ME VS. THE IPAD
Only, the first time I wrote that sentence, it looked like this instead:
IM etitingjthis column on j Apihp,rSnrei Ad.
You see, the iPad has a virtual keyboard — it’s a bunch of letters projected on a piece of glass. So when I type, I can’t feel the keys and don’t sense the feedback I’ve felt for most of my typewriter- and keyboard-filled life.
And because typing on the iPad feels so different — it doesn’t feel like anything at all, really — I can’t do what I normally do, which is type along with my thoughts. This new technology actually isn’t better than what I already have; at least, it isn’t better today.
So why am I telling you all of this, along with giving you an example of my notably lacking skill with the latest in technology?
I’m in a business that requires keeping up with, even keeping ahead of (if that’s possible), new technology. If I don’t, I might not have a job in a few years. Or so it seems today.
And I’m probably not alone. How many of our businesses, and how many of our jobs, are “safe” these days? Perhaps there was a time when we could punch the clock all the way to retirement, and perhaps there’s still a job or two out there that allows that mentality. But for most of us, feeling uncomfortable using the latest technology is the least of our employment challenges. Even the people at Burger King and McDonald’s have to know a little something about technology to run the cash register and fry the fries, it seems.
And changing technology doesn’t stop with our jobs. The cameras we use now can tell where we’re taking the pictures, and some of them can even send photos off wirelessly without a computer. The televisions we watch generate video so crisp and sharp that you can see the acne beneath actors’ makeup. And cars we drive are so filled with computer chips and software programs that a Lexus can actually parallel-park itself — seriously — with no help from the driver.
So here I sit with an iPad in my lap, telling myself that learning this particular new technology is worth the time and effort I’ll need to invest in it, knowing full well that in a year (or maybe even just in time for the 2010 holidays)
what I’m learning today will have to be learned all over again on a newer piece of plastic, alu-

minum and wires that works differently but still promises the same thing. Which is always independence, intelligence, success and wealth. Or, as that last sentence shows up on my iPad when I switch from hunt-and-peck typing to my normal multi-finger typing skills: Which isa, wayisindd
Encencd, inxgdllivdncd,xj. DzNdcsddlHg. Hope I figure out how to do this before it’s too late.
I’m using it because I have to, not because I want to I’m writing this column on my new Apple iPad.

CHEW ON THIS// We write about a lot of stuff each month on our site (city hall, schools, crime, etc. ...), but perhaps nothing generates more discussion than our restaurant posts. Below, a sampling of the latest in neighborhood eatery news (and a taste of what you’re missing if you’re not visiting advocatemag.com regularly):
From RESTAURANT TALK: TOULOUSE
The usual crowd looks like the haute couture of Highland Park—if you can fight through the collagen, Jimmy Choos and $2,500 handbags, you are in for a great food experience...
...From beginning to end — or from Goat Cheese Tarte to Chocolate Mousse — I loved Toulouse. The waitstaff are extremely attentive and are quick to give opinionated yet able food recommendations.
After one visit, I was dreaming in techno color chocolate. The dark chocolate mousse served with whip cream, raspberries, and a chocolate pirouette is pure evil genius. It is rich enough to share, but if you are anything like me, you won’t.

JACKSONFrom HIBASHI ADDS NEW LUNCH ITEMS
Hibashi, which serves Japanese, Korean and Asianfusion cuisine, has added a bigger bento box to its lunch menu, including beef teriyaki, Atlantic salmon teriyaki, grilled Pacific shrimp, Korean barbecue beef ribs and glazed Chilean seabass.
It all comes with miso soup, the garden salad, tempura and veggies, Japanese gyoza vegetable dumpling and a choice of either a California roll or spicy tuna roll. It costs $12, but based on the amount of food you get, you could easily split the meal, especially if it’s just lunch. —EMILY TOMAN

