The Best Vanillekipferl (Vanilla Crescents)
Every first weekend of December our house is filled with the most incredible cookie aroma coming from the kitchen. My German husband makes these cookies every year like clockwork! The recipe is very special because it was passed down to him from his mother, and it is a wonderful way to remember her around the holidays. Every time I share these cookies with friends and coworkers, it is a huge hit! Needless to say, these are hands-down my favorite holiday cookies! I hope you give them a try at your own home, and then enjoy them with your friends and family.

200g soft butter 70g sugar 100g ground almonds 250g flour 1 pinch of salt 1 tablespoon rum (or instead milk)

Directions:
Mix the butter and the sugar. Mix almonds, flour, and salt and together with the rum, and stir it into the butter until you get a nice smooth dough. Wrap it in aluminum foil or plastic wrap and put it into the fridge for 30 mins. Mix the powdered sugar with the vanilla sugar on a plate. Set the oven for 190 C (375 F) and lay out 2 baking trays with baking paper. Take a portion of the dough and roll it on a bit of flour to a roll of 2 inches. Cut each roll nberger/Shutt e t into slices of 0.5 inches. The trays go in the middle of the oven (one at a time) and bake each for about 10 mins until they get light brown. Take them off the trays and roll them in the vanilla sugar while they are still hot.

I glanced out the kitchen window of our rental and watched as my son fed the goats and my daughter played with the fuzzy orange cat. Then I looked at the view beyond: a little church with a big steeple perched over a dark green valley of fields and forest. The sun was setting, but the snow-covered peaks above it all still blazed bright white against a darkening blue sky. I love the Dolomites. Our farmstay apartment was high in the foothills of La Val in the Südtirol province of northern Italy. Here, the Dolomite Mountains, part of the Alps mountain range, have uniquely steep and jagged peaks. This part of Italy was part of the Hapsburg (Austrian) Empire for half a millennium before being annexed to Italy after WWI. So, while it is Italian, it is culturally Germanic. Most places have both a traditional German name and a newer Italian counterpart.
Holiday spirit, mountain-style
In early December, the snows had not yet come down to our farmstay, but we could easily hike up to it. We spent days hiking right out our door. First, to that cute little church, then further across the farm fields and through the pine woods. We were never at a loss for beautiful scenery. On St. Nicholas day (Dec 6), my kids woke to find chocolate coins in their shoes. To get deeper into the holiday spirit, we spent the day in the nearby medieval town of Bruneck. On his day, Saint Nicholas visits the city park to give out candy, but we learned that his counterpart Krampus had run through town the night before. This goat-footed demon is an alpine tradition, dealing with naughty children, while St. Nicholas rewards those who are good.
Italy often summons images of warm summers, sunny beaches, and ripe garden vegetables. However, the country is incredible in the winter, too, especially in the mountainous north. We visited the Messner Mountain museum, housed in the castle above the town. We putzed around the main cobbled shopping street that was decked out in Christmas lights, festive carved logs, and lots of Christmas greenery.
Alpine outdoor fun
But we longed for an even more wintry experience. So we spent the afternoon at nearby Pragser Wildsee (Lago di Braies in Italian): a gorgeous partially frozen alpine lake. It was fun to slide around on the ice, or to listen to the odd reverberating sounds the ice made as it shifted against the surrounding cliff walls. But my kids discovered that the best game was throwing rocks on the ice to see whose echo was the loudest. Once sufficiently frozen, we returned to Bruneck for an evening at the Christmas market. It is small, but one of my favorite holiday markets, and especially glittering at night. It’s one of the few markets where I’ve actually purchased things; locally made woolen slippers that I love. There are also lots of locally made wooden crafts and wool clothes. Our final day was spent on a day-long hiking adventure from our farmstay. We started in a dark cold forest then found ourselves on a sunny alpine meadow. We let the sun warm our bones and the view warm our souls. The trail ended along a tunnel of shrubs covered in sparkly ice crystals. It was magic. The kids tried to take some with us, but they melted quickly. The magic stayed in La Val. Christmas Markets in Germany are back! They may look slightly different this year as hygiene guidelines remain in place, but all the fan favorites will be there to get you in the spirit.

