THE GOOD FIGHT

Veterans, we cannot thank you enough

Germany. Vietnam. Afghanistan. Korea.

These and other far-off countries don’t begin to cover the places many of our neighbors have shipped off to as members of this country’s armed forces.

My dad was too young to suit up for World War II, but immediately after the conflict he spent time in Germany as a military policeman.

My father-in-law was a WWII lieutenant, serving in the U.S. Army Signal Corps first in England and later the Philippines. A couple of empty shell casings from those islands sit prominently in our living room as reminders of his duty. He was recalled when the Korean War broke out but had been on the receiving end of a head-on auto collision in East Texas just prior to receiving his invitation. The family informed the army that his leg had been crushed; the army invited him to show up for a physical anyway. When they saw his body cast, he was dismissed.

He died in 1996, and my mother-in-law passed along the flag draping his coffin to their grandson after that young man’s Marine Corps tenure.

My military action ended before it began: My draft number when graduating from college was high enough that I wasn’t drafted. I stayed home and let others do the job.

Our cover story this month honors those neighbors, men and women, who answered the government’s call or simply raised their hands and volunteered. Truth be told, the story offers only a glimpse of their experiences as medics, bombers, intelligence officers and the like.

No doubt the real picture is: “You had to be there.” Even so, most of us are glad we weren’t.

The day-to-day reality of military life is unimaginable for those of us who went about our business unaware. Watching the Dallas Cowboys, kicking back at movies, zoning out on video games, sleeping safely at night: The selflessness of a few neighbors makes these things possible for the rest of us.

They served for our benefit without knowing us, just as we don’t know most of them or their stories. They just went quietly about their business, and then they came home. No fuss. Not enough fanfare.

Ellman is all about saving you gas money. That’s why he opened the second location of his restaurant Pakpao Thai in Preston Hollow Village.

“There is a lot of residential density around here and it’s off a major highway,” he says. “We love our Design District location, but it’s more of a destination.”

The menu, designed by celebrity chef Jet Tila, is pretty much the same at both sites. Appetizers include fresh spring rolls, steamed mussels and pork satay. For your main dish, order pineapple fried rice, salmon with green curry or crispy tamarind duck. The Chula Rita, a frozen drink made with lemongrass infused tequila, is also a big crowd pleaser. But perhaps some of the most interesting items at Pakpao aren’t on the menu, but the ceiling. Look up and you’ll see dozens of delicate, white kites.

“Pakpao means kite [in Thai],” Ellman explains. “As far back as the 12th century in Thailand, kite flying has been part of the culture.”

Ambrosia

FROM SOMALIA TO IRAQ

Lt. Col. Jeffrey Hauser’s call sign was “Doogie,” after the fictional teenage doctor played by Neil Patrick Harris.

“Let’s face it, I don’t look like a Marine,” he says. “I have a baby face. It was more of a baby face then because there was less gray hair.”

When Hauser first enlisted, he practically was a baby. Only 17 years old, he needed parental permission to start basic training in 1984. The military life suited him, so he decided to enroll in an officer-commissioning program. Upon graduation, he became a second lieutenant for the United States Marine Corps. He calls it “a fluke” that he was deployed or in combat nearly his entire career.

His first assignment was in Somalia, where he served as an assault amphibian platoon commander during Operation Restore Hope, helping to establish a protective barrier for humanitarian work following the bloody civil war. It was a dangerous assignment to say the least. He and his fellow Marines were under attack almost daily.

“I had never seen combat before,” he says. “Having somebody shoot at me and shoot at people, that was something that — you know, I’m a liberal arts guy, so that was kind of a wild, eye-opening experience.”

Hauser was responsible for a platoon of 15 vehicles. Only a handful of them were needed for most patrols, so he could have sent out a staff sergeant and stayed on land, where he was safe. But that’s not how he operates.

“Since my guys were getting shot at all the time, I went on every patrol,” he explains. “If something happened, I wanted to be there.”