From RESTAURANT TALK: HIBISCUS
Their Baked Dungeness Crab Dip appetizer is exquisite. The Lobster L’Orange is ambrosial. But their desserts are beyond divine. After indulging in a wonderful meal at Hibiscus, be sure to follow up with the pièce de résistance — dessert. Each of their desserts are large enough for a family of four and are less than $10, which for their size is quite a decent value. I’d
recommend sitting in the front room in a deep booth for dessert and drinks with friends after a night out. Hibiscus offers upscale New American cuisine and is located on Knox/Henderson. —CANDANCE THARP

QUESTION OF THE MONTH
It’s hot to trot out there, no? We asked, you answered what’s the best way to stay cool (or at least not insanely overheated) in your neighborhood?
Enjoying an ice cold margarita at Glorias!
—LISA MARIE LOVINGThe reason I love Neuhaus is because it’s perhaps the only place I can score a pound of Gummi Bears and a good latte (or a glass of wine, depending on what kind of day it’s been) while knocking out some work on my laptop. And they always play great music, to boot. During a recent visit I heard a 1992 R&B ballad followed by indie rock. It’s also one of the few places in our neighborhood that offers live music regularly.

DIDJA KNOW?
A few wooden 2-by-12s and some soil can go a long way. Just ask Hillcrest Forest resident Earl White who planted a small herb and vegetable garden on the side of his house, enlisting the help of neighborhood children. “It makes me happy to see all the young kids,” he says. “It puts them to work. They feel productive.” White has been living on the west end of Midbury for 38 years, watching the street evolve through three generations of families. “The neighborhood is very social,” he says. “We keep our little cul-de-sac busy.” So, it wasn’t long before White’s garden idea caught on with two other neighbors. It all began last year while his wife underwent cancer treatment. White visited her every day but needed a distraction. “It was an outlet for me,” he says. “I had been thinking of starting a garden anyhow.” He built two, 12-foot containers, filled them with dirt, installed a watering system, and started planting one of everything. But that didn’t work out too well. His okra plant grew a few feet with only one small okra pod on top. “You could make barely a cup of gumbo out of that,” White says.“You learn as you go.” So he started planting several of each seed — strawberries, watermelons, green peppers and tomatoes; basil, mint, chives and parsley. But while life was sprouting from White’s garden, his wife was losing her battle with cancer. She died last August, and he had to adjust to life alone after 37 years of marriage. Today, he has the company of neighborhood kids, like Josh next door, who helps rake leaves and plants some of his very own fruits and veggies. White has room to expand the garden, and plans to involve more children by sectioning off patches just for them. A lot has changed since the Whites moved into the neighborhood more than three decades ago. “We were the young kids on the block,” he says. “Now, I’m the grandpa.”