The sweet scent of gingerbread will seep through romantic alleys of fairy-lit historic town centers while wooden booths offer culinary delights such as mulled wine, sausages and roasted nuts along with cookware, clothes, handmade gifts and much more. Even though hygiene rules may vary depending on which market you’re attending, please be prepared to wear a mask when you’re not eating or drinking unless signs state otherwise and keep your distance from other groups. Adhering to these rules is key to allowing everyone to enjoy this beloved German tradition.

Famous for its culinary abominations, lack of understandable English speakers and perpetual rainfall, Scotland is a magnificent country to visit year-round.

During the summer, you will often find yourself stuck in traffic, someone stepping on your heels on popular walking routes, and constantly looking for parking. rants. Accommodations are cheaper and have more availability on short notice. Just think of the photos you can get of these world-famous mountains, lochs and castles without having to edit forty bright blue Osprey backpacks out of them.

Scottish winters tend to be dryer than spring and fall, too, so while you can still get very unlucky (in which case I suggest cozying up in front of the fireplace of an oldfashioned B&B and enjoying a cup of hot chocolate), there is a good chance you will get cool, crisp, sunny days between December and February. Speaking of lights: anything north of Inverness will give you a great shot at seeing the northern lights. The further north the better, but even Lossiemouth in the East and the islands in the west are perfect for viewing the northern lights between September and April thanks to the lack of light pollution in these regions. If you make it all the way to Orkney or Shetland, you’re in for even more spectacular views.

Make the trip up to the Western Isles, especially Harris and Lewis. It’s a long drive but the journey is as scenic as it gets and so worth it for the unparalleled solitude of an island where Gaelic is still a spoken language and thousands of years of history linger under every rock. The endless white beaches (check the tide times before you go!) tend to be completely deserted in the winter, while I heard someone compare August’s onrush of visitors to Bondi Beach. A clear January afternoon at Luskentyre beach will make all your problems sail away on those bright turquoise waves at the edge of the world.

Living in a country that does not celebrate Thanksgiving, it seems like Christmas comes knocking at your door especially early in Germany. First appearing everywhere are Advent calendars, Stollen cakes, Spekulatius (Spice) cookies, and decorations. Then comes what we have all been waiting for: German Christmas Markets! Here are 10 tips for making the most of German Christmas Markets.
7. Designated Driver, Cab or Train it:

Think of briefing your family and friends like a coach in the locker room before a big game. “We are going to hit up Stuttgart, hit Heidelberg the next day and then swing over to Wiesbaden in the final hours.” Prior research will ensure you don’t miss the market in your favorite town.
2. The Christmas town:
Rothenburg ob der Tauber is an enchanting medieval city. Even if markets are closed this year, visiting this city will get you in the Christmas spirit! Try the local “Schneeball” pastry then visit the biggest Käthe Wohlfahrt Christmas store.
3. Make a weekend out of it:
For either a local market or a road trip-worthy city, try booking a room in the city center. Perhaps you can even stay in a hotel or bed and breakfast that looks out onto the charming lights of the market. How romantic!
4. Go to your local small fest:
Meet some of your neighbors at your local fest, which may only be one weekend or one night.
5. Dress Warm:
Dress for the extreme cold and remember you might not be moving much at times, which would normally keep you warm.
6. Bring the kids:
The markets are very child-friendly and usually have rides, games and treats for kids! The markets on the week-