That sense of duty helped him climb the ranks. After his stint in Somalia, Hauser became an intelligence officer and was promoted to major. In 2001, he moved to Norfolk, Va., where he worked for the Joint Forces Intelligence Command. He was one of the first people to see American Airlines Flight 11 crash into the Twin Towers.

“I knew the world was changing at that point,” he says.

Hauser’s life changed along with it. When the United States invaded Iraq, Donald Rumsfeld appointed 28 senior officers from dif-

ferent Military Occupational Specialties to watch and document the war effort.

“I was one of those 28,” Hauser says. “I was the subject matter expert for intelligence and for information operations.”

He describes this tour as relatively peaceful, primarily because most of the Iraqis he encountered seemed comforted by the Marine Corps’ presence.

“There were a few holdouts that supported Saddam,” he admits. “But until November 2003 it was pretty quiet in Iraq.”

It was a different story in 2006. Hauser was stationed in Fallujah, “during the height of violence in the al-Anbar Province.” He was the principal staff officer for intelligence, counterintelligence and security. As such, he was involved in many classified missions, the details of which he can’t divulge.

“It was the most dangerous of anything I’ve done, but at the same time the most satisfying,” he remembers. “You felt like you were making a difference in everything you did.”

To relax, he read poetry by Rudyard Kipling and wrote letters. That’s how he met his wife, Kerry, who was in Officer Candidate School at the Army base in Fort Benning.

“Her mom and my mom met on like, eDiets, a support group thing,” he explains. “Both of them are very religious and very outgoing, so my mom is like, ‘My son is in Iraq, you should send him a letter.’”

Kerry’s mother did just that. In her initial note, she asked that he reach out to her daughter and provide a few words of encouragement to help her through training. Hauser obliged.

tended college. In August 2014, after 27 years of service, Hauser retired.

“My wife wanted to come back to this area,” he explains. “I’m all about supporting her, because I’ve had my career.”

He now works at W.T. White, as the JROTC’s senior marine instructor. Hauser loves interacting with students and is completing a doctorate in education leadership. He’s also working on his principal certification and hopes to get a district superintendent license. But his career in the armed services will be hard to beat.

“I watched a lot of John Wayne movies when I was growing up,” he says. “And I’m an avid reader, so I had this kind of … romance of the military — the hardship and everything else, the shared pain — and for me, it was that way.”

MEMORIES OF VIETNAM

Preston Hollow resident Col. James Gilliland has an office full of awards and a box brimming with medals. Perhaps his most prestigious decoration is the Silver Star, which he earned for his service in Vietnam. As part of the 11th Tactical Reconnaissance Squadron, he flew an RF4C over the northern part of the country. He was charged with photographing the destruction about 10 minutes after each air raid.

“We had no weapons,” he says. “We were unarmed … We’d brief ourselves on what we would do if one [of us] was shot down.”

In addition to these missions, Gilliland was involved in a then highly classified attempt by the U.S. government to induce rain in Southeast Asia.

“I was controlling the weather,” he explains. “I would take pictures of the flooding and I was seeding the clouds.”

Back home, his wife, Neva, cared for their four children.

“We’d just get letters once in a while,” she says. “We just had to spend a lot of time praying on our knees and just getting through each day and trusting that the Lord would take care of him.”

Gilliland knew his time in Vietnam would be perilous. Before his deployment, he underwent intensive prisoner of war training in Nevada.

“They treated us like we were prisoners,” he remembers. “They had men that were dressed as if they were the enemy and they gave us — I think it was 2 pounds of meat, two potatoes, just a few things … so we had to scavenge for our food.”

Because he was “the little guy” and “could get low enough in the sage brush,” Gilliland was chosen to “escape.” The desert dust dirtied his uniform and hurt his eyes, so he found an empty barracks. There, he took a shower, dried off with a bed sheet and called a friend to pick him up.

“If you had escaped, you had to be back at a certain time,” he explains.

Gilliland hopped in his friend’s trunk and

they sped toward the POW camp, where the headquarters people were.

“[My friend] opened the trunk, so I got out and ran in,” Gilliand says, sounding surprised and amused that they pulled it off.