? As the OWNER of a dog or cat, what do I need to know about Dallas REGULATIONS ?
Common sense and a strong fence will go a long way toward keeping you and your pet out of trouble. But there’s more to it than that. To keep things safe and legal, here’s how it works:
1. Register your dog or cat with the City of Dallas Animal Services department by mailing up-to-date vaccine information along with a $7 fee for spayed or neutered pets and $30 for unaltered pets. This is not just a way for the city to make some quick and easy cash. The process prevents the spread of diseases such as rabies, and helps prevent the forced euthanization (of which there were more than 26,500 last year alone) of unwanted pets. Pet owners who do not wish to spay or neuter their pets can obtain an intact animal permit for an additional fee of $70 per year if they are a member of a purebred dog or cat club, or have completed a responsible pet ownership class.
2. Up to four dogs or cats can live in an apartment or condominium, up to six in a single-family home, or up to eight in a home with more than 1/2 acre of land. This law became effective in 2008 and includes a grandfather clause for anyone who owned more than the allowed number prior to 2008, as well as a provision for volunteers fostering homeless dogs and pets for approved rescue groups.
3. It is illegal to tether or chain a dog. When dogs 6 months and older are confined outdoors, their yards, pens or kennels must be at least 150 square feet, and each dog must have a weatherproof, three-sided shelter.
grab-bagLAUNCH
4. When dogs or cats are outside their home or yard, keep them on a leash. The only exceptions to this are designated off-leash dog parks or freeroaming feral cats that are part of a trap, neuter, return program. When a cat is spayed or neutered through a T-N-R program, the vet “tips” one ear, so you can easily identify a participating cat in your neighborhood.
5. A dog that barks while protecting his home isn’t a dangerous dog; he’s just doing what dogs do. But one that causes injury could be officially deemed a “dangerous dog”. If a dog is outside its home or yard and causes serious injury to a person or another animal, a resident can request a city hearing to determine whether the dog should be declared dangerous. No fines are involved and no monetary damages are awarded, but if a dog is determined to be dangerous, its owner faces serious consequences. The dog may be euthanized, ordered out of the city, or allowed to return home if the owner complies with a stringent set of rules that includes paying a “dangerous dog” registration fee of $50 per year. Currently, 21 dogs that have been deemed dangerous live in Dallas.
6. Other good rules to know, whether or not you own a pet, is that it’s illegal to place poison where it is accessible to a dog or cat; to sell or give away pets on any property except for pet stores, animal shelters and animal rescue group adoption sites; to offer animals as prizes in auctions, raffles, giveaways or other promotions; to transport a dog in the open bed of a pick-up truck, unless it’s in a carrier; or to fail to pick up after your dog.

ALTANO 2007 ($10) PORTUGAL>
July around here is known for two things — the course, and heat. The average high temperature 95, and the record high for every day is 105 or month’s 31 days.
So why do so many wine drinkers insist on drinking red wines for holiday picnics and backyard barbecues July? Your guess is as good as mine. Those wines, their high alcohols and rough tannins, sound pleasant as sitting on the roof during a July afternoon.
The explanation that I usually get from red drinkers who insist on red wine even though it makes the sweat bead on their foreheads is that they like white wine. You can’t argue with that, and know because I have tried and failed. Instead, I learned to recommend red wines that offer the wine qualities they like, such as dark fruit without trace of sweetness, without the qualities that make big red wines so unpleasant in hot weather.
Generally, these wines aren’t always from the known parts of California (or California at all). yet, because they aren’t always from the best-known parts of California, they are often inexpensive almost always offer good value. These three are just start and are all available at Central Market:
This red blend from the Rhone region of France, mostly grenache, is and well-balanced (think red fruits) with some black pepper. Given how cute the name and label are garden fence, while jardin means garden in French), it’s surprisingly good. Put this in the refrigerator 20 or 30 minutes to cool it down, and drink it any kind of grilled beef.
Riccardo
Cotarella, who oversees this line of Italian wines, genius. The Falescos are always cheap, always made, and always deliver value. The sangiovese cherry fruit, acid and even some minerality, and head and shoulders above similarly priced Chianti. Drink this with smoked chicken or most roasted vegetables.
This red blend from Portugal is one of the great secrets of the cheap wine business. It has lots of raisiny fruit — think of it as much lighter version of an Australian shiraz. It’s suitable for porch sipping and hamburgers.

WITH YOUR WINE Chicken breast in lemon juice and olive oil
What better to grill than chicken breasts marinated in the ingredients in which chicken breasts were made to be marinated? Plus, it involves pounding the breasts (use a rolling pin), and that is always therapeutic. The Côté Jardin, despite being red, would pair nicely with this.
Serves four, takes about 20 minutes (Courtesy of Barb Freda)
4 boneless, skinless chicken breasts
Olive oil
Juice from one lemon
2 cloves crushed garlic
A couple of stems of fresh rosemary
Salt and pepper to taste
1. Pound the breasts until very thin. Place in a Zip-loc bag.
2. Add olive oil, lemon juice, the crushed garlic, fresh rosemary, salt and pepper. Marinate in the refrigerator until dinnertime. Remove and grill until the chicken is done.
ask the WINE GUY?
WHY DO WE CALL THE WINE SANGIOVESE, AND THEITALIANS CALL IT CHIANTI?
In Europe, wine is labeled by the region it’s from, so sangiovese made in Chianti (which is in Tuscany) is called Chianti, just as red wine made in Burgundy is called red Burgundy. In the United States we label wines by grape, so it’s sangiovese and pinot noir.