Each market has its own signature mug, and you can collect them. Either they have them for sale at the stand, or you can just keep the mug that you received with your drink.
9. Not ready to join any crowds yet?
Well you can make your own personal Christmas Market at home! You can buy Glühwein in the alcohol section of any food store. Just warm up a bottle on a stovetop, and then add some orange slices.
10. Meet your friends:
More than the shopping, eating and drinking, the fests are about being with loved ones and spreading holiday cheer. Germans have an expression for this feeling of being cozy, socially accepted and friendly called “Gemütlichkeit.” It comes from the adjective ‘gemüt’, which means “heart, mind, temper, feeling.” So grab your holiday shopping list and share some Gemütlichkeit this year at a German Christmas Market! SANTA LIVES IN FINLAND
November 26, 2021 One long night we spotted the aurora borealis out of the camper’s skylight. Then, at 2 a.m., I woke up freezing cold and needed to go outside to hook up our second gas tank. The air was so still and clear and cold it felt like the entire world had been frozen. In the morning, there was a fresh dusting of snow. The roads were kept nicely usable, either fully plowed, or solidly packed snow. I kept to the largest of roads (E75), which was still a simple two-way stretch. Once, we had to wait twenty minutes while a reindeer herd crossed; it felt like part of the Christmas spirit. It also brought us full circle, and reminded us of our visit to Santa’s village, where we’d first encountered a tame herd of reindeer. “I’m going to feed it!” My
5-year-old son ran toward a reindeer with massive horns. He held out his pile of moss, and the animal munched it from his mittened hand. We also sent a letter from the mailroom and took some pictures crossing the Arctic Circle line marked across the entry courtyard. But, after seeing Santa, the reindeer were the highlight. A trip to the extreme northern stretches of Finland can seem almost as magical as Santa Claus, even in the wintertime. If you’re looking for off-the-beaten-path adventure that leads you to wilderness, northern lights, and real live reindeer, consider Finland.
Story and photos by Kat Nickola Contributing writer “Mom, is this real?” My skeptical 8-year-old daughter asked. “Of course,” I said as we walked through a magical cave on our way to see Santa in his workshop. As we came around the last bend we saw Mr. Claus himself, sitting by a fire and dressed in the traditional clothes of a reindeer herder with green pants, a red embroidered vest, and a whitetrimmed red stocking hat. “Hello!” he said in English. “Come in.”
Santa’s village… for real
Santa Claus lives just north of the Arctic Circle (66°30´ N) near the capital of Lapland, Finland, in a town called Rovaniemi. His vil-
lage is one of the few tourist sites in Lapland, and it’s open year round. It is busiest in December, and secondarily over the summer holidays. We went in the off-season - generally considered any part of fall, late winter, or spring. Expect snow that time of year, especially if you venture further north. During our trip, I rented a small self-contained campervan that was sealed for winter use. After our visit, we continued north past Santa’s village, deep into Lapland, where people are outnumbered by reindeer and pine trees. It’s a beautiful expanse of nature: Ready for adventure. In Finland, wild camping is allowed, and overnight camper parking is permitted at rest stops and trailheads. The wilderness trails also have many laavu - open-
sided wooden huts; often wood is piled ready to split with the available ax and burn in a large fire pit.
Adventure galore
The kids and I hiked along wooden plank trails in snowy bogs, we slept overnight beside fastrunning rivers, we scaled windy icy fells, and refilled the water from ice-covered lakes. Our turnaround point was the small town of Inari in the far north of Lapland. It was a chance to stock up at a grocery store, refuel, and learn about the local people. An open-air museum called Siida features the people who have made a home here - from its use as a stone-age meeting point to the reindeerherding Sami culture. Every road that leads to Monschau is a good one. Nestled next to the Belgian border in Germany’s Eifel region, the little town is surrounded by rolling hills and deep, wooded valleys. It is an ideal spot for day trippers and weekend voyagers, especially during the Christmas season.

Beautiful Monschau
To put it plainly, Monschau is as about a visually appealing town as you’ll find in Germany (which is saying something). Geography dictates a lot of this beauty. Since the bulk of the old town is located along the banks of the Rur River in a steep gorge, there’s not much room for sprawl. As a result, the village center is packed with cute shops, restaurants and old buildings. History has a little bit to do with Monschau’s attractiveness, too. Even though the town has been around for roughly a millennium, it was in danger – along with nearly every other town in the area — from being destroyed during World War II. Because U.S. forces were able to secure the town quickly in 1944, it was spared much of the damage that ravaged nearby towns in Belgium and Germany.

