an elephant is having a dust-bath after digging for bulbs in the ground. Her calf is on the receiving end of this cooling frenzy and eventually finds solace under mom’s trunk. The sun sinks in behind the majestic Drakensberg mountains, heralding the most superb sunset and the appearance of nocturnal animals. We hear them before we see them – the Black Dam pride of lions, stretching and yawning ahead of getting active in search of prey. Dinner is a five-course affair and is served on the outside deck, with the firepit ablaze. My menu choice is scallops for starters, Karoo lamb rack with grilled patty pan, potato fondant & red wine jus for main course and for dessert, I opt for poached gooseberries with pouring cream. The food is delectable to put it mildly. A great night’s sleep beckons and the only disturbance is the distant whooping of a hyena. We find her the following morning next to her den-site, which she hastily abandons as she’s heard and smelled the Black Dam pride in the vicinity. Another surprise we happen upon is a wild dog den, with full-bellied puppies engaging in a playful roll-around. My favorite sighting at Royal Malewane is of the gorgeous Saseka female leopard’s cub, waiting for

Carmel by the Sea Continues to Captivate | BY FRAN MILLER

Carmel-by-the-Sea has long served as a haven for artists, writers, and intellectuals drawn to the inspiring atmosphere of this unique hamlet by the sea. Shaped at the turn of the 20th century by creative minds who embraced the arts-and-crafts aesthetic of artisan homes hugging the Northern California coastline, Carmel continues to captivate. A storybook atmosphere pervades the central, one square mile village where mid-1920s Tudor and Spanish Romantic Revival style buildings and cobblestone sidewalks delight visitors from around the globe. Charming courtyards and secret passageways further contribute to a fairytale quality. The downtown streets are peppered with twinkle-lit corridors and fountain bedecked patios, each lined with unique shops and galleries. Add to the mix a plethora of wine tasting rooms, fine dining restaurants, and luxurious inns, and Carmel provides all anyone requires in a refined and relaxing respite. Yet a visit to Carmel-by-the-Sea is also noteworthy for what is not found. Visitors won’t encounter national brand hotels, branded coffee shops, or fast food chains. Nor will they find street lights or addresses. (Mail is delivered to a central post office where residents maintain PO boxes.) Additional town edicts which add to the whimsy include the recently overturned ‘no ice cream cone’ ordinance and the unenforced ‘no high-heels’ law, for which going rogue is inadvisable; those cobblestone walkways can be a challenge in even the most sensible footwear. Yet, the entire town is walkable. Visitors rarely find need for their cars. STAY Of all of Carmel’s quaint hotel choices, only one is known as the Grand Dame of Carmel. Originally a luxurious mansion built in 1905 by an artist as a gift to his wife, the landmark La Playa Carmel serves as a cornerstone of Carmel hospitality. Stained glass, shell ceiling light fixtures, Carmel stone, and sand-hued beams are design stand-outs. Cozy gathering spots abound. Relax in the beautifully tended gardens. Read the bevy of offered newspapers by the lobby fire; relax in the sun by the swimming pool; gather in the library for complimentary afternoon tea and lemonade, served with a coastal view. A La Playa Carmel stay is studded with little extras. Enjoy a glass of sangria at check-in. Local reds and whites are poured every evening during wine hour. Monterey County is one of the world’s top viticultural destinations, and the area’s wines and wineries are well represented

within the more than two-dozen tasting rooms, wine bars, and bottle shops lining Carmel’s streets. Stroll from one tasting room to the next. Each provides a lively atmosphere in which to sample the region’s premium varietals while rubbing elbows with locals, visitors, and often the vintners themselves. While the best way to discover Carmel Village and it’s 41 hidden pathways and storybook gardens is by foot, biking runs a close second. Rent a standard or an

electric bike from Mad Dogs & Englishmen and freely roam more than 40 miles of spectacular coastline. The hip bike shop’s Specialized Turbo e-bikes make exploration of Pebble Beach’s famed 17 Mile Drive an exhilarating breeze. But a slow pedal along the Village’s ocean fronting Scenic Drive is equally as enthralling.

he Scots go to great lengths to make you a “Seaweed Martini”. On the Outer Hebridean island of Harris, Lewis Mackenzie free dives into the sea lochs to hand-harvest underwater sugar kelp for the Tarbert Distillery’s award-winning gin.

Dram sales are dropping, gin is fizzing and Scotland has launched its first “Gin Trail”. Gin is predicted to outsell whisky by 2020. Scotland now has over sixty gin distilleries and nearly 140 makes of gin. A new “gin-eration” of Scots are hand-crafting, small batch premium gins made from unusual foraged botanicals and hyper-local ingredients. “Abi”, the copper alembic in an old blacksmith “smiddy” at the Glamis-Kirriemuir based “Gin Bothy”, produces chilli gin, using chillis from Scotland’s first chilli far. Ex- “world jampion”and jam-turned “Mother’s Ruin” maker, Kim Cameron also makes mulled gin, infused with gorse flowers and heather honey. “We support the Woodlands Trust working to save Loch Arcaig and its old pine forest. We donate £1 from every bottle.” Former pilot Steve and Lynne Duthie, who worked in the oil and gas industry, make “Esker Gin” from silver birch sap responsibly sourced from the Kincardine Estate, Royal Deeside. They also use milk thistle. Scottish gin can no longer be regarded as a fad. In a decade, Scottish gin sales to the US alone have grown 500 percent. Scottish gin is now exported to over 140 countries. Including China. Last year, the Scots drank over 29 million liters of gin. Edinburgh, home