North Vietnam was so dangerous, the Air Force typically sent pilots home after their 100th mission. But, at the end of his combat tour, Gilliland was sent to Saigon, where he found himself in the midst of the Tet Offensive. He says the extreme violence he witnessed there is difficult to discuss.

When he finally returned to the States, Gilliland completed his master’s degree in management and then moved to Honolulu where he worked at Hickam Air Force Base. In 1972 he returned to Thailand and helped “establish a new satellite tracking facility for North American Aerospace Defense Command’s (NORAD) world surveillance system.” Eventually, he and his family moved to England. He worked first in Oxford, as the Deputy Base Commander of the 20th Fighter Wing, and then in London, helping the United States close down operations at the Royal Air Force base. Ironically, it was in the United Kingdom that Gilliland had his most memorable Fourth of July.

“Neva and I went to the event early because they were going to have dignitaries there, and so forth,” he remembers. “I must have been looking down or something, because I saw black shoes in front of me. I looked up and it was Jimmy Stewart. He said, ‘Move over.’ He wanted to sit between us.”

After three decades of harrowing flights and run-ins with movie stars, Gilliland retired. But the colonel remains an active member of our community. For years, he was part of the Institute Review Board at Presbyterian Hospital and sat on the Preston Hollow Neighborhood Association’s board of directors. He now chairs the wellness committee at Edgemere senior living and enjoys relaxing with Neva, who is glad to finally have him settled at home.

“We just live,” she says. “We just live together.”

THE FIRST WAVES

It’s hard to believe Lorraine Chevalier “Chevie” McDonald is 95 years old — she flits about her apartment at Edgemere senior living like it’s a college dorm. But she graduated from the University of Pennsylvania in 1940, with a degree in political science and was working as an assistant buyer for Macy’s when Pearl Harbor was attacked.

“I was insulted, the way everyone else was, that the Japanese would do that,” she says. “I wanted to do something.”

As a woman, her options were limited. She could have become a nurse or entered the Women’s Army Corps, but McDonald had her sights set on the Navy.

“I had a lot of friends in the Navy — boys,” she explains. “One special friend of mine was at Pearl Harbor.”

Luckily, in 1942, thanks in large part to the efforts of Sen. Margaret Smith, Congress passed a piece of legislation, authorizing Women Appointed for Volunteer Emergency Service (WAVES), an all female division of the U.S. Naval Reserve.

“I was determined to go in the first class,” McDonald says, emphasizing the word “determined.”

But enrolling in the Officer Commissioning Program wasn’t easy. Applicants were required to have a letter of availability from their employers and McDonald’s boss didn’t want to cooperate.

“I got a letter [from the president of Macy’s], saying I was unavailable because all the boys were leaving, and they didn’t want everything to be left vacant,” she explains.

Despite this setback, she set up an interview in New York with a recently sworn in female officer. McDonald showed her the disappointing letter, which turned out to be a great decision.

“She said, ‘Oh, I know [your boss] very well — I was head of human resources for Macy’s’,” McDonald remembers. “She took the letter and ripped it up and I was in, so I was very happy.”

For training, McDonald went to Smith College in Northampton, Mass. It was winter and she remembers being cold, especially in the mornings. The WAVES had to be in uniform and outside by 6:30 a.m. They studied “all kinds of things” — naval history, military protocol, airplane and ship identification.

“We had to take typing,” she says. “We had all come from good jobs. We had had people type for us and we thought, ‘This is awful. What are we going to do? Then we found out they needed communications officers ... We were coders and incoders of Navy secret messages. We had to put the open messages into code and then the ones that came in from all over the world we had to decode.”

For McDonald and many of her cohorts, this coding and incoding took place behind locked doors in New York City. In the Big Apple, she says the WAVES were “an oddity” but largely well received. However, some of her male counterparts made wisecracks.

“Sometimes they’d say something about, ‘You’re taking my cushy desk job’,” she says. Her response? “‘Oh, and aren’t you happy that you’re going out to sea?’”