Great Christmas markets can be found throughout Germany. What makes the Monschau experience so much fun is that the entire town seems to morph into one giant market. Which is to say, it’s not just limited to stalls and faux pines that suddenly end. It’s everything. Hotels, taverns, galleries, and artisan studios all seem to be part of the fun, too. And as evening falls, the lights are magnificent. Unfortunately, COVID put a damper on last year’s Christmas market (which was the case almost everywhere). What to do
There is no shortage of fun activities in Monschau. Because it is so hilly, the territory around the town is ideal for outdoor enthusiasts. Walkers, hikers and cyclists can take advantage of many nearby trails. There is also a nice circuit path that goes around the city, and provides great views of the Rur river and the valley in which Monschau sits. The town itself also offers a lot of variety. You can visit parks, stroll the castle walls, or sit on benches
By car, Monschau is slightly less than three hours northwest of Kaiserslautern, and a bit more than an hour north of Spangdahlem. For U.S. government employees, including service members, remember to always follow command regulations, which may be different than host nation policies when it comes to travel.

Have a dedicated work space
If you’re working from home, it is crucial to have a dedicated work space. This allows you to spread your work out and not worry about your kids or dogs trampling all over it. It also allows you to have professional meetings without “distractions.” But, most importantly, a dedicated space can also help you “leave the office” at the end of the day. Prior to COVID, when you talked about “working from home,” most people would say “Oh, sure that’d be great, but it could never work for my job,” or “Yeah, I’d love to, but my boss would never go for that!” How times have changed. For nearly two years, everyone at our company has worked from their homes. Very early, we realized, no matter how bad COVID became or didn’t, it wasn’t worth the risk to our staff and their families. So we sent everyone home, with their computers and work phones. If you are dealing with a similar situation, here are four important tips that we have found useful in helping to “normalize” the situation.

For many, teleworking used to seem like a dream (or a nightmare, depending on who you asked). Thanks to COVID, it has become reality for many in the working world. Here are four tips to help you make sure teleworking works for you.

Other options include the newer Google Meet, Microsoft Teams, BlueJeans and Jabber - not to mention Webex, GoToMeeting and Skype. Video calls are great for business meetings. They can also be a nice way to do “stand-up” meetings or just see each others’ faces once in a while! And for quicker conversations, there are a number of “chat” applications, such as Slack, Microsoft Teams, or Google Chat, that allow you and your team to communicate quickly. DOG TREATS, HOLIDAY STYLE ’Tis the season to spoil your dog! Like us humans, most dogs love few things more than food. If we get seasonal delights such as gingerbread, cinnamon stars and marzipan potatoes, so should they. This recipe will make for fantastic Christmas gifts for your canine loved ones.

by Leonie Milde Contributing writer I love baking for dogs because it is so hard to mess up. I will never know if it was bland or too dry, if I went for a weird flavor combination or if buckwheat has a funny aftertaste. As long as they get to lick the bowl and have something to crunch when it’s done, I am their favorite master chef. Dogs can be allergic to peanuts, eggs, dairy, grains and more so if your pet has never encountered some of these ingredients, it is advisable to feed him a small dose at first and adjust the recipe according to his dietary preferences. Both of the following recipes are designed for every ingredient to be swapped for something else so there are endless flavor combinations and possibilities for you to recreate your own favorite Christmas treat for your furry companion. We’ll start off with the traditional way of preparing a hard dough to roll out and using cookie cutters for fun shapes.