of “Pickering’s” distillery in an old animal hospital, drinks more gin than any UK city. The Glasgow Distillery has just launched “Makar Cherry Gin”. Jonathan Engels’s “Crossbill” is based at the Baad distillery in Glasgow’s east end. He also produces pineapple gin liqueur. Former whisky consultant, Simon Fairclough produces gins like “Sweet & Nutty Old Tom” from “ Phil The Still “ at the “Persie” distillery in a former hotel at the foot of Glenshee, Perthshire. Vicky and Dale McQueen’s “Trossachs Distillery” makes “Chocolate & Mint Mocha Gin” in Callander. With the help of stills, “Little Maggie” and “Big Doogie”- Undersea engineer Peter Dignan and vessel manager Richard Pierce run “ Lost Loch Distillery” on Loch Auchlossan - drained in 1994. Located within an Aberdeen Angus beef farm beside the Cairngorm National Park, they have just launched “Eeenoo”, commemorating an Inuit who visited Aberdeenshire in the 1800s. Nearby, Nick and Emma Smalley’s make gin from tea hand-picked and hand-rolled in Sri Lanka. Nick is a North Sea oil rig helicopter pilot. Emma works for the local Chamber of Commerce. Says Emma: “We wanted a key botanical and, discovering the area’s historic associations with tea, it was a no-brainer. It had to be tea. James Taylor, the father of Ceylon tea, came from Auchenblae. And Aberdeen shipyards built tea clippers.” Down the coast, in Angus, distiller Kirsty Black and Venezuelan production manager Christian Perez Solar of “Arbikie” use less exotic pine needles, gorse, blueberries, carline thistle and Viscount wheat from the 69 | UPSCALE LIVING MAGAZINE | JANUARY 2020

Stirling family’s Inverkeilor estate. Arbroath also boasts “Redcastle”, named after the local twelfth-century castle. At the Loch Leven Hotel, near Glencoe, Craig Innes and his Finnish wife Noru produce “Devil’s Staircase” named after part of the West Highland Way. All the businesses epitomize “small-batch” ( less than 1000 liters) philosophy. Searching for authenticity and difference, gin lovers don’t mind paying for the personal touch and the perfect serve. And genuine provenance. Artisanal Scottish costs over $50 a bottle. Gins with attitude are in. Many distilleries, like Darnley’s in St Andrews, offer tours and have gin-making schools. Scotland boasts the UK’s most northerly mainland distillery, “Rock Rose” at Dunnet Bay, Caithness. The most northerly is “Saxed Vord” on a former RAF base. “Shetland Reel” has won awards at the “San Francisco Spirits” show. “Porter’s Gin” is based in Aberdeen. And named after a professor at the city’s university who provided young gin makers Josh Rennie, Ben Iravani and Alex Laurence with equipment. Former agricultural inspector Jill Brown’s Moray Distillery in Elgin produces “Avva” (Indian for mother and Hebrew for ruin) in the country’s only Scottish-made still – “JJ” named after her two grandmothers. “Granny Jessie was a hotelier. I’m a third-generation licensee. Granny Jean is a farmer’s wife. I forage weeds - dandy, mint, nettle, red clover, and rowan- from her farm!” On the Scottish Gin Trail, you travel through different landscapes, tasting the “terroir”. And meeting the people. The home of golf, St Andrews, has “Eden Mill”. Its “Love Gin” was created when founder Paul Miller’s wife Caroline suggested that after twenty years of brewing beer maybe he should make something special for her. He came up with gin distilled with red rose petals, marshmallow root, goji berries, and whole hibiscus flowers. It claims to be “more romantic than any Barry White song.” Nearby “Darnley’s Spice Navy Strength Gin” (57%) is made in Kingsbarns. It commemorates the husband of Mary Queen of Scots. In Jedburgh in the Borders, Lanton Mill makes a gin, named after the heroine of the 1545 Battle of Ancrum Moor. Says Kate MacInnes who supervises “Donald”, her 60ml still: “Lilliard has been carefully created to evoke the area’s floral palette, elderflower, meadowsweet, and rosehip.” Nowhere is without a distillery. “Strathearn” in Perth makes “Heather Rose”. “Hendrick’s” (est 1998) is made in Ayrshire. In a former shooting lodge visited by Queen Victoria, Strathmashie Distillery in the Cairngorm National Park, “Daffy Gin” is produced by Chris Molyneaux. Ingredients are foraged by paddleboard along the Spey. You can stay at the distillery. “Daffy” is the Victorian slang word for gin. Further west, Mull’s family-owned, juniper-led “WhiteTail” commemorates Europe’s largest bird of prey. Arran now has a gin. As has Kintyre. Former surveyor Niall Macalister Hall’s “Beinn An Tuirc” is made at the “Hill of the Wild Boar” on the Torrisdale Castle Estate. “Big Don”, the still, is named after Niall’s late father. Brothers Thomas and Alistair Wilson make “Misty Isle” on the Isle of Skye. Whereas Jura’s “Lussa Gin” is made by three ladies with sea lettuce hand-foraged from the shoreline in a rowing boat named after the local postwoman. That a nation of whisky lovers is turning into a nation of gin makers is getting increasingly easier to swallow. Slainte!