While living in the Village, McDonald began dating her husband, Bob, who was also in the Navy. She had known him in college but didn’t consider him a viable partner then because he was a bad dancer. Somehow, he won her over and they were married at Saint Patrick’s Cathedral. Two years into her service, she became pregnant with their first daughter and had to leave the WAVES. Her departure from military service was bittersweet.

“I was delighted that I was going to have a baby,” she says. “I thought that was exciting. Also, it was exciting because my husband got orders to go to Guantanamo Bay in Cuba and the baby and I were the first civilians to go on a ship out of New York after [Victory over Japan] Day.”

McDonald loved Cuba. Their house was large and had a beautiful garden. She would have been happy to stay forever, but Bob left the Navy and took a job in New York at a food manufacturing company. Eventually, he got a better offer in Dallas, so they settled in Preston Hollow “because it was full of trees.” She enrolled her 8-year-old daughter at Ursuline and her 11-year-old son at St. Marks — her two eldest children were already in college.

Though they were separated by distance, McDonald and her fellow WAVES remained close friends.

“I guess we were all in this together,” she says. “We had a single purpose. We really were bonded.”

Sweet tooth

How two Preston Hollow women built a raw food empire.

Right away, Susan O’Brien admits she isn’t perfect.

“I’m definitely guilty of eating all kinds of yummy, awesome cheese fries and things like that,” she says. “But I’ve always been interested in how foods can make you feel better or improve your health.”

In 2006, O’Brien trekked to Santa Monica, where she studied for two weeks under Juliano Brotman, an acclaimed raw food chef. It was life changing. She decided to quit her job as a designer of clinical laboratories for area hospitals and start a health food line called Hail Merry.

“I took everything I learned from [Brotman] and then I read every other book I could get my hands on and I just started experimenting with different recipes,” she remembers.

Most of those experiments took place in the cabana behind her Preston Hollow home. There were, of course, a couple mishaps along the way — a tiny little fire, interruptions from her three young children, etc. — but after a few months, O’Brien had a handful of marketable products. She packed up her good-for-you chocolate tarts and began looking for a retailer. Roy’s Natural Market, the now

defunct vitamin store that once stood in our neighborhood, was the first to bite.

“He was a grumpy old guy — nice but grumpy,” O’Brien says of the shop’s proprietor. “He said, ‘Okay, people have been asking for the raw food, you can come in here.’”

Hail Merry was an instant hit. Armed with impressive sales figures, O’Brien went to Central Market and the Texas grocer agreed to carry her goods. She set up a booth and started handing out samples right away.

“The visual of being at Central Market in the dairy section is I think what launched the brand,” O’Brien muses. “I’d show up every Monday and the shelves would just be decimated — everything would be gone.”

Around that time, Sarah Chapin, another Preston Hollow resident with decades of high-profile food industry experience, came on board as chief executive officer.

“I didn’t know much about raw food, except that I loved ‘Sex in the City’ back in those days,” Chapin says, laughing. “There was Smith

Jared, who was this really great looking guy, and he was a raw food waiter in an episode.”

She got up to speed pretty quickly and even became a health food convert — she’s lost nearly 40 pounds since working at Hail Merry. Chapin hired chef Alison Brushaber to help perfect the treats and, with the two of them in the mix, O’Brien’s brand grew exponentially. More than 1,900 retailers nationwide now sell her products. The line includes various flavors of tarts, macaroons, nuts and seeds. Everything is vegan, gluten free, non-GMO and dehydrated at a low temperature, rather than baked, to preserve nutrients.

Several celebrities have hopped on the Hail Merry bandwagon, including Jessica Alba, Zooey Deschanel, Tory Johnson, a few famous athletes and, maybe, Will Smith.

“We understand that Will Smith is a big fan, but we don’t know that for sure,” O’Brien explains. “We were doing a show and the buyer of the Erewhon market in L.A. said, ‘Will Smith is your biggest fan. He comes in and buys this stuff by the case.’”

Despite its enormous success, the company culture at Hail Merry remains laid back and intimate. The team eats lunch together every day and all of the products are still made on site. O’Brien takes pride in both points, especially the latter.