• 2 eggs (alternatively 1 banana, 4 tbsp. apple sauce or 6 tbsp. peanut butter, salt- and sugar-free) • 1 cup pumpkin puree (or sweet potato, liver paste) • 1/4 cup coconut oil (or butter, vegetable oil of choice) • 1/4 cup peanut butter • 3/4 cups oat flour (or coconut, wholemeal, buckwheat, rice) • 1 tsp. baking soda • 1 tsp. cinnamon (turmeric, ginger, garlic have great health benefits)

A thick paste made of water or yogurt and flour as well as food colouring can be used as icing Mix well, cool dough in the fridge for at least 1 hour and roll out evenly. Bake at 350° for 15-20 minutes.
Optional:
Turn the oven temperature way down to dry them for about 90 minutes so they will keep for months. Put a chop-
stick in your oven door to let the moisture escape. A silicone baking mat is handy for baking your own tiny treats as they’re quick to make and each mat creates about 100 training drops at a time. They are available online from $10 and come in fun shapes and sizes. • two eggs (or substitute) • 1 cup flour of choice • 1 cup yogurt of choice • Extras: fresh fruit or vegetables of choice or shredded cheese • Get creative and experiment with colours such as beetroot, charcoal, turmeric, spirulina or parsley (for fresh breath) Mix well. Aim for a liquid consistency: it should look like crêpe batter. I use a high-speed blender to make sure there are no chunks left, which makes it easier to fill the little molds. WINTER SKI, SNOWBOARD DESTINATIONS If you are lucky enough to find yourself living in Europe, make sure you experience one of its crown jewels, the Alps. Here is a collection of can’t-miss destinations for your next ski or snowboard adventure.

Best Variety: Portes du Soleil, France/Switzerland
If you are looking for endless variety, then Portes du Soleil should be on your short list. The literal English translation for this French gem is “The Doors of the Sun,” but also translates to “The Gateway to the Sun.” Situated between Mont Blanc in France and Lake Geneva in Switzerland, this ski area is made up by an impressive thirteen resorts. What’s more impressive is that your lift ticket covers all of them! Steel yourself before going. Though the experience will be awesome, it is easy to be intimidated by the second largest ski resort in the world (Les Trois Vallees, France is number one). Portes du Soleil has over 200 lifts in the area that connect all the resorts. In fact, it’s so big that it straddles two countries (France and Switzerland). And yes, your passport is required when you are skiing, in case you don’t make it back to your country of origin at the end of the day and have to commandeer transportation back.
What to expect
I enjoyed one of the best powder days I have ever had in Châtel when we received three meters of snow (over 9 feet) in a four day period (snorkel depth!). The steep and deep was plentiful for advanced skiers but it doesn’t all have to be about powder and fast skiing. There is so much variety that even the most amateur skier can enjoy the endless cruisers going from resort to resort while you explore the Haute-Savoie region. Because the resort is so expansive, the best bet for a multi-day trip is to pick your resort for the day and take the free bus to it. If you want to see endless valleys while you are getting to your destination, you can ski to your chosen resort: But beware...it may take you half the day to get there. The variety of this amazing place should
not be taken as a negative. It definitely is not. In a one-week trip, you can experience what most people take three or four trips to accomplish.
Price and location
Keep in mind you can get a six-day pass for about 236 euros. Compare that to resorts in the U.S. like Vail, which is a fraction of the size and commands a whopping $650+ for a five-day pass (in February). Avoriaz has the most modern skiing/boarding of all the resorts and has accommodations totaling 14,000 beds. Morzine is the largest town with a traditional market center and offers plenty of easy and intermediate skiing right from the village. Châtel is right on the border of Switzerland, offers two main areas, and easily links to Torgon and Morgins (Switzerland). Les Crosets and Champery are Swiss villages with plenty of tradition. Les Crosets boasts large fun parks for the kids.
Getting there
By car, Portes du Soleil is five hours from the Kaiserslautern area and about 4.5 hours from the Stuttgart area.
Best Bang for the Buck: Garmisch-Partenkirchen, Germany
Garmisch-Partenkirchen offers the best bang for your buck for two simple reasons...VAT forms and U.S. dollars! It is rare that you can go to an amazing European Alps destination and take advantage of the logistical support that goes along with serving overseas. It can account for huge savings, especially if you end up going on a little shopping spree at one of the local outdoor shops. Add onto that the local Armed Forces Recreation Center at the Edelweiss Lodge and Resort, where you pay in dollars, and you have saved yourself some serious coin. All American active duty and civilian personnel serving in Europe can book a vacation at the Edelweiss, which is a full service resort.
Getting to know GarmischPartenkirchen