Janice Wolff turns a lot of heads in her neighborhood — at least when she’s strutting down Chevy Chase Avenue with Ruby. “Nobody even knows who I am; I’m just Ruby’s mom.” Children come running when they see the playful, stout bulldog, and adults have even asked to take pictures of her. “I’ve thought about renting her out for parties,” Wolff jokes. Ruby was the last pup left from a friend’s litter, and Wolff decided to take her home on a whim. “She was the leftover, but she ended up being the prize.” Ruby has claimed her napping spot on some blankets inside the linen closet. Although bulldogs are thought to be slow and a bit lazy, Ruby is defiantly not. She’s all about toys that honk, especially the ugly, rubber chickens. On walks, she likes to grab stray baseballs from the nearby field. And she always stops to say hello to neighborhood children. “She loves kids. She has to go up to all the strollers and look in,” Wolff says. And the kids love her back. “She just eats it up.”
NAME: Sam
BREED: Bengal
SIZE: 10 pounds
AGE: 10
MOM: Patricia Ivanisevic
Sam is about as close as it gets to a domesticated tiger, and Patricia Ivanisevic’s living room is his jungle. “They’re wild,” Ivanisevic says of Bengals. “That’s why I don’t have drapes.” Bengals lead active lifestyles and are intelligent. Sam is no exception. But this troublemaker also may have saved his owner’s life. In April 2004, during the middle of the night, a fire started in Ivanisevic’s kitchen. Sam awoke Ivanisevic before the smoke alarms even sounded. She had two other cats at the time that just hid underneath the bed. “If he hadn’t alerted me, I couldn’t have gotten out as quickly.” When he’s not being a hero, Sam’s on the move, jumping around the furniture and even opening cabinets. Unlike most cats, he loves the water and likes to lounge inside the shower. And he doesn’t cut corners when it comes to hygiene. He has two water bowls — one to drink from and another to rinse his paws after tiptoeing through the litter box. At bedtime, he climbs up next to Mom and nestles underneath the covers — a peaceful end to a rambunctious day. “He’s very loyal,” Ivanisevic says. “He never scratches or bites. I just love him.”
NAMES: Delta and Buster
BREEDS: Japanese chin and bulldog
SIZES: 11 and 68 pounds
AGES: 5 and 1
MOM: Robin Bruce
As a single mother of two preteens, Robin Bruce says she gave up on getting a man in the house, so she got a bulldog instead. “The dogs help teach the kids responsibility,” she says. The yard doesn’t have a fence, so Buster and Delta must be walked every morning and evening. Delta is the quintessential lap dog and queen of the house. Buster is energetic and loves to play, but he can’t resist his favorite napping spot on the cool, stone entryway. “He’s just crazy-happy,” Bruce says, adding that the pair together just make life more interesting. “They’re more to us than dogs.”
NAMES: Brutus and Bobo
BREEDS: chihuahua
SIZES: 8.5 and 10 pounds
AGES: 11 and 10
PARENTS: James and Renee Cameron
If you’re a guest in the Cameron home, you might notice one, two, three or more toys mysteriously gather near your feet. “Then you look down, and you have a semicircle of five toys around you,” Renee Cameron says. That’s the work of Brutus the Chihuahua, eager to play and trying to figure out your preference — a fleecy, stuffed bone? Or how about one that squeaks? Brutus and his more reserved partner, Bobo, are simply known as “the boyz”, and they’re pretty much inseparable. “If you have one small dog, you should also have two. They love one another so much,” Cameron says. And they both have their own set of talents and quirks. Bobo does his part of the yard work by furiously digging next to Cameron while she gardens: “As if he’s helping me.” She says he’s definitely the alpha dog and helps keep tabs on Brutus, the 11-year-old “perpetual puppy”.
NAME: Ada
BREED: pug
SIZE: 18 pounds
AGE: 9
MOM: Lori McCracken
Ada’s one lucky dog. She was a puppy mill victim, and when Lori McCracken found Ada, she knew she had to save her. “She probably had about two more weeks to live,” McCracken says. Suffering from pneumonia, ear mites and a torn retina, Ada underwent several weeks of treatments and surgeries before she could live a normal life. Today, she’s a happy, middle-aged pug that goes nowhere without her favorite stuffed cow. At bedtime, she clutches the toy in her mouth before falling asleep.
“It’s like her little binky.” McCracken is a local acoustic guitarist and singer-songwriter and can tell when she has created a good song because Ada pays attention. But as far as tricks, “She’s a first-class lap dog.”