“It’s part of the great American resurgence — to be makers and to be manufacturers again and to be close to what is being made,” she says.

Chapin agrees. “We’re working with purpose and we say that not casually — how great it is to wake up and not only create jobs but put food on the table.”

Justin Bieber says he “just wanna honestly live like Jesus.”

Good for him. Good any who wanna honestly live like Jesus. Justin says: “Jesus created a pretty awesome template of how to love people and how to be gracious and kind.” Yes, and we need more love, graciousness and kindness.

The 21-year-old pop star was reared by a Christian mother but admitted he has veered off course. He couldn’t handle the juxtaposition of faith and fame. That’s hard for anyone, let alone someone as young as he. His often bizarre behavior was good fodder for tabloids and good business for paparazzi.

So let’s applaud this renewed spiritual direction for someone who is refocusing his life and can be a positive role model in the years ahead. The question I have is whether he can sustain his intentions. Like so many others these days, Justin views his relationship with Jesus as personal and individual. He and Jesus are going it alone.

Justin’s take: “You don’t need to go to church to be a Christian. If you go to Taco Bell, that doesn’t make you a taco.”

Hmm. Since he opened the analogy, let’s just go with it. You are what you eat. When you consume tacos, you are nourished (or malnourished) by them. Your body changes in response to what you take in. The spiritual principle is the same: When you eat the bread and drink the cup at the Lord’s Table in church, you are feeding on the food of Christ’s eternal truth, goodness and beauty. You begin more and more to reflect what you have consumed.

Our culture has a dismissive attitude toward the church, and the infrequent attendance of many church members reflects at least a “take it or leave it” attitude.

To some degree, the church itself is to blame. We like to draw bright lines about who’s in and who’s out. We are often as sinful within the church as those we point fingers at outside it. Our churches spilt and splinter more than a piece of dry wood. We deserve some disdain.

Nonetheless, where else will you go to find the company that will accompany you all the way to heaven? “Bad company corrupts good morals,” St. Paul said, quoting an ancient Greek playwright (or was it my mother?). Church is where we help each other persevere in the way of Christ.

Christianity is communal. We need each other. I admit it: I’m a pastor with a vested interest in the link between personal faith and congregational life. But is it really possible to be a Christian for long on your own? Won’t a flaming ember die quickly when blown from the fire?

Jesus is not just a historical figure to be emulated; Christians believe he lives now in and through his body on earth, the church.

A body is not bunch. Take an onion out of a bunch; the bunch will hardly miss it and the onion will still be an onion. But separate an arm or a leg from a body, the whole body will be impaired and the limb will soon die from being cut off from the source of life.

Praying for Justin and all the “Beliebers” out there trying to go it alone in faith. We’re keeping a pew warm for you.

The new restaurant will offer lunches of sandwiches, soups and salads as well as the same sweets that the Downtown location has. That includes French macarons, cake pops, cookies, cupcakes and brownies. The new Hospitality Sweet location could open as soon as January.

Reverse food truck

The NorthPark Presbyterian Church has a new food truck. The two-tone blue truck doesn’t offer artisan sliders or authentic bahn mi, though. This is the Reverse Food

Truck If you see it parked in front of a neighborhood grocery store, expect a volunteer to ask for your donation of groceries. Shoppers can buy food to help financially struggling families or use a virtual food menu to make monetary donations. The church gives 100 percent of donations to its partners, including Vickery Meadow Food Pantry to “put hunger in the rearview mirror.”

New at NorthPark

Two new stores and a restaurant open at NorthPark this month. Sundance carries southwestern inspired clothing and home goods and was founded by Robert Redford in 1989. Peruse the shop on level two, between Neiman Marcus and Nordstrom. On level one, between Nordstrom and Macy’s you’ll find AG , a purveyor of denim jeans. Designs are sleek and classic rather than trendy. “Through a collaboration with over 60 area and national organizations, C.C. Young has enhanced its services so that each individual can grow in body, mind and spirit, no matter their life circumstances or limitations,” says Denise Aver-Phillips, vice president of community outreach.