and endless other top-tier events, Garmisch offers skiing, boarding and much more. The Zugspitze, Germany’s highest peak, offers a serious tram ride to the top (the world’s longest) with plenty of high-alpine sliding on the glacier. A number of other smaller ski areas are perfect for the family like Hausberg, Kreuzeck and Alpspitze, which are interconnected. Time your stay right and catch one of the many ski jump events at Grosse Olympiaschanze. While you are there, hike up to the Partnachklamm, an amazing cavern hike along the mountain stream, the Partnach.
Getting there
By car, you can make it from Kaiserslautern in about five hours (if you don’t hit traffic) and it is a short 3.25 hours from Stuttgart.
Be sure to store your equipment in a safe spot as things get a bit interesting when the bar closes at 8 p.m. For dinner, the town of St. Anton has lots of great options from pizza (try Pizza Pomodoro) and sushi to typical Tyrolean fare (Restaurant Maximilian). Take heed, though, always make a reservation for dinner! Late night clubs are plentiful in St. Anton, as well. Many of the restaurants turn into hot night spots that are open late into the early morning hours. For lodging, holiday periods will be on the pricey side (as with all resorts), but non-holiday periods are actually quite reasonable considering the quality and location of this world-famous resort.
Getting there
From Kaiserslautern, it takes about five hours by car, and just over three hours from Stuttgart.
Best Snow: Zermatt, Switzerland
Whether you are looking for epic terrain, a ridiculous party scene, breathtaking views or amazing hotels, Sankt Anton am Arlberg has it all. First off, the resort is credited for its part in inventing skiing. It is also part of Ski Arlberg in the Tyrolean region in Austria, which means that when you buy your lift ticket, you also gain access to 88 lifts and 305 kilometers of pistes. Resorts such as Lech, Zurs, St. Christoph, Stuben, Warth and Schrocken are all interconnected and offer a wide variety of terrain for the whole family.
Known as one of the most reliable resorts for snow in the Alps, Zermatt sits high in Switzerland at 3,802 meters (12,473 feet). Because of the high elevation, Zermatt doesn’t have an opening or closing date. No joke; you can ski year-round! This car-free resort town, that sits next to the Matterhorn, gets storms from the east and south as they barrel through the Alps. Zermatt can be pricey, as you are both paying in Swiss Francs and for its high-end resort accommodations. If you are looking to save some money, you could also look at staying in Cervinia, Italy, which connects to Zermatt and uses the Euro currency. If you are going to do this trip though, do it right and stay in Zermatt (even if you only go once).

In terms of skiing, you can find extreme steeps as well as lazy cruisers at St. Anton. You can also find a vast network of trams (seilbahn) and gondolas (gondelbahn) that can get you quickly to other areas of the resort. In fact, take a minute to look at the engineering that goes into these amazing lifts. It’s not a bad idea to enlist the help of one of the many famous ski/snowboard schools no matter what level you are. You’ll pick up some great pointers as well as have a guide that knows exactly where to go for the best skiing/boarding experience. If you are looking to let loose a bit, apresski time (anytime after 2 p.m.) has lots of onmountain sun decks and bars. Keep your eyes open at the end of the day on your last run down the mountain for options, but a can’t-miss is the Mooserwirt, known for its great music and packed sun deck.
Maybe you don’t have a week or even four days to get down to the Alps, but you want to take the family skiing a bit closer to home. Try La Bresse in the Vosage mountains in the AlsaceLoraine region of France. The mountains there are not quite as big as the Alps, but with ample snowmaking, terrain parks and even hotel options at the base of the mountain, families can have a great time carving up the slopes. A single day pass is around 30 euros and ski and snowboard school rates are reasonable as well. There is cross country skiing available too.