FIGHtING WORdS
A LONG HISTOR y OF LETTING OUR LANGUAGE dI v IdE US
Hebrew scriptures. Judges 12.
Ephraim is getting the worst of the battle, and they decide to head for home. On their retreat, they come to the fords of the Jordan River. To get home, they must get to the other side, but since there are no bridges, they must go to a good crossing spot.
The order has been given to all the Gileadites to slay any Ephraimite on the spot. Naturally, they go to the crossing places of the river to nab them. Their problem is that they don’t know how to tell the difference between a man from Ephraim and one of their own — they all look the same.
The problem is distinguishing friend from foe. It wasn’t enough to say, in the common parlance of the sentry, “Who goes there?”
It was then that the Gileadites remembered that the men of Ephraim had a peculiar accent of their own, pronouncing some words differently from any of the other tribes. The word “shibboleth” was the term that meant either “river” or “grain”. So when a man from Ephraim, fleeing for his life, was apprehended by a man from Gilead he would be asked: “Friend or foe?” Naturally he would respond that he was a “friend”.
Then came the big test. Those who have endured the study of Hebrew know that one of the more delicate aspects of Semitic languages are the sibilants. The fact is that the Ephraimites simply couldn’t pronounce “shibboleth” because their dialect did not include the “sh” sound. No matter how hard a poor soldier tried, no matter how he twisted his tongue, the best they were able to manage was “sibboleth”, and they were killed on the spot.
According to the text, 42,000 soldiers came to the ford, 42,000 thousand said “sibboleth”, and 42,000 were killed.
It’s an interesting, if obscure, biblical story. However, it gets more interesting when we remember that the word “shibboleth” has found its way into the English language. The dictionary defines it as “a peculiarity of pronunciation, behavior, mode of dress, etc., that distinguishes a particular class or set of persons.” Another rendering is “an arbitrary test to prove membership in a group.” A modern shibboleth can be a word, an idea or an opinion that
clearly indicates to which groups you belong, and to which groups you don’t.
The world today is full of shibboleths. We commonly “test” each other according to buzzwords, slogans and sound bites. It’s convenient, really. Instead of genuinely listening to another, through a little ideological shorthand we can categorize, stereotype and catalog
everyone we meet.
Someone has wisely said: “The problem with some people is that they understand everything too soon.” That’s the problem with shibboleths; they lead to stereotypical ways of relating with each other. They keep us from listening further, from learning, from understanding.
This July, as we celebrate the birthday of our nation, I am concerned that our political discourse is not what it should be. We are too often divided into ideological camps, like the Gileadites and the Ephraimites. We speak too much, and seldom listen.
Let me suggest that this year we try letting go of the shibboleths, take in the fireworks, and feel grateful that we live in a free country.