These partnerships within the local community are a high priority at C.C. Young, connecting seniors to everything that Dallas has to offer. Additional partners include Bass Performance Hall, Dallas Zoo, Dallas Museum of Art and Nasher Sculpture Center, to name a few.

Community engagement is further enriched by volunteers of all ages and beliefs from church, youth and school groups, as well as community volunteer organizations.

“Volunteers help out with everything from Mardi Gras parades and Academy Award red carpet makeovers to painting fences, planting and beautifying the campus — generally just spreading the love,” Aver-Phillips says.

Speaking of beautifying, C.C. Young recently unveiled a brand new sculpture pavilion within the community’s central park. The pavilion, which is open to the public, was dedicated at the annual Grandparents Day celebration.

Monticello West is another retirement community in Dallas where opportunities abound for seniors to pursue community engagement and personal development. The recently expanded activities department now boasts two fulltime activities directors for independent living and assisted living, plus another one for memory care.

“Our goal is to get residents out in the Dallas area to enjoy marvelous opportunities such as the Perot Museum, Dallas Arboretum, The Meadows and Klyde Warren Park,” says sales and marketing director Nan Mulvaney.

Giving

The Junior League of Dallas donated $30,000 to STEPS, the Boys & Girls Clubs of Greater Dallas mentor program which helps high school students navigate college admissions. The gift marked 10 years of the Junior League’s support of the Boys & Girls Clubs. It will help more than 300 students per year become college-ready.

More than $5.5 million of the funds raised for North Texas Giving Day recently came from Preston Hollow. Collectively, Dallas-Fort Worth residents and organizations contributed $33.1 million. More than 110 monetary gifts were made per minute, making it the most successful Giving Day in history.

Education

The Lamplighter School hosted Lee Berger, the scientist who discovered Homo Naledi. Berger, who also visited the St. Mark’s classroom of teacher John Mead in 2012, gave the school the very first skull cast of the Homo Naledi species. Another neighborhood connection: His research received funding from the Lyda Hill Foundation.

Sculptor George Tobolowsky, a Hillcrest High School alumnus, donated one of his pieces to his alma mater. The artist started out as an attorney, obtaining a law degree from SMU in 1974. He worked for decades in the business sector until about 10 years ago, when he became a fulltime artist. Since then, he’s produced more than 425 sculptures and exhibited in Switzerland, New York and India. He has works in the Library of Congress, The Museum of Biblical Arts and the Blue Star Contemporary Art Museum in San Antonio.

“Artist as Teacher/Teacher as Artist,” an exhibit composed of paintings, photographs and sculptures by local teachers, is on display at The Episcopal School of Dallas through Dec. 5. Participants include educators from Hockaday, Jesuit, St. Mark’s, Ursuline, Lamplighter and The Winston School. Admission is free. Visit esdallas.org for details.

Dr. Robert D. Londeree, a resident of Edgemere senior living, recently took an all expense paid trip to Washington D.C. His two day long vacation came courtesy of Honor Flight DFW, a local nonprofit that thanks veterans by taking them on tours of our nation’s capital. Londeree served in the U.S. Army during World War II and the Korean War. Post-military, he became one of the first oral surgeons in Dallas.

GUNFIRE LEAVES ONE DEAD

Dallas police shot and killed an armed man at the Avondale Parc Apartments on Stone Canyon Road in September.

Police were responding to a car accident near the apartment complex just before midnight Sept. 21 when they received an unrelated call reporting gunfire in the complex.

Gerardo Ramirez, 24, had fired a pistol several times into the air, and neighbors called police. When officers ran toward him, he hid between two cars and began firing at them. Officers returned fire, and more than a dozen shots were heard. During the incident, Ramirez reloaded his weapon at least once.

Ramirez died at Presbyterian hospital, and no police officers were injured.

Ramirez’s girlfriend later told police that her boyfriend had been using drugs and was behaving erratically. She said he told her that he didn’t want to live anymore and that he wished to shoot police.

Ramirez had a criminal record that included drug possession and burglary. —Rachel