Think relaxing experience and the first thing that comes to mind is definitely not a visit to the dentist. Dr. Ashly Cothern and her caring team are well aware of this and take every measure to make their patients feel relaxed and right at home. Breathe in fresh, purified air, listen to your favorite tune, kick off your shoes and snuggle into a blanket and for the more anxious, oral sedation is available.
Dr. Cothern is one of a small percentage of dentists in Dallas who has invested in postgraduate training at the Pankey Institute.
To create your beautiful smile, a full suite of restorative and cosmetic dentistry patient services is offered. And whether you have a single tooth that needs to be restored or your entire mouth needs reconstruction they can help. The practice also offers teeth whitening. It is one of the least invasive cosmetic procedures today, so you can be in and out of the office in a few hours with the ZOOM! Whitening System.
Dr. Cothern is focused on partnering with each patient to provide a customized preventative dentistry program. She advises that to maintain oral health, regular appointments are key. My family and I sacrificed a great deal to come to America. Despite the hardship, we never lost focus of our American dream. After years of hard work, we were able to afford our own home, but our Realtor was not very helpful and the buying process was quite confusing. Even so, being a homeowner is a dream come true, so I became a Realtor to help others. T HE GLASS BROKE , AND HE GRIPPED THE GUN TIGHTLY.
Latchesar Slavov had lived in Preston Hollow for 14 years before moving to Farmers Branch. But he liked the area so much he decided to return. Slavov found a short-sell home he liked, and entered the buying process with the bank that owned the home. The home had been vacant for about 18 months and needed some work inside. It took quite a while, but he eventually was able to buy the home in Preston Meadows.
That’s when the problems began for him.
“The irony is that the very day I was signing the papers is when the vandalism started,”
The Victim: Latchesar Slavov
and pointed his gun at the two boys who had broken into his home.
“I told them to lay down on the ground and called the police,” he says.
Police arrested the two, and Slavov says police told him two other boys and a girl had also been breaking into the home. Slavov says he later received calls of apologies from a couple parents, but has not received any offers to pay for the damage. One boy has offered to help repair the property, but Slavov has not decided whether to accept his offer. He says he has thought about a lawsuit, but has not decided whether to go through with it.
The Crime: Burglary, vandalism, criminal trespass
Date: May 14, May 17-18
Time: Between 8 a.m. and 8 p.m.
Location: 7000 block of Briarmeadow
Slavov says. “High school students broke in the home. They kept going in while it was for sale. I took ownership of the home, and they kept doing it.”
Slavov was moving in slowly, and making some repairs as he moved in. While doing this, he noticed that someone had been entering the home: breaking windows, breaking furniture, spray painting graffiti on walls, stealing tools, and even burning things.
“It was a terrible mess,” Slavov says. “I called the police twice and they came and took fingerprints.”
But the break-ins continued. Finally, after mounting frustration, Slavov decided to become more proactive in his attempts to stop the home invaders.
“I left notes saying ‘Stay away, I’ll shoot,’ and they broke in the very next night. That’s when I knew I had to do something,” he says. “I decided to wait for them one night. I got in a closet and waited for about 10 hours. Finally, one entered the window and let the other in through the door.”
Slavov quickly exited the door
As a new homeowner, the ordeal has been quite frustrating, but since his capture of the vandals, no one has broken into his home.
“I was in competition with someone else who wanted my home, too,” he says of the breakins. “To be honest, I didn’t know who was going to show up. These were pretty brazen people.”
Dallas Police Lt. Barry Payne of the North Central Patrol Division says this type of case is rare, but recommends owners of vacant homes take major precautions to protect their homes because they are not there as often to watch out for possible security issues.
“This type of offense is a little different from the norm,” Payne says. “Mostly, vacant homes are burglarized for recyclable metal or appliances, not just for vandalism. I don’t have any idea what motivates people to tear up other people’s things, other than just meanness. There is no indication here that the suspects knew the complainant or had any kind of dispute. Homeowners should take the same steps to guard their vacant homes as they do for ones that are occupied.”
